National Donut Day Friday, June 2nd
Ways to promote National Donut Day at your bakery:
Crullers, fritters, long johns, even good oldfashioned cake donuts will be celebrated on National Donut Day which falls annually on the first Friday of June. The day began in 1938 in Chicago to honor the Salvation Army’s “Doughnut Lassies.” Today, bakers across the country offer specials to celebrate this wonderful treat, the history behind it, and to honor the women that served doughnuts to soldiers during WWI.

Here in Wisconsin, Tony and Amanda Nieto, owners of Neato’s Bake Shoppe in Baraboo, WI, host a donut day event at the bakery every year. “National donut day is a perfect holiday!” said Tony Nieto. “It has a great story, with the Salvation Army donut lassies handing out cake donuts to the servicemen during World War I. It also has amazing growth potential with sales up over 20% each year, and starting to rival other holidays for busiest day of the year,” Nieto added.

Cake Decorating Competition The Wedding Show – Summer Edition – Cake Decorating Competition A unique event and spotlight feature at The Wedding Show – Summer Edition 2017! A real couple from the Northeast Wisconsin region will be chosen to judge and ultimately pick their actual wedding cake during The Wedding Show – Summer Edition Cake Decorating Competition! Compete in a one-of-a-kind cake decorating competition where your creativity and skills will create the love story of a real life couple. The Couple Couples getting married in 2018 or 2019 within the Northeast Wisconsin region will enter via social media for the chance to say “yes” to their cake at The Wedding Show – Summer Edition. The couple will be selected on Wednesday, May 31, 2017.

The Competition The winning couple will provide their wedding theme, date of their wedding, and love story which will be given to decorators on June 16, 2017. Decorators will then have one month to design and create a cake, fitting the couple’s theme and love story for judging at The Wedding Show – Summer Edition on Sunday, July 23, 2017. Cake decorators will be responsible for bringing their cake between 7:00am to 9:00 am on Sunday, July 23 to be displayed throughout show hours. Cake decorators must also have a sample for the bride and groom to taste at 2:00pm during the taste portion of the judging by the bride & groom. Samples should not be given to any other attendees of the show unless the decorator is also participating in the show as a vendor in which case samples may be handed out to other attendees only within their designated vendor booth. At approximately 2:30pm the winners of both the Couple’s Choice & People’s Choice will be
announced. At this time, business cards may be placed by the decorated cake, but no other advertising is allowed. A $50 fee to participate in the competition is due for those not participating as a vendor in the 2017 Summer Edition of The Wedding Show. If you are a vendor at the show, your competition fee will be waived. Contact Heather Ohde if you are interested in being a vendor at the show.

One decorator will be chosen by the couple as the Couple’s Choice Winner. The couple will select the winner based on creativity, adherence to their wedding theme, taste of the cake sample, and incorporation of their love story. The Couple’s Choice winner will be responsible for recreation of the cake for the couple’s wedding in 2018 or 2019. The decorator will be responsible for creating this cake at no charge in exchange for the following prize package valued at over $1,100:
One decorator will be chosen by attendees as the People’s Choice Winner. Attendees will vote for their favorite cake on iPad kiosks setup by the Wedding Cake Display. The People’s Choice Winner will receive: • 50% Discount on a booth at the 2018 Wedding Show – Summer Edition • 2017 People’s Choice Award BB

National Festival Of Breads Mixes Family Fun, Baking And BBQ This fun, family-friendly festival will be held on Saturday, June 17, 2017, at the Hilton Garden Inn, 410 South 3rd Street, Manhattan, Kansas. Additional events will be held across the blocked-off street at the Blue Earth Plaza. Admission is free with the donation of a canned or nonperishable food item. These donations will be given to the Flint Hills Breadbasket. To start the day off, there is an Enrich Your Life 5K at 7:30 a.m., and at 8:15 a.m. the 1 mile fun run begins. The Festival opens to the public at 8:30 a.m., and bread-baking contes-
tants will begin preparing their winning bread recipes. The eight finalists for National Festival of Breads were chosen from entries that came from all across the United States. Baking demonstrations will be going on throughout the day, beginning at 8:30 a.m. Torie Cox, food stylist with Time Inc., will demonstrate her “Cinnamon Swirl Brioche Loaf” all done by hand! Cookbook author and physician Jeff Hertzberg will present his “The New Artisan Bread In Five Minutes a Day: Mixing dough for refrigerator storage and basic loaf shaping” at 9:30 a.m. Hertzberg will show us how to mix basic doughs and shaping techniques. At 10:30 a.m., Paula Gray, Manager for Bake for Goods Kids Program, will demonstrate her “Bake for Good: Get Rolling with King Arthur Flour!” She will also show us some basic yeast dough tips and how to shape dinner rolls. Jeff Hertzberg will give a second presentation at 12:30 p.m., titled “Artisan Pizza and Flatbread In Five Minutes a Day: Pizza and flatbreads, the fastest breads In the world.” He will demonstrate the versatility of the flatbread. At 1:30 p.m., Sharon Davis, Family & Consumer Sciences educator with the Home Baking Association, will demonstrate her “Be a Smart Snack Baker!” She will teach us how to be healthy smart snackers. From bread to barbecue, the Festival has it all. In the barbecue tent, Rod Gray of Pellet Envy, will demonstrate how he cooks his delicious barbecue that he pours his heart and soul into. He will give three presentations, at 10:00 a.m., noon and 2:00 p.m.

