t is Christmas. It is the end of the year. So long, farewell, auf wiedersehen and goodbye to 2013 (as the von Trapp family from that most festive of musicals would undoubtedly croon). This is the fourth and final Guide 2 Guildford of 2013, and since launch in September, we say we’re pretty darn proud of how this little papery producer of wonder has turned out. But let us not get all misty-eyed – this is the December edition, a happy place, and as you’d expect is as festive as a reindeer eating a mince pie while adorned in a knitted jumper. We aren’t grouchy, bah humbug merchants here at TG headquarters – we are allencompassing, perma-smiling festive fun-peddlers. And so it shall be for December. So for this very special edition, we’re going all out with the tinsel, tassels and mistletoe and offering you, dearest readers, all the warmth and comfort that you could wish for in these cold times. Talking to... Emma Stevens F
olk/pop singer/songwriter & multi-instrumentalist Emma Stevens received a standing ovation from David Walliams when she played on the Radio 2 Chris Evans breakfast show, has made countless ‘best stripped down act’ lists and recently headlined the BBC introducing stage. Her debut album sold out in one day, but she happily remains independently managed with no label. We caught up with Emma to talk music, art and Christmas wishes…
Are you Guildford born and bred?
What’s on your speakers?
How do you write your music? What is your process?
What have you released so far?
Yes. I was at ACM for two years studying guitar and performance. It often starts with a feeling or emotion that needs to escape. I wrote ‘Sunflower’ just after I lost my mum. That came out in two hours.
Influences? Musically and worldly?
My mum was a massive influence on me. She was the one who got me to pick up a guitar. I love travelling, meeting new people and art.
Favourite thing to do when you’re not playing?
Surfing. The gym. Taekwondo. I’m a very active, outdoorsy girl.
Top 5 experiences as a musician so far?
Headlining the BBC Introducing stage on Hyde Park. Going on the Chris Evans breakfast show. Playing to 40,000 people at Carfest. Collaborating with Charlie Midnight and Passenger and working with Pete Woodroffe, he brings out the best in me.
Local hang out spot?
Bill’s Restaurant and Bar Des Arts. When it’s not freezing cold I love going down by the river and castle grounds.
Favourite band?
This is really hard. Folk; Paul Simon, Rock/Pop; Fleetwood Mac, Country; Dixie Chicks, Metal; Incubus and then Jason Mraz.
Stu Larson. I supported him recently and he blew me away. Four EPs and my first album, Enchanted. We wanted to find a way of releasing my music in four EPs so that people would know there was an album coming. (The four EP covers are sections of the album cover which Emma’s mother painted.)
Big venues or little venues?
Both. The smaller ones are more vibey but I’m more likely to throw in the foot-tappers at big gigs.
What does the future hold?
Lots of gigs and festivals and my second album. This month I’m touring with Jean Bottic and planning my headline tour for March 2014.
Favourite Christmas present?
The last Christmas present my mum gave me. My banjo - she came around the corner playing ‘Jingle Bells’ on it.

What are you listening to? Danny | Veteran at Record Corner Nestled in the heart of Godalming since 1958, The Record Corner has survived against all record-sale plummeting odds and continues to stock new and old records and sheet music. Danny joined in 1997 and spent his first week selling Elton John’s ‘Candle in the Wind’ Princess Diana tribute song. With the unmistakable sounds of Kurt Cobain resonating out of the speakers we popped into Record Corner for a chat. What was the first record you ever bought? ‘Greatest Hits of 1986’ when I was 11 and then ‘The Great Rock ‘n’ Roll’, Swindle’, (Soundtrack to the 1980 mockumentary of the same name.) What record has had the most significance in your life? ‘London Calling’ by The Clash. When I got the record I was really into punk, getting angry and shouting and at first I was disgusted because it was multi-genre. It was the first record that made me change my mind about what you could call good music and it showed you could move on with music. What are you listening to at the moment? Jonathan Wilson, ‘Fanfare’. The guitar solo in ‘Dear Friend’ has been described at the best guitar solo since Pink Floyd’s ‘Comfortably Numb’. I’m not sure about that but it is good! Also Volcano Choir, which is a little more free-for-all…

