Your your Community News WOKING’S YOUNG PEOPLE’S CIVIC AWARDS SCHEME SEEKS NOMINEES The search is on for young stars with the eXceptional factor. Nominations are now open for the 2017 Young People’s Civic Awards Scheme, which aims to promote and reward community spirit in young people aged up to 18 years of age. The scheme, run by Woking Borough Council, recognises children and young people who have achieved exceptional success, in areas that are not normally recognised by formal accreditation. Nominees are being sought in the following three categories. Outstanding Contribution to the Community –Such as helping older or disabled people, working with children, fundraising for good causes and getting involved with voluntary organisations. Triumph Over Adversity – Such as overcoming a disability or helping a parent or family member with a disability. Outstanding Achievement – this covers excellence in many fields – sport, music, drama, and the visual arts – particularly in less academic subjects that are not normally recognised or rewarded in other ways.
THROW IT AWAY? NO WAY! Guildford’s Repair Café is one of an international movement that encourages people to think about re-using and repairing items rather than throwing them away… By promoting repairs, Guildford Repair Café is saving residents’ domestic items from landfill, helping people to continue enjoying items that they love whilst developing skills, reducing waste, saving money and resources, reducing CO2 emissions and encouraging a sustainable community. Held at Park Barn Community Centre between 10am and 12pm, help will be on hand on 10th December, 14th January, 11th February and 11th March to repair any items in need of attention. The friendly team of local volunteers includes DIY experts seamstresses, electricians and bike mechanics, all of whom can offer practical help and advice and teach you how to repair items yourself, free of charge. Meet others, share ideas and be inspired to repair, not replace! For more information visit www.guildford.gov.uk/repaircafe
Speaking about the initiative, the Mayor of Woking, Cllr Anne Murray, said: “The Young People’s Civic Award Scheme is a fantastic way to acknowledge the remarkable hard work and dedication shown by young people in our community that otherwise may go unnoticed. It gives us a special way to celebrate their achievements and demonstrate our pride in them, so parents, teachers, carers and guardians, please nominate a deserving young person today.” The 2016 award winners (pictured) were Woking Community Youth Work Service’s Peer Education Project (Outstanding Contribution to the Community), Christopher Balcombe (Triumph Over Adversity) and Joe Cross (Outstanding Achievement). The scheme is open to all children and young people, up to the age of 18, who live or attend school or college in the Borough. The winners will be invited to attend the Mayor’s Civic Reception to be held on Friday 28th April 2017. The deadline for nominations is Friday 27th January 2017. THE HAPPY CAFE RETURNS TO THE BOILEROOM IN GUILDFORD After the success of Guildford’s first ever Happy Café that took place last month in conjunction with Mental Health Awareness Day on 10th October, The Boileroom are proud to announce that the Happy Café will return to the venue on Saturday 17th December from 11am ‘til 3pm. The first ever Happy Café was founded by Stan Rosenthal in Brighton, but has since grown into a nationwide project, with Happy Cafés open across the country. Each one is unique to the community it serves, but all share the same initiative that the Happy Café is a friendly and welcoming place to meet other people with a shared interest in promoting happiness and wellbeing. At the café you will be able to chat and meet new people over tea, coffee and cake, and read some of the texts on happiness and well-being on display. The event will feature a talk from Rosamund Community Garden Guildford’s Joanna Al-Zuhairi, on the background of the film they are screening at the event, ‘The Economics of Happiness’, directed by Helena Norberg-Hodge, Steven Gorelick and John Page. ‘The Economics of Happiness’ is a documentary about the costs of globalisation, and the importance of focusing on real human and ecological needs through local community and nature. SURREY WILDLIFE TRUST ARE JOHN LEWIS’ CHRISTMAS CHARITY PARTNER The magically created wild animals in this year’s eagerly awaited campaign highlight the wonder and joy of the natural world around us. So, it was a natural choice for John Lewis to partner with the UK’s Wildlife Trust charity.
