COMMENTARY FASHION ….IT STARTS WITH A THOUGHT Since I started to gravitate toward and inside the fashion circus, one question has obsessed my thoughts,” What is the mental process that involves the creation?” I found that the answers to this question are countless. Social status, childhood, drug addiction and art addiction but; mostly, being born a genius. The 20th century has left us pages and pages on the argument. And I don’t think this scenario is reserved to the mere figurative arts. How is art created? It starts from a necessity. The necessity of self-expression that some individuals feel the need to fulfill. A will for affirmation and recognition. Fashion wasn’t born a muse. It rose to the rank only during the 20th century. Fashion will never be art, according to Gabrielle Chanel “Fashion has to die to leave space to trade. “ We are used to observe art and not wear it, we don’t cry in front of a dress or listen to its symphony, we don’t drop jaw as if it was Nijinsky and its unnatural jumps on stage, so we won’t perceive a Balenciaga precious gown as a masterpiece…but we should, because, indeed, it is a masterpiece! Think about architecture; to make a dress it’s not as different than building a home. The couturier has to keep in mind measurements, proportions, angles and corners. He cannot use a heavy wool overcoat to make a shirt, or fur to make pair of pants (although for a mere sense of provocation it has been done). So that means the weight and aplomb of the fabric has to be considered before the couturier engages in the making of a the garment. Clothes are like structures, and if one takes a look at a 17th century dress, architecture comes to mind for the amount of details that puts together the garment. The choice of the color pallet is extremely important too; I’m referring here not to the mass production of clothes but to the single orders placed by the privileged. A couturier had to keep in mind the skin tone of its rich customers, along with the form of her body for the fitting, always kept in the atelier and constantly updated to the “swing of weight” of the customer. So a “dress maker” must be some kind of an artist to be able to deliver such a superficial product and it has to be considered that, most of the couturiers, had studied architecture. To be able to stitch together two pieces of fabric was not an easy task. Hours and hours of silent and relentless work on a dress. Chanel used to go around with her scissors hanging from her neck and make the adjustments herself. Herds of premieres (the women who make the dress possible) around a gown. To bring to life the drawing the couturier has thought . Fashion feeds on art, at least so it was when it started. It fed on romanticism and depression, on love and beautiful paintings, on music and ballets. Fashion teams up with the other sister muses to deliver its contribution to art. Chanel designed the costumes and sponsored the Diaghilev’s “Ballets Russes”, along with taking care of Igor Stravinsky’s monetary situation. Gianni Versace, less than a century after, did the same thing with Roland Petit, Maurice Bejart and Twyla Tharp, Giorgio Armani with Bob Wilson. It’s hard to believe that this superficial world, started off on the right foot. Not so superficial after all.

10 Fundamentals of a Man’s Wardrobe Building a wardrobe that won’t go out of style is a long-term investment, helping to keep your clothing budget in line while looking your best. The first step, however, is understanding the basics, the fundamentals in which to build from. You need to rely on a few stock items that can be used for any situation. Following are the 10 must have, absolute, fundamental items that every man should keep on hand — and on the rest of his body.

1. DARK GRAY SUIT — Every man needs at least one suit, so make it gray, though, navy is a good second choice. Gray works in the office, an interview or an emergency when you need to look your best. If you can afford one suit, make sure it’s quality and conservative. Two or three button, single-breasted suits look good on nearly every body type. Avoid pleats and go for flat front pants. Before making your purchase, know your measurements. Make sure everything fits comfortably because you will own it for a long time.

2. WHITE DRESS SHIRT - Like a good sports coat or blazer, a white dress shirt, matches well with anything but also gives you a dressed up appearance, even if you forgot to shave or comb your hair. Don’t skim on the quality because this shirt will get a lot of miles and needs to last. Make sure the fabric is strong, such as 100% cotton Oxford with a two-ply, 80-thread count finish. Avoid buttoned collars because this will limit its versatility, looking too casual. 3. NAVY BLUE SPORT COAT OR BLAZER — Nothing is more versatile and good looking than a well-cut, well-made sports coat or blazer. It can be worn in a variety of situations, such as work, hanging out with your friends at a bar or a formal get together. Navy blue


