Dr Peter Widdowson has a background of 30 years in Plastic, Reconstructive and Aesthetic Surgery. Graduating in Australasia, but also studying overseas he specialised in his earlier career in microsurgery, cleft lip and palate surgery as well as burns and trauma surgery. Over the years he has transformed these skills into his Aesthetic (cosmetic) Plastic Surgery in which he now specialises.

It was slow to arrive, but summer is here and with it, those lovely, lazy, blue-sky days that usher in the holidays – time to revel in our glorious Gold Coast and what makes it so special.
As the days and weeks fly by, seemingly faster every year, we can fall into the hectic pace of the “silly season”, or choose a slower speed, which is what I plan to do!
Taking a break from work and commitments, we are going to spend time together as a family, entertaining friends and relatives by the beach, enjoying the simple pleasures of life and being grateful for them.
This edition of Gold Coast Panache celebrates those simple things: family, friends, good food and wine, great music and inspiring people who share what motivates and moves them. Though from diverse backgrounds, they all have several things in common: respect for their people, pride in their businesses and in their achievements, and a passion to give back to their community.
Our cover story this issue is the ambitious and talented Brooke Evers who’s the in-demand DJ with a world following, but whose greatest achievement is her darling daughter, Rocky. There is an amazing array of fabulous recipes, summer fashion, and were you snapped in our social pages on the Gold Coast or in Brisbane?

Sam Riley OAM

Sam Riley OAM and her prodigious talent and megawatt smile were on every TV screen in the nation when she competed in breaststroke and medley events during the 1992 Barcelona and 1996 Atlanta Olympics – as well as the 1994 Commonwealth Games and dozens of World Championships. Her World Record in Rome in 1994 earned her the honour of Female World Swimmer of the Year.
After a lifetime of travelling the globe for her sport, Sam calls the Gold Coast home and is active in the local community, heading up her own Swim Schools and working with the Gold Coast Suns AFL Club. Here, Sam shares her recollections of a brilliant swimming career and a personal discovery that led to deeper insight about her family history.
What led you to swimming?
I was diagnosed with asthma at age four and when I was seven, doctors suggested to my parents that swimming would be a good form of exercise.
Up until the age of 15 I was regularly in hospital with asthma. It was around this age that I met the famous swim coach, Laurie Lawrence who saw some talent and always tried to encourage me to attend more sessions.
Training a few times a week with him planted the seed that one day it would be amazing to represent Australia. He was an incredible motivator and had a squad full of champions. As a young kid, I was inspired to watch their achievements while swimming alongside them.
What did you enjoy most about it?
Fortunately, I really enjoyed the challenge of training, which makes life as an athlete a bit easier as it’s a hard, monotonous slog at times.
My teammates and coach, Scott Volkers created an environment that was fun, supportive and we all worked really hard. The travel, camaraderie and achieving goals and breaking records were definitely highlights.
What were the challenges?
The main challenge was the monotony at times. Being a swimmer, you had to put in early mornings and long hours. What are some of your career highlights?
The 1994 World Championships in Rome stand out as a highlight. It was at a time that the Chinese girls were dominating so to remain focussed and achieve a World Record and two Gold Medals was something I had always aspired to achieve.
It was awesome. And the experience of swimming at the Olympics is another highlight. I came away with a silver and two bronze. Living in the Olympic Village was so much fun. Post-swimming, where did your career take you?
I have been running my own businesses for the past 20 years. Currently we are about to celebrate 20 years of our learn to swim business - Sam Riley Swim Schools. We are trying to work out how many children we have taught over those two decades! I am also involved in the Gym Industry, owning seven SNAP Fitness Gyms. Have you encouraged your kids to pursue swimming or competitive sport?
I have encouraged my children to pursue sport as it offers so many benefits. They have all found their own love of different sports. They are great swimmers, my youngest still competes but my two older boys didn’t continue competitively. They love AFL, Rugby Union and Nippers.
What is your role at The Gold Coast Suns?
My role with The Suns is in Consumer and Community, AFLW and also sitting on the Indigenous Advisory Group. We are lucky enough at The Suns to have Jarrod Harbrow leading the way and he does a great job in driving some awesome outcomes. Have you explored your Indigenous background and how does it impact your life and work?
SamMy mum was adopted and grew up thinking she was Italian, so we both discovered our heritage later in life. It has been a great journey for my mum to discover some of her family history and she has researched quite extensively. It is really interesting and great to have more knowledge of our past.

