Letter from the Editor Joe Payne When I was a wee nipper, Halloween was – somewhat weirdly – my favourite holiday. Even though it didn’t involve presents, I enjoyed the faux, sanitised macabre; the eerie undertone that was all imagined; the headache-inducing plastic masks; the 1993 classic ‘Hocus Pocus’ starring Bette Midler. Weirdly, I think I trick or treated all of twice – both times when I was too young to do it alone, so a parent was skulking in the background; and naturally, there was no ‘trick’ for the non-sugardispensers. To this day I still enjoy that classic horror movies – slightly more intense than the aforementioned Midler classic – appear on TV. I love the kind of autumnal familiarity; the ghost, ghoul and haunted house element that I now no longer believe in, but still find weirdly nostalgic fun. Or maybe it just reminds me of sweets and half term. Now, we think that the whole Halloween vibe is ripe for a consistent theme in The Guide 2 Guildford. It summarises the transition from summer to winter, is typically when schools have the first mini-break and offers an array of pumpkin-based stuff – be it picking, carving or eating. So with that in mind we have events and jaunts for young and old alike, with half term events, recipes, days out, entertainment, interviews and all kinds of other bits and bobs in the October issue of The Guide 2 Guildford. Our exclusive excerpts from Jennifer Saunders’ new book – which she’ll be discussing as part of the Guildford Book Festival – are a real scoop, we’re sure you’ll agree. Anyway, we have – of course – merely carved a scary face out of the surface of what’s inside this issue. In a TG2 Guildford exclusive, we have an excerpt taken from Jennifer Saunders’ memoir ‘BONKERS: My Life in Laughs’, released on 10th October (Viking £20). Here, ‘Podge’ gives us an insight into her soupy memory…

I have been told that publishers these days like a particular type of memoir. They like a little bit of misery. They like a ‘mis mem’. Well, I’m afraid I have had very little ‘mis’ in my life, and nowadays I have even less ‘mem’. So we can knock that one on the head. In fact my brain is a bit soupy overall re the past. Sometimes it’s hard to know what is an actual memory and what is simply a memory of a photograph. Was I really called ‘Podge’ as a child? Answer: yes. Was I really surly, apathetic and introverted at school? Apparently not. That is simply an image I invent for myself. The truth is, I was fairly friendly, sometimes hard-working, and quite good at things. My mother has kept all my school reports. I imagined these would be a rich source of hilarity and irony, but they turn out to be decidedly average. She has also stashed a good selection of my schoolbooks, clay models, posters from my teenage bedroom wall, a few Fab 208 magazines and a selection of diaries: the Pony Club diary, the Honey diary, a diary with a small elf on the cover that was a present from my friend Karen. All these diaries are written in remarkable detail for the first couple of weeks of January. Then nothing. So a lot of the incidents that I will write about in this book may all have occurred in January. I have scant info re summers and autumns. One of the teenage diaries contained a code so I could write really important secrets. Each letter of the alphabet was represented by a shape taken from the capital letter A. Quite complicated, but luckily I had written the code down in the diary itself. I’m no fool! It is just about decipherable, so I could now read my deepest, darkest teenage desires. This was thrilling in anticipation, but sadly not in practice. I knew it was going to be disappointing when the result of the first codecrack read: ‘I really want a velvet hacking jacket.’ Memory is a liquid and strange thing. Researching my own life, I realize that there are major events I have totally forgotten, people I don’t remember meeting, shows I don’t remember being in and places I don’t remember going. And that can leave you
vulnerable. Quite a few years ago, my agent Maureen rang me at home. Her normal voice said, ‘Hello, love, a couple of things to go through vis‑a‑vis availabilities and dates and so on.’ We talked these things over and then she said, not in her normal voice, ‘Love, just wanted to check.’ Nervous laugh. ‘Have you ever been in a porn film?’ Me. Not normal voice. ‘Pardon?’ Maureen coughs. ‘Have you ever been, do you think, in a porn film? I’ll tell you why, love. The papers have been on to me to say they’ve seen your name on the credits of one such film and it looks like you in it.’ My heart is now beating fast. I think, I know I have never been in a porn film, but something is making me doubt myself. ‘I don’t know, love, I mean, I just thought I’d run it past you. I thought perhaps when you were in Italy?’ I spent seven months in Italy after I’d left school.Maureen knew this. Now I’m seriously considering the possibility. Was I in a porn film? My memory soup is working overtime. Was I drugged by some boyfriend? How could this have happened? I eventually resolved that the best thing was to say, ‘No.’ Maureen, relieved voice. ‘No. I didn’t think so, love. I suspect they’re just fishing.’ This happens quite a lot, apparently. The press go fishing and cast out into the celebrity pool with outrageous bait, just hoping to touch a nerve and get a nibble. I can honestly say to you, dear reader, that I have never been in such a film. However, there might well be a porn star out there with my name. Most people calculate their porn name by using the name of their first pet and their mother’s maiden name. That would make mine Suki Duminy. Just so there’s no confusion. Talking to... Skit
What’s the creative process involved? How do you go about laying down a track? There’s not one specific way I get started. Sometimes I’ll start with the drums, sometimes I’ll start with a pad. My best mix downs have probably started with drums; if you lay them down and get them sounding right then you have that to reference the other instruments too.
Influences; musically and worldly? Clams Casino definitely; Burial obviously. Those are the two big ones, my two main influences. One’s from a hip hop background making instrumentals and the other’s from the UK with a garage and jungle background. But sonically they’re really similar.

