Editor’s letter Firstly, thank you so much for all the positive feedback we have received about our previous issue. Naturally, being an ‘Anniversary’ edition it was an important one for us and hearing your wonderful comments about the cover and content was very rewarding. Now, moving on to this special ‘Boat Show’ issue, which coincides with the 2014 Sanctuary Cove International Boat Show. The streets of London are congested, and my driver is taking me through dead-end alleys in seemingly the most roundabout way to get from Shoreditch to Battersea. I grow a little impatient because I really don’t want to be late for Victoria Beckham. This is a woman who is perfectly put together in the latest incarnation of her style, chic, polished Celine-esque minimalism which hangs impossibly elegantly on her petite frame (exactly how she achieves this without being swallowed up is an anomaly). She helms a young and rapidly expanding Ready-to-Wear line – her own namesake – and an offshoot line called Victoria, all the while raising four children and maintaining a marriage of 14 years to famous footballer, David Beckham. Being late for a first-time meeting is not the impression I want to make on Mrs Beckham. I arrive at her Battersea design studio at just about 9am on the dot. Whew. But she’s not here yet. “The traffic,” says one of her staff. It’s all right with me; like I said, she’s got a lot going on. I flip through a rag – which she later testifies is not hers – and sip an espresso offered to me by one of her kind staff, and in no time I’m approached by Victoria Beckham herself,

wearing a beautiful wool and pony hair coat of her own design. My first thought is, she’s super-pretty. She whisks me back into a conference room, where a lovely spread of fruit awaits her, for which she sweetly thanks her assistant, Sarah. The clean, white palette of her offices is tasteful and a reflection of the clean cuts she now favours in her wardrobe. Poster-sized photographs hang on the wall, including a handsome portrait of her husband. And so we begin a conversation about her two passions – family and fashion. First and foremost, Victoria Beckham is a mother and a wife. It’s not exactly the way she imagined life would be; it’s much more. “When I was younger, I wasn’t one of these young girls that dreamt of getting married and having children at all. I was always very ambitious, and I knew that I wanted a career. It wasn’t until I met David that it even occurred to me to get married,” she confesses. There wasn’t a hotter couple in Britain at the time, and women around the world aspired to the look and lifestyle of a footballer’s wife, an image that Victoria unintentionally popularised. “I never look back at pictures and cringe, because I think everything was good at its time, and I was expressing myself,” she declares. >>

Today Victoria Beckham has evolved to epitomise the glamorous working mum, photographed frequently with her toddler daughter Harper bouncing joyfully upon momma’s fabulously trousered hip as she trots – in vertiginous Manolos, no less – around London, New York, and Los Angeles running errands, shopping Prada, and ambitiously building her legitimate fashion empire. “I think the older that you get, the more

accepting you become of yourself and your body and everything about you,” says the designer. “It’s great that I can design clothes that I want to wear. “I really like Balenciaga,” she adds. “I also like to support other British designers as well. I’m in a position where I can get a lot of attention for what I wear, and it’s great that I can support other designers, which is really important to me. There’s lots of great female designers out there as well, so I like to support them. I think what Phoebe [Philo] is doing at Celine is great. I think what Stella [McCartney] is doing is great.” The famous Beckhams with their genetically blessed good looks and familial obsession with fashion are the picture of celebrity, though beneath the surface, what cameras and blog gossip can’t capture is the family that is filled with real love and dedication. “Everything that I do revolves around the children,” Victoria says. “I never miss anything at school, I never miss anything at all because I manage my diary in a way that means that I can do everything.” When David Beckham was signed to the Los Angeles Galaxy to boost the profile of football (known to Americans as soccer) in the United States, the whole family made the move stateside in 2007. “It was the best six years of my life,” she says of her stint in Los Angeles. “I was so happy. The kids were happy. David was happy.” It seemed natural that Victoria Beckham would end up in posh Beverly Hills, making quick friends with some of Hollywood’s A-list. As if she hadn’t already been scrutinised by the media in Britain, in LA she became a real paparazzi favourite, which gave the world a candid glimpse into her reinvention. >>

It was this exposure that inspired the famous photograph shot by Juergen Teller for the Marc Jacobs Spring/Summer 2008 campaign, of her tanned, toned legs hanging out of a shopping bag. The iconic photograph was a comment about fashion and celebrity as products, and Victoria Beckham understood this. In a sense, this photo was a benchmark of her fashion cred. Not only was it Juergen Teller and Marc Jacobs, but she was owning her fame, and her obsession with fashion. “[Fashion] was always my passion,” she muses. “It’s always what I had to do, what I wanted to do, what my tummy was telling me I was destined to do.” She had the opportunity to collaborate with some well-known fashion brands, leading her to enter into her most ambitious and most successful phase of her fashion career. “It was great that I had the opportunity to do that because I learned a lot,” she says of her previous design collaborations. “And then as soon as I was in a position to be able to bring everything inhouse I jumped at the chance to do that.” With the help of her manager, mentor and best friend, Simon Fuller, she launched her own Ready-to-Wear line, which debuted for the Spring/Summer 2009 season at New York Fashion Week. What many didn’t know then,

and perhaps still don’t, is that Victoria Beckham is not just a clotheshorse. The woman certainly understands fashion – both the aesthetic and business sides of it. As with other celebrity fashion lines, hers was subject to some prejudice, but critics were quickly dazzled by her beautifully cut dresses, so wellcrafted down to the seaming details and corsetry.