With the festive season officially in full swing, we thought that we’d give you the history of some of your favourite carols – because we all love a bit of tradition. Moreover, in December there is a feast of Christmas music performed by choral societies – across the whole of Surrey. The Guide 2 Guildford are informative as well as educational…

HARK THE HERALD ANGELS Words originally by Charles Wesley, set to a tune by Mendelssohn, which he originally composed for the Gutenberg festival in 1840 - to celebrate the 400th anniversary of the invention of printing… WHILE SHEPHERDS WATCHED THEIR FLOCKS Written in about 1700, the words have been sung to lots of different tunes. The tune which is now sung to On Ilkley Moor ‘bat ‘at was originally composed by a Kentish shoemaker for While Shepherds to be sung in a Wesleyan chapel in Canterbury - but it was pinched by our friends in Yorkshire… WE THREE KINGS OF ORIENT ARE Written in 1857 by the Vicar of Williamsport, Pennsylvania. The kings are not named in the Bible, but are derived from a 6th century Armenian tradition: Melchior, king of the Persians; Caspar, king of the Hindus; Balthasar, king of the Arabs. In the Armenian tradition the kings were accompanied by 12,000 soldiers on horseback - tricky for the school nativity play!

How and why did those ships sail into Bethlehem? Why three? There are many theories about the origin of this carol. One suggests that it is based upon an ancient song about the transport of the relics of the three kings and their arrival at Cologne, where they are preserved in the cathedral to this day. Another theory is that it is one of the many ‘ship’ carols, popular in medieval Germany, in which a ship’s journey across the perils of the ocean is the metaphorical backdrop to the story of our redemption.

GOD REST YE MERRY, GENTLEMEN The words ‘God rest ye merry’, are addressed to the anxious shepherds; ‘Don’t worry, you guys. Keep calm’, might be a modern version. Our Charity Spot 2014: PHYLLIS TUCKWELL HOSPICE The Charity When TG Media started up 6 years ago, one of our priorities was to try and shine a light on the various charitable organisations that do such fantastic work in our area. As you will have no doubt noticed, we have a regular article each month that focuses on a different charity, and hopefully brings them the much needed support that they each deserve. For 2014 we have decided to launch a new charity arm to our current media partnerships. Pay for an Hour of Care This Christmas Now here’s how you can help. The NHS covers less than 15% of Phyllis Tuckwell’s costs, which is under half the national average for hospices. This means that they have to raise 85p in every pound the Hospice needs to spend – and on Christmas Day and Boxing Day this equates to £750 per hour. HOMELESS AT CHRISTMAS by Rich Lee
B
eyond the glow of Christmas lights and the radiance of shop fronts, a sadder truth lies at the hidden heart of Guildford and surrounding communities. Homelessness - a problem that seems to never truly disappear, despite ever-changing initiatives by central and local government appears to be on the rise. Since 2011 there has been a 25% increase in statutory homelessness, and a 24% increase in households in temporary accommodation. Statutory homelessness is granted to those households or individuals that meet specific criteria, and to whom a homelessness duty has been accepted by the council. According to data compiled by the charity Shelter, the number of Surrey families with children accepted as statutory homeless has risen from 45 at the start of 2012 to 78 by the middle of 2013. But the statistics only reveal those who have approached their local authority for support; many more exist off the radar. Mental health, debt, isolation, housing and employment exacerbated by the recent economic climate - are just some of the reasons that the unfortunate end up on the streets. Professionals working to support the homeless will tell you that drugs and alcohol are merely an ‘emotional anaesthetic’ to the main issues. “You can’t really put a stereotype on it,” says Neale Redmond who runs the Number Five Project, a shelter on Guildford’s York Road. “Most people in the public
realm would have the image of a drinker - sixty plus - who’s slightly unhygienic, but that’s not a homeless person anymore. Sure those guys still exist but most of them past 55 get looked after in sheltered accommodation. “If there is such thing as a stereotype now, it’s the under 25’s who might have drug problems or lack of support from family or carers. Another demographic we’re seeing a lot of now is the 50-plus guy who’s very low needs but has never found himself in a situation where he’s lost his job, or goes to an online moneylender. He may be slightly in denial about his situation, build up debt and lose his family. Maybe a bit of depression, drink soon follows and he finds himself on the streets. It’s a very sad situation.” It is, however, a situation helped significantly by the efforts of local agencies, shelters and hostels like Neale’s. There are five hostels in Guildford alone with over 100 beds, including the Number Five Night Shelter, Vaughn House, Mulberry House (a women only hostel), Cyrenian House and The YMCA. Supporting these are bodies like Guildford Action, HOST and Woking’s York Road Project. Indeed, the supporting organisations and charities represent a confluence of compassionate agencies, charities, churches, general public and the Borough Council. “There’s certainly no ‘NIMBYS’
around here,” says Neale. “Our building, provided by the Council, could be a million pound house, but they choose to give it to us, in a residential neighbourhood. We’re not hidden, we’re part of the community and our clients and neighbours react to that and respect each other. That is down to GBC being proactive on the problem of homelessness.” The Number Five Project opens its doors at 6pm every day of the year and is a direct access shelter, meaning that any client can request a bed. Here, they receive a meal, a hot shower, have their laundry done, sleep in a bed and receive breakfast before the shelter closes at 10am the next day. But with the mercury already diving, the shelter prepares to make their basement available on an emergency basis. Called the Severe Weather Emergency Protocol, they meet the increased demand during winter with extra camp beds, hot soup and rolls. For all of the town’s affluence, Guildford can at least claim a position as one of the most forward thinking, proactive boroughs when it comes to homelessness and poverty. And never more so than at this time of year, when the most vulnerable in the community face a Christmas without a home to call their own.