COVER works well with anything, easily going with jeans, a polo or button down. There are many styles to choose from, but avoid a blazer with gold or brass buttons. Look for something made of medium weight, worsted wool so you can wear it all year. As for the cut, keep it simple: no double-breasted or four button styles. Select a classic two button with a single vent in back and medium width lapels. 4. DARK JEANS — Ten years ago, this wouldn’t have made anyone’s list but times have changed. Dark jeans are now a staple for a man’s wardrobe. They can be worn at a nice restaurant, most work places that don’t day trade and that nightclub. Go for something with comfort, quality and no rips. Avoid baggy and skinny, but just right. Stay away from designer labels that visibly proclaim their status on your bum. It might be cool now, but it won’t be in a few years. 5. BLACK DRESS SHOES — A good pair will match most suits (except brown) and you can’t go wrong with a lace up look. They’ll be used a lot, such as work or any occasion that calls for some formality. Therefore, take the plunge for quality with fine leather and stitching from a reputable brand. Avoid square toe and look for something rounded. If you’re on your feet most of the day, I’d recommend purchasing Ecco’s with their generous shoe sole design. To maintain your pricey pair, make sure to get a quality set of cedar shoes and shoe polish. 6. KHAKI/CHINO PANTS — These do well in the summer, running errands any day of the week or beating that deadline at work. You can even sleep in them. There are always debates as to the differences and origins of these types of pants, but that’s for another day. Point is, you need to own at least one or the other. Typically, khakis are the more casual style of the two, fuller in the seat and thighs. Chino’s are usually a lighter shade and with a straight through fit. Therefore, it depends on what you’re looking for. Both should be 100% cotton twill and a flat front. If they’re long, you can roll them up or get them hemmed. 7. SNEAKERS — It’s nice to relax in a classic pair of sneakers after work, hanging out with friends at a bar or walking around town with the lady. It’s important to get a subtle color that can match well with jeans,

or floppy in appearance. The V needs to be large enough to fit over a collared shirt but also small enough to fit over a T-shirt. If you plan to have one or two, select darker colors so it matches with everything, such as gray, navy blue or chocolate brown. 9. WATCH — This is the only accessory that made our list because it’s the most important. These days, guys use their cell phones to tell time, but when you have a classic rock on your wrist, nothing better reflects your personality along with a personal statement on your style. It’s a worthy investment, something that should last, but tread carefully because there are many options. The watch should be quality, masculine, but most importantly, something you feel comfortable wearing. Metal and leather bands are classic, but grosgrain is great for a casual look. Keep your sports watch in the gym.

Avoid anything with loud colors or flashy labels, as these will become useless after the fad fades. Personally, I stick with Converse Chuck Taylor’s or their higher end John Varvatos Jack Purcell’s. 8. V-NECK SWEATER — The V neck’s shape gives space for your collar, letting it open up naturally. This looks great over any dress shirt but also works well with a polo or T-shirt. Choose a sweater with ribbed cuffs, collar and bottom, fitting your build, so it’s not loose

10. POLO SHIRT — Another item that works well in many situations. Polo’s are a great summer shirt but also suitable for work, happy hour and wherever else your night may lead you. They come in a variety of colors but for a basic collection, start with navy blue, gray and dark green. Again, this is going to last a long time, so look for quality and comfort. Ralph Lauren is somewhat cliché, so look around for something unique. I’d recommend a slimmer fit polo with a soft finish, but ultimately, there are so many options it’s up to you. As tempting as it maybe, don’t pop your collar or button the top button.

They saw it coming a mile away. That white sock peeking out from beneath the cuff of the black trousers that were too short on you. Alright, I will give you the benefit of the doubt and assume your style missteps are less obvious than that. Maybe your necktie is missing a dimple. Still with me? It’s scientifically proven that others assess their impression of you subliminally and in a matter of seconds. Once you’ve been sized up, it will take a lot longer to repair any unfavorable opinions that have already formed. Even if you feel you’re versed in the dos and don’ts of men’s style and incapable of committing the sins of our fathers, read on - you might just pick up a tip or two that will take your game to the next level. Famed architect Mies Van Der Rhoe once said, “God is in the details”, and boy was he right! It’s the subtleties that matter most and even a minor adjustment can make all the difference between a great impression, or one that will have you banished to the corner, a fashion dunce in a belt and suspenders, resting your baggy bottom on a high stool. 1. Wear clothes that fit! You like your clothes roomy, don’t you? You like to be comfortable. Formless, unstructured clothes will make you look sloppy. Your ultimate objective is to appear put together. 2. Avoid the other extreme as well; you do not want to wear anything that is too tight on you. You goal is a fit that will highlight your attributes and flatter you every place else. 3. Everyone notices your shoes. This is such an understatement that investing more in your footwear than any other aspect of your wardrobe would be one savvy move.

