Chocolate Pancakes with Chia Seed and Berry Jam

Makes 10-15 pancakes

INGREDIENTS

Wheat flour 3/4 cup Buckwheat flour 3/4 cup Almond flour 1/4 cup Water 3/4 cup Vegan egg 1 Sunflower oil 2 tbsp Agave syrup (or honey) 1 tbsp Coconut sugar 2 tbsp Cocoa powder 1 tbsp Maca 1/2 tsp Baking soda (mixed with lime juice) 1 tsp Flax seeds (ground) 1 tbsp Coconut oil 3 tbsp

1 Prepare the vegan egg (see recipe on page 35).

2 Mix together the liquid ingredients in a bowl.

3 In a separate bowl, mix together the flours. Slowly add the liquids and whisk together until smooth. Your dough should be relatively liquid.

4 Cook the pancakes in a thick-bottomed frying pan with vegetable oil.

5 Decorate if you wish with chia seed jam (see recipe on page 36) or honey.
