Highlights Of An Inspiring Career Chef Martin Davies

INTERVIEW

Undertaking the inspiring journey of Chef Martin Davies, we got to see how difficult a life of a chef really is and the challenges that they are faced with every day. Kickstarted with his beginnings, we finally got to see the difficulties of a chef ’s life, as well as the highlights of his career. 1.What ignited your passion for cooking? As far back as I can remember I was sitting in my grandmother’s kitchen (It was one of those old country style solid stone work surface) watching her cook she made everything from bread to desserts, that’s where it all began for me. 2.What or who has been the biggest influence in your cooking style? I have worked for many great Chefs and cooking Guru’s over my career but to mention a single one out would be impossible. I like to take as much knowledge from each one as possible but if I had to mention a specific chef, it would be the Roux Brothers. I started my career with them, and all my base recipes and technics are based around what they taught me. 3.How does catering for VIP parties in a renowned establishment such as the Dorchester differ from creating a VIP in-villa private dining experience at Six Senses? Here at Six Senses we create an Emotional, crafted experience for the guest’s getting to know them on a personnel level and blending the Food and Beverage offerings around the guest’s and the environment to create unique form of hospitality. In a larger city Hotel you rarely get to leave the kitchen on most occasions.

6.What has been the highlight of your career to date? I was invited to cook at the James Beard house in New York, as one of NY’S upcoming talent’s show; that always strikes out. Also having great chefs like Alain Ducasse to choose the resorts where I’m the Chef for a vacation, is probably the biggest honour a chef could have. Also one night Marco Pierre White came in as a late booking! I’m glad to serve him and happy to say he loved it. 7.What is the greatest challenge when running a kitchen in the Maldives? To be honest I can’t think of one. It’s been a true pleasure working in the Maldives. The day to day job of a chef is a challenge in itself but with the right leadership, mentoring, belief from above it’s a great place to live and work. 8.Is there any one role a kitchen would struggle to operate without? Yes, every role is critical in the kitchen; it’s like a cog in a well-oiled machine: you remove one and it’s not long before you breakdown. 9.What advice would you give to someone aspiring to be a chef? Enter a kitchen with open eyes and ears, learn as much as possible and try not to rush, it’s a lifelong career where you never stop learning. Be prepared to sacrifice your time and dedicate your energy and you will succeed.

4.What inspires the flavours for your ice cream and chocolate studio? Everything around us, the colour of the reef, The sunset, The coral, The Maldivian aromas and spices. The simplicity and indulgence of ice cream is in itself inspiring, 10: What is your view on culinary competitions? Fresh Lime and mint from the organic garden churned into a sorbet on a hot day is I think it was great to be part of the FHAM last year and did really well which in perfection. turn gave lot of credit to my chefs dedication as it takes hard work, passion and commitment. Take home some homemade fudge with a hint of Maldivian toasted coconut, is a great way to end your vacation here. 11: What do you consider when designing a new menu or dish? The ingredients, (locally sourced if possible, we have some influential farmers 5.If you could source any ingredient irrespective of price what would it be and within our Atoll). Then making sure the menu is balanced and has a fresh, wellness how would you use it? feel, packed full of natural flavours, married along with an elegant cookery style and I think good cheese! We get some great ones from around Europe but some are ‘fun and quirky’ presentation. not that fresh when it arrives. A good cheese will change the entire taste of your favourite meal.

Julius Gabor, Man At The Helm Of Beehive Hotel Mr. Julius Gabor is one of the main people responsible for the success of the Beehive Hotel, one of the most successful hotels in the Maldives. Our team here at The islandchief were extremely pleased to get an interview of Mr. Julius who showed us that managing a high class hotel in one of the best travel destinations in the world was not an easy task. Mr. Julius also explained how he managed to leap into the hospitality industry and become successful at a young age in addition to giving us a rare insight of how things are run at the Beehive Hotel. 1) As a first question, we would like to ask you about your beginnings. How did you get into this field? I used to be film maker back home in the Philippines, but I always wanted to try new industries so when I got the opportunity to come here to the Maldives, I readily accepted it. Mostly because I believe that we filipinos and even most Asians are blessed with this natural gift of being good at hospitality and understanding customers and their needs.

6) What about the hotel industry? Maldives is a very well-known travel destination due to its beautiful resorts, So I believe that we should bring the resort atmosphere that the guests crave so much into the hotel industry as well. 7) How would you describe your staffs? And what is your relationship with them? I have a great Team, they are extremely dedicated to their work and makes everything around here much more easier. They are also very eager to learn and gain knowledge as well. I have a very good relationship with my staffs and they assist me in everyday tasks and without them I am sure the hotel would not run as smoothly.

2) That must have been very difficult for you to switch fields just like that. How did you overcome these challenges? I always try to deal with problems and challenges in a calm manner. It was indeed very difficult at first because I had to face different people and deal with them on everyday basis, but then again when I thought about it, it wasn’t all that difficult from my previous area of work. 8) Do you try to mentor your staffs? Yes, I do. I share my knowledge and ideas with them as much as possible and 3) What are the main responsibilities of your job? take into account their views and ideas as well. Well, as the hotel supervisor I am taking full leadership of all departments. I am tasked with making sure everything runs smoothly and accordingly. I have 9) Could you tell us some of the upcoming new developments and ideas for to oversee and supervise all my staffs and their tasks in addition to addressing the Beehive Hotel? any issues or problems that may arise and fix them as soon as possible. I would say that I try to implement the Filipino way of hospitality in the hotel as I believe that it is in that area where my knowledge is the richest. However, 10) Do you have any last words that you would like to add? I also try to constantly try and improve with new developments because I I am thankful for having smart Directors, for giving me the opportunity don’t believe that we should be staying still on the same level. and believed that I can do it, I would say that the beehive will be constantly developing to reach higher levels and I would be working hard to ensure that I Another important thing that I have tried to improve is the service of bring the resort atmosphere to our lovely hotel. the hotel, because I believe that it is one of the most important aspects of hospitality. ravelling is an activity enjoyed by the world, to experience the cultures, architecture and activities of different countries. There has been one rule in travelling, to reach as many destinations as possible. Travelling to destinations you admire the most or to travel to those places again and again. Repetitive visits made to destinations are for several reasons, to enjoy their natural phenomenon, or to experience the country’s exotic flora and fauna, or to view magical skies at a certain time of year. Maldives, a destination chosen for its blue skies, glowing white beaches and the incomparable underwater beauty. Recognised as a diver’s paradise and a tropical destination of exotic romance for couples, or just to enjoy a spacious beach with your family. Through wisdom passed from generation to generation, we learnt of our two monsoons, ‘Hulhangu’ where we experience rough seas and rainy days, and ‘Iruvai’ where it’s a celebration of the sun, the sparkling seas and full spectrum sunsets. With metrological knowledge accessible through handheld devices, every traveller plans their time at Maldives to enjoy sun tanning on a beach or to swim in crystal clear lagoons that graduates to different shades of blue.
