ELECTRIC THEATRE?

Following 2015’s council review on the sustainability of Guildford’s Electric Theatre, a church, music academy, arts venue and a fringe theatre group are just some of the bidders looking to win the lease for the iconic venue…

His aim is to rebrand the venue the ‘Guildford Southbank’ and for it to be a “community theatre for the community, run by the community.“We’re proposing to make the theatre commercially

viable in itself,” he continues, “to relieve the financial burden of Guildford Borough Council. And we’ll be doing that through better marketing strategies and transforming the entire area into ‘Guildford Southbank’. This will include events like street pop up food and popup events like the hugely popular Guildford Beach.” The working group have also received a proposal from Dominique Fraser who owns Guildford’s independent arts and community venue the Boileroom to take on the Electric Theatre, transforming it into the ‘Electricity Works’ and offering arts, music and performance programming, a community hub and unique food offerings run by local Great British Bake Off contestant Stu Henshall and his Alternative Kitchen. Ms Fraser says: “As a collective we very much feel that this is what we’ve been working towards these ten years. We are the only collective that have put in a proposal that already run a sustainable venue. We put on music,

theatre, comedy, community events; we do everything and know what works and what doesn’t. And we know how to commercialise it and sustain a business. I think that’s a really important consideration for the Electric Theatre.” Meanwhile, Pete Greig, leader of Emmaus Church which worships at the venue every Sunday has expressed his interest in obtaining the lease and running the venue as a ‘community hub’ in addition to being a theatre. “Right now, it just stands empty for half the time and when you’ve got that footprint and a beautiful building it seems a great shame. So when we heard the Council were selling the lease, we were really excited about the thought of what we could for the community with the other six days of the week. Our vision for it is to establish a community hub that services all of Guildford.

We’d love it to be somewhere where everyone from the Citizens Advice Bureau to the Town Centre Chaplaincy can have hotdesk space, at the centre of what will become a vibrant, buzzing venue.” A Guildford Borough Council spokesperson responded: “The Electric Theatre’s working group were pleased with the considerable level of interest shown by external organisations via independent property experts, Owen Shipp. This is an important process to help the working group evaluate all options. The group will now seek the views of the public in the new year as the vital next step in the review process.”

THE BIG ARTS SHOW COMES TO MILFORD IN 2016 A new event is inviting creative artists and crafts people to exhibit at its first Surrey event in 2016. Taking place at Secretts of Milford, near Guildford, Surrey on September 11th and 12th, the Big Arts Show aims to provide a showcase for a wide diversity of artists using a range of formats and presentation through paint, sculpture, jewellery, glass, ceramics, furniture design, photography and performance art. The family-friendly event will include over 150 exhibitors, workshops, painting classes and poetry readings, a real ale bar, eateries and live music. Organiser David Dawkins, who spent his youth in Guildford, says: “We first launched in 2014 in Shrewsbury, Shropshire, and have spent the past two years building The Show’s reputation. It’s a really vibrant event and we hope that creative artists from crafts and arts will sign up now, knowing how busy they get. NEW PUBLIC ART FOR GUILDFORD SET TO BECOME LOCAL LANDMARK The biggest public art project of its kind in Guildford is on course to become an iconic local landmark for the borough in 2016. Leading artist Charles Normandale has been selected to create a robust, high quality and long-lasting piece of artwork on Woodbridge Meadows, the green area next to the River Wey most accessible by Walnut Tree Close. The £70,000 project has been commissioned by the Council and funded from Section 106 developer contributions for art. Designed specifically for a riverside location at the Ladymead end of Woodbridge Meadows, the new sculpture will reflect the nature of the area in an eye-catching representation of fish swimming among tall, curved reeds. Striking, even when seen from a distance, the hand-forged steel artwork will be easy to maintain, durable and able to withstand flooding. “We have appointed an experienced artist for this project with a track record of producing outstanding work. The successful design and proposal reflect the aim of our public art strategy, which is to encourage creative and innovative work in the future while conserving, celebrating and promoting Guildford’s rich cultural heritage,” says Lead Councillor for Economic Development. The artist and his team will work with the Council, the Woodbridge Meadows Public Art Project Board, the Guildford Public Arts Advisory Group on the project and will also engage with the local community, including local schools and businesses, on the final designs for the sculpture. Installation of the new artwork is planned for summer 2016.

Your Community News C H R I S T MA S R E C YC L E D So Christmas has come and gone and here we find ourselves in January with a heap of festive detritus at our feet. But there’s no reason those unwanted gifts, clothes and other junk left in the wake of last year needs to tumble into landfill, as there are numerous options around the area to help see it go to a good cause. Most councils now collect Christmas trees as part of their garden recycling scheme. Simply leave yours, once stripped of decorations, out with your green recycling bin on the next collection day, or cut it up to fit in your garden waste recycling bin. Check with your local council’s websites

for full details. Alternatively your local recycling centres will take your trees for free and turn them to compost which can grow more trees. Circle of Life, right? If you’ve been collecting empty inkjet and toner cartridges at your home or office over the year then now is the time put them to good use by donating to the British Red Cross. For every inkjet cartridge recycled, the charity will receive £1, and every toner cartridge will make the charity up to £5. Mobile phones can be worth £30. The British Red Cross provides freepost bags to return the used cartridges, at no cost to the sender.

Mobile phones, toner cartridges, old coins and aluminium foil are also collected by the Phyllis Tuckwell Hospice in Farnham which are sold for fundraising. The Salvation Army will collect textiles and shoes from schools for free and will pay the school for any fabric collected. MEN IN SHEDS appealed to men both living alone or with partners and at all ages although the vast ma jority of ‘shedders’ are at or beyond retirement date. The idea was taken up by the charity Age Concern in 2009 and has now seen over 200 sheds open in the UK. They vary from full-time projects in substantial premises to groups meeting in village halls and community centres for only a few hours a week. Surrey’s longest running shed is in Ash, setup by retired joiner and teacher John Fairs with help from Age UK Surrey. “We launched a year or so ago in the former minibus garage in the Shawfield Day Centre,” says John. “We fitted it out as a small woodworking shop with some machines and power tools but most of the hand tools were donated. It was setup in the first place because there’s not many activities for men, under the banner of reducing isolation and loneliness while providing a social activity.