“I do feel very grateful to the industry for the fact that they left their preconceptions at the door. [Marc Jacobs] says I shouldn’t say that because they didn’t, however, the collection spoke for itself,” says Victoria. “I like to think that the industry was very kind and good and they came in and judged the collection for the collection.

Neiman Marcus, the powerbrokers of fashion obviously appreciated the design and the luxury of the clothes. “I’ve had lots of incredible retail partners, as well as fashion journalists, that have been with me right from the beginning. You know, I haven’t done this on my own, and I think it’s important that people know that I acknowledge that and I appreciate it,” she says. Ten seasons later, Victoria Beckham is a fullfledged Ready-to-Wear brand, incorporating denim, accessories – luxurious and minimal handbags and clutches and one of her signature staples, big sunglasses – and for the past three seasons, the Victoria line. “When I did my first presentation, I didn’t have really expensive hair and makeup. I didn’t have a stylist. It was me and my friend who was my PR at the time holding up dresses the night before the presentation. It’s very different to what it is now. But I really wanted to do this in the right way, and it seems to have worked. “I think as a brand, what we’ve done so well

“But I’m constantly trying to evolve and better myself,” she adds. “I’m never going to sit back and become relaxed at all.” Victoria has also launched ecommerce in the US and UK, with definite plans to branch out into other global markets. “Asia is really important to me,” says the designer. “Women in Asia really understand fashion. And they’re not afraid to express themselves. And I love that.” Design-wise, Victoria Beckham is completely hands on with her lines, her primary goal being giving women that famous girl power she touted so long ago with her super-girl-group the Spice Girls. “I love women and I want to make women feel good about themselves. I want women to feel confident. I want women to feel sexy in herself. And I want to empower her. That’s why I do what I do,” she enthuses. “I don’t have tons and tons of designers like people think I do. I pull in the right people that can advise me and tell me who the best factories are that I have to work with, and help me out with the technical side of things. I’m doing a lot of it myself, but I have to have a business head on my shoulders as well and just bring in key people that can help me ... now I have a business with all these

categories. None of them are licensing. I own everything with David [Beckham], my husband, and with Simon Fuller.” By the end of our conversation, my anxiousness had long been relaxed by the ease of Victoria Beckham’s company. I’m charmed – and maybe a little giddy – to find her to be a real girl’s girl, with a sense of humour, who giggles with her husband at the Royal Wedding. “I pinch myself everyday,” she says. “I think that my public image is very different to the real me. And that’s okay, it is what it is. I gave up getting upset about that a long, long time ago. But I’m really, really lucky.” The woman has everything, but the high profile, the fancy invitations and loads of designer clothes are really just accessories. We all enjoy going to dinner parties but sometimes even the very thought of returning hospitality is enough to induce a panic attack! Here are a few tips on how to be the hostess with the mostest. Remember, if your culinary capacity is somewhat limited, go with a dish you’ve never failed with. There’s always one. It may be simple but by the time your guests are pleasantly pickled they won’t notice. It’s also important to go all out on table decorations. While guests are busy admiring your floral arrangement festooned with matching dripless candles they’re less inclined to notice what they’re eating. Do keep decorations low, however, as it’s nice for guests to be able to see one another, and avoid heavily scented blooms which may give rise to serial sneezing. If it’s a formal dinner and you’re using placecards write the name of the person in big print on the other side of the card so the guest opposite knows who they’re talking to. This aids conversation. It’s courteous to offer a guideline regarding dress to your women guests. It can be very uncomfortable poured into a low-cut, backless, sleeveless dress if the dinner is to be in the garden and the mosquitoes are on the guest list. Suggesting your guests ‘just come casual’ can also be misleading: to one that could mean cut-off jeans, singlet and thongs, to another, a simple little shift by Versace. Be specific. Tell them what you and your beloved are wearing. Allow a margin for latecomers although a socially acceptable lateness of 20 minutes is about as much as most meals would stand. Be

Sam’s menu is designed to stimulate a relaxed dining experience with a multiple course journey to be shared with friends. Ingredients 2 whole quail, breasts and legs only 1 tbls duck fat 2 cloves garlic 3 sprigs thyme 4 quail eggs 2 baby onions 4 baby carrots 4 baby radishes 1 jicama 1 tsp honey Bacon Crumble 150g breadcrumbs 100g jamon, chopped ¼ bunch parsley, chopped Onion Gel 6 onions 1 bunch thyme 7g agar agar

Method 1. Make the onion gel by roasting the onions and thyme until soft and then simmer in quail stock. For every litre, add 7g agar agar. 2. To make the bacon crumble, sauté the jamon in butter. Add breadcrumbs and once golden, remove from heat and add parsley. 3. Confit the quail in the duck fat, thyme and garlic and cook in a 80°C oven for one hour. 4. Sauté the cooked quail in a little butter until golden. 5. Boil the quail eggs for 1½ minutes and refresh in cold water. Peel and smoke over woodchips until ready to serve. 6. Blanche the baby onion and carrot. 7. Cut the onions in half and sauté in butter until caramelised. 8. Glaze the carrots in a saucepan with a teaspoon of honey. 9. Slice the jicama on a mandolin and cook in an emulsion of chicken stock, butter, thyme and garlic. The radish does not need cooking.

