Letter from the Editor Joe Payne W
ell; Christmas was fun wasn’t it? Well, we hope so anyway. And after the remaining turkey has been hidden all over the house like a Mr Bean sketch (just to prevent us eating any more of the cursed thing), it’s time to get back into action. So for this brand spanking new year, The Guide 2 Guildford will be doing what everyone will be doing post-yuletide – trying to waddle ungraciously back onto the ladder. To inspire you, we’ve got a special feature on double-hard rugby dudes and Surrey Sports Park dwellers The Harlequins; as you probably saw on the front cover. We met them – it was cold. They were very nice. And made me feel tiny. Elsewhere, we have a whole bunch of stuff that is the antithesis of the Christmas glut. We have recipes that are light on the tummy, challenges in aid of self-improvement, and how to cleanse, tone and moisturise yourself into facial freshness. Away from all of that, we spoke to ex-Reuben frontman and local rock legend Jamie Lenman, chatted to some of the brilliant independent local entrepreneurs in the area, and conversed with the insanely tough (and really rather nice) MMA fighter Nick ‘Headhunter’ Chapman. So as ever, we keep a theme going while offering you a variety of content – for we are to provide both cosy familiarity and new ideas to keep your grey matter stimulated. Viva, The Guide 2 Guildford! Here’s to 2014…

INDEPENDENT VENUE WEEK FRIDAY 31ST JANUARY AT THE BOILEROOM, GUILDFORD
W
e live in an ever-changing musical landscape. Whether it’s genres, formats, where we buy tunes or where we experience live music, it’s safe to say that, in the age of the internet, change moves at breakneck speed. However, it’s important to remember the basics of how we get from the conceptual process to the end product. Whether you’re an easy listener or an intent listener, this article is for YOUR attention. Independent Venue Week (28th January – 2nd February) brings together some of the most relevant, important and historic venues around the country, with a focus on promoting some of the most exciting new talent. Think Record Store Day, but for independent music venues.
“Without independent venues, there’d be no independent bands, and without them there’d be no big acts either; these places are the lifeblood of any music scene, and music fans should care about them and support Independent Venue Week” - Frank Turner Naturally, Guildford’s very own Boileroom are part of the process. Be sure to support the cause on 31st January and head to www.boileroom.net for details of the line-up nearer the time.
Supported by the likes of Phil Selway of Radiohead, PRS, Moshi Moshi Records and BBC Introducing, Independent Venue Week seeks to raise consciousness of the fact that music fans would be left with little without these cultural hubs.

Talking to... JAMIE LENMAN trick I used to try quite a lot, where I literally would imagine listening to the radio and think about what I’d like to hear when I turned it on - that was often a good way to get an idea!
J
amie Lenman is a singer, guitarist, songwriter and illustrator whose band Reuben formed in Camberley in 1998 and became one of the leading lights of the UK’s underground rock scene until they parted ways a decade later. Now having embarked on his first solo album, Muscle Memory, and tour, Jamie tells us about his approach to music and his experiences of the Surrey scene…
Where’s your favourite hang-out spot in Surrey? I’m often down the Boileroom for shows. Live music is still very much a part of my life – most of my friends are involved in live music in some way.
What are you listening to at the moment? I was just listening to the Kill Chaos album, ‘PromisesPromises’; we’ve been on tour with them and they were amazing every night.
Any plans for 2014?
How would you describe your music? I’d call it aggressive, intelligent, guitar music. I think that’s about as concise as I can be; it tells you everything you need to know.
What has been your experience of the Surrey music scene? Back in the day – which is a terrible phrase – when my band were coming up we had tonnes of great bands, particularly Hundred Reasons and Vex Red who went on to make a big splash in the scene.
And your favourite venue? I’m slightly biased towards the West End Centre in Aldershot and the Boileroom.
But I still mourn the loss of the Tumbledown Dick in Farnborough. For all its faults it was a fantastic live venue.
If you had to pick one, what has been the most memorable show of your career so far?
As far as the music goes there are no plans. We might end up doing a couple of festivals in the summer but not a headline tour again; I think that’s been done. I’m going to be illustrating some children’s books, but as for the music, I’m taking it all as it comes.
It would have to be when Reuben played on the main stage at Download. It was just so nice to be able to drive through the main gates and go ‘Thanks Dave, mate!’ to the guy on security. It was a great feeling to be on that big old stage and maybe I’ll return there one day.
Aside from music, any New Year’s Resolutions?
What is your approach to songwriting?
For the extended interview, visit www.theguide2surrey.com and for more about Jamie, visit his website at www.jamielenman.com.
It’s remained largely the same since Reuben. There’s a little
I would say: ‘to continue to create good art’. That’s my resolution every year. I think that should be everyone’s resolution! It’s one of our primary functions as human beings.
What are you listening to? Howard Smith | Owner of People Records, 14a Chapel Street, Guildford Once drummer of cult Guildford band The Vapors (who had chart success in 1980 with the ever revered new wave, power pop anthem that is Turning Japanese), Howard now owns and runs People Records Independent music shop on Chapel Street, Guildford selling the latest and greatest releases on vinyl and cd. What was the first record you ever bought? Gosh, I think it was probably something by The Four Tops, the ‘I Can’t Help Myself’ single I believe. What record has had the most significance in your life? Probably ‘Turning Japanese’ to be honest, it’s not my favourite song but definitely significant. What are you listening to at the moment? The album that I’ve listened to mostly in the past couple of weeks is the latest Goldfrapp record (‘Tales of Us’). It’s a really lovely, atmospheric, gentle album. It’s just great.

