NEARLY 75,000 SURREY ADULTS TAKE UP WALKING IN THREE YEARS Nearly 75,000 adults in Surrey have ditched the car or public transport and taken up walking regularly in their daily lives in the last three years, according to official figures. Department for Transport statistics reveal that the number of residents making journeys of 10 minutes or more on foot three times a week has climbed almost 8% in just three years to 37%. That is the equivalent of around an extra 73,600 adults getting around the county by walking between 2012 and 2014. There was also a near 5% hike in the number of people walking five times a week – the equivalent of more than an additional 47,000 people – to almost 24%. The percentage of people walking three times a week for leisure – such as taking a stroll in the park or hiking in the countryside – also increased, rising 2% to 23.5%. The news comes as the county council presses ahead with its Pavement Horizon project to overhaul more than 200 miles of footpaths. At the end of July the authority unveiled the latest pavements being resurfaced as part of the scheme to improve access to schools, doctors’ surgeries and town centres. John Furey, Surrey County Council Cabinet Member for Highways, said: “Clearly more and more adults across Surrey are getting from A to B in their daily lives on foot instead of jumping in the car or using public transport. “We’re making that easier by overhauling more than 200 miles of pavements across the county in the coming years. “That’s roughly the distance between Guildford and Manchester and while rising demand for services like elderly care means money’s tight it’s one of the many ways we’re working hard to make a big difference in people’s lives.” For more information visit surreycc.gov.uk

MACMILLAN COFFEE MORNING

It’s that time of year again to switch the kettle / Cafetière/ Moka pot on, invest in a tin of biscuits and gather your most generous pals over to yours to raise the much needed funds for Macmillan Cancer support. The World’s Biggest Coffee Morning is Macmillan’s biggest fundraising event for people facing cancer. All over the UK supporters host their own Coffee Mornings and donations on the day are made to Macmillan. Last year alone they raised a staggering £25 million and this year they aim to raise even more. The first ever Coffee Morning happened way back in 1990. It was a rather small affair with a simple idea: guests would gather over coffee and donate the cost of their cuppa to Macmillan in the process. It was so effective, we did it again the next year – only this time nationally. Since then, Coffee Morning has raised over £138 million for Macmillan. Hosting your own Coffee Morning is easy! All you have to do is sign up and Macmillan will send you a free Coffee Morning Kit, packed with all the things you need to host a wonderful event. It makes everything from inviting your friends to raising money a piece of cake. For more information, to find events and to sign up visit coffee.macmillan.org.uk

RECYCLE WEEK: 12th -18th SEPTEMBER

Recycling Week... takes place across the nation this September; aiming to revitalise and inspire our ways of thinking when it comes to what we waste and how we waste it. In this age of over consumption and the oversized cardboard box the size of the house used to home your single USB stick delivery, it’s as important as ever to take the time to think about what we’re throwing away and if that item could actually be used to produce or be used for something else more effective… Is that an old sock you have in your possession or is that in-fact an old sock that you can turn into a hanging planter? The theme of this year’s campaign is ‘unusual suspects’; identifying the items in our lives that we wouldn’t necessarily associate with recycling. Recycle, upcycle, re-use… let’s just do it and stop wasting the world away. No one wants to be a waste-man, do they fam? Here’s how, as a county and as responsible human beings, we can help!

IN THE HOME

This should be the place where you recycle from the most. Make it easier to recycle by having a small waste bin in each room. Why not collect empty water bottles and make a plastic bottle greenhouse in the garden? Then use your food waste as compost and then grow your own food – simple!

IN THE OFFICE

Is your office and are your colleagues recycle-ready? Depending on your industry, there could be a number of items in the office that you are not currently recycling that could be put to good use elsewhere. Ink cartridges, paper, and kitchen waste are all good to recycle or reuse in some way. Why not have a competition between colleagues / departments to see who can recycle the most? Just don’t put those monthly reports that were supposed to be on the boss’s desk first thing in the bin!

IN THE KITCHEN Food waste is hot on the lips right now. Food has never seemed so expensive, yet as a county we are throwing away it away by the tonne – 80,000 tonnes more specifically in Surrey alone! So not only are we wasting money on food we don’t eat, we’re not even disposing of it in a responsible way. Food waste that is sent to landfill doesn’t harmlessly breakdown. It has a big impact on the environment as it rots and releases methane – a harmful greenhouse gas that is 25 times more potent than carbon dioxide. Food waste bins are provided throughout Surrey via local councils and to recycle your food waste is now easier, cheaper and cleaner because you can line your caddy with plastic bags. You can use anything from pedal bin liners and old shopping bags, to bread and salad bags. If everyone in Surrey put all their food waste in their caddy for collection it would save taxpayers more than £3 million a year.

Don’t put it in the bin just yet! Do you know your dates?

If you think you’re putting food in your caddy that you could have eaten, understanding the different labels on food packaging can really help. • ‘Use by’ dates - you can eat or freeze foods right up to the end of their use by date. Use by dates are for safety purposes and you should never eat food after this date has passed. • ‘Best before’ dates – these are about quality rather than safety. So if the date has passed the food should be safe to eat, but might begin to lose its flavour or texture. The exception to this is eggs, which can only be eaten a day or two after their use by date, and must be cooked thoroughly. • ‘Sell by’ and ‘display until’ dates are for shop staff so can be ignored. For more information about using your food waste caddy, and how to reduce the amount of food you throw away visit recycleforsurrey.org.uk.