Christmas advert. Money raised through the John Lewis soft toy sales will enable us to buy wildlife action packs for hundreds of school children in Surrey, as well as activity booklets and wildlife resources for teachers to use in lessons.”
“Educating and inspiring the next generation about the wonders of wildlife and encouraging children to get outside and discover the joy of nature is so very important and a huge part of what we do,” said Aimee Clarke, Surrey Wildlife Trust’s Director of Education.
10% of the retail price of a selection of wildlife cuddly toys sold in their stores and online will be donated to the charity. Craig Inglis, Customer Director at John Lewis, said: “Each year we work with a charity which fits our ad and we hope this year’s campaign will encourage more children to discover a love of British wildlife and encourage support of The Wildlife Trusts.
“So we are delighted John Lewis chose to showcase our fantastic British wildlife in its
“2016 has certainly been quite a year, so we hope our advert will make people smile. It really embraces a sense of fun and magic, reminding everyone what it feels to give the perfect gift at Christmas.” Surrey Wildlife Trust is asking everyone to give the gift of nature this Christmas - to help hundreds of children in the county discover their wild side with a range of exciting, unusual and inspiring presents, from wildlife course gift vouchers to otter adoptions. GREEK FISHERMEN’S REFUGEE RESCUE EFFORTS DOCUMENTED IN UCA STUDENT FILM
is a global issue. It is something that everyone should know about and has been affected by in some way. When an act of war is broadcast as a news story, or the image of another drowned innocent child goes viral, it is so easy for a nation to become spectators to a situation that they should be actively helping. “Our film takes on a unique viewpoint, letting the voice of people who have taken on this responsibility of rescuing refugees be heard. The fishermen that we interviewed are not trained coastguards, but normal people like you and me who get up and go to work each day, in order to provide for themselves and their families. These fishermen were never asked to help people as they made the deadly crossing, but they do so without question.”
A film created by two of Farnham’s University of Creative Arts graduates, which tells the story of how fishermen on the island of Lesvos, Greece, have been tirelessly helping to rescue refugees from the Mediterranean Sea, has been broadcast as part of the new series of Channel 4’s Random Acts. Elmaz Ekrem and Dominika Ozynska, who both studied BA (Hons) Animation at UCA and graduated this year, created the short animation The Law of the Sea to explore the crisis from a different perspective. In January this year, the students travelled to Lesvos to interview the local fishermen who had witnessed and taken part in rescue efforts of refugees fleeing conflict and poverty. Elmaz, who is 21 and from Enfield, says: “The subject matter of this film, the war in Syria and the humanitarian crisis it has created,
Dominika says: “The refugee crisis evoked many different reactions from different people in different countries - some were supportive while some opposed letting refugees into Europe. However, when I went to Lesvos, I was shocked that none of the fishermen or local people questioned whether to help refugees or not. The crisis affected them directly and turned their lives upside down. They still accepted it and did everything they could to help those that were coming to the island. I think it’s important to show people this perspective - one of unconditional help and support for those in need. Because for me, it’s not only the law of the sea - it is a universal law - if someone needs help, you help them. It’s easy to forget about it when the issues seem far away.” The animation took a total of seven months to make and, upon their return to the UK, the students selected the most telling interviews to use for their short film.
Random Acts showcases short films which are chosen for their bold and original expressions of creativity.

