Universal appeal History, architecture, art – Western Australia’s New Norcia is a haven of culture and religion. words Susan Lang-Lemckert

“What looks like a disaster can turn out to be a blessing …” –
“Little miracles happen here all the time,” says Dom Chris of the Benedictine Community at New Norcia, Australia’s only monastic town, 132 kilometres north of Perth. No surprises there, you might think – after all, it’s a monastery. But sometimes the results of those little miracles are almost miracles in themselves. Like way back in the Community’s early history when a raging fire threatened both the New Norcia Mission and its all-important crops ... with fierce winds feeding the flames, the monks were fighting a losing battle trying to stop it. When all looked lost, they took the picture of Our Lady (the sacred image of Mary) from the chapel and held it in front of the fire ... and the flames began to die almost immediately. Or more recently in 1986, when the Community was devastated by the theft of 26 valuable paintings from the monastery’s collection of religious art. Although all but one of the paintings were recovered and subsequently restored and the culprits found and jailed, the heist marked an unexpected turning point. “The robbery was a blessing of sorts,” says Dom Chris. “What looks like a disaster can turn out to be a blessing if you can just live with the tension ... it’s a breath of fresh air. “We were looking at a gallery of empty walls when the Mandorla Centre of Inner Peace, which had just begun the Mandorla Art Award for contemporary religious art, approached us,” he says. “And we saw the bigger message behind

their approach – that beginning our own contemporary Christian art collection – rather than simply wringing our hands over [the robbery and] how to go about the restorative process, was another way forward for us.” And so began New Norcia’s association with The Mandorla Art Award, a biennial art prize for contemporary Christian works, and the country’s most significant competition of its type. The Award sees the Committee selecting a theme or passage from the Bible which artists then interpret through two- or three-dimensional works, with the winning entry being put on permanent loan with the Benedictines. The competition culminates in an exhibition – or two, really – one in Perth, with a second hanging at the New Norcia Museum and Art Gallery. “Perhaps contemporary religious art is at its best in New Norcia, because of its setting,” says Dom Chris. “People think about it a bit more while they’re looking. No-one much wants to hear another sermon, but they don’t mind looking at some contemporary art. “And displaying it here gives a platform for contemporary religious art ... that is, a lot of people wouldn’t go to a religious art exhibition in Perth – it’d be too confronting. But doing so in New Norcia seems a very natural thing to do.” Another ‘little miracle’ came via telephone about 20 years ago, when a school music co-ordinator enquired about booking one of the town’s closeddown secondary boarding schools for a three-day music camp.
“She was like an angel with a message, if we could hear it,” Dom Chris recalls. “We’d been wondering what we could do with the schools – I mean, what do you do with three-storey buildings in the middle of nowhere? So we thought we’d look at something we’d always been involved in – hospitality. “That particular school will soon be coming for the 20th year, and we have a great second market in terms of Years 11 and 12 Religious Education (RE) camps – I think some exhausted RE teachers feel the kids will be distracted by the monks in their strange clothes,” he says. “For example, we’ve just had a group here on an enforced RE camp, and they were fascinated by us and the way we live,” he says. “So much so, they really surprised us all by getting up at some ungodly hour to join us for morning prayers.” New Norcia’s unique history has seen the values of monastic life woven throughout the town, just as founders Bishop Rosendo Salvado and Bishop Dom Joseph Serra envisioned when establishing it a century-and-a-half ago. And it’s largely the monastic element – together with history, architecture and art – that continues to draw visitors to the town to enjoy the hospitality the monks are so famous for. “While it’s a monastic community, it has great universal appeal – Catholics, non-Catholics, exhausted mothers, politicians, Calathumpians ... everyone seems to feel comfortable here, and that’s perhaps New Norcia’s greatest strength,” says Dom Chris. “Hopefully we’ll continue to understand the visitors’ experience, and if we listen to everyone we’ll be able to do it even better,” he says. “And people keep coming to see our contemporary religious art collection, which has grown from nothing to say, 160 pieces. We have some works by significant Australian artists, but we’d love some more, and we have cultural gift status, so donating a work to the Community attracts a tax deduction. “If anyone has a William Robertson or a Brett Whitely religious work they’d like to give to New Norcia, we’d love to hear from them. I’d love some cornerstone pieces.” Perhaps another little miracle is about to happen. New Norcia fact file New Norcia was: • Founded in 1846 by two Spanish Benedictine monks – Rosendo Salvado and Dom Joseph Serra. • Established as a mission for the evangelism and education of the local Aboriginal people. • Named after Norcia in central Italy, birthplace of the Order’s founder, St Benedict. • Supported by a surrounding pastoral property producing olive oil, grapes, almonds, dates, carob, breeding horses, wine, grain and wool. • Two colleges – St Gertrude’s (for girls) and St Ildephonsus’ (for boys) opened in New Norcia in the early 1900s and operated until the 1990s. • Continues to be home to a monastic community living a life of prayer, work, mutual support and hospitality. • Is one of the great built heritage sites of Australia, with 27 classified buildings designed and decorated by Spanish monks brought to New Norcia specifically to create many of the fine interiors the town is famous for. • Today attracts visitors to its Museum and Art Gallery which conducts daily guided town tours and sells boutique food products including bread, olive oil, wine and beer. www.newnorcia.wa.edu.au

Metallics are very much loved by Hollywood stars, make-up artists, catwalk models and brides-to-be – but they can also add a touch of glamour to our everyday look. words Linette Gramstad
Anything that sparkles can make us feel special! In cosmetics, metallic colours contain glitter particles that create a shimmery effect, making them very appealing to consumers. Quite often they are the first thing we look at in the make-up aisle as they catch the eye, however, when choosing between a cosmetic product that contains shimmer and a standard one, we usually go for the basic option. This is because metallic colours are often associated with youth and the glamour scene but in actual fact they can be used by women of all ages. With the broad range of make-up on the market today there is a wide selection of products available in a metallic range including eye shadows, blushers, lipsticks, lip gloss, bronzers, eyeliners and more. You can even get natural mineral-based metallics, which is helpful for people with sensitive skins. When using metallic shades remember less is often more! For example, if you are going for shimmer on the eyes don’t do the lips also, although you can add a subtle shine of blush. If you are conscious of your colour choices, this can work really well. Of course, if you are creating a theatrical look for a masquerade party, or to make a bold statement, then go right ahead and get creative! Some women think they should not use shimmers as they feel this can age them. While you are more limited in colour choice, metallic colours can actually be very flattering if applied correctly. When choosing metallic products, lean towards

