esthetically it's a nice town to live in. It has beautiful buildings and it's a safe place to live. We've got to encourage people back into the High Street. People aren't coming in early in the week. They should offer off peak parking and 10/15 minute stop and go areas. Just to get the life back into the High Street. I also think we should have a Vicar saying a prayer when we put the Christmas lights on - Not just people in santa costumes.
I like it as it is but we could have a better one-way system.

veryone is much more positive about life than where i'm from. Maybe it's because it's a wealthy area but everyone seems to be in a better mood here. There's hardly anything bad I can say but the roads could be better and we could do with more festivals.

t's got everything. Shops, cinema, places to go out. It's chilled. More nightclubs. It's got ‘Spoons and Casino but sometimes you want something different.
he shops are pretty decent and there's a good train service to Woking. There are some nice antiquey jewellery shops and it's quite an arty place. I also love the friday fruit market and there's always somewhere decent to eat. I would like to see some more vintage clothes shops and more original stuff. I also think they should bring parking down for people who work in Guildford.

like the pubs and it's the perfect mix of town and country. 10 minutes away from either. The maintenance and quality of the roads could be improved. Prices could be lower but that all comes into the territory. We are in Surrey!

n the instance that one might not know, just over 12 months ago, businesses within the centre of Guildford voted for Experience Guildford to be brought in to encourage our bustling town to thrive in abundance.

love the character of the town and the high street. It's a friendly place and has been a nice place to bring up my children. It feels safe. I also love all the walks.

t's good for shopping and is an attractive town. It's good for theatres and cinemas and there are some nice independent cafes showing up. I also like that it's quite good on history with nice historical walks to go on.
Certain parts of the town need attention. It's quite scruffy and rough around the community centre and I don't like walking down there to get to work. North street is also quite scruffy. I think it lets the town down.
I think Guildford could be vastly improved by more independents (independent shops/cafes/restaurants). The parking prices are horrendous and they're going up. t's lovely in the summertime and it's got a lot of history. I've lived here such a long time and I like working here (Oxfam). It feels like our shop is a big part of the community with regulars coming in. There are too many of the same sort of shops. We need more independents.
Year one involved the Experience Guildford team, throwing their weight and expertise behind some of the towns best loved events; The Guildford Summer Festival, The Fringe Festival, The Book Festival and the wonderful Guildford Shakespeare Company. Naturally the team were brought in to add a little extra to the town’s commonwealth; entering the fray, the introduction of the Experience Guildford Privelege Card, Free Parking over the Christmas festive period, the Customer Service Awards (voted for by the public of Guildford), the Best Bar None awards (a celebration of our night time economy) and that’s just scratching the surface. Year two promises much of the same, with expansions and additions to the scheme; including work and support given to independent retailers the launch of Thank Guildford It’s Friday (a salute to nightlife in the town), the hope of some more Christmas lights to illuminate the charming side streets that connect the High Street to North Street, as well as many other initiatives designed for good times in Guildford. ‘Joshing Talk’s’ Submersible Project Ready to Launch!
I
n 2011 Surrey born and bred Josh Taylor decided that with no money, barely any qualifications and an open future that he’d have a bit of fun with a camera, a balloon and – Space! His aim was to try and record footage of the Earth at around 100,000 feet using a balloon. The project was a success with the balloon reaching around 118,000 feet before floating back to earth and landing in the North Sea. After a few breath-holding hours Josh connected each of the four cameras that went
up with the balloon to his computer and found they had all worked, achieving some incredible footage. Josh received international media attention and acclaim for his ‘Space Balloon’ project and was contacted soon after by Sir Richard Branson who set Josh another challenge. Now Joshing Talk had conquered space it was time to go the other way as Branson challenged
Josh to send a camera to the deepest part of the ocean. After heartily accepting the challenge, Josh got to work. Now two years on and Joshing Talk’s ‘Submersible Project’ is set to fly out to Puerto Rico on the 13th April where a small team will be helping him make the next leap in what promises to be an exciting career for this young entrepreneur. Challengers named BMW PGA Championship Official Charity
B
