Sean Connolly at Dubai Opera is a 350 person restaurant, bar and courtyard in the heart of bustling Dubai, with direct views of the Burj Khalifa and is the only restaurant in the newly opened Dubai Opera space. The venue includes Raw bar, Fire bar, brasserie, main bar, dining areas, private dining, chefs table, external bar and courtyard and dining areas.

tenancy and drew upon Alexander &CO’s personal interest in 20th-century classic design and architecture combined with the oceanic Australian/New Zealand influences of Sean Connolly’s cooking. Each design element within the venue explores ideas of the sea, from the oyster with its combination of smooth sensual surfaces and textured outer surfaces, to the oceanic tones and colours of corals and pearlescent hues.

of the Sydney Opera House are jewel like and reflective. The main spaces are focused upon the central cocktail Pearl Bar, constructed from grey leather, walnut timber and yellow marble. The grey marble banquettes with their pink leather are reminders of the delicate contrasts of the ocean corals and sea creatures while the raw and fire bars remind us of the outer edges of blackened seashells.

In keeping with the Antipodean theme, Jacqui Fink, an international pioneer of “extreme knitting” created a custom 6m high Merino Wool hanging artwork (one of her largest commissions to date) as a nod to the tentacles of sea creatures, delicate and mystical. Similarly, local Sydney artist Tracey Deep, known for her floral installations using found and native flora created three hanging sculptures curated to the oceanic vision. The custom hand made woollen carpet with its blue dappled tones is a depiction of the ocean waters and was custom designed by Alexander &CO for this venue. In keeping with the 20th-century design inspirations, the classic Serge Mouille lighting has been custom-made in curving white enamel steel and brass finishes. Similarly, cult 20th-century furniture originals are combined in greens, greys, blues and whites with natural walnut timbers. They are sculptural and feminine and add significant value to the interest of the overall aesthetic.

A new hotel for London opens on the south bank Bankside Bankside, a design-forward hotel for London, opens in October 2018 on the south bank of the Thames, just minutes from the City and close to some of the capital’s best loved landmarks - Tate Modern, the National Theatre and Borough Market. Bankside blends 161 airy rooms and suites with ‘white cube’ spaces for meetings and events, co-working areas and a relaxed neighbourhood-style restaurant and bar with an outdoor terrace.

The six-storey glass building that houses Bankside is part of the striking One Blackfriars development from award-winning architect Ian Simpson. Its contemporary exterior lines belie the timeless interiors by film set producer-turned-interiors architect, Dayna Lee of Powerstrip Studios. Here, a midcentury modern aesthetic is balanced by an eclectic mix of bespoke furniture and art that celebrates local craftmanship and heritage. Eurobrick - Creating warmth in the hospitality sector Eurobrick was the first to introduce a comprehensively designed brick slip cladding system to the UK nearly 30 years ago. A Piece of Sky is SkyFrame’s pop-up design concept created by one of Switzerland’s most sought-after designers, Stephan Hürlemann. NEW SHOWROOMS There are several new showrooms at this year’s CDW 2018, including stylish contract furniture brand Casala who are opening their new showroom on Sycamore Street and will be showcasing Axa, a combination of a folding chair, barstool and chair. For the company’s 100th anniversary, Casala have announced the Casalino Competition, where architects will be selected to create a unique design on a minature Casalino chair for the chance to win a weekend break to Amsterdam. Ethical design brand Mater will be showing their existing collection plus a new chair by Space Copenhagen. Savage Garden Opens In Tower Hill Bar An exploration of the brutal and experimental comes to London when new destination rooftop bar, Savage Garden, opens in Tower Hill this June. Taking over the former Sky Lounge site on the 12th floor of the DoubleTree by Hilton Hotel London – Tower of London, the new 8870 sq ft, 400 capacity lounge bar is being transformed by leisure and hospitality specialists, Grapes Design. It will include a feature bar, cocktail lounge, dining areas and private hire spaces as well as two large outdoor terraces. Interiors feature reflective, scored and torn surfaces and a bespoke graffiti mural contrasting with soft velvet finishes and

marbleised floors. The north and south facing terraces, one acting as a dedicated events space, look out over London landmarks Tower Bridge, The Shard, Tower of London, The Gherkin and St. Paul’s Cathedral. A retractable roof over the north terrace allows easy transitioning from an al fresco summer hotspot into a winter events space for private hire and seasonal pop-ups. Hospitality consultancy Gorgeous Group has created the name and concept, focusing on the innovative and unexpected in both the cocktail list and all-day food menu. Drinks will include twisted cocktails in theatrical serves, all using premium spirits. Food takes traditional comfort dishes and feasting plates and gives them a dark twist.

