Míle Buíochas Hardy Mattu who ran L & H Laundry in Dingle for many years sadly passed away in December 2019. Okay 2021, Let’s Be Havin’ Ya! Irene Ní Fhlannúra

Well, what a start to 2021 – we are still in Pandemic mode, still stuck at home and there are still a few bags of Taytos hanging around along with all those soft-centred Roses that nobody wants. We are only a few days into the new year and some folk have already made plans to get healthier in 2021, maybe get out more, clock up more steps during the day, eat less crap and drink more water – all very honourable resolutions and to be commended. The Diet industry is geared up for its busiest time of the year as more than 40% of Irish adults resolve to lose weight every January, most of whom repeat the same resolution, year on year. If improving your health is on the agenda this year, maybe try a different tack, particularly for weight loss goals and ditch the quick-fix diets, food fads and the countless celebrity-led regimes that will break your heart and make you feel like an utter failure. This year try a little Kindness to yourself, step back and watch the good times roll! I have made some wild predictions for food trends over the years, most of which are still in the making – Camel milk (2016), Insect powder protein (2013), Medicinal mushrooms and CBD-infused pyjamas (2018), Poo emoji Ice cream (2019) and the brain performance enhancers, Nootropics (2020). Disappointingly, I might have got a few things wrong, but the good news is that critter-crunchies, bug buns and wormaghetti could still end up in your local supermarket in 2021! With food sustainability high on the agenda, the experts are again predicting that insects will make it to our shores, but perhaps with the Brexit fiasco, the camels will have to re-think their route! This year I will play it safe and forget the trends dictated by corporate interests – instead let’s look back at the extraordinary year that was 2020 and improve upon the positive opportunities that came from an unforgettable year. One of the great outcomes of 2020 is the huge surge in home cooking and people trying out new recipes and new ingredients. Although there was a glut of banana bread in the beginning of the pandemic, it soon settled down and families finally had time to cook from scratch and share meals together. Cooking real food is at the core of self-care and self-preservation. When all else seems out of your control, the food you choose to prepare and eat can be the anchor to keep you grounded, nourished and fuelled for all the craziness going on around you. Whether you are cooking for one or dishing out for a few – be kind to your body, nourish it with the best quality ingredients that you can afford and stay clear of cheap processed foods. This is a true act of kindness and one that will not only help you shift a few kilos but will empower you to create other healthy habits in your life! The good news for 2021 is that it is the UN International Year of Fruit and Vegetables – yippee! Experiment with new ways and recipes to put the good stuff in your belly this year. The suddenness of adapting to the Covid19 crisis put many people in a state of Fight or Flight last year. The stress response is the body’s way to survive imminent danger in the short term, it over-rides many functions of the body to deal with a threat at hand and does so very well. However, long term stress (also known as chronic stress) never allows the body to recover and repair itself and the constant state of alert can wreak havoc on your health. This year be kind to yourself and accept that we are not out of the pandemic yet. All the tools you need to manage stress are within you – your thoughts, your mindset and your physical body when allowed to, can deal with extraordinary events. Allow yourself to rest, optout of social media and the news and take deep breaths when it gets too much. The space you create for yourself to “take a moment” is the space from which solutions and hope flow. Trust this space. More than 45% of 6 Corca Dhuibhne Beo

people eat more in response to stress – make sure the food you surround yourself is going to feed you and not feed the stress-monster. Mineralrich foods come from our soil and sea bed. Dig deep when you need to dig deep for nutritional support during stressful times. Include roots, sea vegetables, mushrooms, bones and plenty of dark green vegetables in broths, slow-cooked stews and earthy meals for the kind of sustenance Mother Nature provides for us. Finally, the greatest act of kindness you can show yourself, is to get a good night’s sleep! People who average 6 hours sleep per night or less, consume 22% more calories the following day. Sleep allows the body to process the day’s events and put them in perspective. Sleep enhances the immune response and recharges the batteries. Prepare for a proper sleep with a plan to truly wind down. Ditch the night-time snacks to allow for a 12-hour gap between the last meal of the day and the first of the following day. I am often asked what the best night-time snacks are and honestly, there are none but if you are in dire straits you could try a couple of squares of dark chocolate, melted in warm milk and a handful of pumpkin seeds. Instead of focusing on food in the evening, unwind by dimming the lights, switch off the screens and become stiller and quieter. Think back to what you would do to put a baby to sleep (cuddles, warmth, a soothing bath, peaceful atmosphere) – be kind and do the same for yourself. Whatever you resolve to do better this year just make sure it is something that gives you joy and comes with ease. I’m not giving up on the insectdinners or the camel milk lattés and look forward to heralding their health benefits when they finally arrive! Dreoilín na n-Óg from the school were to be the first wren out on the day. Covid restrictions however, curtailed this year's wrens. Farming News Louis Murchan PAYMENTS TO-DATE EXCEED €259 MILLION UNDER TAMS II