aniel Bruin aka Skit is a member of the esteemed ACM alumni; a group of individuals that are infiltrating the music scene via the tuition of Guildford’s very own Academy of Contemporary Music. Skit’s tune, Sweat featuring Tijani, forthcoming on Plastician’s (pioneer of Dubstep and Grime) label Terrorhythm, is making women swoon and inspiring men to make woman swoon all over the UK…
Brand of music? A mix between electronic hip-hop and UK bass music - I’m just trying to bridge that gap a bit.
When did you start playing / producing music? I started playing really young. I started playing the trumpet when I was 8 and then got onto the guitar when I was 12. I originally got into producing to record bands and record my own demos but I got kind of sick of waiting around for other musicians. Then I just thought I’d start sequencing and producing electronic music; what I was listening to was just starting to really open my mind, and it went from there.
Local hang-out spot? Any nights that Kane FM put on really. I was going to places to hang out and listen to bad music… it makes more sense to go down the road to something Kane are putting on and listen to good music…
What’s your involvement with Kane FM? I did a one off show with Axon and from there I met a few people. I met Mr Fame and then some of the MC’s, and a couple of months ago Fame said we should get you on, and although I’m not living in Guildford anymore it’s still cool to do it.
What are you listening to at the moment? A lot of Sun Glitters, Koven for like the last two or three years, Deft, Two Inch Punch, Flying Lotus...there’s so much man, I could be here all day…
The highlight of your short career so far? Playing at Plastician’s night (Plan B basement in Brixton) …or maybe the Radio 1 play I got recently. A lot of my friends had been played already so it felt like I was the last one to pop my cherry!

GUILFEST 2014?
When Guilfest shut its doors in 2013 to make way for Magic Summer Live, we wrote on theguide2surrey.com back in July that – like many of you – we wanted the old festival back (search for ‘Guilfest 2014’ on the site should you wish to read the article in full). Now, with over 4000 signatures on an online petition and some dissenting voices, Guildford Borough Council have agreed to debate the prospect of its return at their next full meeting on Thursday October 10th. As we argued at the time, Guilfest wasn’t without flaw, but the lack of any form of community input at Live Nation’s corporate event was a real shame for the area. With this in mind, Surrey Police and their partners will again be working together during the Halloween and Bonfire Night period to target anti-social (read: nasty) behaviour and keep our fair citizens safe.

