Industry leaders gather for launch of Hospitality Experts, the new advice and support business Leading lights from all areas of the hospitality industry gathered for the launch of new advice and support business network, Hospitality Experts. A collection of familiar faces from the world of hospitality including hotel group Chief Executives, marketing and strategic experts and consultants with decades of experience across the industry met at the event hosted at the fantastic Stoke Park in Buckinghamshire. The event marked the beginning of Hospitality Experts, a new venture being led by the owners of the hotel marketing agency, Journey, which will see a consortium of professionals sharing their advice and decades of experience with others in the industry. Their aim is to help hoteliers, managers and their teams to benefit from the expert’s advice in a bid to give back and support the industry they themselves have enjoyed working in.

Chefs Club by Food & Wine

Rockwell Group Located in the landmark Puck Building in lower Manhattan, Chefs Club by Food & Wine is a restaurant that will offer culinary events showcasing the magazine’s Best New Chefs platform as well as the work of an international roster of star chefs.


Rockwell Group’s design concept is based on the notion that Chefs Club will break down the boundaries between the chef and guests. The existing turn of the century space has been envisioned to serve as a backdrop for a series of changing art installations that will capture “the mind of the chef.”

entry A floor-to-ceiling wall composed of Rondelle glass in subtle, desaturated colors, such as bottle green and sepia, is arranged in a dark lead frame defines the entry, located on Mulberry Street.

The 4,000 SF first floor dining space is organized into four areas: a bar/lounge, a main dining room, an open studio kitchen, and a chef’s studio/private dining room. Simple and organic materials in neutral hues, such as walnut, raw concrete, leather and blackened steel, complement the existing interior architecture. Several vitrine cases with blackened steel frames and glass panels are located throughout the space. Murray Moss is curating the cases in collaboration with Rockwell Group.

Bar/lounge To the left of the entry is the bar and lounge area, which seats 25 total. The dramatic 30’ long bar is comprised of a mixed wood and concrete bar top with metal detailing, and a concrete bar die. One end of the bar features a crudo station. A communal table, which extends from the opposite end, has a concrete top and dark stained walnut base. The 7-seat lounge features custom chairs with leather seats embossed with words and messages and blackened steel legs with brass and two elegant kidney shaped sofas.


> main dining area Rockwell Group selected a darker material palette and a mix of stained walnut dining tables in different shapes and heights for the 68-seat main dining area. The dining chairs are black metal with seal grey colored stretched leather seats and backs with brass accents. Three round banquettes, upholstered in deep bluegreen velvet and cotton with a metal base, line one of the walls. A tall exposed wine storage wall with a drink stand helps define the main dining area. The tableware blurs the line between fine and casual dining. Rockwell Group worked with local ceramic artist Jono Pandolfi to design plates that combine an unglazed underside and unique handmade profiles with a classic white earth ware and glaze. The plates, combined with simple silverware, glassware and napkins, will sit atop brown butcher paper. Additionally, Rockwell Group designed the uniforms for the front-of-house employees, as well as menus and graphics. Servers will wear a denim grey chambray button down shirt, dark rinse jeans and leather boots. The bar’s mixologist will wear a custom leather apron.

open Kitchen Chefs Club offers a new perspective on the open kitchen dining experience. Guests have the option of sitting at a round chef’s table adjacent to a four-seat counter height table, a second four-seat counter near the prep area, or a counterheight rectangular table near the pastry area. Tables will have a mixture of marble and walnut tops, similar to the counter tops that reference the counter tops of the kitchen. A dramatic 5’ x 5’ hood with an organic shape and molten-like reflective surface will hang above the kitchen. A vitrine will be suspended over the studio kitchen, containing around 1,300 lbs pound of salt that hangs over the chef’s table. Chef’s Studio/Private dining room The 15-seat private dining room adjacent to the main dining area has a lighter material palette, including white washed millwork, white washed ash tables and a white drop ceiling, that creates a comfortable residential feel. The room transforms into a chef’s studio for photo shoots and events with guest chefs. A dark wood wall pivots 180 degrees to reveal a chalk board on one side where the guest chef can write notes, and a vitrine on the other side where the chef can display his or her inspirations, similar to a cabinet of curiosities. Porte 12 designers, award wining studio RARE architecture, conceived a precise and textured design interpretation of the sleek and exacting cuisine of chef Vincent Crepel's new restaurant. Housed in a former sewing and lingerie workshop in Paris’s new culinary district, Porte 12 is a contemporary ode to craftsmanship and the refinement of manual labor through both the design and its young chef’s cuisine. Top ten of the best restaurants in the world, the chef/artist André Chiang of Restaurant ANDRE in Singapore, is the helping force behind the “bistronomique” adventure of his longtime protégé. Singular in both the cuisine and the ambience, Porte 12 has notably been voted “best table” in France in the 2015 edition of Le Fooding guide released yesterday on November 13th.