SWISHING Swishing (or clothes swapping) parties are a great way to get a new wardrobe or refresh your current one without buying new clothes. At a swishing event you get together with friends, family, and others to swap your wearable clothes and accessories like shoes, boots, bags and belts. You can simply organise an informal clothes swapping session with friends. But if you want to have a larger event with people who might not know each other, you may wish to follow the guidance below. How does it work? Step 1: Everyone clears out their wardrobe to find wearable items they no longer want to bring to the swishing event.

Step 2: Guests are given a token for each

Step 3: The swishing starts! Guests are invited

item donated and items are displayed before the swishing starts.

to look through the clothes and exchange items for the tokens they have.

OR JUST GIVE IT AWAY? Charity shops are possibly our favourite way to ‘recycle’ unwanted threads, books, games, CD’s and DVD’s. Let someone else enjoy what you don’t anymore whilst donating much needed funds to the charity in question. Charity shops are always on the look-out for new stock and some need more than others. Share

the love by dropping off at different charity shops whilst knowing that you’ve contributed to a worthy cause. Did you know? In Surrey last year more than 11,500 tonnes of clothes and home textiles that could have been reused or recycled were thrown away.

THE UPCYCLE Upcycling refers to the re-purposing and re-using of items that are destined for the bin. Whether it’s a table that you picked up from a charity shop that needs a new lease of life or whether it’s that over-worn leather jacket that could be made into a bag – have a go at creating and see what you can come up with. If you like the idea of upcycling but have never threaded a needle or picked up a paintbrush, there are a number of excellent course all over the county to guide you along the way. Check out some of our favourites below…

Rebecca Jane Leather Sewing School Head to Smithbrook Kilns to learn everything there is to know about sewing with leather. Basic sewing courses as well as more intermediate handbag and belt making courses are available. For more information visit rebecca-jane.com

ENTERTAINMENT

Spring King hail from Manchester and have been taking 2016 by storm. If the Beastie Boys and The Beach Boys got themselves together in a room, they would probably make music like this. We caught up with front man / drummer, Tarek Musa before they come to Guildford to play the Park Stage of Always The Sun Festival on the 10th September. By Alex D’Arcy

Yo Spring King, how you doing? We’re chilling on the beach in Bournemouth, it’s really nice, really sunny. We’re just throwing rocks into a little hole. 2016 has blown up for you, with the release of your album, a performance on the legendary Jools Holland show, an appearance at SXSW, festivals galore and global airplay – how has the ride been so far? What are the highlights? To be honest it’s been surreal. We’ve had so many good things happen one after the other. Jools Holland was obviously a massive highlight because growing up I used to listen to a lot of bands like At The Drive In; they went on the show they and were one of the biggest inspirations to me in terms of bands that has been on Jools who did such a great performance so when we went on we really wanted to do something in our own way that was just as energetic. Even before that we were at SXSW lasts year in March which was amazing, we’ve been on some great support tours. We came back from Australia last week which was incredible. The crowds were really unexpected, really huge, people singing along to all the tunes. I dunno…it’s weird, it’s great, it’s amazing, it’s just like “is this really happening?” You played The Boileroom earlier this year – how was that show for you? How do you like Guildford? Actually that was one of the best shows on the tour. It was insane. The support bands were really good and I think people were really up for it. It’s such a small venue, it gets really sweaty, really intense. I remember before we even started the set, people were already pushing people back to make a circle pit just for the first note, which has never happened before. We had such a great time at that show, it was amazing. You play Always The Sun this September – what can we look forward to? Well there’s loads of sick bands on the line-up, like The Big Moon and Mystery Jets. We’re on a really, really good line-

up for this festival. So I guess expect the same as last time at The Boileroom, which was just chaos; lots of crowd surfing, lots of stage diving…anything and everything goes. Tarek, you fall into the rare category of front man / drummer, though that wasn’t always the case - do you ever miss getting out of the front of the stage or have you found comfort behind the kit? I do actually miss getting out to the front of the stage. I would love to bass in a band one day or even play bass guitar in our band one day – I think it’s such a fun instrument. We do have a couple of low tempo, acoustic tracks and I get to come to the front of the stage and see what the boys are doing and to interact in a different way with the crowd. It’s really intense drumming and singing at the same time, sometimes my limbs just don’t want to communicate. Your album ‘Tell Me If You Like To’ is the perfect soundtrack to summer, rad riffs and plenty of sing-a-longs…it’s got a kind of Beastie Boys meets Beach Boys vibe to it – what would be the perfect soundtrack to your summer? Okay, excursions wise, I’m really into getting into the water. I’m not a very good swimmer, but I absolutely love to get onto a body board and catch some massive waves. I’m actually at the beach because I was trying to see if there would be any waves (but there’s not). I’ve not surfed yet but I really get into body boarding, pulling off tricks. My soundtrack would probably be a Beach Boys album of some sort. We listen to a lot in the van and the van has basically been our summer this year. we’ve been in the van every other day at a festival and the soundtrack is normally lots of 60’s music, a bit of Hip-Hop and a bit of old school disco you know like classic 70’s stuff, so yeah, there’s a lot of different stuff we listen to in the van to get hyped up before a show. Not a lot of rock music because I think we play so loud that I don’t think our ears can deal with listening to loads of loud music all day.