CHARITY SPOT: HEADWAY SURREY ccording to Oliver A McGeachy, a former media

executive and CEO of Guildford based charity Headway Surrey, approximately 20,000 people a year in the county will suffer some sort of brain injury. “It’s something that is often overlooked in hospital,” says McGeachy, “unless there are obvious signs after an accident, it can go relatively undetected. The individual affected will be struggling with their memory and probably suffer from a general lack of concentration both of which have long-term implications.” Set up 27 years ago, Headway Surrey has just 6 employed staff and relies on a bank of 30 – 50 fantastic volunteers. Many of these have often had personal experience of a brain injury or are trainee neurologists, keen to get as much experience as possible. There are no quick fixes where brain injury is involved and it’s small footsteps rather than miraculous recoveries that take place. Brain injuries are the result of a range of causes - high risk sports accidents, car accidents and strokes. For many it’s like living in a ‘Groundhog Day,’ where they can’t recall what they did ten minutes earlier and have to repeat everything on a daily basis. Headway works with
people in their own homes re-teaching them the skills they need to live. There is also a vocational rehabilitation programme aimed at getting people back into work and education. They train the volunteers and match them to like minded individuals with similar interests. McGeachy continues: “We have one guy, a volunteer, who travels 30 miles every week so that he can come and play a game of chess with a chap who has a brain injury. It’s a free service and you can really see the difference it makes to people’s lives.” Every Friday Headway holds a ‘drop-in’ open door policy for anyone with an interest in studying brain injury. OUR HISTORY THE ANGEL & THE FLOATING NUN ...a potted history of where we live and who lived here by Will Knowlton
et us away to The Angel Posting House Lwhere, it is said, the hotel hasn’t always
been a hotel (all good ghost tales start this way, don’t they?) - at The Angel it appears that some guests have checked out permanently. Mwahaha! It turns out that the hotel has a ghost that’s been seen on the staircase in the main hall. Not just spotted; this ghost has been smelt as well (ewww…) The story goes: a few years ago a manager was working late. It got to midnight and his colleague called to him saying that he could smell the ghost (really?). Having no doubt checked that his colleague hadn’t been tucking in to the bar, the two stood at the bottom of the stairs and watched a white outline of the nun who moved across the gallery that’s above the hall. This is the Floating Nun (no, not a euphemism for a poo). The smell of lavender was exceptionally pungent, heavy and intense (and probably oddly calming). They then, out of natural curiosity or because it’s all made up, followed her. As she floated lazily along the corridor, floorboards creaked and the aroma of lavender continued… Strange; historically the hotel’s famous ghost is a continental soldier not a nun. Apparently he was an imperial soldier staying in the Freiburg Suite (Guildford’s twinned with Freiburg - lovely place, you should go). The soldier is said to be dressed in a
uniform and is said to sport a droopy moustache (his companions the Indian, the Cowboy, Cop and Builder haven’t been spotted). He was first seen by a couple who noticed his reflection in the mirror of their wardrobe; they then sketched him. I would too.
As she floated lazily along the corridor, floorboards creaked and the aroma of lavender continued… . The “intrigue” doesn’t stop there though. The crypt below the hotel was a part of Whitefriars Monastery and our nun was having an affair with one of the monks. The monks (in a show of standard medieval Christian forgiveness) bricked her up, alive, and she starved to death. FYI - without water it takes three days to perish, the last few hours of which are like dying of the worst hangover you’ve had. Nasty. This makes sense as to why she’s still there, wandering the corridors looking for an exit (and a glass of water…)

GUILDFORD: WHY DOES THE TOWN HAVE THREE FOOD BANKS? t’s a common perception Ithat Surrey’s county town, Guildford, stands as a monument to well-heeled and comfortable middle England. Only last month, the town was named “the most luxurious shopping capital in the UK” in the Telegraph after research conducted by Experian put Guildford ahead of other affluent places like Kingston and Harrogate as a thriving town centre resilient to the recession that has suffocated so many other high streets, cobbled or otherwise. And while that may be true, Guildford’s prosperous reputation disguises a worrying number of households for whom three square meals a day represents more luxury than any number of Armani or Hugo Boss outlets. Since the coalition government’s welfare reforms back in April this year, many individuals and families have seen their benefits severely reduced or cut entirely. Living, disability and jobseekers allowance have all seen heavy sanctions, stranding many at the distressing juncture of choosing between using what little income they have left to pay the rent or to feed themselves. To help those most in need, an ever growing number of Food Banks have sprung up; cooperatively run

