s it’s the centenary year since the outbreak of World War One, it is a more prevalent topic this year than ever.

eah, it’s definitely still important – knowing what those guys did for us back in the day, it was great what they did for their country. So many people died, it’s important to remember them. And especially this year, it’s even more relevant.

ell it was the ‘Great War’ – I remember learning a lot more about World War II growing up, and I never learnt much about the First World War, which I always had lots of questions about. I personally think that there’s often more focus on World War II, so it’s important that this year we remember the Great War.

efinitely, I think it’s very important to remember who’s fought for our freedom. I recently went to the Imperial War Museum, who opened their First World War Galleries not long ago.

It was actually pretty horrifying, but it’s incredibly important to know about this kind of thing.

Voluntary Aid Detachments THE UNSUNG HEROINES

It was a sunny day as I stood watching my children play on the swings in Abinger Common’s playground. I took a look around the park enjoying the quiet calm and lazy trees. My eyes came to rest on a plaque that commemorated those villages that had died during The Great War; the ground on which I stood was dedicated to them.

he names were carved intricately and I began to read them, aloud for some reason; imagining what it must have been like to say goodbye to this quiet corner of England. Then I stopped - a name stuck out; King, Grace. Now I am not so naive to think that women haven’t been involved in battles and wars since the dawn of time, but I’m so used to seeing only male names on a war memorial that it jumped out at me. Grace worked at the Cantine des Dames Anglaises. I’d never heard of them. So that got me digging. Founded in 1909 The Voluntary Aid Detachments were created to provide field nursing services in hospitals and near the front line. These women, with the help of the Red Cross and Order of St. John, volunteered their service to the war effort. By the end of 1914 there were 74,000 volunteers, two-thirds of which were women and girls. Now at the time The Red Cross were slow to accept civilian women could provide

a role in hospitals. Most of the volunteers were from the middle and upper classes and there was a worry that they would find it hard to adjust to the rigours and hardship of life near the front.

THEY WENT WITHOUT A SECOND THOUGHT. SOME CAME HOME TO LITTLE RECOGNITION AND SOME, LIKE GRACE, DID NOT. Enter Katharine Furse who in late 1914 took two of these volunteer detachments to Northern France where they were restricted to serve as canteen workers and cooks. Now you may not be aware but during the war soldiers were not just sent to the line until the war was won or

they died. There was a rota system whereby soldiers would spend time at the front trenches then rotated back to the rear echelons to rest. Those having just rested were sent forward. The women, while not trained nurses, provided a vital role in ensuring the men were fed, clothed and given support; the French soldiers loved these “dames Anglaise” for their caring nature and smiling faces. This was not an easy posting, and the distant guns never discriminated. Often caught up in the fog of war, the volunteers were pressed into emergency hospital service and proved themselves beyond repute. There was a concerning increase in the shortage of professionally trained nurses, and with all their hard work and expertise garnered through experience rather than the classroom, the VADs became essential to the war effort. The transition was by no means easy; the volunteers did lack advanced skills of trained nurses. However

not press ganged as some young men were; they felt a calling. I would be so bold as to say that they knew that the men at the front needed comfort and care; so they went. They went without a second thought. Some came home to little recognition and some, like Grace, did

The centenary of the start of The Great War came this year. A humbling time for us all: A time to remember, a time to reflect. At The Guide 2 Surrey we want to honour those men and women from our county. We want to discover and tell their stories. The path of immortality is created for these heroes by us, retelling their stories, their triumphs, their defeats in a rushing world where it would be easy to forget. We are the guardians of their memories, not us as a media organisation, but all of us. As a local company over the next four years we will look to discovering local stories, local heroes and heroines. This county, like many others made our own sacrifice at the altar of freedom and we too have our story to tell. We will remember them. Rough Music by Will Knowlton With the approach this month of Bonfire Night I thought I’d take you on a journey to a simple time; a time before social workers and before a regular Police Force… This was the age of self-governing communities. Communities set up by the locals, for the locals. These sovereign beings had their own way of sorting out any issues within their towns and villages. Say someone in your village was known to be a bit of an anti-social t*t but didn’t altogether break the law. The way you dealt with them was what was called ‘rough music’. Wife-beaters (anti-social, but not illegal – jeez…) malicious gossips, bad debtors and servant seducers would awake to find their abode encircled by a crowd who would then proceed to bang on pots and pans, blow whistles and generally gob off about what a prize pillock the occupier was. If they didn’t adjust their behaviour, the boys upped the ante and dragged them from the house, threw them in a pond and generally slapped them around a bit. They then nicked something from the guilty party’s house, with the spoils shared out amongst the crowd.

