Letter from the Editor Joe Payne And so it begins – the ‘it’s X amount of shopping days until Christmas!’ spiel. You’ll hear it uttered by smugly grinning newsreaders and light entertainment TV presenters from now until a few days after Christmas Day, to be used as an eye-rolling gag. It’s enough to make any yule-fancier – of which I vaguely consider myself, as I really rather enjoy the languid haziness of the wine-and-cheese time of year – turn into a veritable Ebenezer. That and the X Factor. Take heart then reader, that this penultimate pre-Christmas publication of The Guide 2 Guildford is full of festive ideas that are useful, wonderfully presented and sure to fill you with joy. This issue is for the entire month of November, and by the months’ end you simply must be at least considering some gift-buying – so we have a guide for that. Want to know when the lights are being switched on locally? Perhaps where to attend a delightful, cinnamonsmelling market? These events all occur in November – and we have info on that too. However, there are more than enough other shenanigans to keep you nonChristmas lovers (and indeed nonChristmas celebrators) interested, such as our interviews with comedian extraordinaire Ardal O’ Hanlon and exciting local up-and-coming synthdisco rabble-rousers The Other Tribe. If you’re more gastronomically-inclined, our guide to game (that’s the food/ animal) is for you, and of course there will be a few health and beauty bits and bobs to keep yourself looking tip-top through the winter months. And not a Louis Walsh in site. What more could you desire? Go forth, read, indulge, partake in our competition and use your TGTG offer card – and don’t forget to visit theguide2surrey.com for much much more… A quick mention – Apologies if you received the October edition of The Guide 2 Guildford late; you should still read it though (if only on the lavatory), even if you’ve missed some events. Also, the Guildford Food Banks article (p.16) was written by our very own Rich Lee.

Talking to... The Other Tribe

M

eshing synthesised beats, live melodies and deep tribal rhythms, Sony-signed The Other Tribe are injecting audiences worldwide with their unmistakable ‘dare you not to dance’ force. Their first single ‘Skirts’ reached the top 40 and their electrifying live performances earned them the title ‘Best Live Act’ in a Bristol poll just months after their formation. Bristol found them fame, but when they’re not touring or working on the album, they’re right here in Surrey…

How did you meet? Festivals and the Dojo lounge, Bristol. We met through a shared love of dance music. Ollie’s in the band because he thought he saw Alex getting beaten up and tried to save him…

How do you write your music? It’s always based around the beat. One or two people will flesh out a production, primarily to get people to dance then Alex will put all the ideas together. We start with what we want people to feel from the song. Sometimes we’ll find something tribal and write around it or just jam it out.

our last. Relentless! Playing the Rabbit Hole at Glastonbury - Kate Moss and Cara Delevingne were watching.

Local hang out spot? The Five and Lime. Best music, best vibe, best stories.

Favourite band? James: Chemical Brothers; Miles: Stimming; Alex: The Knife; Ollie: Foals; Max: Roosevelt.

What are you working on at the moment?

African and South American tribal music, Soulwax and videos. We watch videos to try and inspire the emotion and flow of the song.

The album. We might release an EP and another single before then. We’re working with Mark Ralph (Hot Natured, Franz Ferdinand) trying to refine the live sound. We’re also working on implementing more elements to the live set to make it more interesting and more flexible.

Favourite thing to do when you’re not playing?

Future plans?

Festivals. We did about 30 this year. We are quite a tight knit group and we don’t have lives outside the band. The band is our life and that’s the way we like it.

New album, new tours, new festivals, new girlfriends (for some of us!). We want to link dance music and live music and be part of a series of bands that bring the best of both worlds together… Along with world domination!

Influences?

Top 5 band experiences so far? When ‘Skirts’ went from 30,000 to 200,000 views in a day. The week we played Glastonbury, Ibiza Rocks & Majorca Rocks. Playing Wembley arena. Our first tour – We treated it like it was

Which song is the favourite? ‘My Girl’. James: I’d say ‘Skirts’. It’s just so much fun live.

What are you listening to? Dom | Owner at The Boileroom Having just celebrated its seventh birthday, the Boileroom is arguably the most popular live music hub in the area. Dominique Frazer (formerly Czopor) has been in the driving seat since it’s inception, creating a diverse programme of events with the small but passionate team. With a rich industry background and the guts to go with it Dom has also managed Dubstep-Punk band Subsource. What was the first record you ever bought? Probably Joni Mitchell, handed down from my mum. Then Paul Weller, The Jam and The Style Council. What record has had the most significance in your life? As a teenager probably ‘True Blue’ by Madonna as she’s quite ballsy and later ‘Freaky Styley’ by the Red Hot Chilli Peppers. What are you listening to at the moment? Drenge, Slaves and Dolomite Minor who all recently played the same night at the Boileroom. Also Lorde (must be something to do with my 15 year old daughter!)