community projects and drop-in centres that provide desperately needed food packages to families and individuals who are struggling. Ann Mather runs the North Guildford Food Bank (NGFB) at St. Claire’s church in Park Barn. She set up the food bank in December 2012 with a grant from the Council after growing concerned for the welfare of some of the people in the area. “I felt called upon by God to do something and we did a survey of people’s needs in this area and found that loneliness and debt were the two big problems. “The result of debt was that people weren’t feeding their families properly, they were going without food themselves and their children were going without. It seemed obvious to open a food bank. We checked with a lot of local agencies and they agred and so we started.” These agencies comprise of GPs, social services, the Citizen’s Advice Bureau, churches and charities among others. People who cannot afford to buy food can visit these agencies and receive a voucher which they can present to a food bank such as NGFB for three days’ worth of nonperishable food. Their food is donated from sources such as churches, charities, the local Tesco’s store and from local businesses. Ann and her team have
fed four hundred people since opening, half of them children, although she expresses concern as the frequency of new clients has begun to increase over the summer and shows no signs of slowing. “We saw it increase about two months ago. Benefit cuts are significant in this and also the bedroom tax. It catches up with people; one minute they don’t see it then suddenly they’re in arrears and debts are sky high. Sadly, I think it is going to get worse.” One client I spoke to at NGFB, a disabled mother of four children, also with disabilities, told me: “If it wasn’t for this food bank, I don’t know what we’d do. We’d probably live on thin air.” She had lost her income support earlier in the year and has had to live off the food that the volunteers provide while she waits for a tribunal to reinstate her living allowance. “I’m not holding my breath,” she says, “I don’t want to be on benefits, I’d love to work but with disabled kids and hospital visits and everything it’s impossible.”
Guildford Citizen’s Advice Bureau have issued 49 vouchers over June, July and August this year, more than treble the amount issued in 2012. “The main reasons are problems with benefits administration,” explains Ursula Quinlan from
Guildford CAB. “I think people who’ve got the most difficult time are not necessarily those on benefits but those termed the ‘working poor’, people who have worked hard but are on minimum wage. We haven’t yet seen the full impact of the benefit cuts and bedroom tax. We can’t predict how it is going to pan out.”
The charity Oxfam reports that the number of people using food banks throughout the UK has risen from 70,000 last year to half a million in 2013. Both Oxfam and the Trussell Trust, the UK’s largest food bank operator, take the position that the introduction of welfare reforms is directly responsible for the increase in popularity of food banks, something the Conservative Minister for Welfare, Lord Freud, denies. So for all that Guildford enjoys a reputation for apparent luxury and comfort, the rise in the number of food banks and the numbers of people now dependent upon their service remains a sobering reminder that too many at risk in our community live at the mercy of draconian welfare rules, where the simple ability to feed themselves and their families comes not from the government but from the charity and kindness of others.

FAO: PARENTS RE: TEENAGERS BY YOUNG REPORTER, BETH ROBERTS Cooperating with teenagers can be dangerous work. With vile mood swings, a vicious attitude and a general notion that they know better, it’s easy to see why they are the most common complaint of all parents. However you’ll be happy to know that they’re only taking all their emotions out on you because they love you most of all… Trust me, they won’t want to tell you how they’re feeling if you constantly nag them with a never ending list of probing questions: “how was your day?”, “who did you ‘hang out’ with?” and,
most commonly, “are you ok?” I think it’s safe to say that most teenagers will reply with either some form of primitive grunt or an extremely sarcastic comment… So keep it short and sweet. If your child looks visibly distressed, let them explain to you why they are in such a foul mood; they will definitely come to you if they feel they need to. They honestly know that if they have any real problems, that their family are there for them and will do anything to make sure they are ok. In short, nagging gets you nowhere!
Don’t nag, listen to your teenager, be calm, and remember that your teenager is one big ball of emotion…
Now, most teenagers will claim that the most important thing that a parent can do is listen. This is probably the most important piece of advice that a parent can get. Before you get angry and condemn your teenager, remember that they honestly think that they’re right! Every teenager thinks that they know what’s best. This means that one of the best things you can do as a parent is play along. Listen to their side of the story then you can judge whether they really do have a point. If you do not agree with them, then this is the time to give them advice, without raising your voice! So, to conclude, I think that the most important guidelines for surviving being the parent of a teenager are: don’t nag, listen to your teenager, be calm, and remember that your teenager is one big ball of emotion. Any time spent with a teenager will show you that they can switch emotion in the blink of an eye and that any insignificant event may prove very distressing. So take time to observe your teenager and make sure that they aren’t facing too much pressure in education, social situations and even family life...