some DAFM schemes. It is not permitted to submit forms by post through any office of the department. The onus remains with the flock/herd keeper to make sure that completed census forms are received on time. The department said that in the case of dispute regarding postal returns, the only acceptable proof of postage is a registered post receipt. A postal certificate or express post receipt is not acceptable as proof of postage.

Payments to-date under the Targeted Agricultural Modernisation Scheme (TAMS) II scheme have now exceeded €259 million and continue to be issued at an average rate of €1.4 million per week, according to DAFM. It is hoped that the Department work on their efficiencies. Many applicants in the past have believed that their application was processed and ready to be paid, only to receive a letter asking for additional details. This can often be followed by and another letter asking for even more details. This causes annoyance, aggravation and unnecessary additional work. Could it be possible that all required documents be requested at once, rather than in “dribs’n’drabs”.

HIGH UPTAKES OF GLAS, ORGANICS AND BDGP

There are still approximately 7,700 approved applications with farmers who have yet to submit payment claims. The level of interest in TAMS II is continuing, the department noted. A total of 3,224 new applications were received under tranche 19 of the TAMS scheme which closed on Friday (November 13). However, the lowest ranking 30% (1,086) of applications under the previous tranche were rolled over for consideration under this new tranche. This means there are now a total of 4,310 applications for consideration under this tranche with a value of over €41.4 million, according to the department. Tranche 20 of the scheme is due to close on January 15, 2021. Applications under this tranche and the lowest ranking 30% from tranche 19 will be considered. The Department noted that notifications have commenced issuing to applicants under tranche 19 as to whether their application has been approved or rolled over to the next tranche for consideration then it will again be open to applicants to withdraw their rolled-over application and reapply with a new application if they wish.

BIRD CULL ZONE IN NI FOLLOWING AVIAN INFLUENZA IN COMMERCIAL FLOCK Northern Ireland has initiated disease control measures, including a bird cull zone, following suspicion of notifiable avian influenza at a commercial holding in Co. Antrim, (not a million miles from here, and closer to the poultry capital of Ireland – Co Monaghan). The decision was based on clinical signs and the initial results provided by the AgriFood and Biosciences Institute (AFBI), as well as the recent detections of Highly Pathogenic Avian Influenza H5N8 in a number of wild birds across Northern Ireland. In an effort to stop the spread of the virus and protect the poultry industry, temporary control zones have been introduced around the affected premises and birds on the site will be humanely culled. Given the level of suspicion and the density of the poultry population around the holding, it is vital that as a matter of precaution, we act now and act fast. To date, there have been eight positive cases of Highly Pathogenic Avian Influenza (HPAI) H5N8 confirmed in wild birds in Northern Ireland across five different locations. There have also been recent detections in wild birds, poultry and captive birds across Britain, in addition to detections in the Republic of Ireland. An Avian Influenza Prevention Zone (AIPZ) has been in place across NI from December 1 to further enhance biosecurity measures and a mandatory housing order has been in place since December 23. In the North, as in The South, Avian Flu Influenza is a notifiable disease. As a result, anyone who suspects an animal may be affected by a notifiable disease must, report it by law, SHEEP AND GOAT CENSUS 2020 Farmers are reminded that last Thursday, 31st December (New Year’s Eve) was Census Day for sheep and goats’ populations around the country. Failure to submit this, on time will result in those farmers being excluded from ANC Payments where these livestock numbers are vital for participation – (i.e. sheep-only farmers). Annual sheep and goat census forms were issued to over 47,000 sheep and goat keepers registered with the department. Completion and return of the census is a legal obligation. The closing date for receipt of completed 2020 census forms by post is February 1, 2021. However, respondents submitting a census return online may avail of an extended closing date to 11:59pm on February 15, 2021. Failure to return a completed form on time could impact on eligibility for 12 Corca Dhuibhne Beo

