Chef Antony began his culinary journey as a Kitchen Helper at Sheraton Full Moon Resort & Spa in 2007. From 2007 to 2016, he honed his skills and passion for the culinary arts. Following a return to his roots in Sri Lanka, Antony embarked on a five-year culinary odyssey across various esteemed properties in the Middle East. In a nostalgic turn of events in 2023, he reunited with his professional origins, joining Sheraton Maldives as a Junior Sous Chef. Driven by an unwavering passion for his craft, Chef Antony showcases a dynamic flair for creativity and a keen embrace of new culinary ideas and trends. Beyond the kitchen, he finds solace and balance by dedicating his free time to drawing and photography.

Langiri is a traditional Maldivian folk performance that evolved from the Thaara dance in the early 20th century during Sultan Shamsuddin III's reign. Today, it features dancers holding two decorated sticks, known as "Langiri Dhandi," about 2 feet long, and performing rhythmic clapping in two parallel rows. Each dancer strikes the sticks of their three front-row neighbors while moving their upper bodies. Typically, Langiri performances include six to seven songs with traditional drums and are staged in the evening for entertainment or special occasions.

Etihad Airways and Egyptair sign MoU to deepen relationship

Etihad Airways, the national airline of the United Arab Emirates, and Egyptair have signaled their intent to strengthen their partnership by signing a Memorandum of Understanding (MoU), to enhance commercial and operational ties to provide travelers with wider choices, higher quality services and increased value.

Antonoaldo Neves, Chief Executive Officer of Etihad Airways, said: "This agreement will help further deepen our codeshare with EGYPTAIR opening up seamless travel for guests of both airlines across our networks. It also lays the tracks for co-operation across both our frequent flyer programs and will enable us to explore collaboration on joint-marketing campaigns and promotions designed to stimulate and reward our customers."

Yehia Zakaria, Chairman & CEO at EGYPTAIR, said: “This MoU strengthens our strategic partnership with Etihad Airways, and underscores our commitment to providing our valued customers with a seamless travel experience and access to a wider network.

“I am confident that this partnership with Etihad Airways will not only benefit our passengers but also foster a stronger relationship between Egypt and the United Arab Emirates. We look forward to a successful collaboration, soaring to new heights together.”

The existing codeshare agreement gives customers of both airlines enhanced connectivity to destinations across each other’s networks, between Egypt and the UAE as well beyond Cairo into Africa and beyond Abu Dhabi into Asia. The agreement enables

guests to book their entire journey on a single ticket and have their baggage checked through seamlessly to their end destination.

This MoU will see codeshares between the two airlines extended, giving one-stop access for EGYPTAIR

travelers to more of Etihad’s network in addition to several destinations in Asia and Australia that already exist. Equally it gives Etihad customers seamless access to further destinations on EGYPTAIR Network, on top of the routes already in scope. *Subject to regulatory approvals

BeOnd Achieves ETOPS Certification

BeOnd has achieved a significant milestone by obtaining the Extended-range Twin-engine Operational Performance Standards (ETOPS) certification.

The certification process involves rigorous testing and demonstration of the airframe and engine's ability to operate within specified safety margins for a defined duration. BeOnd's latest achievement extends beyond the standard 180-minute ETOPS certification, allowing its aircraft to operate on even longer routes without necessitating a nearby diversion airport.

ETOPS certification is a regulatory approval that enables twin-engine aircraft to fly routes where, at certain points, the nearest suitable airport is more than 60 minutes away. This certification is crucial for airlines operating over large bodies of water or remote areas, ensuring that in case of an engine failure, the aircraft can safely reach a distant alternate airport.

BeOnd's successful acquisition of ETOPS certification not only enhances the operational capabilities of its fleet but also introduces new opportunities for more direct and fuel-efficient flight paths worldwide.

Emirates Powers Flights with SAF from Singapore

Emirates has begun using sustainable aviation fuel (SAF) as part of its fuel agreement with Neste on flights departing from Singapore Changi Airport, marking its inaugural SAF investment in Asia. Approximately 3.3 million liters of blended SAF have been integrated into the fuelling system of Changi airport over the course of the last few weeks.

