Air France Spreads Its Wings To The Maldives
T
he National airline of France, Air France has announced that it will be starting direct flight operations in the Maldives in November of 2017. The airline confirmed its plans for operations by stating the details of its venture in one of the most highly rated tourist destinations of the world and plans to have two weekly flights between Paris, the capital of France and Male’ City, the capital of Maldives. The flights from Paris will arrive in Male’ City on Thursdays and Saturdays, and will return to Paris on Thursdays and Sundays, the airline stated. Air France will be using Boeing 777 aircrafts, which has 312 seats, 28 of them allocated for the business-class, 24 for the premium economy-class seats and 260 seats for its economy-class in its operations. The CEO of Air France, Mr. Franck Terner stated that starting flight operations in Maldives was part of its efforts to strengthen its services in top leisure destinations of the world. “The arrival of Air France in Malé, strengthens the company’s presence on
top-of-the-range leisure destinations, a growing market where Air France, with the quality of products and services it offers its customers, is a leader,” said Air France’ CEO Franck Terner. Air France’s operations will also help hurdle the currently existing barrier of no direct flights between the Maldives and France. Visitors from France travel to the Maldives through airlines such as Qatar, Etihad and Sri Lankan which transit at a number of countries en route to the archipelago. Over 30 foreign airlines are currently operating to the small island nation, with additional charter flights and domestic flights also flying to Velana International Airport during the peak tourist season. The Maldives Airports Company Limited (MACL) had also announced earlier that three international airlines will be starting operations to Velana International Airport this year with the other two airlines, believed to be Air China which is the national airline of China, and an Indian airline.
Etihad Airways Boosts Its Flights To The Maldives For The Peak Season

tihad Airways has announced plans to launch additional flights to the Maldives during the peak summer period. Between 1 July and 17 September 2017, the airline is planning to operate four weekly flights on the Abu Dhabi-Malé route, in addition to its existing daily flights, increasing frequency to the idyllic Maldives to 11 services a week. Operating as a late night service every Thursday, Friday, Saturday and Sunday, the new flights will be served using a single-aisle Airbus A320 aircraft with 136 seats. Etihad airways has stated that the services would provide additional connectivity to and from destinations in Europe and the Gulf region, including Edinburgh, Jeddah, Madrid, Moscow and Zurich.
The capacity increase will cater to high demand during the peak summer season. The announcement comes as the Abu Dhabi-based airline completed five years of operations to the Maldives. The summer expansion will be supported by a two-class A320 aircraft operating the route, with 16 Business and 120 Economy seats. Overall connectivity to and from key destinations in the GCC and Europe will increase and, new twoway connectivity will also be established from markets such as Edinburgh, Jeddah, Madrid, Moscow and Zurich. The additional flights will operate every Thursday, Friday, Saturday and Sunday between 1 July and 17 September 2017.

he Board of Directors of Trans Maldivian Airways recently had their board meeting in a most unusual location…under the sea! Scuba diving equipment was not necessary and they didn’t even get wet. The first underwater Board Meeting in the Maldives by TMA took place in the World’s largest all glass underwater restaurant at Hurawalhi. Hurawalhi Maldives, the newest resort in the Lhaviyani Atoll, opened in December 2016. The luxury resort is home to ‘5.8 Undersea Restaurant’ where guests can dine on exquisite culinary masterpieces amid the spectacular surroundings of the reef, 5.8 meters below the surface of the ocean. The reef provided an ever-changing view for the TMA Board and made for a meeting like they’ve never had before!
Maldives Tourism Promotion Board Limited Formed
A
new company titled as ‘Maldives Tourism Promotion Board Limited’ has been formed to further promote the tourism industry of Maldives. The new company which came into existence by a Presidential Decree on 9th February 2017 will see the country step up its efforts to establishing itself as one of the top premier destination for tourists from all over the globe. While the Maldives Marketing and Public Relations Corporation (MMPRC) is already in operation to promote Maldivian tourism, the Presidential Decree publicized today by President Abdulla Yameen stated that one of the main purposes of the new company is to advertise and promote Maldives as a tourism destination in other countries in addition to expanding the country’s status as a top tourism destination and to monitor the events and occurrences within the industry.