A visionary new approach to the humble garden shed, or ‘Man Den’, is taking root around the country, inspiring men to come together to work on projects that help themselves and their community.

“So we have about 25-30 attendees from a range of backgrounds and skill levels, and they work on their own projects, making stuff to sell and on community projects. For me, it gets me out of the house and away from the wife a couple days a week! But I get all the benefits the other members get.”

Men’s Sheds was a movement that began in Australia when men realised the value of coming together around practical tasks on a regular basis, particularly if they had a designated place or workshop where tools and work in progress could be stored. It

Step by Step

Woodland Heritage

Step by Step are an Aldershot-based charity that are empowering homeless people and those facing adversity. Working with young people aged 11 to 25 they use a structured combination of services including accommodation, support, training, and counselling to support those in need.

The Woodland Heritage is suitably based in beautiful Haslemere, and is – as you’d expect – targeted to protecting the woodland of our county and beyond. Particularly pressing at the moment is the issue of Acute Oak Decline (AOD), which threatens our national tree.

Surrey Search and Rescue The amount of training and dedication that goes into SURSAR volunteering really deserves a huge amount of appreciation. A 100% voluntary team, SURSAR are on-call 24 hours a day, with a team of 50+ people and 8 Search Dogs. Phyllis Tuckwell Challenges Phyllis Tuckwell is one of the best-known and most important charities in Surrey, and the sheer volume of care they provide means they have to raise a huge amount of funding just to keep going. Fortunately, the hospice care facility is still going strong – and they offer a wealth of fundraising activities throughout 2016 too. Phyllis Tuckwell host their own ma jor annual events, such as Walk for the Wards, Strictly Dancing and Dash of Colour, but of course supporters are urged to start their own community events. Alternatively, there are more adventurous options in the form of skydiving, Brecon Beacon treks and even a trek up Mount Kilimanjaro…

This crazy assault course, with cargo nets, tunnels, slides and a pontoon bridge made out of dinghies, is not your average day out in the countryside! The Nuts Challenge is a 7km assault course put together by ex-army personnel and has 100 fun obstacles to conquer.

GUTS Challenges GUTS, who are based at the Royal Surrey Hospital in Guildford, aim to improve bowel cancer survival rates through more effective screening, detection and treatment, and by raising awareness of the disease. I will not be giving up my drinking. In fact I shall endeavour to investigate it more deeply. With places like Silent Pool Distillery, Godalming Food Company, and Denbies, on our doorstep we’ve no excuse to stop popping the cork!

I can’t give up sugar. Every Monday I try not to touch a biscuit or slice of cake or sugar cube, but by Tuesday afternoon I’m angrily dunking something sweet in my tea. I don’t have sugar in hot drinks anymore, but as soon as we enter the middle part of the week I’m chewing on something that makes my teeth ache. And it won’t change in 2016.

I think that in this modern age, I couldn’t live without my smartphones in 2016, having two, one for work and one for personal, information at my fingertips is something I have sadly become too dependent on!

It’s all about the Coffee. I’m pretty much certain that I’d be half the human I am today were it not for that magic dose of boost. It’s the first thing I taste every morning and it’s what gets my mind in working order. I can’t maintain it without it.

No matter how much I try I always seem to fail, so this year I have embraced the noble tradition for myself of not giving up coffee – Yes I will cut down, I think it’s a must to follow the guidelines of staying healthy. However, it’s a given that coming into the office in the morning, craving that wake-up call, is just too good for me to just simply walk away from!

Living with my partner who’s extremely healthy and always wants me to embrace the nutritious lifestyle, there comes a point where I can’t physically bring myself to say the words ‘I vow to be healthy from now on’. I point blank will not give up my calorific Sunday evenings which consist of pushing the naughtiness to another new level – with Pasta doused in Mozzarella, a glass of red and a full on chocolate dessert it’s safe to say, that is my one and only indulgence I refuse to give up!

TALKING TO WOLF ALICE

Undoubtedly the UK’s band of the moment, Mercury Prize nominees, Grammy nominated and taking the world by storm; Wolf Alice are this year’s Independent Venue Week Ambassadors. We caught up with Joel from the band ahead of the week long celebrations in honour of independence. Firstly, congratulations on your Grammy nomination! Amazing. How does it feel to be recognised in such a way, especially from the folk over the pond? Pretty bonkers. Woke up to a text message and had to do some Googling to check it wasn’t a joke. I got a lot of love for the USA; the people and venues are incredibly passionate about music as a whole and it’s been a pleasure to go over so many times this year and actually have people turn up for the gigs! You’re ambassadors for IVW in 2016 – what does that mean to you? It’s such a privilege! I think a lot of people know Wolf Alice from shows we’ve done in some of the many great independent venues around the country, so without them there would be no us! It’s how you cut your teeth, make mistakes, make fans and move forward; they are very much the lifeblood of any young band and we have some great memories from those shows. Joel – is it right that you played at The Boileroom before Wolf Alice even started, when you were 15? What was the band called, how was that first experience of playing live? I was previously in a band called Mafia Lights with James Balmont, who’s in Swim Deep and Cameron Knight who tours in Alt-J. Shout out to Toby Leonard and Tom Driver who were also in various line ups! The Boileroom is the only ‘real’ venue in that area; when you are growing up in Surrey and not yet able to get into London it provides a platform of what a real show can be; a stage, a PA, lights and if you are lucky a crowd. I remember actually getting told off quite badly at one show there where we had tons of friends going bonkers to the point they cut the power to the stage... I didn’t go back until Wolf Alice had a show there and was reminded what a great venue it is and an incredible pillar of culture for Surrey.

by Alexander D’Arcy What are your memories of playing The Boileroom first time round as Wolf Alice? Well, it wasn’t the busiest show we played but everyone there was a legend. Second time round we went there was a sold out, manic show, with beer and limbs flying everywhere. I found it quite emotional actually; that venue means a lot to me and I always used to have a pipedream of selling it out. I think I also told the crowd I would have a house party at my mums down the road but that never materialised, lucky for her. How important are independent venues to you as a band? Without them there wouldn’t really be the Wolf Alice we are today; simple as that. Do you think that the Arts Council should be protecting these venues in any way to reduce the number of closures of such iconic places to play music? Yes!! 100%. These venues are people’s livelihoods and many have a sole purpose to give something back to the community. It’s culture, it’s social and it’s fun - and it’s what people need to stop them from going totally mad in a world like today, and it’s sad that the government sees no importance in that. Many venues, like the Cockpit in Leeds, Kazimier in Liverpool and even the Boileroom have either closed or been threatened with closure since we’ve played them. On the most personal level, The Boileroom helped me and loads of kids I knew in Surrey start bands, play gigs, see our first shows and maybe even start something that can change your life, which makes it a very special place indeed. Do you think you’d ever make a return to The Boileroom to play? If they ever want us to! Rather than a resolution, what can you guys not live without in 2016? Independent venues of course! Go support them, see a show, have a drink and you might just end up seeing the next big thing with just three other people on a Wednesday evening rather than staying in playing Xbox in your pants and moaning about the weather.