BUSY LIZZY TODDLER MUSIC Into the G Live studio plodded an array of little people, toddlers of various ages and sizes – here’s a low-down on Toddler Music… THE TEACHER: Nicky, a bubbly lady who was quick to welcome everyone. Knowing other kids from classes before and remembering their names was quite impressive. THE CLASS: A fun session of nursery rhymes with some actions and percussion instruments for the kids to tap, rattle, jangle or bang along with. THE ATMOSPHERE: Comfortable, relaxed and fun. THE DRESS CODE: Casual. Any clothes would have been fine as the kids didn’t do much movement. Overall impression was that it’s an ideal class for kids of around 2. Toddling youngsters and kids just learning songs and with an interest in noises would get a lot from it. My daughter was pushing the boundary of age at 3-and-a-half, while my son, at 1, was more suited to the level of what was done but he was a touch too young in terms of staying in one place and listening etc. That said, I think two year olds would love it! I’d recommend giving it a go and seeing if your kids enjoy it…

What is it about the prospect of carving a pumpkin that makes us all turn into children? This October we’ll be heading to Secretts to find out.
O
ver the last decade or so Halloween has seen its popularity soar, and now gives bonfire night a run for its money. Long gone are the days of simply buying a packet of sweets just in case you get a group of children knocking on your door. The little ones now embrace this festival and all its ghoulishness. So for the second year in a row I am off to Secretts in Milford to embrace all things pumpkin-related with my children and husband (well we need someone to carry the huge orange squashes…) Pumpkin week at Secretts happens to coincide with half term - which means that you can visit anytime between Sunday the 27th October and Friday the 1st November. The main aim of the day is to, of course, pick your pumpkin - and this part of your trip involves a free tractor ride for the whole family, on your quest to find the perfect potential jack o’ lantern. Once this task is complete and you have paid for your bounty, it’s off to engage your children in some Halloween crafts. They can try making a paper plate mask and make your own ghost, using a ping pong ball and a handkerchief. There is also Winnie the Witch storytelling and a children’s entertainer - which means that you will have very happy children by the end of the day. Finally for those parents that need to stock up on sweets for the stream of trick or treaters, the farm shop has one of the best confectionary departments in the area. While it might not be super close to Guildford, Godalming and Cranleigh, New Haw does boast one of the best farm shops and pick your own farms in Surrey, and one very special seasonal crop in particular pulls in the crowds from all over at this time of year…

