Well well, the heat is catching up and making the daytime pretty lazy, isn’t it? But don’t worry, we have enough to keep you charged up because we believe that there is nothing better than food to charge anyone up, not just as a necessity, but as a passion.

For many, this time of the year marks new beginnings because of the start of the financial year and I want to take it as an opportunity to talk about some new food trends that have emerged and some that are on the horizon.

In recent years, there has been a growing interest in plant-based diets, sustainability, and ethnic cuisine These trends show no signs of slowing down, but there are also some exciting new developments in the food world to keep an eye on One of the most interesting trends is the growing popularity of alternative proteins This includes not only plant-based options like tofu, tempeh, and seitan but also more unconventional sources like insects and lab-grown meat While these options are still not mainstream, they are gaining traction as more people become interested in reducing their environmental impact and improving their health.

Another trend that is gaining momentum is the use of AI and machine learning in the food industry. These technologies are being used to develop new recipes, predict consumer preferences, and improve supply chain efficiency. This is an exciting development that has the potential to revolutionize the way we think about food.

Of course, it wouldn't be a food trends roundup without mentioning the ongoing interest in sustainability. This includes everything from reducing food waste to sourcing ingredients from local and organic farms As consumers become more aware of the impact of their food choices on the planet, we can expect to see even more emphasis on sustainable practices in the food industry

Finally, ethnic cuisine continues to be a major trend in the food world Whether it's Korean barbecue, Mexican street food, or Israeli cuisine, consumers are increasingly interested in trying new and exotic flavours This is a trend that is likely to continue as more people travel and are exposed to different cultures and cuisines

Overall, there is much to look forward to in the world of food and hospitality and as always in the magazine too. India’s maiden brand to get quinoa and chia to the country and consequently, the first homegrown superfood start-up, has announced acclaimed actor Samantha Ruth Prabhu has invested in the company. As the first to retail homegrown quinoa and chia seeds in India, Nourish You continues to lead in promoting locally-sourced and sustainable superfoods. Ltd. announced the launch of its first Roadies Koffeehouz in Surat, marking its flagship outlet in Gujarat Located at International Business Centre in Surat, Roadies Koffeehouz promises to be the ultimate destination that brings together Roadies enthusiasts to unwind and relax, powered by specialty coffee and freshly

prepared gourmet food. Get ready to make your mouth experience a burst of flavours with this amazing malpua recipe. We are sure that you and your family will love it as much as we do

Ingredients

1 tsp semolina

2 tsp khoya

1 cup all-purpose flour

1 tsp powdered green cardamom

2 tsp chopped pistachios

10 gms ready-made Rabri

11/2 cup sugar syrup

Water as required

Saffron as required

11/2 cup refined oil

Method

Mix khoya, semolina and all-purpose flour in a bowl Now add the cardamom powder and mix well again Add water gradually for the Malpua batter making sure the same has a nice pourable consistency Once it is ready, keep the batter aside for a few minutes Soak saffron in a small bowl to make saffron water

Heat oil in a pan and when it is hot enough just pour a ladleful of the mixture and spread it evenly On a low flame cook the Malpua till it is golden brown from both sides Remove from the pan, drain the excess oil and drop the Malpua in the sugar syrup for at least 10 minutes Repeat the process with the remaining batter Drain the Malpua from the syrup, and garnish with pistachios,rabri and saffron water Serve hot

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups fresh spinach leaves

1/2 cup fresh cilantro leaves

2 green chilies, chopped

1 onion, chopped

1 tomato, chopped

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tsp cumin seeds

1 tsp coriander powder

1 tsp garam masala

1/2 tsp turmeric powder

1/2 cup heavy cream

Salt, to taste

3 tbsp oil

Method

In a blender or food processor, puree the spinach, cilantro, and green chilies until smooth Set aside Heat the oil in a large skillet or Dutch oven over medium-high heat.

Add the cumin seeds and saute until they begin to sizzle.

Add the onions, garlic, and ginger, and saute until the onions are translucent

Add the tomatoes and cook until they have softened Add the coriander powder, garam masala, turmeric powder, and salt, and cook for 2-3 minutes.