Hotel owner Shahin Esmail said: “I had a vision of creating a wild and escapist bar that tears up the rulebook. A bar that surprises and delights. Yes, we will have incredible vistas out over London, but Savage Garden will be so much more than just the view, it will be an intriguing and engaging experience, from start to finish.” Robbie Bargh of Gorgeous Group added: “Savage Garden is breaking away from the botanical trend to provide a moodier, more alternative vibe to rooftop drinking and dining. It’s bringing something a bit different to London’s bar scene.”

BT Transforming Guest Experience at Edwardian Hotels London Hotel BT is delivering a suite of technological solutions across Edwardian Hotels London’s full portfolio, that are transforming the ways in which guests stay connected during their stay. BT has completed the roll-out of high-speed, Wi-Fi technology across the hotel group’s entire estate, including properties in London and Manchester, as well as installing a new Wide Area Network (WAN) connecting all locations across the estate. This will provide the extra capacity needed to support the new Wi-Fi network.

MEININGER To Open First Scottish Hotel Hotel MEININGER Hotels and investor LGIM Real Assets (Legal & General) have signed an agreement to open a new hotel in Glasgow. The hotel will be located on West George Street opposite Queen Street train station and will offer 160 rooms and 590 beds. The opening is scheduled for 2020. Designed by the architectural practice NORR, the new MEININGER Hotel will have 160 rooms and 590 beds, spread over five floors of the brand-new building. There will be a variety of room types on offer, from classic double rooms through to private multi- bedrooms and single beds within a dorm style room. Public areas will be located on the first floor of the building and are all typical features of a MEININGER Hotel, including a reception, lobby, lounge, breakfast room and bar as well as a guest kitchen and game zone. At basement, ground and mezzanine levels the scheme will also create around 1,400 sqm of new retail space. Due to its strategic location in the centre of Glasgow, many of the city’s sights, museums and monuments are within walking distance

from the hotel. Equally, there are numerous restaurants, pubs and venues nearby. The Scottish National Gallery of Modern Art is a three-minute walk from the hotel and the Glasgow Royal Concert Hall is just nine minutes away. The hotel is well connected to both local and long-distance destinations. As well as being opposite Queen Street station, the Buchanan Street underground station is only 160 meters from the hotel. The hotel in Glasgow will be the second hotel for the MEININGER Group in the UK, which has operated the MEININGER Hotel London Hyde Park since 2006. Why coffee automation is no longer considered a dirty word Coffee Will automation take over for the baristas or will it take them to the next level? A view on running efficient coffee business without losing the passion for the product. As third wave coffee becomes increasingly prevalent, customers with a taste for the good stuff are setting a new standard in the overall coffee experience. Whereas coffee evolved from a morning pick-me-up towards a high-end delight served by tattooed baristas in big city coffee bars, customers are now also expecting high quality coffee in general catering business and restaurants.


CATERING

We asked Jan Adriaens, CEO of Schuilenburg and Belgian engineer behind smart autofoamer Perfect Moose, how he saw this evolution take shape. “I have been working in the coffee industry for over 25 years now. We meet a lot of passionate people but unfortunately, you can’t run a business on passion alone. Real issues such as time management, temporary staff and training costs are not always taken into account. We saw the same frustrations over and over again and decided to do something about it. We started out with automating Probat coffee roasters, enabling our coffee roasting customers to upload preset roasting profiles and even to control them via smartphone or tablet. This allows the coffee roaster to move about during the roasting process while remaining in charge of the quality.”