MW are excited to announce that Surrey charity Challengers have been appointed the official charity of their PGA Championship 2014. Challengers provide play and leisure facilities to disabled children through centres in Guildford and Farnham along with community based projects across Surrey and Hampshire. The Championship, held at Wentworth Club, is the European Tour’s flagship event and offers six days of high quality entertainment, including Official Practice Day, Celebrity ProAm and four rounds of compelling competition from 20th-25th May. During the tournament week Challengers are expecting to benefit from around £50,000 of fundraising, with the ma jority of this coming from donations made by spectators. European Tour player James Morrison said, “As I live in Guildford I jumped at the chance to get involved with Challengers. The charity makes such a big difference to the lives of the children they look after, so I was happy to help out in any way I could. Hopefully we can raise lots of money at the tournament and bring a bit of happiness to the children’s lives.”
Challengers volunteers with be stationed at various Programme Booths across the site, requesting £1 donations from spectators to go towards providing a 2:1 support service for children with complex needs. Phyllis Tuckwell Hospice: THE CHARITY SHOP WORKER by Rich Lee
I
n March, TG2 Guildford spoke to Dr Nick Dando, a consultant specialist in palliative medicine at Phyllis Tuckwell and Frimley Park Hospital. This month, retail assistant Shirley Granger tells us why she enjoys working at the Phyllis Tuckwell Hospice shop in Guildford…
I
’ve worked at the shop here in Phoenix Court for about four years but had heard of the Hospice prior to that. My Dad had cancer and when he was in his last few months, the doctor’s surgery had some leaflets about the Phyllis Tuckwell Hospice. It was with some trepidation that I gave him a leaflet (he was a stubborn so-and-so) but when we came back from a holiday we found that he’d already visited the day centre and loved it. He really enjoyed going there as it was nice for him to have a change from home. After he died, I was unfairly dismissed from my old job which devastated me. But I’d been a customer at this shop and knew the manager so I asked her if I could come and work here and she said yes. It really helped me get my confidence back. I’d always worked with the public, in jobs where you make a difference to people, and so it’s been nice to do that here.
I only work Friday mornings; it’s very flexible and down to your personal circumstances. I find myself taking things home to sew buttons on or do a bit of mending, but I don’t mind, I’m happy to do it. I absolutely love it here. It’s such a great team and I love talking to the customers. We get a real cross-section of people coming through the door; young and old - men too, particularly for the books. Ladies clothes sell well as does bric-a-brac, china and our yarn is very popular. We have plenty of regulars who buy more stuff than they drop off – something they rarely set out to do! Some customers come in just looking for a bargain, but many come here and donate to us because they want to support the Hospice. People bring a lot of bags in for us and other shops may donate items to us as well. We’re fortunate to have a lot of room to store everything that comes in.
Shops like ours are good places to work if you haven’t had much experience in retail or have been out of work for a while. We get people who come to work here for a bit and really enjoy it, and they leave with confidence, experience and a reference so everyone wins. Charity shops are amazing treasure troves. You never know what you’re going to find. People are so generous with what they donate. And of course you know that when you buy something you’re both keeping it out of landfill and supporting a really worthy cause. here is a man I know who wal ks his dog, twice every day, in Stoke Park. He is well known in the area because he says hell o to everyone and smiles. He is also well known because he is on a mobility scooter. He uses Kings Rd in Guildford as a cut through for the park - as do many other visitors. Regardless of the weather, if his dog does its business on the pavement, he will get off his scooter and pick it up. If HE can do this, then why can 't all the other, able bodied people who use this road, and most likely other roads, as a cut thro ugh? My child can now not run up the road to our house, because too many tim es he has trodden in dog mess. There are dog waste bins nea r both entrances to Stoke Park. would like to address an issue that has become prevalent throughout Surre y but in particular on my drive to work. It seems that it is a little known fact that if the road ahead of you is clear you have a legal obligation to drive up to the speed limit. I am constantl y waylaid by people who insist on driving 5 or 10 miles under the speed limit creating huge tailbacks that they seem utterly unaware of. The spee d limit isn’t just about how fast you can go it’s also about how fast you should go. Please drive to the speed limit; you’re drivi ng this reader insane! Tim Robins