creams rather than powders, especially if the skin is on the drier side. Go for neutral tones and browns but still choose colours to complement your complexion. Apply them lightly and do not use darker colours too close to the inner corner of the eye or too far out from the outer corner. Don’t apply any higher than your eye socket and blend your darker colour into that line. Highlight under the brow bone to give the illusion of a lift and if you have circles under your eyes, avoid deep blues. You can use a metallic shade under the brow or go for a flat colour. The first step before applying any form of metallic make-up is to apply nude coloured concealer over and around the eyes then dust a generous amount of translucent powder over the top to set a base for your make-up. This allows you to dust away the unwanted excess shimmer; and is an important step to remember so you do not have to redo your concealer and foundation. If you always seem to struggle with excess glitter I suggest you do your eye make-up before your foundation. Metallics can be used as one solid colour or blended into flat colour to create a little more attention to your eyes or to accentuate a part of the eye. You can achieve a natural look with just one metallic colour by using a softer and lighter shade. Metallic shadows are also effective if applied on the inner corners of the eyes as this really brings
attention to the eye. A metallic silver, ivory or white works well. A darker eye colour works well for night wear or as a seductive day time shadow. Be sure to add black liner and a generous amount of mascara to make the eyes catching! This look tends to look good on more olive skins. For fairer skins cooler colours such as silver shades are better. Before applying a metallic colour, go back to basics and remember what colours suit your eye and skin colour and think about what you’re wearing, especially jewellery. Remember to start with lighter colours first, and to use lighter colours on the inner part of the eye and to highlight under the brow bone. To get the smokey look being used on the runway, use a cream-based shadow that you can also brush under the eyes for eye-liner, then blend to give a slight smudged look. Shimmers do work well when blended and you have the ability to create lots of different looks and effects with metallic colours. For glowing cheeks and to highlight bone structures, go for a blush that has shimmer through it so it reflects the light. A bit of shine can make the lips appear more volumised. Tone it down by just applying the gloss in the centre of your lips over your chosen lip product. No matter what your age, eye colour or skin tone, there is a metallic look to suit you …

Which brings us, more or less, to modern times. Given the high price of caviar over the past century and the depletion of the American stocks, enormous pressure landed on the European supply. Today their numbers are perilously low, so much so that for the past eighteen months there has existed a global ban on the trading of wild caviar. These days wild caviar can only be legally found in Iran and Russia (although the ban on the wild stuff has rocketed the price and increased poaching) while the rest of the world relies on caviar farms for supply. Farming caviar is not a frivolous undertaking. Sturgeon are slow growing fish that can live for more than a century and can grow to more than 400
Traditional harvesting was simple – kill the fish, extract the eggs and eat the meat. Modern methods are much more humane, sustainable and economically sound, harvesting the eggs non-invasively and letting the fish keep producing for much of its long life. This is all good news for us: farmed caviar is less expensive than wild, and with the growing number of farms across China, America and Europe prices are likely to continue to fall. The labelling of caviar has been a perplexing business, with brand names such as ‘Imperial’ sounding quite regal but really giving the buyer very little insight as to what is in the tin. Now the species of sturgeon and the processing method are paramount, so tins bear descriptors such as ’White Sturgeon Malassol’ and ‘Sevruga Pressed’. Here’s how it works … There are several methods used to process and preserve the roe. ‘Malassol’ is the best (and most expensive) with a maximum of five per cent salt by weight. Next in line is ‘Salted’ caviar, which can have up to eight per cent salt, followed by ‘Pressed’ which is made from inferior eggs that have been brined and then pressed to remove excess liquid. Finally there is ‘Pasteurised’ which, as the name
implies, has been heated to make the caviar stable for a long period. The Caspian and Black Seas are home to three types of sturgeon: Beluga, Oscietra and Sevruga. Beluga is the most legendary of the species (and one of the biggest) with large, delicate eggs. Beluga sturgeon are now, unfortunately, incredibly rare. Oscietra is a smaller fish than beluga and it varies in colour. Its caviar is slightly smaller than Beluga with a distinctive nutty taste. Sevruga is the smallest and most prolific of the three and its caviar has the smallest berries with strongest flavour. Then there are the American sturgeons, the most prized of which is the White Sturgeon, followed by a host of others; Kaluga is a Chinese version from the Amur and Liman rivers and Almas are the eggs from an albino sturgeon! It’s complicated stuff, but lore with which – hopefully – we will become more familiar as availability soars and prices decrease. Why is caviar considered to be such a luxury? Who knows, but there is certainly something magical about pressing those tiny eggs against the roof of your mouth and feeling a hundred tiny, salty explosions, particularly if its alternated with a sip of champagne or top-notch vodka. And these days, thanks to the intrepid souls and their sturgeon farms, eating caviar is a guilt-free pleasure.

Pan-fried whole sole with pippies Ingredients
Method
1 whole sole (700-800g)
1. Prepare the sole by cutting off the fins and head and carefully removing both sides of the skin, one dark and one white. Then remove both intestines, one on each side, without damaging the fillets.
100g plain flour 80ml clarified unsalted butter
2. Coat lightly in flour, then pan-fry in a non-stick pan with ¾ of the clarified butter. Cook until lightly golden on each side.
20ml lemon juice
3. Place onto a tray with the rest of the clarified butter, let it rest on the side.
½ brown onion – thinly diced
4. Meanwhile, pan-fry the onion and garlic in a saucepan until cooked without colour.
1 garlic clove – crushed
5. Add the vongole then sauté for 2 minutes until they start to open; add the lemon juice and let cook with the lid on until they are all open.
150g whole shell vongole (pippies) 20g chopped parsley 20g chopped chervil 50g unsalted butter
6. Take the lid off, let the liquid reduce by half, add the parsley and chervil then the butter (monter au beurre). 7. Season with salt and pepper. To Serve

1. Place the sole in the oven at 180 degrees for 8 mins.

2. Remove sole from oven and place it in the centre of the plate. Add the half char grilled lemon.

Festival of flavours Sanctuary Cove Food and Wine Festival served up a delectable feast of flavours.
Food and wine lovers flocked to The Marine Village on the Queen’s Birthday long weekend to take in the culinary delights at the Sanctuary Cove Food and Wine Festival. While the clouds overhead threatened rain, the crowds warmed up inside the festival marquee delighting in the aromas and tastes on offer. With the picturesque Marina and luxury yachts as a backdrop, over 1,000 foodies enjoyed gourmet tasting plates, fine wine and craft beer samples, live musical performances, celebrity chef cooking demonstrations and the popular annual Sanctuary Cove Prawn Cook-Off. Guests tasted wines and beers from a variety of exhibitors and regions from New Zealand to Italy, while they sampled a delicious array of gourmet foods including indulgent chocolates, aromatic spices, decadent sauces and flavoursome dried meats. Restaurants and cafés from Sanctuary Cove also set up marquees where people could try some of their fantastic signature dishes such as fresh sushi, chicken karaage, gourmet burgers, risotto and beef cheeks. Little foodies-in-the-making had the opportunity to unleash their inner chef and try their hand at creative cupcake decorating in the Kids’ Zone, which kept youngsters busy all day with face painting, balloon twisting and a jumping castle. Cooking demonstrations entertained visitors and gave them a few handy culinary tips. Junior MasterChef stars, sisters Isabella and Sofia Bliss, cooked up a storm with their three-cheese gnocchi and traditional Sicilian biscuits. Celebrity chef Ben O’Donoghue then took to the stage and, as the rain started to come down outside, got things sizzling with his spicy Vietnamese lamb-chops. The annual Sanctuary Cove Prawn Cook-Off was compéred by Ben O’Donoghue. Chefs from The Marine Village took to the stage in a battle to create and plate up the best prawn dish in 15 minutes. Some creative dishes were served up, showcasing the culinary diversity on offer within The Marine Village at Sanctuary Cove, and leaving guests with a few tantalising recipe ideas. Chef Reuben from Jonez on Food was awarded the trophy – the perpetual “pan” – for his contemporary garlic prawn dish. The Sanctuary Cove Food and Wine Festival was once again a hit with connoisseurs of gourmet food and fine wine, and those who simply appreciate the delectable and diverse tastes of a superb culinary destination.