4. Color coordinate your belt and your shoes. Don’t bungle this one, or you’ll never be forgiven. If you’re wearing brown shoes, loop on a brown belt. Black shoes require a black belt.

10. Lastly, we come to the enigmatic tie-dimple. A properly knotted tie has a dimple beneath the knot. Simply press your index finger just beneath the knot as it forms. While you cinch the knot, pinch the necktie between your thumb and middle finger and pull downward. Keep in mind the knot must hide the collar button, and it is essential for the tie to reach your beltline.

5. Do you telegraph designer labels? Unless you’re collecting residual checks from Ed Hardy or Tommy Hilfiger, ditch their name splashed across your chest, back or sleeve.

After all, it’s the subtlest details that get noticed, and convey the fact you possess the grace and knowledge to dress appropriately for any situation life throws your way. In short, you’re ahead of the pack.

DAVID TODD IS THE MODEL MAKER BY MATTHEW TOMASULO

His firm, David Todd Management, boasts the strongest men’s board in Los Angeles today, including male model superstars Nick Youngquest and Chad White. “I started working as an agent when I was 18, fresh out of high school. I know this business inside and out,” he says. According to Todd, the biggest misperception about modeling is that it’s easy. “It’s not easy to get in front a camera and shoot a thousand great images for a client,” he argues. “The pressure to produce that one perfect picture is enormous”. Personality and charm must shine through. Also vital for male models is taking care of their skin, working out, eating the right foods and maintaining relationships. These are tips every man can take to heart this summer – those who want to be models and those who just want to look like one.

How is it different from what you look for in a fashion model? A swim model can be a bit more muscular with bigger shoulders. A fashion model needs to be lean and defined. Fitting into designer clothes is key.

What do you look for in a male swim model? We look for a guy who has the perfect body. He needs to look great in any swimsuit he puts on, including speedos, box cuts, and board shorts. He has to have a great upper body, nice legs - no chicken legs! - and, of course, a great butt.

How often do you find someone who has the potential for a good career? It doesn’t come as often as I like. The model has to have determination and be willing to take direction in order to be successful. A pretty face is easy to find. The rest is hard work.

Why is height always important? There is a misconception out there that print models can be short. It’s simply untrue. A successful fashion model should be at least 6’1 so he can do all jobs including runway, catalog, advertising and commercials. Do you find that men from certain countries are more likely to have model potential? Great models come from all over the world. However, most of the beauties we represent are American. Although, we do have some gorgeous Australians, Brits and Canadians.

Q&A What attracted you to the modeling business? I loved that I could be creative and work with photographers, designers and interesting people. Also, traveling all around the world since I was nineteen has been a blessing. Was the goal always to launch your own agency?

How competitive is the industry for models? It is super competitive here in LA. It’s important to pull out all the stops if you want to stand out. Models must bring their A-game to castings. What is the hardest thing about modeling?

I feel like huge corporations have ruined our industry. Our models are not just a number on the wall here. They really like the personal attention we offer them.

The hardest thing is staying focused. Models should never allow other people to get in their heads and distract them from reaching their goals. They should always take direction from their agent. The second a model starts taking outside advice, that’s the end.

How competitive does it get between agencies to sign top talent? Often the larger chain agencies steal models from other agencies or scout them once all the work has been done from someone else. We don’t do that at my agency. We find models have more respect for their agents when they know that they did all the work to get them to the top.

What are your guys doing to keep in shape? They are doing yoga, pilates, P90-X, hiking Runyon Canyon, swimming and, of course, walking runways around the globe.

Most agencies will take on 100 guys and girls a year, just to see who rises to the top. Why have you chosen not to do that? It never works. Quality, not quantity, is our business approach. We would rather work hard on a few models so that each of them can get the attention they deserve. Less is more, trust me. Clients would rather a get a package of thirty great models rather than have to sort through 100 mediocre models.