Emirates is tracking the delivery of SAF into the fuelling systems, accounting for and assigning its environmental benefits through widely used and accepted industry methodologies. Earlier this year, the airline closely collaborated with Neste for the supply of 2.6 million liters of neat SAF in the fuelling systems of Amsterdam Schiphol airport.

The SAF being provided by Neste is produced from sustainably sourced and 100% renewable waste as well as residue raw materials, including used cooking oil and animal fat waste. SAF used as part of this agreement can be safely used in existing Emirates aircraft and airport fuelling infrastructure, and in neat form reduces lifecycle carbon emissions (CO2) by up to 80%* compared to using conventional jet fuel.

Adel Al Redha, Deputy President and Chief Operations Officer, Emirates said: “Emirates’ investment into Neste-produced SAF in Singapore marks a first step forward in our SAF adoption in Asia, a region that is primed to become a leading supplier of SAF, which continues to be in short supply. While the activation of this

agreement marks a milestone in our SAF journey in a new region, there’s still a lot of work to do. And as we procure SAF for the short term, we’ve got our sights set on longer-term agreements to help scale up a steady supply of SAF for our operations.”

Alexander Kueper, Vice President Renewable Aviation Business, Neste said: “We are excited Emirates has started using our Neste MY Sustainable Aviation Fuel at Changi Airport as the next step in our cooperation. It makes Emirates the first international visiting carrier using SAF at the airport produced at our Singapore refinery and supplied into the airport via our integrated supply chain. We are looking forward to continuing working together on scaling up the supply of SAF for Emirates’ operations.’

Emirates’ multi-faceted SAF strategy focuses on exploring opportunities to use SAF operationally wherever it is available in its network, share emissions reductions with corporate customers or freight forwarders where feasible, cooperate on longer-term SAF projects with reputable partners and support SAF ventures in the UAE with the potential to supply sustainable aviation fuel at its hub in the future.

Emirates currently operates flights from Amsterdam, London Heathrow, Paris, Lyon and Oslo with SAF. The airline also integrated SAF into the fuelling systems at its Dubai hub late last year. In 2023, Emirates was also the first airline in the world to operate two landmark demonstration flights from Dubai on the Boeing 777 and A380 with 100% SAF in one engine in partnership with Neste and other committed partners, supporting future certification where 100% drop in SAF is approved for commercial airline operations. Currently, SAF is approved for use in all aircraft, but only in blends of up to 50% with conventional jet fuel.

The airline has also committed USD$200 million for research and development (R&D) projects focussed on reducing the impact of fossil fuels in commercial aviation, and last

month became an industrial partner of the Aviation Impact Accelerator (AIA), based at the University of Cambridge. Emirates intends to play an active role in sharing its knowledge and data, as well as insights with AIA to support the development of cutting-edge tools and solutions to reduce the long-term impact of commercial aviation.

The airline is a member of the Solent Cluster in the UK, an initiative focused on low carbon investments with the potential to create a Sustainable Aviation Fuel (SAF) plant that can produce up to 200,000 tonnes (200 kt) per year if operational by 2032.

Emirates is also a founding participant of the UAE research consortium Air-CRAFT, focused on developing, producing, and scaling sustainable aviation fuel (SAF) technologies for the industry.

Soneva Fushi and Soneva Jani Target 50 Percent of Energy Being Derived from Solar Power in 2024

Soneva, the award-winning sustainable luxury resort operator, is making significant strides in its commitment to renewable energy, with a focus on solar energy in the Maldives. For 2024, both Soneva Fushi in the Baa Atoll and Soneva Jani in the Noonu Atoll have targeted close to 50 percent of their energy needs to be generated from photovoltaic (PV) sources, thanks to the addition of new PV installations. Previously, the PV system at Soneva Fushi had supplied around 12 percent of the resort's energy load.

Soneva has been able to expand its development of solar power based on the USD 10 million funding provided by German-headquartered Aareal Bank in December 2022. This has seen Soneva Fushi’s solar installations total 2.55MWp (megawatt peak) of power and 2.7 MWh (megawatt hours) of battery capacity, while at Soneva Jani, the installations total 2.75 MWp of power and 2.0MWh of battery capacity.