ARDAL O’HANLON Life, Pedestrian Crossings & Speed 3... by Joe Payne

Ardal O’Hanlon is

one of the best and most understated stand-up comedians on the circuit today. Here, he talks to The Guide 2 Guildford about ‘Father Ted’, werewolves and who would win in an Irish comic sprint…

Ardal O’ Hanlon appears at G Live on Wednesday 20th November. Tickets are £21 or £19 for concessions. Call 0844 7701 797 or visit glive.co.uk for details.

TheGuide2Surrey.com/Entertainment

You’re coming to G Live in November. Do you know Guildford well? Have you performed here before? No, I don’t know Guildford at all and have never performed there in my life! My whole career has been slowly building towards this show at G Live.

Your latest stand-up has life as the subject matter. What little things in life bring utter contentment to you? Just to clarify, the theme for the show is my life, and my feeble concerns. Utter contentment is of course elusive but red wine and movies help a lot as does travelling on adventures with my family. I also quite like pistachio nuts.

You always come across as a relatively mildmannered gentleman what petty aspects of life get you angry? Somebody pressing the button on the pedestrian crossing after I¹ve already pressed it as if I didn’t press it properly. How is that supposed to make me feel? Getting a cup of coffee with a leaf drawn on the foamy bit. I don’t like people doodling on my drinks. The list goes on.

Your breakthrough role was, of course, playing Father Dougal McGuire in ‘Father Ted’. What character trait do you most associate with yourself? I’m probably the most sensible person in the world.

Did Sandra Bullock ever come calling for a potential ‘Speed 3’after the famous Father Ted episode of the same name? Sandra Bullock comes calling every night in my dreams along with Halle Berry and, er, Arsene Wenger, which sort of spoils everything because he just wants to talk about financial fair play in football. Typical.

Your other star role was as Thermoman in ‘My Hero’. This begs the question: Spiderman or Batman? The superhero has had its day. They are all overrated and overblown and deeply insecure. Give me werewolves any day.

Who makes you laugh? My daughter Rebecca is scarily quick, unbeatable in a battle of wits.

Has anyone come onto the comedy scene recently that you’re impressed by? An American guy called Reggie Watts is uniquely funny.

Finally, who would win in an Irish comedian race: you, Dylan Moran or Chris O’ Dowd? If you’re talking 100 metres, it would be have to be me (after an overeager Chris O’Dowd is disqualified…)

Ardal O’Hanlon | Wednesday 20th November The man who’s perhaps best known as ‘Dougal’ is mild-mannered like his comic creation – however, he is also sharp, probing and witty (of which only the last applies to his Father Ted character). Talking about life, Ardal will charm the metaphorical pants off you. Tickets: £21

Ed Byrne | Tuesday 26th November Ed Byrne comes to Guildford with ‘Roaring Forties’, a show based on the Irish funnyman’s recent entrance into middle age. Having been a “miserable old git” since the age of 23, Ed embraces the big 4 0. Tickets: £23.50

OUR HISTORY THE CHIDDINGFOLD BONFIRE RIOTS ...a potted history of where we live and who lived here by Will Knowlton “Our Sovereign Lord the King chargeth and commandeth that all persons being assembled immediately to disperse and peaceably depart to their habitations, or to their lawful business, upon the pains contained in the act made in the first year of King George the First for preventing tumults and riotous assemblies. God save the King.” – The Riot Act

W

ay back in 1715, the Riot Act was passed. This new law gave Magistrates the power to break up a rioting mob by using any means necessary; it’s worth remembering that if any rioters were killed by the Magistrate’s goons then it was lawful killing (seems legit). All the Magistrate had to do was read out the riot act. After that, the whole thing turned into total carnage.

had the Riot Act in his pocket. Also, a quick reaction force consisting of two “onetimes” filled with policemen stood by at Guildford nick. Guess what? The Bonfire went up and the crowd kicked off, langing fireworks at Brake and Roster. The six constables mobilised but they just cracked on with flinging **** - so they legged it to the police house.