Trouble was this meant that anyone could ruck up and join in - and sure enough men started coming down and start, err, fouling stuff up. Now although the Guildfordians were getting annoyed at the incursion of louts they were at pains to give up the tradition. However things were getting progressively shadier and by 1861 things really went pear-shaped and some buildings ended up on fire - in 1864 a copper was killed. There was a new mayor in the Council at this point who understandably thought that everyone should now grow-up and behave themselves. Clearly a reserved man, Mayor Jacob tackled the problem with subtle tact and negotiation. He called the Army in.

In Guildford they nicked pieces of furniture from said house, took them to the top of the High Street and burned them. And guess what? In a stunning move to save on costs and materials, they did this on November 5th each year! So, our friendly mob would make serpentine progress through town, stopping of at each house that was owned by someone who they felt, in their expert legal opinion, was a douche. Remember these were the days where furniture was expensive – but if you didn’t have any chairs or whatnot, they just stole your fence. So, you can imagine by the time the sun started to lower itself, the pile-up was pretty big. Anyone got a light? By the time 1843 rolled around, the rozzers were starting to get annoyed at this method of dealing with wrong ‘uns. So that year they nicked the two organisers of the Bonfire Night, charged them with affray and slapped them with severe fines and the like. Now, everyone knows that if there’s one way to get an Englishman to do something it’s

Come the morning of the 5th of November 1865, 300 coppers, 50 cavalrymen and 140 infantry took to the streets of Guildford. In those days, the Cavalry functioned like our tanks do now - imagine popping out for your Pumpkin Latte from Costbucks and seeing those guys, all annoyed at having lost their weekend’s leave. Needless to say anyone who looked even the slightest bit shady was turned away. This all worked nicely for the next four years and after that no one bothered anymore, put off at the thought of having a lance up the a*se…

Our Year with By Rich Lee As anyone who visits our website www.theguide2surrey.com will know, we are hugely proud to have supported a great many local charities on our Charity Spot page since we launched the site in 2012. But with the publication of our first print magazine, The Guide 2 Guildford last September, we saw an opportunity to hitch our TG Media wagon to one charity in particular in order to draw what attention we could to the invaluable work that they do over the course of the year. Choosing one wasn’t easy; Surrey boasts hundreds of charities. But Phyllis Tuckwell Hospice in Farnham resonated with us deeply, when we considered what their expertise and compassion brings to their patients at the most profound moment of their lives. Over the year, we have been privileged almost beyond words to meet the people that make the Hospice the special place that it is. As the writer responsible for interviewing them, I have been honoured to help tell the stories of ordinary people who do something extraordinary every day at the Hospice, be they medical or support staff, charity shop workers, volunteers, fundraisers or patients. Early in the year we met Dr Nick Dando, a consultant specialist in palliative medicine at the Hospice and at Frimley Park Hospital. Beneath his friendly yet professional demeanour his passion for his work shone brightly: “Being able to control complex pain or manage distressing symptoms for a patient, and to see the difference to their quality of life, is really rewarding.” The Hospice Care at Home Team extend the charity’s care outside the Hospice, to give support to patients in their own homes. Team leader Debbie Phillips summed up their work succinctly: “The most important thing is keeping people out of hospital when they don’t need to be there and when they don’t want to be there. It’s not so much about the dying process but living with the disease.” Mandi Garwood, who has nursed patients at the Hospice since 2002, shared about the toll that the work can sometimes take. “It can be emotionally draining. There may be some patients that come in and then go so quickly,