The Forgotten Christmas Elf

Join the creative team of Story Storks for a very special festive show aimed at 2 – 7 years-olds at the Rose Theatre in Kingston this December. Inspired by the true story of Jerry Joyce, a Bentalls employee who invented a Christmas Elf especially for Kingston, the show is set in the Children’s Library where a little girl accidentally leaves her toy behind on Christmas Eve. Talking to Frank Turner The unstoppable, outspoken anthem-machine Frank Turner will be rolling into G Live on 12th December with his band the Sleeping Souls and his ‘Get Better’ tour. Rich Lee talks to the tirelessly arena-filling, travelling folk-punk troubadour ahead of his show… Next year presents some huge milestones for your career. How does it feel to look back over a decade in the music business? The last little while, they’ve started coming thick and fast, a lot of those ‘decade’ things – a decade since my first show, first EP, decade since my first album, etc. It’s fun and we’re doing a kind of anniversary edition of the first record on vinyl, which is exciting. But at the same time, I don’t want to become a walking anniversary machine just yet (laughs). But if you’d told me I’d be doing this still a decade later, I would have been… pleasantly surprised might be the term?
How have you seen the music industry change since you entered it ten years ago? It was in the middle of changing a lot when I entered it. The basic fact is that the internet exploded a bomb underneath the models the industry used to work on. So there’s been this long drawn out process of figuring it out over the decade. But I don’t really care about economic models, I care about music. I’m an incorrigible optimist and music is very accessible now in ways it wasn’t when I was a kid and that’s got to be a positive thing.
Given your transition from hardcore to folk-rock, could we yet see Frank Turner evolve in new ways we may not expect? I hope so. I feel it’s important as an artist to evolve and do new things. And it’s funny, there’s a streak of conservatism among music fans that I always find kind of dismaying. Every time I do something different, someone somewhere complains that it’s not exactly like the last thing I made. And I’m like, I know, that’s the point! But I try, on a personal level, to try things that are outside of my comfort zone.
We think most readily of folk music, certainly the so-called ‘resurgence’ of it, as happening in the UK and US. But upon your travels have you discovered the same roots spirit in other countries? Yes, to a degree. I’ve travelled an awful lot in the last decade and I’ve been all around the world. But the places I’ve been and the people I’ve met have always been filtered through the prism of people who want to come to my shows – so I hesitate to call myself an expert on other cultures. The whole idea of this resurgence that people are talking about – one of the things I like about acoustic-roots-folk-music-whatever you want to call it, is because I think it’s always been there. And every now and then, the roving spotlight of popular culture lands on it for a little while. But it’s quite happy surviving without it.
You’ve encouraged an appreciation for a home-grown ‘Anglicana’. What did you mean? That was a contender for an album title at one time! (Laughs.) Well, America does have an interesting thing with their sense of ‘patriotism,’ shall we say. It is entirely possible to be an American patriot without being a bigot or a chauvinist. My album ‘England Keep My Bones’ (2011) was an attempt to – I don’t want to say ‘celebrate’ because I accept that where you’re from is really just an accident and who gives a f**k anyway – but there are aspects of English culture and history that I’m interested in and want to examine. And I wanted to be able to do that without coming off as some far-right lunatic.

How did you come to choose War Child to support from your ticket sales on this tour? The charity approached me, explained what they do and how important they are as a group. Their initiative of raising £1 on the price of a ticket to help children and families affected by conflict was a really simple and cool way of raising some money. It just feels right to use part of what I do to support such a good cause.
Finally, we can agree that 2016 has been a crazy year for the world. So do you ‘Still believe rock ‘n’ roll will save us all’? (Laughs) Hopefully it’s apparent that that was a slightly tongue-in-cheek line to a degree. But no, I don’t think that music can save the world, but it can save individual people from a more boring life, if nothing else! But for me, music is still the absolute centre of my existence and I can’t really imagine it ever not being so.
Frank Turner and the Sleeping Souls play G Live, Guildford on Monday 12th December. Visit www.glive.co.uk for tickets and www.frank-turner.com for more info.