24 year old virtuoso pianist Ji Liu (keen break-dancer and fashionista), hails from Shanghai and has been playing piano since the age of 3. He has studied at some of the most famed conservatoires and has played at some of the most prestigious concert halls on the planet. His first two albums received much praise and success, whilst his third album is due to be released on January 29th via Classic FM. We caught up with Ji ahead of his performance at Camberley Theatre at the end of January to find out more.

After two hugely successful, your third album of the music of Chopin is due to be released at the end of January, please tell me a little more about it? First of all, as the title of the new album is Pure Chopin, so it is an album purely inspired by Chopin. Chopin has always been one of my very top favorite composers, since I was a child. So, after having recorded a selection of his some most famous pieces in my first 2 albums, an idea of recording a Chopin Album came very naturally that when I decided what I suppose to record for my 3rd album. And I am very happy and proud that in this album, I have a chance to explore the different side of Chopin’s music – although all Chopin’s music was written in his idiomatic musical language full with utterly beauty, passion and love, there are still many different layers and dimensions from different pieces. Therefore, I have selected 5 Waltzes, 2 Polonaises, Sonata in B Flat Minor Op.35 (Funeral March) and 4 Etudes from his massively prolific catalogue. Some of the pieces are very pure, simple and cheerful such as those Waltzes, but some of the pieces such as the Sonata No.2 and a few Etudes reveal the dark, profound, tragic and philosophical side of Chopin’s personality. So, it is an album with important pieces spinning from his early age to his later age, Although some of my close friends have joked at me with

a question that “why people would like to buy another new Chopin Album while there are already hundreds Chopin albums available in the market”, I think this is still a Chopin Album that is worth listening to – as I believe that Chopin doesn’t only belong to the past, but also to the present and future. Plus, the essence of his music is about creativity, passionate, love and emotion, so I sincerely invite people to listen to my Pure Chopin album, and to experience this colorful sound world with me. You are only 24 and have already been on the classical music scene for some time and with great success. What does the future hold for you? First of all, my initial aim of playing piano since I was 3 years old has always been associated with passion – I never think about “how to become success” when I play music, and to some extends, playing piano and sharing great music to others is the most natural and blissful thing for me to do in my life. Looking towards to the future, In the short term, I really hope that people will enjoy my Pure Chopin album and I hope the tracks in the album will bring people as much pleasure as they bring to me; and I am looking forward to my UK recital tour around this album in January and February; also I am excited

with playing the world premiere of maestro Ludovico Einaudi’s new piano concerto with the Royal Liverpool Philharmonic Orchestra. And as a classical pianist, I believe that it is our responsibility and duty to introduce Classical Music to more people through various ways. You will be performing in Camberley just two days before your third studio album is released. What can the audience expect to hear on the night? Well, of course many pieces by Chopin! But indeed, it is not a totally Chopin recital, as apart from pieces from this album, I also include pieces by Rzweski, Debussy and Saint-Saen in the concert programme. And I would like to show an infinite link between Chopin’s music to these later composers and show people how much Chopin has inspired, reflected and enlightened other composers’ works. And bear it in mind, at some point in this recital, I will also play the piano with my hands elbows in the same time, so it is definitely something that I am very looking forward to! WHERE TO EAT: Sugar Dumplin, Camberley

Does Camberley’s newest bar and restaurant capture the soul and flavour of the true Caribbean?

ou’d have to travel to Glasgow to come across another Sugar Dumplin, a restaurant that promised to bring sunshine vibes and a big blast of colour to the glassy chambers of the Atrium. Entirely Caribbean in concept but backed up by the travels and heritage of its founders, a posse of pals who also operate a string of successful champagne bars around London, Sugar Dumplin knows what its wants to be. And nails it. A love letter to beach shack chic, Sugar Dumplin is a riot of distressed woods, corrugated iron and upcycled everything, from chandeliers of hanging rum bottles to seating made from steel drums and beer kegs, where even a fishing boat makes for a vertical liquor display. Eye catching doesn’t come close, and that’s before your gaze lands on the centrepiece fresco featuring the image of Messrs. Bob Marley and Jimmy Cliff. Throw in strings of merry carnival lights, someone’s obsessive collection of vintage Caribbean tourism posters and a healthy dose of fuzzy 70’s kitsch and if any of that does it for you then Sugar Dumplin could well be your new happy place. Just make sure you bring an appetite. The menu here is short and sweet, which is a welcome relief for those of us that suffer fits of indecision when even the starters run into the teens. So four appetisers present a softer torture, while main courses cover an array of colourful choices from Jerk Pitt to Dutch Pots (casseroles & curries), burgers and Cutters (sides). So, the food. A starter of hickory smoked chicken wings was an early sign that the kitchen knows just what makes Caribbean food so, well, Caribbean. Namely, that

intoxicating confluence of India, Carib, Spain, Chinese, Guyana, Africa, Creole and even English flavours and the heady, esoteric spice and hum that emerges from them. Bit grand for a grilled and glazed chicken wing I’ll admit, but it’s true, and those sticky morsels, with their fruitysweet smokiness didn’t stand a chance. Sugar Dumplin loves them some sauce. Four to be exact. There’s Irie, a mild and fruity number with the zing of ginger; Craven, with its deep notes of roast pepper and smoked chilli; the fiery Laws ‘A’ Massi laced with Scotch Bonnet and our favourite, the Nyam Nyam - a pea green house mayo with garlic, lime and a touch of jerk spices - its richness sang with some ace swordfish and salt cod fishcakes fried in a light and bubbly, golden batter. For mains we went to jerk country, and the messy pleasures of BBQ jerk ribs slathered in that vibrant Irie sauce, a pot of insanely moreish sweet potato fries and a tangy red cabbage slaw on the side. Food to make you grin, even as you pick your teeth clean. For myself, a goat curry was all kinds of happy comfort, especially with a spot on fragrant rice and peas (what else?) and the earthy sweet textures of root veg. Caribbean curries nail that sweet heat spot better than most any other kind, although this one hid its fire a little too well. I’m not proud of the heap of sweaty napkins I left behind. Or for giving you that image. Desserts brought a springy sponge caked laced through with more rum - natch - and a glossy chocolate sauce, while a creamy rich lemon posset would have been damn near perfection had it not been spoiled slightly by grainy threads of bitter zest that coarsened the pud’s silky smoothness.