Interview with
Omid Nooshin
Joe Payne speaks to Omid Nooshin, a Guildford-born writerdirector whose 2013 debut full-length film, ‘Last Passenger’, was nominated for a British Independent Film Award…
Tell us about your early life? I was born at St. Luke’s and grew up in Stoughton. Most of my childhood was spent obsessing over movies, loitering with intent in that fantasy world. I was a permanent fixture at the old Odeon, then home video arrived sometimes I’d get up at 5am and watch two films before school! My parents were very tolerant - there was ample love for cinema in the household.
At 15, I saw Taxi Driver and began seriously considering directing as a career.
Apparently you broke onto the set of Eyes Wide Shut and The Phantom Menace… Let’s just say I was old enough to figure out how to get into a studio, but young enough to have no fear. When you worship at the altar of cinema, the studio is your temple, and you’ll do anything to get near your patron saints.
How long had you wanted ‘Last Passenger’, which to get into film? stars Dougray Scott and The obsession segued Kara Tointon, has one into making my own of the more interesting films when I was 11, stories behind it – you shortly after visiting my uncle in Los Angeles. The created a £500 trailer for Universal Studios Tour a non-existent movie… put the hook in me, so I saved my pocket money to rent video cameras. I had no concept of editing back then, and I roped in all the local kids to act - my mother operated the camera.
I knew the film was ambitious for a debut and the onus was on me to prove it could be done on a low budget, so the trailer was just the last in a long
succession of ideas to raise the finance. It struck me that creating a visually vibrant piece was a savvy way to prove my chops, especially if it could be done on a shoestring.
You’ve been nominated for a British Independent Film Award for ‘Last Passenger’… I was happy just to get the movie made, so the nomination is icing. I was more proud of the fact that the nomination was for a thriller. Genre films receive less awards recognition than arthouse or dramas, so the nod is sweeter.
What is your ultimate goal in the film industry? Very simply to be able to make those films that interest me and to realise them to their full artistic potential. If I can earn a living doing that I can’t imagine anything more satisfying.
'Last Passenger' will be released on DVD on January 27th. Pre-order now on amazon.co.uk.

OUR HISTORY: The Roaring Girl ...A POTTED HISTORY OF WHERE WE LIVE AND WHO LIVED HERE
I
’d imagine that some of you ventured out this New Year’s Eve and perhaps chanced upon what you would consider (in your entirely sober state, no doubt) a ‘roaring girl’. Trust me, these weren’t the first these fair lands have seen. But there’s one in particular I want to tell you about, that is the original Roaring Girl… You may or may not be aware that several hundred years ago, traveling on the roads in merry old England made your morning commute at The Stoke interchange positively relaxing. I’m talking about those horrible muggers of old; The Highwaymen. Of course, even back in the 1600s they had some sexual equality and this gave rise to Highwaywomen. Though not as rife as their male counterparts (shame really), there were a few of these hags of the highway and one of them we know about robbed on the heaths of North Surrey. May I introduce to you Mary Frith - known as Moll Cutpurse. This little lady spent most of her criminal career as a fence, procuring (ha!) and selling on halfinched gear and generally having her dirty wee fingers in a lot of dirty wee pies. The serpentine passage of history brought Moll a gift in the form of the English Civil War. Now, without getting into details, the Civil War was a tad messy (don’t panic though - in Buck House there’s still a Queen) and this carnage and general malaise gave Moll a chance to have a crack at highway robbery. We now find ourselves in 1651 (the weather was still cr*p) and Moll was waiting for her next mark along with
by Will Knowlton her henchmen. They stopped a coach and it turns out it was Sir Thomas Fairfax, Commander-in-Chief of the Parliamentarian armed forces. She relieved him of 250 quid, but guess what? Fairfax went bat**** and organised a massive operation against the highwaypersons. They managed to nick her, but Moll bought her freedom by paying a fine of two grand an immense amount of bunce. The fuzz having accepted the bung, Moll decided it would be prudent to turn straight. Eight years on she carked it, and in her will she left 20 squid for a couple of rounds at a party - but only if merry old England ever became a kingdom again. What a ledge! The next year the kingdom returned. Jagers on Moll (or Mary) then…

BEING A VOLUNTEER PAYS FAR MORE THAN MONEY BY YOUNG REPORTER, ANNA KLAPTOCZ
Anna Klaptocz is in Year 12 at George Abbot School in Guildford. Here, Anna talks about her experience of volunteering, and why you should try it too…
I
stood in an oversized, blue T-shirt emblazoned with large, black letters: ‘VOLUNTEER’. Ahead of me, a long line of babbling children and eager parents stretched out like elastic, ready to snap. I had to ask myself: “why am I volunteering?” Indeed, when I first walked through the doors of Guildford Library in that blue T-Shirt, I was sceptical. This was MY summer; just after GCSE’s, almost three months of… nothing. But, my experience as a Summer Reading Challenge Volunteer really exceeded my expectations. It was probably the most worthwhile thing I did that summer. Here are just a few of the reasons why: you meet interesting people. My fellow volunteers were friendly and likeminded, which made it great working with them. It was even better getting to know the breathless, excited children who rush up to the SRC desk, whispering ‘Winnie the Pooh’ and Enid Blyton adventures into your ear, hoping for a prize. It’s not just great fun, but it’s really practical: it can’t be truer that volunteering
opens doors, and gives you valuable skills. I like kids, but I have to admit I was scared of them when I first started. I was constantly afraid of making them cry. But gradually, I got the hang of questioning without interrogating and praising without spoiling. It seems simple,
but school can’t teach you experiences like this! You also get to use all sorts of talents that you already have. Art to cut out decorations for the walls, drama to act surprised when a child tells you a ‘scary’ part of the story. Even languages; a Spanish gentleman whose children barely speak English are due to start school. A perfect opportunity to mould all those hours of learning Spanish into a basic English lesson. It is experiences like these that make you realise the importance of volunteering to society. I don’t want to get philosophical, but when you make a difference to someone, it is so gratifying. People respect you. The amount of “thank you’s” and “we’re really grateful’s” I received built up my confidence and made me feel proud of myself. Just knowing that I was being of use and encouraging kids to read was payment enough in itself. Ok, rant over - are you persuaded? I hope so. Get out there, find a volunteering role you enjoy and have fun!