In between barbecue demonstrations, the Festival boasts live music from the Past Blasters. Other events that the Festival of Breads has to offer are wheat weaving demonstrations, bread samples, trade show of vendors, Mr. and Mrs. Slice, a kids area that will have hands-on pancake making, and demonstrations from the Backyard Kitchen. The Festival wraps up at 3:00 p.m., when the finalists deliver their winning breads to the judges. An announcement of the National Festival of Breads Champion will be made later in the evening via the website, nationalfestivalofbreads.com and Facebook pages (@ nationalfestivalofbreads). IDDBA Launches Safe Food Matters! Campaign Focused On Handwashing “Improving handwashing practices in our fresh departments is critical,” said Mary Kay O’Connor, VP Education, IDDBA. “It’s important to educate employees about the impact of washing hands and how and when to wash hands. By bringing awareness to handwashing, we’re able to reduce the risk of contaminated food that can lead to illness and food poisoning and help to prevent cross-contamination.” For over 28 years, IDDBA has been a leader in providing quality food safety information to its members. This includes online and mobile training videos, job guides, podcasts, workbooks, and educational presentations. Current and planned programs around the Safe Food Matters! Focus on Handwashing campaign include:
Did you know that proper handwashing is one of the most effective ways to prevent the spread of germs and it only takes 20 seconds? Proper handwashing plays a vital role in reducing the likelihood of transmitting foodborne illnesses to shoppers and co-workers in our fresh departments. According to the Centers for Disease Control, the spread of germs from the hands of food workers accounts for 89% of the estimated 48 million cases of foodborne illness that occur annually in the United States. The International Dairy Deli Bakery Association (IDDBA) is conducting the Safe Food Matters! Focus on Handwashing campaign to build awareness on the importance of handwashing to prevent the spread of foodborne illnesses through contact and crosscontamination, and provide food retailers and manufacturers with education, training, and resources to help managers and service associates in their fresh departments.

RBA’s Pillsbury Baker’s Plus Grand Champion Creative Decorating Competition Creativity will take the stage at the The Americas Cake Fair in Orlando in October 2017. Five of the country’s top professional teams made up of amazing cake decorators will challenge each other in a contest of imagination, artistry and skill over a two-day period during one of baking’s most prestigious competitions. The competition is open to all professional cake decorators or pastry chefs who are currently working full- or part-time in a cake/ cupcake shop, retail or supermarket bakery and have at least two years of decorating experience. Contestants may enter this year’s competition one of two ways. Decorators can compete in a local, state or regional RBA sponsored con-
test. If no contest is available in their area, decorators may submit a portfolio for consideration online at info@RetailBakersofAmerica. org Application by portfolio should be received by July 1, 2017 and should include two images from each of the three competition categories: wedding cake, rolled fondant and sculpted cakes. Contestants will be notified of their acceptance by August 1, 2017. The five teams will consist of regional winners and top portfolio entries, and will compete in all three categories. Cake, icing and fondant will be provided on site, but contestants must bring their own tools and specialty items. There is no limitation on the use of molds, impression mats and fondants rollers, which
can be used in all categories. The highest scoring individual, as determined by a panel of judges, will be awarded the coveted Pillsbury Baker’s Plus Grand Champion Trophy. Gold, silver and bronze medals, along with cash prizes will also be awarded for the highest three scores in each category. All contestants will be provided with three nights of lodging and up to $400 for travel to Orlando. Contest Rules 1. Decorators must be professional cake decorators or pastry chefs working in a retail or supermarket bakery. RBA membership is encouraged but not required. Contestants for the CDC will include the top decorators from regional affiliate competitions and portfolio winner(s) from decorators in areas without competitions. Contestants can compete for a maximum of 5 years’ total. 2. Contestants will compete as a team of two decorators. Team members may come from the same bakery, family members or a member of the local affiliate if chosen through an RBA affiliate regional competition. 3. Contestants will receive complimentary hotel and travel. Hotel accommodations will be arranged by RBA. RBA will pay for up to three nights of hotel at a hotel chosen by RBA. Contestants may arrange for additional nights at their own expense. Contestants should book or arrange their own travel and will be reimbursed for up to $400 per person for travel.
5. All professional contestants will complete together on all days. Preparation time is added to the schedule. Contestants will draw a number to designate a work station. 6. Contestants must complete designated categories on each day. Details will be provided before the competition. 7. All decorative work must be constructed during the contest hours and in the contest area. No pre-fabricated decorative pieces, other than those provided by RBA or otherwise specified, will be allowed. 8. No offensive cake designs or adult themed cakes. No copyrighted designs. 9. Judges will evaluate finished pieces using the procedures developed by the judges and other members associated with the contest. All judge’s decisions will be final. 10. The first place Grand Champion Trophy winner may not compete again in the affiliate or RBA Creative Decorating Competition for 5 years. You will need to include pictures of 2 wedding cakes, 2 fondant special occasion cakes and 2 sculpted cakes.