When you’re Christmas shopping or doing battle in the January sales there’s a significant increase in thefts from handbags. It’s all too easy to take your eye of the ball when you’re rushing around the shops with lots of bags, but you need to keep your handbag, purse, wallet, mobile and keys close. Remember: Zip it, lock it, watch it! Petty theft and pickpocketing does occur at night-time too with many of us going out more than usual during this time of year and having items stolen. And speaking of which…

ypically increased alcohol consumption is part and parcel of festivities, but it comes with added risks. So, while we know that vast ma jority of our wonderful readers are upstanding citizens, we must remind you not to lose your head when you’ve had a few beverages. Alcohol-related violence spikes around this time of year, so don’t become ‘that’ type of person – you’d much rather end up at home than in a police cell, wouldn’t you? So remember, when you’re out on the town with friends, keep an eye on each other and your belongings. This extends not only to when you’re having a few drinks, but afterwards too – unsurprisingly, an increase in drink driving is prevalent over the festive period, and this is something we should all be acutely aware of. If you’re going to drink, don’t drive – book a licensed taxi. Simple really.

A POTTED PINT HISTORY OF OUR LOVELY ALEHOUSES by Will Knowlton
D
uring this jolly festive season, most of us will at some point sit at some point in a boozer but how did this social centre of our community come about? Turns out we’ve been drinking ale since, well just about The Bronze Age. Then came the b***y Romans and their roads. In between writing “Romani ite Domum” on Hadrian’s Wall and painting our gentlemen’s vegetables blue we started to frequent these tabernae. Here we’d find refreshment, food and a place to whinge about Senate Tax. So Tabernae, Tavernae, Tavern… See it yet? The Romans did indeed go home and this was the point that our Anglo-Saxons forbears took the mantle and established “alehouses”. These were people’s homes and the lady of the house, the alewife (how awesome does that sound?), would place a green bush on a pole to let everyone in the village know her brew was
ready. Buxom alewives aside, the alehouses were incredibly important; giving the community a focal point where they could meet, chat and arrange help with each other’s problems like Wulfric’s goats always getting out. Alehouses became so widespread that King Edgar, in a move that would have sent chills down the spines of the Board of Directors of Weatherspoons, decreed that there shouldn’t be any more than one alehouse per village. That was in 965, my how things have changed. In 1393 King Richard II had another go at putting in place some law and order and ordered that landlords had to hang signs outside their pubs passing legislation that said “Whosoever shall brew ale in the town with intention of selling it must hang out a sign; otherwise he shall forfeit his ale.” (He starved to death by the
way, probably looking for a pub with a sign). The idea was to make alehouses easily visible to passing inspectors and borough ale tasters who would then decide, by means of a thoroughly good session no doubt, how good the ale was which the pub provided. Old Will Shakespeare’s father John (I knew him well) was one of these early CAMRA types. What’s also important to remember is that during the Middle Ages more or less everyone was illiterate and pictures worked better than words as a way of spotting a pub. So, in essence, these bastions of Britishness have been around since forever, constantly serving their community and helping us in sad and in good times. CHRISTMAS: The Butcher’s Tale by Rich Lee
D
espite struggling in the shadow of the large store chains, traditional, independent butchers still offer the kind of quality and personal service that supermarkets only dream about. Serving their loyal customers all year round, it’s at Christmas when these butchers face their greatest demand. As families all over Surrey scramble to buy their turkeys and roasting joints, I spoke with two of the county’s most established butchers to see how they fair during the festive season.