The local copper, was mighty peeved, and happily spent October barking at everyone that he’d open up a can of whoop*** if there was any drama on the big day… This brings me neatly to a little incident that happened on the 5th November 1929 in lovely Chiddingfold. Chiddingfold traditionally has massive celebrations on Bonfire Night. However, the year before (1928 fact fans), there had been some good old British drunken disorder. The local copper, Sergeant Charles Brake, was mighty peeved, and happily spent October barking at everyone that he’d open up a can of whoop*** if there was any drama on the big day. In an inspired move, some git lit the village bonfire - and the Chiddingfolders blamed Brake. At this point Constable Eric Roster got on the horn to his superiors. Surrey PD sent six extra officers that afternoon, along with the County Magistrate, Mr Short, who

The mob surrounded them and continued hurling stuff at them. At this stage they thought it was a good shout to give Guildford a bell. Short went out to reason with the mob and was told that they wanted Brake to sling his hook. In a show of great solidarity, Short agreed - but only if everyone stopped being silly and went home. Before anyone had a chance to decide, the backup from Gtown arrived. Short shimmied up a wall and the cops charged with truncheons blazing (probably). Five minutes later it was over; the crowd cleared and the policemen nicking nicked anyone they found inside…

NOVEMBER 2013

BURGLARIES

IN SURREY I

t may be an uncomfortable or even inconvenient truth, but you are more likely to get burgled at this time of year. Incidents of burglary increase significantly during the months from October through to December. The average amount during these months is 331 compared to 255 during the summer - this is a rise of 30%. So, it’s fair to say that this is a county problem that needs the efforts of not only the police but also our good selves, in order to prevent this horrible crime. It would be easy to think that it probably won’t happen to you, but it could - and did happen to our interviewee on a Monday in March this year. Having parked round the back of her house, she let herself into the garden and went in. Her handbag was on the stairs; drawers had been pulled out and thrown to the floor. Her things lay strewn about; the house was ransacked. We talked to her about her experience. Please remember this is a real person’s account and by no means dramatised; this is what could happen to someone just like you...

How did the thief/thieves break into your house? A small ground floor window was left open. It was so small that you wouldn’t have thought someone would have been able to enter the house through it - but clearly they could.

What was taken from you?

I had only moved into the property about two weeks prior to the burglary so I hadn’t got round to switching my home insurance over, which when I look back now was really stupid of me. So everything I lost wasn’t covered financially. A white Macbook – While I was at university I saved up to buy a Macbook to do all my work on, which took about a year to do. The computer had all my university work on it, which I hadn’t backed up or taken copies of and therefore I had lost. It also had photographs too, which again I hadn’t backed up because I never thought I would be a victim of burglary. Vouchers – as I said, I had only just moved into the house so my friends and family had given me vouchers for housewarming gifts which I hadn’t spent. These were taken which I was gutted about, as most were from my elderly grandparents who couldn’t necessarily afford to give me presents. My housemate had jewellery and computer games stolen. The total value was around £3,000.

Was anything recovered, either soon or much later on? No.

How did you find the support you received after the burglary?

The investigating officer was brilliant. He came straight to the property and spent several hours with us going through the burglary, how the investigation would go and gave us details of support we could get following the incident. He kept us fully updated at each stage of the investigation, checked CCTV and carried out house-to-house enquiries in the local area. Crime reduction advice was also given to us.

Is there anything more you feel you could have done to prevent it happening?

After the burglary, we got some crime prevention advice and realised our house was really insecure. We fitted outside security lighting, timer switches, made sure all doors and windows could be locked and were locked when not in use, and fitted a fence around the garden and gates with locks, and a safe.

How much more aware are you of securing your valuables? Very. All my valuables are now registered with Immobilise and are security marked. I have photographs of all expensive jewellery and other unusual items. I make sure all valuables are out of sight and locked away securely, so if someone did manage to get into the property they shouldn’t be able to find the items.

How did it make you feel?

I remember running up the stairs and locking myself in my bedroom as I didn’t know if the people were still in the house or not before I called the police. When I called the police I was put through to East Surrey CID who were really reassuring and asked me several questions about what the scene looked like and if I knew what had been taken. I told the officer that I was home alone and was scared he said he would be with me soon, and he was with me very quickly. When the officer arrived, we did a walk-through of the house and listed everything which had been stolen; which is when it started to sink in. That night, when it was dark and I was alone, it hit me that someone had been in my room and had been through my things and taken items which I wouldn’t be able to replace. Every noise and shadow was frightening and I didn’t sleep for nights after the break-in. I lost nearly half a stone in weight in a week.

From your perspective, what one thing would you say to a potential victim?

Never think it can’t happen to you – it can and it’s much more likely to if you don’t take simple steps to prevent it from happening.