News from Beneath the Surface at Six Senses Laamu In addition to this project, the Resident Marine Biology Team at Six Senses Laamu has created a detailed coral reef survey to monitor the recovery rates post the El Niño bleaching event in 2016. This will allow the team to evaluate both short- and long-term ecological impacts on the entire reef ecosystem and the data will be used to ensure more bleaching resistant species are planted on the artificial reefs and in the coral nursery in the future.

AAMU, Maldives –Six Senses Laamu is surrounded by the infinite blue waters of the Indian Ocean and every day the resort is committed to making the operation more sustainable while simultaneously raising awareness, to guests and hosts alike, about the importance of marine conservation. Staying true to the commitment of protecting the marine life of the Laamu Atoll, Marine Biologists Jenni Choma and Oscar Ignetik have started new projects on turtle identification and coral health and recovery. In July 2016, Jenni and Oscar began identifying the Laamu turtle population. A mere six months later, the database currently stands at 138 unique individuals: 67 Hawksbill and 71 Green turtles. Each turtle can be recognized as an individual via photo identification
as the pattern of scutes on their face is unique. The sightings database created will allow the Resident Marine Biology Team at Six Senses Laamu to estimate the total populations of both Green and Hawksbill turtles in Laamu and to better understand the movements and behaviors of these species. To ensure the identification process and the interaction with turtles does not have a negative impact on their environment, behavior and movements, the Resident Marine Biology Team has created the Six Senses Laamu turtle code of conduct. Having been trend setters in the Maldives with the creation of the first code of conduct in for Dolphin Watching, the team is hopeful that the turtle code of conduct will also become widely adopted in the Maldives ensuring that every encounter is a positive interaction and does not negatively impact the turtles, their movements and their environment.
Six Senses Laamu continues to support the research of Manta Trust and this relationship continues to grow from strength to strength. One of the highlight of the partnership in 2016 was another first in the Maldives; a six-week intense study conducted with Dr. Mark Deakos, founder of HAMER (Hawaii Association of Marine Education and Research) in which nearly half of the resident population of 117 manta rays were accurately sized via paired laser photogrammetry. The technique, never before used in the Maldives, is highly championed for its non-invasive nature and is highly accurate for measuring wild free ranging manta rays effectively. The project results were submitted to International Union for Conservation of Nature (IUCN ) and were accepted for presentation at the country’s first ever Marine Symposium in October 2016. Six Senses Laamu has also partnered with Blue Marine Foundation (BMF), a charity organization dedicated to creating marine reserves and establishing sustainable models of fishing. In the Laamu Atoll, the focus is on the grouper fishery as the populations of groupers throughout
the Maldives are suffering from mismanagement and overfishing. Two members of BMF and the Marine Research Center team are on site gathering baseline data on the grouper fishery within the Laamu Atoll and studying grouper spawning aggregations. The team will be the first to identify length-maturity relationships of grouper species within the Maldives, which will then be used to inform policy makers of sustainable catch size limits. They are also fostering local support for sustainable fishing and conservation through an educational and environmental awareness (EEA) program. Jenni and Oscar have also begun a dolphin sightings database to see patterns in their movements, understand the local population better, and in the long term try to identify individuals and family pods. The underwater world and the reefs surrounding Six Senses Laamu has had a busy and exciting 2016. The good and hard work of the team has not gone unnoticed and they were honored to have been the only hotel in the world to make the shortlist for the 2017 Ocean Awards, the preeminent prizes for marine-conservation initiatives administered by Boat International and the Blue Marine Foundation. Six Senses Laamu is excited about the many marine and environmental protection related projects on course and in development at the resort and the Resident Marine Biology Team looks forward to sharing more exciting news and data collected from these ongoing projects.

