2016 Hiller Scholarship Awarded to Gina Santora Congratulations to Gina Santora, the winner of the 2016 Robert W. Hiller Scholarship, a national scholarship established through the Wisconsin Bakers Association (WBA). This year marks the twelfth year the award has been given to a student studying in the area of baking/pastry arts. This year’s recipient is from East Hanover, NJ. Santora recently graduated from Hanover Park High School and plans to attend Johnson and Wales University in Providence, RI this fall. She was one of four finalists for the award. The other finalists were McKayla Dietzen, Samantha Brown, and Katelyn Heupel.

In her essay for the scholarship, Santora said, “Culinary Arts has always been a dream profession for me.” Inspired by Rachael Ray, she hopes to one day open her own pastry shop as well as offer classes to share her love for baking with everyone.
Three WBA Members from the Education Committee interviewed the finalists for this year’s scholarship. Tony Nieto of Neato’s Bake Shoppe in Baraboo, WI, Ken Heil of Sweet Perfections Bake Shoppe in Waukesha, WI, and Tamara Mugerauer of Tamara’s the Cake Guru in Oshkosh, WI selected Santora as this year’s winner. “Deciding on this year’s winner was definitely a challenge for the committee,” said WBA’s CEO, David Schmidt. “All four of the applicants interviewed remarkably well and had impressive letters of recommendation.” The Robert W. Hiller Scholarship Fund was established on Nov. 5, 2000, to support and encourage people who have demonstrated a passion for a profession in the baking/pastry arts field. A $1,000 scholarship is awarded to the applicant who can best demonstrate this career commitment. The program intends to provide a financial resource for the education of students who will be the future of the baking industry. BB

Q. What is your first memory of baking? A. My grandparents owned a bakery and I would come in at night with my mother and help her bake! Q. What is your favorite thing to bake? A. I love baking bread, there is a simplicity in ingredients and a scientific complexity in preparation. Q. What do you find most challenging about baking? A. The most challenging aspect to baking is the physical toll. From long hours standing, heavy lifting, overnight shifts to restless daytime sleep. Q. As a baker, what sorts of trends do you see? A. Gluten free, classic preparations using clean high quality ingredients , and elimination of additives, preservatives, conditioners. Q. What’s the best/worst thing to happen since you started baking?

A. The best thing is the opportunity to work with my family. They are crazy talented. The worst thing is all the holidays I’ve slept through. Q. What do you like to do when you aren’t baking? A. I enjoy cooking and gardening.
Q. What might someone be surprised to learn about you? A. I grew up in a small village inside the artic circle in Alaska. Q. How did you first get involved with the Wisconsin Bakers Association? A. My wife, Amanda, was contacted about participating in the cake competition. Q. What would you tell someone who is thinking about joining WBA? A. The WBA is a great networking resource that will be extremely valuable to their business. Q. What do you think will change about WBA over the next five years? A. Creativity Took Center Stage at The Wedding Show Summer Edition’s First Cake Decorating Competition What kind of cake design comes to mind when a couple tells you that their wedding theme is “rustic chic” with plum and grey colors? Does it have four or five tiers? Are the tiers round or square?