Spring King play Always The Sun Festival, Stoke Park, Guildford on the 10th September. The album ‘Tell Me If You Like To’ is out now. For more info and tickets visit alwaysthesun.co.uk

6th October

SOME WORDS WITH RUSSELL KANE We caught up with Mr Russell Kane ahead of his show at G Live to talk age… What’s the inspiration for your new show, ‘Right Man, Wrong Age’? Pretending to be younger than you are in the face of growing up. Things that grow you up quickly…I’m talking about babies. What’s the oldest thing you’ve done as a young person? Listened to BBC Radio 3 and sucked on Werthers. And vice versa, what’s the youngest thing you’ve done as a grown man? Every year I go to Ibiza in vest and shorts and party till the sun comes up. Last year I took my preggers wife. What’s the funniest example of mankind you’ve seen acting the wrong age? Me and my best friend Daniel Stone. In Ibiza. He farted and followed through. And I laughed until I threw up. Bad time. How do you see an 85 year old Russell Kane? Like Ken Dodd. But at Pacha. Who was your hero / role model when you were younger and what characteristics of theirs did you assume or perhaps still possess today? Easy: Flaubert. A mental perfectionnât slave to his art. He lived in his shed, screaming at the world. Highly sexed - like a chimp. He also wrote my favourite book: Madame Bovary. I need to re-read it. Russell Kane is on tour with Right Man, Wrong Age throughout Autumn, including Guildford’s G Live on Friday 30th September. To book tickets and for more information visit glive.co.uk

Shere Drop Bitter Wins Gold at Great British Beer Festival 2016 Surrey Hills Brewery based out of Denbies Wine Estate in Dorking scored Gold at last month’s Great British Beer Festival for their already celebrated Shere Drop Bitter. Having won bronze in 2006 and silver in 2013, finally taking home the gold is a fantastic achievement for the brewery. “We are proud of our beers and we are passionate about them,” said Ross Hunter, Owner of Surrey Hills Brewery. “It’s fantastic to have recognition from CAMRA and the industry as a whole. “What really matters to me are the people involved. We have a small and dedicated team that work hard to maintain the high quality and consistency of all our beers, as well as an amazingly loyal local following who I know will be proud to see their pint as national gold winner”. Shere Drop (ABV 4.2%) is described as pale in colour with a subtle hint of grapefruit and lemon in the aroma. “The wonderful hop bitterness is complemented by a balanced malt flavour. The beer has a long finish, which is moderately dry.”

WHERE TO EAT: THE JETTY AT HARB

By Rich Lee With the Jetty Restaurant, the new Harbour Hotel has brought a bold new dining experience to Guildford. But does it sink or sail? Kudos for trying, but the Radisson Blu group that moved in five years ago and transformed Guildford’s Alexandra Terrace into the hotel canyon it is today never quite nailed their restaurants. Count them off: Relish, Scoff and Banter, Steak and Lobster. None of them were terrible by any means, but not one ever made the spot the destination they so badly wanted it to become. Enter, then, new owners the Harbour Hotel group, and with them a breath of fresh sea air for landlocked Guildford and a radically different and more appealing establishment than the town’s seen in years. The new Harbour Hotel only opened its doors this spring but the trifecta of Harbour Cafe, the Long Bar and Jetty restaurant feels like the gift that G-town’s been longing for.

Whereas the previous restaurants to inhabit this space ran the gamut from utterly beige to stiflingly stark, the Jetty finally injects a fresh dose of style, colour and warmth where there was little before, bringing the space to life with mustard yellows, deep blues and plenty of natural light to bounce off seashell walls and sparkling glassware. Leather banquettes lend a breezy bistro vibe, a chef’s table provides views of the action in the impressive open kitchen, and attentive and friendly servers suggest a restaurant that takes itself just seriously enough.

drinks displays, on and on towards the vanishing point. It’s mesmerising, if only because it’s been so long since never that Guildford’s known anything so quite so cosmopolitan and cool.

As refreshingly swish as all this was from where we were seated, my gaze could never quite escape the vortex pull of the Long Bar beyond; all 120ft of white marble disappearing beneath the glow of deco lighting and the glimmer of bronze and polished steel, past the kitchen, past the

An early indicator of this came in the form of a quartet of amuse bouche canapes, Jetty style. A fishy ‘scotch egg’ sat on hollandaise and a miniature pan containing delicate hunks of buttery spiced octopus were a standout early tease.

As befits a restaurant set in a ‘Harbour’, the main catch here is, unsurprisingly, seafood. It’s everywhere, from the menu to the walls and a little nautical setdressing. The menu itself offers up a tantalising fusion approach to seafood, teasing and pairing ingredients into intriguing combinations.

BOUR HOTEL A starter of two golden croquettes of crab and potato were plain by themselves but made marvellous sense when mashed into a perky yellow tartare butter and a warm micro salad of cherry tomatoes and samphire. From the ‘Catch’ set menu, which offers two courses for £12.50 and three for £15.00 per person, we had a devilishly attractive grilled mackerel salad, which brought a generous slab of fillet perched over goat’s cheese, beetroot and orange; cunning flavours all and a beguiling plate of delicious simplicity. As tempting as it was to go to town on a whole South Coast lobster or a bulging platter of Fruit de Mers, I was feeling the fusion from a dish that threw together chicken, prawn and lobster. What arrived was something pretty exquisite, thanks to chicken breast that had had the benefit of a good brining for extra succulence, two fat and juicy pink prawns, buttery sweet leeks, and a deeply flavoursome lobster sauce that begged to be chased around the plate with a finger by the end. The Jetty don’t feel the need to cling to any particular region of cuisine - or fish alone - and seem happy to crib from anywhere, as we were more than happy to gorge on Asian style sticky pork belly, the fingers of tender meat given a glossy sweet glaze over soupy soba noodles, pak choi and mushrooms, all humming with subtle oriental spice. Everything we’d eaten so far had walked a deft line between light and hearty, with each dish as much a feast for the eyes as the appetite, so we indulged further with two rather ace desserts. A strawberry and marshmallow parfait was a treat for our inner kid while still being refined, but a pleasantly boozy sabayon – a rare find in these parts – infused with espresso and straciatella ice cream and chocolate flakes was a rich, creamy joy, and the copper martini glass it came in was an especially nice touch. Anything to regret? Only that I could have taken the Jetty more at their word and really explored what they can do with fish, as there’s plenty of imagination going on in the menu as there is talent in the kitchen. But I have no qualms in saying that the Jetty is one of the more exciting restaurants to arrive in Guildford for some time. Throw in the glitz of the Long Bar and the funky-chic Café and the Harbour is easily a place you’d want to sail into time and again.

cider in surrey There’s just something irresistible about the tangy amber nectar produced from September’s apple harvest. It is the unmistakable taste of the summer turning to autumn, captured in a cool, perspiring glass of dry and subtle sweetness.