CHALLENGE YOURSELF IN 2014 by Joe Payne A new year is upon us! So, why not set yourself a definitive challenge – something with tangible reward. We’ve gone for a good variety of things – pick one, get into it, and most of all; enjoy…
Do Some Red Hot Yoga… Red Hot Yoga is one of Surrey’s premier yoga venues, with their signature hot studio being its most famous selling point. Whether you’re an experience yogi or a newbie, there is a challenge here for you. Anyway if you’re a connoisseur of the cobra or the down dog, surely the Red Hot Yoga 30 day challenge is what you should be gunning for? Challengers must attend 1 class per day, for 30 days. All 60 minute, 75 minute and 90 minute classes of any series count towards the challenge. You will feel amazing. For those of you who feel like this may be beyond you, why not simply try a few classes at Red Hot Yoga? This scribe has tried it and trust me – you feel (but do not look) like a million pounds afterwards… MORE INFORMATION: Visit www.redhotyoga.co.uk or call 01483 564 511.
Learn a Language… …Or certainly improve the petit peu that you do know already. The ever-brilliant Guildford Institute boasts many strings to its bow, with language courses just one of them. With Italian, French and Spanish, there should be something for you to sink your teeth into. If languages aren’t your thing, Guildford Institute have many other courses available, from Ancient Egypt studies to Theatre – challenging indeed… MORE INFORMATION: Visit guildford-institute.org.uk/courses or call 01483 562 142.
Walk Like a Norwegian… We’ll move swiftly away from the terrible pun that constitutes this title and instead inform you of what this actually entails. Nordic Walking is a weight bearing exercise using poles which give support to the back, hips, knee and ankle joints. It is sociable, fun and the rewards are immediate. An ideal exercise for any age and fitness level, Nordic Walking is 40% more effective than ordinary walking. So – where can you do it? Well there are taster sessions between January and March in the gorgeous National Trust area of Polesden Lacey –booking is essential… MORE INFORMATION: Visit www.nationaltrust.org.uk/polesden-lacey or call 01372 452048.

Run Across the Surrey Hills… Are you something of a running aficionado? This, friends, is for you. Now into its 10th year, the Runners Need G3 running series is well renowned for its tough cross country routes. The races are notoriously challenging, taking in all that the Surrey Hills can throw at runners – steep inclines, deep mud, technical descents, and sand. Might we take this opportunity to add that runners who comment after the event that it is rather ‘up-anddown’ will be met with frowning and tutting of epic proportions – be warned now that this is an extremely hilly event… MORE INFORMATION: The dates for 2014 have been set – 18 January, 8 February, and 1 March. 08:30 am start. Visit aat-events.com.
Take an Adult Learning Course at The West End Centre Now for your turn to pick – the West End Centre in Aldershot is something of a shrine to giglovers of all kinds; but did you know that they also do a rather wonderful line in Adult Learning Courses? Starting in January, this is the perfect chance to learn a new skill, whether it’s singing in a choir, trying your hand at pottery, or life drawing (if you can stifle the giggles). Needless to say, there are numerous ways to challenge yourself at the Westy… MORE INFORMATION: Visit www3.hants.gov.uk/westendcentre or call 01252 408040.

H arlequin F.C. began training at Surrey Sports Park in 2010, after a difficult period for the club and years in outdated facilities. In the past two years, they’ve won their first Premiership title and the 2013 LV Cup – quite the turnaround. We spoke to some of their players to find out about their new home, what they thought about Guildford and who will win the 2015 Rugby World Cup…
Quins all-time point scorer, former all-black and golf fan…
During downtime, do you go out in Guildford and if so, where? A bit yeah, we all had a thing a week ago where we weren’t allowed phones for a week – there was a £100 fine that went straight to Nando’s (ed – that most deserving of charity’s…).
England international who’s back after a long injury…
Who are the young players we should keep an eye out for 2014?
Name: Nick Evans Age: 33 Position: Fly Half Home Town: Southfields via Auckland…
You train at Surrey Sports Park – what are your thoughts on the facilities? Does it feel like home now? It does – the previous facilities at Roehampton were from the 80s! It was nice to come to a place like this with all this hispec stuff.
Charlie Walker has taken Ugo’s (Monye, who’s injured) role well; he’s one to look out for. Tom Casson the same. Charlie Matthews is another young guy getting a lot of game time.
Greatest moment in a Quins shirt? It would have to be winning the Premiership – the first time in 150 years. To end the year top was brilliant.
The Rugby World Cup takes place in England in 2015 – as a kiwi, who do you think’s going to win it? Trick question?! I think it’ll be tricky in the northern hemisphere but I think New Zealand will win – England will make the semi-finals…
Name: Paul Doran-Jones Age: 28 Position: Tight-head prop Home Town: Wandsworth
What are your thoughts on the Surrey Sports Park facilities? Does it feel like home now? We’ve inhabited our new centre really quickly – there’s already a pool and FIFA league that’s pretty hotly contested!
During downtime, do you go out in Guildford and if so, where? I’ve been out once upon a