Grant Jefferies gave us a brief insight into his beginnings and the many challenges that he has had to overcome in order to spearhead one of the most exciting projects in the country in the form of Kandima Maldives.
1. Tell us your story. What was your journey to the Maldives like? And how did this lead to you becoming the General Manager of Kandima Maldives? I was drawn to the hospitality industry at a very young age, cleaning glasses in my father’s hotel. I am lucky in that I have been able to turn my passion for hospitality and customer service into an incredible career. Travelling and working in hotels, resorts, cruise ships and casinos around the world set me on a long and successful career path in hospitality. I have been fortunate to oversee the launch of numerous luxury resorts in the Maldives, the opening of the sub-continent’s largest Spa Resort managed by Six Senses and played a significant role in bringing Formula One Racing to India while VP of Operations at Jaypee Hotels and Resorts. I was also the youngest appointed General Manager of the Soho Grand Hotel in New York City. With over 30 years in the hospitality industry under my belt, with experience spanning the Pacific, Europe, USA and Southeast Asia, I am very excited to be back in the Maldives. My objective as General Manager is to apply my vast experience and expertise to Pulse Hotels & Resorts’ newest venture, Kandima Maldives. Kandima Maldives is a new and innovative product for the Maldives and we are all very excited about its launch. 2.How do you make sustainability and luxury travel work hand in hand at Kandima Maldives? What has been the most notable change in the travel industry from your perspective since you first started working in it in the Maldives? The Maldives has proven its resilience in the market downturn. The expansion of the airport and entrance of new airlines has enabled access into key markets such as China, Middle East and Europe. The Maldives has, and I believe will continue to benefit from its destination branding, in particular the one island, one resort concept. The travel industry has moved away from traditional notions of ‘luxury destination’ resorts. aldives Living Expo 2017 was held from February 16 to February 18 with a multitude of opportunities for its visitors to compare prices and pre-book apartments, gain information about upcoming hot real estate deals. Organized by Highrise, Maldives Living expo 2017 was officially launched at the National Art Gallery by the Vice President of Maldives National Chamber of Commerce and Industry (MNCCI), Mr. Ismail Asif. The 28 stalls at the expo featured both international and local companies. More than 20 parties took part in this year’s expo. The main purpose of the expo which has been held since 2013 is to showcase living and lifestyle products. The Main sponsor of this year’s expo is Sea Life Global with Apex Reality Group which is a subsidiary of TATA Housing as a co sponsor. Highrise reported that more than 20 companies are participating in this year’s expo and welcomed hundreds of visitors and was indeed a very lively event with exhibitors such as Ooredoo, increased the real estate and service industry components in 2016.