By Rich Lee

How do you like these apples? England, and especially the South East, has one of the best climates for apple growing in the world. While warmer countries are better able to grow apples in vaster quantities than here, the UK’s fickle climate stresses the trees to produce fruit with a far deeper and more vivid flavour. Just taste an English-grown Cox’s apple or a Granny Smith over an imported apple and you’ll know exactly what we mean.

it rapidly became the ‘drink of the people’. Today, cider in the UK, and indeed around the world, has seen a massive explosion in popularity helped in part by the recent foodie revolution and the broader palates of the drinking public that have arisen as a result. It has also happily ridden the coattails of the boom in craft beer and ale, while offering a more gender-neutral option for those after a sweeter alcoholic drink.

The quality of our apples is what has helped make cider such a quintessential English drink for hundreds of years. In fact, cider was mentioned as far back as the Old Testament under the Hebrew word ‘Shekhar’, but its cultivation here was truly established after the Norman invasion in the 11th century, from which

Here in Surrey, a handful of enterprising cider lovers have taken the county’s natural bounty and turned them into premium artisanal ciders of outstanding quality that have won fans well beyond our borders. We met two of Surrey’s finest producers…

Pete O’Connor, co-founder of Vachery Farm Cider

TheGuide2Surrey.com/Food-and-Drink

Vachery Farm Cider A cider that’s really beginning to turn heads and slake thirsts is that produced by Guildford resident Pete O’Connor, co-founder of Vachery Farm Cider based out of Cranleigh. “I’m a chef by trade, and I always had apple trees in the garden which I would make jams and chutneys from,” says Pete. “But one day I decided I’d like to make something a little more… alcoholic.” “I met up with the Vachery Estate owners in Cranleigh who had these lovely apple trees and we agreed to give cider production a go. And by the end of 2014 we’d started Vachery Farm Cider.” Pete runs the operation himself in his free time, ca joling friends and family when it’s time to pick and press the apples with hog roasts and, of course, lots of fabulous cider. More apples, a blend of dabinet and michelin varieties, are brought in from other local orchards, enabling Pete to produce around 14,000 bottles a year. As head of sustainability for an international company, it’s important to Pete that no part of the process goes to waste. “We press around ten tonnes of apples over the course of just a week, producing around 7,000 litres, which creates a massive amount of pulp. So all that pulp goes to animal feed for pigs and cows.” The premium quality of his cider comes from Pete’s insistence on producing it the traditional way, using the rack and cloth method at his cider barn facility and producing them from only 100% apple juice, unpasteurised, non-filtered and vegan friendly ciders. Vachery Farm Cider is available to buy from Ruby & Kind in Cranleigh, Inn at Home in Guildford, Taurus Wines outside Bramley and other suppliers. www.vacheryfarmcider.co.uk

the star in godalming up for national cider award There can be few pubs in the South East that can touch Godalming’s cherished Star pub for the breath-taking range and dedication they have for the golden stuff. They’re drenched in great cider, boasting ten real ciders and perrys, 21 bottles and 2 barrels and even a dedicated cider bar in the rear courtyard. Having won award after award over the years for their cider and craft beer offering, 2016 looks to be a very big year for the Star and landlord Ian Thomson as they have reached the finals of the Great British Pub Awards in the Best Cider Pub category. Finalists were chosen from over 1,300 entries, across 16 categories with the winners being announced on October 5 in a glittering Best of British-themed ceremony at the Hilton Park Lane, London. The Guide 2 Surrey would like to wish the Star the best of luck and we hope to raise a glass of cider to your success come October!

The Garden Cider Company This month, thousands of Surrey’s apple trees are about to drop their seasonal payload. For most, this abundance of apples will mostly go to feed the wasps as they spoil on the ground, only a few being harvested for a delicious crumble or apple pie. Fortunately, for one Surrey company, the annual glut presented a wonderful opportunity.

‘image from www.thesophodiaries.com’

The Garden Cider Company is the brainchild of brothers Ben and Will Filby who founded the company in 2010 in response to seeing so much garden fruit go to waste. “I’d always made cider from our Mum’s apple tree, but wanted to make more,” says Ben. “We saw an opportunity to combine something we loved doing with a profitable and friendly cooperative of like-minded people. “We started with about 20 people who started giving us their apples. Then after our first cider was produced in autumn 2011, the word started spreading. Now we service households all around Surrey and the number of customers keeps growing.” Each year over 4000 local households bring their spare garden fruit to the Garden Cider Company in Chiddingfold and in return receive a share of the cider made back for free. As well as their delightful Original cider, they also mix things up with bottles of Elderflower, Raspberry and Rhubarb and Plum and Ginger. www.thegardencidercompany.co.uk

last of the summer wines Although September sees the sun begin to set on the summer, there are still plenty of days left to drink in the balmy weather and enjoy a perfectly cool, crisp summer wine. We asked five of Surrey’s finest wine purveyors to name their favourite warm weather wines and what foods they pair best with. And if you like their suggestions then you only have to visit them to pick up a bottle yourselves...

