Juicy Thai Pork & Veg!!!

When your family members ask you what’s for tea, watch their faces light up as you reveal it’s your secret midweek weapon – juicy pork and veg in a tasty Thai peanut sauce!

3½ Syns per serving

Ingredients

● 250g dried medium egg noodles

● 1 level tbsp reduced-fat crunchy peanut butter

● 1 level tbsp sweet chilli sauce

● 2 tbsp light soy sauce

● 1 tsp Thai fish sauce

● Low-calorie cooking spray

● 600g lean pork fillet, visible fat removed, thinly sliced

● 1cm piece fresh root ginger, peeled and grated

● 600g pack mixed stir-fry vegetables

● A large handful fresh Thai basil, roughly chopped

● 25g roughly chopped roasted peanuts

Method

Cook the noodles according to pack instructions. Rinse under cold water, drain and set aside.

Put the peanut butter, sweet chilli sauce, soy sauce and Thai fish sauce in a bowl with 200ml water and mix until smooth. Spray a non-stick wok or large frying pan with low-calorie cooking spray and place over a high heat. Stir-fry the pork, ginger and veg for 3-4 minutes. Add the noodles and stir-fry for 1-2 minutes, or until the pork is cooked through and the vegetables are tender.

Push everything to one side of the pan and pour the peanut sauce into the other side, tilting the pan to keep them separate. When the sauce is bubbling, mix it into the stir-fry and sprinkle over the basil and peanuts. Divide between 4 plates or bowls and serve hot.

Christmas Collection raises hundreds for cancer support charity

REPRESENTATIVES from Recovery Haven Kerry Cancer Support House paid a return visit to Ballyseedy Home and Garden this week where they graciously picked up the proceeds of a very successful Christmas charity collection that was run at the centre throughout December.

Hundreds of euro was raised for the charity, and marked the beginning of a new and exciting collaboration between the renowned Kerry business and Recovery Haven Kerry for 2023.

Thanking everyone who supported their Christmas collection, Elizabeth Fearns PR & Events of Ballyseedy, said that she was so impressed by

the goodwill and support from the public that it has inspired her and the team to do even more for the cancer support charity this year.

Recovery Haven Kerry’s PR & Marketing Officer, Marisa Reidy, said that it was a real pleasure to work alongside Elizabeth and the amazing team and Ballyseedy on the Christmas collaboration, adding that it is humbling to have their support again in 2023.

Excitement was in the air as over 150 people attended Cara Credit Union’s Prize Giving Night in Manor West Hotel, Tralee.Inspirational artists attended from Tralee, Castleisland, Killorglin, Ballyduff and Causeway along with their teachers and their families. The theme of this year’s Credit Union Art Competition from U 7’s to Adult categories was the ‘It’s a Wonderful World’ . Good news for Chamber member Kerry Airport and great news for anyone looking to soak up some summer sun. Ryanair have announced additional flights to Alicante from Farranfore beginning March 27. Now holiday-goers can jet off to the gorgeous Spanish resort on Tuesdays, Fridays and Sundays up until the end of October. Flights to Faro in Portugal’s Algarve are also set to return twice weekly departing Wednesdays and Sundays from March 28. The Kerry-Manchester route will also have an extra day, operating Mondays,

Wednesdays and Fridays from 26th March onwards. 2022 was a bumper year for Kerry Airport with a 309 per cent increase on 2021. Overall, 356,141 passengers travelled through Kerry Airport last year. Net minder Wayne Guthrie joins Kerry FC

Kerry FC is delighted to announce that shot-stopper Wayne Guthrie has signed for the side ahead of the 2023 SSE Airtricity First Division season.

Guthrie, well known for his time between the sticks for Kerry GAA side Austin Stacks, returns to the game that he has a vast experience of. Having played underage soccer with Kingdom Boys, Wayne made the move cross channel to Peterborough United. On his return to the Kingdom, he signed for Tralee Dynamos where he played League

of Ireland . Guthrie also wore the international shirt at under 15 level In recent times, Wayne has had a glittering GAA career with Traleebased club Austin Stacks as firstchoice keeper.

Speaking on his move to Kerry FC, Guthrie said “Soccer has always been my first love and if Kerry FC had happened years ago I would have given my all to wear the Kerry soccer jersey. “

First team manager Billy Dennehy said “When Kerry FC got the green light, Wayne reached out to us

here and expressed a real desire to come in and be a part of Kerry FC. He came in training for a couple of weeks and showed a great attitude and determination and a great desire to be a part of Kerry Football Club. KOR NOTES

Annual 5 & 10k Run:

The run is in its 9th year and promises to be one of the biggest and best yet. Participants can register on the online platform myrunresults.com.