Don’t Get Caught, Give Security Some Thought As with many criminals, burglars are opportunistic; don’t leave your door or your car keys within reach of a letterbox, open door or window. The same goes for your wallet or handbag. If you’re out for the day or evening make home look like someone’s in; try using an automatic light timer or leave some lights on. If you don’t have one, get a burglar alarm. Just the sight of one is enough to dissuade these guys – remember, they want easy targets. Sounds silly but also remember to set it, even if you’re just popping to the shops. Before you leave home always take a minute to check all your windows and doors are locked. Home is not as safe as a bank; don’t keep loads of money or jewellery at home but if you do, invest in a good quality safe and store it out of sight. Appearance is everything; if you’re off on your holidays make sure you cancel the milk, newspaper or anything else that’s delivered on a fairly regular basis. You can contact Royal Mail and have them hold or redirect your post as well. It’s always a good idea to ask a mate to keep one eye on the house for you. Remember also that your local Neighbourhood Watch scheme can help with this as well. Register all your valuables like mobiles, laptops and games consoles at www.immobilise.com. Don’t make it easy; leaving your shed unlocked with a ladder and your tools in it for a burglar to use to get in the house is not ideal. Make sure your shed or garage is always locked up when you’re not using it. And finally remember that you can call 101 and get a free security survey done on the house - just ask to speak to your local Crime Reduction Advisor.

CHARITY SPOT: DISABILITY CHALLENGERS by Dani Maimone

I

n 1979 Dr Helen Foley, a paediatrician, and leisure centre manager Colin Hassel set up Disability Challengers. This vibrant charity has two centres, one located on the edge of Stoke Park in Guildford and the other in Farnham. It also has various play schemes operating throughout Surrey and Hampshire. One of the main provisions this charity supplies is essential short-term breaks for families at weekends and during school holidays. This provides the opportunity to carry out all those tasks that many of us take for granted. The short-breaks are a lifeline to these families who would otherwise find it extremely hard to cope. Challengers caters for a range of ages and is one of the only charities of this type in Surrey that does not rely on referrals. Anyone who feels their child cannot access their leisure centre

can get in touch with them. They welcome a range of organisations including special schools and although the council refers some children, they do not have to be on a disability register to participate. The number of children Challengers supports has grown dramatically in the last 13 years from 70 to over 1,300. That’s a huge increase and as a result, Farnham and Guildford centres have become very busy. Recognising the increased demand for their services they launched their pop up play schemes covering areas such as, Dorking, Leatherhead, Caterham, Oxted, and Bookham. They have a total of 600 staff operating throughout the county. Some of them work on a volunteer basis and a significant proportion are young college or university students. As Madeline Henderson,

fundraising manager at Challengers says “We are effectively training up to 600 people a year to become more aware of the issues that disabled children face. Our schemes allow young disabled people to have experiences other young people take for granted. It also allows them to build friendships, try something new and have fun in a safe, relaxed environment. Disabled children are often excluded from things like parties and other social events. Coming to us enables them to make friends which is important for them and their families. If you are a local business you might want to think about becoming a partner or if you know a family who would benefit from their range of services, find out more at www.disabilitychallengers.org or give them a call on 01483 230060.

ALL THE LEAVES... by Rich Lee

As the autumn leaves colour and curl, dropping from the trees to

blanket our streets and gardens, we’re provided with a bountiful supply of nitrogen-rich lawn fertiliser and compost to nourish our gardens over the winter and supercharge them come the spring. Here are just three easy ways to put all that fallen foliage to good use.

Composting Small quantities of leaves, mixed with other green material such as grass clippings make fantastic compost. Let it sit over in your compost heap over winter, turning over the pile to aerate them occasionally and by spring you’ll have nitrogen-rich compost ready to supercharge your beds and borders with.

Leaf mulch Leaves make ideal mulch to cover borders, vegetable beds and the bases of trees and shrubs. This helps retain moisture in the soil, supress weeds and can make the garden bed look more attractive. It helps to shred your leaves first either with a garden shredder or simply by going over them with a lawn mower. Add about five centimetres to your beds taking care to keep the mulch from touching the stems of any shrubs or other low plants. The decaying leaves will then add much needed nutrients to the soil over winter.

Leafmould As a soil conditioner, leafmould greatly improves the structure and water-holding capacity of soil and the best quality leafmould is produced from the leaves of oak, beech or hornbeam. You just need to make a simple container –four stakes one metre apart bound in plastic meshing should do it. Add the leaves over the autumn and just leave it (sorry) to do its thing. Over a year, the microorganisms in the vegetable matter should break it all down into nice, crumbly soil conditioner your garden will love you for when it comes to spring planting.