The Minister for Agriculture, Food and the Marine, Charlie McConalogue T.D., announced today that the vast majority of farmers in the Green Low Carbon Agri-environment Scheme (GLAS) and the Organic Farming Scheme (OFS) have applied to extend their contracts for 2021. The deadline for applications was 31st December. The Minister also noted a high uptake to date in the replies to date on the extension of contracts under the Beef Data Genomics Programme (BDGP) which closes on 15th January next. The uptake as of this morning (Tuesday 5th January 2021) is that:

• 97% of OFS participants responded by the deadline and of these, 97% applied to continue in the scheme for an additional year (2021) • 52% of BDGP participants have responded to date and of these 97% have applied to continue in the scheme for 2021 (Note: the deadline for application for extension of BDGP contracts is 15th January 2021). WEST KERRY DAIRY FARMER’S SEC Local initiatives are good, and here’s a very good one. This is a local action group operating primarily from Lispole,; but catering for all farmers on the peninsula, to carry out Audit(s) on farms in the area on energy efficiency. As the dairy industry sector is the principal energy user in the farming sector, it is not their exclusive right, and intensive suckler/beef farmers may be interested in the idea also. The idea is that through funding and guidance from The SEAI, farmers will be able t have a professional audit on all energy usage on their farm, and to identify ways and means, (practices and technologies) that can reduce any unnecessary energy usage. Reduced energy usage means reduced costs which in turn means reduced carbon foot-print. All of this makes sense. Its what is called a “No-Brainer”. Everybody wins! The application has been submitted to the SEAI, and the Local Coordinator Mr Dinny Galvin has been in contact with as many farmers as he can. He pointed out that this is not an exclusive club, and that anyone who warrants involvement will be considered. The Eligibility Process has yet to be finalised, but I’m sure that as long as you have an Irish Passport, or Legal Work Permit, and a Herd Number, you will be considered. Once all who are interested have been identified, a Zoom meeting or series of them, will be organised to explain and expand on the project. These are difficult times, so people are asked to be understanding and accommodating, as the organisers are working as best as they can, despite the current restrictions. It is intended to organise this Zoom Meeting/ Conference in Mid-January, so don’t delay in making contact. A letter is being issued by the group to all who are interested, and anyone who is considering getting involved can contact westkerrydairysec@ gmail.com with their expressions of interest. COST EFFECTIVENESS OF USING LOW EMISSIONS SLURRY SPREADING (LESS) New Nitrates Regulations are being implemented, as we speak, and being tweaked on an on-going basis. There will soon be a need for everyone to sit-up and take notice. One of the most significant new regulations will be the abolition of splash-plate slurry spreading and the requirement for trailing-shoe or dribble bar technologies to be applied. However, moving from using splash-plate to LESS techniques has been identified as one of the most practical and cost-effective options to increase N use efficiency and reduce ammonia and greenhouse gas emissions from farms. The extra cost per hour is small when the extra N value from the slurry when using trailing shoe is taken into account. Depending on the amount of loads spread per hour, the extra N covers between 42% and 83% of the extra €20/hr cost in using a trailing shoe


compared to a splash-plate. For a 100 LU farm spreading 150,000 gallons slurry per year the additional contractor cost minus the value of the extra slurry N ranges from €0.45 to €3.45 per LU per year depending on the amount of loads spread per hour. Making better use of nitrogen in slurry with LESS methods offsets up to 83% of the extra contractor costs per hour for the LESS equipment. Coupled with the ability to spread slurry on grass covers of up to 700 Kg DM/Ha means you should seriously consider LESS methods for spreading slurry in Spring 2021. FARM FATALITIES REMAIN UNACCEPTABLY HIGH IN 2020 This is the time of year to reflect on your activities last year, and see how your behaviours can be improved upon, for the coming year. This is not a criticism, or a warning, but a plea. There have been too many injuries and deaths on farms and land over the past year. The fact that Covid-19, (recently referred to as (Cyrus the Virus) is still with us, and that schools and collages as well as workplaces are closing down again, the possibility of accident is even greater, so Greater Care Must Be Taken. The Minister of State at the Department of Agriculture, Food and the Marine with Special Responsibility for Farm Safety, Martin Heydon T.D., has highlighted the significant number of fatalities on Irish farms in 2020 as a result of workplace incidents.