What advice would you give to guys who simply want to look like models this summer? Get in the gym and get that summer body. Make sure those teeth are nice and white, and get a good tan.

MATINÉE LAUNCHES REVOLUTION IN SIN CITY

…WITH FOUR-DAY WEEKEND SPECTACULAR BY MARK DAWSON

Matinée is asking fans to “feel the revolution” this Memorial Day – the party revolution, that is. The festival that has become world famous for re-imagining the elaborate party experience with blazing pyrotechnics and production by Cirque du Soleil and Matinée Ibiza, returns to Las Vegas with the biggest dance festival of the summer. Taking place Friday, May 24th thru Monday, May 27th, MATINÉE Las Vegas Festival will play host to over 8,000 clubbers dancing to twenty of the world’s leading DJs at eight high-energy party events. “In todays over technologized world, people want a real interactive experience,” explains Paul Nicholls, part of the production team behind Matinée North America. “We combine fantasy elements from concerts, theatrical stage shows, Hollywood films and even video games into one giant offline spectacle.” “A Matinée party is all about awe and extravagance,” continues Matinée North America’s Patrick Crough. “We partner with the hottest and most cutting-edge acts from around the world. For this year’s MATINÉE Las Vegas Festival, we’ve teamed up with the Las Vegas production, Absinthe. We are integrating several of their amazing

Cirque acts into our main events. It will be breathtaking.” Matinée launched over fifteen years ago in Ibiza. Since then, it has evolved internationally with lavish events including CircuitFestival Barcelona. When party founders decided to expand the brand into North America, they asked Crough and Jake Resnicow to oversee and produce all parties in the USA and Canada. Their first Matinée event was Pride in New York where they transformed Manhattan’s Governor’s Island into an extravagant dance arena, with explosive music and thrilling light shows. At sunset, a surprise fireworks display ignited the skyline. “Matinée raises the bar on nightlife,” says Jake Resnicow. “Whether in the heart of Manhattan or on the beaches of Miami, a Matinée event is meant to take revelers out of body and beyond the confines of their imagination.” They plan to pull out even more stops this Memorial Day. They have upgraded the main event to one of Vegas’ hottest and most exclusive clubs, Vanity at Hard Rock. The dance floor is a massive 14,000 square-feet with an outdoor terrace and fire pits. The weekend will feature eight events over four days and nights, including main events and after-hour parties at the city’s hottest clubs, as well as pool parties at the weekend’s host hotel, Rumor. Each party will feature original themes designed to take revelers on a weekendlong journey. The DJ line-up includes some of the world’s most innovative icons in dance music, including Matinée Spain all-star DJs Taito Tikaro, Javier Medina and Flavio Zarza. Billboard #1 remixers/ producers Hector Fonseca, Alyson Calagna, DJ Theresa, Ed Baily, Brazil’s Rodolfo Bravat, and red-hot rising stars Nina Flowers, Justin Dawson, Ryan Kenney, Luis Perez, Derek Monteiro and Billy Lace will also headline. Juan Rodriguez had the opportunity to sit and chat with three of the amazing DJs who are set to spin at Matinée. Following are excerpts from those interviews.

FLAVIO ZARZA What inspired you to become a DJ? The idea of being a DJ grew inside me from when I was a teenager going to the discotheque in Buenos Aires. It was the nineties and people were very excited with the new electronics sounds of the time.

TAITO TIKARO Do you remember your first time behind the decks? My first official set was back in 1994, near Barcelona. Eurobeat and technopop were all the rage at the time. It was an amazing experience.

What was the biggest challenge you faced as a DJ? Probably when Matinée asked me to spin a room where the style of music was very different from my own. I had to change the way I spun but it helped me to mature as a professional.

What has been your most memorable experience? The first time I played the terrace at Space Ibiza. It was a clear, beautiful morning and I was playing for an international music-loving crowd. Our connection was unbelievable.

What has been your most memorable experience? The Matinée float for Gay Pride in Madrid was definitely something I will never forget. There were thousands of people dancing and partying!

How did you join Matinée? I joined Matinée in Spring 2007. I had produced some tracks for them and it became obvious that our music philosophies were a perfect match.

Are you excited to spin Matinée Las Vegas Festival? Believe me when I say that for me it is a great privilege. This is definitely one the most important events for me this year. I’m very excited! What can we expect? People can be sure that I’m gonna do the best I can to make them have the most amazing experience of their lives.