LEAVES AS BIOFUEL? When leaves and other vegetable matter biodegrade, the actions of the microbes feeding on the cellulose produce sugars that can be turned into ethanol which can potentially be used as fuel for industry, agriculture and even specially converted road vehicles. So could we be sitting on a renewable supply of cheap biofuel? Microbiologist at the University of Surrey, Dr Claudio Avignone-Rossa, studies the production of energy using microbes and had this to say: “There is energy in leaves, the same kind that you find in wood or the trunk of a tree. The problem is how expensive it would be to extract the energy from the leaves. One broad leaf weighs approx. two grams. Assuming everything is converted into sugar, the maximum yield of ethanol from the sugars would be one gram. You’d probably have to collect all the leaves in the country to produce an amount of ethanol that could replace the use of fossil fuels. We could burn the leaves to produce a significant amount of energy, of course, but you’d have to dry the leaves first and, again, that would take more energy than you’d produce. So from my point of view, leaves would be better used for composting and mulching for your garden. Economically it’s not feasible. Biologically and technically it’s feasible, but economically it doesn’t work. Which is a pity.”

LEAVES AS FUEL! But all is not entirely lost, as one handy little gadget does hold the potential for turning your autumn leaves and other garden waste into dirt cheap fuel with which to heat a stove, chimnea or firepit. It’s called the Log Maker. It’s comprised of a simple outer tube and an inner plunger, both made from recycled materials. All you have to do is to wrap the tube in newspaper, then take your leaves -damp or dry- and pack them into the tube, pressing down with the plunger as you go until the compressed leaves fill the newspaper. Once full, just twist the ends to seal the ‘log’ and allow to dry out if necessary. You could even crumble a cinnamon stick or add some essential oils to the mix to create a sweet smelling, long burning log for your fire. And of course the best part is the logs are completely carbon-neutral, i.e. they burn only the same amount of carbon as they absorbed in the first place, whereas the logs you might buy to burn during winter would have been cut, transported, and collected, producing a much larger carbon footprint. image credit - www.nigelsecostore.com

The Logmaker is available from www.nigelsecostore.com for £24.99 inc. vat.

Bizzkitzz Biscuits are perpetually in the office of TG Headquarters. Whenever they appear a collective cry of “We need a fruit bowl!” appears. Sure we do. We really need rotten fruit in the office (does sarcasm work in print?). We also shared a side of wild boar sausages with spiced crispy shallots that was all earthy, smoky game flavours and pure indulgence. Finishing with a selection of fine cheeses and a decadent flourless chocolate, orange and hazelnut cake topped with a blob of thick clotted cream, we came away eager to return again. Few restaurants manage to combine elegant surroundings with prices as friendly as the staff, and food that manages to be both refined and fun. Scoff and Banter, fortunately, nails it all.

IAN THOMPSON The Star Inn, Church Street, Godalming. How long have you been in the pub industry? I grew up in it! My parents had a pub when I was younger. I swore that I’d never get into this crazy industry. I actually started working in hotels and then moved into the pub trade. It’s probably been 12 years now. How long have you been in the pub industry? Too long! Probably about 35 years. What was the first pub you worked in? I initially started working for Watney’s (Brewers of the cultural phenomenon that was ‘Red Barrel’ in the 60s & 70s) and ended up working at The New Inn, St.Mary’s Road, Ealing, which was one of the first managed houses to allow guest beers. What makes your pub different from the rest? We care about the attention to detail and I have a profound care for what I do. If you don’t care you won’t get anywhere! In-house recommendations? Any of our ales! (The Star tend to have an ever-changing list of guest ales) today it would be Dark Island brewed by The Orkney Brewery. Favourite tipple? Orange squash! (laughs) - a sober head is a responsible head of course! Or a Calvados; 25 years old at least! Gastro Pubs or traditional taverns? There’s certainly a market for the gastropub because big breweries have overcharged on the wet stuff; therefore food has become a viable source of income. But it’s all about quality, and being able to produce quality day in, day out. Naturally, I’d choose a traditional tavern. Friday nights or Sunday afternoons? The buzz of a Friday night. Favourite pub in the local area? The Royal Oak, Trinity Church Yard, Guildford. It’s a proper pub, like mine! Favourite pub elsewhere? The Princess Louise in High Holborn. It has the only Grade II listed toilets that I’m aware of. A real traditional pub. If you were a drink what would you be? Something dark and strong…Sarah Hughes Dark Ruby Mild (6%)

WE GOT GAME by Rich Lee

G

ame, the family that includes pheasant, partridge, venison and rabbit -just to name four- has seen a resurgence over the last few years, helped along by increased visibility in supermarkets like Marks and Spencers and Waitrose, whose stores have seen sales rise by over 50% since 2011. Game and other specialty meats have also become far more noticeable on the menus of pubs and restaurants with not a few in Surrey offering dishes that celebrate this versatile foodstuff, especially as so much of it is abundant in our meadows and woodland. As with much in the national diet, these things are cyclical, historically speaking. Game was about as traditional as sources of meat got in this country and part of our culinary heritage, only falling out of public favour in the post-WWII age of heavily industrialised farming that saw the intensive rearing of pigs, cattle, lamb and poultry become the standard. But now that game is seeing an upsurge, we can all be thankful for the extra diversity now available and accessible to us. And here, in this foodie’s humble opinion, is the reason why. Game is more interesting.