Adriaens continues: “As specialty coffee bars became more and more popular, we also focussed on tuning shoproasters and got a lot of feedback from our clients about other bottle necks in their business. One always popped up: getting the milk froth right, a true skill and quite a time-consuming part of the coffeemaking process. When you know that almost 80% of coffees now served are milk-based, it was clear to us what the next step was. Automating the milk frothing process…and that is how Perfect Moose was born.” DOES AUTOMATION NOT ALSO INVOLVE GIVING UP THE PERSONAL TOUCH? “On the contrary. The role of the barista is evolving from a créateur behind the bar into a new type of host” Adriaens says. “Personal attention for the customer, personal attention for the product…that is what it’s all about now. Whereas the wine sommelier dazzles customers with his product knowledge and way of serving, the barista now knows where his coffee is grown and takes up a whole new role as coffee connoisseur. Automation enables him to do so without losing attention for the bar.”

CATERING

WILL AUTOMATION NOT LEAD TO SAMENESS AND BORING UNIFORMITY? Adriaens has a clear view on this. “Both chains and independent coffee bars are up for the idea of automation. For us, the passion of creating always remains key. The Perfect Moose autofoamer for example can be used with the liquid of your choice, enabling you to experiment, make new combinations, go veggie, buy local milks… It is never our intention to impose a certain taste or uniformize the coffee experience by automation. Quite the contrary… we encourage baristas to keep an open mind. Big companies are using the smart steamer to test their recipes before going to market, trendsetting restaurateurs are experimenting with steaming certain ingredients… automation yes, but always with a personal twist.” SO WILLL AUTOMATION TAKE OVER FOR THE BARISTA? We don’t think so. Just consider automation as the next step forward in the coffee business. Embracing innovation always takes courage…. But providing quality without the queue is something foodies and coffee lovers will only applaud.

Market Hall Fulham Opening Food & Drink Market Hall Fulham has officially opened its doors, providing the neighbourhood with a much-needed community hub dedicated to home-grown food and drink. Claude’s Deli, Yard Sale Pizza, Press Coffee, Thima by Farang, Hot Box, Ahi Poké, Butchies, Calcutta Canteen, Fanny’s Kebabs and Soft Serve Society will be housed in Market Halls’ first site, the Grade II listed former Edwardian ticket hall of Fulham Broadway station. Designed by Harry Wharton Ford in the 1880s, the historic building has been vacant for six years and has now been sympathetically restored. Market Halls’ architects, FaulknerBrowns, have retained

original features such as the enamel ‘TO THE TRAINS’ sign and ticket offices used in the original London Underground station. There will be a large communal dining area for over 200 people running down the centre of the room and a bar championing independent British-made beers, spirits and soft-drinks, housed in the original London Underground ticket office booths. The team have been working closely with North Cornwall brewers Harbour to create their own house lager ‘Market Helles’ as well as having rotational beers from some of the best brewers in the UK, such as Cloudwater,

Wild Beer Co and Siren Craft Brew. Sussex brewers Good Things, who are on their way to becoming the first off-the-grid brewery will be available on tap. Completing the draught line up is Bermondsey-based Hawkes with their Urban Orchard Cider. Working with Kicking Horse Craft Beer Merchants, there will be six British craft beers on draught available, as well as 20 bottles and cans on offer. There will also be a short cocktail list made using British craft spirits including Our London and East London Liquor Company, as well as a range of wines and a strong selection of non-alcoholic drinks, including a Market Halls Pink Grapefruit Soda which has been created in collaboration with Square Root.

CLAUDE’S DELI From the critically acclaimed founders of local haunts Claude’s Kitchen, Amuse Bouche and The Tommy Tucker comes a delicious new addition to their South West London outfit, Claude’s Deli. THIMA BY FARANG In 2016, Seb ‘Sebby’ Holmes, the ex-Head Chef of Smoking Goat and Begging Bowl, teamed up with Dan Turner to host a series of pop-ups, supper clubs and private catering events before bringing their Farang residency to Street Feast. After working the street food scene, Farang set up shop at Seb’s family restaurant, San Daniele in Highbury, as a longer-term location, before announcing it as their new permanent home. Seb’s simple approach to Southeast Asian food has gained him critical acclaim from the likes of Fay Maschler, Giles Coren and Tania Ballantine. Thima will marry some of Seb’s most popular dishes from his North London restaurant with some newer dishes, designed especially for Fulham.