Black Angus Bar and Grill, located in Sanctuary Cove’s diverse dining precinct, has secured a place in the Queensland Good Food Guide’s Top 10 Best Steaks in Queensland, a testament to the team’s dedication to quality food and excellent service. The restaurant, which has been trading for ten months under a new name dedicated to the prime beef, now ranks alongside renowned steak-lovers’ restaurants such as Montrachet, Esq at Esquire and Vintaged Bar and Grill in Brisbane. Black Angus owner Nick Hagop said the accolade was a result of a combined effort – with Head Chef Alex Holmes and his team, front of house staff, and management ensuring Black Angus earned its place among the best in Queensland. “This rating means quite a lot to any restaurant as it draws more diners as well as attracting and retaining high calibre staff,” said Nick.

Nick said Black Angus offered the highest quality beef in Australia, with all beef certified free from hormones or antibiotics and sourced from local farms via reputable meat processors and suppliers. “We always knew that our selection of various meat choices and cuts were of excellent quality as we only buy from the best and reputable sources to ensure that we maintain a consistent high quality product,” he said. “Being recognised among our peers as having some of the best steaks in Queensland is definitely something we are very proud of.”

The tradition continues One of Australia’s most legendary wineries, Henschke, celebrates a number of milestones in 2012. words Paul Prendergast photography Mark Wilson
For a wine lover, visiting the Henschke winery and spending time in the company of Stephen Henschke – revered winemaker, the Grand Master of the Barons of the Barossa, a member of Australia’s First Family of Wines and now a keen golfer – is a once in a lifetime opportunity to savour. Stephen is the fifth generation guardian of the rich heritage at Henschke, in the Eden Valley region of the Barossa, taking over in 1979 from his late father Cyril who, himself, was the youngest of 12 children. Winemakers, especially those that have a bloodline in the industry dating back to the 19th century like Henschke, are a remarkably engaging, energetic and down to earth breed. They take enormous pride in their work and are dedicated to preserving the legacy that has been forged by the blood, sweat and tears of their families throughout the years. Henschke are celebrating a number of milestones in 2012 with the 50th vintage of the iconic ‘Hill of Grace’ Shiraz and the 60th of the premium ‘Mount Edelstone’ Shiraz, from a vineyard planted nearby 100 years ago. These two exceptional wines from separate single vineyards are cornerstones of a superb range of white and red wines, from the family vineyards in the Eden Valley and Adelaide Hills, that are available at the Henschke cellar door

and from all fine wine locations. Not for Henschke though, the trappings of a modern day cellar door ‘facility’. There are none of the elaborate tasting rooms or restaurants that are plentiful in other locations. The small, unassuming cellar door is likely to be the most recent addition to a stone building that was built by hand, then added to and repaired from the abundant stone in the local Mt Lofty Ranges, by each generation of Henschkes. The building that houses the entire Henschke operation has been the original working winery and, along with the adjacent, four bedroom stone farmhouse, home to every Henschke generation – including Stephen and his wife and viticulturalist, Prue. Stephen points to a section of the winery where his father Cyril kept horses to help run the vineyard and the small room in which we sat was the old milk cellar, where he had the job of separating milk and cleaning hen eggs as a child. The buildings are not just dripping with history but quite literally have it etched into the walls, telling the story of vintages’ past. The words ‘1901 – 1660 gallons’ are carved into a stone on the side of the winery’s first fermentation tank, recording for posterity the quantity of wine produced that year. in nearby fields hangs above an adjacent stone doorway, forming part of the Henschke logo that has remained unchanged since its first iteration. For Henschke, tradition is of paramount importance in the wine making process and the running of the winery and is strongly defended. “Tradition is very important to us. When it lets you down, you change it but if it works, you maintain it.” Stephen explained the use of the Biodynamic Calendar which they rely upon to inform their harvest times each year and the study of the lunar cycle which he says, is a remarkably reliable guide. “Basically, we get a significant wet season or two every 18.6 years on the Lunar cycle. 2011 was a very wet year and if you take it back to 1992, 1974, 1956 and even 1938, they were all very wet vintages. “We did get some really beautiful whites in 2011, very zesty, tightly wound Rieslings that will mature beautifully over many years but unfortunately, the red wine grapes for our top end wines were too compromised by the weather so we didn’t make them, just like in 1974. The 2012 vintage was a very different story though, they will be fantastic.” The Henschkes are also members of a group of multi-generational family owned wineries known as ‘Australia’s First Families of Wine’ and Stephen says one of the key aspects of the alliance that
he derives great personal satisfaction from is that the next generations who will carry on the family legacies are starting to meet, network and become friends, just as his generation have become. Stephen points out that the wine and food culture in Australia is so precious and important, with the icon vineyards, special labels and great wines, something people in other countries are only just starting to discover for themselves. “Australia didn’t just happen in the last ten minutes. We’ve got vines in Australia that are over 150 years old, older than anywhere in the world. “We have a wonderful history, true stories, heritage and fantastic wine from fantastic vineyards in Australia. Sometimes you just have to remind people why we’re here and what we’re doing, especially overseas. What we’re doing in Australia is equal to, if not better, than anywhere else in the world.’ The Henschkes are regular golfers in their spare time and are enthusiastic members at the scenic Tanunda Pines Golf Club (‘Royal & Ancient Tanunda’) in the Barossa, where they often play with other winemakers from the region. Both Stephen and Prue also take the opportunity to fit in a round of golf where they can when travelling around the world promoting Henschke wine. “The most beautiful place we’ve played was up in the mountains at Rioja in Spain. It was at the Izki course at Urturi (designed by the late Seve
Ballesteros) and the scenery was stunning, there was hardly anyone around, all these wild animals roaming across the course.” The highlight of many highlights in the visit to Henschke was the opportunity to drive out with Stephen Henschke to the remote vineyard that produces the iconic ‘Hill of Grace’ Shiraz, Australia’s greatest single vineyard wine. Stephen’s family planted these vines from around 1860 and he says the now gnarled, twisted stumps, some as thick as your torso, in the oldest block known as ‘The Grandfathers’ that produce dry grown Shiraz grapes of such concentrated flavours, are more precious than any building could ever be. “You can repair or replace an historic building, but if anything happened to these vines, they can’t be replaced. It would take another 150 years.” A bottle of the latest release of Hill of Grace, the 2007 vintage, was opened and savoured in The Grandfathers block on a crisp autumn day among the very vines planted by Henschke’s ancestors. With Stephen on hand providing his personal insights into the wine and the naturally organic techniques
that

planned
and
orchestrated to tend to his prized and ancient crop, there was a great a sense of occasion and history. For anyone with an appreciation of fine wine, it couldn’t possibly get any better than this.