t appears thanks and praise is long overdue. I and other residents of Shalford are overjoyed and touched every day by the kindness and thoughtfulness of those nonresidents who sashay this way and that up and down the A281. I particularly enjoy the way that no driver seems to notice me standing in the rain or some other inclement weather, two children in tow, never thinking to drive at thirty miles an hour, giving them ample time to stop
to let pedestrians cross. It must be so frustrating for drivers to have to keep an eye out for other people and I fully understand why no one would stop to let parents cross to school or let my husband cross over to the footpath to walk the dogs. After all, we do have a pelican crossing that only changes to Monsieur Verde when there’s a huge gap in the traffic anyway. I vote for sleeping policeman in Shalford. Mildred McAndrew, Shalford

OUR HISTORY: Rabbit Woman ...A POTTED HISTORY OF WHERE WE LIVE AND WHO LIVED HERE by Will Knowlton
Ahh, Easter. That time of year that reminds you that you can put truth in the grave, but it won’t stay there. And speaking of truths, check this little bunnied-gem out.
eet Mary Toft. Mary was a local gal from Godalming, who created a bit of a cause célèbre when she managed to bamboozle doctors into believing that she had actually given birth to rabbits. No seriously, this is so bizarre I can hardly stand it, but I swear it is true. The year is 1726 and Mary found herself up the duff but tragedy was to follow. It seems that after apparently seeing a rabbit she miscarried. At this point she opened a whole box of crazy and said she’d given birth to various animal parts. Makes you feel funny doesn’t it? Like stroking a dog backwards. Anyway, news of her wonder delivery got out and local surgeon John Howard decided to investigate the matter (because it was like totally possible, obviously). I don’t think we really want to go into how, but Dr John “delivered” a few bits of animal flesh and decided in the spirit of science that he should let other doctors know as well. At this point the ball started rolling nicely and without the help of modern, admirable institutions like The Daily Mail (they totally would have run with this) the case of old rabbit fanny came to the attention of Nathaniel St. André, surgeon to King George I. George was getting his money’s worth by the looks of it because Nate used all his medical know-how (and probably that duck bill shaped thing) to decide that Mary wasn’t fibbing at all. Georgie wasn’t affected by the nuttiness that he would pass on to his descendants and decided to get the second opinion of surgeon Cyriacus Ahlers (now that sounds like something you catch: “I’m sorry Mr Knowlton it’s Cyriacus Ahlers.” “Yes I thought so Doctor, but how much cream will it take to clear…?”) If there was something about Mary, Ahlers was sceptical, and she was brought to London and studied at length. It was while under this intense scrutiny, and probably because she didn’t drop another furry litter, that she confessed to lying and was thrown in the nick on fraud charges. You’ve got to remember that at this point, doctors were kind of a new thing and the public essentially took the p**s, and as a result a lot of prominent doctors lost their careers. But what of Mary I hear you cry? Well she was released without charge and returned home to play with her rabbit - though not that kind, it hadn’t been invented yet.

Hi Heidi. How would you describe your character, Pinky Tuscadero? She’s kind of a female version of Fonzie in a way. She’s older than the other girls and they all look up to her. She’s a motorbike chick who puts Fonzie in his place!
Why do you think productions like Happy Days, Grease and Jersey Boys remain so popular? I think there’s a nostalgia to it and it’s so different to anything we’re used to. It takes you to a different place and I love the style of the songs. And with all these types of shows, there’s an innocence to them that we don’t get to see a lot of these days.
She’s fabulous. I get on with her so well and have made a really good friend in Cheryl. She’s great playing Mrs Cunningham and backstage she’s such a laugh. She’s like a mother figure to everyone. One of my favourite numbers in the show is one that I do with her and Emma who plays Joanie.
Has leaving the Sugababes liberated you to explore new projects that are close to your heart such as Happy Days: the New Musical? Completely! I was lucky enough to have eleven years in Sugababes which is an amazing amount of time for a pop band. I’ve seen the world and done some amazing things but it was time to move on. Now I just want to be me and do what I want to do. I’ve done theatre before, but it’s been a long time. I’m learning things all over again but I’m loving it!
What can audiences expect to get out of Happy Days: the New Musical? Just a really fun night out, something that’s uplifting. It’s funny, the dancing and music is amazing and the sets are brilliant. It takes you back to a different time!

Shakespeare’s Big 450th!

his April marks the 450th birthday of the Great Bard himself, William Shakespeare. Stratford’s favourite son –if not England’s- will be feted merrily up and down the country, and Guildford’s own award-winning professional theatre company, the Guildford Shakespeare Company, will be celebrating the mighty wordsmith in their own inimitable style. Kicking off on Sunday 19 April, veteran GSC actor Johanne Murdock will perform a special one-woman show, The

here once was a time when album and single artwork defined the visual language of music, propelling both mediums into the cultural conscience. Sadly, the modern age of digital music has now shrunk these iconic covers to the size of postage stamps. This month, however, a new exhibition at the Lightbox seeks to celebrate the glorious sleeve art that adorned 7-inch vinyl records in their heyday. Part of The Lightbox’s rotating ‘Taste of Art’ series featuring local artists, ‘Framed 45s: A Wall of Sound’ features an exciting mix of paintings, original limited edition prints, textile and mixed media work created and curated by Windlesham resident Paul Murphy. “Some record sleeves are just too good to be living in a box,” says Paul. “They’re art in their own right. Some still make the hairs on the back of your neck stand on end years later – in fact decades later.” All items on display will be available to purchase during the exhibition from the Lightbox Gift Shop. mages of some of the most iconic stars of Hollywood’s golden age are on display in a revealing new exhibition at The Lightbox Gallery and Museum in Woking this month. Featuring photographs from the archive of The John Kobal Foundation, now curated by Getty Images, taken during the classic age of cinema between 1930 and 1950, the images portray such legends of the silver screen as Joan Collins and Humphrey Bogart. In addition, there will be informal, behindthe-scenes photographs which seemingly show the ‘ordinary lives’ of the stars of Hollywood film. That’s ‘informal’ as dictated by the Hollywood movie studio publicists of the time, for whom a star’s public image was everything, employing carefully selected props and locations to exaggerate the perceived glamour of Hollywood. This fascinating exhibition runs at The Lightbox until 22nd June 2014 and entrance is free.