To serve 1. Bring the dish together by sprinkling the bacon crumble in the middle of the plate. 2. Lay the quail and vegetables on top, placing the quail egg on either end. 3. Shape the jicama into a spiral and place on one end of the dish. 4. Pipe the onion gel at intervals on the plate and garnish with micro herbs if desired.

Ain’t it funny how some of the most mundane pieces of daily life sometimes have their own secret histories; glamorous past lives that seem strangely out of kilter with our current perceptions, kind of like discovering that your granny was once a supermodel. Which brings me to salt! Yes, the stuff in the shaker on your kitchen table. In its time – and it covers quite a span, with the earliest evidence of salt harvesting dating back to earlier than 6000BC – it has started wars and was used to end them; it became one of the world’s major commodities trading, at one stage, for the same value per pound as gold. There are cities named in its honour and its ties to both religion and superstition go back for centuries. In the days before refrigeration it was the main tool for preserving foods, and food preservation is, of course, still part of its arsenal. But of the 200-plus million tons that will be produced globally this year, less than 20 per cent is destined to be put to any sort of culinary use. Manufacturing, salting roads and swimming pools account for the bulk of the harvest. But this is a cuisine story, so we’ll leave the industrial stuff alone and focus on salt destined for the table. Until a couple of decades ago salt – to me and to most Australians – meant those very fine grains

of rather pure sodium chloride purchased in white plastic containers with a twistable lid. You could get it plain or iodised: you still can. But these days we can choose from flakes and crystals, pinks, greys and whites, seasalts, mined salts and the stuff hand-scraped from the salt-pans. There’s probably more. Each and every one of them tastes a little different thanks to the nutrient and mineral impurities from the different sources. The idea for this story came from an episode of Landline called In the Pink, and it details the story of Mount Zero Pink Lake Salt. Anyone who has flown on a clear day to Adelaide or across to Mildura will have seen the vast salt lakes that dot the country. One of them, in the west of Victoria just a few kilometres out of Dimboola and a mere 90 kilometres from the South Australian border, is the source for Mount Zero. It’s not a massive lake; a little over a kilometre long and about 900 metres wide, but for the slow, labour intensive task of hand-harvesting salt it is more than enough. Taking the salt is a painstaking business, and these guys go about things much the same way as it must have been done a couple of millennia ago. Here’s what happens … Western Victoria is a region of winter rainfall and through the cooler months the lake is filled with water. Salty water, but water nonetheless.

The lake is fed a little by streams and rainfall, but most of its water comes from underground. During the hot, dry summer months the water evaporates leaving behind the salt. In autumn, before the rains begin but after the severe heat of summer has passed, the team ventures out on the pans pulling barrows laden with crates.

It’s fascinating that such an unheralded, daily staple can have the same sort of intricacies, subtleties and complexities as wine and cheese.

Then, using broad shovels, they begin the hard yakka, scraping the salt and dispensing with the top layer because it will have a film of dust and other impurities. The salt, as the name suggests, is pink thanks to an algae that lives and dies in the brine. It leaves behind beta-carotene (the stuff that gives the orange colour to carrots, paw-paws and yams) which is apparently quite good for us. But there’s


also a heap of other minerals that not only have health benefits, but also add to the flavour and texture of the salt. And that’s the big difference between this raw, natural product and the cleaned, rather unidimensional stuff in the white plastic containers. It also opens the door on the vast array of different salts around the world, coming from seas with different mineral bases and plant life in their waters, and from grounds and salt pans with unique mineral makeups. In the case of Fleur de sel and sel gris (flowers of salt and grey salt) the origin is the same – evaporated sea salt taken from the salt pans. But the Fleur de sel is white and flaky: it’s the stuff off the top layers. Sel gris is grey in colour and much more coarse in texture: it’s the stuff from the bottom of the salt layer that comes in contact with the pan floor. They feel and taste remarkably different. It’s fascinating that such an unheralded, daily staple can have the same sort of intricacies, subtleties and complexities as wine and cheese. And it’s also nice to know that salts like Mount Zero are harvested the old way, with little or no environmental impact, no refining, and no adulteration. These many variations are nothing new, in fact they have centuries – millennia – behind them. It’s simply that we are finally connecting the dots.

A pleasant drop Mount Pleasant Estate is home to a legendary set of vineyards.

Maurice O’Shea is an Australian winemaking legend. Along with Max Schubert (the guy who created Grange) he can be credited with forging Australia’s tradition of producing world-class table wines. This year marks a century since he left Australia to study winemaking in France, returning six years later to talk his mother into purchasing what is today known as the Mount Pleasant Estate in the Hunter Valley. Between the late 1930s and when he passed away in 1955, O’Shea crafted some of the greatest wines of the era; wines that many would consider simply the best … era be damned. The odd survivor appears for sale (last year a bottle of 1942 T.Y. Shiraz sold at auction for $5,000) and many more still slumber in private cellars, old and fading but still alive. The heart of the Mount Pleasant Estate is a small (3.11 hectare) plot of shiraz vines known as the Old Hill vineyard. When the O’Shea family bought it in 1921 those vines were already 41-years-old: today they are 134. At the same time the O’Shea’s also purchased the adjoining blocks and planted a 0.74 hectare