Early last year, Hayman, like much of the Whitsundays, felt the effects of Cyclones Yasi and Anthony. Looking upon the devastation as a unique opportunity, Hayman undertook a major restoration of the resort before reopening on 1 August 2011. Now occupying prime culinary position is Fontaine – Australia’s signature resort restaurant. Created by acclaimed designer Nic Graham, Fontaine offers a beautiful indoor and outdoor setting including stunning dining platforms over the Fontaine Pond. The menu features contemporary Australian cuisine inspired by the finest locally sourced produce and magnificent wines. In keeping with the resort’s culinary tradition, The Chef’s Table, Hayman’s much acclaimed dining event held in the Main Kitchen and outdoors in Rainforest Grove, continues to be booked out. New menus have also been introduced in the Oriental, La Trattoria and Azure restaurants. Think of an island paradise in Indonesia and immediately Bali comes to mind, a place that charms and seduces travellers from around the globe. Yet Bali, like a lot of popular tourist destinations, has succumbed to the demands of tourism and over the years has lost much of the charm that has drawn tourists to this tropical island for over fifty years. However, all is not lost for those seeking the idyllic destination of their dreams, for, nestled just off Bali’s shores is an island that conjures up images of times gone by. Just a forty-minute boat ride from Sanur on Bali’s east coast, and across the Badung Strait, Nusa Lembongan nestles between two small outer islands and is truly a hidden paradise. Visitors immediately know that they have found something unique as they step ashore onto a pristine white beach to be met by local seaweed farmers and fishermen who greet all visitors with a glowing smile. You won’t find touts here offering everything from cheap accommodation to sub standard massages. The people of Nusa Lembongan travel at their own pace and within hours of your arrival you will have adopted their ‘no rush’ philosophy. The island itself is only eight square kilometres in size with a permanent population of just 5000. Coral reefs, white sandy beaches, and low limestone cliffs surround it. On the island there are three main villages with Jungat Batu and Mushroom Bay being the centres of the small tourist-based industry whilst much of the permanent local population resides in Lembongan Village. This island is one of the wonders of the world, as to the east, the Lombok Strait that separates the three small islands from Lombok itself is one of nature’s unique phenomena. This strait is known as the Wallace Line and is a natural division of fauna and flora between Australasia and the Indomalayan Zone and the differences are readily apparent. Across the straits on the island of Bali, the majestic 12,000 ft Gunung Agung, the sacred volcano, watches over Nusa Lembongan’s population and one can never tire of observing this towering sentinel change colours. Unbeknown to many, Nusa Lembongan offers some of the best diving and snorkelling in Indonesia. The crystal clear waters are like an artist’s palette with every colour imaginable and within these warm waters can be found over 247 species of coral and 562 species of reef fish. In the 70s intrepid surfers from around the world came to Nusa Lembongan for the consistent surf breaks that occur just off shore. Today surfers still travel to the island to ride the three breaks known collectively as Playgrounds, Lacerations, and Shipwrecks, which provide waves for beginners to experts. The island’s laid-back approach to tourism means that you choose what you want to do when you want to do it. Along the shore, boatmen sit chatting in the shade of palm trees and will be more than happy to take you snorkelling, out to the surf breaks or simply cruise around the islands. Negotiate your own price and you will discover that transactions are done with a smile and none of the hard-nosed bargaining that is found on the mainland of Bali. Restaurants line the elevated boardwalk high above the seaweed farms where travellers can dine on fine local cuisine and watch the locals working their plots in the azure blue waters. Nusa Lombongan surprises at every turn. Hire a motorbike from one of the locals and travel the island where you will discover hidden jewels such as Dream Beach with its impossibly blue waters that crash onto the rocks at Devils Tear, a site not to be missed. Stop off at Mushroom Bay and swim in the warm waters there, then sit back and try the local Bintang … you won’t be disappointed! Once you have visited this special place it will live with you long after you have left and, as the locals say, it will lure you back one day. >>

Most Saturday nights you will need to book – excellent authentic food. • Dream Beach is the spot to go to for sunset one night – again they will come and collect you and drop you back. If you hire a bike, it’s even easier. It’s a superb spot to watch the sunset from, then stay for dinner. DIVING There are three or four dive places on the island who can organise day trips. SNORKELLING There are some great spots at Nusa Penida and along the Mangrove wall. PAMPERING Batu Karang Day Spa is a real treat for all pampering needs. Massages can also be arranged through Ware Ware Restaurant. ACCOMMODATION The island caters to all travellers whether it is five star or backpackers and there is a range of accommodation to suit all tastes and budgets. Day safari Avi Vince spends a fascinating 24 hours at Inyati Private Lodge – a secret luxury hideaway and home to the African Big Five. After the 45-minute flight from Johannesburg, I am completely surrounded by the African bush. The only manmade items are the runway and a little airport terminal which is a thatch roof hut. “Hi, I am Richard, from Inyati, come with me.” Inyati Private Lodge is located in the Sabi Sand Reserve, one of the world’s largest private conservation areas on the North East tip of South Africa made up of private reserves, whose owners run commercial safaris. With unfenced borders between each other and an unfenced 50km boundary with the famous Kruger National Park, there is almost a guarantee to see the African Big Five – lion, leopard, buffalo, elephant and rhino – during your stay. Inyati means magnificent buffalo in Shangaan, a local African language. The resort caters to 22 guests, with a one-to-one guest to staff ratio, and has seven luxury chalets and four executive chalets. On arrival, guests are guided to the restaurant area which is a large deck overlooking the Sand River. ‘The resort is unfenced, so animals may wonder

through. They are wild so do not approach them. Make sure your door is always locked, as the monkeys know how to open them’ – with these warnings, I am escorted to my chalet, a thatch roof luxury bungalow with a walk-in-robe and large ensuite. With two hours before the first game drive, I unpack and head to the pool, checking twice that the door and windows are locked. As I refresh from the heat, I see the cheeky monkeys running through the open gardens in between the chalets and a mother kudu and her calf chewing on grass. By 3:30pm, I’m refreshed, showered and doused in insect repellent – it is peak malaria season. Back at the restaurant I am greeted by the other guests who are enjoying the afternoon tea spread of local pastries and cakes. At 4pm, we are guided to the open top Land Rover and introduced to the ranger, Khimbini, and his brother, Richard, who picked me up earlier. While Khimbini explains the ways of the bush, Richard is perched on the seat attached the front grill of the Land Rover to track the animals. Khimbini explains the rules: ‘The animals are used
to the shape of the car, so please don’t stand up or lean out. Also, sometimes we will go off track into the bush, do not grab at the branches as some have dangerous thorns, just get out of their way’. And with that we are off. After thirty minutes, we are all getting worried. Not one animal in view. Just as I think about putting my camera away, we turn a corner and find ourselves in a herd of 100 buffalo. As Khimbini turns off the car, he points out the days-old calf running after its mother, five metres from the car. It is like we are in the middle of a National Geographic documentary. We slowly move on, and while the sun is setting, Khimbini veers off the dirt track. One of the unique things about Sabi Sand is rangers are allowed to go off road to get closer to the animals. Everyone remembers the rules and dives as the thorn branches scrape the car. Without warning we stop and sit in complete darkness. Richard turns on the spotlight and we are surrounded by four lionesses and their five cubs. I have no idea how Khimbini and