Designers of the Michelin starred Viajante restaurant and 5* Town Hall Hotel in London, RARE devised a crafted design playing with the former lingerie workshop heritage of the site. Natural materials and rich tones merge with existing patina whilst Ligne Roset's furniture pieces dialogue with the evocative copper braces and the signature installation – a cloud of lights. At the heart of the building with no visible façade, a faceted copper feature enigmatically marks the door, the Porte 12. Entering through the mirrored lobby, halos of the cloud of lights guide into the main room itself flooded with coppery light reflections and views toward the open kitchen. Upstairs the mezzanine offers a pre- dining area in a dark and warm ambiance. Like the kitchen of excellence, the design exists through subtle effects, the clarity of lines and the juxtaposition of rich materials.

The office was co-founded by Michel da Costa Gonçalves and Nathalie Rozencwajg, both teachers at the prestigious AA school of London. Michel has taught in France and currently at the Architectural Association in London.

Chop Bloc & Bloc Bar

Chelmsford, Essex

DesignLSM, designlsm.com, were approached by restauranteurs Steve and Dave Pattern to create an appealing brand and interiors for a new high-end steak and burger restaurant and bar based in Chelmsford – Chop Bloc and Bloc Bar. The brief was to produce a brand and environment that evoked the Pattern brothers’ passion about quality dry-aged steak whilst at the same time appeal to a discerning client base seeking a premium dining experience. DesignLSM’s branding team drew upon the cuts and chopping marks of the beef to create a core logo, incorporating a bold type face and cow motif. The identity was applied across all customer touch points, including exterior signage, environmental graphics, print, advertising and online applications including a website. The branding team also created unique identity and applications including bespoke signage, menus, stationery and website for Bloc Bar. The project involved DesignLSM acting as brand guardians and taking the lead to provide creative direction to the PR company, copywriters and uniform designers. DesignLSM’s interior designers worked closely with the in-house branding team to extend the concept though to the interiors. The restaurant is based in an 18th Century Grade II listed former brewer’s building. Our designs, therefore, had to be sensitive to

their surroundings, ensuring that we retained the character and incorporated some of the traditional materials of the building, whilst creating a modern environment that sits harmoniously with the highend produce. The main entrance is designed to be a welcoming space in which the diners can obtain a flavour of the concept and produce on offer, enhanced by the walk-in meat room which exhibits the hung meat and steak as a feature display. Adjacent to the reception area is a dining space, featuring banquette and loose seating with exposed brick walls and elegant glass globe pendent lights. An exposed steel staircase and glass lift lead the patrons upstairs to the main dining room, where the stairs and lift continue to make a dramatic statement. The atrium walls turn to frosted glass and the balustrade of industrial mesh are silhouetted against the glazing. The dining area comprises of exposed walls and ceiling beams and back to back banquette tables that are separated by internally illuminated mesh screens which create an intimate and welcoming ambience. Booth seats provide additional seating, the lights hung over these tables are suspended from abattoir hooks further evoking the industrial feel and referencing the quality of the dry-aged hung steak on offer. The second floor houses the Bloc Bar. Patrons are welcomed to the bar by a feature floor mounted sign comprising of 7 boxes each containing an illuminated letter spelling out Bloc Bar. The bar is constructed with a metal frontage and a concrete top, lit by brass faceted pendants hung along its length. The back bar bottle step is made from back lit salt blocks and diamond shaped black tiles and riveted aluminium panels cover the back wall. Deep seated brown leather wrap around swivel stools sit up to the bar providing patrons with a luxurious seating option. High sit up tables and large semicircular brown leather booths complete the bar area. Decoratively dotted around the restaurant and the bar are wall mounted light boxes, containing bold black slogans such as ‘True love is rare – Like good steak’; the slogans originate from DesignLSM’s branding team. Complimenting this is a multilayered collection of light boxes that depict a cow displaying the various butcher cuts. The light boxes are a contemporary take on wall art enticing the patrons to immerse themselves in the playful environment.