Chateau Garraud, Lalande-de-Pomerol, Bordeaux 2008 / £20.90 Lalande-de-Pomerol is an area just outside the main appellation of Pomerol in Bordeaux. It is one of the few areas where value for money can be found without compromising on quality. It is a wine which offers a lot; it is powerful but smooth with incredibly well integrated tannins. It pairs particularly well with roast beef but will also do justice to the Christmas Turkey! This wine is made predominantly Merlot with 24% Cabernet Franc and 2% Cabernet Sauvignon, the vines are over 36 years old. The wine now has a lovely bit of bottle ageing to it and is a real classical example of right-bank Bordeaux, a real treat to help you enjoy the Christmas festivities. Foodies’ Festive Tips
From tinselly tipples to lovely leftovers and stress saving saves, we’ve culled a bevy of comestible Christmas life hacks from some of Surrey’s most passionate foodies, ready to add that extra sparkle to your seasonal soirees…
Fern Green
Godalming and Italy-based food stylist, writer, chef and boutique hotel owner. My favourite part of the festive day has to be the hour before the big lunch. I love it because it feels like that precious time before you are stuffed full of turkey and you can only think about rolling over and curling up next to the dog! My tipple for this year’s interlude has got to be ‘The Negroni’. I’ve been working in Italy a lot this year, and this aperitivo is the best to start off any celebration. Really simple to make, and once it is in your hand, poured into a small heavy glass, you feel elegant and ready for the performance ahead. The classic recipe for a Negroni is 1:1:1 which is pretty straightforward: gin, Campari and sweet vermouth. It needs no shaking, but stirred over ice with a big shaving of orange peel…very Christmassy! Fern’s new book ‘Energy Balls and Bars’ comes out on January 27th 2017. Come back next month for an exclusive recipe!

Daniel Britten
Head Chef at the Dining Room at the White Horse, Hascombe When it comes to Christmas dinner, if I’m cooking then I like to try something different every year, whether that is a nice juicy goose or a beautiful rib of beef. One dish that I would like to try this Christmas would be a Honey and Whiskey glazed haunch or leg of Venison (on the bone); lots of it about this time of year, just ask your local butcher. If you are going for the traditional turkey dinner then there is something I always do and it hasn’t let me down so far: Always rest the turkey for a good 45 mins after cooking under a sheet of foil. After this resting period, carve the breast meat and place into a deep oven proof tray, cover in gravy and a few knobs of butter then re heat, this should keep it nice and succulent.

Aneke Spacie
Head Chef and Owner at Waters Edge, Horsell Common I simply love Christmas and autumn and winter in general! My favourite dish to serve this Christmas will be my homemade mulled wine syrup, roasted whole shallots spiked with cloves and a crushed cinnamon stick star anise and orange peel, wrapped tightly to steam in foil and served with a gorgeous duck and orange terrine. My favourite Christmas pudding that I serve every year to my friends and family is a Baked Alaska straight from a scorching oven filled with all the foraged berries from autumn; blackberries and blueberries and homemade cinnamon ice cream, served with a hot elderflower syrup infused with cassis. We traditionally bring this to the table in a darkened dining room and ignite the liquor with a touch of brandy too.

Stu Henshall
Guildford-based Musician, Cook and Founder of the Alternative Kitchen cookery blog For me, a Christmas dinner is a roast on steroids. My top tip is to not go mental on a hundred things that are going to stress you out. Do what you do well. If it’s turkey, make sure there is enough juice to stop it drying out. I’ve always kept it covered, or it’s going to be dry as hell. There are usually a few Christmas dinners over the period so at mine there’s gonna be a spiced mushroom, hazelnut, and lentil Wellington with sliced seitan (herby, lush, wheat based “meat”) rosemary tatters and snips, garlic sprouts, spiced red cabbage, lashes of red wine gravy, and probably a bottle or three of Guildford’s own Little Beer Corp’s “1917” pilsner. It’s going to be banging!

Clare Alexander
Principal at the Tante Marie Culinary Academy in Woking Without a doubt, my top tips for an enjoyable Christmas kitchen experience are… think ahead; fill your freezer with all the little delicious tit-bits you need, sausage rolls, mince pies, things that are a fiddle; get them done. Organise! Get the family involved too; prepare all the vegetables on Christmas Eve, infuse the milk with a clove studded onion for extra bread sauce deliciousness, stuff the bird, par boil the potatoes; anything you can think of. Drink a large hot spiced cider and go to bed early! Leap out of bed, get that bird in the oven and crack open a bottle of bubbles as a matter of urgency. Get the cheese out of the fridge and let the wine breathe! I could go on forever but let’s go straight to pudding! Everyone has their own Christmas favourites so let me share one of mine; unbelievable, unctuous, scrumptious Christmas pudding martini jellies. They’re the perfect addition to your Christmas feasting, if indeed you can fit it in!’