you don’t get the chance to build a relationship with them. It can be upsetting, but the support of the team is essential.” But, she explained, the rewards of the job were more than worth it. “I never get out of bed in the morning and wish I didn’t have to go to work. I love the patients and everybody I work with. It’s an honour to work with them.” As we discovered, volunteers make up a crucial force for the hospice, providing invaluable skills and support to the staff and patients. June Sherry, who has given up her time to assist patients visiting the Hospice’s Day Centre for nearly a decade told me: “Volunteering at Phyllis Tuckwell Hospice is both humbling and uplifting.” Just visiting the Hospice for The Guide 2 Guildford had left me feeling both humbled by the work of the staff and the volunteers and uplifted by the incredible passion and humour that permeates the Hospice. But if anyone truly brought home to me the value of the work that the Phyllis Tuckwell Hospice does, it was Susan Swayne. She was the first of my interviews at the Hospice, in January, and the one who has stuck with me the most since. When I met the 70 year-old mother and grandmother, she was propped up in bed in her private room at the Hospice, surrounded by her family. Susan was dying from lung cancer, but it was near impossible to perceive it given how animated and sunny she was that day. She told me all about the emotions her diagnosis

had brought, and how she had accepted her condition and found peace through her Christian faith. Freed from undue suffering through the care of the Hospice, Susan could experience her last days with a measure of comfort, enjoying the company of her family, the staff… and the occasional foot massage. “We’re all going to die,” she told me serenely, and a couple of weeks later, sadly, Susan did. “But hey,” she’d continued, “dying’s not so bad. So far it has been easy; thanks to the support I receive from the staff and volunteers at Phyllis Tuckwell Hospice.”

The Phyllis Tuckwell Hospice is an organisation that runs almost exclusively on money from fundraising and from its many charity shops scattered around the county. But with only 15% of their costs being covered by the NHS – which is under half the national average for hospices - the Hospice must raise 85p of every pound needed to operate. And this is never more felt than at Christmas time; just operating over Christmas Day and Boxing Day costs the Hospice over £36,000, of which £11,500 is required just to run the Inpatient Unit.

Seeing Purple: Guildford Wins Prestigious Night Time Award Guildford – give yourself a round of applause. Our fair county town has been accredited with a Purple Flag for Night Time Economy, recognising excellence in the management of the town centre at night. But what does this mean? Basically, it’s similar to Green Flag Award for parks and Blue Flag for beaches. It leads to Purple Flag status for town centres that meet or surpass the standards of excellence in managing the evening and night-time economy. This entails all aspects from cleanliness to access and transport, street lighting to signage, entertainment variety and choice of styles in bars, clubs and restaurants. A prestigious award, the campaign has been successfully driven by the good people at Experience Guildford, along with Guildford Borough Council, Guildford Pubwatch and Surrey Police. EG, who are the town centre’s Business Improvement District (BID), have worked hard to make sure that an evening out in Guildford is as safe, clean and entertaining as possible – and by golly, with the Purple Flag now officially award, they’ve gone and achieved it. The award is a culmination of Experience Guildford’s initiatives to help improve the safety of night time economy. ‘Behave Or Be Banned’ was introduced by Experience Guildford in partnership with Guildford Pubwatch and Surrey Police in 2013, and has resulted in a 25% reduction in reported alcohol related anti-social

behaviour. Plus Experience Guildford’s funded taxi marshals have done much to reduce disturbances at taxi ranks during weekends. Naturally, it’s not just making the town safer that has helped Guildford achieved this status. With over 100 places to eat and drink, three theatres and one cinema Guildford has become a beacon for night life across the south east, with an eclectic mix of venues providing something for everyone. Stuart Craggs, night time economy manager at Experience Guildford and key contact in the delivery of Guildford’s Purple Flag status says: “This is such a tremendous achievement for the town, and one that both key partners and individual businesses should be proud of. This award demonstrates how we can all work together to benefit the town as a whole. We’ve worked hard to do things right, make a difference and ensure that Guildford continues to be known not just as a great venue for a fun night out, but a safe one as well.” Look out for the purple inspired decorations around the town centre to celebrate this great award!

Talking to... CARDINAL BURNS

By Rich Lee Now into their second series on Channel Four, the anarchic comedy duo of Seb Cardinal and Dustin Demri-Burns are taking their deliriously funny sketch show on tour with an appearance at G Live on 1st November…

How did you two first meet and when did you realise you had a great comedic connection?

us and asked (begged) us to develop a sketch show originally for E4.