Google BROOKE EVERS and you’d be forgiven for thinking there are 10 of her! In her career so far, Brooke has held roles on TV, magazines, as a model, actor, dancer, radio presenter, producer, and cover girl of men’s mag, Zoo Weekly as “2008 Beach Babe of the Year”. But her fans, followers and thousands of clubgoers know her as an accomplished and in-demand DJ.
A passionate Gold Coaster, Brooke is also mum to Rocky who with partner, Matt Stafford, she is raising to balance the best of the coastal lifestyle and travelling the world. Here, Brooke lets us in on her love of the stage since childhood, various incarnations and her incredible rise to international DJ-fame.
How did you evolve your career from model, magazine contributor, to TV personality and in-demand DJ?
Growing up I was always in front of the camera. Mum always said I was born for the stage, so I started pretty young.
In my early 20s I was modelling quite a bit, but I wanted to do it all! I was studying a Bachelor of Journalism at Griffith University on the Gold Coast whilst modelling and dancing as my job. Life was fast and that’s the way I wanted it.
I was fortunate enough to score some work experience in Sydney for a magazine I was modelling for as editorial assistant. This was definitely a time in my life that I will cherish forever as I learnt so much but also discovered my love for nightlife. Days were spent in an office and my nights were behind a laptop and DJ decks. I was hungry to learn more about my new hobby and that was the DJ world. I would stay up till all hours of the morning practising and learning off other DJ friends – it was so exciting.
Then fast forward about a year later; I got a manager, an agent then moved back to the Gold Coast and started deejaying around Australia, the rest is history.
What do you enjoy about it, what are the challenges?
The thing that makes me hungry for more is the energy on the stage. I love it! I love creating a vibe in a room of people and bringing happiness to an event with fun music and a great time.
Deejaying has taken me around the world from India to China to America and back. I’m so very lucky to be in the position I now am. I feel with everything in the entertainment world comes many challenges. The hustle is cutthroat, the late nights is tough on my body and mind, being away from friends and family and missing out on special occasions, these are the things that are challenging.
What have been the highlights and achievements?
I would have to say the travelling is the biggest highlight for me and meeting new people. One achievement that stands out would have to be my last show in India for over 30,000 people! Mind-blowing on so many levels!
How are work commitments different now you have a child?
My entire world is different. Work is still my world but so is my beautiful girl, Rocky! I’m blessed to have my parents and my husband’s family to help when I need them.
Is there a key to juggling it all?
I’ve never been a really organised person but now I have to be so organised days leading up to a show or any other work commitments. Mums can do it all!
Where has your career taken you around the world?
I’ve been around the world with deejaying a number of times but there are still some countries I’m yet to explore: Japan, Africa and Iceland. Deejaying is the best job in the world and I’m so lucky.
Any favourite places over seas you can recommend?
I will always be obsessed with Greece. I play at a club called FarOut Beach Club in Ios, Greece every year and it’s the best. Plus, you can’t go past Greek food. It’s delicious!
Is there a typical ‘day in the life’ of Brooke Evers?
I kick off the day with a very large coffee as I don’t think I’ve slept much in two years. Then I like to get some exercise in. I always drop Rocky at her grandparents’ place or Matt stays home to watch her. Exercise for me is key not just for the physical aspect but mentally. I just feel so great afterwards.
Then home to feed Rocky/myself and get stuck into emailing and any social media jobs that need to be done. Then its nap time for Rocky and I try to get as many things done in an hour (mainly housework). It’s incredible what you can achieve in this time. Afternoons are activities with Rocky and just some one-on-one time.
Evenings are spent prepping dinner or going to visit family. Once Rocky is asleep at night, I sometimes stay up and do DJ work, prep music for upcoming shows, online shop for performances or just relax and watch TV. This is my weekday routine, and the weekends are completely different if I’m gigging.
What is your preferred exercise routine?
I’ve always been a group fitness gal. I think it might be my inner sports child but lately I’ve been working with my incredible brother, Ryan Evers – Forever Fitness, who is a gun personal trainer that has really transformed my body. I’m so thankful for him.
What are your skincare and cosmetics ‘must-haves’?
I suffered from acne most of my 20s and now 30s. It was awful and it only became worse if I was deejaying a lot and touring. I discovered some great skincare in Los Angeles after a number of facials. IS CLINICAL is the brand and I swear by it. Not only has it helped my acne, but it’s changed the texture of my skin. Highly recommend. The makeup I use day to day is by the Aussie brand LUST MINERALS. I really feel that using a mineral make up that’s not full of nasty chemicals has also helped my skin breath and fewer breakouts.
What’s your schedule over summer 2022/23 - are you hosting any major events?
Summer is looking to be really great in Australia. I’m currently in the US finishing off shows in Boston/Atlantic City and Connecticut then I am back for a number of shows in Australia including some new cities that I haven’t been to, which is epic. I love summer at home on the Gold Coast. There’s just something in the air. Everyone is pumped for a good time.
What are you looking forward to in 2023?
I’m really looking forward to getting back into touring. I took a step back over the past 18 months to focus on being a mum, but now I feel confident to get back out there and do what I love. I’m jumping into the studio and releasing more music which is something I’ve been missing terribly.
I am also involved with a number of businesses that I will be working more closely with next year – getfizzy.co and ghostlifestyle.com so it’s going to be a busy year. Next job is to find a touring nanny so Rocky can come with me on the road everywhere.

