Mashed Sweet Potato Makes 5 servings Ingredients 1 lb. sweet potato, peeled 1/2 cup vegetable stock, no added salt 1/4 cup & 2 tbsp Smart Balance, melted Directions Boil sweet potato until tender. Mash potatoes. Add (light) vegetable stock to desired consistency. Whip potatoes and add melted Smart Balance. Per serving: 190 calories, 16 g carbohydrates, 2 g protein, 13 g total fat, 6 g saturated fat and 119 mg sodium