SPORT time – I went to The Drink (ed -This was clearly some time ago…), but now I occasionally pop to Nando’s with the boys.
Who are the young players we should keep an eye out for 2014? Charlie Matthews, the young second row – Charlie Walker, the winger with a shock of blonde hair, has a big future.
The Rugby World Cup takes place in England in 2015 – if England don’t (which they will) who will win it? You can’t look past the All Blacks, but they do tend to bottle it – dark horses? France are always good in the tournaments…

a couple of years ago, and captaining the team for the LV cup win.
The Rugby World Cup takes place in England in 2015 – if England don’t (which they will) who will win it? I’ve got to say we’re gonna win, don’t I?! We’re going to be so motivated at a home World Cup…
6 foot 8 second row with a black eye…
Long-haired flanker and hotel ambassador…
What are your thoughts on the Surrey Sports Park facilities? Does it feel like home now?
What are your thoughts on the Surrey Sports Park facilities? Does it feel like home now?
Yeah they’re really good – obviously with the new building now too it’s come into its own; we’re all really happy with it, the facilities are top of the range.
During downtime, do you go out in Guildford and if so, where?
I’m an ambassador at the Radisson Blu so I’m there quite a bit, and I’ll be seeing some comedy at G Live in the new year.
Greatest moment in a Quins shirt? Maybe beating Toulouse away
Name: George Robson Age: 28 Position: Lock Home Town: Formerly the Midlands, now Guildford
What are your thoughts on the Surrey Sports Park facilities? Does it feel like home now?
Name: Charlie Matthews Age: 22 Position: Lock Home Town: Putney
Name: Luke Wallace Age: 23 Position: Flanker Home Town: St Albans (now Guildford)
Lock. Giant. Guildfordlover.
It definitely feels like home – this feels a lot more like home than the old place did… the facilities are great, it’s really nice.
During downtime, do you go out in Guildford and if so, where? Not so much now, but when I lived here, it was The Legion.
Who are the young players we should keep an eye out for 2014? Will Collier, he played in the under 20s with me; James Chisholm – he’s already a great prospect. Plus he’s only a kid but he’s grown a massive ginger beard and is losing his hair…
Greatest moment in a Quins shirt? Beating Racing Metro was pretty special – that was the first big win I started in. Or the LV Cup final.
It’s brilliant – I can’t see us training anywhere else. We’ve got class facilities, and I’m really happy with the way things have gone. We’re all enjoying it.
During downtime, do you go out in Guildford and if so, where? I like Cote Bistro; Bill’s is nice and I’ve got friends over at the Radisson Blu. There’s some good stuff at G Live –I consider myself lucky to live here.
Sporting goals for 2014? Finish in the top four, and take each game as it comes. Was that a boring response? In 2014 we want world domination!
The Rugby World Cup takes place in England in 2015 – if England don’t (which they will) who will win it? England are gonna win!

Name: Harry Sloan Age: 19 Position: Inside Centre Home Town: Tunbridge Wells

What are your thoughts on the Surrey Sports Park facilities? Does it feel like home now?
What are your thoughts on the Surrey Sports Park facilities? Does it feel like home now?
I had my first week at the old venue – coming from there to here is definitely a big step up… team morale is a lot higher. It’s great for the club.
It’s great here – you come to the pitch and do your rugby, and then up the hill you’ve got the pool, the gym and your food; it’s ideal preparation for match day.
Greatest moment in a Quins shirt? Scoring a try on my debut against Northampton.
Sporting goals for 2014? To win the world cup again with the under 20s, start breaking into the first team and get back to full fitness for my loan club Ealing.
The Rugby World Cup takes place in England in 2015 –will England win it? Judging by the autumn internationals, we’re looking strong…
During downtime, do you go out in Guildford and if so, where? You can probably find me in the Nando’s… I like Guildford though, it’s lively as a student town, it’s got everything; including Nando’s… if I keep saying it maybe I’ll get sponsorship.
Who are the other young players we should keep an eye out for 2014? George Merrick is another guy my age, Jack Clifford, Charlie Walker – younger guys like James Chisholm and Louis Grimoldby.
Sporting goals for 2014? I like to keep my goals simple and realistic – I just want to get better with each game, and work harder on my game. I’m at the right club to improve and I want to do that. And get the Nando’s black card obviously…
Local lad that’s breaking into the first team…
Name: Sam Smith Age: 23 Position: Winger Home Town: Cranleigh (now Guildford)
What are your thoughts on the Surrey Sports Park facilities? Does it feel like home now? Yeah it’s great – I’ve been here for 3 or 4 years, and the change since Roehampton is fantastic. It’s nice to be in these surroundings, and the facilities really are awesome.
During downtime, do you go out in Guildford and if so, where? Not too often, but when I do I go to The Drummond in Guildford. The Sunday lunch is particularly good.
Greatest moment in a Quins shirt? Playing at a sold-out Wembley against Saracens.
Sporting goals for 2014? Get more tries and appearances for Quins!
The Rugby World Cup takes place in England in 2015 – if England don’t (which they will) who will win it? You’ve got to put New Zealand up there- even though no one’s won back to back World Cups yet…