Richard knew they would be here, but they are adorable, with the cubs play fighting and sometimes annoying mum. Driving back to Inyati, I see what the night sky looks like without large city lights, more stars than sky. As we have drinks and dinner on the balcony overlooking the lit-up river, the conversation is on the lion cubs. There is a knock on my front door at 4.30 in the morning, my wake-up call. The sun is already starting to light up the river and there are impala on the other side eating the dew-laden grass. After a few biscuits and local Rooibos tea, we head back onto the trucks. Eight giraffe – one heavily pregnant – meet us first off. They don’t seem to mind us staring at them as they reach the tops of the trees to get the sweetest leaves with their long tongues. After a short stop we drive off, with Khimbini and Richard staring down at the dirt road. The guests take a look too, but no one wants to admit that all they see is dirt. As we turn a corner, three elephants appear. “That is the mother,” Khimbini points to the largest of the three, “and these are her two daughters with the youngest probably a few months old.” The baby is upset by our presence and tries to charge the car but runs off crying to mum when it doesn’t work. Richard jumps off his seat and Khimbini gets out, continuing to examine the ground. To the untrained eye the road looks bare, but Khimbini and Richard are figuring out which way the leopard went from the faint footprints. After thirty minutes driving, with all eyes on our ranger and tracker, Khimbini’s head pops up. On a large rock a leopard is sunning herself in the early morning rays. She doesn’t even mind that we have now driven, off road, within a metre of her and we all start clicking our cameras, while she grooms herself. After a couple poses, she grows tired of us and disappears off into the distance. We drive off in search for more. I soon start to worry that we won’t see any rhino, after all they are once again nearing extinction due to the illegal poaching of their horns. However, Khimbini doesn’t let me down and we find a group of four white rhinos munching on the long grass. They are an extraordinary animal, prehistoric but gentle. Normally, Khimbini would be on the radio, letting the other rangers in the area know about the finding but not this time. “We don’t call out rhino sightings on the radio, as we are worried that poachers are listening in and we don’t want to let them know where they are,” he explains. As I take my photos, I wonder whether the next generation will be able to see them in the wild. Heading back to Inyati for brunch, I realise, that within less than 24 hours, I have seen all of the African Big Five. I shouldn’t expect any less. Inyati doesn’t only provide luxury accommodation, they also provide expert local staff, all with over ten years’ experience, to ensure you see all the wildlife you wish for.

Beyond the sea Cruising the Aegean Sea – Patsy and Bill Rowe enjoy a colourful, cultural, experience. I have always loved Athens and its star act, the Acropolis. Battered, bruised and partially ruined though it may be now, the Acropolis possesses such majesty that it still ranks among the world’s true wonders so I was thrilled when during our three days in Athens, Bill surprised me with a special birthday dinner. Our hotel’s roof restaurant had an unimpeded view of the Parthenon which was lit at night and provided the perfect background for our candlelit dinner of melitzanosalata, tzatziki and dolmades followed by astakos, a sort of spiny lobster, and baklava, a dessert which both the Greeks and the Turks claim as their own. I don’t know if they ever went to war over baklava, but they seem to have fought several times over the past few centuries over less controversial issues. To this day, they still passionately refute ‘Turkish’ coffee, claiming that it too, was ‘hijacked’ by the Turks. After some shopping in Voukourestiou (I always try to support the local economy) we boarded our ship to cruise around the Aegean Sea. Our first port was Mykonos, an enchanting island with beautiful beaches fringed with quaint bars and cafes. The old town is a veritable labyrinth of narrow streets threading past immaculate white houses where Greek matrons, dressed in black, sit on their front steps and chat to their neighbours. A smile was all that was needed to encourage conversation and to our surprise, many spoke a little English, having visited family in Australia (usually in Melbourne which has the highest population of Greeks outside of Greece). One lady insisted we sit down on her terrace and join her for a glass of white Retsina, which tasted like turps, but we kept smiling and got it down while she showed us photographs of her Australian grandchildren. Seeing she was about to top up our glasses we assured her the ship would go without us and made our slightly tipsy retreat. The blue skies were unmarked with a single cloud and an hour later, as we sat on the terrace of a waterfront café we sipped, not Retsina, but a glass of Greek wine, Demestica, which did an admirable job of drowning the taste of turps. The sun sparkled on the water and I couldn’t help thinking this was a place to revisit. A friend, Brenda Bezanson, had recommended a wondrous restaurant on the other side of the island at Nimmos. So, after a few terse words (I was keen for the comfort of a taxi,

Bill thought we should be more adventurous) we clambered into the local bus. A hair-raising ride ensued with the driver, Georgiou, who had been to Australia and was keen to practice his English, talking non-stop for the 40 minute ‘adventure’, while looking over this shoulder at us to emphasise a point. The road was steep and it felt as if we were rounding the tight bends on two wheels so I was relieved when, still in one piece, the bus jerked to a halt and Georgiou dropped us at the top of a cliff! He pointed down to a tiny beach, littered with brown bodies and blue umbrellas, gesticulating as he yelled, “Down! You must down!” before he disappeared in a cloud of exhaust fumes. ‘Down’ involved a narrow, stony goat track wide enough for one person. Regardless, Bill led the way delighted that we were experiencing the ‘real’ Mykonos. Lunch was worth the effort though and we lingered till late before taking a taxi back to the ship for our next port of call, Skiathos, one of the crowning jewels of the beautiful Aegean Sea. The island’s only real town, also called Skiathos, looks over one of Greece’s loveliest ports. Rainbowcoloured fishing boats are moored beside the gleaming white yachts of the wealthy jet-setters and celebrities who hang out at many of the 60 beaches where they enjoy private, moon-lit barbecues. Waking to the spectactular sight of Kusadasi on the Western coast of Turkey, we breakfasted quickly and wandered into town where after some shopping (I really do think it’s important to support the local economy) we hopped onto a bus to discover the amazing Ancient City of Ephesus, and see the Temple of Artemis. So often ruins require an enormous degree of imagination to re-create their splendor, but this is definitely not the case with Ephesus which deserves its reputation as one of the seven wonders of the ancient world. After dinner on the ship, we were taken (by taxi!) back to Ephesus for a concert. The avenue leading to the ruins was lined with handsome young men in national costume, re-creating the ambiance of centuries ago. The ruins were lit and we sat at tables of four, enjoying champagne and canapés as we were transported back through the ages by the music of a string ensemble. The music, the ruins, the atmosphere combined for a wonderful evening and again, I couldn’t help thinking this was a place to revisit.

