Welcome to 2018! I am writing to share with our membership a recap of the past few months and a look ahead to the future for the Wisconsin Bakers Association.

In October, twenty WBA Members attended our sold-out Holiday Bread Workshop hosted by Lesaffre Yeast Corporation.

Along with the challenges, 2017 held many highlights for our organization. From the most competition entries (114) to date at the Midwest Foodservice Expo to the highest

Our Fall Bakers Forum at Cranky Al’s was also very well-attended. Thank you to Joey Carioti and his aunt and uncle - Al and Sue Brkich for hosting the forum and to John Stricker from Practical Baker for leading a great discussion about bakery equipment. Thanks also to Geoff Trenholme for inviting members to come over to Rocket Baby Bakery for a quick tour after the forum. It was a tremendous networking experience!

One of the goals that the WBA Board of Directors had set out to accomplish in 2018 was crafting a Mission and Vision for the organization. With support from Valley Cooperative Association, we were able to accomplish that goal. I am so pleased to share with you WBA’s Mission and Vision: MISSION

Every year, the WBA is proud to sponsor the annual Gingerbread House Competition at Milwaukee Area Technical College by providing scholarship awards and bringing in professional judges from our industry. This year was a lot more challenging for the baking and pastry arts students as they were tasked with creating edible versions of Miller Park and the Milwaukee Bucks Arena in the new Gingerbread Pro competition. We would like to congratulate all of the baking and pastry arts students on their hard work!

Jessica started with the WBA right out of college and has been with the WBA for the past 10 years. Will Your Bakery Be The Next Bakery Operation of the Year? The prestigious Bakery Operation of the Year award is presented annually to one outstanding WBA Member bakery operation at the WBA’s Awards & Appetizers Networking Evening held in conjuction with the Midwest Foodservice Expo. The purpose of the award is to highlight and recognize the accomplishments of WBA Member bakeries. The 2018 Bakery Operation of the Year Award is sponsored by Valley Bakers Cooperative Association. This year’s winner will receive a trophy to display prominently in their bakery.

How Does the Program Work? Nominations for the 2018 Bakery Operation of the Year may be submitted to the WBA office for consideration. A nomination form is available on WBA’s website: www.wibakers.com. This year’s winner will be selected by input from past recipients of the Bakery Operation of the Year award along with the WBA Board of Directors. Each year, the winner is kept secret until the moment the winner is announced! This year’s event will take place on Monday, March 12th at the Wisconsin Center.

Congratulations to Fox Valley Technical College in Appleton, WI The Wisconsin Bakers Association (WBA) has declared Fox Valley Technical College the Bakery of the Month for January 2018. The technical college earned the honor for hosting the WBA’s Winter Bakers Forum this month. Bakers Forums are networking and educational events for WBA members and other baking industry representatives. During the Winter Bakers Forum, attendees took a tour of FVTC’s campus including a visit to Ione’s, a student operated restaurant, and the Jones Dairy Farm Culinary Theater. Chef Jen McClure demonstrated how to make gum-

paste flowers and Chef Julia Steinhiser led a presentation on the advantages of scratch baking in addition to making and using your own flowers for decorating. Attendees at the forum participated in a discussion about employment opportunities and challenges in today’s baking industry. The Bakery of the Month Award was presented to Chef Julia Steinhiser and Chef Jen McClure by WBA’s Executive Director, Jessica Hoover. Fox Valley Technical College offers a Technical Diploma in Baking & Pastry Production. The hands-on program prepares students for a career in the bakery field. Neato-O's became involved with the WBA when we received a

message encouraging us to enter the Creative Cake Competition at the Midwest Food Service Expo which included WBA membership. It was an amazing experience! Having been a new business at the time, it allowed us to make connections with other bakery owners, vendor partners, and WBA staff. This enabled us to share our stories, listen to others, ask and answer questions, and gain a sense of community! In the years that have followed, we have become more involved and we look forward to all WBA events!

IDDBA’s 23rd Annual Cake Decorating Challenge The International Dairy Deli Bakery Association’s (IDDBA) 23rd annual Cake Decorating Challenge is open for entries. The event will take place during IDDBA 18 in New Orleans, LA, June 10-12. Contestants compete in a three-day event where they craft and decorate a variety of specialty cakes ranging in size, theme, and shape. This challenge is open to supermarket decorators and contestants will be chosen based on the quality of their portfolio submitted. The selection committee judges the portfolio based on use of color and consistency, creativity, and the variety of technique. The deadline for the portfolio and entry form to be received by the IDDBA is Friday, February 2, 2018. Contestants will be informed around March 15, 2018.

Over the three-day challenge at IDDBA 18, contestants create enough cakes to fill an 8’ bakery case, a tiered wedding cake, and themed/custom design cakes. They will compete for first, second, and third place trophies. For the contest, IDDBA will cover transportation, lodging, and meals for each contestant. Not only will participants gain recognition for themselves and their store, but they’ll further advance their skills and build a network, uncover more potential, and discover cutting-edge trends and techniques to bring back to their store!