Talking to... TUSKS
T
he ambient, delicately powerful sounds of Tusks is the music of pianist, guitarist, vocalist and producer, Emily Underhill. About to release her second EP, Tusks is completely independent with no label, funding or management. Emily studied Creative Music Technology at Surrey University and is excited to be coming back to Guildford for a show at the Boileroom on the 4th April. We chatted to her about music, creativity and the future.
How would you describe your music? I would probably describe it as chilled out ambient/electronic/pop music.
Who is your favourite artist/s? Hard question! Bonobo, Sia, Daughter, James Blake and Apparat would all have to be high up on my list.
What’s your creative process? I normally start a track on piano then start making up a vocal line and go from there.
Do you do all the production yourself? Yep, everything I’ve put out has been self produced apart from the last single, ‘Ghosts,’ which was engineered and produced by a friend.
Who have been your favourite artists to collaborate with? I think so far it’s been Koda. He’s remixed one of my new tracks on the EP and we’re planning lots more collaborations for later in the year.
Who would you most like to work with in the future? There are so many people I’d love to work with but in a dream world someone like Jon Hopkins.
How was studying at Surrey Uni? I loved it. I was really lucky to go into a year with a course full of amazing musicians and I think that’s shaped my music more than anything else.
What have you released so far and how do we get hold of it? 2 singles - ‘Fly’ and ‘Ghosts’ - and an EP called ‘Snow’. All available on a ‘pay what you want’ basis on my bandcamp page. emilyunderhill.bandcamp.com
Your EP ‘Ink’ is coming out in May. Can you tell us about it? I can! I’m so excited to get this out! I raised about £1300 through Kickstarter to get it pressed onto 12” vinyl so it will be coming out (hopefully in May) on a digital and physical release. It’s 4 original tracks

Where did you get the name Tusks from? It’s actually from the Fleetwood Mac album. I was brought up a lot on Fleetwood and I remembered the album title earlier this year and it really stuck with me.
What does the future hold? I have no idea! This time last year I was set on moving to Melbourne until I got a phone call asking me to go on a UK tour with another artist so anything could happen. I quite like it that way. I think as soon as anything gets predictable I get bored and move on.

I was working in record shops from my early teens and to name a single record is just impossible! Instead I would say the labels that most influenced me growing up were, Players, Formation, Big Dadda, Ninja Tunes, Wordplay, Public Demand, Relentless, YNR, Lowlife, Ram, FFRR, Defected, Main Source, No U-turn, Trojan, Virus, Tru-Thoughts, Zebra, Prolific Recordings and I could go on! WHAT RECORD HAS HAD THE MOST SIGNIFICANCE IN YOUR LIFE? Illmatic by ‘Nas’. I was 14 when that came out. It was so amazing. The beats just grab you from the first second and his flows and storytelling of life in his projects and around Queens are amazing. ‘The World is Yours’ really reached out to me at that time and to this day still gets me bugging out. WHAT ARE YOU LISTENING TO AT THE MOMENT? So much music about at the moment so some artists you can catch me playing on my show are; My Nu Leng, Spoils, Essa, Tenchoo, I Killed Kenny, Tourist, Javeon, Cyril Hahn, Zion-I, Step Brothers (Alchemist & Evidence), Sigma, Kiesza, Jakwob, Champion, Mungo’s Hi-Fi… This list could go on for another 400 names and I still wouldn’t be done… Basically music is my life so A LOT is ALWAYS being listened too and played.

Make your own
Easter Eggs! To make a big’un and some little’uns you will need… • Easter Egg Moulds from Lakeland –
Large mould 9x14cm and 36 mini egg moulds | £3.99
• 700g of milk, dark or white chocolate – the better the quality, the better the egg • A pan, glass bowl and a hob • Your hands, your little people’s hands and anyone else’s you’d like to enlist • A fridge • A pastry brush • A teaspoon
The method: Set a bowl over a simmering pan of water ensuring that the bottom of the bowl does not touch the water (this is called a Bain Marie). Break the chocolate up into small pieces and add to the bowl. Stir occasionally with a wooden spoon until completely melted. Be careful if you’re using white chocolate - if it heats too quickly it could separate and won’t work. Trust us, we did it! Leave the chocolate to cool for about ten minutes until it starts to thicken again. Using the pastry brush, coat the inside of the two large mould halves with a thin layer of chocolate and put in the fridge to set. Whilst the first layer hardens spoon the remaining chocolate into the smaller moulds, ensuring you fill each mould to the top. Put the mini moulds in the fridge and leave to set. Once the chocolate in the large mould has hardened roughly ten minutes should do it, take it out of the fridge and apply another layer. Repeat the layering and setting process until you’ve got a nice thick layer on your moulds, leaving a little chocolate in the bowl to stick the eggs together with later. Leave all your chocolate filled moulds in the fridge for roughly an hour before you try and take your eggs out. Carefully remove the mini eggs and stick the halves together with some of the leftover melted chocolate. Remove (with care) the large egg halves, put the mini eggs inside and seal it all together with melted chocolate. You could wrap the mini eggs in different coloured foil before putting them in the large egg if you want the receiver to get a shiny, colourful surprise!
C’est voila! Your very own Easter egg to give to who you wish - or eat yourself of course, you’ve worked hard after all! Now all you need to do is decorate it with sprinkles, icing, ribbon, whatever you like. Enjoy!