À La Folie Design of a pastry shop, storefront

The design of the new address of the patisserie À La Folie aims to defy all typecasts of the conventional pastry shop by giving full prominence to the superior presentation and quality of its unique products. The execution of the design begins with the storefront. The shop’s 650 sq.ft. ground floor location on the colorful street of MontRoyal impelled the creation of a space that is distinguished by its neutrality, acting as a monochromatic backdrop to the vibrancy of both the street and the pastries within. The neutral gray interior elevates the wonderful shapes, textures, and hues of the products on display. This voluntary restraint isolates the senses, and the focus becomes only the pastries themselves; the customer almost begins to taste with their eyes! All pastries are made in-house, with the production floor set in the rear of the space. It is separated from the shop area by a mid-height wall that

encourages the sounds and smells of the kitchen to tease the senses of the patrons beyond. A theme of assemblyline production is demonstrated by a band of hemlock slats that extend above the dividing wall and span the full depth of shop space, recalling the aesthetic of the wooden pallet or the conveyor belt. The refrigerated display units sit below the wood cladding, while thin and delicate LED suspension defines this exhibit area with its focused and dramatic illumination. The black steel display units were custom designed and fabricated to stand independently; the compressors for each unit are positioned in the basement below, allowing the displays to stand on dainty steel legs, in continuity with the adjacent storage and cash counter units. The cash counter itself is accentuated by the chaotic lighting of the AIM pendant lamp (by Ronan and Erwan Bouroullec).

The Bizerba vSC280 manual slicer just got better!

It is now a weighing and slicing machine after being redeveloped with an added checkweigher, allowing operators to slice to the nearest gram in one action. When using traditional slicers, it is difficult to slice the exact amount required ‘by eye’ without it being over or under weight, with its integrated checkweighing capability, the VSC280 all-purpose slicer can help by showing operators exactly how much has been cut and how much more is needed to produce the required weight. The VSC280 is specially engineered for ease of use. The carriage is angled at 10° so that slices slide off easily, reducing interruptions to the workflow. The controls are ergonomically designed, making it intuitive to operate with minimal training. The carriage and blade cover are connected to quickrelease systems, making it easy to set up and clean. Many of the components are removable and can be placed in a dishwasher for a thorough clean at the end of each day. The machine housing is constructed from one piece so that it has no joints and is therefore easy to keep clean and hygienic. The VSC280 utilises Bizerba ‘Emotion’ technology, a smart drive concept which automatically adapts to apply the correct amount of power required for different products. The CASINO DE IBIZA shares a location with the Ibiza Gran Hotel complex on Ibiza’s golden mile. Working at height is so often an essential part of life for people employed in maintenance and cleaning activities. In 2013-14 the HSE reported that falls from height were still the most common cause of fatalities, accounting for nearly three in ten (29%) fatal injuries to workers.

One key issue facing many organisation who produce food within the catering and hospitality sectors is the cleaning of cooking extraction ducts and risers. In new premises gaining access to do this is seldom a problem as the extraction system will be an integral part of the building design. This however is not the case for older buildings where the extraction duct system frequently runs vertically up the outside facade. Such ductwork presents one of the most serious and common fire hazards in a building. Of the 24000 accidental fires per year in commercial properties, around a quarter are attributed to cooking and extraction systems. Kitchen-extract systems build up grease, oil and other residues. If these deposits are left to build up within the extract duct and fans, they can ignite and cause fire to spread rapidly throughout the entire ducting system. As extraction ducts may often be routed through the outside it is possible the entire property is consumed by fire. It is therefore of the upmost importance for those within the catering and hospitality industries to have kitchen extract ductwork cleaned and maintained on a regular basis. The key issue is removing the grease along the full length of the duct, thereby removing the fuel or ‘combustion load’ which reduces the potential of in- duct fires. If a system has only been partially cleaned there is still a potentially lethal fire hazard contained within the duct. The Fire Service offers the following recommendations: Why carry out cleaning and maintenance?

You will reduce the risk of fire. It prevents the build-up of grease deposits and bacteria within your kitchen extraction system. Under the Regulatory Reform (Fire Safety) Order 2005 your extract systems need to be included in your fire risk assessment, with action taken to minimize any potential fire risk to buildings and occupants. Failure to carry out proper cleaning and maintenance could lead to a reach of Environmental Health regulations and could invalidate your fire insurance policy.