One of those was Rawlings in Cranleigh. Robert Rawling’s shop has been here for 29 years but the building itself has been a butcher for over 100. Cranleigh is England’s largest village and still retains its country charm thanks to authentic traders like Rawlings, Cranleigh Fishmongers next door and a variety of privately owned antique and gift shops. However, the village has seen three supermarkets move in over the last twenty years, driving off many other long-established traders. Senior butcher Ian Clements said, “There used to be six butchers in Cranleigh. Since 2000, we’re all that’s left.” So how did Rawlings of
Cranleigh survive where others have succumbed? “Robert kept us going by ensuring that our meat always spoke for itself,” says Ian. “We’re fortunate to live in an affluent area where people will pay a little bit more for quality meat. Cranleigh is a walking village; people here have always done their shopping on foot, but if it’s a choice between a supermarket and a quality butcher within a short distance from each other, then sadly many people decide on cost alone. “So we offer something the supermarkets never can and that is true quality. We hang our beef from four to
six weeks. The supermarket won’t, so that they can provide it cheaply, but what we have that they don’t is flavour.” He gestures to a stunning 3kg rack of beef, marbled throughout with buttery fat and darkening around the edges from the hanging process. Inside the shop, the produce is laid out with an artist’s eye; again, Ian’s handiwork. And the beautiful window display, that keystone of every traditional butchers shop? “Well, people eat with their eyes,” he winks. As for Christmas, Ian says that the orders have already begun to flood in. “During our peak in December, we

serve around 2800 customers a week.” So who’s buying? “We always see a 25% increase in trade leading up to Christmas, mostly from people who haven’t returned since the Christmas before.” It’s clear that such a fleeting (though very welcome) boost in customers disappoints Ian, but he remains stoical. When your produce is this good, and beloved by the many customers that will only buy from Rawlings, he is rightly proud of having helped his shop survive as Cranleigh’s last traditional butchers.
Over in the idyllic village of Pirbright near Woking, another traditional butchers shop is still going strong despite the threat from the supermarkets. In fact, the Fulk Brothers has been here for 85 years and counting. For the last 56 of those years, Tony Fulk has built on the legacy of his Grandfather, providing superior quality meat to his devoted customers. His butchers shop is every inch the traditional sort with sawdust on the floor and rosettes on the wall, awarded for their own prizewinning livestock. Tony’s wife Judy believes that the Fulk Brothers’ longevity is less to do with location and more to do with
customer loyalty. “We have customers from London to Somerset and all over the country order from us,” she says. “They may have shopped with us in the past and moved away or have merely heard about us, but either way they keep coming back!” Like Rawlings, senior butcher Steve believes the key is sourcing the best meat and treating it with respect. But, says Steve, it’s also about the personal touch. “Often people will come in with a recipe in mind, but we might then advise them to maybe consider a cheaper cut of meat that does the job even better. Our younger customers often ask us how to cook the meat they buy, and we’re only too happy to
help.” With Christmas orders coming in fast - 500 at the start of December already- Fulk Brothers offer excellent free-range turkeys, sourced from a family-run concern in Kent. But what of the coveted “bronze” Turkeys? “They’re a little more expensive, but have a gamier flavour than white turkeys,” says Steve, “we don’t sell as many as they are not to everyone’s taste. Still delicious though.” So what does a butcher and his family have themselves on Christmas day? “Turkey,” states Steve. Before I can ask how he cooks his turkey, he laughs and says “I just bring the meat home. I let the wife cook it.”