Jack Sturgess
Chef, Baker and Founder of Bake with Jack Mince Pies three ways! Mince pies are a great Christmas tradition, I certainly love them. Here’s three ways to jazz them up this year!
1. Marmalade Mince Pie;
Add a teaspoon of marmalade on top of the mincemeat before sealing with the pastry lid for an oozing orangey centre. Eat warm.
2. The Crumble Top
In a food processor wizz together 175g cold cubed butter, 100g plain flour, 50g oats and 100g demerara sugar. Top off your mincemeat with this crumble mixture before baking as normal. Serve hot with cinnamon ice cream.
3. Mincemeat Meringue Pies
Bake your pies without lids. While they are baking whisk 2 egg whites till stiff, gradually add 110g of caster sugar whisking well between each addition. Pipe or spoon the meringue onto each of your cooked pies and return them to the oven for 5 minutes until just turning golden.

Fred Clapperton
Head Chef at Drakes, Ripley My main tip for Christmas dinner is to make sure you keep it simple! But in addition, I think that the time spent planning, coupled with advance preparation is key to having a relaxing day; after all, it’s about celebrating with family and friends so there is no point in being stressed unnecessarily. For me, it is going to be a quiet Christmas this year, as my life has been incredibly busy since becoming Head Chef at Drake’s. I am going to be cooking a meal that is not traditionally associated with Christmas, but is one of my all-time favourites. It is also a dish that doesn’t need a great deal of preparation and can be left to its own devices in the oven. We will be having slow-roasted pork loin with apricot stuffing, plenty of fresh vegetables and some herb roasted potatoes. Christmas pudding has never been a favourite, so we will round off lunch with some mince pies and homemade brandy custard.

Kid’s Christmas Recipe:
Mini Crispie Christmas Puddings By the Natural Cook Company “We love to see people expressing their creativity by cooking and children are especially good at doing this. They get a real thrill to see their hard work produce such delicious end results. In this increasingly expensive and materialistic world, what better way to get them into the spirit of giving by allowing them to make their own edible gift for someone special.”
Becca & Sophie x
Ingredients 50g rice crispies 30g cranberries, finely chopped 40g butter 2 tablespoons golden syrup 50g chocolate, milk or dark 75g white chocolate 1 tablespoon of cocoa powder 40g marshmallows Holly leaf decorations (you can buy these from any large supermarket seasonally or make them from ready-made fondant icing)
Method
The Natural Cook Company are a small, mobile cookery school offering numerous courses and specialist workshops, for any ages from pre-schoolers to pensioners, and hosting a variety of events including creative children’s cookery parties!
1. Break the brown chocolate into pieces and place in a saucepan with the golden syrup, butter, cocoa powder and marshmallows and melt together over a low heat, stirring continuously. Once combined, set aside to cool slightly. 2. Meanwhile, weigh out the rice crispies & place into a large bowl with the finely chopped cranberries and mix together before pouring over the chocolate mixture. Mix thoroughly until everything is well coated. 3. Using a lightly oiled egg cup, spoon in the mixture and press down to firm before turning out onto a baking tray covered in greaseproof paper. Once all of the mixture
has been used up you should have about 12 little puddings & you can wait for these to firm at room temperature or, to speed up the process, pop them in the fridge to harden. 4. Meanwhile break up the white chocolate and place in a saucepan and melt over a low heat. Once the puddings have firmed up, carefully spoon the white chocolate over the mini puddings, allowing some to ooze down the sides like white sauce. 5. Finally, top with the holly leaves, and leave the white chocolate to set. These look just adorable in a presentation box and they taste absolutely delicious too. Merry Christmas to you all from Becca and Sophie at The Natural Cook Company!