This is most definitely the time of year that foodies everywhere should get their ‘game on’ Really. Take venison for example. As an alternative to beef, it’s a leaner, sweeter meat and one of the healthiest for you. Pheasant on the other hand is more flavoursome and leaner than both chicken and turkey and makes a particularly welcome alternative to the usual white meat we consume at this time of year. Many of the best complements to game can be found in the animal’s natural environment and diet. Think venison and blackberries, pheasant with chestnuts and apples, rabbit and wild herbs. It is the animal’s own food in addition to the amount of exercise they get that imbues it with that distinctive ‘gamey’ flavour, that’s stronger, tangy and earthier than farmed meat that has usually fed on grain.

Game sometimes has a reputation as a difficult food to cook and easy to dry out, but not if a little attention is given to its naturally lean nature. Which means game lends itself well to slowroasting and braising. Birds such as guinea fowl, pheasant and partridge enjoy plenty of braising if roasted, or perhaps wrapped in bacon to keep the moisture. Be sure to rest after cooking. Venison, meanwhile, offers up deliciously succulent stews and pie fillings, particularly if slowly simmered with winter root veg, herbs, stock and plenty of red wine. So, as a source of food that is healthy, delicious, sustainable, versatile and almost the definition of ‘free-range’, this is most definitely the time of year that foodies everywhere should get their ‘game on’.

RECIPES: GASTRONOMIC GAME WITH FIONA KNOWLTON Rabbit Ragu with Tagliatelle This is an alternative to your regular Bolognese and packed with flavour. This is best when made in the morning and left for the whole day to gently simmer. • 2 tbsp olive oil • 1 rabbit, jointed in six pieces • 2 sticks celery, finely chopped • 2 carrots, peeled and finely chopped • 2 brown onions, finely chopped • 4 cloves garlic, finely chopped • 500ml stock (meat or vegetable) • 1 can of Chopped tomatoes • 2Tbsp of plain flour • 2 bay leaves • Sprig of fresh thyme • Sea salt and black pepper • 1kg fresh tagliatelle pasta • Fresh parsley to garnish

1. Fill a plastic food bag with the plain flour, well seasoned with salt and pepper. Then add the rabbit pieces - make sure they are well covered in flour. 2. Heat oil in heavy-based, oven-proof pot. Add the rabbit pieces and brown on all sides. Remove and set aside. 3. Add celery, carrots, onions and garlic and cook over medium heat for 10 minutes, until well softened. Return the rabbit pieces to the pot, then add stock, tinned tomatoes and herbs and bring to the boil. Turn down the heat until at a simmer then cover and cook for 90 minutes. 4. Remove from the heat, take the rabbit pieces out of the pot and shred the meat roughly. Remove and discard all bones. Return the meat to the pot and stir through the sauce. Season with salt and pepper to taste. Bring a large pot of lightly salted water to the boil and cook pasta for a few minutes, until al dente. Drain pasta in a colander, then toss the drained pasta through the ragu. Garnish with parsley and serve.

Braised Venison with Mushrooms & Red Wine This is taking a classic casserole recipe and adding a bit of jazz, as it were… • 2 carrots, roughly chopped • 2 onions, roughly chopped • One punnet of chestnut mushrooms • olive oil and butter, for frying • 1 garlic clove, crushed • 1kg boned leg or shoulder of venison, cut into large chunks (or buy ready-cubed venison for stewing) • 5 tbsp plain flour, seasoned with salt and pepper • 2 tbsp redcurrant jelly (or rowan or hawthorn jelly) • 450ml dry red wine (Rioja is good) • 450ml beef stock • 2 thyme sprigs • 1 bay leaf

1. Heat oven to 180C/fan 160C/gas 4. Fry the vegetables in a little oil and butter in a heavy-based casserole for 4-5 mins until golden. Tip in the garlic and fry for a further minute, then set aside. 2. Put the venison into a plastic food bag with seasoned flour and shake to coat. Add a little more oil and butter to the pan, then fry the venison over a high heat, stirring now and then, until well browned. Don’t crowd the pan – cook in batches if necessary. Set aside with the vegetables. 3. Add the redcurrant jelly and wine to the pan, and bring to the boil, scraping up all the bits that have stuck to the bottom. Pour in the stock and then add the thyme, bay leaf, meat and vegetables. Season if you like and bring to the boil. Cover and transfer to the oven for about 90 minutes or until tender. Remove from the oven and check the seasoning. 4. Serve with creamy mashed potatoes.

