Blue Panorama begins Chartered Flights to Maldives

Poland’s Itaka and Maldivian travel agency Sun Ocean begins chartered flights by Italian airline Blue Panorama between Maldives and Poland. A welcoming event along with a press event was held at Velana International Airport to welcome the crew of the first flight. The event was supported by MMPRC, Maldives Airports Company Limited, Uhc hotel and Blue Panorama.

The event was inaugurated by the Minister of Tourism, Mr. Ali Waheed. This event will be the country’s biggest resort organised football event. The tournament is scheduled to take place in Eydhafushi, Baa atoll’s capital, between 1 – 20 July 2019, with one game to be played each day. It is open to all ages with each team required to have a minimum of three players under 21 years old. Roshan Madurawala Country Manager of Ace Travels Maldives and Ace Aviation Services Maldives We sat with this aspiring young man to hear his story on how he drive sales, with the equal enthusiasm and energy he puts to give the ball a whack at his favorite sport. Can you tell us a bit about your professional experience and history? I left school at the age of nineteen in 2006 and joined SriLankan Airlines as an intern at the Flight Operations Department. My responsibilities as a trainee included overseeing crew rosters. Six months later, I was transferred to SriLankan Airlines e-Commerce division where I worked around the airlines’ internet booking engine and attended online inquiries. I also worked close with SriLankan Holidays, the airlines’ leisure arm. Six months later, I received an opportunity from Aitken Spence PLC, a Sri Lankan blue chip conglomerate with operations in South Asia, the Middle East, Africa and the Pacific. I was offered to work in the Maldives for a SriLankan Airlines Passenger Sales Agent (PSA) for Ace Travels Maldives, a joint-venture between Aitken Spence and Inner Maldives Holidays. It was an opportunity too good to say no to, so I immediately accepted the offer and began my journey into the Maldives in October 2007, twelve years ago. This was also the first appointment of a SriLankan Airlines Passenger Sales Agent directly by the airline. My position was a Ticketing and Reservations Agent and worked in the counter along with my manager, supervisor and colleague. We began the operation with five staff including a finance officer. Our performance in sales was very aggressive in the market then, by December 2007 we were able to capture a market share of 25 percent. By August 2008, we were able to increase our market share by a further 10 percent totaling to 35 percent, and by the end of the year, we had 40 percent. In 2009 September, I was promoted as the Head of Operations, by then we have captured 55 percent of the SriLankan Airlines market share in the Maldives sales territory. In the Aitken Spence Group, I was also the junior in line to be the next Manager. In December 2010, our market share surpassed the former General Sales Agents. A year later in December 2011, Ace Travels Maldives was appointed as the new General Sales Agent of SriLankan Airlines in Maldives. We also established Ace Aviation Services Maldives, under which we continued the SriLankan Airlines General Sales Agent. I was the Business Development Manager for both, Ace Travels Maldives and Ace Aviation Services Maldives from November 2011 until end of October 2016, and have been serving as the Country Manager

for both companies since November 2016. Please tell us how Ace Travels Maldives and Ace Aviation Service Maldives, distinguishes itself from other competitive brands in the segment? It’s the people and our team here that drives us! We may have our unique ways at the work environment, but to be very frank, I have not seen or heard of this unity and family bond that we have here among others in the same business. We have very passionate people onboard who brings in several years of experience and are responsible in what they do every day. It is a crucial factor to have the right people to attend your customers. The essence of our strength is backed by our local partner as well as internationally.

Mark Hehir

General Manager of Amilla Fushi and CEO and Curator of The Small Maldives Island Co With a career spanning over 35 years in the hospitality industry, Mark Hehir has been instrumental and responsible for transforming TSMIC to be one of the most sought after contributors to career development and employment in the hospitality industry in the Maldives. We sat with Mark for a comprehensive, exclusive interview. You were involved in a number of opening task forces, and you were the opening GM of Huvafen Fushi by Per Aquum as well as Maldives Hilton Rangali (now Conrad Maldives). What have you learned from these experiences?