Where did you go to school for primary and senior? Wilderness in South Australia, Guardian Angles and St Hilda’s School Southport.
Favourite subject and why? Geography - I have always been interested in travel and learning about other countries
Favourite teacher and why? Darren Daley (my husband) he is a qualified teacher and taught me Gemmology and Diamond Grading.
Best memory at school? Getting picked up from school in a stretched limo to start a crazy night out, getting half way home when the limo driver told me I had a call and it was my mum, except it wasn’t my mum it was another Nicole’s mum so we had to drive back to school and swap cars.
Academic or sporting achievement? Achieving my diploma in gemmology and becoming a jewellery valuer before I was 25!
What did you want to be when you grew up? Initially an environmental scientist.
Is your life now what you expected it to be? If so how?
Yes. I have worked in the family business since I was 5 and it has always been in my blood. I have always loved jewellery and Gemstones and I couldn’t imagine myself doing anything else. I even dream about jewellery designs so I know that it truly is meant to be and I am doing the job that I was born to do.

Attending school and getting an education is an all-important part of shaping us for life’s journey. We asked some prominent women for their memories from their time in class during those formative years.
Where did you go to school for primary and senior? Tower Street Primary School Sydney and Sheldon College.
Favourite subject? Dance and Drama.
Favourite teacher? Miss Box - Dance Teacher.
Best memory at school? Graduation, I knew I was destined to go places, see the world, grow a business, be a part of something and I have certainly ticked a lot of boxes with many more to tick off. I knew the world was waiting for me and I just needed the freedom to figure that out outside of school.
Academic or sporting achievement? Dancer of the Year (this was a pretty big deal at my school) we had our own academy awards.
What did you want to be when you grew up? Lawyer - I love looking at situations wrong and right.
Is your life now what you expected it to be? If so how? It is better, I now work at the number one world-class entertainment destination on the Gold Coast The Pink Flamingo, have an amazing partner who blows my mind in the music industry that I manage and a step mum to an 8-year-old who is going to grow up to be just like his dad and take us all by storm with the talent brewing in his blood. I never thought my life could be this busy and full of happiness and success. To now own a business that has endless opportunities in the entertainment industry is a position I never thought would be mine.
Merrin Robson
Shopping Centre ManagerWhere did you go to school for primary and senior? I changed schools a bit as a child but most of my primary school time was at Kotara South Primary School and then Kotara High School.
Favourite subject and why? Science - I love researching and finding answers to things I don’t know. Science for me is about testing boundaries, finding out how things work and why they react the way they do. When in highschool I wanted to be a marine biologist and study Orca’s. Managing shopping centres is slightly left of field from that dream.
Favourite teacher and why? Mrs Neilsen was one of my science teachers. She had a great way of explaining things that actually made you more inquisitive and wanting to learn more.
Best memory at school? I was a bit of a social person at school, somewhere around the middle of the highschool hierarchy. But 2 or 3 times a year at sporting events I was popular, how? easy? I was given a high great big “Boom Box” as a birthday gift and although it was heavy enough to tear a shoulder, I’d carry that thing around everywhere at these events and everyone wanted to be near the music.
Academic or sporting achievement? If you know me, you know I’m not much of a sporting hero, but I’ve never played and lost a grand final. I’ve only played in 2 with my indoor volleyball team - Olympic Rejects, but it’s bragging rights I’m proud of.
What did you want to be when you grew up? I always wanted to do something science based. A marine biologist or a criminal profiler, let’s just say I wasn’t one to follow my career goals back then. Is your life now what you expected it to be? If so how? Oh wow, no not at all. I never expected in my wildest dreams I’d be doing the things I am now. When we moved to the Gold Coast back in 1999, I was a cake decorator by trade and thought I’d be doing that or hospitality for years to come. Within 15 years I worked my way into Centre Management and through the ranks to Centre Manager experiencing every aspect of the industry along the way. It proves that just because things don’t go the way you planned, doesn’t mean they can’t work out even better than you’d imagined. Use the setbacks and distractions to work with what you have to create new pathways. I have the most amazing friends and family, I live near the beach, have a job I love, have small shares in a couple of race horses and get to travel every year. I also sell Senegence skincare and make up in my spare time meeting new people and making some extra dollars for holidays and pretty things, a far cry from a cake decorator in a bakery.
Abbi Golightly