Graham Beck Brut NV

Available from Ruby & Kind, Cranleigh

“There are few things I find more satisfying on a beautiful summer’s day than the pleasing pop of a sparkling wine cork,” says Gemma Burr of Boxwood & Broom wine sellers based out of Cranleigh’s favourite food store, Ruby and Kind. “The Graham Beck Brut NV is a superb alternative to Champagne, with its Chardonnay and Pinot Noir blend aging perfectly on its lees for up to 18 months to lend a softness and texture that is rarely found with other sparkling wines. The fresh palate of lime and apricot pairs perfectly with fresh salads, barbequed fish and smoked salmon canapes.” £14 per bottle from Boxwood & Broom from www.rubyandkind.com

̴

Albarino Charquino 2015

Available from Cellar Magneval, Woking

Thierry de Magneval worked as sommelier and restaurant manager for such legends as Chef Albert Roux and Pierre Koffman. So it’s fair to say that Thierry knows a great summer wine when he tastes one. Of this 100% Albariño Charquino from Rias Baixas Spain, Thierry describes it as “Clean, fresh, with pineapple and passion fruits flavours, all combined with citrus and a hint of cut grass with great zippy acidity. This is beautiful to enjoy with seafood, salads and aperitif. Also great with goat’s cheese and rich creamy cheeses.” £28 per bottle from www.cellarmagneval.com

Silent Pool Rose` 2015 Available from Cellar Wines, Ripley “Our absolute favourite wine this summer is produced very locally to us; Silent Pool Rosé 2015,” says Andy Walton of Ripley’s fabulous boutique wines and artisan spirits shop, Cellar Wines. “It is made at the Albury estate just down the road from us in Shere. It is made from the Pinot Noir grape and has subtle hints of strawberries. Extremely refreshing on a hot day and it was actually served on the Royal barge at the Queen’s jubilee a few years ago. If it’s good enough for her Ma jesty, then it works for us!” £18.50 per bottle from www.cellarwines.co.uk

Whispering Angel Cotes du Provence Rose` 2015 From Taurus Wines, near Bramley “We ship this beautiful Provencal rosé directly from its maker and it is a firm staff favourite,” says Taurus Wine’s Rupert Pritchett. “Which is no wonder as this salmon pale pink bone dry wine combines a gentle hint of wild strawberries with a wonderfully refreshing crispness and a hint of delicate herb flavours making it a great partner to most hard-to-match tomato dishes. “Made under the watchful eye of the former director of legendary wine estate Mouton Rothschild, Patrick Leon, Whispering Angel has been described as “the Dom Perignon of still rosés”. £16.99 per bottle or 6 bottles for £90 from www.tauruswines.co.uk

'Les Cerisiers' COtes du Rhone Rose` 2015 From the Guildford Wine Company, Shalford Ben Watkins from the Guildford Wine Company says that this rosé offers fantastic value for money, especially compared with most Provence rosés. “This is a classic salmon pink rosé with delicate perfumed aromas of rosehip syrup, wild berry blossoms and cherries on the nose. Full flavoured, ripe and beautifully balanced with acidity, there’s elegant textured berry fruit on the palate with a twist of raspberry freshness to lift the finish. Deliciously balanced and moreish.” £8.99 per bottle with case discounts available from www.theguildfordwinecompany.co.uk

Owners Toni Trillo and Tony Frias and their team are masters of the kind of effortlessly polished but traditional service lost on so many other restaurants, offering a welcome you simply won’t find anywhere else. Begin or end the meal upstairs in the relaxing cocktail bar then settle down in the snug, homey dining room for classic dishes with wonderful touches like tableside flambé cooking, a sumptuous sweet trolley and one of the best wine lists in the county.

FOODIES FEATURE SMOKEY JOE

For too long G-Town’s been crying out for a taste of the American Deep South, but now thanks to Joe and Kay Docherty, they finally have it in the form of Smokey Joe at Pews Bar in Chapel Street and on Deliveroo. Their custom Dogz are handmade by their butcher to their exact recipe using British pork shoulder, smoked gammon and a secret blend of herbs and spices, all served in a brioche roll with skin-on home cooked fries (gluten free roll available). Their beef burgers are made with only 100% British chuck steak, while in true Deep South style they slow cook sweet pulled pork and beef brisket to meltingly tender, smoky perfection.

Surrey Hills Challenge Sunday 25th September, Haslemere The Surrey Hills Challenge charity event is set to be one of the biggest sporting challenges in the county. A series of running and walking events will take place in the Surrey Hills, Area of Outstanding Natural Beauty on Sunday 25th September 2016, raising funds for the Community Foundation for Surrey and the Surrey Hills Trust Fund. People of all ages and fitness can participate in four different running and walking challenges. The Greensand Way will form the backdrop to the event where the super fit can face the ultimate challenge with ‘The Ultra’, a 60km run, ‘The Half’, no ordinary walk (or run) in the park of 21km, ‘The Ten’, a fast and furious 10km or ‘The Five’, a family challenge 5km event. All four routes encompass some of the most picturesque views across the Surrey Hills along the Greensand Way and are designed to test participant’s stamina and strength. The family events of ‘The Five’ and ‘The Ten’ will take place at Hurtwood; a well-known area for walkers and runners. Starting at 10:00, ‘The Five’ is a 5km course which covers wide open tracks onto footpaths and woodland trails through the peaceful and heather covered landscape. ‘The Ten’ is two laps of the 5km course and for families, walkers and runners to challenge themselves just that little bit more. The Ultra and Half participants will join the 5km loop, creating a supportive and fun atmosphere as all four events descend onto Hurtwood. Our competitive routes for the fittest walkers and runners are The Ultra, 60km starting at 06:00, and The Half, 21km starting at 09:00. The Ultra route starts in the picturesque town of Haslemere and follows the Greensand Way which originates in the heart of Haslemere and weaves out of town towards the infamous Devil’s Punch Bowl, a large natural amphitheatre. Participants will scale Gibbet Hill, Wormley Hill, Hydon’s Ball, Hascombe Hill, Pitch Hill, Holmbury Hill, Leith Hill and finally Bury Hill. Each one of these hills gives a unique and varied view of the Surrey Hills.