Still, disappointment rarely tastes so sweet. So Sugar Dumplin should be applauded for bringing something truly new to Camberley’s table, a place where good food, good booze, good prices and the warmest décor combines to wrap visitors in Caribbean cheer. And who couldn’t use some of that this winter? With the promise of speciality steaks and fish cooked over a roaring fire, Grill Night at the Dog and Pheasant felt like an offer we couldn’t refuse…

E

scaping the crisp winter chill of a December evening, we really weren’t prepared for the tidal wave of warmth that greeted us as we entered the Dog and Pheasant. It took a few moments to acclimatise to the combined heat of three open fireplaces but once we had, the toasty period snug of this lovely traditional pub in all its festive finery instantly felt like home. But one hearth in particular had drawn us here tonight: the grand inglenook fireplace which takes centre stage every Wednesday night to offer diners a choice of prime cuts of locally sourced meat and fish cooked over its roaring flames. They clearly know a good thing when they see it (the pub and diners both) as Grill Night at the Dog and Pheasant has been an outrageously popular fixture here for the last four years. Owner Dave Hall, Chef Joe Wright and their team have been quietly winning a loyal following these past few years thanks to the innate charm

of the inn which dates back to the 1500s, their presence at the perennially popular Brookfest summer fete and an unstuffy yet adventurous approach to traditional pub food. There’s a winning attention to detail here that’s evident in even the most subtle touches. Like the bread. For me a meal out without good bread is almost (that’s almost) not worth it, so it was a relief to be presented with a board of steaming hot, robust artisan breads like rye and lemon and walnut and fig shortly after taking our seats. But then they go further, swapping out the ubiquitous olive oil for nutty and golden Kentish rapeseed oil and a pot of smoked Maldon sea salt crystals. What followed was an unseemly scrum of tearing, sprinkling, dipping and swiping that would have made enough of a meal in itself. But before we got to the rude pleasures of the grill itself, a couple of starters confirmed a kitchen bristling with

technique and loaded with flair, easily exceeding one’s expectations of a gastropub, even one with the reputation of the Dog & Pheasant. Primed with a bottle of gorgeous Argentinian Bonarda red we were ready for a show. An exquisitely presented slate of treacle cured salmon, the fish rolled like roses over a bed of leaves and radishes with dabs of dill crème fraiche was a sight to be sure. And by crikey, what flavour; those luscious ribbons of salmon cured to a deep, coppery, lingering tang. Smart and so very delicious. My own risotto starter, jacked with stilton and red onion over a fragrant green herb oil, was prettier than any bowl of stirred rice has any right to be. Cooked to stodge-less perfection, this creamy risotto did exactly what you’d ask of it, namely to melt away dreamily on the tongue, releasing warm clouds of sharp, nutty stilton and sweet onion.

G AND PHEASANT, BROOK I collected myself just in time for the main course, a 9oz sirloin cooked to a perfect medium rare over the flames, all rosy blush and oozing juices with a tangy pot of smooth béarnaise sauce off to one side. Know that in over three years of writing about Surrey’s restaurants, my only restrictions have been to never eat steak or pasta you can twirl around a fork. There’s just only so much you can say, right? Happily, breaking at least one of those rules allowed me to not only enjoy the primal thrill of a great steak but one infused with iron, brick, smoke and heat: the Dog & Pheasant way. Across from this, half a chicken had seen a little grill love too, its skin given just the right touches of black and frazzle, with a spiky marinade of chilli, garlic and lime to cut through the woodsmoke. A piled high bowl of fries between us and this meal had become an unpretentious rush of pub grub done right. Need more proof? Desserts brought a steamed ginger pudding in custard that was the stuff that rosy childhood memories are made of, and a smart wedge of glossy dark chocolate tart, an amusing pastry ‘spoon’ sunk into it with a blob of Chantilly cream and a pond of bright, sharp raspberry coulis all coming together sublimely. It’s hard to tear yourself away from the cosy comfort of the Dog and Pheasant and back out into a cold night, especially with a full and happy stomach and the warm flush of a glass or two of excellent red creeping over you. But it’s very easy to recommend this gastropub for its timeless appeal yet contemporary approach to great British pub food.

ANEKE SPACIE’S WATERS EDGE TO OPEN IN HORSELL “I had planned on retiring this year. This was the year that I was going to stop,” says Aneke Spacie, the celebrated chef and caterer extraordinaire behind the outrageously popular pop-up restaurant Food by Aneke. Having spent 20 years in the business as a head and executive chef, a lecturer, nutritionist and menu consultant, her cutting edge cooking saw her work for the likes of Chefs Mark Hix, Alain Ducasse, Harrods department store and fashion designer Giorgio Armani. So she would be forgiven for taking stock and time out of the kitchen to focus on being the “Michelinnew Mum” to her year, newtwo you children.