PALEO FITNESS It’s not all about the gym – exercise in a way that comes more naturally…
by Will Knowlton
M
aybe you’ve heard about the latest trend in the world of fitness; going primal. It’s a lifestyle rather than a training regime. Diet-wise, you eat like a caveman, your meals centring on meat, veg, fruits and nuts - and completely foregoing dairy, grains, refined sugar and anything processed. But having embraced that, what next? Well, if you’re eating like a cave man, you might as well work out like your Palaeolithic ancestors. What we’re talking about here is Paleo fitness, or rather natural movement and primal fitness. This doesn’t revolve around Smith Machines and Cross trainers; with Paleo Fitness you scramble around in trees, power lift rocks and logs. This is the hottest exercise around and most practitioners call it the workout that time forgot. Now let’s be fair; there haven’t been any sabretoothed tigers or woolly
mammoth around Surrey for a few years now, but the aim of the Paleo Fitness is performing practical tasks and physical actions that you’d find yourself doing every day. So instead of chasing a mammoth, think chasing a bus. Essentially the idea is that we all perform natural movements every day like squatting, kneeling, balancing, crawling, jumping over your toddler, lifting your other one and even just walking. So instead of working out in a gym, performing repetitive workouts using machinery, you get out there and move in the same way you did when you were a kid. The body doesn’t work in isolation; it works as a bunch of symbiotic muscles, tendons and sinew. You don’t buy a car just to use the boot; you buy it to use the whole thing. Your body’s the same - why make it practise one movement? Take it for a proper drive!
The beauty of Paleo Fitness is that you and your body don’t get bored because the more varied your movements, the more it benefits you. This helps avoid plateauing. Now, I’m not in the least bit advocating going out to Stoke Park and start shimmying up trees - instead of cancelling your gym membership and grabbing a spear, start slow. How about steering away from machines that restrict movement and instead start throwing a few free weight sessions into your week? Body-weight exercises like chin-ups, push-ups and twisting sit-ups will always push you and they can be done anywhere (just ask your average inmate in a US Prison). The exercises should resemble things you do in real life. Think about bending down to pick up dirty clothes off the floor - that’s a squat, right? At the end of the day, even in the stone age, the cave always needed cleaning…
SPORT

PALEO TREE PULLUP The world was our ancestor’s gym. Just like a normal pull up. Make sure you breathe out on the way up and in on the way down.
PALEO RUCK RUN Adding a weight to your run through the woods increases your cardio output and adds strength to those cave man legs. Just imagine you’re carrying supper home to the fire pit.
PALEO BEAR CRAWL An amazing all round technique that strengthens your limbs and your core all at once. Also handy for creeping up on mammoths. (Child Weight accessory optional)
PALEO DAILY DIET The Paleo diet has so many benefits because you’re eating unprocessed, real foods that are rich in nutrients. The off shoot of this is a good healthy and sustained weight loss and a diet that’s rich in healthy fats. Here’s a typical day menu.
BREAKFAST Paleo Breakfast Salad; a delicious salty, fruity and protein salad made up of hard boiled eggs, bacon, pecans and berries all on a bed of spinach.
LUNCH Bell Pepper Shrimp Boats. This is a quick and easy recipe made up of roasted bell peppers loaded with shrimp, celery and mango. The mango brings out the sweetness of the shrimp and the celery adds a nice crunch.
SUPPER Chicken and Chard. A nourishing meal made up of chicken sautéed in onion, garlic and coconut oil. This is on a bed of wilted chard and perhaps a sprinkle of almonds. Awesome.
SNACK Eat some fruit guys, it’s full of good stuff and natural sugars to keep the choccy cravings at bay.
GIVE ME MORE If you would like more information about the Paleo diet you should definitely check out Robb Wolf, he’s the man. Check out his website www.robbwolf.com. Need a really great App? PaleoDiet Pro from Fitkit Apps is excellent and available on iTunes.

RECIPES: SO With the debauched feasting of Christmas behind us, our
thoughts in the New Year turn to lighter meals. This being the heart of winter, though, we still want all the nourishment and flavour we can get inside us. Inspired by the fresh, seasonal ingredients at Secrett’s Farm Shop in Milford, we present a hearty soup and three classic sandwiches that will keep you both full and happy this January.
Golden Lentil Soup
T
his rich, velvety soup is packed with protein and high in fibre from the red lentils and the seasonal root vegetables grown at Secrett’s farm. A hint of cumin brings some subtle spice to an immensely comforting soup that’s perfect for these cold months.
INGREDIENTS
Serves 4 • 15 g butter, plus 1 tsp olive oil • 1 large onion, finely chopped • 2 cloves garlic, finely chopped • 350g celeriac cut into small cubes • 350g carrots, cut into small cubes • 200g red lentils • 1.2 litres (2 pints) vegetable stock, preferably home-made • 1 tsp cumin seeds • salt and pepper To serve • 4 tbsp half-fat crème fraîche • fresh chives to garnish
METHOD 1. Melt the butter and olive oil in a large saucepan. Sweat the onion over low heat for 5 minutes then add the garlic and sweat for another two minutes. 2. Turn the heat up and add the carrots and celeriac and cook for about four minutes, stirring well. 3. Add the lentils, stock, cumin seeds and salt and pepper to taste. Bring to the boil, then reduce the heat and cover the pan. Simmer for a further 20-25 minutes or until the lentils are tender. 4. Purée the soup in a blender until smooth or use a hand-held blender to purée the soup in the pan. Return the soup to the pan if necessary, and reheat it gently until boiling. If it seems a bit thick, add a little stock or water. 5. To serve, ladle the soup into a warm bowl and place a tablespoon of crème fraiche on top. Garnish with fresh, snipped chives. Serve with crusty bread.