Soneva is leading the hospitality sector’s transition towards a zero-carbon future, with aims to achieve fully carbon-free operations across its Maldives resorts.

To better harness the full potential of solar energy, Soneva is already exploring the potential of installing floating solar panels in the ocean surrounding its island resorts, in addition to new land-based locations. For example, the new Soneva Secret 2024 resort, located in the Maldives’ remote Haa Dhaalu Atoll, is

implementing floating solar panels, which are projected to cover nearly 90 percent of the resort’s energy load. The resort also features an integrated ice storage system for air conditioning, setting a new standard for a higher penetration of renewable energy.

Soneva is also further expanding its existing sustainability strategies, such as rainwater harvesting and load shifting, to maximize the utilization of renewables, while assessing alternative storage technologies to further enhance energy usage. These include flow batteries that offer longer lifespans and the capacity to store substantial amounts of energy, and thermal storage to sustain and regulate renewable heat.

Coco Collection Launches 'Nurturing Minds' Programme at Coco Bodu Hithi And Coco Palm Dhuni Kolhu

Coco Collection has launched their new initiative, ‘Nurturing Minds’, by hosting their first session on mental health and well-being. Nurturing Minds will be an ongoing effort by Coco Collection throughout the year to revolutionize mental health awareness by recognising the power of prioritizing easy access to emotional well-being for their associates.

Atmosphere Core Announces Two New General Managers

International hospitality company Atmosphere Core announces two key appointments. Philippe Claverotte, a suave hotelier and a senior leader of the company, has been appointed as the Vice President of Operations and General Manager of RAAYA By Atmosphere and continuing with the long-standing tradition of embracing women in leadership, OBLU SELECT Sangeli appoints Jenni Hartatik as General Manager.

Philippe Claverotte’s career spans almost 30 years and includes reputed luxury hotel groups and resorts in twelve countries. This appointment is his seventh leadership role in a luxury property. A French national, Philippe joined Atmosphere Core in 2019 as the General Manager at Atmosphere Kanifushi. He moved to VARU by Atmosphere as General Manager in February 2021, where he led the team for three years. Philippe has a strong track record of success within the company, including the recent rebranding and relaunch of OBLU NATURE Helengeli by SENTIDO.

Jenni has continuously honed her skills through specialized training and international exposure gained from hands-on experiences with high-revenue markets across Asia, Africa, Europe, and North America. She is fluent in English, Mandarin, and Indonesian, and has also studied Japanese, Cambodian, and German.

Mr. Kudahetty is a respected commercial leader with over 20 years of experience in the travel industry. He has extensive expertise in airline management, hotel and destination management, and regional business development in South Asia and Far Eastern markets.

Dr. Sachin Bansal

Dr. Bansal has exhibited strategic leadership in the Indian tourism sector, creating multiple flagships in culture and heritage. With two decades of experience, he has utilized design thinking to harness new markets and co-create with host communities.

Ishan Koul

Ishaan Koul is a seasoned hospitality professional with a B.Sc. (Hons) in Hospitality and Restaurant Management from IIMT, Gurgaon, completed in 2009. His career began with training at Four Seasons Sydney and a role at Crowne Plaza, Gurgaon, followed by international experience at Holiday Inn Orchard City Centre, Singapore. Since joining Naaz Hotel Consultants Pvt. Ltd. in 2013, he has specialized in hotel operations and led their feasibility

division. After a stint with Radisson Hotels Group, he returned to Naaz in 2020 and currently heads their feasibility division, advising international and domestic hotel chains entering the market. Besides work, Ishaan is passionate about sports and acting.

He led the Maldives Government Tourist Information Office in Germany from 2002 to 2004, overseeing tourism marketing across Europe. Visit Maldives Pro 2024 Launched by Minister Abdulla Rafiu

The highly anticipated Visit Maldives Pro 2024, part of the prestigious Bodyboarding World Tour, was officially launched by Minister Abdulla Rafiu. Alia Donates 150 Horsepower Yamaha Engine to Ministry of Climate Change, Environment and Energy

Alia has donated a Yamaha 150 horsepower engine to the biosphere reserve maintained by the Ministry of Climate Change, Environment and Energy.