The 60km Ultra is not for the feint hearted with the total climb of the route being the equivalent of climbing Mt. Snowdon in Wales, the highest point in the British Isles outside of the Scottish Highlands. The Half joins the Ultra at the Duke of Kent School with their first challenge coming in the form of scaling Holmbury Hill. From here they head towards Leith Hill, the highest point along the Greensand Way at 954ft, with impressive views to back this up. Both the Ultra and the Half are mainly on footpaths and bridle paths with only the occasional road sections or crossings making the course free flowing, leaving you with a sense of adventure and achievement. Dorking marks the finish line for those taking on the Half and the Ultra. As well as support from our dedicated Events Team before and during the event, participants will also receive a medal, chip timing, aid stations, professional first aid cover, car parking, WCfacilities and sports massage. The event is to raise funds for the Community Foundation for Surrey and the Surrey Hills Trust Fund. Fundraising isn’t compulsory but we are encouraging everyone to take up the additional challenge to fundraise and support local communities. A suggest fundraising target to aim for is £250 per person. Half the money raised will support the Community Foundation for Surrey and the other half will help to conserve the unique Surrey Hills countryside. The Surrey Hills Challenge will take place on Sunday 25th September 2016. Registration fees per person for ‘The Ultra’ (60km) is £80, ‘The Half’ (21km) £35, ‘The Ten’ (10km) £25 and ‘The Five’ (5km) £15. A booking fee of £2 per registration is applicable. The event is open to everyone. Participants under the age of 16 must be accompanied by an adult or guardian. For more information or to register visit www.surreyhillschallenge.com or call 01483 720459 / 542221.

in 12 years. Neither partner wanted to let the other loose in the opening game, but Langridge and Ellis were able to just edge it 21-18.

Landridge secures Olympic Bronze in Rio Surrey Smashers captain Chris Langridge has defied the odds to take bronze at the Rio 2016 Olympic Games, thanks to a men’s doubles win with partner Marcus Ellis. The Brits crushed China’s Biao Chai and Wei Hong in the deciding game to secure the nation’s first Olympic badminton medal

Chai and Hong fought back in the 2nd game to take the tie to a deciding 3rd, where the Brits took full control and confirmed that they would be returning to England with a bronze medal around their necks. Reacting to the victory with BBC Sport, Langridge said: “When we got to 14-7 in the last game, I thought: ‘We might win this! We are going to win this!’” He added: “Luckily Marcus was quite calm, which helped a lot.” Ellis added: “This is an incredible feeling. After how we performed in our very first match, we knew we could compete with anybody.” Leatherhead-born Langridge, who will begin his third season with Smashers this October, produced a string of incredible performances to reach the bronze medal match with Ellis including wins against world top 10 ranked players.

Minute Mile 10th September, the Athletics Track, Guildford Spectrum Have you ever made a silly bet with a family member or friend that you could beat them in a running race? Or have a “nonrunning friend” who jests that they can run no further than a matter of meters? Then you should take them all along to the 4 Minute Mile on 10th September.

WILD SWIMMING ANNOUNCEMENT Following last month’s Wild Swimming article, we’d like to advise readers that Friday Street Millpond recommendation is not to be swam in for the following reasons: the water areas are within private ownership and had to be drained down years ago as WW2 bombs were discovered in it. The Army duly attended, but no warranty can ever be offered, therefore no swimming is ever to be encouraged. The pools at Broadmoor and elsewhere are let to a private Fishing Club on a low-key basis specifically to preserve the peace of these exceptionally beautiful areas. Public swimming, therefore, is now heavily discouraged.

The idea is simple: pop along to the Athletics track at Guildford Spectrum and run a mile (4 laps) as fast as you can! Multiple attempts are allowed so if you need to, you can arrange to sneak in a quick practise before your rival arrives. If you’re still worried that you might only just beat them, there’s no need to: each attempt is chip timed, so you’ll have printed proof of your victory which will go down in aat (online results) history forever! No one can argue with that... Amongst the runners who take to the track for the first time (or first in a long time at least!) this fun event really brings out friendly competitiveness in everyone. Year upon year, grandparents dust off their running spikes, and fathers and sons battle to beat each other to the finish line gantry; setting off a wave of cheers, laughter and praise from spectators. You don’t need to be a superstar to get involved: This event is a great introduction into the world of track running, and for more experienced runners is a perfect opportunity to test your recovery and get some great speed work in! So take part “just for fun” and save yourself for that all important sprint finish. It’s all about the tactics... (and the funky stopwatch medal that all runners will receive for their fantastic efforts!) Pop along any time from 9am 11am. You can stay until you’ve broken the world record, or for all of 4 minutes to wear the kids out it’s up to you! Sign up online to join in. Entry fees are £9 for unlimited mile attempts and £15 for a family. To find out more and enter online go to: aatevents.com/race/themile-challenge

Talking to Coach Creon Scorchers to Feature on BBL Live Broadcast Surrey Scorchers’ 2015/16 season was one full of ups and downs. Impressive performances on one hand, but frustrating results in the other resulted in a roller-coaster ride. Despite finishing bottom of the British Basketball League (BBL) in what was their maiden season, Scorchers fans remained positive throughout.