This year’s run honors club stalwart, the late Tom Begley, who was a dedicated GAA volunteer and had a lifelong association with the club.

Seniors:

The seniors are currently on a break, but will be back in action soon with the National football league starting next week and the Tralee town board in midFebruary.

NÓTAÍ NA mBAN (Ladies Section):

The ladies section of the club is thriving and new players are welcome to join.

Some of the girls have made the panel of the Kerry teams at U14, U16, and minors, a great achievement.

The U12 girls had their first session of the season last Saturday and are excited for the new season.

The U14 and U16 girls will begin indoor training soon.

The minor ladies have already kicked off with a challenge game and the senior ladies’ training dates will be announced soon.

SAFEGUARDING:

A safeguarding 1 course for coaches and officers will be held on February 2nd. It is mandatory that all engaging with U18s has this course completed and renewed every 3 years.

AGM:

In preparation for the new season, there will be a meeting in the Healy room at 7.30p.m. on Wednesday 25th. All senior players, parents, and coaches are invited to attend.

SCHOOL FOOTBALL:

Congrats to Mercy Mounthawk Junior ladies and our club players who are now through to the final after beating Our Ladys, Templemore in the Munster semifinal last week.

Best of luck in the final in a few weeks time v Skibbereen.

• Well done to the John Mitchels players who were part of a historic Mercy Mounthawk win in the Corn Ui Mhuiri quarter final over Clonakilty CC

• Sean Corkery and Bobby Bryne played vital roles in the victory while we also had panelists Cian O Shea, Cathal Murphy and James Moran.

• They will now play the winners of The Sem and Bandon in the Semifinal on January 28th.

• Irish Life Steps Challenge returns, starting on January 11th and running till February 15th.

• Club will be entered into a draw to win O’Neill’s vouchers once they collectively hit 4000km in steps.

• Everyone should register on the “My Life” app, and join “Munster GAA - Every Step Counts”, and “John Mitchels Kerry”.

• Ireland Lights Up weekly walk, in collaboration with “Operation Transformation” will return on Thursday 12th January at 7pm on our Club walkway.

AUSTIN STACKS

The Austin Stacks GAA club had a successful weekend of training for their Under 7, Under 9, Under 11, and Under 13 teams. The Under 7 and Under 9 teams had their second session of the year in the Mercy Mounthawk Gym, while the Under 11 team had a workout on The Green CBS Astroturf Pitch. The Under 13 team, led by former Kerry Minor footballer Jack Ó Muireagáin, continues with Friday night sessions at the Kerry Sports Academy and will begin Sunday morning sessions at the MTU GAA astroturf pitch on January 29th. The Rock minors are also back training again on Sunday mornings at 12:00 in Connolly Park for the first game in the Division 1 Minor County League on February 18th. The club announced a supporters’ night on February 4th honoring their senior players and announcing the Super Supporters award. They also reminded members of their online club shop, club cards on Monday and Thursday nights and club lotto with a jackpot of €3,150.

• There was no winner of the club Lotto jackpot of €5000 on Sunday night last. The numbers drawn were 01, 02, 03, and 11.

Ireland Lights Up

• Our walking series as part of ‘Ireland Lights Up’ will continue this week.

• We look forward to 4 more weeks of group walking. Registration starts at 6pm setting off from St Pats Clubhouse at 6.30pm sharp, don’t forget to sign in and wear your HIGH VIS jacket.

• The route for this year is starting at St Pats Clubhouse V92RH98, by the canal to the marina and back again. It is a free event and refreshments afterward. No Age limit and Buggies are welcome.

Gerry Ryan Memorial Gala

A great weekend of swimming was had at the Gerry Ryan Memorial Gala in UL, held over the weekend ; The three day invitational Gala welcomed clubs from all over Ireland to compete in LC (Long Course50m) and provided the first opportunity of the year to achieve qualification times for up-coming championships. Well done to all swimmers , many of whom achieved PBs and qualification

times. Special mention to Alex Ahern on an impressive performance in his 100m free recording a new PB of 1.07.- One to watch! A special word of congratulations to our medal winners-

Well done also to our swimmers ,for whom this was their first experience of swimming LC - Iza, Rebecca, Ali, Chloe, Emily, Alex & Fernando. Thanks to Limerick Swimming club for hosting and to our team managers, coaches, officials , volunteers and everyone who assisted in the preparation and running of the event.