hen Carlo Crosta bought a beat-up roadside café just below the lip of Newlands Corner in 1986, it didn’t take him long to carve out a little corner of his native Italy. The Trattoria that sprung up on the site of that humble little café has gone on to become one of Guildford’s most beloved family-run restaurants, winning a loyal clientele along with plenty of awards for its authentic cibo and warm welcome in the process. And warmly welcomed we were tonight, by the man himself, Carlo, and head-waiter, Carr-r-r-melo (attempt a good-natured ‘R’ trilling contest with him at your peril). The restaurant itself exudes the relaxed, Italian Riviera feel you’d hope for; nothing’s for show except the humble pride and effortless charm of the Trattoria’s owner, his family and his team. A glance at the menu and specials reveals classic, rustic Italian dishes with – mercifully – not a pizza in sight. At Carlo’s, they go for the good stuff, and the good stuff starts
with proper, handmade pasta. I have a pasta machine of my own, but there’s a reason why some foodies like me flinch when it comes to homemade pasta: it’s a right faff. Far better to come for the real thing at a place like Carlo’s. I ordered ravioli of porcini, cream and white truffle and received a plate of perfect pasta parcels swimming in rich sauce with the earthy flavour of mushroom and a subtle perfume of truffle. Elegantly simple: my pasta machine won’t be coming down from its shelf any time soon. Across from this, another starter –I’m sorry: primi – was a neat plate of glistening avocado and luscious white crab meat. A squeeze of lemon, a dab of marie-rose sauce was all it needed - and all it got. Secondi beckoned and the arrival of a breast of chicken supressa was all it took to confirm a happy suspicion that had been forming on my mind and palate. This is a kitchen, led by a man, who knows exactly what a dish

needs to make it sing, to make it make wonderful sense and to do no more to it than that. A chicken breast stuffed with salty parma ham and mozzarella may be tried and true, but cooked as perfectly as this was, with ham and cheese that –shock! actually had flavour, on a smoky paprika sauce with perhaps a swirl of buttery mash here and a few greens there, well: food rarely gets better, or simpler, than this. So too was a classic Scaloppine Funghi e Crema: tender-thin veal escalopes drenched in more cream and mushrooms – a happy hum of garlic suffusing another simple yet deeply satisfying dish. For desserts, an Affogato al Caffé offered a tall glass layered with whipped, cinnamon laced cream and crunchy-chewy meringue; it allowed me to forego my usual post meal espresso on account of the pool of strong, dark coffee that bubbled up from its depths. Across from this, a very pretty mascarpone cheesecake was silky and rich and bursting with zesty flavour.

300g/10½oz lamb fillet, sliced into 1cm/½in strips 1/2 onion, grated 3 garlic cloves diced salt and freshly ground black pepper 1 tsp ground cumin 4 tbsp of olive oil 4 pitta breads 1/2 lemon, juice only 4 tbsp Greek yoghurt 1 tsp chopped Mint
Method
hese lamb kebabs are really quick and easy to make. Ideal for a quick lunch or, if you want a more substantial meal, serve them with a couscous salad.
Ingredients

Toss the lamb with the onion in a mixing bowl.
2.
Add the mashed garlic, a pinch of salt, one teaspoon of black pepper, cumin and olive oil to the sliced lamb and toss well.
3.
Cover and marinate in the refrigerator for at least 20 minutes but do leave as long as possible.
4.
Heat a heavy-based frying pan or griddle until very hot.
5.
Add the lamb to the frying pan or griddle, allowing two minutes each side. This can be served quite pink but do leave it longer if you prefer your lamb to be closer to well done.
6.
Meanwhile, warm the pitta breads. Slice along the pitta breads to form four pockets. In a bowl mix together the yoghurt, mint and lemon juice.
7.
Fill the pitta pockets with the freshly cooked lamb and yoghurt mix. Serve straight away.

Whether it’s enjoying lamb as the star of your family Easter meal or simply cooking with lamb while it’s in season, we have three great recipes for you to try this month.
Ingredients

500g of diced lamb shoulder 1 small onion 3 cloves of garlic Half a red chilli 1 slice of white bread made into bread crumbs 1 free range egg Salt and Pepper 2 tomatoes Half a red onion 1/3 of a cucumber Crusty bread rolls

Place the lamb into a food processor and blend until you have a good coarse texture. Place the lamb into a bowl. Then place the onion, garlic and chilli into the blender and chop to a fine consistency. Mix this into the lamb along with the egg and bread crumbs. Season with salt and pepper.
2.
Shape the mixture into patties and chill in the fridge for 20 minutes.
3.
Grill the burgers for 5 minutes on each sides and then transfer to a well-oiled non-stick frying pan and cook for 8 – 10 minutes turning once.
4.
Finely slice the tomatoes, red onion and cucumber and mix to make a salsa.
5.
Serve the burgers in a roll with the salsa.