From The Archives Edited By Ted Creedon Fatal Accident on the Connor Pass From – Kerry Evening Post – 7 December 1867 Two men lost their lives on the Connor Pass last Wednesday night while returning to Brandon from Dingle. The deceased have been named as Michael Murphy of Ballyquin, a prosperous farmer, and Daniel Morrison, the chief boatman at the Brandon coast-guard station. The victims of this tragedy, accompanied by another coast-guard named Thomas Seavers, were travelling by horse and car when the accident occurred. Murphy was driving the car while Morrison was seated beside him with Seavers sitting behind. For some unknown reason the horse took fright and began to gallop along this very treacherous road with plunging cliffs on one side. The wall on the left side of the road is very low and the left wheel of the car mounted the wall and capsized the car. The three men were flung against the rocky cliff face on the right side of the road and the car crashed down on top of them. Murphy was killed instantly and Morrison was heard groaning for a while by Seavers who was jammed by the car and unable to move. He lay in that position for six hours until some women came across the accident. They went for help and medical assistance and Seavers was released and although bruised he had not suffered serious injury. Michael Murphy, aged 34, leaves a wife and seven children while Morrison, aged 50, leaves a wife and five children to mourn their loss.

Blasket Wreck – Minard Rescue From – Kerry Evening Post, 6 April 1850 A three-masted sailing ship, the Commerce of Liverpool, with a cargo of palm oil bound for her home port, was wrecked on the Blasket Islands three days ago. For several days prior to that the ship had experienced very stormy weather. She was taking on water which reached a height of 12 feet in the hold. Seeing their situation was hopeless the 29 souls on board launched their long boat and headed for land.

Fell from Mail Car. From – Kerry Evening Post, 20 December 1893 John Goggin, rabbit trapper, was admitted to the County Infirmary on Saturday night suffering from a broken leg, the result of a fall from the Dingle mail car.

Stranded on Beginish From – Kerry Examiner, 2 February 1847 On the 23rd of January the brig Alabama, bound from Nova Scotia to Liverpool, experienced very heavy weather off the Kerry coast and sought shelter in Valentia harbour. However, she was unable to gain the harbour because of strong southerly gales and was forced to ride at anchor outside the harbour. The vessel was carrying a cargo of timber and butter. The following morning saw the gales increase to hurricane force. One of the Alabama’s anchor chains snapped so the captain, Hugh McMonagle, decided to raise the other anchor and make for shelter near Beginish Island. Their situation was so perilous that the captain decided to take advantage of the rising tide and beach his ship on the north side of the island. The captain and crew managed to make their way ashore. When the tide receded the crew commenced unloading the cargo in order to lighten the vessel and get her free when the weather improved. The ship’s entire rigging was also removed and is under the protection of the coast guards.

Leap Year Dance From – Kerryman, 27 January 1912 The Dingle ladies Leap Year Dance was held in the Temperance Hall last Saturday night and was one of the best ever held in Dingle. The event was opened by Mr. and Mrs. Patrick J. O’Sullivan of the Lighthouse and Mr. O’Sullivan thanked the ladies for the honour conferred on him.

As they made their way up Dingle bay they were spotted by the coastguard look-out at Minard who signalled them to come ashore there. The crew, including their captain and four black men, were sent by hired car to Tralee and from there to Queenstown [Cobh] for passage to Liverpool. Each man was given one shilling and sixpence per day, as subsistence, by the Tralee agent for the Shipwrecked Mariners Society. The value of the cargo is estimated at £15,000.

Thunder and Lightening From – Limerick Chronicle, 18 December 1850 We have received a letter from Dingle stating that the area experienced a powerful thunderstorm this week. Nothing could exceed the brilliancy of the lightening, which continued in rapid succession. The weather continues to blow an immensely powerful hurricane, and all of Dingle Bay is a single sheet of white foam. The Erin-go-Bragh steamer from Limerick, which came here to tow the Prudence, rescued from the recent storm, is riding out the gale in Dingle harbour.