RECIPE: Christmas pie
By Helen Askew
Here at The Guide 2 Surrey we love the excitement of Christmas food. One-off dishes, seasonal treats and old classics, there is so much to enjoy when it comes to Christmas cooking. However, if the idea of being tied to the kitchen on Christmas day fills you with dread or you simply like the idea of trying something a little different, this Christmas Pie could be just what you are looking for. Full of comforting, seasonal flavours, it will make a delicious centerpiece for your Christmas table, whilst being easy to prepare ahead of the big day…
Ingredients 77g Diced Smoked Pancetta Olive Oil – 2 tbsp. 1/2 bunch fresh thyme – leaves stripped 1 clove of garlic 750g Leeks – washed, trimmed and sliced 250g cavolo nero cabbage, very finely shredded Salt and ground black pepper 700 g cooked white turkey or chicken meat, cut into large pieces 2 heaped tablespoons plain flour 1-pint turkey, chicken or vegetable stock 2 tablespoons of crème fraiche 1 packet vacuum packed – prepared – chestnuts 1 jar of pre prepared good quality cranberry sauce 1 packet all butter shortcrust pastry 1 free-range egg
Extras 1 pie dish, roughly 27 cm in diameter A selection of Christmas cookie cutters
Method 1. Add the olive oil to a large heavy bottomed saucepan, before sautéing the pancetta, thyme and garlic. 2. Once the pancetta has started to sweat, and change color, add the prepared leeks and cavolo nero. At this point, patience is required. You want to give the vegetables plenty of time to soften. Turn the heat to low, cover the pan and allow the vegetables to slowly cook off. This should take around 15/20 minutes, but make sure you check the vegetables throughout to ensure they are not sticking. 3. Once you have cooked the vegetables sufficiently add the pre-cooked meat to the pan, mixing everything together before adding the flour. 4. You can now add your stock. You are looking for the pie filling to be moist, but not sloppy. Add the stock gradually, stopping when you reach the required consistency. Next add your crème fraiche and bring the pan to a boil. The flour will combine with the stock to create a rich sauce. Once the sauce has been heated through, remove from the heat before seasoning with salt and pepper. Finally break the chestnuts into the filling and stir throughout, before allowing the dish to cool thoroughly. 5. On a floured surface, roll out the pre prepared pasty. Once the filling is cooled, transfer to your pie dish before dotting the top with cranberry sauce and topping with the short crust pastry. We decorated our pie with festive stars, but any and all Christmas cookie cutters could be put to good use at this point. Simply use the offcuts from the pie top and decorate away. Finally, brush the top of the pie with egg wash. 6. Cook the pie at 200 (180 for a fan oven or gas mark 6) for around 30 minutes. Cooking times can vary, so keep an eye on your pie as it cooks.