THE RAW FOOD REVOLUTION Thought an organic, vegetarian or vegan diet was the apex of healthy eating? Think again…
F
or what it’s worth, let me just say that I don’t need meat on my plate to have a good time - but I find it helps. Variety is the spice of life, but I usually prefer mine sprinkled over something meaty. Were I to ascribe exclusively to an increasingly popular Raw Food Diet though, I guess I’d have to kiss goodbye to any hint of sizzle or succulence in my life. And that thought makes me sad. Of course, no one’s asking me to –although my GP might- but as a lifestyle and a movement, raw food is rapidly growing in popularity. Temperature is what allows raw food to release its full nutritional potential. As Raw Lifestyle Coach Natalie Heath explains, when food gets above 47°c, the vitamin and mineral content is reduced dramatically. Each food has a set of enzymes in them that help your body digest that particular food. The problem is that they don’t survive the heat; your body then
has to draw on its own enzyme stores. Unfortunately, we have a finite amount, which can cause problems for our bodies down the line. That’s where the anti-aging benefits of raw food come in to play. “I show people all the possibilities; that even if you bring only a little bit more of this food into your diet you’re going to reap the benefits.” Natalie concedes: “A raw food diet can be expensive; but there are ways around it – nuts can be expensive for example, but you can substitute nuts for seeds which can be cheaper and good for your digestion.” Natalie herself errs on the side of moderation. “I don’t necessarily advocate eating a 100% raw diet either. I’m about 70% raw - I’ve had periods when I’ve been 100% raw for about six months. It’s difficult
by Rich Lee when you go to other people’s houses or go travelling.” To prove how delicious raw food can be, Natalie prepared a fresh, vibrant and flavoursome pate made from olives, kale and sundried tomatoes which we enjoyed in nori wraps with strips of vegetables. And for dessert, an apple and pear crumble with a whipped ‘cream’ made only from soaked, blended cashews and a splash of vanilla. As for me, while I will continue to enjoy some sizzle in my diet, the substance and style inherent in Natalie’s mastery of raw food should provide a persuasive argument… To read this article in full, visit theguide2surrey.com. LEE CANHAM The Queen Victoria, Shalford How long have you been in the pub industry? Three and a half years full-time and also briefly part-time through college and other jobs. What was the first pub you worked in? The Kings Head in Quarry Street, Guildford What makes your pub different from the rest? It’s a traditional pub with a modern twist, serving restaurant quality food. Our chef has his own unique style. Everything is freshly made and he gets the fish fresh off the boat from Billingsgate. In-house recommendations? Scampi, our chef’s signature dish together with a pint of Otter, our well kept in-house ale. Once you’ve had the scampi here you’ll turn into a scampi snob, and it’ll never be quite the same again! Your favourite tipple? Any of the ales that come through. Gastro pubs or traditional taverns? We’re traditional and I’m definitely a traditional pub person. Friday nights or Sunday afternoons? I’m a Sunday afternooner. I like the great family atmosphere of a roast dinner in a pub. Favourite pub in the Guildford area? Depends what mood I’m in. The Kings Head, Quarry Street or The Royal Oak, Sydenham Road. Favourite pub elsewhere? The Bridge Tavern, Portsmouth. It’s situated right in the little part of the harbour so you can see the boats come in. If you were a drink what would you be? Bloody Mary. Uncomplicated, effective, gets the job done and is agreeable with most people…

WHERE TO EAT Rich Lee visits The Beano Restaurant, Guildford It seems curious that Guildford has only one dedicated vegetarian restaurant but then there is a lot that’s curious, and wonderful, about the Beano Restaurant.
F
irstly, it’s probably the longest running restaurant in the area. Seriously. When an average 59% of UK restaurants close after just three years, the Beano has been happily doing business for over 28 years at the Guildford Institute on North Street. Secondly, you may well have never heard of the Beano before. “We’ve always been known as Guildford’s best kept secret and we’ve always worked by word of mouth which is the best kind of publicity for us,” says Leone who has operated and cooked at the restaurant for most of those 28 years, with the help of her daughter Emma, Friday cook Maija and friends like the charming Celia. That neither Leone or her daughter are vegetarian themselves comes as a third surprise,
but it was an obvious choice for them when it came to running the restaurant their way. “It’s always been vegetarian. I come from South Africa where we eat a lot of salads and fresh food. So the idea was always to introduce people to more fresh vegetables. We make sure there’s always something for everyone.” That means that on any given day, diners at the Beano can expect homemade soup, several main courses and a vegetable curry, four or more side salads and up to six dessert options all freshly made on the day and all absolutely delicious. To start we had, a healthy, hearty lentil loaf with sweet chunks of mango, celery and cheese; just the thing to lift the spirits on a cold day. A spinach, goats
cheese and onion pie was a slice of pure comfort with the airiest, flakiest pastry encasing luscious spinach, delicately perfumed with fresh dill. Our next course consisted of a snappy salad of beetroot, apple and sunflower seeds. It was all kinds of sweet and crunchy while the vegetable curry was another heart-warming, aromatic plate of steaming soft veg, perfectly spiced with an easy heat, served with fluffy white rice. The desserts are as diverse and as tempting in their choices as the mains, but a gluten-free chocolate and cherry roulade, oozing with sweet compote and whipped cream, managed to be both light and decadent. It’s little wonder that this ‘little institution in the Institute’ has
won such a loyal following over the years; the expertly made vegetarian dishes are a wonderfully tasty and healthy alternative to Guildford’s usual offerings. However, it’s the refreshingly informal and communal atmosphere of the Institute itself that imbues the Beano restaurant with a uniqueness all of its own.