As well as offering coffee, Press will be serving up a selection of loose leaf teas, smoothies and soft drinks from independent and artisan producers to their Fulham clientele. YARDSALE PIZZA Yard Sale Pizza was born out of three friends’ shared passion for simple, good pizza. Beginning life in a backyard in Clapton, owners Nick Buckland, Dan Spinney, and Johnnie Tate, now have four bustling shops across East and North London. HOT BOX Hot Box co-founder Basit Nasim and Executive Chef Lewis Spencer came together over a mutual love of smoked barbecue, which was cemented after a month-long food pilgrimage to Austin, Texas. Described by Time Out as a “Meaty barbecue masterpiece”, Hot Box started life on the East London street food scene, before husband and wife team Basit and Preeya launched their standalone restaurant in Spitalfields in 2014. Inception Group Set For Greatest Expansion To Date With Three New Bars For Mr Fogg’s Collection Bar 2018 will see conceptual hospitality group, Inception Group embark on their greatest expansion to date, doubling the size of their Around The World in 80 Days inspired, Mr Fogg’s Collection by opening three more bars. Mr Fogg’s House of Botanicals will open in Fitzrovia this June, followed by Mrs Fogg’s, inspired by Aouda, the intrepid explorer, Phileas Fogg’s wife, in Jules Verne’s classic adventure novel. Opening in Broadgate Circle in September, Mrs Fogg’s will be their first foray into the City. The last in the trio of new openings will see the unveiling this October of Mr Fogg’s Society of Exploration situated just off the Strand, and the intention is that there will be further new Mr Fogg’s to follow in 2019. Inception Group was founded in 2009 by Charlie Gilkes & Duncan Stirling when they were just 24 and 27. The group operates ten of London’s most conceptual and popular venues, offering inventive food and drink served in eclectic settings. The business has won several awards as well as industry-wide recognition, including being named in the Sunday Times Virgin Fast Track 100 and winning London Lifestyle Awards several years in a row. Bucking the current market trend which has seen a high number of notable bars and restaurants close already in the first quarter of this year, in 2017 every individual business within the group had their best year yet. Their first project was cult speakeasy bar Barts in 2009 swiftly followed by 80s themed nightclub, Maggie’s in 2010. Chantelle Lighting Chantelle Lighting is renowned for providing exquisite lighting to the hospitality sector and Hotel Indigo, Durham, is no exception. The stunning, Grade II 1890 listed building boasts period features such as tiled marble staircase, wood panelling and stained glass windows. Former home to the Durham City Council, a circular debating chamber and lobby room has remained and become the setting for the new restaurant and cocktail bar.

Chantelle Lighting was commissioned to provide lighting for the 100-cover Marco Pierre White Steakhouse Bar and Grill, in the 83-bed hotel. The lighting needed to reflect the existing features, creating a warm traditional feel throughout, with a slight modern edge. Taking pride of place above the restaurant is a bespoke multi ring feature chandelier in an antique finish with 48 individual pendant drops and acrylic shades, handmade by artisan craftsmen and women in Chantelle’s Lancashire home. Inox Technical Lighting designed and supplied all the architectural lighting for the newly opened Four Degree restaurant at St George’s Wharf, London. The restaurant has several zones, each requiring a different lighting solution. The main eating area is a galleried double-height space with open ceilings, where suspended track lighting is used to direct light onto the tables. The track is in slender lighting profiles, incorporating random white and colour-changing lit sections. The profiles are installed at various heights and orientations to create an interesting look that works with the exposed services. Other areas include VIP rooms, a private whiskey bar, seafood bar and art gallery. The VIP rooms include colour-changing lighting concealed in ceiling coffers and surface-mounted downlights. The gallery has a mix of track-mounted display projectors and colourchanging linear elements built into slim profiles. All lighting is controlled by a Mode Evolution and eDin dimming system.