Fishermen Join Coast Volunteers From – Kerry Evening Post, 27 May, 1854 Up to 300 people, mostly fishermen, assembled beside the Dingle coastguard Watch House this week to hear about the recruitment of coast volunteers. A Royal Navy officer, Captain Jeringham, addressed the gathering and explained that the coastguard service would no longer be hiring extra men in time of need. In future, extra men will be replaced by naval coast volunteers. He then asked that those who would like to join the volunteers to form a line. Around 80 men assembled in a line immediately. They ranged in age from 18 to 50. Those who were 18 declared themselves to be 22 and those of 50 declared themselves to be 35 – they were so anxious to join. These volunteers then underwent a medical inspection and of the 80 who lined up 23 were accepted as fit for service. All except one or two were fishermen by trade and were certified as coast volunteers by the Paymaster.

We've tried hard to make the village a better place. Sadly, however, since the pandemic began, we have found it increasingly difficult to find the support required to sustain our work and commitments. Most of the business outlets and services in the Peninsula recorded increased local support over the Christmas period as a direct result of the Shop Local national campaign this year. Dingle Business Chamber wishes to say a sincere Thank You to the local community for their support and hope that the Shop Local theme will continue as we can all help local jobs by considering local outlets and produce if at all possible. The town and surrounding area really looked very bright and cheerful with so many lights, trees and decorations in all commercial premises and private houses also. The Covid enforced absence of the Wren Parades, New Years Eve Fireworks Display and Fife & Drum Midnight Parade meant a quiet festive period in Dingle this year. However well done to the various Wren Groups who marked the occasion by playing a few tunes outside their home bases. Tradition continues in Dingle no matter how high the obstacles!!!. T.V. PROGRAMMES. The Dingle Peninsula certainly got a lot of positive publicity over the Christmas period with several T.V. programmes featuring local artists and topics as well as taking in some of our beautiful scenery. The Fungies Kingdom programme really got to the depth of the Fungie story and all the participants played their part in contributing to what perhaps was Fungies T.V. epitaph. A word of thanks to all the emergency services personnel both on land and at sea who took part in the recovery of his body in such sad circumstances. MASS. Weekend Masses at 8p.m on Saturdays and 11.30a.m. on Sundays will be available on St Mary's Church Webcam until the present Covid restrictions are lifted. However the church is open daily for personal visitation and patrons are requested to follow the guidelines outlined at the entrance porch. ROAD SAFETY. We appeal to all road users to take care when travelling no matter what the weather conditions or forecast predicts. A good number of cyclists, runners and walkers still do not wear high vis clothing particularly on the country roads and contribute in providing a serious danger to themselves and other road users also. High vis clothing is not very expensive and is readily available in local outlets. COVID RESTRICTIONS. Under present guidelines we are requested to exercise within a 5km limit of our homes. I was deeply dissappointed to see on social media last weekend prominent people posting pictures of their activities well beyond the limits here in the Peninsula. I wish through these notes to appeal to everybody to show good example and help prevent the rampant expansion of the virus by curtailing your social activities as much as possible at least for the next few weeks.

Creative Industries for us includes anyone working in the creative sector, creating a job for themselves in this area, e.g. musicians, artists, photographers, filmmakers, graphic designers, etc. We look forward to working with you all in 2021 to identify and explore opportunities that will help create an economically and environmentally sustainable future for us all. West Kerry Dairy Farmer’s Sustainable Energy Community (SEC) This group, initiated by Dinny Galvin with the support of the farming community, has progressed to develop a vision and a constitution and to be formally recognised by the SEAI. It has been successful in securing funding to undertake an energy audit / study of energy costs of a number of farms in West Kerry. The results of this study will lead to improved practices and savings. The group would like to keep all dairy farmers informed of developments as they continue on this journey. For now, given the restrictions on gatherings, it is planned to hold an online Zoom meeting once per month to look at new energy initiatives which will save money on the farm and reduce carbon footprints. Another New Chapter – So A Sad Goodbye Pauline and Mark Lucas It feels strange and very sad to be writing this to say goodbye to all the wonderful friends Mark and I have made since we came to live in Farran in 2012. I don’t think any of us could have foreseen what radical changes Covid would bring with it this year and like many others it made Mark and I take a good look at what the future might hold for us as we both reached our Seventies. We agreed that our main priority was to be back near to our family and our young grandchildren and we decided to sell up and return to the UK. We will be leaving on 5th December. We have been coming to Kerry for around 18 years, since our dear friend Lynne Stratton moved here. We have known Lynne for many years and she always talked about coming to live in Kerry at some point. When we came over to visit her once she had settled in, we could instantly see what a magical and beautiful place it was, and eventually the Dingle Peninsula wove its spell on us too and we decided to settle here. The last eight and a half years have been truly amazing, We have been made to feel very welcome and made so many dear friends who have treated us with great kindness. Our neighbours in Farran , Smerwick and Ballyferriter have looked out for us and included us as part of the community. We have very much enjoyed taking part in new ventures. Mark has been part of the committees of Dingle Cycling Club and