2013 – That was the year that was the year that was the year that… So 2013 has been and gone – and for us personally it involved the monumental effort of launching this, The Guide 2 Guildford. Issue one was launched in September 2013, after the entire staff at TG headquarters turned white, lost hair and shed weight (and that was just the Surrey Hills TV interview). It’s hard for us here to forget that there is a world outside, but 2013 was the year of a certain young future King being born, ma jor political events across the world and we lost two ma jor historical leaders in Margaret Thatcher and Nelson Mandela. On a lighter, more locally relevant note, local lads Disclosure topped the album charts with their monstrously catchy debut ‘Settle’, and Guildford was voted the 'luxury shopping capital of the UK'. In short – many things happened in 2013…
2014 – The year that shall be… So what does the future hold? For TG Media, 2014 shall see us following up our quest to make Phyllis Tuckwell Hospice our charity of the year and committing to some dedicated (and downright frightening) causes to raise money. Also, our humble magazine will be branching out to other locations in the county – watch this space…
are perhaps lower than in recent years (which is an arguably long-overdue viewpoint) – it may seem unlikely for England to make it far, but stranger things have happened… Something that everyone should be aware of is that 2014 sees the 100th year since the outbreak of World War I, the landmark conflict that has irreversibly changed human history. We should all take time to research, remember and commemorate this monumental anniversary in our own way.
Otherwise, we will find out what event occurs on Stoke Park this summer, with the possibility of Guilfest coming back after a two year absence still very much in the balance. We fully throw our weight behind the return of Guilfest, and you can keep up to date with developments on theguide2surrey.com. Of more global significance, 2014 sees the football World Cup in Brazil, and expectations

LEGAL TIPS WHEN SETTING UP A BUSINESS Every month in 2014 we ask a member of one of our esteemed local businesses give us some business tips. This month, Guy Setford of Setfords Solicitors offers his expertise - Here’s to a prosperous year!
With over 500,000 people starting new businesses in the
UK each year, is 2014 the time to think about setting up your own? Here are some things to consider… Choose a legal structure that suits you and your business There are several legal structures available to you when starting your business. The structure you choose will define your legal responsibilities, so it is important to consider which set-up works best for the business given your objectives. The company structure will affect how it is run and funded, and what tax it pays.
Cash flow Cash flow is vitally important to any business. Unfortunately, receipt of payment does not always go smoothly. Customers can be tricky, slow to pay or refuse to pay at all. Putting in place sound credit control procedures will all help keep bad debt to a minimum.
Protect your ideas
Agree the right terms on business premises
Depending on your business you may want to consider protecting your business ideas, logo’s names or products.
Before committing to business premises it is important to understand the terms of the lease you will be entering into. How long a lease will you require? What happens when the lease comes to an end? Will you want the ability to sub-let the lease to someone else? Can the landlord increase the rent; if so when? Will you need planning permission for change of use?
Avoid disagreements and problems
Employing staff
Business problems are always easier to resolve if you have the correct documentation in place. If you are going into business with others have you considered; what would happen if you fall out? Who would buy who out? How are profits to be divided? Who would be entitled to your shares should the worst happen? Would your family be properly protected?
Employment law is complex and constantly changing. There are many pitfalls around recruitment, maternity and paternity policies, training, dismissals and redundancies. Businesses need to be sure that they have a clear understanding of these.
Taxes It is important to understand the tax you will pay and when you will pay it. We would suggest speaking to an accountant at an early stage for the correct tax advice.

AN ENTREPRENEURS LIFE Name: Nick Tolley Company name: Harris & Hoole Business sector: Food & Drink Number of years trading: 18 months Website: www.harrisandhoole.co.uk
Describe your business in no more than a dozen words (we know that’s a challenge!) In a way it’s quite simple. It’s quality coffee, happy people, local friends and community.
Why did you decide to start working in your sector? When my brother, my sister (Laura and Andrew) and I decided to set up a business, I said I didn’t mind what we did… I just said that “what we do, we have to love”. It’ll take over your life and if you don’t love it you’ll resent it. Having come to England from Australia, we realised there’s a different kind of coffee culture and it’s something I think we took for granted…one way or another we came to
realise that we were all passionate about coffee and here we are.
What has been your biggest challenge? Not dissimilar to any other entrepreneur. When we first started with Taylor Street, it was “how am I going to pay my rent next month”, “how am I going to do payroll”.
What motivates you? Seeing people who are inspired by what they do.
What do you do to relax? Drink tea. I genuinely love just hanging out at coffee shops, not necessarily Harris & Hoole… I have an awesome coffee shop down the road from me and I love just going in.
Names: Jonathan Gomma/ Julian Gomma/ Harry Sloan Company name: BeetleJuice Business sector: Pop up Cocktail bar Number of years trading: 18 months Website URL: www.beetle-juice.co.uk Describe your business in no more than a dozen words (we know that’s a challenge!) A pop-up party on wheels – a vintage VW Camper converted into cocktail bar.
To date what has been your greatest successes? Building the concept, which we had literally drawn up on paper. Fashion shows for Donatella Versace and Kate Moss; meeting Angelina Jolie for a drinks service. Though nothing comes close to doing Roger Taylor’s birthday bash in Surrey…
What key skills do you have that have been vital to your success so far? Socialising has been a massive part of what we do. Building a network is key as a lot of our business is created through word of mouth.
What has been your biggest challenge? Trying to get into big festivals. Big corporate companies will usually buy the rights to sell alcohol at these events, so it’s tough for a small independent business to get a look in. However as we offer cocktails, we don’t take any of their business away - we offer people
an alternative option to drinking beer/cider and spirits all day.
What motivates you? We motivate each other -we’ve been friends since we were in nappies! We’re all extremely social -making sure people have the best time possible is what motivates us.