Many of these are due to inadequate maintenance and cleaning.

The original hotel Bellevue was built in 1967 based on the design of a distinguished Croatian architect Zdravko Bregovac. The hotel was built and furnished in accordance with the demands of the time, but it did not fit into the concept of the new owner who perceived it as an exclusive place for relaxation and vacations. The reconstruction and the extension of the existing hotel were started in the fall of 2013, with the aim of improving the standard of the service with regard to the spatial capacities and the equipment. The Bellevue Hotel experienced a thorough change within a very tight deadline; all projects and works were completed in the period of mere seven months. Ground Floor Plan Concept The basic spatial concept of the hotel, one shaped around the central atrium has been preserved. It has been extended by the construction of a glazed passage which can be fully opened during the summer months, thus becoming a covered atrium area. The floors of the passage and the atrium terraces have been plated in teak wood and furnished in teak furniture covered with soft cushions. Next to the existing pine trees, orange, lemon and grapefruit trees have been planted in the atrium, as well as other indigenous plants. The new architectural elements introduced in the shaping of the façade are the

expressed whiteness of the surfaces and the use of the horizontal brise-soleil system and shutters to create a dynamic rhythm of the surface. The emphasis on the main axis of the hotel which leads to the sea has been additionally supported by the construction of a wide stone access staircase descending to the coastal promenade of ÄŒikat Bay. On the other side of the hotel, the entrance is emphasized by a new spacious and voluminous eaves. The main public facilities of the hotel are located at the entrance level: the reception, the lobby, stores, a threepart congress hall (with the maximum capacity of 360 seats), two smaller meeting halls, a lounge bar and three restaurants of different sizes. Some of the rooms on the first floor have been torn down so the two-storey areas were created in the lobby and the lounge bar, which evokes the feeling of spaciousness, as well as enhances the perception of the vertical axis of the hotel. In the process of designing public areas, the aim was to create a separate identity for each of the individual wholes. The lobby area floors are covered with terrazzo tiles, the restaurant and the lounge area with matt oak parquet of large dimensions, while the congress and meeting facilities are carpeted. The columns in the lobby have been cladded in Persian travertine, while the reception counter and wall claddings have been done in Indian Apple Veneer. Composite stone consisting of ammonite and fossilized tree from Madagascar has been used for the lining of the wall of a part of the reception area and the wall of the lounge bar which extends over two storeys. Wall claddings of the restaurant have been finished in oak and walnut veneer and the wall claddings in artificial leather should also be mentioned. All equipment and furniture is of high quality and excellent design (by producers such as Poliform, Porada, Poltrona Frau, Cassina, Roda). The colours are warm and natural, ranging from the dominant colour of sand to chocolate brown, orange and yellow. Sanitary facilities have been coated in slabs of Portoro, Rosso Lepanto, Paonazzo, Rosso Alicante and Arabescato Orobico Rosso marble. Section d The works of painter Tomislav Buntak, which have been exhibited in the lobby, the restaurant and the entrance area of the pool, greatly contribute to the unique atmosphere of respective areas. The terrace, which stretches along the southwest façade, includes the dining areas or areas for rest or relaxation with a drink. The storey located below the entrance level includes the pool facilities, fitness and wellness, as well as a Spa clinic. The walls of the interior pool are covered with the painting done in mosaic tiles. The playful figure in movement encourages the idea of having fun in the water. The authors of the art pieces are Valentina Butumljević, Damjan Roce and Klara Rusan. The interior pool is protected by a glazed dome and the area is furnished with white deck chairs and tables, alongside with comfortable sofas of organic design (produced by Paola Lenti). The area is characterized by the colour white and the richness of natural light.

1st Floor Plan The outdoor pool and its sunbathing area are directly connected with the interior pool. The irregular shape of the outdoor pool has been divided into two levels which are connected by a waterfall. The height of the sunbathing area along the pool follows the logic of the pool itself. The area is furnished with white deck chairs with tables and comfortable sofas of teak wood. The lower level of the sunbathing area contains a pool bar. The sunbathing areas are covered by mobile canopies and adjustable parasols. The fitness area includes the workout hall (Yoga, Pilates) and the gym with exercise equipment. The spa clinic and the fitness area are connected by a wide communication area with natural lighting provided by a line of roof domes. The domes also house big aquariums which are used as elements of spatial sequences. The spa zone consists of two parts; the beauty zone with different facilities which provide beauty treatments, as well as massages and relaxation programmes. The zone was envisioned as a very bright area, which is why white terrazzo was selected for the floor and bright onyx for partition walls. The whiteness and transparency are emphasized by flapping curtains dividing the area.