Where did you go to school for primary and senior? Primary School – Guardian Angels and High School – Aquinas College.
Favourite subject and why? In High School – Legal Studies, unsurprisingly but also a close tie would have been Speech and Drama. The combination of the two subjects enabled me to both enjoy the theoretical aspects of law with the creative aspects of Speech and Drama which helped me develop my love of public speaking and thinking on my feet, which helps with Court work. The subject most useful to me now was secretarial studies, because I can now touch type which helps immensely with Court work and document preparation.
Favourite teacher and why? My Grade 7 teacher, Mick Beard. He passed away last year, which was very sad, but he said to me on my last day of primary school (when Grade 7 was still in primary school), that I could and would do anything I wanted to do.
Best memory at school? Grade 6 – the school trip to Canberra. It is like an institution at primary school to travel to Canberra! You visited Parliament House, the War Memorial and then had a couple of days in the snow. Being away from your parents for a whole week felt ever so grown up as a 12 year old!
Academic or sporting achievement? I received a number of Academic achievement awards in Grade 12, including for English, Legal Studies and Study of Religion as well as the best player for the 15A Netball Team (I tell my daughter she gets it from me!!) I also achieved well with the school debating team (again unsurprisingly, I do love an argument!).
What did you want to be when you grew up? For the most part a teacher. It wasn’t until high school when I studied legal studies that I could see a career in law would give me the opportunity to teach (via mentoring young lawyers) as well as practice law. Mentoring is now one of the most important aspects of my role.
Is your life now what you expected it to be? If so how? My life is exactly as it should be. I try not to live with expectations and know that the universe will put me exactly where I need to be at any given time. I am grateful for everything that I have in life, my amazing family (which is my super talented, smart and funny daughter, partner, parents, brother and sister-in-law, my nieces and nephew) my career, wonderful friends (who I consider my family) and my health (but for a dodgy arthritis knee).

Best memory at school? Best memory would have to be my Saturday morning detentions which were numerous. I skipped a year at junior school in Geelong and St Hilda`s in their wisdom held me back a year because of my age. I was obviously bored and played up thus the Saturday morning detentions. Academic or sporting achievement? I was basketball and hockey captain. What did you want to be when you grew up? I wanted to be an airline hostess for Qantas and travel the world. Careful what you wish for as I am now overseas 6-8 times a year. I was actually and inch too short to be a hostess. My second choice was fashion designer which of course I became. Is your life now what you expected it to be? If so how? My life is actually a lot more glamorous and exciting than I could have possibly imagined. Due to my many visits to detention I was politely told by Miss Granowski (Headmistress) that perhaps I wasn`t cut out for school life. I left after year 10 and eight months later starting winning fashion awards. My daughter Michelle Massey (now Speirs) was a goody two shoes and won the Headmistresses Award. Ironically I was invited back to St Hilda`s to talk to the seniors about aiming high in their chosen fields and not let anything stand in their way.