Beal Ban beach races, and thoroughly enjoyed plenty of sailing which is one of his passions. For me, I could never have imagined that I would put my dressmaking skills to such good use and learn quilting and so much more through classes with Nikki Foley at The Sewing Shed at Boolteens. I have made so many lovely friends there. Working with Susan Callery at Dingle Horseriding and the Greenlane Gallery, and Grainne Kavanagh at The Coach House gave me such great experiences never to be forgotten, so thank you ladies for letting me help out. It has also been great to be able to share our dog training skills and experiences and we certainly have had some laughs with our dog owners at the antics of some of the dogs. As for shopping in Dingle, there is something very special about being greeted by your name when you enter a shop and I don’t think we will ever experience this warmth and friendship in the same way again. It has been a real privilege to live in this most beautiful part of the world and it will stay in our hearts forever. We will be certainly be back to visit and would like to thank everyone we have met for making our time here such a memorable experience. Take care everyone and we hope to come back to a thriving Dingle and Ballyferriter in the future.

OBITUARY The death of Mary Ann O'Shea (nee Mahony) Curraduff, Camp and Causeway occurred on 11th. December in the wonderful care of Ocean View Nursing Home, Camp. Mary met her husband Michael, a Campman in London where she was a midwife working in a busy London Hospital. While Mary and Michael enjoyed life in England they always intended to return home to Kerry. And on their retirement Mary and Michael returned home to farm in Camp. At her funeral Camp ICA formed a guard of honour at her home and outside St. Mary's Church and walked with the cortege to Kilgobbin Graveyard where Mary was laid to rest alongside her late husband Michael on 14th December. Mary was a real lady and will be fondly remembered for her friendship and kindness to her neighbours and to the local children who were very fond of her. She will be missed by everybody. Sympathy is extended to her sons Denis and Joe, sister Hannah, grandchildren, daughters-in-law, sister-in-law, nephews, nieces, relatives and friends.

We do hope that all our researchers and medical experts have developed a vaccine which will help keep us safe into the future and enable us to return to living our lives as we did pre Covid 19. Busy Beavers: Some of our underage footballers have been keeping themselves busy over Christmas. Eloisha Falvey, Katie Bell, Aishling Quirke and Sarah Leane performed beautifully with their singing and music at some of the Christmas masses. Diarmuid, Aishling and Muiris Quirke along with Eoin McClure did a 5 km run /walk on St. Stephen's Day and Nicole Twiss was busy show jumping at Woodlands Equestrian Centre at their annual Christmas Show. Nicole, on her pony Skittles, was part of the team that came 2nd overall in Nations Cup Event on December 28th.Well done to you all. ½ bulb of garlic Knob of butter 1 shallot, diced 1 head of Cauliflower, broken into florets ½ tsp. chili flakes 600ml milk 150g good vintage cheddar, grated

Happy New Year to everyone. A cold start to the year but perfect to serve yourself up something warm that will make you forget about everything that is going on. I hope to have plenty of recipes here and on Dingle Cookery School facebook page for you throughout the year. I hope that these recipes help everyone, from those who love to cook to the people that don’t cook much or see it as a chore. I try to always keep my recipes simple and focus on good ingredients, the seasons and food I would love on my table.