WHERE TO EAT:
Matt Worswick at the Latymer, Pennyhill Park
By Rich Lee As a tumultuous 2016 draws to a close, we went seeking culinary comfort at the luxurious Pennyhill Park in Bagshot… It’s been a funny old year, putting it mildly. Editorial neutrality forces me to refrain from expressing what a clown show June’s vote was (oops, too late), but there’s been so much to lament, from the legends of music and entertainment that we lost, the ongoing Syrian crisis, dire climate warnings and no less than an intellectual pygmy and con artist with hair like blonde gas becoming king of America. Now, of course this column isn’t about the world’s affairs; it’s about a tiny corner of it and finding nice places here that offer delicious things to put in your face. But after the seething gloom of the last twelve months, and the uncertainty of the coming year, we felt compelled to soothe our shredded nerves with the finest gastronomic pleasures the county can provide. Call it comfort eating, if you like. When people talk about seriously fine dining in Surrey, the Latymer
Restaurant at the luxurious hotel and spa Pennyhill Park is often the first suggestion to pass their lips. That’s thanks to previous Chef Michael Wignall, a magnet for Michelin stars who’s exciting, progressive British cuisine pinned two of them above the Latymer’s doorway. Having departed for Gidleigh Park in Dartmoor at the start of the year, his crocs have since been filled by Chef Matt Worswick, a ferociously talented Liverpudlian and no stranger to the coveted stars himself. Our first visit to the Latymer restaurant (by way of a swift G & T in the resplendent Ascot Bar), the interior was more traditional country house than the contemporary luxe I’d imagined. Which made sense given Pennyhill’s heritage, but was no less inviting for it. Soft lamplight floats across white linen beneath a low, dark timbered ceiling, providing a tranquil place for a spectacular meal. And for the real spectacle, we went all in on Chef Worswick’s 10-course tasting menu and accompanying wine pairing. What starts simply, if delightfully, with a little wagyu beef fat and smoked butter to spread over some freshbaked bread, turns into something extraordinary the minute the first course arrives: succulent pig’s trotter teased into brittle, golden croquettes
or cromesquis, capped with a dab of piccalilli gel. These were accompanied by parmesan beignets, infused and crowned with fragrant truffle, and smoky, creamy baba ganoush in crisp cornets topped with Bombay mix and suspended in a pot of spices. We were grinning before the first bite. A fortifying glass of punchy yet smooth Iberia cream sherry brought us out of our swoon in time for the next course: Porcelain egg shells slanted gently towards us, inviting us to breathe deeply of the octopus braised in Japanese condiments within before scooping up that luscious ingredient and textures of sesame and peanut and the deep, salty whack of miso. Magical. Scallops, kissed brown at the edges and jewelled with a little English caviar had the rough onion char of barbecued leeks – an incongruous yet delicious match for the sweet scallops and one that, oddly, conjured memories of seaside BBQs. I’m reasonably certain that that was the intention, as I’m convinced that Matt Worswick is a chef for whom nostalgia and fun are the source of many of his fiercely inventive creations, as much as superb ingredients and fierce technique. As the dishes rolled by so did we fall happily under the Latymer’s spell,
FOOD & DRINK
TheGuide2Surrey.com/Food-and-Drink
helped, of course, by expertly paired wines selected and served by the sommelier, Sean. Typical of the restaurant’s front of house crew, Sean is smoothly professional yet gracious and warm and damn me, the man knows wine. We sipped a variety of sublime vintages in the space of one evening of a quality that would confound the most committed oenophile if they’d had an entire year to hunt them down. One amazing course rolled into another, and our appetites didn’t need to be asked to keep up. There was a rosy loin of venison with pickled pear, walnut and cep foam that was a taste of wintry woodlands and dewy meadows, and a theatrical lobster course that presented a pot spilling minted vapour over the buttery shellfish, on a pond of mint oil that floated over a rich, creamy bisque.
Vision beginning to swim after such a banquet, sweets glided dreamily into view offering dainty rhubarb cones with luscious mascarpone and hibiscus, a rich lemon dessert that mingled garden flavours of wood sorrel and something small, glossy and chocolatey that tipped us fully into a blissed out epicurean fugue state. With cooking this confident, honest and bold, it’s clear that in Chef Matt Worswick’s hands, the Latymer at Pennyhill Park is destined to remain at the summit of Surrey fine dining. And no matter how 2017 pans out (how much worse could it be?) we know we’ll return. We might have to.
PHOTOGRAPHY BY FIONA DIGBY -JONES
Nothing is smothered in complexity, however, with the chef pushing each ingredient to the fore. Delicious grace notes float between dishes such as a divine ‘pre-cheese’ course of fluffy goat’s cheese in chive oil as a gateway to a sumptuous cheeseboard with homemade red crab apple jelly, fig chutney and a lovely coarse honey made on the grounds.
We enjoyed the Latymer at Pennyhill Park’s 10-course tasting menu for £100 per person. Pennyhill Park, London Road, Bagshot, Surrey GU19 5EU | 01276 471774 | www.exclusive.co.uk/pennyhill-park

Christmas Cocktail
Nothing gets us in the party spirit quite like cocktails. For pure liquid merriment, we went to master mixologist and assistant manager at Guildford’s dazzling Long Bar at the Harbour Hotel, Mark Way. His smooth, sweet and sophisticated Raspberry and White Chocolate Martini nails the flavours of the season and can be made for grateful party guests in a flash…
you will need 25ML White Chocolate liqueur 40ml Raspberry Vodka 5ml Sugar Syrup 20ml lemon juice 1/2 an egg white Optional: a splash of orange or raspberry bitters 1. Pour all ingredients into a cocktail shaker with ice and give it a really good shake. Doing this will aerate the egg white lending the cocktail a beautiful, foamy, marshmallow texture. 2. Double strain into crystal or a martini glass. 3. Garnish with a sprinkle of freeze-dried raspberries or a single fresh raspberry. Mark and his team serve this and other irresistible cocktails at the Long Bar all week, but offer 2 for £10 and 4 for £20 all day during Midweek.