PUMPKINS!
rockford Bridge Farm has been a favourite of foodies for the last 28 years. Owned by fifth-generation farmer Paul Smith and wife Caroline, the 78-acre farm in New Haw grows a staggering variety of crops all year round, selling the fresh fruit and veg in their renowned farm shop. The shop also sells homemade cakes, breads and pies, farmhouse cheeses, ice cream and dairy products to name a few and also boasts a fresh meat counter with handmade sausages alongside fresh poultry and fantastic joints of meat. But this being October, there’s one crop that will be drawing visitors young and old to the farm: pumpkins. “We have been growing pumpkins for at least 15 years,” says Caroline Smith. “We’ve become renowned for having a huge selection of small, large and unusual shaped pumpkins. So people that want beautifully shaped, unmarked pumpkins come to Crockford.” But what about pumpkin as an ingredient? “I think people are willing to try more unusual foods,” she says. “I think
squashes and pumpkins are very popular in pies, mixed with cinnamon and honeys, or cut into slices and roasted or put into soups. But I’d still say that 80% of our pumpkins are sold to carve.” The rotund squashes prove an annual draw for people eager to get carving for Halloween. RECIPES - PUMPKIN PROVIS Pumpkin Bread The idea of baking bread can sometimes be off-putting. This pumpkin bread is a great starting point, as it’s half cake, half loaf and - dare I say it - fairly failure proof. Serve it with butter or apricot jam.
• 500g Strong White Flour • 280g Water • 150g Slow Roasted Pumpkin • 1 tsp Quick Yeast • 1 tsp Salt (5g)
1. Heat oven to 180 degrees or gas mark 3. 2. Cut the pumpkin in half, scoop out the seeds. 3. Cut the pumpkin meat into chunks. Drizzle in oil and put in the oven to cook. 4. 10-20 mins later the pumpkin meat should be nice and soft. If it’s going black, it’s burnt. Let it cool and then blend to a puree. 5. In a large bowl, weigh out the water and then add the yeast. 6. In a smaller bowl, weigh out the flour and then add the salt. 7. Pour the flour into the water and mix. Don’t worry if the mixture is a bit dry. The pumpkin will add the moisture. 8. Now knead the dough 15-20 seconds. Let the dough relax for a minute before you add the pumpkin. 9. Mix in the pumpkin slowly, not all at once. Fold the pumpkin into the dough. 10. Once all the pumpkin has been folded into the dough let it stand for 10 minutes to relax. 11. Fold the dough on itself 10-15 times do not knead it heavily. 12. Leave to prove in a warm room till it has roughly doubled in size. 13. Turn out the dough and mould into your tin. 14. Leave to rise again then cook for 50 – 60 mins or until a skewer comes out of the middle of the loaf clean.
Pumpkin & Lentil Soup This is my favourite soup recipe of all time. The lentils really give it the most wonderful texture, turning this into pure comfort food. You may consider not adding in the parmesan rind DON’T, as I promise you once you have tried the soup, will never make it again without this secret ingredient. • 2tbsp olive oil • 1 large brown onion • One butternut squash, peeled, de seeded and cubed. • 2 large carrots peeled and chopped into slices. • 1 litre of chicken stock (vegetable can be substituted) • Handful of red lentils • Parmesan rind
1. Heat the oil in a large pan and sauté the onions until soft. 2. Add the squash and the carrots and sweat for 2 mins over a low heat. 3. Add the stock and lentils and bring to the boil. Reduce to a simmer and add the parmesan rind. 4. Cook for 50mins then remove from the heat. 5. Remove the parmesan rind and mash the soup with a potato masher until the consistency is to your liking. Season with lots of black pepper and serve with crusty bread.

Chicken and Pumpkin Curry This is a simple curry that packs a lot of flavour. It is best served the next day once the pumpkin has soaked up all the spices. This is a great dish to have on an autumn evening.
• 2 tbsp peanut oil • 600g single chicken breast fillets, cut across the grain into 2cm pieces • 1 brown onion, halved, finely chopped • 2 tbsp finely grated fresh ginger • 2 garlic cloves, crushed • 1 tbsp ground turmeric • 1 tbsp ground cumin • 2 tsp ground coriander • 400g pumpkin or butternut squash, deseeded, peeled, cut into 2cm cubes • 375ml (1 1/2 cups) vegetable stock • 1/4 cup loosely packed coarsely chopped fresh coriander • Pinch of salt • Rice to serve
1. Heat oil in a large heavy-based saucepan over medium-high heat. 2. Add half the chicken and cook, stirring, for 2 minutes or until brown. Transfer to a bowl. 3. Reheat pan and repeat with remaining chicken. 4. Reheat pan and add the onion, ginger and garlic. Cook, stirring, for 3 minutes or until onion softens. 5. Add turmeric, cumin, ground coriander and cook, stirring, for 30 seconds or until fragrant. 6. Add the chicken, pumpkin and stock, and bring to the boil. 7. Reduce heat to medium-low and simmer, covered, for 15 minutes or until the pumpkin is tender. 8. Remove from heat and stir in half the fresh coriander. 9. Taste and season with salt. 10. Meanwhile, cook the rice. Serve with the remaining half of the coriander sprinkled on top of the curry.