The dark colour of the Spa is in contrast with the whiteness of the zone and includes a line of showers, Finnish sauna (one up to 90째C, the other up to 120째C), Turkish bath, Tepidarium pool with cold water and the relax zone. The dark Terazzo is used for the floors; the walls have been cladded with dark red mosaic tiles and the partition onyx walls are in dark tones. The outdoor area in front of the wellness is planned so that the activities can also be done in the exterior; hydromassage bath tubs, deck chairs and massage areas are situated in the exterior area. On the other side of the area there is the exterior Finnish sauna with a cold pool and a hydromassage bath tub. On the first and the second floors which have been prerserved, the number of accommodation units has been reduced in order to meet the contemporary standards regarding the size of the hotel room. The height of the areas has also already been set so the area is relatively low. The two added floors were devised and executed in a way that the accommodation units follow the exterior rim, while the hallway follows the rim of the atrium.All newly designed accommodation units have spacious covered terraces cladded with teak boards. Some accommodation units contain hydromassage bath tubs.

Crowd-Controlled Bar designed by Carlo Ratti Associati debuts on new ‘smart‘ cruise ship

Yesterday Makr Shakr, the world’s first robotic bartending system – designed by renowned architect, engineer and inventor, Carlo Ratti – made its debut as the Bionic Bar onboard on Royal Caribbean’s new ‘smart’ cruise ship, Anthem of the Seas, in Southampton. Makr Shakr is an exciting and innovative new mixology system that allows users to create personalised cocktail recipes in real-time through a smartphone application – also transforming them into crowd-sourced drink combinations. “Makr Shakr is a great example of how robotic technologies are changing the interaction between people and products – a topic that we have been exploring in great depth” said Carlo Ratti, professor at the Massachusetts Institute of Technology (MIT) and co-founder of Makr Shakr. “The system explores the new dynamics of social creation and consumption – ‘design, make and enjoy’ – allowing users to design their own cocktail creations, while digitally controlled machines transform these designs into reality.” The Bionic Bar powered by Makr Shakr is located at the centre of Royal Caribbean’s new Anthem of the Seas latest ‘smart’ cruise ship. To use Makr Shakr, users will access a simple app on a tablet, allowing them to create an almost limitless number of alcoholic and non-alcoholic drink combinations. The cocktail creations will then be assembled by two robotic arms, whose

movements – shown on a large display positioned behind the bar – mimic the actions of a bartender, from the shaking of a martini to the thin slicing of a lemon garnish to the muddling of a mojito. Guests will have the possibility to name their own recipes, access their order history and reorder their favourite cocktails, while rating and commenting on each other! “Makr Shakr does not suggest replacing the bartender with a robot, but rather was conceived as a social experiment that looks at how people might embrace the new possibilities offered by robotics and digital manufacturing” says Saverio Panata, COO of Makr Shakr. In Makr Shakr, social connections are woven throughout the cocreation and mixing of ingredients, which are then fed back to the user through the app. With this new technology, consumers can learn from each other, sharing connections, recipes and photos on social networks. “Digital connectivity is not replacing physical interactions, but rather reinforcing them” adds Panata. To create an engaging bar experience, the robots’ movements were modeled on the gestures of Italian choreographer Marco Pelle from New York Theatre Ballet. Mr Pelle’s movements were filmed and used as inputs in programming the robots’ animation. The only choice in professional hotel quality mattress protection

Why you need to use a mattress protector? If you don’t use a mattress protector then your mattress is going to become marked and stained incredibly quickly. Your guests leak at night, some more than others, perspiration alone creates unsightly brown tidemarks on an unprotected mattress. Other bodily fluids just make it worse.

The problem is that waterproof mattress protectors are still perceived to be either noisy and crinkly or hot and uncomfortable, or both!

An unprotected mattress soaks up any liquids and moisture but cannot be washed clean afterwards. It will soon start to not only look unpleasant, but also not smell very nice as well. Finally ‘Allergon’ can be machine washed at temperatures up to 90c and tumble dried if required. ‘Allergon’ is available in 20 different mattress sizes as well as a pillow protector.