Home Counties Carers: Personal, Friendly and Professional Hi, I am Lauren Mercer and I am the Live-In Care Manager for Home Counties Carers. I am genuinely passionate about care and have spent my entire career progressing up the ranks of social care and look forward to being a Registered Manager someday soon. Home Counties Carers’ strong culture, values and standards help us attract the very best Carers and this is so important for all our Clients. All of us are friendly, reliable, trustworthy and competent and take great pride in working by what we term as traditional values; polite, well mannered, prompt, well presented, clear communication skills and common sense. Live-In Care can be a fantastic alternative to the more traditional options of a care or nursing home. The benefits are many but I believe being happy is most important, and it is easier to be happier in the comfort and security of your own home with a care package chosen and tailored to your needs and preferences. What makes me happy and gives me the most satisfaction is knowing that all of our carers are fully supported 24 hours a day 7 days a week and being there to help Clients and their families take the first steps tentative steps towards the most appropriate care solution for their needs.
If you have any questions or would like to chat please do not hesitate to call me on 01483 224 985. Thank you, Lauren Mercer, Live in Care Manager, Home Counties Carers,

Storm Sign Scot Sutherland
christmas camps
Surrey Storm have announced the signing of Scottish international Bethany Sutherland ahead of their Vitality League opener against Severn Stars in the New Year. Sutherland, whose natural position is either in the wing defence or goal defence role, first became an international star when she made her Scotland under 17s debut at just 14 years old and featured as the youngest member of the Scottish Thistles World Cup squad for the tournament in Sydney. However, she’s not the only member of her family to play on the big stage, as her mum was an England international showing how the sport has run through her family. Sutherland made Sky Sports’ ‘Ones to Watch’ list ahead of the 2016 season, which she spent with Hertfordshire Mavericks, and will certainly be one to keep an eye on for the Storm this season.
Just because it’s the festive season, not everything grinds to a halt. Surrey Sports Park doesn’t let fitness sleep and is only closed on Christmas Day, Boxing Day and New Year’s Day. So keep your child active over the break with the Park’s fantastic range of junior activity camps. These activities are designed to introduce children to sport and develop key skills. Whether you are a complete beginner or want to improve a skill or sport, they have activities that offer something for everybody. Whether it be squash, swimming or the Park’s tremendous climbing facilities, all the way to the Surrey Storm training camps…
Junior Storm Netball Camps Learn to play the Storm way with expert teaching from Surrey Storm’s coaches! Participants will be taken through a range of drills, minimatches and practices to get your budding little netball players on the way to possibly becoming future Storm stars! At these camps we continue enforcing the basics and learning all aspects of the game, we encourage the girls to explore new positions and teach them the ins and outs of playing the sport. We begin to focus on the technical movement skills needed, as well as the mental decision-making.
Storm Experience Camp (school years 7-12)
After signing for the team, she said, “I am so excited about playing for Surrey Storm this year and wearing duck egg blue! “I can’t wait to work alongside these very talented girls, and of course the new coaching staff, to learn and achieve great things with them in the Superleague this season.”
Led by one of storm’s elite coaching staff, these camps are aimed at the more serious netball player. Included in the sessions will be specific coaching as well as video analysis sessions. This camp is for those who are currently satellite, county, and regional academy players. We direct those who are aiming to reach this level to attend the Storm Development Camp. Satellite, county and regional players only. For more info or for booking information www.surreysportspark.co.uk
Tickets now on sale for Netball London Live 2017 Surrey Storm will host Hertfordshire Mavericks at Copper Box Arena with that date in early 2017 still to be announced, for the chance to be crowned Netball London Live champions for the 3rd consecutive year.