The Ceremony took place at the Ministry of Climate Change, Environment and Energy. Yamaha's outboard engine was handed over to the Minister for Climate Change, Environment and Energy Mr. Thoriq Ibrahim, by Alau Ali, Managing Director, Alia Investments.

Speaking on the occasion, Minister Mr. Thoriq Ibrahim congratulated the management and employees of Alia Investment on the completion of 60 years of its business. He also thanked the company, which has a long history of business in the country, for taking the initiative.

Minister Thoriq noted that this was

the first and most valuable gift from a private company to the Ministry of Climate Change, Environment and Energy. Furthermore, he expressed hope that today’s partnership between Alia and the Ministry of Climate Change, Environment and Energy will be beneficial for both sides.

A total of 564 areas in 109 countries have been identified as biosphere reserves across the world, and UNESCO studies in Baa Atoll have shown that the atoll has attained a global status of natural resources and species richness. The natural resources available in the atoll are maintained by a department of the Ministry of Climate Change, Environment and Energy. Alia has donated the engine to the Ministry in the hopes that it can be an effective support in maintaining the rich biodiversity of this Atoll.

Embarking on his culinary journey as a Kitchen Helper at Sheraton Full Moon Resort & Spa in 2007, Antony Christy honed his skills and passion in the culinary arts until 2016. Following a return to his roots in Sri Lanka, Antony embarked on a five-year culinary odyssey across various esteemed properties in the Middle East. In a nostalgic turn of events in 2023, he reunited with his professional origins, joining Sheraton Maldives as a Junior Sous Chef. Antony is a chef driven by an unwavering passion for his craft, showcasing a dynamic flair for creativity and a keen embrace of new culinary ideas and trends. Beyond the kitchen, he finds solace and balance by dedicating his free time to drawing and photography.

DATE PUDDING

INGRIDENTS :

● 140ml Water

● 130gr Chopped Dates

● 6gr Baking Soda

● 130gr Sugar

● 44gr Butter

● 120gr Cake Flour

● 88gr Egg

● Vanilla

BAKLAVA ICE CREAM

INGRIDENTS :

● 300ml Whole Milk

● 300ml Heavy Cream

METHOD:

1. Place the date and baking soda into a bowl.

Pour over boiling water and allow to stand for 20 minutes.

2. Add butter, sugar and vanilla and mix well.

3. Take out the pan and add egg then mix well.

4. Fold through the date mixture and flour until they are well combined.

5. Spoon mixture into a prepared pudding mold.

6. Bake on 180°C for 12 to 15 minutes.

● 200gr Honey (Wild Flower Honey or Orange Blossom Honey works best)

● 50gr Sugar

● 5 Egg Yolks

Cinnamon Sauce (Makes 2/3 cup)

● 1/4 cup (60g) heavy cream

● 1/4 cup (60g) whole milk

● 1 large egg yolk, at room temperature

● 75g semisweet chocolate, finely chopped

(I used a mix of 50g 60% dark chocolate and 25g 38% milk chocolate)

● 1 sheet leaf gelatin or 1 teaspoon powdered gelatin

Nuts

● Tablespoons (25g) finely ground pecans

● 2/3 cup (80g) all-purpose flour

● 1/3 cup (67g) organic or demerara sugar

● 2 tablespoons (14g) cocoa powder

● 1/8 teaspoon kosher salt

● 5 tablespoons (70g) cold unsalted butter, cut into cubes

● 1 to 2 teaspoons whole milk, as needed

METHOD:

Honey Ice Cream

1. Pour the milk, cream, salt, and sugar into a saucepan.

2. Heat the cream mixture until it just starts to simmer.

3. Take off the heat.

4. Whisk egg yolks in a small bowl (about 1 minute).

5. Slowly whisk in ½ cup of the heated cream mixture into the egg yolks to temper.

6. Pour the egg mixture into the remaining cream mixture in the pot, whisk constantly.

7. Stir custard mixture constantly over medium heat with a wooden spoon until the back of the spoon is coated with custard.