Names: Abigail Trent/Steven Reina Company name: KOKO Business sector: Hairdressing Number of years trading: 2 years, 7 months Website URL: koko-hair.com Describe your business in no more than a dozen words ( we know that’s a challenge!) A+ advice to gain achievable results at home, within a cosy environment
Why did you decide to start working in your sector? Who decides when you are seven years old and trimming the cat’s hair??
To date what has been your greatest success? It wasn’t actually opening the salon, but making the difficult decision to do so.
What key skills do you have that have been vital to your success so far?
Listening, compromising, taking risks, researching, being fair and admitting to not always being right…
What motivates you? Financial success, the love of the business, growth and staff enjoyment - We 100% respect our staff, and they all have their roles at motivating us. Every day they exceed our expectations - we love that.
What developments do you have on the horizon for your business? We would love to see a plan for an academy within 3 years. While we have expanded threefold since we began, we know we are doing something right and want to continue that.
Name: Anna Smith Company name: ALSO Home Ltd Business sector: Online retail and home furnishings Number of years trading: 6 Website: www.alsohome.com Describe your business in no more than a dozen words ( we know that’s a challenge!) A mail order brand also supplying a selection of ma jor retailers in the UK.
Why did you decide to start working in your sector? I trained as a Textile Designer and loved creating the end product rather than just fabrics. My first proper job was designing bed linen and it all led from there.
To date what has been your greatest success? Starting and growing a business profitably during a recession!
What motivates you? I find I have an instinctive drive inside me to grow my business. I love the satisfaction when we have done a good job for a customer and won an order. We don’t always get it right, but when we do its very satisfying. Trying to better that each season motivates me, as does seeing our products being loved, ordered and well received by anyone who sees them.
What do you do to relax? I love walking my dog Asia and being in the countryside with her and my son. I haven’t been very good recently at switching off from work in the evenings, but I am trying to ensure that happens this year!

Names: Kate Lester Company name: Diamond Logistics Business sector: Logistics Number of years trading: 2 1 Website URL: www.diamondlogistics.co.uk Why did you decide to start working in your sector? I didn’t enjoy the politics of a big office so joining a smaller company appealed to me. I was into cars and motorbikes at the time so when a job came up in a small courier company, it seemed like an ideal opportunity.
To date what has been your greatest success? Creating a franchise network for Diamond Logistics – a ma jor step forward in our strategy to grow a nationwide network and become the UK’s leading same day courier company.
What key skills do you have that have been vital to your success so far? I am a people person. I garner great loyalty from my team and depots. I also listen – lots - to advice from those with experience in bigger, better businesses. And I am very self-aware. My personality is pretty Marmite – you love it or hate it – but I am okay with that!
What motivates you? The taste of success. And money. I really like the perks money brings with it!

‘Me’
Nick ‘Headhunter’ Chapman MIXED MARTIAL ARTIST. LIFE ENTHUSIAST. BUSINESSMAN.
LOCA L P E O P L E , E X T R AO R DI N A RY L I VE S . What do you do? I’m a professional mixed martial artist, which is crudely known as a cage fighter (which I resent) and I run and own the Fight Science network.
How did you get into Mixed Martial Arts? It was a natural progression - I grew up angry and aggressive and I was a thug for many years, fighting policeman, doorman, anybody; I just had this urge. If you’re born a certain way, you just have to accept it. For some reason I was born with a tendency towards violence and anger. MMA came along and my eyes lit up...
Occupational Hazards? There’s lots, but none that I’d say are significant enough for me not to love what I do. I’m rife with injuries… I could struggle to walk by the time I’m 60. My knees and ankles are shot, but hey - I love it. It feels wrong if I wake up without pain – it’s reassurance that I’m doing something right.
Your toughest bout? It was a guy called David Zetolofsky. I had only had a few months training. I had no fitness or technique and I had a couple of fights with guys with experience and steamrolled them. Then I came across Zetolofsky - he was beating me for the first few minutes and I learnt a lot about the sport. It didn’t hurt; I loved it. It took everything I had to come back and finish him in the second round - it was an awesome feeling.
Thoughts on G’Ford, Godalming & Cranleigh? I love Guildford. My parents moved here just before secondary school. When I started my business I was desperately looking for somewhere in Guildford for about eighteen months and I just couldn’t find the right place. I decided to come to Aldershot but I’ve always wanted to open up a gym in Guildford; fingers crossed that’s happening.
Favourite spot to relax / hangout in the area? I really enjoy the restaurants in Guildford. I’m not a drinker or a party go-er. I love the Rumwong and Cote Bistro. I love coming to Guildford on my own. I could spend the whole day bumping into people and chatting.
Best things about the job? I just love life and how my life is. I’ve put myself in the middle and built everything around me…resources, networks, training, coaches, business - I just love it!
Are you working on any other interesting projects at the moment? Yes, always. I’ve got four new gyms opening up in 2014 – one is back in the heartland of Guildford. Just watch this space. I’ve also got a world title fight in May at The Troxy…