We met as film students in Edinburgh and pretty much clicked straight away. We spent a large amount of time impersonating lecturers and creating odd characters together, and started recording characters on a dictaphone and making up weird scenes. That was the origins of lots of characters that made it into our show like the Office Flirt, Rachel and Yumi, Phil and Terry, Banksy etc.

Have you found TV comedy to be liberating in ways live work comedy is not?

Was it difficult to pitch a sketch show to TV executives originally? Sketch shows can be a tough sell as commissioners are often scared off by the hit and miss nature of them. We didn’t exactly have to pitch the show cold as we were already performing a live sketch/ character show as part of the Edinburgh Festival when Shane Allen –then head of comedy at Channel 4 – came to watch

It works both ways. The filming process itself can be very liberating as often there’s room for improvisation, varying each take and finding new jokes within a scene. On a live night you can’t exactly ask the audience if you can go again if the joke didn’t quite land. But live work can be incredibly liberating in its simplicity. It’s about the two of us on stage in front of an audience. Who have been your favourite characters to play over the TV series and live shows? They’re all fun to play but at the moment I particularly enjoy playing Jonesy and Metcalf in the live shows as we get to ‘banter’ with the audience. I also particularly enjoyed playing Curtis in the second series.

What would you say is the Cardinal Rule of sketch comedy? We see what you’ve done there. There is no hard and fast rule. A few rules we do go by though: to always be very honest with an idea and to make sure that we both find it funny and original. It’s good to consider all the ways and possible routes it can go so that we’re not taking the easy option but the funniest. Could we see a feature length film from you two in the near future? That is certainly something we’ve always harboured ambitions for and would eventually love to achieve. Don’t worry, we’re busy scribbling.

There’s always so much to choose from at this sparkly time of year so we’ve broken your choices down into three categories and which ones best exemplify them. FAMILY BONFIRE Cranleigh and District Lions Bonfire on Saturday the 1st of November from 8pm. This is one of the best events for families around; there’s a great procession through Cranleigh town (sorry, village) down to the Bonfire with bands playing and loads of local food. The Bonfire’s always huge and there’s a funfair and of course Fireworks as well. We love it.

LOCAL BONFIRE This is a great little village event that’s organised each year by The Holmbury Bonfire Boys. The “Boys” raise much needed funds for local causes. This year it will take place on the 8th of November with the fun starting from 6:30pm. Always a great evening of fireworks and fun set in one of Surrey’s finest villages. Please remember this is a fund raising event so admission is by programme only, which you can purchase at the entry points in and around Felday Glade.

SCENIC BONFIRE You can’t not mention Guildford Lions Firework Display in Stoke Park on November the 5th. Now admittedly there’s no Bonfire (bring it back!) but the Firework Display each year is stunning. Why scenic? Well go just about anywhere in Guildford and you can see the Fireworks, their flashes and sparks bouncing around the valley. A procession leaves the town centre at 7:45pm usually started by the stars of this year’s panto and of course the ubiquitous Peter Gordon. A great all rounder, the fiesta is amazing.

The Angel Dining Rooms

Cast your minds back to the heady days of, oh – about six weeks ago. The leaves had begun to turn as summer was coming to a gentle end. We’d eaten well, us foodies, and lo we were thankful. The light, bright dishes of summer had made their point and made it well, but now our thoughts and appetites were turning to the dark and hearty delights of autumn. Fortunately, Chris Connor at the Angel Dining Rooms and the historic Angel Hotel, was one of the first Guildford chefs out of the gate with his seasonal menu. It looked good. So we went.

eneath the long arched ceiling of what used to be the hotel’s ballroom, we found a restaurant radiating easy class and an echo of glitzy times gone by. It’s clear why the place is popular for functions; but even without them, the Angel Dining Rooms has proven a draw for diners, seeking modern British cuisine that remains stubbornly authentic and independent in the face of a tide of chain restaurants elsewhere in town. Lunch began with a delicately seared pigeon breast on black pudding with a swirl of Cumberland sauce; a delicious reminder of the earthy sweet flavour of this underused bird. No dainty quail egg was damaged in the making of this dish; instead a gorgeous, oozing duck egg in a crisp, light batter lent its golden loveliness to the plate. For mains, a bavette of Surrey Farms beef had clearly enjoyed every minute of its eight-hour, 58° soak in the sous vide machine, and emerged soft, pink and