8. Pour custard through a fine-mesh strainer into a heat-resistant bowl.

9. Stir a few times to cool it down.

10. Pour honey into custard, starting with 2/3 cup, until you get the intensity you like.

11. Chill in the refrigerator for at least four hours (or overnight).

12. Taste your custard mix to make sure there is enough honey. Add in more if needed before churning.

13. Churn the custard in your ice cream maker for 25 minutes.

Cinnamon Sauce

1. Whisk together 2 tbsp of water with 2 tbsp corn starch.

2. In a small saucepan, combine cinnamon, salt, brown sugar, sugar and 1 ½ cups of water.

3. Stir over medium heat until sugar dissolves.

4. Add cloves and vanilla.

5. Bring to a boil and then let simmer for 20 minutes.

6. Remove from heat.

7. Add orange blossom water (if using).

8. Allow to cool completely (hot cinnamon sauce will melt your honey ice cream)

What strategies can be implemented to ensure the harmonious coexistence of community-based tourism and luxury tourism within the Maldives?

First thing is to admit its existence and better classification with professional marketing strategies. I always recommend hiring a consultant who has managed any brand within top 100 brands around the globe.

The issue is about digesting the matter while expanding tourism in Maldives. Not to ask if it was the chicken or egg which came first.

Looking back to the days Maldives started tourism, guesthouses and hotels played an important role. It wasn’t only resorts. Maldives must have various price ranges and different products to offer. Something for everyone.

Tourism has to be a friendly affair for the traveler with convenience. Price has to be matching the service they receive. Service charge must be based on the service they get, as a choice.

That’s an excellent question about a balanced strategy in promoting luxury and community-based tourism in the Maldives. Strategies like developing cross-promotional initiatives, involving island communities in tourism development, introducing sustainable practices, and providing training to local communities, youth, and school leavers are crucial.

These steps foster a harmonious coexistence between luxury tourism and community-based tourism, creating a balanced ecosystem that supports economic growth while preserving culture, history, and traditions.

It's essential to cater to the diverse needs of luxury travelers and local communities to ensure a sustainable tourism industry in the Maldives.

It's crucial to take a holistic view of our entire industry and economy, rather than focusing narrowly on specific sectors. We need a forward-looking perspective that spans at least 50 years. Initiatives such as conferences, exhibitions, medical and educational tourism, shopping, and trade tourism can be effectively pursued. Currently, our industry is approaching a critical juncture.

I believe there are key areas that warrant attention:

Leadership and Governance:

We should enhance the leadership of our tourism governing bodies by appointing knowledgeable and experienced individuals. Bringing in international experts to address gaps in knowledge and skills would be beneficial. Leadership must prioritize sustainable tourism practices, balancing the interests of both community-based and luxury tourism.

Expertise and Strategy Development:

It is essential to incorporate expertise in finance, resource management, and the implementation of effective controls. This entails hiring professionals, both locally and internationally, who possess strong backgrounds in sustainable tourism practices and strategic planning.

Infrastructure Development:

We need to develop robust infrastructure, such as transport networks and airport terminals, while ensuring environmental sustainability. Addressing issues like waste management, cultural preservation, and maintaining cleanliness in popular tourist areas like Male, Hulhumalé, and other islands is crucial to maintaining a pristine environment for visitors.

Financial Responsibility and Governance:

We must shift away from viewing tourism solely as a means of revenue generation or political leverage. Implementing transparent financial management practices will ensure that tax funds are used to support sustainable tourism development rather than political interests.

Education and Development:

Investing in education and skills development programs for local communities is essential to enable them to actively participate in and benefit from tourism. This fosters a sense of pride in preserving cultural heritage and natural resources.

By implementing these strategies, the Maldives can cultivate a balanced tourism environment where both community-based and luxury sectors can thrive together. This comprehensive approach will not only benefit local communities but also safeguard the environment and enrich the experiences of visitors.