plot of shiraz the called Old Paddock. In 1939 a 31 hectare property now called Lovedale joined the collection to be planted seven years later with white varieties. And in 1945 the much larger Rosehill vineyard was added to the fold. They are a legendary set of vineyards. It was 1932 when the McWilliam family purchased a half share of the Mount Pleasant Estate. Nine years later they bought the rest, leaving Maurice O’Shea, as head winemaker, free to do what he did best. The McWilliam family wasn’t new to wine. By 1941 when they completed their purchase of the Mount Pleasant Estate, they already had 64 years under their collective belts, with vineyards in Cowra and the Riverina. Today they have spread further afield, crafting wines from the cooler regions of New South Wales – Hilltops, Tumbarumba, Canberra and Orange – as well as owning brands Laira in Coonawarra and Evans & Tate in the Margaret River. But Mount Pleasant Estate remains the jewel in the McWilliam’s crown, with shiraz and semillon the mainstay varieties.

Anyone who hasn’t tasted a top Hunter Valley semillon with five or ten years bottle-age has missed out on one of the great wine styles of Australia. There is magic in their depths but sadly few people drink them and they are hard to sell. The style is unique and the seductive complexity – toast, honey, lemon-curd – they gain with time is simply extraordinary. And considering the time invested in them and the splendour of the end product they are ridiculously good value. McWilliam’s Elizabeth is the perfect toe in the water. It’s released as a two-year-old and as a museum release (the Mount Pleasant website has vintages on offer going back to 2002) with the younger wine costing anywhere from $15 to $20. The old stuff might cost a few dollars more: it’s ludicrous. But the real sizzle, of course, comes from the old vines of the Lovedale vineyard. Lovedale semillons from a good vintage are nothing short of treasures. They are restrained in their youth – the current release from 2007 is a mere 11.5 per cent alcohol. And even at seven years of age it has remarkable freshness and


purity. But what was once merely zippy and lean has blossomed into an incredibly complex, alluring wine: not showy or brash, just quietly spectacular. In a good cellar it has another decade or two before it begins to fade. If Hunter Valley semillon is something of hidden treasure, Hunter Valley shiraz is an enigma. For a style that did so much for Australian wine, Hunter shiraz lost out to the easy pleasures of the rich, South Australian styles, especially through our alcohol and oak infatuation in the eighties and nineties. On those terms it couldn’t compete; by nature it is medium bodied with its fruit tempered by savoury, earthy notes. But the past decade has seen a swing back to more subtle elegant wines; wines that hold your interest for more than just a glass, and that accompany food brilliantly, ergo … Hunter shiraz. The enigma is that the best of them – despite their relative slightness – have the potential to live for half a century. And if there’s a small pool of truly elite versions – Brokenwood Graveyard, Tyrrell’s Old Patch, Audrey Wilkinson ‘The Lake’ – you can count at least three that come from the Mount Pleasant Estate; Old Paddock & Old Hill, Rosehill and Maurice O’Shea. So a century after he left Australia’s shores, and nearly 60 years after his death the legacy of Maurice O’Shea is well and truly alive. It won’t be many years until the last few remaining bottles of the wines he created will have gone. But the fruits of his vision remain in a small but extraordinary collection of vineyards called Mount Pleasant Estate.

Exit strategy Succession planning … how can you ensure the longevity of your business?

Research shows that more than 1.4 million owners, employing upwards of 7.9 million and contributing almost $500 billion in GDP, will retire in the next decade. So how will these owners ensure the longevity of their businesses into the future while at the same time securing the realisation of the benefits of their hard work and accumulated wealth when they leave? Planning for your exit Planning for the day you leave your business is a valuable investment. If you have spent many years developing and growing your business, selling it on the open market may not appeal to you as much as passing it on to someone you know and trust. This process is called succession. Succession is about ensuring the ongoing success of your business through a co-ordinated transfer of ownership and control. A succession (or exit) plan is the strategy you can use to achieve this outcome and your own personal objectives when you leave your business. A succession plan can yield important benefits to the continued operation of your business and the preservation of your accumulated wealth by defining exactly who will take over the business, when they will take over the business and how they will take over the business when you leave. Whether you elect to sell, retire or are compelled to exit from your business for health reasons, it is important that you spend the time with your family and/or business partners to plan your exit strategy. Factors to consider There are a number of issues that need to be considered in the development and implementation of your succession plan to ensure its effectiveness including:

• your personal plans for the future and timing of the succession process. • preserving your personal wealth. • capital gains tax. • ability of the business to function without you. • managing the needs of the business and your family. • business growth plans. • the desire and ability for the next generation to run the business. • exit strategies. In doing so, you will need to articulate your needs and goals, and what you wish to achieve for your business, you and your family by: • identifying key stakeholders. • understanding the financial needs and other wishes of all parties. • d eveloping a shared vision between owners, other family members and other stakeholders. • identifying and prioritising the most critical issues. What are the options? Depending upon your individual preference, you can choose to adopt and implement either a family succession plan or a non-family (business) succession plan. Family Succession Planning If you want to maintain your business as a family business, you can transfer your business to a family member through either a gift or sale. You should consider whether you want to transfer both ownership and management to the family member and, further, how important it is for continued family involvement in the growth of the business. In addition, consideration should be given to potential complications that may arise when transferring your business to a family member.