FOOD & DRINK

TheGuide2Surrey.com/Food-and-Drink

The weather is most definitely getting colder - and that means that you can indulge in some Great British comfort food. At this time of year your local butcher will have all kinds of game meat available. So here we have three recipes that will make game a regular ingredient for you. Don’t hesitate to ask your butcher for cooking suggestions and advice if you have not bought game before.

Roasted Pheasant We have all enjoyed the British favourite the humble roast chicken. This dish is a simple way of putting a twist on that classic.

• 2 x pheasants • 100g/3½oz unsalted butter • salt and freshly ground black pepper • 2 rashers smoked streaky bacon • 2 bay leaves • 1 onion, chopped • 250g/9oz chestnut mushrooms, chopped • 1 carrot, chopped • 1 leek, chopped • 4 garlic cloves • small handful fresh thyme leaves, chopped

1. Preheat the oven to 200C/400F/Gas 6. 2. Place 25g/1oz of butter inside each pheasant. Season generously with salt and freshly ground black pepper. Place a rasher of bacon and a bay leaf on each bird. 3. Put the onion, mushrooms, carrot, leek, garlic cloves and thyme in a roasting tin and place the birds on top. 4. Spread more butter over the birds and roast in the oven for about 45 minutes. 5. To serve, carve the pheasants and place onto serving plates. Spoon the roasted vegetables alongside.

CRANBERRY DETOX-COOL FACIAL MASK THE RECIPE

W H AT I T D O E S

Half a cup of frozen cranberries

Cranberries:

Antioxidant to flush out toxins

1 egg white

Egg White:

Draws out oils and tightens skin

1 teaspoon organic runny honey

Honey:

Hydrates and soothes skin

1 teaspoon lemon juice

Lemon Juice:

Evens skin tone

2 heaped tablespoons of oats

Oats:

Absorbs excess oils from the skin and makes the mixture paste like for easy application. TO MA K E

Crush or blend the oats into powder, add everything else and blend, blend, blend. It’s that simple. If the mixture is too runny, add more oats. Too thick, blend for longer to release more juice or add more cranberries. Apply generously to your face and enjoy ten cooling minutes of cranberry magic whilst you flick through our other pages. Wash off with warm water and voila! Your skin should feel cool, clean and clear. This mask is also good if your skin tends to appear blotchy from time to time. Enjoy with a glass of chilled cranberry juice for an internal antioxidant boost. And just so you don’t do anything silly – Please do not use if you are allergic to any of the ingredients.

WAGE WAR ON WINTER…

10 lifestyle changes to prep your body for the colder months 1

Have a hearty breakfast: We naturally want to eat more in winter because our bodies are working harder. Increase your breakfast portions of porridge, eggs, milk and wholemeal bread to fuel up for those frosty days.

2

Eat Seasonal Vegetables: Switch to locally sourced vegetables. The fresher the food the higher the nutritive content. Seek out carrots, swede, parsnips and turnips from Guildford farmers market on the first Tuesday of every month.

3

Breath more fresh air: In winter we tend to spend more time inside and breath more recycled air, which can lead to the spread of coughs and colds. Get outside for at least 20 minutes a day to clear your airways.

4

Get more sleep: The decreased hours of sunlight may make your body slip into hibernation mode. It’s a healthy reaction to the cold so accept it and get to bed an hour earlier than usual.

5

Boost your immune system: Going from a heated room to the cold outside can cause an immune system breakdown, so up your weekly intake of fish, garlic, oats and barley to give your immune system a seasonal boost.

6

Take ginger daily: Ginger is warming, clears the sinuses and helps your body absorb nutrients. Drink ginger tea, sip ginger infused juice or finely grate ginger root onto food.

7

Exercise: Reduced sunlight means our bodies absorb less Vitamin D, which the brain uses to trigger serotonin (the happy drug). Exercise increases blood flow to the brain and naturally stimulates serotonin production, helping you feel happy and healthy.

8

Up your intake of Omega 3: Nuts, seeds, fish and olive oil are all good sources of Omega 3. Upping your intake of these foods protects your immune system and can help fight fatigue, joint pain, depression and dry skin conditions.

9

Don’t go on a diet: Trying to diet in times of seasonal change may shock your body, making you more susceptible to viruses. Instead, make healthier food choices and avoid sugar crashing.