A CHRISTMAS FEAST with Fiona Knowlton
THE TURKEY
INGREDIENTS • 1 x 12-14 lb (5.56.5 kg) turkey • 10-12 rashers streaky bacon • 400g softened butter • Salt and pepper
METHOD 1. Pre-heat the oven to 425°F/220°C/Gas 7. Stuff the turkey cavity with the sage and onion stuffing, saving about two-thirds to stuff the neck end between the flesh and the skin, securing with the neck flap under the bird’s back and a skewer. 2. Rub the softened butter all over the bird and then lay the streaky bacon rashers over the breast, overlapping slightly, then season with black pepper and salt. 3. Place the turkey on the ‘trivet’ of vegetables (see Gravy below) in the roasting tray. Cover the turkey loosely with foil. 4. For a 12-14 lb (5.5-6.5 kg) turkey: Cook for 40 minutes then reduce the temperature to gas mark 3, 325°F (170°C) and cook for a further 3-3½ hours. Baste the turkey every 30-40 minutes. Cook for a final 30 minutes (uncovered) at gas mark 6, 400°F (200°C). 5. To test if the turkey is at the right temperature, insert a meat thermometer into the thickest part of the bird –without touching bone. For a 12-14 Ib bird, it should read 155f/68c.
SAGE AND ONION STUFFING INGREDIENTS
METHOD
• 1 onion, peeled and finely chopped • 1 tbsp vegetable oil • 1 tbsp fresh sage, finely chopped • 80g/3oz fresh white breadcrumbs • salt and pepper • 1 egg, beaten
1. Sweat the onion in the oil, until soft but not coloured 2. Mix together the onion, sage and breadcrumbs and season well. 3. Add enough beaten egg to bind the mixture together and use to stuff the turkey

PIGS IN HONEY BLANKETS INGREDIENTS • 16 rashers of streaky bacon • 32 cocktail sausages • 3-4 tbsp honey • Salt and freshly ground pepper
METHOD 1. Preheat the oven to 180°C/350°F/Gas 4. Using the back of a knife, stretch each bacon rasher out to stop them shrinking as they cook. Cut each rasher in half and roll a piece around each sausage. Put the sausages in a roasting tin lined with foil. 2. Drizzle honey over the sausages and season. Toss everything together. Bake for 35 minutes. Shake them now and again, and baste. They should be dark brown and shiny.
ROAST PARSNIPS INGREDIENTS
METHOD
• 1kg/2¼lb parsnips • 125ml/4fl oz vegetable oil • 80ml/3½fl oz maple syrup or honey
1. Preheat the oven to 200°C/400°F/Gas 6. Peel the parsnips and then slice length ways. 2. Place the parsnips into a roasting tin and cover with the oil. 3. Then cover in maple syrup or honey and place into the oven. Roast the parsnips for 35 minutes, or until they are tender and golden-brown
ROAST POTATOES INGREDIENTS • 1kg/2½lb floury potatoes. Maris Piper make for the best roast potatoes. • olive oil or goose fat METHOD 1. Preheat the oven to 220°C/425°F/Gas 7. Peel the potatoes and cut into large chunks. Parboil in boiling salted water for 5 minutes. Drain and toss in the pan to roughen the edges. 2. Put your fat or oil of choice into your roasting pan until it is about ½ an inch deep, then place in the oven until it is smoking. Carefully take the tin out of the oven and add the potatoes to the hot fat, basting them as you do so. 3. Put the tin back in the oven and cook for about 1 hour until the roast potatoes are golden and crunchy on the outside and soft in the middle. Turn them over from time to time whilst they are cooking to colour on all sides.
CRANBERRY SAUCE
BREAD SAUCE