What can we expect from you in Vegas? Expect fresh and energetic beats that will transport Vegas to Matinée Amnesia. It will be a preview of this summer’s Ibiza vibe. Is there anything you’d like to share with fans? It might sound cliché but I would like to get the message out there that you should never give up. Follow your dreams and don’t be afraid to learn from your failures. Anything is possible when you fight for it.

JAVIER MEDINA What inspired you to become a DJ? My father was a club and radio DJ. He started years before I was born, so there was always plenty of music at home. When I was a teenager, I was seduced by electronic music from American DJs that I call my friends today. How is it to man the decks in front of a large crowd like Matinée Las Vegas Festival? It’s an unexplainable experience. It’s sort of like being on ecstasy or having sex. When your passion becomes your profession, you never want to stop. I can go on spinning forever. It’s like a lover that never fails; someone that’s always there for you. Is there a difference between European and American crowds? Americans are educated musically. They are more willing to embrace new sounds. I come from Spain where there is not much of a club culture so for me spinning in America is paradise. What is something essential that you need in the booth when spinning? A good PA system and my drinks. What can we expect from your Vegas show? A huge crowd! It’s going to be a four to five hour set so I expect to have a lot of fun!

The Auen Foundation has awarded a $15,000 grant to AIDS Assistance Program (AAP) in support of the organization’s food voucher program. The Auen Foundation began its support of AAP in 1999, as one of the first Coachella Valley organizations the Foundation ever funded. The White House last week joined the chorus of praise by commending NBA veteran Jason Collins for becoming the first active male player in the four major American professional sports to come out as gay. White House spokesperson Jay Carney

Carney says the White House views Collins’ decision as another example of progress and evolution in the U.S. as Americans grow more accepting of gay rights and same-sex marriage. Collins disclosed he was gay Last week in a first-person account posted on Sports Illustrated’s website. “I’m a 34-year-old NBA center. I’m black. And I’m gay,” he wrote. “I didn’t set out to be the first openly gay athlete playing in a major American team sport. But since I am, I’m happy to start

the conversation.” Collins has played for six teams in 12 seasons, including this past season with the Washington Wizards. “We are extremely proud of Jason and support his decision to live his life proudly and openly,” said Wizards President Ernie Grunfeld, in a statement on behalf of the team. “He has been a leader on and off the court and an outstanding teammate throughout his NBA career. Those qualities will continue to serve him both as a player and as a positive role model for others of all sexual orientation.” Adding his praise was former President Bill Clinton, whose daughter, Chelsea, attended Stanford University with Collins.

FORMER EXODUS CHAIRMAN APOLOGIZES & RENOUNCES ‘REPARATIVE THERAPY’ John Paulk, the former chairman of Exodus International, a Christian ministry devoted to performing controversial gay-to-straight “reparative therapy” has formally renounced his past and says he is “truly, truly sorry” for the pain he’s caused by advocating that gays could change their sexual orientation through prayer and therapy. John Paulk, the former poster child of the “ex-gay movement,” issued this formal apology following a recent interview with PQ Monthly in which he renounced his anti-gay past, and said he no longer considers himself an “ex-gay.” “For the better part of 10 years, I was an advocate and spokesman for what’s known as the ‘ex-gay movement,’ where we declared that sexual orientation could be changed through a close-knit relationship with God, intensive therapy and strong determination.

“At the time, I truly believed that it would happen. And while many things in my life did change as a Christian, my sexual orientation did not.” “Today, I see LGBT people for who they are–beloved, cherished children of God. I offer my most sincere and heartfelt apology to men, women, and especially children and teens who felt unlovable, unworthy, shamed or thrown away by God or the church.” Paulk’s formal apology comes just one week following a report in PQ Monthly, which revealed that Paulk was frequenting Portland, Ore. area gay bars. In 2011, John Smid, the former Executive Director of Exodus International’s oldest ministry “Love in Action,” also publicly admitted that he is gay, and disavowed the message he preached for years that promised gays they could change.