LAMB KEBABS
T
his style of cooking ensures that the meat is so soft it just falls of the bone.

1 large leg of lamb, about 3kg/6lb 8oz purchased from the Joint in Guildford. 4 onions, sliced 8 garlic cloves, peeled, but left whole 4 carrots, leave whole if small or quarter lengthways 300ml white wine Optional 300ml stock of your choice. If you are not using wine increase to 600ml 2 sprigs of rosemary and 1 sprig of thyme tied together with string.

Heat oven to 120C/fan 100C/gas ½. Place a large lidded casserole on the hob and brown the seasoned leg of lamb on all sides. Make sure it is well browned all over. Use olive oil if the lamb sticks too much. Once done remove the excess oil from the pan. Add the vegetables, followed by the wine and stock. Season well and bring to the boil. Cover the pan. Cook for 7 hrs, turning twice. After 5 hrs the meat will be cooked and should offer no resistance to the knife. The meat does not need to rest but to finish the sauce, transfer the meat and vegetables to a serving dish. Strain the sauce into a jug and pour or blot away the fat with kitchen paper. Pour the sauce into a pan then boil the liquid hard to reduce by a quarter, by which time it will be rich and full of flavour. Serve with vegetables of your choice but we’d recommend mashed potatoes and steamed greens.

What was the first pub you worked in? Izi wine bar in Witney, Oxfordshire. A really lively, late night independent venue. I made some fantastic friends there.
What makes your pub different from the rest? The Drummond stands out because it is a home-from-home pub with an exceptionally warm, welcoming team and a fantastic food menu. We also have a huge drinks range including 26 draught products and an extensive wine range which really keeps people interested.
In-house recommendations?
So many… Our ale! It is something we are very passionate about. We have a constant resident in Sharp’s Doombar and a further 3 guest ales on at any time.
Favourite tipple?
You can’t go wrong with a New Zealand Sauvignon Blanc. We do a fantastic one called Mamaku or if you fancy something a bit more premium you could try the Cloudy Bay Sauvignon Blanc (a personal favourite!)
Gastro-pubs or traditional taverns?
I would have to say a mix of both. There are some fantastic gastro-pubs out there and I love going to a true traditional tavern but it is all down to the people and the concept really. It has to make you want to go back.
Other than yours, favourite pub in the Guildford area?
The Keep is a lovely little hideaway. We always receive a warm service in there.
If you were a drink what would you be?
My ever faithful assistant manager Donna says I would be a Lychee Martini: sweet, full of flavour, short (I am only 4ft 11”) and packs a punch!