But having seen the reclamation work carried out by the Horsell Common Preservation Society on the beautiful Heather Farm wetland, on the site of an old mushroom farm, outside Woking, Aneke saw an opportunity she just couldn’t resist. “I’ve never wanted my own restaurant. However, when I saw the place I didn’t want anyone else to have the site. If I’d have driven past there and seen what someone else had done I’d have gone, ‘I should have done that!’” We met Aneke in December as she and her husband were putting the final touches on Waters Edge, her entirely unique new café that bears all the hallmarks of her visionary approach to food and hospitality. Although not even

Aneke is fully certain quite what her new business will be. “We thought we were opening a café not a restaurant and it’s very quickly changed. We won’t really know until the first customers come through the door.” What those customers will see, however, is an establishment brimming with personality - and that’s before they even see the food. Set in 75 acres of protected wetland and woods, with that eponymous view over a manmade, reed fringed lake, Waters Edge sits in perfect harmony with its environment. Inside is all natural woods (reclaimed from the oak trees nearby), soothing blues and soft greys, where stencils of floating dandelions and silhouettes of woodland creatures, splashes of colour and a contemporary country pantry feel combine to create an immediately inviting and friendly space. Children will adore the Lego corner while bookworms sink into the pages of a good book in the reading corner. But what will really have everyone raving is the food Aneke has in store for her guests. “I want to change people’s perception of the food they eat. With the popup restaurants, the whole point was that I could get everything locally from within 10 miles and within 24 hours. We’ve brought our farm here so we’ll have eggs

from our own hens and a kitchen garden right outside for a true Farm to Fork experience. And we even source from local allotment growers. We’re going to have the opportunity for people to sell things too - it’s a massive community link. We’re keeping it local, keeping it friendly.” Aneke’s uncanny gift for fusing flavours, nutrition and entertainment is felt everywhere in the menu at Waters Edge. From the café’s own beehive she has created a dessert called ‘Honey Bee Good to Me’: a honey cake with mead gel, honey pannacotta and honeycomb, that mimics the bees’ own hexagonal designs. Finger salads like ‘Green with Envy’ and ‘Little Red Devil’ sprout from flower pots, while Sunday Brunch offers diners the opportunity to fall on big tins of roast chicken surrounded by roast vegetables. And to help her really bring her menu to life, Aneke has enlisted the formidable talents of Chef Daniel Britten, formerly of the hugely popular Britten’s Restaurant in Guildford. Dog friendly, walker friendly, child friendly and exceedingly foodie friendly, when Waters Edge opens on Saturday 9th January, after a year of hard work and Aneke’s pursuit of a singular vision, it promises to raise the bar for what all other community focused cafes can aspire to.

Serves 8 | Prep time: 45 minutes Cooking Time: 3 hours

6 tbsp coconut oil 6 Green cardamom pods 2 Cinnamon sticks 8 Cloves 16 Black peppercorns 4 Small red onions (3 chopped and 1 sliced) 4 Large tomatoes, quartered 150 g tomato puree 20 g Fresh root ginger, peeled weight

8 Large garlic cloves 1 tsp Turmeric 2 tsp Ground cumin 3 tsp Ground coriander 2 tsp Garam masala 1 tsp Chilli powder 2 Pinch salt, to taste 120ml Coconut cream 1 kg (Leg of lamb, cubed) 1 large squeeze lemon juice, to taste 1 large handful of chopped fresh coriander leaves

Fry off the whole spices, cardamom, cinnamon, peppercorns and cloves, in a large saucepan, and then add the chopped onion as the spices start to sizzle. Leave to fry gently for 20-30 minutes until the onions have turned golden brown and are starting to caramelize. Meanwhile make the sauce. Place the ginger and garlic in a food processor, and blitz to make a smooth paste. Add the spices, tomatoes, tomato puree and coconut cream and blitz well to make a smooth sauce. Add the lamb, cubed, to the pan and stir to coat in the onion and spice mix. Add the tomato sauce, stir well, cover and simmer gently for 30 minutes. (Add a splash of water if the sauce seems too thick.) After 30 minutes, add the sliced onions, stir well, cover, and place in the oven heated to 140’C for two hours, or until the lamb is tender.

Give it a moment after a story drops on how water is melting our insides, and a new study will inevitably rise ‘proving’ that perhaps the opposite is true. We gullible humans will believe almost anything we read. Just look at butter’s remarkable return to stardom.

However, a handful of injuries, and even fatalities, have been strongly linked to high caffeine levels as a result of energy drink consumption. The entire market has come under severe scrutiny. Studies have shown that the energy drink industry is based on a mix of ingredients that, caffeine aside, have little, if any benefit for its consumers.

Caffeine - in terms of its effect on our health - has certainly taken it on the chin in the past when it comes to bad press and unfavourable blogs. Like the ma jority of what we put in our bodies, no one can really agree on what exactly is up with it.

Like most things, everything has its pros and cons. With the energy, comes the heightened stress hormones. With the (sometimes) delicious taste, comes the high blood sugar levels.

But in that statement: are we relying on caffeine and the boost it gives us too much? Energy drinks like Red Bull have become the fastest-growing part of the beverage industry in the United Kingdom, with sales exceeding £1 billion in 2014. This figure represents a generational shift in what people drink, but it also reflects a success in convincing customers, particularly teenagers, that these drinks provide a mental and physical edge you’d otherwise lack, all courtesy of copious amounts of caffeine.

Dandelion Root Coffee A popular substitute for the guys who actually enjoy the taste of coffee, but are keen on cutting back. Although it’s actually a caffeine-free herbal tea (bear with), it contains magnesium and calcium – two of energy’s most important components – to ensure that morning boost is still felt.

We’re naturally creatures of habit and if caffeine isn’t consumed in moderation the habit can quickly escalate into an addiction. Of course no person is the same, but the tendency for a day-to-day habit, like consuming caffeine, alcohol or smoking, to increase in time is so often the case. So, with that in mind, we’ve sourced some healthier engery boosters that won’t melt your insides and if, like me, you’d almost certainly be unemployed without a heavy intake of caffeine each morning, you should probably definitely consider:

With its strong taste and golden colour, the vitamins in turmeric tea not only support and balance your energy levels, but some studies have even shown it to strengthen your immune system

Matcha Green Tea We all know drinking traditional green tea is apparently really amazing, but with matcha green tea, as you are drinking the ground down leaf itself, the benefits are extra concentrated. Containing enough caffeine to give you the boost, matcha also contains L-theanine: an amino acid that helps with relaxation without that drowsy feeling accompanied.

Hot Cacao The superfood version of your standard hot chocolate. Hot Cacao is said to release feel good chemicals - like anandamide - to help you start your day on a thumbs-up note. When consumed in moderation, it can have many health benefits. Cacao beans are rich in magnesium (little magnesium often results in drowsiness) and can also help regulate blood pressure and lower cholesterol.