In keeping with this philosophy, the agency has recently welcomed experienced travel consultant Leslie Wetherill to the team. New Zealand born Leslie has a wealth of travel industry knowledge having commenced her career with an African Tour Company while living in London for three years. During this time she also travelled extensively throughout Europe and Africa, a destination which remains close to her heart. “After leaving London I spent two months travelling around Africa,” Leslie says. “While there I trekked with the gorillas, which was one of the most amazing experiences I have ever had. I was literally two metres away from the Silverback. “I also went sky diving in Namibia which was another unforgettable adventure … as the plane took off I noticed the sides were stuck together with duct tape!” Having survived these escapades Leslie then moved to Australia and was employed as a consultant with Flight Centre for the next two years. Keen to do more travelling, Leslie headed to Whistler, Canada for 12 months, working in a luxury hotel during winter and a white water rafting company in summer. She also travelled throughout the Rockies, USA and Mexico before heading back to the Gold Coast. Upon her return, Leslie once again accepted a position with Flight Centre, where she worked her way up to manager status. Leslie is excited to be joining the dynamic and professional Cove Travel team and says her comprehensive knowledge of the industry, coupled with her extensive travel experience, gives her a unique perspective when helping clients with their plans. “I’ve bungy jumped in Whistler and Christchurch, sailed a yacht around Croatia, and attended the 90th Anniversary Service at Gallipoli,’ Leslie says. “so when it comes to adventurous or unusual holidays, I am more than willing to offer advice.

One of a kind The exclusive Aston Martin One-77 is the embodiment of style and sophistication. words Chris Nixon
There is a man in Queensland who reportedly paid $3 million for the world’s most expensive new car. Unsurprisingly, his identity has been kept secret to all but a close circle of people. What does one do with a car that is too precious for routine use or even to admit owning? Possibly the same as many other collectors of rare cars, art, jewellery or antiquities around the world: sneak it out for an occasional airing at a special private event, or sit tight and wait for a tempting purchase offer. Or maybe, the pleasure of simply owning it is enough. The car in question is the Aston Martin One-77. It’s the ultimate expression of the hypercar genre by the historic British sports car maker. The model

name denotes the number built, 77, and all have been sold. Only one came to Australia, for a buyer who lives near the Gold Coast. Hypercars are a relatively recent addition to the car hierarchy. When a common-or-garden Ferrari, Maserati, Aston Martin or Porsche – that is, a supercar – isn’t enough, the big players go for a Bugatti Veyron, Koenigsegg CCR, Pagani Zonda, Ferrari Enzo (Lindsay Fox has one), Mercedes-Benz SLR or, now, the Aston Martin One-77. Hypercars have hyper-performance. The Swedish-built Koenigsegg is capable of 400 kilometres per hour; the Bugatti Veyron (ironically, the former French art deco car maker is now owned by Volkswagen) was the first to offer 1000 horsepower off the showroom floor.
But form must follow function where such speeds are involved and most hypercars of necessity look more purposeful than beautiful. However, justifying its place in the collector world, the 354 kmh Aston Martin One-77 is fabulously beautiful. It won a design award at the Concorso d’Eleganza Villa d’Este, Europe’s supreme car display staged every May on the shores of Lake Como. The Aston has been called an automotive living work of art, but I hesitate to use that term for something designed for serial manufacture rather than a one-off. I’ll simply call it the most beautiful production car in decades. The design by Aston Martin’s Marek Reichman is unusual for hypercars – having its 7.3 litre
V12 engine mounted at the front, instead of the common mid position that necessitates short noses and heavy haunches. Consequently, the One-77’s proportions are perfect. The long bonnet and sleek lines look like they have been shaped by the wind, which has worn away the rough angles. (Aston Martin’s more mundane production models, the Vantage, DB9, Virage, DBS and Rapide, have the same design genes and are similarly beautiful in their categories.) The bodywork is hand-built in aluminium to craft standards that hardly exist any more. Viewed up close, which I was able to do at an unveiling party at the Palazzo Versace hotel, the detail of the panels, lights, handles, vents, glass, mirrors, exhausts and other exterior features is exquisite.
The interior is like nothing else I’ve seen, with a wide, sloping fascia and centre console, sculpted leather seats and jewel-like dials and switches. If further proof was needed that this is a dream car, it lies crouching under the bonnet. When the 12 cylinders unleash their 560 kiloWatts (that’s 750 old-fashioned horsepower!), the deep, brutal bark is indescribable. Imagine a wartime Spitfire – hotted up. I’ve had enough acquaintance with supercars to know they are not much fun to drive every day. You struggle to restrain the speed, are terrified of accidents and feel inordinately conspicuous. Oh, for a quiet country road. So if I owned an Aston Martin One-77, I would be happy just to start the engine once a week and listen to Die Valkyrie played with pistons and camshafts.
If given a choice, my imaginary garage would house not the One-77 (of which there are now only 76 since one was wrecked in Hong Kong), but its ‘cut-price’ sibling, the V12 Zagato. It’s only $1 million and only half as exclusive with a planned production run of 150. The Zagato also has a interesting provenance. It was created by Carrozzerie of Milan as a re-bodied racing version of the Aston Martin V12 Vantage. It’s the real thing, forged in the cauldron of Germany’s infamous Nurburgring track. Aston Martin fans begged for a road-going version and deliveries will start next year.

On show Chris Nixon was one of an estimated two million people who visited the Bangkok International Motor Show recently. Pretty girls in outlandish costumes are pouting, primping and winking at me and, not surprisingly, they’ve got something to sell. There are hundreds of them adorning the shiny new cars at the Bangkok International Motor Show. The Thais call them ‘Pretties’. Most international motor shows have long ago abandoned the use of overtly sexy women to dress up car displays. In Bangkok the models are demure – doll-like – and seem to answer a naïve curiosity about the glamour and prestige that might bless the owner of a new car. The Bangkok International Motor Show is dazzling evidence that Thailand is on the move – fast. Up to 40,000 Thais ordered a new car at the show which was held in an exhibition centre in suburban Muang Thong Thani – a massive, lavish, six-star palace compared to the venues we use in Australia. The Thai middle class is booming and, assisted by a government First Car Buyer Program, is ditching the dirty, dangerous family motor scooter in favour of modern low-priced new cars. Freeways to carry them snake across Bangkok and the countryside like the roots of Jack’s beanstalk. Although Thailand does not have any indigenous brands or models like we do in Australia, it has become the hub of south-east Asian auto production. Thanks to a free trade agreement with Australia it supplies many tens of thousands of the Hondas, Toyotas, Mazdas, Fords, Isuzus, Nissans, Mitsubishis and Holdens we drive here. A tour of the show provided a preview – hardly the proverbial sneak-peek in view of the deafening music, glaring lights, dazzling displays and surging crowds greeting every step – of many new models heading our way in coming months. These included the Holden Colorado and Isuzu D-Max utes, an all-new Holden TrailBlazer off-road wagon to replace the long-lamented Jackaroo, the Mitsubishi Mirage, Honda Brio and Nissan Micra. Bangkok’s motor show is spectacular and has special relevance for Australia. If you’re planning a Thailand holiday late next March, a visit to the Impact exhibition centre at Muang Thong Thai will be a true eye-opener. And not just because of the Pretties.