The three doshas: vatta, pitta and kapha, represent combinations of the four elements: earth, air, fire and water. nspired by Raw Lifestyle Coach, Natalie Heath, I set out to discover what effects a raw food diet might have on my health and wellbeing. I’d tried Natalie’s 7 day raw food and juice detox programme in October last year with positive results so felt ready to take things one step further and go 100% raw (or thereabouts) for the 21 day Challenge. It helped immensely that the raw food diet varies far more than just the cold salads some might wrongly assume it to be made up of. Exotic smoothies and juices, curries, Pad Thai, soups and raw chocolate, brownies and carrot cake for a sweet fix; all of it delicious and all of it easy to make. Most importantly, I felt amazing after the first week and continued to feel more energised as the challenge continued. Although I wasn’t in it to lose weight, by the end I’d still dropped 5Ibs and lost an inch from my waist. A few weeks later and I can happily report that I am still enjoying a lifestyle and diet infused with the principles and recipes of Natalie Heath’s approach to raw food. Not even Natalie would recommend a 100% raw lifestyle, and I certainly don’t think I could sustain it. Up until that point I had to confess that my relationship with exercise and diet had been frosty to say the least. I’d thrown myself into workouts and gyms before only to be spat back out when injury and boredom took hold – usually after only a day or two. saw the 21 Day challenge as more than just an opportunity – I saw it as a necessity. Being a type-2 diabetic, my terrible eating habits posed a serious risk to my health, more than they might have another person. As an ex-grocer and occasional restaurant reviewer, I know the good stuff from the bad, but it was less about what I was eating and more that I was eating very little and often at the wrong times. For a diabetic, whose blood sugar levels have to be carefully managed, I knew I needed a rethink - and quickly. That’s where the experts at Charlotte Ord Academy in Godalming came in. Charlotte and master trainer Rob Chapman got me moving and eating in no time. Although I struggled to adjust to the simple things such as eating a healthy breakfast
in the morning, this came in time and meant I was feeling better mentally than I had for a long time. COA’s holistic approach meant that as we worked on my diet, we pushed my body too and by the end of 21 days I was impressed at how much better I felt inside and out. I’m the sort of person that needs the devil on my back to push me to work harder, so I can’t say I’ve maintained the same intensity of exercise that I’d kept when I was training with Rob and Charlotte at COA. However, I am definitely eating the right things at the right times and now regularly swim for exercise and pleasure. Sometimes you just need a little push. ow many bodybuilders are going to enjoy your eggs this Easter? Not the choccy kind mind you. The real kind. Many sports men and women poo-poo the egg opting for supplements of all kinds but they’re doing themselves a disservice, for the egg is one of the most complete and versatile foods around. Now, we all know how important protein is and how central its role is in the process of building and strengthening muscles. Simply put, without protein, your muscles just won’t grow. After water, protein is the next most abundant element in your body. Its second place in the rank of all things should be a clear signal of just how important it is. Now admittedly, bodybuilders need to take this a little bit further than the rest of us by damaging those tiny fibres with heavy weight training so that the protein fibres regrow stronger and bigger. A bodybuilder's diet has to be higher in protein than your common or garden sportsperson. Now, here’s the science part…
What are reps? The word rep stands for repetition. A movement/exercise that is performed a number of times, e.g. 10 times, would be referred to as 10 reps.
What are sets? If 1 rep is a movement/exercise performed once, a set is a series of reps performed one after the other. Sets can have varying rep ranges depending on an individual’s goals.
What should my diet consist of? Everyone should aim to eat a healthy balanced diet, but bodybuilders, more than most, require high protein, (high complex carbs in bulking periods) and essential fats. Calorie intake should be higher in bulking periods and most bodybuilders eat between 6 to 8 meals a day! A normal days eating would consist of Oats, chicken, fish, egg whites, brown rice, sweet potato, coconut oil and the odd protein drink.
How long should a workout last?
Eggs have roughly 6 grams of high quality protein, so high in fact that, believe it or not, eggs are used as the standard by which other foods are measured. But wait, there’s more! Eggs are also a rich source of vitamins, including A, E and K and a range of B vitamins such asB12 (energy), riboflavin and folic acid as well as containing all eight essential amino acids needed for optimal muscle recovery and building. “But they’re really fatty, we don’t like fat, Will!” Hang on, hang on; egg white actually contains no fat at all. Admittedly the yolk does contain somewhere around 5 grams of fat but only 1.6 grams of that is saturated fat, that’s the baddie fat. And yes, eggs do have cholesterol but remember that dietary cholesterol does not raise blood cholesterol levels.
For a beginner, I would recommend absolutely no more than one hours training! Any more than this and your body can start going into a catabolic state where it eats away at muscle rather than developing. The early days are where your body will grow the quickest and it’s vital to feed those muscles without overdoing the time spent in the gym.
Now before you go and do a Rocky and start cracking eggs in to a glass to drink, think sensibly and always cook eggs. It cuts the risk of salmonella and is more easily absorbed that way as well.
When should I drink my protein drink?
There’s really no reason to leave eggs out of your diet but I can well imagine that there are those of you out there who hate the taste of eggs. Don’t be scared to experiment with ways to fit them into your diet like adding herbs and spices. A handy trick I’ve picked up is to cook them and then chuck them in a blender with some oats, milk, yogurt, flaxseed oil and natural peanut butter: you won't even taste them.
It's very important to understand that a protein drink is a meal replacement if and when food can’t be taken. This being said your body will absorb protein best first thing in the morning and within 30 minutes after training, (preferably with a piece of fruit!)

ere’s a great one for breakfast; great for setting you up for the day. Not only that it’s cooked right in a tea cup. So cook up a storm (in a tea cup) with this easy microwave recipe for Ham, Mushroom and Swiss Coffee Cup Scramble.
Ingredients: • • • • •
1 egg 1 tablespoon water A few small chopped mushrooms 1 thin slice of ham, all diced up Shredded Emmental cheese
Here’s your method for the madness: 1
Coat a large, microwave-safe mug with some cooking spray. Add egg, water, mushrooms and ham; beat until blended. Once you’ve done that zap it (Microwave) on high 30 seconds; stir. Microwave until egg is almost set, 30 to 45 seconds longer. Season with salt and pepper, if you fancy and top with cheese.
And a recipe for the day… • • • • • • • •
4 large Beef tomatoes 4 Free range Eggs 60 ml of Extra Virgin Olive Oil 6 Cos Lettuce Leaves 1 Clove of Garlic A sprinle of diced parsley Table Spoon of Sea Salt Table Spoon of Ground Black Pepper

Preheat your oven to 200 Celsius (Gas Mark 6 or 400 Fahrenheit) Next, make the pesto; Tear the lettuce leaves into small pieces then add them to the garlic, parsley, salt, pepper and olive oil all in a blender together. Whizz it until you get that nice pesto consistency. Remove the cores of the tomatoes by cutting a large cone from the top with a paring knife. Using a spoon, remove all the pulp and seed bits. Put the tomatoes face up on a baking tray and fill each one with the same amount of pesto, but remember to leave room for the egg! Then, crack an egg into each tomato and season with additional salt and pepper to taste and throw in the oven for 20 minutes.

uildford is a great place for business networking and finding new clients. Here are my top three tips for generating interest in your products and services.