Now, with the new BBL season in touching distance, Tayler Willson caught up with Surrey Scorchers coach Creon Raftopoulos to discuss the upcoming campaign, the team’s summer recruits and goings-on and his reflections on the last term as a whole… Hi Creon, firstly how’s the summer treated you? It’s been good, I took a week or so out during the start of the off-season and since then I’ve been working hard on getting things ready for this season. We didn’t have much time to get things ready last year, so I made the most of the time we had this year. Aside from that we’ve been doing summer camps and coaching sessions, too, it’s been really positive. And in terms of what’s happened this summer, how happy are you with how things have gone? Like I said, last season wasn’t ideal. We had a lot of problems and a lot of things didn’t go our way, so when we started the season, it was a little all over the place. Mentally we weren’t ready and certainly number-wise we weren’t. But this year we’ve done everything right. I’ve been out in Europe having a look

at some players and the players we’ve brought in are players that I know will improve the team. Then we’ve got Tayo [Ogedengbe] who’s signed a new deal, which is great as he was one of our most impressive performers last year. There have been a few players I would’ve liked to have kept hold of from last season, but for one reason or another they’ve gone – and I have nothing wrong with that and I feel we’ve replaced well. Could you tell us a little about the new faces and if we can expect any more? Yeah, there are four new signings that have been announced so far: there’s Kalil Irving who’s tall and big and strong and had been a part of Worcester [Wolves] for the last few years, which means he’ll bring plenty of BBL experience to us this year – something we lacked at times last year. There’s Michael Ochereobia, Mike is a true leader and that’s the sort of player we want in our roster. He will bring two years of pro experience to the club which will be valuable to us and the players around him. We’ve also brought in Jay Bowie from America who spent four years playing college leagues in the States before moving to Australia where he did well too. Finally we have a new old face in Albert Margai who’s an old Guildford and Surrey

Heat favourite. Again I’m delighted to be welcoming Albert back. He is an absolute gentleman on and off court and will also bring a wealth of leadership quality and experience with him. In terms of more new faces, we’re working on it. What do you hope to achieve this season? What are the goals? Like last season, I’d like to achieve playoffs. I think we were unlucky at times last season with injuries and other offcourt problems and if they hadn’t have interfered I think we would’ve achieved the play-offs. But that’s done now and with more preparation this year and more time and a bigger roster, play-offs are certainly doable. I believe in the players that have come in and I believe in the players that are still here from last year. As long as we are improving I think the Scorchers fans and I will be happy. A message to the Scorchers fans? Again it’s much the same as last season: stick with us, keep supporting us and I’m confident we’ll soon follow through with the right results. They stuck by us in some tough and sticky situations last year and we all appreciated it. I just hope we can now repay their loyalty on-court.

DNAFit AT THE CHARLOTTE ORD ACADEMY, GODALMING For years we – the chubby public – have been searching for shortcuts to become healthier, fitter and ultimately more beautiful and desirable human beings. From carbcutting and gluten-free diets to Zumba and Davina McCall’s Intense fitness DVD, most have tried something at one time or another. But even with the number of get-fit methods ever-growing, is the answer actually right under our nose?

The Charlotte Ord Academy in Godalming is one of the first fitness establishments to introduce the state-of-the-art DNA Fit, something that when looked into and intrinsically worked out, could be one hundred times more beneficial than twentyminutes in front of the Davina McCall DVD. Understanding personal genetics and what your body needs is an exciting new frontier in health and fitness. To reach your health or fitness potential it is important to make the appropriate and correct choices to best match your genetic makeup. A simple saliva swab test is all you need to unlock your genetic profile, leaving all the guess work behind. The Charlotte Ord Academy has been providing solutions for health and happiness for over eight years. Typically their clients visit the academy with a specific goal or target in mind, and maybe you’ve got one in mind too? Whether you want to tone up, drop a dress size or simply start feeling better about yourself, their job is to help you achieve just that, and with the DNA testing, their job is made a lot easier. In a world when time is short and you’ve got so many other things to worry about, ‘me’ often comes last and they understand that, which is why they aim to help you achieve the goals that really matter to you and give you some wellearned you time. After all, if you’re not firing on all cylinders, lacking energy and feeling down, eventually it’s other important things that may suffer. Charlotte Ord will find out what you want to achieve, why you haven’t succeeded in the past and provide you with all the tools you need to succeed in the future.

what exactly is DNA? DNA, a.k.a. deoxyribonucleic acid, is the material in humans and almost all other organisms. Nearly every cell in a person’s body has the same DNA. Most is located in the cell nucleus (where it is called nuclear DNA), but a small amount of DNA can also be found in the mitochondria (where it is called mitochondrial DNA or mtDNA). The information in DNA is stored as a code made up of four chemical bases: adenine (A), guanine (G), cytosine (C), and thymine (T). Human DNA consists of about 3 billion bases, and more than 99 percent of those bases are the same in all people. The order, or sequence, of these bases determines the information available for building and maintaining an organism, similar to the way in which letters of the alphabet appear in a certain order to form words and sentences. DNA bases pair up with each other, A with T and C with G, to form units called base pairs. Each base is also attached to a sugar molecule and a phosphate molecule. Together, a base, sugar, and phosphate are called a nucleotide. Nucleotides are arranged in two long strands that form a spiral called a double helix. The structure of the double helix is somewhat like a ladder, with the base pairs forming the ladder’s rungs and the sugar and phosphate molecules forming the vertical sidepieces of the ladder. An important property of DNA is that it can replicate, or make copies of itself. Each strand of DNA in the double helix can serve as a pattern for duplicating the sequence of bases. This is critical when cells divide because each new cell needs to have an exact copy of the DNA present in the old cell.

What does the DNA Test actually reveal?