Star of BBC’s Strictly Come Dancing, Prima Ballerina Darcey Bussell CBE is one of the most famous dancers of all time, This January, Darcey will talk with Terrie Fender, Head of the Department of Theatre and Dance and GSA at the School of Arts, about her life and work as well as introducing to the people of Surrey a new aerobic exercise that herself together with choreographer Nathan Clarke have devised to keep people dancing fit. We had the great pleasure of catching up with Darcey to talk all things DDMIX (that’s Diverse Dance Mix to you and I) just before the start of the New Year, specifically ready for New You!

What is DDMIX?

Where did the idea come from?

DDMIX is an aerobic dance fitness class. We don’t want to emphasise dance as such because the steps are simple enough for anybody of any ability and of any age to pick up. So what we celebrate is the diversity of dance styles. We have about 21 at the moment and their all just over two minutes long. Their kind of like sprints of a dance style and they’re more of a flavour, so it’s not about being an expert, we’re just giving everybody an inspiration of a range of dance that is out there across the world. It’s about getting people inspired to go off and try Tango, try Samba, try 1950’s rock ‘n’ roll.

I retired as a Ballerina about 8 years ago, I had always experimented with different styles of dance and always enjoyed learning those skills; from contemporary to jazz to tap, and then I suddenly found myself in commercial dance. Nathan and I did a show called Viva la Diva and we also did a documentary on Hollywood dance.

It’s about starting with this, enjoying the attributes it gives you as in cardio, full -body, rotation and exercise, without even realising your exercising. It’s not just about the body and being physical, it’s also about the mind and enjoying the skill of learning and putting steps together. Each style we keep really simple and only has really four combinations of steps in each style. It is really what we call a flavour of dance. But the nice thing is we do the eras as well as Bollywood, line-dance and Greek and Japanese, so we do the 50’s, 60’s etc. It’s a real mix.

What are the benefits of taking part in DDMIX? For me as a retired dancer and being in my late 40’s I’ve understood the enjoyment of dance, I get it; the endorphins it gives you, the way it makes you smile, especially group dance and joining in with friends. But what I didn’t appreciate is how it’s kept my body in shape. I think we have an issue with doing something full on or not at all. Hopefully I’m delivering a fitness that is not extreme, but more so entertaining, fun and just keeps your body fit without putting pressure on it. That’s realty important to me because I’m that age where I don’t want to not be able to move because I’ve over-done it. We really want to deliver a program that all round will suit everybody to every ability and every age.

I was having such fun just experimenting and trying to achieve the qualities of these other dance styles, but more as an entertainment factor. What inspires me was Fred Astaire, Gene Kelly, those kind of films, but the next generation don’t know who these people are. They are so iconic and their films are so iconic. I wanted to emulate that. We did these sketches from these films and I kind of just thought everybody should have a go at this. Why doesn’t everybody have something where they can try the diversity of dance all in one go? What’s holding us back? I know there are millions of dance classes out there, but they are very professional, very technical and you have to study, you have to keep going all the time. I thought let’s have something that nobody will get bored with and something that is constantly changing. And I did look at my kids actually; I’ve got two daughters and my oldest is 14. She goes into P.E classes and does these mundane exercises which are obviously essential, but I thought there must be something that is more inspiring. I know dance and I know music is inspiring and everybody listens to music. So why can’t we create an exercise that you do with music. Because dancing isn’t extreme, anybody can do this. We didn’t want it to be choreographically too difficult. I know there’s that fear factor of “I’m not a dancer”, but this is quite the opposite, it is literally how you put steps together. It’s very much to do with the mind, which people enjoy. It can be boring doing repetitive lunges. DDMIX is using those exercises but bringing them into a dance field.

You are quite the entrepreneur; whether it’s presiding over the Royal Academy of Dance, authoring children’s books or judging on Strictly – has setting up DDMIX been a challenge for you? Oh my, yes, big time! I’m still learning. We’re also learning from the public. We’re doing various pilots in schools because we really want to see if the kids take to something that is constantly changing and how we keep their attention, so all of that is a massive learning process.

How long will a DDMIX session last? We probably do 12 different flavours and styles in one session which will take 45 minutes to an hour. We create all our own music for the sessions. We’ve worked with some great talented young musicians who will take an Irish jig and then funk it up and make it modern, so that when everybody hears the music they are immersed in the style and flavour before they even learn a move. We have great visuals to help with that too. It’s creative but simple.

What could you not live without in 2016? There’s many things that I couldn’t live without because I do like my creature comforts, but movement and music would be the ones. I could not live without music and being able to have fun with it, which is often dancing around the kitchen. But I think with the pressures of life and everything that is upon our shoulders, you need to be able to let go. I knew that as soon as I retired from being a classical dancer that I needed to have something to have fun with. I didn’t want to do exercise and for it be a task. I want to feel great about exercise. That’s what I want to encourage everybody to do; have no inhibitions and have a laugh!

Test Dummy: Aqua Spinning ALternaTivE

I’d never realised how good my cleavage was until I was in six-foot of water with a photographer’s lens focused on my partiallynaked frame with my little 5p nipples. It was that same night I learned my belly was pretty much double the size it was a few years back and that that six-pack I nearly had in the right light was just a distant memory. With it being a new year, it’s probably time I did something about it. But

exercise is boring isn’t it? Even for the most dedicated of gym worshipers the gym can get pretty dull and search of something new I discovered a traditional gym class with a twist. It was your buttered toast topped with a splash of mint sauce: I’d had all the ingredients before, but never at the same time. It was Aqua Spinning. The class was taking place at Dorking’s Priory School swimming pool with the instructor Zeus. I arrived at 7:30PM prompt, changed into my small shorts and went to meet my bike for the session. The bike – almost identical to a traditional spin bike – was mostly submerged in water, except the handle bars that sat just on its surface. After adjusting the saddle height and the handlebar distance, I hopped on and we slowly began to pedal to the beat of the music. After a brisk warmup we increased the intensity. Aqua Spin combines both indoor studio cycling and choreographed studio aerobics, but adds in the benefits of aquatic exercises.