Creating a dream wedding cake can be quite the challenge. This past July, four WBA members competed in a new event and spotlight feature at The Wedding Show Summer Edition Cake Decorating Competition at Shopko Hall in Green Bay, WI. Each decorator had one month to design a custom wedding cake to fit the theme and love story of a real couple, Kate and Lucas, from Northeast Wisconsin.
The couple attended the show and selected the winner based on creativity, incorporation of their wedding theme, colors, and love story, and also a cake tasting. Artistic Cakes and Cookies located in Appleton, WI was chosen as the winner of the 2016 Wedding Show - Summer Edition Couple’s Choice award. “The couple was blown away with the options!” said Heather Ohde, Expo & Event Coordinator for The Wedding Show. “The Couple’s Choice winner will be responsible for recreation of the cake for the couple’s wedding in 2017.” One decorator was also chosen by show attendees as the People’s Choice Winner. Attendees voted for their favorite cake on iPad kiosks set-up by the Wedding Cake Display. Tamara’s the Cake Guru located in Oshkosh, WI received the People’s Choice award. Monzu Bakery, Green Bay, WI and Chocolate Cow Bakery, Oconto, WI also competed in The Wedding Show - Summer Edition - Cake Decorating Competition. The show also featured a wedding trends display area, bridal makeovers courtesy of Paul Mitchell the school Green Bay, ideas from florists, and a Bridal Gown Boutique Sale. BB
Cupcake Fest MKE to Return to the Domes in 2016 Now in its second year, Cupcake Fest MKE made its debut at The Mitchell Park Domes in 2015. Sponsored by local Milwaukee bakery and WBA Member, Classy Girl Cupcakes, this year’s event will be held on Saturday, October 15, 2016 from 9am – 6pm and feature attractions for kids of all ages. Activities include Cupcake Land - a life-sized Candy Land style board game, carnival games, cupcake scavenger hunt throughout the Domes, community cake decorating, an interactive cupcake factory, red carpet photos, cupcake coloring station, cupcake creation contest, vendors, and YouTube sensation Gina Naomi Baez will perform her hit song “Cupcakes” and other favorites live throughout the day. Classy Girl Cupcakes has been Milwaukee’s go-to cupcake bakery since 2010, and sells their cupcakes at Summerfest and all over the city. Located on Cathedral Square in downtown Milwaukee, the bakery offers 25+ daily flavors baked fresh from scratch and caters hundreds of weddings and corporate events each year. In addition to cupcakes, expert cake artist, Samantha Wright, has created a prolific gallery of birthday cake and wedding cake designs, and will be building a 6 foot tall cake for guests to help decorate at Cupcake Fest MKE.
Owner, Erica Elia, had the idea for a festival celebrating cupcakes after participating in Very Fairy Princess Festival at The Domes in March 2015, which drew several thousand children and families. As her daughter Ansley (dressed in a Frozen Elsa costume of course) explored the exhibits with joy, she thought of how Classy Girl Cupcakes could contribute to the need for quality children’s activities in Milwaukee. Of course, adults will enjoy Cupcake Fest MKE as well, especially those young at heart. Classy Girl’s team of bakers, decorators, and event planners have been hard at work designing innovative activities to engage children and adults in the art of baking, which has become quite popular in recent years. The 2016 International Baking Industry Exposition Names B.E.S.T. in Baking Award Winners The 2016 International Baking Industry Exposition (IBIE)—the largest and most comprehensive event in the Western Hemisphere for the grain-based food industry—together with Snack Food & Wholesale Bakery, will recognize its 2016 Becoming Environmentally Sustainable Together (B.E.S.T.) in Baking award winners during the triennial trade show October 8-11 in Las Vegas. Introduced in 2010, the B.E.S.T. in Baking program recognizes exhibitors that supply equipment, packaging, ingredients, products and/or services that foster energy and water conservation, decrease landfill waste and promote overall healthy living and reduction in environmental impact. Valley Bakers rolled out a red carpet in Hollywood fashion at their annual food show Valley Bakers Cooperative Association rolled out the red carpet at their annual food show held on August 18, 2016 at Shopko Hall in Green Bay, WI. This year’s theme was “Valley’s Red Carpet Celebration of Stars,” and the Wisconsin Bakers Association was once again honored to be in attendance.
The event is designed to provide Valley’s customers with an opportunity to learn more about Valley and see a sample of Valley’s products & services, including new products. The food show was well attended and the WBA staff was thrilled to see many of our members. Several new members joined the WBA at the show including Enjay Converters, LTD, Fiddleheads Artisan Bakery, and Trenary Home Bakery. A tailgate party with live music and a Green Bay Packers preseason football game followed the show. BB
WBA Families Enjoyed A Day at the Wisconsin State Fair What a fun day! WBA members and their families from Augusta Bakery, Simma’s Bakery, Lakeland Bakery, Monzù Bakery, Clasen’s European Bakery, The Extra Special Touch Bakery, and Piggly Wiggly Muskego enjoyed a day at the State Fair on Tuesday, August 9, 2016. Members had the opportunity to visit with WBA’s CEO, Dave Schmidt, and took a behind-thescenes tour of the Original Cream Puffs Dairy Bakery, where the Wisconsin Bakers Association has been producing cream puffs since 1924. The Dairy Bakery at the Wisconsin State Fair began as a joint venture between Wisconsin State Fair Park and the Wisconsin Bakers Association to establish and operate a bakery using genuine Wisconsin dairy products in front of thousands of observers. Over the years, cream puffs have become the most popular food item among Fairgoers with an average of 350,000 consumed each year. After the tour of the dairy bakery, everyone headed over to the Miller Lite Sports Bar & Grill for a casual networking lunch with other WBA Members. For the rest of the afternoon, families explored the sights and sounds of the Wisconsin State Fair. Thank you to the all of the WBA Members that attended WBA Family Day and made it a success! BB

1,015,815 People Celebrated the 165th Wisconsin State Fair More than 1 million people attended the Wisconsin State Fair this year. There were 1,015,815 people that attended the 165th Wisconsin State Fair. According to fair officials, this is the fourth year in a row that attendance broke 1 million. Attendance was down from the last two years. 1,033,053 people attended in 2015; 1,030,881 attended in 2014. By the numbers: • There were 150,000 slides taken down the Giant Slide. • Fair goers ate 315,000 Original Cream Puffs. • The New Berlins Lion’s Club sold 105,000 ears of corn. • Real Wisconsin Cheese grilled cheese sandwiches served 55,000. • At the Wisconsin Products Pavilion, there were 50,000 Wisconsin Baked Potatoes sold. The 2017 Wisconsin State Fair, presented by U.S. Cellular, will take place Aug. 3 – 13. BB
