Congratulations! Simma’s Bakery, located in Wauwatosa, WI was named the 2017 Bakery Operation of the Year (BOY) by the Wisconsin Bakers Association (WBA). The award was presented on Monday, March 13th, 2017 during the WBA’s Awards & Appetizers
Networking Evening in Milwaukee, WI. This year’s awards ceremony was held in conjunction with the Midwest Foodservice Expo. Six outstanding Wisconsin bakeries were nominated for the Bakery Operation of the Year this year. Past winners of this award voted to determine this year’s winner. The recipient of the BOY award remained a secret
until the moment the name of the bakery was revealed. Mark and Peggy Carollo, owners of Simma’s Bakery, were in attendance to accept the award.
the years while going to school, and their oldest daughter is currently working full time at Simma’s.
The Bakery Operation of the Year award was created back in 2001 to recognize an outstanding bakery operation annually. This year’s BOY award was sponsored by Valley Bakers Cooperative Association. The Carollos received a permanent trophy to display in their bakery.
In their nomination, they wrote, “We hope to continue to build on the reputation that Simma’s has developed over the last 32 years and our decision to purchase our building and double the size of our bakery during our recent expansion hopefully shows the community our commitment to continue to serve the Wauwatosa and surrounding areas.”
Mark and Peggy purchased Simma’s Bakery in 2011 and prior to that they owned Croissant Etc., a wholesale bakery, located in Greendale, WI which they continue to operate today. Croissant Etc. supplies fully baked and frozen dough croissants to food service and the retail marketplace throughout the upper Midwest. All three of their children have worked at the bakeries at times over

Shirley “Sure” Heisler inducted into WBA Bakers Hall of Fame The Wisconsin Bakers Association (WBA) Board of Directors inducted Shirley “Sure” Heisler from LaSure’s in Oshkosh, WI into the 2017 WBA Bakers Hall of Fame on March 13, 2017, at the WBA’s annual awards night. The event was held at the Wisconsin Center in downtown Milwaukee in conjunction with the Midwest Foodservice Expo. Due to bad weather conditions, Heisler was unable to attend the awards night. Instead, WBA CEO, Dave Schmidt and WBA President, Tamara Mugerauer made a special visit to LaSure’s Bakery on March 28th to present the esteemed award to Shirley where she accepted the award surrounded by friends and family. Mugerauer listed many reasons why Heisler should be inducted into the Hall of Fame in her nomination. “She is the epitome of class and amazing example for the business woman.” Heisler began the business with her husband, Tom Heisler in 1974 when they turned her cake-making hobby into a bakery. Heisler also served on the WBA Board of Directors.

Schmidt presented a plaque to Heisler. “Not only are we here to congratulate Shirley on her induction into the WBA Bakers Hall of Fame but also on being the very first inductee from Oshkosh!” he said. Each year the WBA Board of Directors inducts honorees into the WBA Bakers Hall of Fame. The first inductees to the Hall of Fame were honored in 2000. Through the Hall of Fame the WBA seeks to honor an individual each year whose service and contributions to the baking industry and to the WBA have proven over time to leave a lasting impact by induction into the WBA Bakers Hall of Fame. Sweets & Snacks Expo Adds New Award Geared Toward Small Businesses The Sweets & Snacks Expo, hosted by the National Confectioners Association, has announced many new features including a new award for the 2017 Most Innovative New Products Program. The Small Business Innovator Award was added after retailer and attendee feedback indicated that there was a need to recognize smaller companies.

Mouthwatering Mountains By Chris Jossart, FVTC
Mountain range theme turns edible at this year’s Fox Valley Tech Cultural Cuisine Does smoked trout just taste better when you know it comes from the refreshing clear waters of a mountain river? That pictorial palate primer was just one of several descriptive entrees heralding from famous mountain regions of the world at the 19th Annual Fox Valley Technical College Cultural Cuisine event on February 26 in Appleton. The event welcomed 1,000-plus visitors to raise a record $32,000 for student scholarships in the Culinary Arts program at FVTC. In addition to students displaying cooking and baking skills at Cultural Cuisine, the event
features a pre-critique luncheon a month out from the fundraiser featuring local media talent. Reporters, writers, and news anchors attend to help build visibility for the event while sampling the specialty dishes and rendering feedback so students can make necessary modifications before the big day. The gathering also provides a great platform for students to exercise leadership and communication skills since the luncheon is run by them. Each year the students in the Culinary Arts program devise a themed menu of samples for the public to taste. This year’s mountain range concept included these dishes:

Merger Of ABA, B&CMA Unanimously Approved The merger of the American Bakers Association (ABA) and the Biscuit and Cracker Manufacturers’ Association (B&CMA) was approved March 27th after the organizations received unanimous consent from their respective Boards of Directors and memberships. To commemorate this significant moment, a signing ceremony was held during the 2017 ABA Convention’s All Membership Meeting featuring the members of the Transition Steering Committee: ABA Rich Scalise, Hearthside Foods Erin Sharp, Kroger Co. Robb MacKie, ABA President B&CMA Bill Quigg, Richmond Baking Co. Todd Wallin, Ellison Baking Co. Dave Van Laar, B&CMA President “The Transition Steering Committee has done an outstanding job over the past year to complete its due diligence and ensure the voices of the ABA and B&CMA members were heard,” said ABA President and CEO Robb MacKie. “It is very clear that there are tremendous synergies and that combining our two organizations will return significant added value for the industry.”
“Together, we will be a stronger, unified organization that will offer enhanced, comprehensive services to meet the needs of our members and the baking industry,” said B&CMA President and CEO Dave Van Laar. “It has been an incredible journey thus far and we are eagerly looking forward to this next phase of transitioning into an enhanced, merged organization for our members.” As stated in the Memorandum of Understanding approved by the ABA and B&CMA’s respective memberships, the merger closing date will be June 30, 2017. Prior to this date, there will be several forums offered to the ABA and B&CMA members to learn more about the benefits of the merger and the opportunities it presents to their companies.