Q- JOHN, WHEN DID YOU FIRST KNOW YOU WANTED TO BE A CHEF?
Cooking has always been of a keen interest for me, but knowing that I wanted to be a chef only came much later in life. Introduction to chef life began when I was in high school with a part time job working evenings and weekends in hospital kitchen as a steward/cleaner. That was the first time I ever encountered any professional cooks, and thought it looked like a lot of fun so I decided to give it a try. Q-CAN YOU TELL US ABOUT YOUR CULINARY BACKGROUND AND WHAT BROUGHT YOU TO THE GILI LANKANFUSHI MALDIVES?
As a Dutch Canadian with dual nationality, I left Canada for Europe to pursue a career as a Chef in 1995. Since then, I have had the pleasure of working in multiple high profile hotels and Michelin star restaurants across 17 different countries. For me, the attraction to Gili Lankanfushi was the existing international reputation for food and with my experience and knowledge, I saw an opportunity to bring things to the next level. Q -WHAT DOES YOUR RESORT OFFER TO ITS VISITORS IN TERMS OF GASTRONOMY?
The dining experience at Gili Lankanfushi is like no other, we take guests on a gastronomic journey in Gili style with a combination of organic, island grown vegetables and the finest seasonal produce. We bring Maldivian cuisine to live by blending flavours of modern European culinary artistry with the natural flavours of the Indian Ocean. The subtle flavours and delicate touches that is often playful or dynamic reflect the culinary concept of Gili Lankanfushi and my personality on a plate. Q -HOW WOULD YOU BEST DESCRIBE YOUR COOKING STYLE?
My cooking style is simply Modern European Cuisine, however the longer I stay in the Maldives the more it takes on the local flavours of the Indian Ocean.
Q- WHAT IS YOUR TOP RECOMMENDATION YOU THINK GUESTS SHOULD TRY OR DO WHILE STAYING AT GILI LANKANFUSHI?
My recommendation would be to enjoy every minute guests have on the island and to do as little or as much as they want, as most people will only visit the Maldives once in their lifetime, so I would encourage them to make the most out of it. Personally, I would suggest for all guests to experience the destination dining – “Dine under the stars” concept we have to offer, where guests are able to dine at exquisite locations around the island, such as our very own “One Palm Island” and our floating “Castaway” platform. Q-WHEN IT COMES TO PLANNING A MENU, WHERE DO YOU BEGIN?
Only one word explains it, seasonality. We look at what is available, what is fresh, what is at its very best. Inspiration for the menu comes easily, if you start from there. 7: Q-WHAT FOOD TRENDS OR INGREDIENTS ARE YOU CURRENTLY FOCUSED ON?
We try to avoid specific food trends and define our own food focus based on the ever changing set of menus based on seasonal quality ingredients that never go out of style. Q- HOW DO YOU SELECT YOUR INGREDIENTS AND WHY?
As with every resort in the Maldives we have many suppliers, both locally and internationally, offering many different things. We try to select specific suppliers to supply the things that they offer best. By focusing on specific regional seasonality we can offer our guests some of the world’s best quality ingredients all year round. DO YOU THINK WE CAN PROMOTE MALDIVES AS IN A CULINARY DESTINATION?
Absolutely yes, as I mentioned earlier, there are many resorts, many chefs offering some completely fantastic cuisine here in the Maldives. We have access to some the world’s freshest markets, making the Maldives a wonderland for foodies.

Pasteurized Eggs
E
ggs are the most complete food in nature in addition to being the most widely used natural ingredient for food processing. Egg protein is the highest value protein in the food chain with a biological value of 93.7%, other comparable values include 85 % for milk, 76% for fish and 74% for the best quality beef. Examples of Biological values Whole egg 93.7 Milk 84.5 Fish 76.0 Beef 74.3 Soybeans 72.8 Rice, polished 64.0 Wheat, whole 64.0 Corn 60.0 Beans, dry 58.0 Another amazing fact about eggs would be that it has natural built-in barriers to prevent bacteria from entering and growing. Its shell, cuticle, shell membrane and yolk membrane are all barriers against outside contamination. However eggs are not immune to everything such as Salmonella enteritidis, Campylobacter spp, Listeria monocytogenes which is caused from ovarian transmission i.e from a sick bird or shell infection caused from external sources. Pasteurization remains the best way to minimize or prevent microbial contamination. Approximately 50% of all eggs used in Europe are Pasteurized eggs. Pasteurized eggs are eggs that are cooked briefly at a high temperature and then cooled. The yolk must reach a temperature of about 138F. Eggs scramble at a much higher temperature, so it is possible to heat the yolk to pasteurize it without cooking the egg. The process of Pasteurization was invented by French scientist Louis Pasteur during

