I love Oscar acceptance speeches. That moment when Matthew McConaughey won Best Actor and said in his acceptance speech, “It’s a scientific fact that gratitude reciprocates,” profoundly resonated with me. Keep reading… I’ll explain where this is going and what it has to do with the baking industry. We can all imagine how it would feel to win an Oscar. It might be along the lines of how Joseph Crubaugh felt when Fosdal Home Bakery was revealed as the 2014 Bakery Operation of the Year or how Jackie Scott felt when she received the honor of being inducted into the WBA Bakers Hall of Fame. To me, seeing the tremendous turnout of members, students, and supporters of the baking industry Jessica Hoover at the WBA Industry Appreciation Breakfast was without a doubt Oscar-worthy. Allow me, if you will, to take this month’s column to extend my appreciation and gratitude to the many people in this industry who helped make this year’s Pastry Studio at the Midwest Foodservice Expo a success: To Dawn Faris, thank you to you and the terrific staff at the Wisconsin Restaurant Association for all of your help with planning and promoting the Pastry Studio and WBA Industry Appreciation Breakfast. To Rick Crawford, thank you for taking time out of your busy schedule to attend the Expo, prepare and present a seminar, and speak at our breakfast. To Debra Josephs, thank you for sharing your passion and energy about epilepsy awareness and bringing The Great Purple Cupcake Project to Wisconsin. To Thomas LaPierre and MATC, thank you for the many hours spent baking, decorating, and building the biggest Gingerbread House I have ever seen in my life! Also, thank you for coordinating a chocolate demo in the new Baking and Pastry Arts lab. (I am still wondering how you managed not to get a single drop of melted chocolate on your white chef coat!) To our Pastry Studio demonstrators – Ken Heil, Gloria De Angelo, Bob Chaffee, and Tamara Mugerauer – thank you for showcasing your talents and teaching those in our industry how to make tiramisu, gel flower molds, gourmet doughnuts, and cake push-pops. To our judges – Gail Gand, Lois Federman, Michelle Axford, Thomas LaPierre, Kathleen Meisinger, Rick Crawford, Deb Socha, and Debra Josephs – thank you for providing your professional judging services in the 2014 Art of the Cake Competition. From the Editor’s Desk Continued from page 3 To Theresa and James Cook – thank you for organizing the supplies for the demos and for your continued support as an exhibitor at the Midwest Foodservice Expo. Thank you to the decorators that stayed up until 3:00 AM just to put finishing touches on your cakes, to the bakers that prepared a massive amount of cupcake and kringle samples, and to everyone who drove to Milwaukee to attend this year’s Midwest Foodservice Expo. This is the part where in a real Oscar speech I would be advised to wrap it up! So, to those that I did not list above, I say, “Thank you”. I cannot put into words just how much it means to me to have the opportunity to work for the Wisconsin Bakers Association. To put my own spin on McConaughey’s famous line from “Dazed and Confused”, BAKERS are “alright, alright, alright.” Thank you,

Jackie Scott inducted into WBA Bakers Hall of Fame Nominated by her daughter, Scott is the third woman to be inducted into Hall of Fame By Jessica Hoover
Co-owner of Scott’s Pastry Shoppe since 1982, Jackie Scott is the heart and soul of this Middleton business. All of her hard work and dedication to the baking industry was recognized with an induction in the Wisconsin Bakers Association (WBA) Bakers Hall of Fame on Tuesday, March 11th, during the WBA’s Industry Appreciation Breakfast in Milwaukee, WI. The breakfast was held in conjunction with the Midwest Foodservice Expo. Scott was honored to be inducted into the Bakers Hall of Fame surrounded by family, friends, and industry colleagues. She was nominated by her daughter, Dawn Westhoff. Westhoff wrote in her nomination, “My mom is an inspiration to me and many around her. I’ve been blessed to work side by side with her for almost 20 years.” According to Scott’s Pastry Shoppe’s website, “Jackie and Dawn work together to bring quality baked goods and jobs to Middleton. They are joined by family and trusted friends to make this a unique family business.” The WBA Bakers Hall of Fame honors those individuals for their service to the baking industry. Since the WBA Bakers Hall of Fame was started in 2000, Scott is the third woman to be inducted into the WBA Bakers Hall of Fame. Scott was the first woman to become President of the WBA Board of Directors and served as President from 1994 to 1996. Later, she also became the first woman to serve as President of the Retail Bakers of America in 2003. BB BEYOND BAKING

Art of the Cake Competition Winners From Cupcakes to Kringle, the Pastry Studio proved to be a popular place at the 2014 Midwest Foodservice Expo By Jessica Hoover
Bakers from Wisconsin and upper Illinois participated in the Art of the Cake Competition at the Pastry Studio during the 2014 Midwest Foodservice Expo. The Art of the Cake Competition featured four opportunities for professional and beginner cake artists to showcase their talents: Extreme Wedding Cake Challenge, Creative Cake Decorating Competition, Cupcake Warrior Championship, and NEW in 2014, the Extreme Groom’s Cake Challenge. In addition to the cakes and cupcake competitions, WBA introduced a competition to determine which bakery makes the best kringle, which has recently become the state pastry. Fourteen kringles from bakeries throughout Wisconsin were entered in the Baker’s Best Kringle Contest. The winner of the contest was determined by professional judging and votes from attendees at the Expo. Winners of the competitions were: Extreme Wedding Cake Challenge People’s Choice: Amanda Nieto

Friends from UMBA stopped by to see MATC’s Gigantic Gingerbread House. 5. Jenny Simon and Lauren Tanzillo from Simple Simon Bakery won the Pot o’ Gold Trophy in the Cupcake Warrior Championship! 6. All three of the professional judges loved these creative cupcakes by Sugarjones. 7. The Milwaukee Art Museum replica cake placed First in the Creative Cake Decorating Competition.
2014 WBA Bakery Operation of the Year Fosdal Home Bakery awarded Bakery Operation of the Year By Jessica Hoover
Fosdal Home Bakery, located in Stoughton, WI, was named the 2014 Bakery Operation of the Year (BOY) by the Wisconsin Bakers Association (WBA). The award was presented on Tuesday, March 11th, during the WBA’s Industry Appreciation Breakfast in Milwaukee, WI. This year, two outstanding bakeries were nominated for the award. Nominations were sent in and the Past Winners of this award had the final vote to determine this year’s winner. The recipient of the BOY award remained a secret until the moment the name of the bakery was revealed. Joseph Crubaugh, owner of Fosdal Home Bakery, was in attendance to accept the award. In the nomination that was submitted for Fosdal Home Bakery, it states, “The owner’s commitment to the industry is incredible. His commitment to the WBA over the years has been truly outstanding. The bakery operation of the year award is long overdue for Fosdal Home Bakery.” Joseph Crubaugh is the WBA Treasurer and has served many years on the WBA Board of Directors. The Bakery Operation of the Year award was created to recognize an outstanding bakery operation annually. Each year’s winner gets to keep the coveted BakeMark trophy for one year and the traveling trophy is then passed on to the new winner.