PUTIN THREATENS TO BAN ADOPTIONS FOR NATIONS THAT LEGALIZE SAME-SEX MARRIAGE BY BRODY LEVESQUE | LGBTQ NATION

Russian President Vladimir Putin on Friday warned that agreements with other countries on the matter of adoption of Russian children might be changed to ban such adoptions if those countries legalize same-sex marriage. Putin’s remarks came in response to a question regarding a proposal by Marina Orgievoy, head of the regional parliament of Kaliningrad, who, referring to the recent change in France legalizing same-sex marriages, had publicly criticized French lawmakers. Orgievoy, noting the Russian-French agreement, said the agreement must be modified, “so that our children do not fall into the same-sex families.” Currently, Russia’s Family Code does not allow adoption by same-sex couples. “She is right. We have to react to what is going on around us. We treat our partners with respect, but we ask that they treat with respect the cultural traditions, the ethic, legal and moral norms of Russia,” said Putin, speaking to reporters Friday at his presidential estate, just west of the Russian capital city. “I believe I have the right to introduce changes into such documents. This is a topical question; we need to think about this,” he said. Putin’s statement would imply that a legal ban could be adopted

soon as policy by the Russian government. As same-sex marriage legislation moves through the Parliament of the UK, the Russian foreign ministry’s human rights envoy, Konstantin Dolgov warned this week, “The British and French parliaments have legalized same sex marriages. This narrows the chances of citizens of these countries adopting Russian children.” France became the 14th country worldwide and the 9th in Europe to approve gay marriage last week. In 2011, the most recent year for which figures are available, parents in France adopted 283 Russian children, while British parents took in 48. The adoption of Russian children has already become a highly emotionally charged political issue in the Russian Federation after Putin signed a ban on adoption of Russian children by U.S. parents in December. That prohibition was a response to numerous highly publicized incidents of abuse, and in a couple of cases deaths, of Russian children adopted by American parents. There continues to be anti-gay sentiment expressed in Russia as gay pride events have been routinely vetoed by city authorities in Moscow, St. Petersburg, and Novosibirsk and several regions of Russia have adopted a ban on “homosexual propaganda” among minors.

EPICUREAN Spray 4 muffin tins or small oven-proof dishes with cooking spray. Combine veggies and season with thyme, paprika and garlic powder. Place equal amounts of vegetables in each tin, top each one with 1 tbsp of the cheese. Break egg into each dish. Sprinkle lightly with salt, and pepper. Bake, uncovered, until eggs are set to your liking (15 – 18 minutes). Sprinkle with parsley before serving. Serves 4 ROASTED ASPARAGUS 1 bunch asparagus, ends trimmed drizzle with olive oil salt & pepper to taste place in a 350ºF oven, roast for 12 – 15 minutes CRISPY PROSCIUTTO Place in oven along with asparagus, until crispy. Remove and set aside. Place Asparagus on serving platter and crumble Prosciutto on top. Serves 4 – 6 CALIFORNIA CITRUS SALAD It’s all about juicy, ripe citrus; We invite you to give this salad a try the next time you’re serving up a Sunday Brunch, breakfast in bed, or even an afternoon refresher. 3 medium Oranges 2 medium Pink Grapefruit 1 medium white Grapefruit 1 cup sliced strawberries 2 tbsp. Honey 2 tbsp. Raspberry Vinegar 6 sprigs Fresh mint for garnish Zest the rind of the two oranges. Set aside. Peel, section, and seed the oranges and grapefruits, removing white membrane. Set section aside. In a large bowl mix honey and raspberry vinegar. Toss with orange, grapefruit sections and sliced strawberry. Top with sprigs of fresh mint for garnish. Serves: 6 MINI CHEESECAKES WITH FRESH FRUIT COULIS bite-size confections of creamy delights ½ cup finely crushed ginger cookies 2 tablespoons butter, melted 1/4 cup ricotta cheese 2 ounces cream cheese 1/4 cup sugar