the nineteenth century. In 1864 Pasteur discovered that heating beer and wine was enough to kill most of the bacteria that caused spoilage, preventing these beverages from turning sour. The process achieves this by eliminating pathogenic microbes and lowering microbial numbers to prolong the quality of the beverage. Today, Pasteurization is used widely in the dairy industry and other food processing industries to achieve food preservation and food safety. In many countries, use of pasteurized eggs is mandatory in food service industry. This is because when a restaurant serves customers, it serves people of all sorts. Some with low immune levels, the sick such as the elderly or younger age groups who might get affected by even low levels of microbial contamination from eggs or their shells Pasteurizing eggs in their shells is achieved through a technique that uses precise time and temperature zones within water baths. Pasteurizing eggs in their shells can also be achieved through a process that involves treatment with ozone and reactive oxygen species under high and low pressures, followed by replacement with an inert gas, such as nitrogen, the eggs are then coated with food-grade wax to maintain freshness and prevent environmental contamination. Current European legislation requires liquid whole egg to be pasteurized at 64.4°C for a minimum of 1.5 minutes. This time/temperature relationship destroys all pathogens and reduces total bacterial counts to a low level. After pasteurization, the egg is rapidly cooled to below 4°C to await packing. Double jacketed tanks with chilled water ensure strict temperature adherence. Pasteurized eggs are stored in a controlled environment achieved through intricate building designs. Cleaning schedules using, Chlorine, peroxide based chemicals, foam cleaning, regular Fumigation is carried out to maintain the air quality of the storage units as well as the quality and freshness of the products.

What are some of the challenges that you have faced in the field? Could you please tell us some of the difficulties that you might have faced with FHA Maldives, and how you overcame them? At the beginning when we setup exhibitions in the Maldives nobody knew how to handle anything. There were no set rules or guidelines to follow. Even Dharubaaruge didn’t know how to charge us. The single largest problem that we face is that Maldives does not have the infrastructure to host a proper exhibition conference or convention of any sort and we ask the government to consider investing in this kind of infrastructure.
We also have by our side a strong network of partners in Sri Lanka, India, Maldives, Seychelles, U.A.E, Africa and Europe and today we are a leading Organizer for Exhibitions and Conference in Sri Lanka, Maldives and in the South Asian Region.
What were your main objectives with FHA in the Maldives? To ensure that the hospitality industry of Maldives has one main platform to source their products and services and thereby finding the latest trends and methods exchanging ideas and networking under one roof.
What do you think of the progress that the tourism and hospitality industry of the Maldives has made? How can it progress even further?
FHA Maldives also partners with the industry such as chefs guild of Maldives housekeepers forum and hotel school we try to give back something back to
Chef Guilds of Maldives (CGM) and Chef Guilds of Lanka (CGL). The is organized in association with Faculty of Hospitality and Tourism Studies, Ministry of Tourism Arts and Culture, Ministry of Economic Development and Maldives National Chamber of Commerce and Industry. The involvement of all these organizations and institutions of Maldives makes it the Official Exhibition and Culinary Challenge for the Hospitality Industry of Maldives. The International Culinary Challenge has long stood as the only official International Culinary event of the Chefs Guild of Maldives. Organized in collaboration with the Chefs Guild of Lanka and supported by the World Association of Chefs Societies (WACS), it is a three-day competition mainly and attracts around more than 500 chefs of different nationalities from over resorts all over the country. The event is reviewed by WACS certified judges from overseas with Individual organizational achievements at the event recognized globally. It fills a huge gap in the booming tourism industry of the country as the only event of this nature held in the Maldives.

Since the inception of FHA Maldives we as the international partners of Dhivehi Expo conceptualize and network this event with the rest of the world. We are seeing a growth with added value every year and we see a lot of potential for this event to be one of the largest in south Asia. What are some of the plans that you would like to implement in the future for the exhibition? We are looking at more synergies to create more concurrent events different forums for all sectors in the resort, restaurants and guest house industry. Going forward, what are some of the visions you have for the industry? The biggest problem of the hospitality industry is human resources as Maldives is almost solely dependent on foreign labour it is high time Maldives seriously looks at developing human resources from Maldives to take the main positions of the industry. What would your final message be for our readers?