Will the family member have the expertise to manage the business? Or will the selected family member simply want to sell the business after you leave? Will the interests of other family members be an issue? Business Succession Planning For non-family succession, there are two options. You can sell your business to employees through a management buyout, or sell your share of the business to other owners through a buysell agreement. A management buyout is where you sell your business to managers or loyal employees. A buysell agreement determines how the remaining business partners will buyout your share of the business in the event of your exit, and at what price. A buy-sell agreement can also control when the owners can sell their interests. Benefits Whether you select a family or non-family succession plan, the existence of a formal and contemporary succession plan will be an effective means of planning for your exit because it can: • a ssist to maximise the return on your investment; • ensure a smooth transfer of ownership and control; and • minimise disruption to business operations. Tips for successful implementation Effective succession planning is a complex process that often raises many potentially difficult legal, financial, tax, equity and emotional issues for business owners. Preparing the successors to manage the business and your wealth in the future will involve careful consideration of issues such as legacy and birthright, interpersonal dynamics and, put simply, the best person for the job.

Spirited drive Chris Nixon reviews the Lexus ES350 Luxury and the IS350 F Sport.

After more than 20 years in Australia, Lexus’s brand values continue to be value for money, quality and a high level of after-sales service. And while the Europeans offer ever-expanding product catalogues, Lexus sticks with a welldefined line-up with minimal options – what you see is what you get. Its other distinction these days is engines, where the Lexus brand does not follow the eco-trend to turbocharging, smaller capacities and fewer cylinders. Lexus makes the world’s biggest range of hybrid passenger vehicles. Its four sedan and two SUV lines are powered by fours, V6s and V8s, but instead of turbos to complement efficiency they have hybrid-electric power. Hybrid-enhanced models have not come my way for review recently, but I have driven two of the newest and most popular Lexus sedans, the IS350 F Sport and ES350 Luxury. Available in a wide choice of variants with a 2.5 V6, 3.5 V6, sports V8 or a hybrid, the IS is the most popular Lexus. It slightly out-sold the Audi A4 in the first quarter of this year. Compact and sporty, for my taste the $82,154 (RRP) IS350 F Sport is the one to have. The ES returns to Lexus price lists after a seven-year absence – and by popular demand,

the company says. The first two ES generations were extremely popular, delivering the Lexus brand experience at affordable cost in times when the range was much smaller. Though medium-size and a paper alternative for an E-Class or 5 Series, the ES isn’t a rival. It’s a different kind of car, with front-wheel drive and leaning toward space and comfort rather than sportiness (which is the job of the Lexus GS).

True to Lexus form, there are many more standard comfort and convenience features than there is space to list here.

The ES range opens with the 300h Luxury (hybrid) at $68,993, but our test vehicle was the ES350 Luxury, priced at $72,947. Comparing specifications shows the difference between IS and ES intentions. Both have the same basic 3.5 litre engine, but the IS is more highly tuned, producing 233 kiloWatts and 378 Newtonmetres to the ES’s 204 kW/346 Nm. >>

The ES has a six-speed automatic, the IS an eight-speed. The ES is marginally more economical – 9.5 litres per 100 kms – but it should be said these big petrol-only engines can’t match the low consumption of more modern units in other brands. On the road, the comfortable ride of the ES is assisted by tyres of 215/55/17 dimensions – that is, plenty of rubber in the sidewall to cushion bumps. The IS350 F Sport, which wants to give the driver sharper steering response and more grip in the bends, runs on much stiffer 225/35/18s at the front and 225/40/18s at the rear. In fact, the IS350 F Sport is a particularly agile luxury compact sedan. It sits nicely on the road and steers precisely. For spirited driving, the automatic transmission can be over-ridden by shifting manually with finger-tip levers behind the steering wheel. Steering, accelerator and shock absorber response can be sharpened by selecting an electronic Sport mode.

The ES is more languid, relaxed, but nonetheless an enjoyable drive. All the current Lexus range now has quite aggressive body styling, highlighted by a deep grille pinched in at the sides. Response to this seems to be divided, but undeniably the Lexus stands out more than at least a couple of its conservative German counterparts. The dash and interior, again following a family theme across the IS and ES range, are strikingly modern. Functional too, with minimal controls and perfectly-lit electronic instruments. Most of the interior functions – audio (including digital radio), phone, navigation, air-con, trip computer and vehicle monitoring – are controlled by a mouse-type knob on the centre console. It’s used to select icons on the colour screen and I found it intuitive to use. Voice control also is provided. Both cars tested were equipped with radar, or active, cruise control. It takes an initial leap

of faith to trust that, once you have set the car’s speed and its comfortable distance to vehicles in its direct path, it will automatically maintain that distance and adjust the speed as necessary even to the point of coming to a stop. But it does work and like the reversing camera, automatic lights and wipers, pre-collision activation, land departure warning, blind spot monitoring, flashing brake lights, tyre pressure monitors, auto-dipping headlights and even auto-dimming outside mirrors helps make these cars extremely safe. True to Lexus form, there are many more standard comfort and convenience features than there is space to list here. Lexus value for money remains a strong buyer attraction, as do high-quality finish, Toyota-like dependability and after-sales service that takes care of the owner as well as the vehicle.