• 100g light muscovado sugar • 100ml orange juice, fresh or from a carton • 250g pack fresh or frozen cranberries
• 600ml milk • 50g butter • 1 onion, chopped • 6 cloves • 6 peppercorns • 2 garlic cloves • 1 bay leaf • 3 thyme sprigs • 100g white breadcrumbs • 4 tbsp single cream or mascarpone • pinch nutmeg, freshly grated
1. Simmer the milk, butter, onion, cloves, peppercorns, garlic and herbs in a pan for 20 mins.
METHOD 1. Tip the sugar and orange juice into a pan, and then bring to the boil. 2. Stir in the cranberries, then simmer until tender but still holding their shape– this will take about 5 mins if using frozen cranberries or 8-10 mins if using fresh. 3. The sauce will thicken as it cools. Will keep in the fridge for 1 week. 4. On the day, bring to room temperature before serving.
2. Strain and return the liquid to the pan. Add the breadcrumbs and simmer for 3-4 mins. 3. Stir in the cream or mascarpone. Add nutmeg, season and serve. 4. Can be made up to 3 days in advance and heated up on the hob or microwave on Medium for 3 mins.

GLAZED CARROTS INGREDIENTS • 700 g carrots, sliced into Batons • 350-450ml chicken stock or water • 1 tsp sugar • generous lump of butter • (optional) chopped chives or thyme, to garnish • black pepper METHOD
BRAISED RED CABBAGE WITH APPLE INGREDIENTS • 50g/2oz butter • 1 medium onion finely sliced • 2 dessert apples peeled, cored and sliced • 1kg/2¼lb red cabbage finely sliced • 100g/4oz sultanas or raisins (optional) • 200ml/7fl oz sherry vinegar • salt and freshly ground pepper
1. Put the carrots in a saucepan with enough stock or water to half cover them. Add the sugar, butter and salt and pepper. 2. Bring to the boil, and then cook on a rapid boil for about 45 minutes until all that is left of the liquid is a thick buttery coating. 3. Shake the carrots to distribute the coating evenly. Tip into a warm serving dish and garnish with chives or thyme.
METHOD 1. Melt the butter in a heavy-bottomed saucepan or casserole dish. 2. Soften the onion in the butter for three minutes, and then add the apple and cabbage.
3. Cook for approximately five minutes until softened, and then add the sultanas and the sherry vinegar. 4. Place a lid on the pan and cook for one hour, until just tender. 5. Season to taste. Continue to cook until the cabbage is tender and all the liquid has evaporated.
BRUSSELS SPROUT GRATIN INGREDIENTS
METHOD
• 900g/2lb Brussels sprouts trimmed • 20g/¾oz butter • 4 tsp sunflower oil • 150g/5oz bacon • 400ml/14fl oz double cream • 2½ tsp lemon juice • 5½ tbsp fresh white breadcrumbs • 4 tbsp freshly grated parmesan cheese • salt and freshly ground black pepper
1. Preheat the oven to 200°C/400°F/Gas 6. 2. Place the sprouts into a saucepan of simmering salted water and cook for 4-5 minutes, until almost, but not quite, cooked. Drain thoroughly, allow to cool slightly and cut in half. 3. Place the butter and oil into a wide frying pan over a medium heat. Add the bacon and sauté for 3-4 minutes, until lightly browned. 4. Add the sprouts and sauté for a further 2-3 minutes, stirring constantly. 5. Add the cream and bring the mixture to the boil. Boil for 2-4 minutes, until the cream has reduced to a rich sauce. Season to taste with salt and freshly ground black pepper. 6. Remove from the heat, add the lemon juice and spoon into an ovenproof gratin dish. 7. Mix the breadcrumbs and parmesan cheese together in a bowl, then sprinkle evenly over the top of the sprout mixture. 8. Place into the oven and bake for 18-20 minutes, until the top is golden-brown and the cream is boiling. 9. Remove from the oven and serve in the gratin dish (when the dish has cooled slightly). 10. Can be made the day before and reheated in the oven for 15 minutes when you take the turkey out to rest

TO TEST WHEN THE TURKEY IS DONE. WITH A MEAT THERMOMETER Insert the meat thermometer into the thickest part of the turkey, avoiding touching bone. The optimum temperature will be 155F°/68°C TO TEST MANUALLY Pierce the thigh with a skewer and check the juices. They should run clear. If you gently shake the drumstick, the joint should move freely.

