It started on Wednesday, June 29th. I was outside in my backyard that evening around 7:30 PM, when I heard the first BOOM of fireworks. Over the next few days, more and more fireworks were being launched around town. On Saturday, July 2nd, our family made the trip to the Callahan Fair Grounds to view a fireworks display, hosted by the Towns of Hilliard and Callahan. Despite the threat of rain and the humid weather, we found the fair grounds packed with folks, showing their patriotic pride! The fireworks lasted roughly 30 minutes, in what I would describe as truly spectacular display!On Saturday, we had plans to cook out and swim during the heat of the day! We then headed to a friend’s house for an evening cookout and fireworks. The entire neighborhood lit up that night as patriotic music was heard aloud. The smile on the kids’ faces were priceless as they ran around writing their names in the air with smoke from their sparklers. On July 4th, we decided to contribute to the fireworks display in our own neighborhood, purchasing some fireworks from the local vendor. The evening was again, filled with laughter and pride. Aunt Hattie’s place in the road on SR 200 by the railroad tracks
Tuesday afternoon a home previously known as Aunt Hattie’s place was knocked into the street on SR 200 by Harts Road near the railroad tracks. Some in the community are relieved that the house will no longer be an eyesore on their way to the post office. Others are sad that they will no longer pass the small house that once held great memories for them. The building used to be a home where those in need could go to get clothing and even help with finances if needed. Have a memory about this home that you’d like to share? In a large bowl mix flour, baking powder, cornstarch and salt. Add water, hot sauce and mix until the batter is smooth. Dip cauliflower pieces into the batter and coat evenly. Allow excess batter to drip off. Roll the cauliflower pieces in bread crumbs until coated thoroughly. Repeat until all cauliflower pieces are coated. Heat deep fryer to 365 degrees. Deep fry cauliflower pieces in batches until golden brown. Drain on paper towels. Season with salt (optional). If you don’t have a deep fryer you can use a skillet with 1 inch of oil in it. You’ll just have to turn the cauliflower pieces to fry on all sides.

DIRECTIONS: Preheat oven to 350 degrees. Combine crumbs, butter and 1 tbsp. sugar in a bowl. Stir well to coat all crumbs. Keep it crumbly. Press the crumbs onto the bottom and half way up the sides of an 8” springform pan. Bake crust for 5 mins. and set aside. In large bowl combine cheese, 1 cup sugar and vanilla. Mix with electric mixer till smooth. Add the lime juice and eggs and continue to beat till smooth and creamy. Pour filling into crust. Bake for 60 – 70 mins. If top is turning light brown it’s done. Remove from oven and allow to cool till room temperature. Put into fridge. When chilled, remove the pan sides and cut. Serve with whipped cream.

DIRECTIONS: Salt the eggplant rounds on both sides. Let them sit on sheets of paper towels for 1-2 hours to draw out the moisture. Press the round dry with paper towels. Preheat the oven to 425 degrees. Brush two sheet pans with 1 Tbsp. olive oil in each one. Grab 3 shallow bowls or plates. Add the flour to one, eggs to the second, then breadcrumbs, Italian Seasoning, and ¼ cup of the parmesan cheese to the third. Season each bowl with salt and pepper and mix well. Take an eggplant round and dredge in flour, then dip in the beaten egg, and finally coat with the themixture.breadcrumbPlaceroundon one of the prepared baking sheets, and repeat with the remaining olive oil over the rounds. Bake the rounds for 15-20 minutes or until golden brown. Reduce the heat in the oven to 375 degrees F after taking the eggplant rounds out. To Assemble: Spread 1 cup of marinara sauce over the bottom of a 9x13” dish. Lay half of the baked eggplant rounds in a single layer over the sauce, then top with 1-1/2 cup of marinara sauce followed by 1 cup of mozzarella and ½ cup of parmesan. Layer the remaining eggplant round, marinara sauce, and cheese in the baking dish. Bake for 20-25 minutes, or until the cheese is bubbly and browned. Garnish with fresh basil. Allow the casserole to rest for 20 minutes at room temperature before serving.

With a little training, Buckette is going to make some lucky family a lifelong companion. This eight-year-old dog has been in the shelter for almost 400 days.