Salt and pepper Method Preheat the oven to 190ºC Warp the garlic in tin foil, place this in the oven. Leave this in the oven for about 30-40 minutes. Remove the garlic and when cool enough to handle use a large knife to press out the flesh.

If you are looking for another thing to tick off your list for the year, remember Seville Oranges are in season for the next week or two, perfect for marmalade.

Put a pot on over a low to medium heat. Add the butter and then the shallot and a pinch of salt. Allow this to cook for about 5-10 minutes, add the roast garlic and cauliflower. Turn the heat up for and cook for about 5 minutes. Mix in the chilli flakes along with a pinch of salt and pepper. Add in the milk and most of the grated cheese. Lower the heat again and cook for about 10 minutes. This will allow the mixture to thicken slightly. Pour all of this into a ovenproof dish. Sprinkle the remaining cheese on top. Place this in the oven for about 30 minutes. The top should have browned and the liquid should be bubbling.

There is great flavour in this gratin and I am confident that this recipe will add to any dish you want serve up in the winter. I have added a little chilli flakes to this to give it a little kick and instead of adding flour to thicken it I have taken the extra step of adding the milk to the pot and cooking it for a few minutes before adding it to the oven.

Whilst we enter 2021 with new Level 5 Restrictions, there is great cause for hope and optimism with the vaccine now beginning to be rolled out. However, as Dr. Tony Holohan has stated, we all have a role to play over the coming weeks and months to ensure that we suppress the virus and support the extraordinary efforts of our “front liners” who are now, once again, facing a huge challenge as numbers soar. It is our individual and community responsibility to “Stay at Home – Fan sa Bhaile”, mind our most vulnerable, support official Level 5 restrictions (https://www.gov.ie/en/publication/2dc71level-5/), listen to the official advice and recommendations of Dr. Holohan and his teams, Government and official agencies. In not supporting them, we are putting lives at risk. Please Stay Safe! Together as a community, let’s look forward to a much brighter and happier 2021 as we work together to reset our local economy and support each other as we begin a new year. It will be a quiet start with lockdown but staycations are here again for '21 with the possibility of international for the latter half of the year. The World Travel & Tourism Council say that 99% of American travellers want to travel in 2021 but conservatively speaking, the rollout of the vaccine will dictate international access.

So what are the trends as we look to 2021? Destinations - fresh air, open spaces, uncrowded, simplicity - "Wilderness is the new Wellness" Intrepid Traveller. Safety – we must maintain our reputation as a Safe Destination which we achieved in 2020 through the incredible hard work of everyone - our local businesses, services, volunteers, community committees, and everyone involved. Maintaining that will be critical, and fair play to everyone for such a fabulous achievement in an extremely challenging year. Experiences - visitors loved our local experiences here and will want more of the same (or new) for the coming season. Sustainability - we must truly work to show that we are an authentic sustainable AND responsible destination. Just saying it doesn’t mean it – we must live it. Community - finally community is being talked about at national level - it is time to make sure that action comes behind that talk. An uncertain year lies ahead........ as we continue to survive Covid-19 and build a sustainable and responsible future for all. We will see pentup demand for destinations like the Dingle Peninsula once again. Bookings will be last minute according to openings and re-openings, and visitors will want flexibility when it comes to cancellations due to Covid-19 uncertainty. It will be staycations again for the first half of

the year (once restrictions are lifted) as we see the vaccine being rolled out. As we learned in 2020, the Dingle Peninsula delighted Irish staycationers as they holidayed here and we never saw so many enjoy the outdoors be it on land or on sea. Expect more of the same with camping; reconnecting with nature; connecting with local’s experiences; natural and cultural heritage; environmentally friendly attractions, activities and products; and ‘travel with purpose’ all key trends for 2021. All these trends, we can deliver here on the Dingle Peninsula as we continue to work together. It is vital that we make sure that the Dingle Peninsula maintains its leading role as a magical destination going forward as other destinations work hard to catch up! Over the coming weeks and months as we prepare to re-open when restrictions are lifted, it is worth bearing in mind the words of New Zealand’s Minister of Tourism Kelvin Davis who in April 2020 as world tourism leaders said - “We have an opportunity now to rethink the entire way we approach tourism to make New Zealand a more sustainable place, enrich the lives of all our people and deliver a sector that is financially self-sustaining”.