ANDY MOUNSEY The Royal Oak, Trinity Churchyard, Guildford. How long have you been in the pub industry? 10 and a half years now, since I was 18. What was the first pub you worked in? The Red Lion in Godalming under the tutelage of a certain Ian Thompson (Ed.- See November’s TG2Guildford…) What makes your pub different from the rest? We’re an old traditional English pub! We run 3 beer & cider festivals annually, and throughout the rest of the year we really drive our real ale; we have a wide range of Whiskey’s too. We also have an open mic night once a month (first Thursday), and live bands usually on the last Saturday of the month. We like a bit of rugby too and show Aviva Premiership matches. In-house recommendations? Our legendary burgers sell very well - and again all of the ales. The two together make the perfect combo. At any given time we’ll have two Fuller’s house ales, two guest ales and a Fuller’s seasonal. Favourite tipple? One of our excellently well-kept ales…! Gastro pubs or traditional taverns? Traditional Friday nights or Sunday afternoons? Friday night; it’s a great atmosphere to work in. When I’m not working it’s even better… Favourite pub in the Guildford area? The Star Inn in Godalming; it has a great range of real ales and real cider and a great atmosphere. Cosy and traditional. Favourite pub elsewhere? The Bitter End in Cockermouth, Cumbria. It has its own micro-brewery. If you were a drink what would you be? A dark full-bodied real ale – Fuller’s ESB (5.5%)

THIRSTY BUSINESS: THE SMOKING BISHOP By Alex D’Arcy
…we will discuss your affairs this very afternoon over a bowl of Smoking Bishop, Bob!

“ moking Bishop?” I hear you say. No it’s not the latest reform from the Church of England, but instead a drink popularised by Dickens’ A Christmas Carol and first mentioned in English literature in Jonathan Swift’s verse Oranges from the late 1600’s. Alas the foundations (as we know it in this Fair Isle) of mulled wine were laid - and a particularly potent variant at that. The name is said to be taken from the resemblance of a steaming goblet of wine and a robed bishop, um, smoking. Of course, mulled wine is not indigenous to Britain. In fact, if you were to scour the globe for similar, you would undoubtedly find at least one version of said drink from most regions, let alone countries. Glühwhein is popular amongst German speaking countries, Nordics may be familiar with Gløgg, and Brazilians may be partial to a glass of vinho quente; so it can be said that as human beings, we appreciate the combined taste of warm red wine, spices and citrus fruit. So here’s to the global appreciation of spiced wine in the winter months! Ideal for warming one’s cockles as the cold nights draw in, here’s a mulling recipe from us to you. Merry Christmas! If this all sounds like far too much work, then by all means venture to one of these lovely establishments The Kings Head, Kings Road, Guildford | The Seahorse Inn, The Street, Shalford The Richard Onslow, High Street, Cranleigh | The Star Inn, Church Street, Godalming RECIPE • 4 Large Oranges • 3 Lemons • Brown (Demerara sugar) – 2 tbsp (sweeten to taste) • Star of Anise • Cloves • Cinnamon Sticks • 1 Bottle of red wine • 35cl Brandy • Cup of orange juice
METHOD The night before… 1. Roast oranges and lemons in a shallow baking tray at 120c for 1 ½ or until golden brown 2. Place oranges and lemons into a bowl and pour any leaked juices from the fruit into the bowl as well 3. Liberally prick fruit with cloves 4. Add sugar and 2 stars of anise 5. Pour wine over fruit 6. Cover with cling film and leave in a warm place for 12–24 hours
The day after the night before… 1. Remove oranges and lemons and cut in half 2. With the back of a spoon or your hand press as much juice out of the fruit as possible into the wine 3. Sieve mixture (to get rid of any unwanted pulp/cloves) into a saucepan and add your cinnamon sticks 4. Add juice and sugar to taste 5. Bring to high simmer for five minutes 5. Add Brandy and simmer on a low heat for 20 minutes (we don’t want it to lose its potency) 6. Serve with an orange/lemon wedge and cinnamon stick