Rich Lee visits Kinghams, Shere This year Kinghams celebrates its 20th anniversary, and chef and proprietor, Paul Baker has hardly left his kitchen in all that time ..
T
he gorgeous village of Shere, popular with tourists, film crews and anyone seeking a slice of quintessential English village life also boasts one of Surrey’s best little
restaurants and one of its longest established. This year Kinghams celebrates its 20th anniversary, and chef and proprietor, Paul Baker has hardly left his kitchen in all that time. “We had a big celebration this April to celebrate 20 years in business,” says Paul, “and people who have been coming to the restaurant for twenty years came on the night; it was great to see old friends.” Having trained at the Royal Lancaster (now the Lancaster Hotel in London) and then ran his own catering business, Paul took a gamble in 1993 and opened Kinghams in Shere. “I had everything on the line for this place, put my house up for security and so did my father. After about year three, things really took off. It’s been hard work for a lot of years to build up a good customer base. We now have people who come from all over the place, some from London, Epsom, Guildford obviously and locals, but we’d never survive on local business alone.”
we’re so successful,” agrees Paul, “it’s always someone’s birthday!” It’s evident from our fabulous meal tonight that Kinghams’ reputation for outstanding ‘modern English’ cuisine is well founded, but here all the frills and thrills are mainly found in the flavours on offer although the kitchen makes a little presentation go a long way. To start with, a simple, classic goat’s cheese and caramelised onion tart on dressed leaves sang with a swirl of rosemary and crème fraîche dressing. Another starter, a trio of crab came with a Thai crab cake, crab and avocado timbale and crab bisque sweetened with brandy. Three fantastically tasty crab concoctions on one dish. Win.
Having never seen a mains of pork belly I didn’t like the look of, I couldn’t resist ordering the dish from the set menu. More than just a square of gorgeously tender, succulent pork, it was the extra layer The place seems to be a big draw for anyone after of sweet, smoky flavour from the spiced apple a place to celebrate: “that’s one of the reason’s and chorizo that sent me

We finished off with a decadent, smooth mint chocolate truffle torte and a peach and raspberry crumble, a dessert as homely and comforting as Kinghams’ cottage interior: a space of low, wooden beams, an inglenook fireplace, soft lighting and intimate seating that feels like nothing less than a piece of Shere brought inside. Outstanding food, a first class wine list, a charming setting, friendly front-of-house team –many of whom are an extended family; some have even grown up at Kinghams- makes this little restaurant a fantastic destination and whose success seems assured for another twenty years, at least.

I swore that I’d never get into this crazy industry. I actually started working in hotels and then moved into the pub trade. It’s probably been 12 years now. What was the first pub you worked in? The Axe & Cleaver in Dunham Massey near Manchester. What makes your pub different from the rest? It’s a cliché, but there’s something for everyone: great foreign beers, Fuller’s ales and a mix of beers from local breweries. Of course we do great pub food too! And we’ve got a fantastic team here who I love. Recommendations? Frontier lager is Fuller’s first craft beer; it’s been flying out of the taps. Food wise, the pork belly is definitely a house favourite. Favourite tipple? I’m a champagne girl. If I can’t afford, then a good Vodka-based drink is always a winner. Gastro pubs or traditional taverns? Gastro. Friday nights or Sunday afternoons? My weekend tends to start on a Sunday afternoon when everybody else is finishing. I’m usually working Fridays which I enjoy; I’d be bored otherwise. Favourite pub in the Guildford area? I’m not not going to say mine am I? The Kings Head. Favourite pub elsewhere? My parents’ pub in the village I grew up in, The Blue Bell near Peterborough. If you were a drink, what would you be? Describe your business in no more than twenty words (we know that’s a challenge…) Genesis is an independent publishing house creating signed, handcrafted limited edition books, with internationally recognised authors, for readers in 50 countries.
How did the business start out? My late father, Brian Roylance, founded the firm. One day, as a young publisher in 1974, he visited the British Library and discovered historical manuscripts such as Capt. William Bligh’s Log of HMS Bounty. He was so inspired by the first-person narratives, and by the intricate bindings in which they were preserved, that he asked the Library permission to publish a facsimile. The ensuing book sold out quickly – and Genesis Publications was underway.
To date what has been your greatest success? Success is when our author is completely satisfied and a new book exceeds the reader’s expectations. This weekend