The F-Type Coupe is arriving almost nine months later than its acclaimed Convertible sibling, yet it looks so right it could only have been designed at the same time. Rag-tops are not especially big sellers in sunny Australia, so it’s possible the Coupe might significantly extend the F-Type’s popularity.

Alaska evolution The Alaska Sedan evolution continues with the introduction of the new Alaska 47 Sedan. Based off the hugely successful Alaska 46 gen 2, the Alaska 47 Sedan takes the obvious step forward in development, to produce a vessel with more outdoor real estate. With a swim platform extension and the introduction of an amenities centre that includes storage, a sink with hot and cold water and bait tanks, this multipurpose area has been transformed. Work hard and exercise leading up to the minute your car arrives to take you to the airport … you’ll sleep well on the flight and adjust pretty quickly to the time difference.

What is your favourite piece of technology? A fishing rod … I’m guaranteed to put food on the table no matter what happens. What has been your best/favourite overseas purchase?

every airport security checkpoint … quite funny when it happens because we’re always right! My worst travelling story – heading to New Guinea to a remote village for a ten day fishing trip only to watch my rod tube fall off the airport luggage cart on the tarmac, bounce underneath the wheels and cop the wrath of every wheel that followed. Consequently it broke every rod I had inside it. Brought a tear to my eye. What do you recommend as a ‘must-see’ destination? Disneyland. It’s the only place on earth where a 41-year-old man can officially be a kid and a hero to his kids all while proudly wearing a pair of Mickey Mouse ears! Do you have a favourite hotel? The Grand Hyatt … can’t tell you where as we love its seclusion and want to keep it that way!

I’d love to say a house in the Hamptons but will settle for an original Ben Aipa hand-crafted surfboard he personally gave me. The bloke’s a legend!

Susan Mallinson, from Cove Travel, had the pleasure of experiencing a dream holiday at the Fusion Maia Da Nang, Vietnam. Travelling by air direct from Singapore into Da Nang, Susan was pleasantly surprised at the accessibility of the resort. A mere 15 minutes from the airport by car, Fusion Maia Da Nang sits majestically alongside the beautiful expanse of the sandy white coastline. Boasting an all-inclusive spa concept, guests can enjoy a vast assortment of spa treatments, dining experiences, and luxury facilities at no extra charge. On arrival, Susan was charmed by the gentle and professional staff, who presented her with a delicious beverage and a brief overview and tour of the spa and resort. Within ten minutes of

arrival, she was settling into her pool villa which provided privacy and comfort beyond compare. With contemporary decor, open-plan living, and a courtyard with private swimming pool, it was impossible not to unwind and relax in such tranquil surroundings. She spent many lazy hours reading in the garden and taking refreshing dips in the water to cool off. The option to sleep in a direct beachfront villa was also available, with silken white sands and ocean views stretching endlessly towards the horizon. She was most impressed with the professionalism and skill the spa staff displayed, with treatments personalised in great detail to match the requirements and preferences of each individual. Optional activities reinforced the message of the day. From tea tasting to yoga, Vietnamese lessons to meditation, cooking classes to market tours, cycling to tropical fruit tasting, there was entertainment available for all measure of tastes. For those that enjoy a game of golf, the resort is located within close range of Montgomerie Links and the world renowned Da Nang Golf Club. Fusion Maia provided regular shuttle rides from the resort into Hoi An. This was a highlight for Susan. The enchanting little village was a treasure trove of authentic shops, tailors, restaurants and markets. The use of complimentary push bikes enabled leisurely access across a charming little bridge and into the heart of the old town. She enjoyed this immensely, making the journey more than once. Of particular interest was Reaching Out, an arts and craft shop with a workshop attached. Here, high quality, hand-crafted Vietnamese gifts were made by people with disabilities. The workmanship was outstanding and she was amazed at the beauty of the finished pieces, in particular the jewellery.

Tonic Lounge had a more casual atmosphere. The all-day Asian-inspired tapas were beautiful, with the lounge bar music creating the perfect backdrop for the relaxed vibe. High tea was also available with the selection of either an Eastern or Western version. The Fresh Pool Bar offered poolside dining with fresh salads, breads, gourmet pizzas and exotic juices with a Mediterranean influence. Susan thoroughly enjoyed the wholesome, fresh produce and modern Vietnamese flavours. Susan left the resort feeling completely relaxed, refreshed, pampered and indulged. Her seven night stay provided a delightful contrast to daily life and she wishes her stay could have been longer. She has spent many moments reminiscing over the delights and luxuries that she experienced and hopes to return to Fusion Maia and relive the blissful serenity once more. Visiting Madeira recently was a truly nostalgic trip for my family and I for it was our home for several years. I had read about the massive changes that had taken place with new roads being built and a much more aggressive approach to tourism. I found exactly that but at the same time I was enchanted by the unique charm and traditions of the island and islanders which has not changed one bit despite the surrender to modernisation. What kind of tourists to you find visiting Madeira today? Well, for a start I didn’t expect to find David and Lesley Calver, residents of Sydney and Sanctuary Cove enjoying a holiday in Funchal to break up their long trip to England.

