A lot of people are picky about their coffee. So is Selina Kitler, coffee shop owner in Yulee. On June 25, Selina Kitler opened Selina’s Friendsip Café, located at 850895 US Highway 17. Kitler offers her own signature blend of coffee. As well as lattes, frappes, milkshakes, and baked goods. She plans to add grits bowls and bagels soon. The café is a dream come true for Selina. For years, she ran coffee shops as a volunteer at the Murray Hill Theater and at the Generation Next Teen Center in Jacksonville. At home, she served coffee to her“Peoplefriends.would call me and say, ‘I need some Selina Time.’ So, I would make a dessert and a pot of coffee and they’d come over. We’d just sit and chat,” Kitler shared. She wants FriendSip Cafe to provide the same ‘sit and chat’ experience for her customers-a place to pause and have a conversation over coffee. Kitler came up with the name of her shop after a friend sent her a picture of a coffee mug she found in Tennessee. The mug said, “Having coffee with friends is the best therapy.” The photo got Selina thinking about friends, friendship, and then she coined the term, ‘friendsip.’ As for the therapy, Friendsip Café is a place for customers to write down prayer requests and leave them in a large By Nancy Lee Bethea

Take care kid! coffee cup on a counter in the shop. Kitler comes in two hours early to pray over her customers, her staff, and her shop. One woman recently asked Selina if she actually prays over the requests. Selina said yes. The customer went on to say she could tell someone was praying because she had not told anyone about what she put in the cup. But something positive happened to her that week. Selina plans to change her hours to be more available to the school crowd in August. She looks forward to serving teachers, moms and dads, and kids who might need a treat before or after their long school day. And beyond that, Selina hopes to expand and add another café near Hilliard. “I want to stay in Nassau County. I feel like we need more shops like this out this way,” she said. The Friendsip Cafe once served as Yulee’s first post office. To turn it into a coffee shop, Selina and her husband, Randy Kitler, had a lot of renovation to do. Starting back in April 2021, they knocked down walls, rewired, replumbed, painted, and installed new doors and windows, among other things. Randy did much of the work himself. For now, Selina is thrilled to provide great coffee, delicious baked goods, and a peaceful place for her customers to pause for a few minutes. “When people come in, I want them to feel good,” Kitler shared. Tips and notes: This recipe generated 13 cabbage rolls, but you could get more or less depending on how big or small you make them. You can store leftovers covered tightly in aluminum foil, plastic wrap or an airtight container in the fridge for 3-4 days.

Preheat oven to 375 degrees F Prep the cabbage: Bring a large pot of water to a boil and add the vinegar, Gently peel away the leaves of the head of cabbage. If you are having trouble peeling the leaves without tearing them, dunk the head of cabbage into the boiling water for 1 min, then peel, repeat if needed. Cook the cabbage: Add cabbage leaves to the boiling water and cook for 2-3 mins, or until softened and pliable. Transfer the leaves to an ice bath for another 2-3 mins, then drain the leaves well. Cook the rice: Heat the olive oil in a skillet over medium-high heat. Add the onion and cook until translucent and softened. Add the rice, stir, and cook for 1 more minute. Remove the skillet from the heat and let the mixture cool for 5 minutes. Combine ingredients: Add the pork, parsley, dill, salt, pepper, and rice mixture to a large bowl. Mix until well combined. Make the Rolls: Slice a V shape at the bottom of each cabbage leaf to remove the thick part of the stem, about 1-2 inches long depending on the size of the leaf. Hold a leaf in your hand and fill it with 3-4 tbsp. of the meat mixture. Roll, and use your finger to poke and tuck the sides of the leaf into the roll. Repeat with remaining leaves and meat. Assemble: Add the rolls to a large baking dish or oven-safe pot. Sprinkle the chopped bacon over and between the rolls, then pour in the tomato juice to just barely cover the rolls. You can top it off with water if the rolls aren’t covered. If using a pot, cover it with a lid. Otherwise, cover the dish with aluminum foil. Bake: Bake for 2 hours, then remove the lid or foil, and bake for another 1-1/2 to 2 hours.

¼ cup white vinegar 1 head green cabbage (2-2.5 lbs.)

2 Tbsp. olive oil 1 large onion, diced ½ cup rice (long grain, uncooked, 1 used 2basmati)Lbs.ground pork or beef

¼ cup fresh parsley, chopped ¼ cup fresh dill, chopped 1 tsp. salt or to taste ½ tsp. pepper 15 slices bacon, diced 4 cups tomato juice

1 Lb. ground beef 1 large onion, chopped 3 cloves garlic, minced 2 Tbsp. taco seasoning ¼ tsp. salt or to taste ½ tsp. pepper or to taste 1 cup rice, cooked 2 cups salsa 3 large bell peppers, cut in half through the stem, seeded 8 oz. cheddar cheese, shredded 1 Tbsp. parsley for garnish Preheat oven to 375 degrees. Wash and seed the bell peppers and cut in half from top to bottom. Place in a greased 9x13 baking dish and set aside. In a large skillet brown the ground beef, onion and garlic. Drain any fat if necessary. Season with taco seasoning, salt and pepper. Add the rice and ½ cup of the salsa then stir well. Scoop the mixture into the bell pepper halves and top with remaining salsa and half of the cheese evenly over each pepper. Cover the baking dish with aluminum foil and bake for 45 minutes. Uncover, top each pepper with remaining cheese and bake for an additional 5 minutes or until the cheese melts. Garnish with fresh parsley and serve with sour cream or guacamole. Tips and notes: Refrigerate the peppers in an airtight container. Properly stored, cooked peppers will last for 3-5 days in the refrig. Freeze unbaked: Freeze the unbaked peppers (without cheese), then thaw in fridge for 24 hours. Bake the peppers once thawed. Once ready, add the cheese as above. Freeze Baked: After removing from the oven, allow to cool slightly before placing them in the freezer. Store in freezer Ziploc bags they are good for 3-4 months.