A little over a year ago, you launched the Maldives Aficionado, a benefits programme providing concierge service, whilst rewarding loyalty. What have you learned and do you have significant TSMIC Ambassadors coming back to immerse the Maldives experiences from your local experts? I think that we have learned that there is a great value in loyalty and a way to develop it is through giving, not just a physical discount on the price, but giving a reward in terms of an experience. We have learnt that the guests really appreciate those experiences, the barbecues or the special activities they can do in the water. Our local experts offer very simple things, whether it’s taking them to a sand bank excursion or sculpting out a manta ray and have a couple or a family experience a sandbank with a bunch of boys from a local island. There is lovely sense of privacy they have and a connection made through those 4-5 hours that spur our customers to re-book it again. So, I think it is very important that we stay focused on developing more of that and keep pushing our customers to understand the value of the experiences. Those are the things they tell you when they leave, not the size of their room or the performance of the Bose system. It could be a once-in-a-lifetime experience that their child had with one of our staff or the local experts, and that’s what Maldives Aficionado is rewarding its loyalty customers with. You have a culinary background and Amilla Fushi boasts a plethora of dining venues and gourmet experiences. Which one is your favorite and why? I guess, we have been quite passionate last two years to develop the Japanese restaurant. So, “Feeling Koi” is a name that came to me, which is a bit tongue and cheek, since it is a fun and humorous play towards an overwater restaurant where one can have an experience with their loved ones and family. I have been in Japan for two years and I know very well that if we do Japanese food in an authentic Japanese style, it will be a hundred percent failure, because Japanese people will not

approve of it and the customers will not like it. However, the style here is bringing together some little twists with Latin influences, it is popular around the world, and so we wanted to do that. I guess my last culinary background was to be in Japan and get that feeling, so there’s some dishes on that menu that are strongly influenced the way how I want people to eat it, in a tapas style, not like as you have your starter and I’ve my starter. It should be a shared approach, which is very much about family and connection. So that’s how “Feeling Koi” came about the name, the feeling, and that is definitely my focus and favorite.

Moreover, I think that’s one of the world’s biggest issues; it’s really hard to eat clean and healthy food. But, in the resorts we should be very mindful that you can’t just go to a shop or to the supermarket and buy an avocado and have a nice salad. They have to rely on us, so we’ve made a conscious effort that is going to be easy, you should be able to eat clean and healthy food ,whether you are a vegan, or you’re following keto or you’re are having a nut allergy. You shouldn’t be the strange person asking for this. It should be actually part of the menu. So, if you look at our menu’s now, we’ve really involved a lot of that. And the juice bar and café over at Javvu Spa is just a highlight of that. That’s what food in restaurants, cafes are progressive, and attracting amazing customers, whether it’s just a simple café or not. They got their food and culture right. Many hotels suffer from legacy decision-making, which is based on the old menus from chefs who came up with them ten or twenty years ago. However, the real customers buying in the street; sometimes there is a gap in the hotel. What we want to do is close that gap, and put some reality into the situation, so it is not hotel food. Which can sometimes be the worst food in the world. Hotels and Chefs can really suffer from getting caught in their own bubble. You can quote me on that. And finally, is there a key learning or pearl of wisdom you would share with an ambitious, junior member of staff? I mean it’s probably cliche, but you got to follow your dreams. You can start anywhere in this industry, and that is what’s so exciting about hospitality. You can connect to your peers, find someone at your level that is doing well, and find out why they’re doing well, and then start to align yourself with the good things they do. Don’t focus on the negative things that are happening inside and decide to join that club. Join the club that is with the positive vibes and energy. Whether its your supervisor who is doing well. Don’t be jealous of him, and find out how you can learn from him and then go to the next stage. It’s very simple in this world if you eliminate all the negatives, and focus on trying to do something better - you’ll get there. The young ones need to just focus on that side of life; the Sunnyside. Is there anything else you would like to add or highlight? Yeah, I just think that what we spoke about is so important. The hospitality industry is taken extremely seriously in this country, from an educational point of view and supporting ways up. We would love to see more beautiful Maldivian women in the hospitality industry. We don’t have enough ladies working in the resorts, and I really can’t understand why they can’t get into all those positions. I really support that.

1 ltr fresh cream 200g sugar 4 pcs kaffir lime (zest and juice) 12 egg yolks 15g brown sugar (for caramelizing) Coconut shell or ramekins

Method 1. Boil the fresh cream, Kaffir lime zest and sugar together over medium heat until bubbles appear round the edge, take the pan off the heat. 2. Whisk egg yolks until they are light, frothy and evenly coloured. Add in Kaffir lime juice and add in the cream a little at a time. Stir continually until combined. 3. Pass the mixture through sieve. 4. Pour mixture into coconut shells or ramekins and arrange in baking dish. 5. Pour very hot water into baking dish to reach halfway up the coconut shells or ramekins. Place the baking dish in an oven with 140 degrees C for 60 minutes. 6. Remove the Crème Brulee from the water and allow to cool down. Refrigerate for at least 2 hours. 7. Using a torch, melt the sugar and form a crispy top and sprinkle Kaffir lime zest on top.