Talk to people in the same way you would at a social event. Start the conversation with something gentle rather than getting straight down to the “what do you do?” question. When I am networking a couple of my favourite conversation starters are “Have you travelled far?” and “Are you a regular at these events?”
Once you start talking to people at a networking meeting you can be sure that the “what do you do?” question will be asked at some point. Instead of launching into a sales pitch, give a succinct summary of your business in less than 15 seconds. It takes some effort in encapsulating your business but it is really worth the effort!
Follow on your 15 second summary with an example of a client you have helped. Your story should be about your client and the problems they had rather than what you did to solve the problems. If you are lucky the person you are speaking to may have a similar problem or know someone who does.

Interview: PETER WARDLEY We talk to Peter Wardley, the General Manager of the Radisson Blu Edwardian, the four-star, 183 bed hotel at the heart of Guildford… What do you enjoy most about what you do now? How did you come to work in the hospitality industry? I left school very young and went and got a job as a luggage porter at the Stratford Court Hotel near Oxford Street (Now Radisson Blu Edwardian Berkshire). I realised very quickly that it was something I was suited to. I then went on to work as a concierge at a number of other hotels which I loved because, unlike management, you’re making all the arrangements for the things people enjoy. While at Stratford Court I met the Radisson Blu Edwardian owner Jasminder Singh and was offered the position of Head Concierge. I was the youngest Head Concierge in London at the time. After 10 years I became General Manager of the Radisson Blu Edwardian Grafton Hotel on the Tottenham Court Road.
I love being given targets and challenges – particularly financial ones.
What key skills do you have that have been vital to your career so far? Apart from being a ‘people person’, you need to have worked with or spent time in various departments to understand where the money’s going out from as well as where it’s coming in. I’m good with numbers, budgets and that kind of thing.
Why is Guildford a good location for a hotel like the Radisson? Guildford’s town centre was crying out for a four star hotel offering four star service; a city-centre hotel with its own parking facilities is also a huge bonus. It’s a onestop shop offering a bedroom, restaurant, bar, spa, conference room, all in one place and so there’s nothing like this around
Guildford.
What does a hotel like the Radisson Blu Edwardian bring to the community? A venue like the Radisson Blu Edwardian actually helps everyone in the area. We give new local businesses preferential rates and we also draw in overseas customers that bring spend into the area. We do a lot for charities in the local area such as CHASE Children’s Hospice. What has been the best advice you’ve received and who said it? The Radisson Blu Edwardian chairman, Jasminder Singh, is fond of telling me: “You’ll never get in trouble if you think you’re doing the right thing. Don’t be frightened to take a chance.” So I’ve taken a number of chances that haven’t always worked out and I’ve had to remind him he’s said that quite a few times!

What do you do? One of my jobs is to be a CEO of a little company [22 Cans]. I’ve been a CEO for years, of companies as small as five people to as big as three hundred. My other job is Creative Designer; to think of an idea for a game and start it off. It used to be thinking up all the ideas; nowadays its thinking of an idea or getting one from the community or from someone on the team, and then putting that idea into a form that everyone can understand.
How did you start? I started back in 1987, running a tiny company called Taurus, exporting and importing baked beans to the Middle East. One day we got a call from a computer company called Commodore who said: “We’ve heard about your company and we’d really like to invite you out for lunch and talk to you.” So they brought us over and gave us all this free computer equipment and it turned out that they’d got the wrong company, another one called Taurus! But I had all this computer equipment and I’d always wanted to make a computer game. So I started to work on this crazy idea for a game called ‘Populous’. It came out (on PC) in 1989 and it was just a massive, runaway success. To this day, I still think I’m going to wake up and be that bloke shifting baked beans!
What’s been your greatest achievement? It’s just an amazing feeling to start something from nothing, from just an idea, to form a company and to share its success with a team and to have that incredible feeling of achievement.
Tell us about the current game you’re developing, Godus. It’s a ‘god game’ which is the first game I stumbled upon with Populous. I give you this little world and allow you to be a god in it and allow you to feel what it is like to take these little people from the most primitive times up to modern day times.
It’s very multi-player, so is everyone a rival god? Well, that’s an interesting point. I’m letting you decide if you’re a rival god or not. I love giving people the opportunity to choose whether they’re good or bad from the style of their play.
So what makes Surrey such a hotspot for the games industry? When I started I was one of the first. There’s about fifteen here now. But it’s close to London, it has a university, it’s not too expensive (we all wish it was a bit cheaper): it’s got all the ingredients you need. So it has a lot going for it. And there’s been some amazing games made here.
What do you most enjoy about Surrey? It’s just that blend between town and country which is so great.
How do you use your free time? I enjoy cooking, having a drink on a Monday night and that kind of thing. But I love my work too much, so I rarely stop.