meltingly tender. A handsome fondant potato soaked up a sweet jus magnificently, but a fantastic flourish came in the form of an ox cheek ‘tarte tatin’ perched jauntily on top: a happy crown of deeply salty ox cheek in a halo of puff pastry. A warm autumn fruit crumble, ripe with apples, pears and blackberries, neither too tart or too sweet, and layered in sweet, crunchy golden topping with a gentle hum of cinnamon - made us grateful to bid farewell to summer (providing we could eat this every night until it returns). If you haven’t been before, know that there’s some seriously good cooking to be found at the Angel Dining Rooms. Many chefs spout tired old lines about how they love to “Put the ingredients and the flavours first.” Chris Connor does precisely that but without feeling need to beat you round the head with it. His food simply speaks for itself, and very eloquently too.

TALKING TO…

Steve Drake One of the few Michelin-starred chefs to call Surrey home, Steve Drake celebrates ten years at his renowned restaurant in Ripley. Rich Lee met him to find out more about his fascinating journey to the top and the creative process behind his astonishing dishes…

H

aving just sailed past the anniversary of his eponymous restaurant’s tenth year, Steve Drake is in high spirits. It can’t hurt that Drake’s in Ripley has just been awarded a star in the 2015 Michelin guide. That’s a star for every year since the restaurant opened for business back in 2004. If he wanted to set a precedent for himself early on, winning that star alongside three AA Rosettes and being named

Newcomer of the Year by the Good Food Guide in that first year would have done the trick. But for Drake, success means the freedom to indulge an instinct that has carried him through some of the finest kitchens in the UK. “It’s about being able to be yourself. For me, success is happiness and being creative; being able to do things my own way.” Steve Drake’s ‘own way’ manifests itself in his much talked about flavour ‘Journey’ and ‘Discovery’ menus.

Unrestrained by the a la carte options of old, these menus are Drake’s invitation to explore flavours and combinations of an exquisite level of detail, technique and presentation, while remaining a celebration of the pure ingredients at the heart of his dishes. Like broccoli. He takes out a worn notebook, rifles through pages of arcane sketches and recipes until he arrives at a blank page. With a pencil, he demonstrates how he takes the humble brassica as a base flavour and transforms it into something truly astonishing (see left). “I’ll group together all the flavours that go well with broccoli: blue cheese, capers, nuts, buerre noisette...” He scribbles the names of other flavours around the word broccoli until a spider’s web of ideas begins to appear. “Then I’ll think ‘what could be more unusual?’ Perhaps green tomatoes or poppy seeds. So we’ll make a poppy seed ‘leather’ that sits with the

broccoli, a broccoli cream, slices of wafer-thin broccoli in an almond vinaigrette, raw slices of green strawberries. Then slices of caper berry which give acidity and saltiness… It sounds complicated but it’s actually very simple.” Actually, it just sounds complicated, but he insists: “Technically there’s a lot going on, but we always have to make sure that it tastes of broccoli.” This is all, of course, a long way to have come from his teens, slinging bacon sandwiches in a trucker’s café in Essex. “I wasn’t brilliant at school but I used to love home economics. There was only me and my mate and the rest were girls - which was great. But I knew from about fifteen that I would go into the kitchen.” His tutor at catering college would dazzle him with stories of the top London kitchens and so, on his 17th birthday, lured by the big city lights, Drake began working at the Ritz Hotel. But as the early 90s recession hit, shrinking the team of chefs by half, it meant Drake began his apprenticeship right in the trenches. “When I messed up six tournedos rossinis they absolutely crucified me! But I learned the discipline and structure of the kitchen. I couldn’t be as good as I wanted to be, though. I was a bit of a perfectionist, even at that age.” With the resilience and hunger that marks a true chef in the making, he soldiered on eventually working for the legendary chef Nico Ladenis on Great Portland Street. “I thought I knew attention to detail from the Ritz but at Nico’s it was just a completely different level.”