10

EAT CHOCOLATE! Go for at least a 70% cocoa based dark chocolate. Dark chocolate is high in antioxidants, low in sugar and increases blood flow to the brain. It also raises your spirits!

NOVEMBER 2013

ELECTRIC AVENUE | THE BMW i3 by Joe Payne

T

wo ma jor events occurred in 2008 that were of huge global significance – the first is the financial crisis that has irreversibly changed the economic landscape. The second is that, for the first time ever, more people were living in urban communities than rural areas. Both of these factors have, in turn, meant that being frugal, economical and environmentally conscious is more important now than ever. Many of us Surrey-ites are commuters and city drivers, in need of small and efficient cars for sub10mph average journeys. However, the mere mention of the electric car brings about familiar fears – range, cost and a general lack of cool. One answer to these concerns comes about from an apparently unlikely source; BMW. Launching in November 2013 is the i3, and the good people over at Vines BMW in Guildford are the only local dealership selling it. We’re far from a motoring magazine, but even to this layperson the i3’s stats are hugely impressive.

A few key ones: 0 – 62 mph (0 – 100 kmh) takes 7.2 seconds Range under everyday conditions: 130 – 160 kilometres (approx. 80 – 100 miles) - can be boosted to around 300 kilometres (185 miles). Standard Charge: < 7 hours from 0 to 80%. AC Fast Charge (can be fitted by BMW): < 3 hours from 0 – 80%. All of this means that BMW have essentially quashed the main concern of the electric car – that you can’t live with one day-to-day. Moreover, the environmental theme doesn’t end there - vehicle assembly at BMW Plant Leipzig uses 100 per cent renewable energy too. So its credentials on paper aren’t in question – but what’s it like to drive? I found out, using one of Vines’ BMW 3 series with a less refined version of the technology within. It really was a hugely impressive experience – the smoothness of the handling and utter silence of the battery was immediately noticeable.

A feature that stood out was the Brake Energy Regeneration feature –when removing your foot from the accelerator, the brake gently kicks in. This means two that if you’re a city driver, you scarcely need to move your foot in any way other than up or down; every time you do remove your foot, the technology actually makes the car more energy efficient. After a couple of miles jaunting, I did not move away from the accelerator, and when ‘opening it up’ a bit, the power was notable – and considerably less than what will be in the final i3 model… So in the unending quest for more eco-friendly transportation, BMW have taken the electric car a giant leap forward. Where this car succeeds is that not only is it incredibly easy to drive, it’s mind-blowing technology means that it’s actually feasible to have this is as your main, or indeed only, vehicle. Head to Vines BMW and check it out for yourself…

How did you get into it? It was a childhood dream to be an author. Throughout school, I’d spend most of my spare time furiously tapping away on a keyboard. I put writing aside for college and then went to study music at Guildford’s ACM. For a while I intended to go into the music industry. However, it never really suited me, so whilst working a number of bar jobs, I threw myself back into writing - luckily for me just as the indie publishing revolution was getting under way…

Thoughts on e-publishing versus physical publishing? I do both. Many authors just stick with e-publishing, but you’re cutting out those fans who still enjoy the smell and feel of a good book. That, and you can also do signings and tours. And of course there’s something utterly grin-inducing about seeing your books in a shop. Digital media has enabled me to do a great many things, but print books aren’t going anywhere yet…

Do you see any similarities between the demand for e-books and the rise of the mp3 at the turn of the millennia? A great deal of them. Mp3 players and eReaders. iTunes and iBooks. The supposed death of vinyl and the endangered bookshop. The music and book industries are incredibly similar. Both saw, and are still seeing, great upheaval at the hands new technology. They changed the way consumers consumed, and therefore the industries have followed suit. The power has shifted, and I think for the good.

Thoughts on your book ‘The Written’ being described as “Harry Potter meets Sin City’’? I love it. Strangely enough, my own tagline (and inspiration for the Series) was “Lord of The Rings meets Sin City”. Both descriptions are pretty apt, a mix of emotion and action - though I still like to think Emaneska is a bit more Tolkien that Rowling...

Thoughts on G’Ford, Godalimng & Cranleigh? A great corner of these fine British Isles, and also a great area to find some good writing spots. I like writing outdoors, so there have been many days when I’ve taken the laptop out and about and found a quiet little spot in the Surrey hills, or down by the canals of G’Ford and Godalming.

What’s next for Ben Galley? More work. More writing. I’ve also got another project in the pipeline. It’s all a bit top secret at the moment, but if you want to know more, then you can follow me on Twitter @BenGalley, or find me at www.bengalley.com.