As well as working the leg and core muscles, Aqua Spin also targets the upper-body muscles ensuring the fullbody workout and improving aerobic fitness. The cooling effect of the water also reduces sweating and the pressure on your heart. As the beat of the music increased in tempo, as did we. Moving faster, pedalling faster and using our arms in swimming motions. The water also allows a wide variation of riding positions, from hanging off of the saddle, to sitting in front of the saddle almost touching the floor. Intervals of forwards and backwards pedalling were then introduced, with the latter giving the added advantage of using the lesser-used muscles in the body. With half the session gone, small routines were demonstrated and to be repeated the said number of times. Keeping in time with the music became more challenging by the minute. The sessions are especially tailored to be challenging yet fun. The higher intensity sprints are mixed with the longer endurance moves to keep

The turbulence of the water began to create an unstable environment, encouraging my weak core muscles to stabilize and get involved in the workout party. TEST DUMMY: ANTI-GRAVITY YOGA In 1999, Westlife confessed to all of humanity that they’d found a special thing and that they’d been flying without wings, and for the proceeding sixteen years I’ve been trying to decrypt the enigma that is those lyrics. ‘I’ve found that special thing, I’m flying without wings,’ sings Brian McFadden on Top of the Pops as he glares endlessly into the camera as if singing directly at an eight-year-old me in my living room. My jaw drops, as does my spoon into a half-eaten bowl of Cheerios. Was he talking to me? Was Brian telling me specifically that I could find a special thing and fly without wings? Years

passed, as did many failed experiments to fly without wings, and my eagerness to discover the legitimacy of Brian’s lyrics was fading. Fast forward to a cold December morning in 2015 and I receive an email regarding Godalming’s The Fitness Hangout and their AntiGravity Yoga classes. I was intrigued. I immediately confirmed my attendance with Jo Dandridge, the instructor, after watching a few videos on YouTube. Was this what Brian was talking about? Was this 3:36 minute-long song that elegantly complimented the Irish group’s self-titled debut ever album written with AntiGravity Yoga in mind? After all, they said I’d find it in the strangest places. I was on a mission for answers.

I headed down to the Godalming-based hangout armed with our photographer, Fiona Digby-Jones, to capture the flying, should the moment arise. After changing into an all-black training get-up because I overhead that black was mega-slimming, I headed over to my mat to come face-toface with my apparatus for the session: the hammock. The AntiGravity Hammock is a piece of fabric that is connected from two overhead points. It acts as a swing or soft trapeze. It’s utilized to change one’s dynamic relationship to the ground, allowing the participant to better understand their body and its relationship to physics. We sat in our hammocks to begin with and began discarding the worries and fears we had inside our bodies. We were

instructed to close our eyes and find that point of relaxation, a point I found almost immediately. I couldn’t remember a time that I’d been comfier. Ever. Before I fell into a deep sleep, we moved into stretches and warming our bodies ahead of all the twisting and twirling that was to come. Quads? Tight. Calves? Tight. Hamstrings? On the verge of tearing. I’m not the most flexible of people - quite the

core work. It’s yoga with another injection of creativity. It’s challenging, it’s fun, it’s effective. It’s a unique fusion technique that’s designed to reveal compressed joints and align the body from head-to-toe. The hammock itself acts as a soft trapeze and as a support while you master simple inversions and finally/hopefully progress to more advanced poses. It’s a body, mind

fallen into the trap of enjoying exercise again. We ended the class as we began, by lying in our hammocks and letting everything out. We’d worked hard, but it had been fun. As I, again, came within touching distance of a sleep it’d take some effort to get me out of, it was the end of the class. I felt relaxed, but worked. I felt tired, but refreshed. Exercise had won again.

“I Found That Special Thing and I Flew Without Wings” opposite in fact - and this certainly made me realise. After a brisk warm-up, we started our main course. A main course I was hoping would see me put sixteen years of hurt behind me. A main course that I hoped would see me finally nod in agreement with Brian McFadden safe in thought that yes, we have found that special thing and we have both flown without wings. We swung, we went upside down, we delicately balanced and performed numerous planks. It was challenging, yes, but enjoyable. It was an all-body workout. Squats, pull-ups, lunges and plenty of

and spirit class. Every movement and sequence, grip/wrap/trap and whatnot is taught with clear progressions. As we approached the cool-down, I had consigned myself to another failed attempt to understand that song. Then, like an angel from the musical, premillennium heavens, Jo showed us how to fly (see images) using the hammock. There it was: I was finally flying without wings. I was inside Brian McFadden’s mind and it was bliss. I had that special thing. An hour had shot by like a bullet. I had

SURREY Storm NEWS: Lightning, whilst Manchester Thunder come up against Team Northumbria. Then, in the day’s finale, Surrey Storm come to face-to-face with Team Bath. It’s been an off-season of change at Surrey Sports Park’s Surrey Storm. The reigning champions have lost influential captain Tamsin Greenway from the court following her retirement from all forms of netball, with her now becoming the Director of Netball at the club. Greenway’s playing departure wasn’t the only change this winter, with Storm welcoming a host of new arrivals such as: Sophia Candappa, Yasmin Parsons, Rhea Dixon, Fran Williams and Elsa Wakeman.

This month marks the start of the 2016 Vitality Netball Superleague season that’ll see a newlook Surrey Storm attempt to retain their Superleague crown following last season’s dramatic victory. The season kicks off with Super Saturday on January 30th in what’s a mouth-watering opening line-up. For the first time ever, the opening round of action will see all eight teams do battle over four matches at one amazing arena venue – Genting Arena, Birmingham - that’s four games for the price of one! The day begins with Hertfordshire Dragons taking on Celtic Dragons, followed by Yorkshire Jets against Loughborough

Scorchers to Feature on BBL Live Broadcast Following a collaboration between Hawk-Eye Innovations, Skysports.com, WebcastSport and the British Basketball League (BBL), the live coverage of BBL games is to return to screens worldwide in January 2016. This exciting deal has been made possible by the technology supplied by Hawk-Eye Innovations, best known for its electronic line calling service for the Wimbledon Lawn Tennis Championships and its Premier League football goal line technology. The first stage of the partnership will see an initial pilot of four BBL events streamed live in January 2016 via Skysports. com and Webcastsport.com and Scorchers fans will be delighted to hear that one of their fixtures will feature. January 30th at 7:30PM will see Scorchers take on Leicester Riders at their new Leicester Community Sports Arena home, in the final game of the four live pilot streams. SURREY Smashers Latest NEWS: Team Derby 4 - 1 Surrey Smashers

Surrey Smashers lost their first ever regular season National Badminton League match last month, going down 4-1 at reigning champions Team Derby.