At 19, Drake took a break from the heat and noise and retook his GCSEs and a GNVQ in Business Studies. “I think I had a chip on my shoulder that I hadn’t got any qualifications.” Perhaps it also marked his intention to strike out on his own later in his career, but a few more years working at the three star kitchens of Nico Ladenis, Marco Pierre White, Gordon Ramsay’s successor and William Drabble at Aubergine, lay ahead. Moving to the idyllic Surrey Hills for his first head chef role at Drake’s on the Pond at Abinger Hammer brought little

appreciate it much at the time; I certainly appreciate it now.” This finally led to him and Serina Drake opening their award-winning restaurant at Ripley in 2004. “Looking back now I think of how unprepared we were. But I was driven; it was all about the food on the plate. We were just learning as we were going along.” It’s clear Drake is not one to shy away from risk, both in business and when it comes to his food. “I’ve always been one for thinking that it’s good to get into something that you don’t know about. To get into the unknown where you’re not quite sure how you’re going to react.” Even in his downtime, he’d prefer running the marathon des sables over putting his feet up. I force the question anyway: what is Steve Drake’s ultimate comfort food – to enjoy at rest with no demands or adventures pulling him away? He beams and says, “Rice Pudding. Tinned. Just as it is. It’s amazing.” I’m left wondering what a real rice pudding a la Drake’s would be like. Pretty complicated, I suspect, but something pretty amazing too.

For me, success is being able to do things my own way. respite though, as he worked every hour by himself while he refined his own unique approach to food. What it did bring him, though, was the prestigious Roux Scholarship in 2001 and his first Michelin star in 2002. “This sounds really arrogant, but I kind of expected to get it because I was so driven towards achieving that. I probably didn’t really

Talking to… CHRIS LANGRIDGE With our media seemingly football-obsessed, it’s increasingly hard for the lesser-known sports to really take off. However, October saw the launch of the first National Badminton League (NBL), a league that hopes to increase the sport’s profile and the number of young participants playing it. Joining the league on her maiden voyage are our own Surrey Smashers, who play their home fixtures at Surrey Sports Park. ‘The Smashers’ are captained by Commonwealth Games medallist, and local Epsom boy, Chris Langridge, who I spoke to on the team’s launch-day… By Tayler Willson WHAT DO YOU THINK OF THE SURREY SPORTS PARK? When I was younger we had the Spectrum and that was the leisure centre in Guildford. I mean, it was nowhere near as nice as this, but we did have badminton tournaments there. Surrey Sports Park’s very big, it’s very modern and it’s perfect for Surrey Smashers we couldn’t really have asked for more. I haven’t seen the other venues in the league, but I’d be surprised if this wasn’t the best.

It took me a while to understand the game and I was probably twenty before I really understood – so that’s key. The most basic one is the amount of hours you spend playing the game. The more time you spend on court, the better you’re going to get – it’s as simple as that. As long as you’re doing the right movements, right techniques then you’re going to improve.

TEST DUMMY TRIES... Surrey Search and Rescue

H

eading out into the unknown and discovering something unfamiliar and different is always fun and a little bit exciting. At least, it is for me. It was more so this time as I closed the front door behind me, slung a small rucksack into the back of the Jeep and turned into the mist toward Reading. I was volunteering to help out Surrey Search and Rescue.

Upon arrival we piled into a team member’s Discovery and headed out into the woods of the Englefield Estate, a few miles south west of Reading. After a short drive, during which I completely lost my bearing’s, the vehicle came to a halt and the first volunteer hopped out, disappeared into the bushes and the Discovery took off once more.

The UK has several key volunteer organisations that aid the emergency services. We’ve all heard of the Royal National Lifeboat Institution and Mountain Rescue, but you may not have heard of The Lowland Search and Rescue service. They were blasted into our front rooms last Christmas, when at the height of the floods, these quiet professionals plucked victims from the water and brought aid to trapped families. The members are all unpaid volunteers and, like their brethren among the RNLI and Mountain Rescue, receive no government funding.

After we dropped off the second volunteer it was my turn. We pulled over, I got out and followed my guide a few metres into the bracken, where I made myself comfortable against a tree. And there I sat, alone with only my thoughts and a packet of Haribo. It was here that I really started to understand the importance of volunteering and the loneliness of being lost.

My job today was to help a pack of their rescue dogs and their handlers pass a vital exam. But how to find out if a dog will find a missing person (‘Misper’ in rescue parlance) without having... well, a missing person? That’s where two other volunteers and I came in.