Only 55 kilometres at its longest Madeira still offers an amazing diffusion of lifestyles … “It is remarkable that you can leave freezing England in the middle of January and in no time at all be out on a beautiful golf course with spectacular scenery and clear blue skies,” David said. David and Lesley agreed that their luxury hotel in Funchal was among the best they have stayed in anywhere in the world and when they accepted my invitation to dinner in a private club on the top of Cabo Girao, one of the highest sea cliffs in Europe, they also got to sample some pretty special food. The best of the Madeiran culinary specialities is Espada, or black scabbard fish, which thrives only in the depths of a small part of the North Atlantic Ocean. It is slimy, eel-like and ugly but its flesh is pure white, soft and delicious. In Madeira it is traditionally served with fried local banana and maize. The other dish that just has to be tried in Madeira is Espatada – yes you could make a mistake and order the wrong one – which is in fact cubes of fillet steak threaded on to a branch of a bay tree and then grilled over an open fire. It is served hanging vertically with a wad of garlic butter wrapped above so that the melting butter works its way down the branch and around the pieces of steak. Makes your mouth water just to think about it. >>

I am not kidding but there is a third speciality. It is called Espadarte – I know all three names sound almost the same but you get used to it – and is grilled swordfish steak. It is found in other parts of the world, too, but probably not quite as fresh or served with salads that were still growing in someone’s private terraced garden that very morning. Madeira is still regarded as a destination of the well-to-do British tourist but the Germans and Scandinavians have caught on fast and those three nations account for most of the one million visitors who arrive by air each year. Today the drive from the airport is disappointing as it is simply all four-lane highway, efficient but not as awe-inspiring as the old drive along narrow mountain roads and through delightful tiny villages. Funchal itself is a mixture of the old and new, with many new hotels appearing on the scene together with modern shopping centres and restaurants. Yet in the midst of all this modernisation is the old market, thriving every day with fresh fish, fruit and vegetables and – mainly for the tourists – the three most popular

exports, Madeira Wine, Madeira Cake and Madeira Embroidery. There is still a big demand for all three along with the traditional Madeira Wickerwork, still made by hand in the mountain village of Monte. The biggest attraction for tourists is, of course, the sub-tropical climate. In Funchal it seldom strays outside the 20-27ºC range throughout the 12 months of the year. The island was claimed by the Portugese more than 500 years ago but it is in fact closer to the coast of Africa, being only 500 kilometres from Casablanca in Morocco. No-one visits the island for the white sandy beaches because there aren’t any. Nowadays the two challenging golf courses, the quality of the hotels and the cuisine are a big attraction. But you have to venture into the mountains to see the real Madeira and experience the many micro-climates that add to the fascination of its villages. Monte is a must. The old steam train has given way to a spectacular cable car for a never to be forgotten ride to this tiny village which was once a popular health resort for the rich and famous. Monte – or to give it its full name Nossa Senhora do Monte (Our Lady of the Mountain) – offers a

spectacular view of the bay of Funchal and has its own beautiful tropical gardens. The ride down is a lot more traditional but again is not for the faint-hearted. Nearly 100 years ago the locals discovered the fastest way back to Funchal was aboard wickerwork sleds which almost found their own way down a two kilometre slope, aided only by a couple of locals hopping frantically alongside and steering the sled around some tricky bends. You can sample the ride today at a cost but you will still by guided by locals, complete with their white traditional costume and straw boaters. Madeira is a paradise for tourists keen on walking. The island is interspersed with 4,000 kilometres of Levadas, mini canals originally dug to bring much needed water from the wetter parts of the island to the drier sun-parched regions of the South. To follow their paths can be a breathtaking experience through orchards, vineyards, banana plantations and vegetable gardens. I sold my Madeiran home some 20 years ago. I now regret it because there is nowhere quite like the ‘Pearl of the Atlantic’.

Brisbane break The River City is the perfect destination for a mini-break.

One of the best things about living on the Gold Coast (other than the obvious – beaches, themeparks, relaxed lifestyle) is its proximity to urban Brisbane. Known as the River City, Brisbane was recently described by author and philosopher Alain de Botton as an example of ‘chaotic ugliness’ … but I beg to differ. I love Brisbane. I love the river, I love the buildings, I love the shopping, the restaurants and the people. And given that we recently played host to Prince William and the Duchess of Cambridge, I love the fact that all the streets in the CBD are named after the royals (past and present). Luckily, two of our children live in Brisbane so we have the perfect excuse to make the one-hour drive on a regular basis … but it is not often we take the time to stay overnight and soak up the cosmopolitan atmosphere. However, we recently did just that, spending the night at the stylish Pullman Brisbane King George Square.

This cool, contemporary hotel is located right in the heart of the CBD, overlooking the newly refurbished City Hall. Our corner suite was beautifully appointed and offered stunning views of the city skyline, while its convenient location was the perfect starting point to explore the city. At 7.30pm on a Saturday night King George Square and the Queen Street Mall were buzzing with locals heading to their favourite eatery or nightspot, tourists taking happy snaps and enjoying the sights, and voyeurs like me peoplewatching and wishing I was staying longer than just one night. As this trip was a bit of an impromptu visit, we had the luxury of taking our time to wander through the many back streets and laneways looking for somewhere to eat. Of course, if we had planned it better we probably would have dined at Stokehouse, ARIA or one of the other hatted restaurants that now abound in the CBD, Eagle Street Pier and South Bank, but on this occasion we found ourselves

at one of the alfresco restaurants in the Mall … and we were pleasantly surprised. Our meal was fresh, delicious and well priced. A short stroll after dinner took us down to the river where we jumped on a City Cat and cruised the waterways taking in the lights of the Brisbane River, the Story Bridge and South Bank before heading back to the hotel for a nightcap in the KG Bar.