BUSINESS PEOPLE Genesis Publications Ltd we met with rock icon, artist and poet Lou Reed. He was delighted with his new book, Transformer. The last customer I spoke to lives in New Zealand. He cites Eric Clapton’s SixString Stories, published this spring, as our greatest yet. For me, these are two encouraging success stories.
What key skills of yours have been vital to your success so far? My sister Catherine and I grew up in and around Genesis Publications, assisting my late father. We gained an immersive experience of how the business works and a deep respect for the firm’s ethos. Today we are comanagers, and I would describe this tacit understanding as a kind of shared, core capability. We have developed a line of communication that has been a valuable source of new ideas and inspiration.
What has been your biggest challenge? One great challenge has been to manage the succession process and to cultivate a sense of business ownership, as opposed to custodianship. Family businesses often lean towards conservatism and favour resilience over growth. But there remains the fundamental element of risk-taking, inherent to any enterprise.
What has been the best advice you’ve ever received and who gave it? Last year, I enjoyed working with a professor of organisational strategy who advised me that there are two twin worlds of ‘possibility’ and ‘probability’. We ought not forget, he counselled, the third realm of ‘potential’. It’s a somewhat mysterious piece of advice, but I like it.
What motivates you? What motivates me the most is reflecting on the ways a business can create value beyond profit. Exploring how a business extends out beyond the formal boundaries of a firm is, for me, a great source of motivation.
What do you do to relax? I read a lot and spend time with my wonderful wife. We go cycling and love to travel. I enjoy seeing friends and playing guitar in a three-piece band.
Finally, what is your advice for budding entrepreneurs setting up their own business in Surrey? Some knowledge of marketing, finance and strategy is helpful. Start-ups need something more: entrepreneurs who can think divergently, generate multiple possibilities and make new connections, all the while trying to limit the downside. It’s a myth that entrepreneurs enjoy excessive risk-taking; successful entrepreneurs limit their losses as much as possible.

Parkour, it’s now more about living a lifestyle that we’ve fabricated from climbing on roofs and what some people perceive and call ‘breaking the rules’. We try to keep away from what most people regard as fun like going out drinking instead, we’re trying to see as much as we can, travel as much as possible and physically progress at the same time.
Q. Parkour or free running? What’s the difference anyway? A. By dictionary definition Parkour would be
efficient movement, moving through an urban or rural environment in the fastest way possible. Free running brings in more aesthetics, where you’re interacting with your environment rather than getting from A to B in the fastest possible time.
Q. Occupational hazards? A. Plenty. I’ve had a couple of nasty ones. To
be honest injuries are quite rare in Parkour. I’ve been pretty unlucky, I’ve knocked out 4 teeth, broken my collarbone. I had scans last month because they thought my lungs were bleeding and all this nasty stuff. I think I’m a one-off. Parkour is more calculated than other extreme sports. We know our jumps to the millimetre and know if we can make it or not.
Q. What’s the worst injury you’ve had? A. The worst that’s affected my training is
probably my collar bone, which I broke in Lisbon last February. It was through a move which I initially thought I couldn’t do and I probably should have trusted my gut and not gone through with it…
Q. Your favourite destination to indulge in Parkour? A. I went to a university campus in Belgium,
which they call the Speeders City, it’s just a metropolis of concrete; it’s unbelievable.
Q. When did you get into Parkour? How do you go about practicing? A. I started in 2005, I was about 11, which is quite
young compared to others. It was from watching a documentary on Channel 4, ‘Jump Britain’. In terms of training, it’s turned into more of a fun day out over the past few years, rather than going out to do a jump 1000 times until you’ve got it. You get to a certain level when it’s not really regarded as training anymore.
Q. Best local location to run in? A. Most people adapt to their local areas. My
training is very different to someone who’s from Norwich due to architecture and the general layout of a town. I love Guildford - I was the lone jumper for a while but I keep seeing kids training which is good. Everyday I’m usually on the rooftops of Guildford. There’s always a long term challenge on your local patch.
Q. Best part of the job? A. Probably the achievement of making a jump
that you’ve been looking at for years. The views you get at the end of the day are amazing and the people you meet are amazing. Some of my best friends live half way across the world.
Q. Favourite place to hang-out locally? A. Rooftops mainly. The glass dome (the roof of
an unnamed building on North Street, G’Ford) is pretty sweet. I love the castle grounds too.
Q. When you’re not running and jumping from building to building, what does your free time consist of? A. Usually editing the videos we’ve been making
of us jumping from roof to roof! I’d probably say camerawork is my second love. Everywhere we go is aesthetic, so there’s always a cool shot.