You see, on the face of it, volunteering to sit in a bush to be found by a dog may not seem a new and exciting thing for me to recommend, but the work is so important. I sat for an hour and a half before Fitz the Spaniel found me and the entire time I was no more than 4 metres from a main path. Scores of people walked past - families, dog walkers, horse riders and two teenage boys, one of whom was certain that a girl would never consider his friend as a life-partner.

But imagine lying there injured and alone, dealing with that sense of desolation as people walked by, not seeing or hearing you. The dog, which I could now hear rustling through the ferns, would have been my only salvation. When Fritz appeared, very pleased with himself, he went to find his handler to bring her to me. I was ‘rescued’. So here we are at the crux of the matter. The Lowland Search and Rescue Teams are essential, a small but vital cog in the machine that keeps us all safe and well; a machine that we aren’t even aware of until we need it. Yet conversely they need you. The teams can’t train without you, can’t fund themselves without you and will stop without your support. They need us just as much as we need them. With Christmas just weeks away, the promise of a well-earned break for business owners and their staff might be the most anticipated present of all. But there are a number of factors to consider when it comes to Christmas closures that can make the difference between a relaxing holiday or a tense time away from the controls.

TO CLOSE OR NOT TO CLOSE? Of course, many other companies also close their doors at this time which could mean one of two things to you if you’re a business owner. The lack of competition might be an advantage that you would do well to exploit, providing that you can be confident that the trade will be there in their absence. Will you need to utilise current staff (at a possible pay increase over public holidays) or employ casual staff? Will the potential trade make it worthwhile? On the other hand, it may be futile to keep your doors open when suppliers and contractors vital to your business have closed theirs, in which case you could be paying staff for little to no return.

SECURITY Whether you run a shop with valuable stock to protect, an office with highly sensitive documentation or you’re a manufacturer with expensive machinery and materials, a fully functional CCTV system is the one of the best presents you can give your business. Ensure that footage is date and time ‘stamped’, is clearly signposted as a deterrent and that staff are properly trained to view and download the footage, should it be necessary. Keep doors, gates and fences well maintained and locked over the Christmas period.

PREVENTING A CRISIS If you and your staff are vacating the premises for a few days over Christmas, you should do so without the worry of burst pipes. After all, winter can be difficult financially as it is without the stress and expense and stress of fixing faulty plumbing during or after the holidays. Fortunately, prevention is better than the cure, so ensure water pipes in cold draughty areas are insulated or lagged, insulate outside taps or turn them off at the stop tap and drain the water from them and, if you plan to close the business for a few days, leave the heating on low.

Fleeces would’ve been better as the air-con blew out, not warm air, but arctic blasts with everyone turning purple. It wasn’t the food people remembered but the polar temperatures.

Themes! We Brits love dressing up - think Panto, think the London Marathon. So, create a theme to make the party special and allow your guests to unleash their creative souls. How about Santa’s Little Helpers or On the First Day of Christmas? Fun costumes produce fun atmospheres. This is a celebration among friends, not a PowerPoint presentation.

Food & drink should be the best. Not lavish and the most expensive, but fresh, local and seasonal. Partner with suppliers for the best deal, giving them credit on your invitations for some PR in return. Whatever you do, don’t, I repeat, don’t offer Twiglets. I once attended the launch party of a leading creative talent agency for the fashion and advertising industry in Mayfair, which offered Twiglets and peanuts. Nothing else. Not good at all in terms of PR and perception.