TRENDS 1 tsp vanilla 1 egg Butter, for greasing Special equipment: mini muffin tin Preheat the oven to 350º F. Combine the crushed ginger cookies and the melted butter. Place a tightly packed teaspoon of the cookie mixture into each mini-muffin cup and press down firmly. In a food processor combine the ricotta cheese, cream cheese, sugar, vanilla and the egg. Blend until smooth. Lightly grease the sides of the mini muffin tin with butter. Fill the cups with about 1 tbsp of the cheesecake mixture. Place the mini muffin tin in a baking dish and pour enough hot water in the baking dish to come halfway up the sides of the mini muffin tin. Bake for 25 minutes. Transfer the mini muffin tin to a wire rack and let cool for 30 minutes. Refrigerate for 15 minutes. Use a small knife to gently pop the cheesecakes out of the cups. Just before serving, top each individual with fresh fruit coulis and serve. Serves 12 FRESH FRUIT COULIS 2-3 tbsp powder sugar 1-2 cups very ripe fresh fruit, such as strawberries, raspberries, blackberries, peaches... Option: for added flavor, mix in 1-2 tsp orange juice, or fruit flavored liqueur. Place the fruit in a mixer or food processor/blender. Pulse to break up fruit. Add powder sugar and mix to form a puree. Add liqueur, mix. Remove to a container & chill until required. If the fruit contains seeds, push the fruit through a sieve to remove them before chilling. CITRUS SPARKLE Mimosas are great but this version is sure to give an extra zing to your brunch 1 tsp lime juice 1 tsp lemon juice 1/2 oz. Cointreau or other orange liqueur Sparkling wine, chilled Lemon twist, to garnish In a Champagne flute, gently stir together the lime juice, lemon juice and orange liqueur. YOUR BODY IS YOUR FASHION STATEMENT BY DENNIS MASON, C.P.T.

The new fashions of today seem to embellish and flatter the body more than ever before. Perhaps one reason is all the attention given to the sexy and in shape bodies around. It’s not uncommon to see advertisements in print, on television and on the fashion runways focusing on the lean and ripped bodies of both male and female models. As a fitness trainer, I’m delighted to see this occurring. It means that there are increasing numbers of people who are devoting a sizable amount of their time to fitness and generally making the effort to ‘look good.’ ‘Body Sculpting’ is the term I use when working with my clients. See, your body is like a piece of clay and your sculpting tools are the different forms of exercise. But, before you can select which form your exercise routine will take, you must first decide what look you want your body to have. For example, if you want to attain an all-around state of health and fitness that is ‘ready for anything’, your ‘tools’ might include high intensity circuit training and aerobic activity. In my opinion, the best all-around exercise to work the entire body, burn the most calories, tone all the muscles and be easy on the joints is water based exercise in a swimming pool. I train a lot of my clients in the pool with what I call ‘Aquacise’. It’s more than just water aerobics. It’s a combination of many forms of exercise, ranging from Pilates and Tai Chi to Yoga and Dance movements; all performed in about four feet of water in the pool. For those who want to add a significant amount of muscle to their physique, there are a number of other modalities one could use to reach that goal. Heavy weight training or strength-building body weight exercises would do nicely. Free weight training at a gym or in a ‘boot camp’ environment would be good places to work out. The key here would be to increase your daily calorie intake so that you will maintain a positive caloric mode. This in turn, would allow your body to gain the muscular weight you desire. Of course, other exercises and movements may be mixed together to give a variety of results. Here is where focusing on your goal(s) will pay off. Whether to use free weights or machines, water work outs or cycling, boot camp or Pilates or any other combination of movements, totally depends upon the goals and objectives you have set for yourself. Amateur and/or Professional athletes generally use a combination of many movements that provide core stabilization, flexibility and strength. If you’re just starting to work out practice mastering the basic

movements for each of the three major muscle groups; chest, back and legs. Don’t be afraid to ask questions or ask for help. If you are re-starting a training program due to time off for injury recovery or surgery, make sure you check with your doctor before you begin. Finally, if you are getting back into a fitness program now that you are retired, consider the fact that the body reacts differently with age than it did in the past. “Clothes make the person”… or so it’s said. But, maybe it’s really the other way around. The new departure date is now scheduled for early September. “We are thrilled to have Forever Marilyn with us all summer long,” said Aftab Dada, chairman of P.S. Resorts. “The sculpture has attracted thousands of visitors from around the world to Palm Springs and has generated global publicity. We will be creating additional events in the Forever Marilyn park this summer to bring even more people and attention to downtown.” The Forever Marilyn sculpture was scheduled to remain in Palm Springs through June, or for one year, but an arrangement made with the sculpture’s owner is allowing it to stay here for an additional 90 days. “This is great news for the City of Palm Springs,” said Mayor Steve Pougnet. “Forever Marilyn is adored by our residents and visitors, alike. We’re happy to have her for another three months while the demolition of Desert Fashion Plaza finishes and construction begins.”