In the men’s singles Carl Baxter was unable to repeat last season’s heroics against England’s number one Ra jiv Ouseph, losing 3-0. In event 2, Smashers’ Rob Blair and Emily Westwood banked their first AJ Bell NBL win of the season over Ollie Baczala and Amanda Hogstrom, getting it done in 3 games, 0-3.

The men’s doubles eventually proved crucial in the match-night swinging Team Derby’s way, with Chris Langridge and Dean George missing out on a tie-break despite going 2-1 up in the match. Derby’s powerplay proved crucial in pulling away early in the tie-break.

At 2-1, it was 14-year-old stand-in Grace King who took the headlines on the night, defeating Smashers’ Georgina Bland in event 4 after racing to an early 2-0 lead, and eventually winning 3-1.

In the final event of the night, Gabby Adcock lined-up alongside Abigail Holden who replaced late absentee Sophie Brown due to illness. But the experience of Team Derby’s Gail Emms and Kate Robertshaw shone through in a straightforward 3-0 win, to give Team Derby a 4-1 overall win on the night.

Smashers face Loughborough at home on January 11th in their final home fixture of the season, a fixture that’s not a must-win for Smashers to have a realistic chance of being crowned National Badminton League champions come May.

The Guide 2 The Six Nations 2016 Cast your minds back to how rubbish we all felt at around 10PM on the 26th September 2015: really rubbish, right? If you didn’t, you should’ve. England were beaten by Wales, at Twickenham, in the World Cup, in cruel circumstances. Fingers were pointed and individuals were blamed - but nothing could be changed. England weren’t good enough throughout and became the first host nation not to reach the knockout stages of a world cup. That’s in the past, though, so let us not dwell. England have since bid farewell to coach Stuart Lancaster and appointed the well-known and respected Eddie Jones ahead of February’s Six Nations. Australian-born Jones was in charge of Japan at the 2015 World Cup and led the Cherry Blossoms to a famous 34-32 win over South Africa in the group stages. The appointment of a foreign manager was something that was discussed heavily in the media beforehand, but England and Harlequins scrum-half, Danny Care, admitted he didn’t think it was an issue: “I don’t think it matters that the new coach isn’t an Englishman,” Care said, “the RFU should make the right decision based on whether that person has the right attributes, not on their nationality. I just hope he’s a fan of me. “It was sad to see Stuart go, he did a lot for English rugby and he did a lot for me too. I just hope that Eddie Jones keeps the group we have now together, because we’re a good group of lads with bags of potential.”

JOE MARLER, 25, PROP The former Esher loanee has made 37 appearances in his short three-year international career so far and, like Brown, was a consistent starter under the former coach. Such is the character Marler possesses, he was named Harlequins captain for last season. But, will his poor World Cup performances scupper his chances under Jones?

CHRIS ROBSHAW, 29, FLANKER Robshaw has been England captain since 2012, a period that saw England fail to win any ma jor tournament. Lancaster was a self-proclaimed ‘huge admirer’ of Robshaw, an admiration that prompted him to appoint the flanker as captain. Robshaw’s decisionmaking came under scrutiny at the World Cup and many called for Robshaw to be dropped. Will Jones stand by the captain, or will he go for a fresh start?

DANNY CARE, 29, SCRUM-HALF Care was not included in Lancaster’s original World Cup squad, but following Jones’s appointment, he hopes to make an impression by keeping up his impressive domestic form. “Now I’m just focusing on doing my best for the Harlequins and hopefully that can get me into the Six Nations squad for February. All I can give is my best and hopefully that will be enough.” England have only won the tournament once in the last twelve years, with Ireland winning the last two. But with changes-a-many throughout the ranks of every nation, it’s set to be an interesting 2016 tournament.

MIKE BROWN, 30, FULL-BACK Brown scored two tries in England’s opening 35-11 World Cup win against Fiji back in September, but went missing in the proceeding games. He has been a constant figure in the England setup – especially under Lancaster – but with young talent emerging elsewhere, will Jones opt for new blood?

Care was omitted from Lancaster’s World Cup squad, before being called up for the final game against Uruguay. Despite England’s elimination from the tournament already confirmed, Care started scrum-half and was influential in England’s 60-3 win. Care was named Quins captain soon after and has been one of the outstanding players of the season so far. Could his impressive form for the Harlequins persuade Jones to give Care another chance on the international stage?

NICK EASTER, 37, NUMBER 8 Like Care, Easter wasn’t included in the initial World Cup squad, but was called upon for the win over Uruguay that saw him score three of the seven tries. At 37, Easter’s tournament appearances will be coming to an end soon, but will that man of the match performance against Uruguay tempt Jones into giving him one more chance?

The ‘Rising Stars’ Young Business Women in Surrey 2016 list will highlight the impressive and varied talent prevalent in young businesswomen across the county, with all those on the list nominated and voted for by friends, family and colleagues.

Waverley Borough Council approved plans at the Eastern Area Planning Committee to expand the business park, subject to agreeing section 106 terms.

Nominations are now open and Surrey business people are invited to publicly thank and promote the younger women they feel have made a significant and worthwhile contribution to their local business community. Success can be defined in a multitude of ways, so nominations from all walks of life are welcome. From young entrepreneurs, mentors, business owners, innovative and forward-thinking staff, and those who relentlessly give back to the community. Nominations must be submitted by 29 January 2016 via the BWiS website. Voting will then open on 1 February to create the final Young Business Women in Surrey 2016 list. PIONEERING CULTURAL SKILLS PROGRAMME ACCELERATES SMES DRIVE FOR GLOBAL GROWTH A ground breaking programme to turbocharge exporting success for SMEs by equipping them with critical cultural awareness skills is being launched in February 2016. Delivered by global intercultural specialist Farnham Castle and Surrey University, the workshop entitled Developing a Global Mindset – Cultural Awareness in Business, equips businesses with an understanding of culture and communication across linguistic and cultural boundaries and dimensions and provides solutions to help boost relationships with critical audiences. The need for the initiative was sparked by cutting edge research conducted by Surrey University and the Surrey Chambers of Commerce, which identified that SMEs who export goods to nonEnglish speaking countries can encounter difficulties in developing effective strategies for communicating with customers and suppliers. The first course takes place on February 5 at Arcom IT, Export House, Cawsey Way, Woking and runs form 10am-4pm. It costs £395 plus VAT and a limited number of places are available.