EyeSight, as fitted to six-cylinder Outbacks and Libertys, uses small cameras behind the windscreen to recognise hazards, alert the driver and if necessary intervene with automatic control. Its functions include automatic braking if a car ahead slows or stops suddenly, over-riding the driver if full throttle is applied accidentally, and braking assistance when the driver is not pushing the pedal hard enough. All add up to a car that is less likely to be damaged and therefore is cheaper to insure. New generation

As the times demand, the third-generation Mercedes-Benz M-Class SUV is said to be more efficient in reducing fuel consumption and carbon dioxide emissions while retaining or improving performance. The range opens at $81,400 for an ML250 diesel. A 2.2-litre four-cylinder replaces the previous 3.0 V6, but the outputs are an impressive 150 kiloWatts of power and 500 Newtonmetres of torque. Combined fuel consumption is cut by an extraordinary 30 per cent. With the ML’s 93 litre tank, this gives a theoretical cruising range of 1450 kms.

Less than a year ago Riviera was a company in receivership, struggling under the combined pressures of the Global Financial Crisis and a decreasing demand for quality vessels. Now, this iconic Gold Coast company has welcomed a new owner; established a renewed presence in the boating sector; and generated strong sales on the back of the Riviera Festival and the Sanctuary Cove International Boat Show. Much of the renewed optimism can be attributed to Rodney Longhust, a long-time supporter of the Riviera brand and Managing Director of Longhurst Marine Holdings Pty Ltd, who bought the company in March. Former CEO Wes Moxey, who previously worked for the company for 26 years and recently returned to the role after a four-year sabbatical, says the future of the company is in very good hands. “This is the best news that Riviera has had for a very long time. Rodney is very passionate, he’s very driven, and he’s a smart businessman, so he brings a lot of business acumen to the company,” Wes says. “There’s been so much rumour and

speculation over the past few years … now we just want to get the message out that we are here for the long term.” With the company undergoing something of a renaissance under the Longhurst leadership, the team behind the brand have learnt valuable lessons from the past and are determined that the ‘new’ Riviera will be a leaner, more flexible entity in the future. “We can’t control the economy but what we can control is our systems, our people, our culture, our attitude and our quality – ensuring we deliver a great experience,” says Wes. “We are still selling boats but we don’t want to be rushing production. We’ve got to make sure we are considered, careful, strong and clear about the path ahead. “It’s a matter of being in a position to maximise our potential once the market regains momentum and getting that foundation down so that we can grow again.” Not that it has been all doom and gloom during the past 34 months of receivership … the company sold 289 new boats over that time – a reflection of both the company’s viability and their customer loyalty. Riviera’s Director of Brand and Communications Stephen Milne worked through the 34 months of the receivership and admits the company owes a great debt of gratitude

to the boat owners who stuck by them during the tough times. “We are very customer centric – that’s ingrained in our staff – and throughout the whole approach we have never compromised on quality, design, customer service or integrity,“ he explains. “I think the owners value that – and appreciate it.” “The loyalty of the Riviera customer is second-to-none so we need to repay that loyalty because they’ve stuck with the brand during the receivership incredibly well,” adds Wes. So how does post-receivership Riviera differ from the earlier model? “Our mainstream customer is a small to medium-sized enterprise business owner who has worked hard and wants to reward their family,” explains Stephen. “Likewise our boats have always been seen to be true bluewater, well-built, well-designed boats that stand the test of time, not only endurance wise but aesthetically as well, and we’ll continue that. “So externally we are still the same … but internally we are in the middle of a major plan to bring about positive change within the business – in its new model design, systems, processes, structures – and making it more streamlined for the new, leaner era that we

operate in. “What we are doing is symbolic. Australia and the world have been in the doldrums economically for long enough … now we want to send a message to our owners and the market that this is a new Riviera,” he continues. “We are taking all the great things from 32 years worth of experience and heritage and using all the lessons that we’ve learnt from the past four or five years to chart our new course. “Like all companies that have weathered the financial crisis thus far we have learnt to do with less … and in doing so we will be able to achieve so much more,” explains Stephen. “Going forward, we want people to see a visible difference … not only in the boats themselves, but in how everyone is working together.” Which brings us to another vital factor in the Riviera resurgence … its people. “They were pretty dark days in 2009 … it was much easier to jump ship than it was to stay and fight,” insists Stephen. “Those that have stayed – and there are hundreds of staff and contractors and thousands of owners who stood by us – are the real stars of the Riviera receivership show.”

Sanctuary Cove’s world class golf course has added a PGA (Professional Golfers Association) golfing school to its suite of sporting and recreational facilities. The award-winning PGA International Golf Institute’s (IGI) head office will now call Sanctuary Cove Golf and Country Club home, having recently relocated from Robina’s Colonial Golf Course. The IGI has a co-tenant, with the Queensland division of the PGA also setting up residency at the newly upgraded Sanctuary Cove Country Club, securing 200sqm of office space. The PGA IGI is the only golf education provider recognised by the PGA. The school works in close association with the Gold Coast’s Griffith University, one of Australia’s leading tertiary education providers to deliver programs that bridge both playing and management.