INTRODUCING THE LEXUS NX300H By Joe Payne After its launch at Lexus Guildford in October, we thought we would take the NX 300h for a test drive – and the fully hybrid 4x4 didn’t fail to impress… As someone who’s car-owning history veers between ‘old banger’ and ‘older banger’, the interior of the Lexus NX 300h seems positively space age. But this isn’t solely down to my own naivety and somewhat chequered car history; with its intuitive touch pad that connects to the Lexus Premium Navigation service, wireless charger and stunning sound system, this is a typically modern machine from one of the industry’s most prominent luxury manufacturers. But it’s not just the bells and whistles on the dashboard that makes this 4x4 stand out from the crowd… The F Sport model that I had the pleasure of driving is competing with the likes of the Audi Q5, BMW X3 or Range Rover Evoque in the mid-sized crossover category, with only the latter offering looks anywhere as good as the NX’s sweeping, curvy prettiness. But really the Lexus’s engine is what sets it apart from its rivals – for, as with all new models, this is a fully hybrid engine. And what an engine it is too… Made in the world-leading Kyushu Eco Plant, the NX 300h is made with a huge degree of recyclable material and minimal waste. Naturally, this ethos transfers to the hybrid engine, a 2.5l petrol mixed with chargeable battery that combined can offer up to 56.5mpg. The battery is located under the rear seat, ensuring that boot space isn’t compromised, and is charged using electricity generated when driving and braking – thus avoiding the need for any external charging. Remarkable for what is a fairly sizeable 4x4. So – what’s it like to drive? Well, this is Lexus; it’s a smooth, comfortable cruising experience from the off. The huge list of equipment ensures all of your driving requirements are met, and that engine is incredibly quiet at city driving speeds (though in a glorious example of pointless awesomeness, you can have artificial engine noise come through the speakers if the silence is too eerie...). Taking it on the motorway sees the petrol engine kick in and roar away, with this sporty model able to overtake with ease. All of

this with razor-sharp responsiveness, while sat high getting your bottom gently warmed from the heated seats… As ever, Lexus – who pioneered hybrid technology a decade ago – have created a luxury car with stats to satisfy even the most eco-conscious. That a car of this size is able to create so little emissions (121 CO2 g/km) while offering such a range of creature comforts is staggering. Still thinking about buying a diesel?

EMMA BROWNING HAIR DESIGNER / QUEEN OF COLOUR WHO ARE YOU AND WHAT DO YOU DO? My name’s Emma Browning and I’m a designer at Velvet Rooms for Hair HOW DID YOU GET INTO THE INDUSTRY? After I left school I went to college for a couple of years and qualified. I met Leanne (owner at Velvet) at a place called Zappa’s and went and worked at a couple of salons after that. Then when Leanne opened up here she asked me if I wanted to come for an interview; I came and here we are! I’ve been at Velvet for 2 years now. YOU RECENTLY WON THE YOUNG COLOURIST OF THE SOUTH AWARD AGAINST SOME OF THE HEAVYWEIGHTS IN THE HAIR INDUSTRY? WHAT DO YOU THINK IT WAS THAT GAVE YOU THE WIN? It’s hard to say… a lot of people enter and I suppose they’re looking for something that’s different and something that stood out. I think what I did was quite on trend, so maybe that’s why. My final look was a sharp red bob, with a heavy fringe and it was quite bright - it had three different colours in it…

WHAT WAS THE INSPIRATION BEHIND YOUR COLOUR FOR THE FINAL? The brief for the competition was ‘Autumn/Winter 2014’ so I went for a quite a festive look. When I think of autumn I think of copper, reds and the warmer tones. WHICH COLOURS ARE PROVING POPULAR AND WHAT ARE YOU RECOMMENDING? Short, pixie crops with copper colours seems to be popular and on trend at the moment. On fair haired ladies, it’s more about ashy blondes or at the other end of the spectrum, a really quite golden blonde. WHAT’S NEXT FOR YOU? I’d like to go in for the main colour trophy either next year or the year after - but I’d just like to work as much as I can and keep learning. WHOSE HAIR DO YOU LOVE RIGHT NOW? Jerry Hall has recently had her hair all cut off into the Lob which is really cool at the moment.

WHOSE HAIR WOULD YOU LOVE TO CUT / COLOUR AND WHAT WOULD YOU DO? Kate Middleton. She’s got amazing hair but I’d love to give her something completely different. WHAT DO YOU ENJOY MOST ABOUT SURREY? I love Chobham because of the village feel. Everybody knows everyone else and we all talk. The people are really nice! FAVOURITE PLACE TO GO OUT AND RECOMMEND? I actually love going to Cornwall for the day bizarrely, which is quite far away. It takes about 3 hours but it’s worth it. I love it, it’s so peaceful. WHAT DOES YOUR FREE TIME CONSIST OF? Hanging out with my friends - and obviously shopping! Kingston is great.