Genetics vs Environment

Endurance / Power Profile Reveal your body’s response to key genes associated power or endurance potential. Understand how best to train your body, whatever your personal goal may be.

Genes are instructions for building proteins. There are over 20,000 genes in the human genome.

The structure of each gene can vary from person to person.

The specific version of gene that you carry is your genotype.

Aerobic Potential (VO2 Max) VO2 max is the most commonly used market for endurance potential, it can help you understand your genetic VO2 max potential.

You can think of genes as keys on a keyboard – a set of pre-defined instructions waiting to be played.

Post-Exercise Recovery Everybody has a different recovery ability – understand what your genes say about your natural recovery speed, and how to plan your exercise regime accordingly.

Environmental factors can influence the activity of our genes by altering their expression.

The number of ways our environment can impact our lives is incredibly vast.

Some of the more well-understood factors are lifestyle, exercise and diet.

Your environment is like the fingers of a musician – it determines which keys will be played and when.

Recovery Nutrition Get to know your body’s genetic need for certain vitamins and micronutrients. Learn how this can help you manage your recovery strategy after hard exercise.

Genetics

Environment

Genetics and Environment Injury Risk Some people are more genetically prone to injury than others, this will help you identify where your genes put you on the injury risk scale.

The complex interaction between genes and the environment gives rise to phenotypes. These are observable biological traits such as height and weight.

HOW IT WORKS We are all different, and a part of this difference is as a result of our genetic profile. Genetically, there are the differences that we all see, such as eye and hair colour, but there are also the differences we don’t see, how we metabolise nutrients for example, the way we deal with toxins, how well we react to different types of exercise – we all interact with the environment in our own unique way. Genetically we are almost identical, but in each gene there are points of variation. The most common type of variation is a single base change at a particular position – this variation is called a Single Nucleotide Polymorphism, or SNP for short (pronounced ‘snip’). It is in the combination of these tiny differences that we define our individuality, who we are. But genes are not the whole picture, they don’t work alone and they don’t determine everything about us. Genes interact with our environment – and modifying the environment modifies our “phenotype” – the way we are (e.g. a fair skinned person will only suffer from sunburn if she/he stays in the sun too long). Because we have some control over our environment (in our case exercise and nutrition choices) we therefore can work to create the best phenotype for our lifestyle. At DNAFit we focus our work specifically on these two realms of genetic science - Exercise Genomics & Nutrigenomics, with the aim of helping our customers train, eat and feel their best.

TEST DUMMY: Fairweather Golf

By Tayler Willson Ever since my dad went on long golfing weekends away to Portugal with his mates when I was a kid, I’ve wanted to do the same. He used to come back- sometimes paler than when he left - showing my mum photos of them playing whilst desperately trying to cover the fact that golf was merely just an excuse. I’m bad at golf. No, I’m really bad at golf. Actually, if I had to write a list of things I’m really terrible at, golf would easily make the top five. I have a rubbish sense of direction, a short attention span and poor hand-eye co-ordination – three things that are quite essential to being good at the sport. And for someone who’s tried their hand at most sports and, in my own modesty, been fairly good at the ma jority of them, golf has always remained my Achilles heel. In an attempt to rectify my sporting anomaly, I headed down to Camberley’s brand new, state of the art golfing facility, FairWeather Golf, to see how they could help me improve. Head-to-toe in my mate’s golf wardrobe I met Nate Weidner, FairWeather Golf’s Manager and Director of Instruction, for an hour’s lesson. FairWeather Golf is on Park Street, in the heart of Camberley town centre. The facility combines cutting edge golf technology with the highest standard

of professional coaching to create the ultimate training base. The open-plan set-up is impressive from the get-go, with a neat bar area tucked away in the far corner, too. In the centre of the room lies a small patch of green for putting, with six golf simulators around the outside and two state of the art golf robots – the facility’s most impressive assets. I began by trying to my swing on one of the simulators so Nate could see my current level. Golf is a simple sport: hit the ball towards a hole. Easier said than done. After a few drives, some tips from Nate and little success, he walked me over to RoboGolfPro, the golf machine of all golf machines. The RoboGolfPro is the only machine in existence that takes your club and physically guides you through a perfect swing. It allows the instructor to let you feel the perfect ergonomic, efficient and physically correct golf swing for your ability and physique. It identifies the opportunity to improve your swing by watching them using video technology. The robot will then move to match and improve your plan, from there you get to feel the movement with the club. Gradually it’ll give an accurate feel of a professional grade swing which can accelerate the learning curve. RoboGolfPro isn’t the only groundbreaking technology used by professional golfers that FairWeather Golf houses, the Trakman and BodiTrak are available, plus the industry’s only human motion

learning system, the K-Vest. The all in one wireless system instantaneously measures a player’s power signatures and 3D data. The system then assesses player characteristics and generates insightful reports. Then those reports flow in a powerful coaching and program builder. After going through my swing, my body position and my body movement on the RoboGolfPro, I headed back over to the simulator to take what it had taught me and drive unaided. With the correct position and Nate’s instructions still fresh in the mind, my first shot was already double what I had reached before. Within the next few shots I began to relax back into my original position and my shots, again, became wayward. However, after only twenty minutes on RoboGolfPro, and forty of golf altogether, I had already improved. Nate admitted that it usually takes three or four lessons for his students to really take a step forward, but was positive he could see signs of improvement after only an hour with me. Okay, so I’m probably never going to be that good at golf, and I’m probably never going to go to Portugal and pretend to play golf like my dad, but for anyone who’s genuinely looking to take a massive, big step towards becoming an all-round better golfer, look no further than Nate Weidner at Camberley’s FairWeather Golf. You won’t regret it.