I’ll be the first to admit – this is a beautiful tree. Unfortunately, it is highly invasive. You can easily see this tree sprinkled throughout the landscape because of its beautiful flowers and unique leaves. Originally introduces in the US in the 16th Century, Mimosa Silk Tree now spreads easily along forest edges and pops up in our landscapes. It produces very attractive flowers and long strawcolored bean pods about 6″ long. Although it is not documented in Nassau County, it is located in North Florida. Keep an eye out for this invasive tree and report it if you discover it in your landscape or natural area. Preventative I admit it – this is a beautiful tree. Don’t let its beauty tempt you – it is highly invasive. To prevent the spread of Mimosa Silk Tree, do not purchase, transport, buy, sell, or trade this plant, no matter how tempting this landscaping siren may be. Additionally, if this tree pops up in your landscape, the removal of seed pods will help reduce its spread. Cultural/Physical Hand-pulling seedlings and saplings control its spread. Although, homeowners will find the removal of larger trees more difficult. If you find yourself tempted, think of the beautiful landscape alternatives, which include Bottlebrush (Callistemon citrinus or C. linearis), Fringe Tree (Chionanthus virginicus), Cassia (Senna ligustrina), or Acacia (Acacia farnesiana). Mechanical Controlling Mimosa Silk tree is most effective prior to flowering and seed production. For small saplings and seed pods, it is easy for homeowners to easily remove and dispose of plants. For larger trees, felling trees closely to ground level improves control. Although, due to their resilience, continually cutting sprouts is required and trying to remove as many of the roots as possible because the Mimosa will sprout from the remaining fragments.

The 2022 Atlantic Red Snapper season was July 8th and 9th. The weather put a damper on many of the fisherman in our area. The seas were 3 to 4 feet on 5 seconds which made for a very rough ocean. Many local fishermen went and made the most of the two days of fishing. The fishing was awesome. These monster fish ate anything put on the bottom. Most boats were getting their limits within a couple of hours. The afternoon thunderstorms made for some exciting return trips home or the boat ramps.

According to Langley, the mural campaign promotes six easy ways visitors can avoid or minimize some of the common situations that can sometimes disrupt an otherwise memorable vacation experience in a popular destination like AmeliaPlanIsland.Ahead.

The Amelia Island Convention and Visitors Bureau (AICVB) has partnered with Arts & Culture Nassau to create a traveling mural for visitors and locals alike to enjoy while discovering Amelia Island. Those who find the mural are encouraged to share their own photos and memories of it on social media using #BeKindAmelia. The traveling mural was created by local artist Lamar Miles and was initially placed at the Amelia Island Welcome Center (102 Centre Street) on Friday, July 1. The mural will move to the pocket park next to Amelia Island Coffee (July 8-15) before visiting several Amelia Island locations throughout July and August. In July, the #BeKindAmelia mural schedule includes: July 8-15: The pocket park next to Amelia Island Coffee (July 8-15) July 15-22: Fernandina Harbor Marina (July 15-22) July 22-29: South 2nd Street and Ash Street at the park across from City Hall (July 22-29) In August, the #BeKindAmelia mural schedule includes: July 29-August 5: Main Beach Park August 5-12: Seaside Park August 12-19: Peter’s Point August 19-26: American Beach/Burney AugustPark 26-September 3: To be determined To learn more and view the full summer mural location schedule, visit AmeliaIsland.com.“Duringthebusy summer months, hospitality professionals in Amelia’s restaurants, hotels, attractions and shops thrive on and return the positivity and kindness of our visitors as they explore and discover the island,” said Gil Langley, President and CEO of the AICVB. “The traveling #BeKindAmelia mural is a visual representation and reminder for visitors to help spread kindness and make the most of their time on Amelia Island.”

Before venturing out for a day of fun, check your options and plan ahead by making dinner reservations, tee times, and other scheduled activity in advance to avoid delays. Amelia Island has a lot of options – golf courses, restaurants, boating and fishing trips, and more – so if one thing isn’t available, visitors can easily move on to the next. Try Something New. If your favorite restaurant is booked, try one of the island’s many new award-winning dining hot spots. And if your go-to meal isn’t on the menu, try the chef’s special, which is alwaysSaygood.Thank You. The tourism industry is made up of great people who want you to have the best vacation ever and love serving you. Saying “thank you” really does go a long way. Be Patient. Summertime on Amelia Island is awesome, but it may come with wait times. Take this opportunity to slow down and appreciate the scenery around you. Maybe play a round of nearby mini golf or stroll the area while you wait. Have Fun. Embrace the moments and most importantly remember that you’ve traveled and chosen Amelia Island to make memories that will last a lifetime. Remember. On a southern island, the pace is supposed move a little slower so you can savor the moments. Follow the #BeKindAmelia traveling mural by visiting AmeliaIsland.com.

Once again, the Nassau County School District is “A rated” and the second highest rated school district in the state.