Add the chicken pieces and cook until they are browned on all sides.

Add the spinach puree and cook for 5-7 minutes, stirring occasionally.

Add the heavy cream and cook for an additional 2-3 minutes

Serve hot with rice or naan

Mr Tanna has had an illustrious career in the hotel industry spanning over 29 years, during which he has worked in various countries across Europe, South East Asia, and the Pacific. Born in Thane Mumbai, Mr Tanna spent his early years in school and college building everlasting friendships and memories. However, his passion for the hotel industry was embedded in him at the young age of 13, when he decided that he wanted to work in 5-star hotels. With his grandfather and father being cooks, he grew up watching them and developed a desire to learn cooking.

After completing his hotel studies at the Institute of Hotel Management in Ahmedabad, Mr Tanna embarked on a journey that took him

to various parts of the world. However, he finally docked in Goa after nearly 6 years, where he now leads Kenilworth Resort.

As a leader, Mr Tanna's working philosophy is centred on the "Service Profit Chain," a business model developed by researchers at Harvard in the 1990s, illustrating the associations between various sectors of business, such as profitability, customer loyalty, employee satisfaction, productivity, and loyalty, which lead to business growth.

We were greeted with warmth on our arrival at the Planet Dailies by the senior staff and Chef Yoginder, the executive chef of the hotel, and Chef Rodney Fernandes, Executive Sous Chef Once the team settled down, we were served soup and some mouth-watering starters to begin our journey into a culinary delight. The food quality and quantity is the best at the Planet Dailies and service is undoubtedly superior, matching the name of the hotel Chef Rodney believes that the visuals should match the taste of the food and this was evident with each dish and serving. We started with a chicken Manchow soup which was prepared with condiments of noodles prepared with a mixture of chicken and vegetables, presented pre-plated, and served on the table. It was a classic experience that one can enjoy in a five-star property

Chef Rodney specialized in western cuisine but being a skilled culinary expert, he takes care of multi cuisine with similar efficiency. “When you reach this position, you must be an expert in all food items I also possess knowledge of pastries and baking and this helps us to keep our staff well trained and keep them up to date with international standards,” he said. Speaking on the reviews from their customers, Chef Rodney said, “They always appreciate the efforts we put into our cooking The food industry is very challenging and there is no 100% perfection anywhere, hence there are ups and downs sometimes but we make sure that we handle the situation very carefully. It all depends on how you handle the guest- if any guest does not like the food, we convert it into a better experience. We constantly keep training the chefs, making sure the food standard is maintained to the mark.”

Please tell us about your background and how you entered the field of culinary Cake making.

I am Jennifer Flory D'souza I am a skilled Beautician Following my passion with a Bachelor's degree in English literature and a Diploma in Computer Programming. In addition to my passion for beauty and cosmetics, I also have a love for baking and cooking It was my son ' s cravings for a cake that led me to pursue the art of cake-making as a culinary hobby. Have you undertaken any formal education in the field of culinary arts?

I do not have any formal education in the field of culinary arts However, I have gained basic baking skills from my friend, who is a trained pastry chef.

What was the reason you chose to bake?

Initially, baking started as a hobby for me. However, it became more than just a pastime when I realized that my son had a sweet tooth and loved cakes and pastries Wanting to fulfil his cravings, I began learning how to bake for him.

What are the hurdles you faced while pursuing your dreams and how did you overcome them?

Previously, I would consult my chef friend for advice on baking. However, since their passing, I now rely on the internet as a source of information for baking-related queries.

What are the USPs of your cuisine and how do you deal with the competition?

My USPs for baking are centred around quality, presentation, and freshness. I strive to ensure that my baked goods are of the highest quality, visually appealing, and made with fresh ingredients

Over time, my cake-making has evolved to cater to the taste and preferences of my customers I now bake a variety of cakes with different flavours, customizing them to suit the individual preferences of each customer. It brings me great joy to see my customers enjoying the cakes that I have made specifically for them One of my personal favourites to bake is the red velvet cake

What are the weirdest foods you have ever tried?

I haven't tried any weird foods as of yet. If not a Chef, what else would be doing?