I love Brisbane. I love the river, I love the buildings, I love the shopping, the restaurants and the people. The following morning, after a delicious buffet breakfast in Bistro Allure (a stylish restaurant with panoramic views which is also open for a la carte lunch and dinner), we took advantage of the hotel’s late checkout and convenient location and headed back to the city centre for a spot of retail therapy.

It was then on to QueensPlaza and The Myer Centre Brisbane for the much anticipated shopping trip (did someone mention shoes?) and a rejuvenating coffee before the return trip down the M1. As we headed for home I said a silent ‘thank you’ to Brisbane for the relaxing break … in the immortal words of Arnold Schwarzenegger in The Terminator: ‘I’ll be back!’

Family owned and operated, the relaxed Sanctuary Cove eatery is the second for Mark and Liezel Summers, who also own the Spotty Cat Cafe and Bistro in Upper Coomera. “The opportunity came up and it was the perfect location at the entry to the Village and the first place you see as you enter,” said Mark. “Sanctuary Cove has a great, relaxed feel and a wide variety of visitors who visit – it’s a great mixture of people.” The café’s name was inspired by the wildlife in the Summers’ homeland, South Africa, where

they founded, developed and operated a safari lodge for several years. Open for breakfast, lunch and dinner, the family restaurant offers a tasty menu of gourmet sandwiches, burgers and Italian style mains such as pasta dishes, chicken parmigiana and pork scaloppini as well as children’s options. The Spotty Cat hosts live entertainment four nights a week from Wednesday through Sunday, with nightly drink specials and a courtesy vehicle available for pick up and drop off. Serving great value ‘comfort food,’ and coffee from Gold Coast-based roaster Cre8tive Coffee, The Spotty Cat is also available for catering and venue hire.

Village update The Marine Village Sanctuary Cove continues to evolve.

Sanctuary Cove has been busy of late, with lots of upgrades and green improvements happening around The Marine Village. Down at The Marina, you may have noticed the addition of 12 new 10m tall Cuban Royal palm trees that now grace The Marine Village

waterfront. Mulpha has also introduced additional Marina access to F Pier, with a new gangway installed out the front of the newly constructed waterfront building. The boardwalk has also been lifted between Black Angus Bar & Grill Restaurant and the new

waterfront building, with new handrails and Marina access introduced. An additional 18 car park spaces have been added to the northern end of The Marine Village, so why not pop down for a spot of shopping or a bite to eat today.

Building on the success of previous years, the 2014 Sanctuary Cove Ladies Golf Classic attracted a full field of local, interstate and international golfers. The ladies enjoyed three days of competition

As well as enjoying a relaxing few days of golf, shopping and socialising, the ladies also raised much-needed funds for local charities Paradise Kids and the Adam Scott Foundation. Sanctuary Cove Golf and Country Club will be

The dance of romance Sir Kenneth MacMillan’s Romeo & Juliet is the centrepiece of Queensland Ballet’s Season 2014.

Shakespeare’s tragic tale of star-cross’d lovers is told through breathtaking, glorious dance in Sir Kenneth MacMillan’s Romeo & Juliet. A magnificent and grand production, the very human story at its heart is captured with extraordinary intimacy. Whether in a lethal marketplace brawl or the blissful balcony pas de deux, the realistic and daring choreography resounds with raw emotional truth. Creating Romeo & Juliet in less than five months, Sir Kenneth’s worked in close collaboration with Principals Lynn Seymour and Christopher Gable, on whom the ballet was made, however Rudolf Nureyev and Margot Fonteyn danced in the première performance

on 9 February 1965. When the curtain came down, the enraptured audience demanded a legendary 43 curtain calls. Now, almost five decades later, Queensland Ballet is honoured to be the first company in Australia to present this celebrated work of 20th century dance. Birmingham Royal Ballet’s sumptuous sets and costumes are being used in the Brisbane production, creating a truly beautiful setting for this much-loved ballet. One large set serves multiple functions as the market place in Verona, the Capulet’s palace, Juliet’s quarters and the crypt, magically transformed with the addition of furnishings,

draperies, heraldic pennants and, of course, a balcony, all brought vividly to life with the impressive use of lighting by John Read. Acclaimed Spanish ballerina Tamara Rojo and Cuban dancer Carlos Acosta take on the principal roles for this lavish production. Tamara is Artistic Director of the English National Ballet and until recently was a Principal with The Royal Ballet, while Carlos has danced with many companies including the English National Ballet, National Ballet of Cuba and The Royal Ballet. Australian-born, International star Steven McRae also joins the cast for the Queensland Ballet production.

Steven was appointed a Principal at The Royal Ballet in 2009 and has been a guest artist at American Ballet Theatre, The Bolshoi Ballet and The Australian Ballet. Both Carlos and Steven will be performing as Romeo, and Tamara is performing Juliet. All three principals will dance alongside a Queensland Ballet Romeo or Juliet during the 2014 season.