Real estate guru, media personality and Sanctuary Cove resident Andrew Winter is the face of an innovative campaign to raise the profile of the resort community’s latest housing collection. The campaign seeks inspiration from the public for a limited series of designer homes to be built on exclusive parcels in Sanctuary Cove’s Banksia, Tristania and Alpinia precincts. Known as The Winter Collection, the architecturally designed homes were launched to the market last month with Andrew lending his knowledge and skills in developing houses that are liveable, sellable and meet buyers’ needs. Members of the public are invited to join the design fest via an interactive Facebook campaign that allows them to submit their ideas on each room’s design, fittings and finishes. Andrew said the initiative would engage the public to design Sanctuary Cove’s most innovative and original homes to date. “Any quirky ideas that make a home more liveable and cutting edge will be taken on board and worked into the final design,” he said. “The result will be remarkable homes with designs that are truly one-off.” Andrew, who moved his family to Sanctuary Cove in 2010, said he was excited to be part of such an exciting and innovative campaign. “It is a first for Sanctuary Cove and I am looking forward to seeing what the public comes up with,” he said. “I am sure we will see some original and

“That’s the challenging part, designing a piece and then finding somewhere to have it made to our quality,” explains Ken. “But it’s also the fun part as it allows our imagination to let go and see what we can achieve.” When it came to fitting out the restaurant Robertsons’ brief was quite clear – Seaduction was to be a sophisticated but relaxed space, to reflect not only the sensational ocean views but also to complement the food of world renowned Chef Steve Szabo. “As such we created interesting, fully-detailed spaces with lots of texture and customisation,” says Ken. “For example the door in the restaurant is made up Pillowed, Turnsole and Bamboo Solids. Custom-designed by us and made overseas, it is just one of the unique design pieces found throughout Seaduction and the rest of the areas we worked on.” While the public spaces are undoubtedly spectacular, the accommodation options are equally as breathtaking. London calling Bryan Matthews’ Mid-[UK]Summer Diary. LONDON: By the time you read this I will be slipslop-slapping in the British summer. Or more likely just slapping myself for coinciding our trip exactly with the security nightmare commonly known as the Olympics. (Logistically and financially, therefore, I blame Greece for all my current problems.) We spent early July on the Gold Coast; it’s a time of year I like – with the notable exception of the daftness of ‘Christmas’ parties: ‘Thank-you for the invitation but we celebrated the baby Jesus’s birthday back in December’. Over here, the Queen – not content with trumping Him with two formally recognised birthdays a year – is midway through a 12-month knees-up to mark out-reigning Victoria (and annoying her son and grandson to boot). All the royal to-ing and fro-ing, plus the Olympics, have put airports and train stations on high alert; so all up we couldn’t have picked a better time to enjoy Heathrow and the Eurostar. At least packing was easy because my ‘winter collection’ in Australia also happens to be my summer collection for England. **** A few years ago – on the back of some fluky business success – we were in the habit of travelling at the pointy end of the plane; then my super melted down (not planned) and we became parents (planned). Without the former, our daughter might have grown up as one of those spoiled kids who’ve never flown down the back. So I try to convince myself that our customary right-turn at the aircraft door is character-forming for her even if it’s spine-deforming for me. The financial reality is that by foregoing bigger seats and posher booze up front I saved about eight grand in the day it took us to get to London – which is far more than I’ve ever actually earned in a day (I’ve never been a lawyer; or a plumber). If, like me, you must fly economy, here’s my hot travel tip: Order a ‘special meal’. I always enjoy the confused look when asked: “Mr. Matthews, did you order the Hindu non-vegetarian?”. In character, I confirm with that side-to-side head bobble Indian people do in lieu of nodding. Then I tuck into two types of curry, basmati rice, pickles, and a poppadom as I watch fellow passengers await their ‘chicken or fish’ and ponder the wisdom of a similar, if temporary, epiphany. One part of the flying experience that doesn’t change – regardless of class of travel or religious persuasion – is the ordeal of going through airport screenings. (Actually, correction; today’s security

‘profiling’ means quite the opposite. Now that word is out about my suspicious in-flight diet, I can expect to be hauled aside and strip-searched faster than you can say ‘pass the chutney’.) I appreciate the need for security checks. What I don’t understand is why the rules differ so much or why it is that some of the x-ray machinery used in the war on terror can spot an extra carton of fags inside a metal suitcase but can’t penetrate the cheap vinyl enveloping my laptop. Brisbane requires me to take my laptop out of my bag; so does Singapore. Hong Kong doesn’t always; Manila never does. In Manila, though, I must remove my shoes – suggesting the contents of my footwear is more noxious than my computer software or hardware (it wouldn’t be the first time I’ve heard that). The last time I passed through Singapore I had an extra-large toothpaste confiscated but was allowed to keep a tube of wasabi. Surely the latter is potentially more dangerous? Departing Brisbane, my large, melting wheel of brie – which could have been masking all sorts of substances – was waved through but my small bottle of Evian was still deemed a threat. **** One thing air travel with a child has taught me is that one of the greatest inventions ever is the wheeled suitcase. Why were we able to put a man on the moon decades before we put wheels on luggage? Did chiropractors conspire to block the patent? **** I’ve no idea how the Aussie dollar will be faring by the time you read this. As I calculated my holiday spending money before leaving, it became clear that the ‘currency specialists’ employed by our banks – and quoted daily in the media – are just as clueless; except that they get paid fat salaries for saying stuff like ‘commodities and consumer sentiment will dictate how the Aussie fares today’ (great insight which conveniently covers a rise or a fall) – or ‘if it breaks that barrier then we could see it move further’. Or bizarrely precise but meaningless stuff like ‘a move above 99.25 US cents means we could see it target 99.65/70 US cents’. It’s a terrific job because, like a weather forecaster, no matter how wrong you are, you’re still welcome in the office the next day. **** On a topical note, my Olympic claim to fame is that, working for the organisers in Seoul in 1988, I was tasked to accompany 100m ‘winner’ Ben
Johnson to the doping centre to give his urine sample. Claiming dehydration, he sat for a couple of hours unable to pee. In the end, just to hurry things along, I filled the bottle for him. That didn’t turn out exactly as I had expected. **** Paris is on our agenda. I’ve made the mistake of asking the hotel for a room with a view of the Eiffel Tower. I even topped and tailed the email with a ‘bonjour’ and a ‘merci beaucoup’ and a cute story about how our daughter saw the tower in one of her Barbie movies and is so looking forward to our visit. This should guarantee a gallic shrug from the kindly front desk clerk and dingy digs facing in the opposite direction. **** One of the joys of England in summer is the late night daylight; unlike Queensland there is no overwhelming concern about the effect long days might have on curtains, upholstery or insomniac cattle. The other great thing about these long summer evenings is the country pubs – pokie-free and serving proper ales – and their gardens. Australians (like Americans) enjoy joking about our ‘warm beer’ while consuming litres of mostly bland stuff (WA’s ‘Little Creatures’ is a notable exception) which must be frozen to be drinkable. Beer was invented long before fridge-freezers and in England we’re served superbly-crafted brews un-chilled for the same reason that a good red wine isn’t popped in an ice-bucket. Debate [and joke] over. **** The kids of Australia’s Junior Masterchef are little heroes here (not in France I hasten to add). I used to quite enjoy the show but the more I watch, the less I like it – especially the contrived interviews which somehow, we’re led to believe, these culinary prodigies calmly do right in the middle of an intense 45-minute soufflé challenge. Just once, I’d like to hear one of the youngsters tell a judge ‘go away; can’t you see I’m busy?’. I’m now convinced it’s all done with clever camera angles and mirrors; that and their mums sneaking in to finish the job while the judges take a bathroom break. You heard it here first. **** If you’re so inclined, I’ll raise a warmish glass to the Queen for you while I’m here. If you’re not then have a cold one there. And, while I’m in a celebratory mood, belated best wishes for your un-Christmas in July.