ucked away and all but out of sight in Wood Street Village just outside of Guildford, you’d be forgiven for thinking the White Hart pub might be a secret of the well-kept variety. Surrey’s foodies know better however and have been flocking here since the 200 year old Inn was taken on by head chef Paul Scott and transformed into arguably one of the finest gastropubs in Surrey. Arriving at the smartly modern pub, it still retains enough of its country roots to put you at ease straight away. Veer left from the bar and you come to a long dining room that’s all soft lighting, polished wooden tables and comfy leather chairs. The room’s spacious enough for groups yet intimate enough for couples. The menu is diverse with nods towards Asian, Lebanese and Italian cuisine alongside classic British and European pub fare.
For our starters, a roasted beetroot ‘borscht’ soup was disarmingly fresh and light yet full of earthy, root flavour. Delicately spiced and with a dollop of crème fraiche, it was a dish perfect for the season. Another starter presented a roasted mushroom with grilled goats cheese oozing into luscious red onion jam, sat between crisp, pillowy layers of pastry and swirled with rocket pesto. So good, I expect I’ll be boring people about it for weeks to come.
For mains, a handsome rack of tender roasted lamb came with sautéed cabbage and bacon and fondant potato. With a sweet, red wine jus to soak it all, this was hearty pub food of the first order. A dish of fillet of gilt head bream, though, was absolutely astonishing. A perfectly cooked piece of fish atop decadent, buttery mash potato with a velvety, piquant white wine, tomato and herb sauce would have almost been enough. But the chefs go further with samphire, watercress, mussels and sweet pepper tapenade; a whole rainbow of perfectly balanced flavours. To finish the meal we had a mighty wedge of rich lemon cheesecake, served with tuille biscuit and citrus compote. A chocolate orange

bread and butter pudding was almost an indulgence too far, but the crisp, buttery dessert proved impossible not to finish and still be left wanting more. So much more than just a pub (although if that’s all you’re after, the fine cask ales, wines and lagers available should more than satisfy), it’s the exceptional food and service on offer at the White Hart that truly sets it apart and should ensure its reputation as a destination for many years.

What You Need… A large ball of super chunky wool. Gold wired ribbon (1 metre). Good pair of sewing scissors.
Stage 1…
Stage 2…
Trim your ball of wool into a perfect sphere.
Using scissors cut all of the loops around the outside of the ball of wool.
Stage 3…
Stage 4… Tie a knot into the middle of your metre length of ribbon. Create two loops with each side, tied together to form a bow.
Stage 5…
Wind the wool around your hand until you have used roughly half of the ball. Remove wool from hand and tie a piece of wool tightly around the middle. Leave a length of wool free to tie to tree once finished.
Tie bow to bauble using the surplus piece of wool attached from the beginning of the process.
Stage 6…
Well done, you’ve just made your very own Christmas decoration for your tree. Be pleased..

The long hours can be challenging on occasion but the most demanding element is that my phone can never be off. Our clients have an expectation about the level of service we provide and within that is the expectation that we should always be available.
Best things about the job? Being able to travel all over the world which includes being at Cannes Film Festival every year. But the most amazing part is finding yourself in situations with clients that create magical moments that can often be once in a lifetime experiences.
Thoughts on Guildford and the villages? I love how much Guildford has developed in many ways over the last decade. The shops are more like London now but it has still managed to maintain its charm. Even thought I spend most of my time in London for work I still come back to Guildford for my hair appointments and spa treatments.
Favourite spot locally? Newlands corner in autumn and Silent Pool. My favourite pub to meet up with friends is the William Bray in Shere.
What does your free-time consist of? Walking the dog; seeing friends when have the time!
You’ve been described as the ‘guru’ of tanning and your body sculpting fake-tans as ‘legendary’ -what’s your secret?
What do you do? I am the owner of InParlour (www.inparlour. co.uk) which is a beauty agency that operates with in Britain and Europe; I am also well known for my contour tanning technique.
How did you get into the industry and reach the level where you are now I trained 15 years ago at London College of Fashion and following completion my course
The secret to a good tan is that the skin is as well prepped as it can be. This means that you should treat it in the same way you would your face before applying makeup. This mean exfoliating, applying loads of moisturiser.
Are you working on any other interesting projects at the moment? The Oscars for next year is going to be an amazing addition to the calendar and something which we are all very excited about. We are also working on my range that will be launch this time next year and will transform the home tanning experience.