Favourite subject and why? Art or Drama. If you know me no explanation required Favourite teacher and why? Mr. Thomas my typing teacher in high school. Mr. Thomas was hearing impaired with a wicked sense of humour!
Best memory at school? In typing class doing our daily warm ups, the class had all agreed to pretend to type and make no noise. Mr Thomas thought his hearing aids had broken. It was one of the funniest things but more importantly Mr. Thomas thought it was too and had a great laugh with us all. Academic or sporting achievement? I received a certificate in grade 3 for getting all my spelling words correct!
What did you want to be when you grew up? I wanted to be an Interior Designer. I love all things home and still do.
Is your life now what you expected it to be? If so how? When you are younger you dream big which is fantastic you should but then you can take a different path that leads you in another direction. Sometimes not taking the easy route can be the best thing you ever do. I’m so grateful for my beautiful daughter Alex that my late husband John gifted me all because I took a different path. Family is everything and great friends as well. Luckily I’ve been blessed with both.

Michael showed us the sights of his hometown via helicopter, boat and cable car, we even skied and played ice hockey. I can tell you he is charming, funny and if you get a chance to go to one of his concerts jump at the opportunity because his banter between songs is worth the ticket price alone.

- I was at a Label Magazine lunch at The Hilton in Surfers Paradise. Jake from The Bachelorette and Bachelor in Paradise was the MC on the day. He gave out roses to some of the ladies and I was lucky to get one from him. Such a funny and really great guy.
– Our whole family were invited to their annual Christmas party at the Kardashian’s house. And we took this photo in front of their christmas tree! Kim was an absolutely beautiful soul going out of her way to make us all feel at home.
– We were at QT for a sportsman’s lunch and Sally was one of the speakers. She happily took this photo with me. What a champion surfer she is and lovely lady.
- I was at the Magic Millions with Calleija Jewellers. Zara Phillips is an ambassador for the brand and we were on the same table. She is an absolute delight and so down to earth. Loved her and her husband Mark. It was a lovely day at Magic Millions.

Just relax, things are going to go wrong but it is all part of the story you’ll tell once the night is over. Everything always works out!
Your 2 favourite style icons and a few words on each?
I draw inspiration for my style from the people around me everyday. My friends, colleagues, people I see on the street - inspiration is everywhere! But if I had to pick two I would say Mariana Hewitt who is the co-founder of skincare brand Summer Fridays and Felicity Brand who is the head of buying at Mode Sportif. They both are successful business women, and both have such unique style and they don’t follow trends they’re just themselves which I love.
Your 2 favourite designers and a few words on each?
I love Off-White - Virgil the former head designer is such an icon and inspiration and in his passing is still such an influence of the fashion industry. An Aussie brand I love is one of my best friends, Le Mon. Brooke has created an Australian made swim and apparel brand with timeless cuts and designs and the quality is incredible. Le Mon has limited quantities, and uses recycled fabrics also so it just ticks all the boxes for me - an incredible brand.
In a few words tell us about your own style, what you like to wear?
My own style I think is a bit chaotic if I am being honest. Sometimes I am simple and in all black, and other times you couldn’t possibly add another colour into my outfit. I think the most important thing with your personal style and fashion is to have fun, and wear whatever the hell makes you feel your best. That is the best thing about personal style, there are no rules.

J’adore Dior
I have been reflecting on my amazing meeting with Anna Wintour at Conde Nast head office in New York in March this year. She knew I was heading to Paris and highly recommended a visit to the Dior Museum. On walking through the door I had a flash back to 1979 when I was studying at the Paris American Academy Ecole de Beaux Arts in France. My design portfolio was sent to Marc Bohan the head designer at Dior. Unfortunately, I had to turn down the position due to marital commitments in Australia! Life is full of sliding doors, n’est-ce pas vrai? Moving forward, this visit sparked my interest in one of greatest designers of all time.
Christian Ernest Dior was born in the seaside town of Grandville on the coast of Normandy on the 21st January 1905. He was a French couturier best known for his eponymous fashion house Dior presently owned by parent company LVMH (Louis Vuitton Moët Hennessy).
He was the son of a fertiliser manufacturer who held high hopes of Christian one day becoming a diplomat. In 1925, young Christian enrolled at the Ecole des Sciences Politiques to begin his studies in political science. However, he was artistically inclined and sold his sketches on the street for pocket money. His parents eventually recognised his talent and purchased an art gallery for him where he sold works by artists including Pablo Picasso and Jean Cocteau. Following the onset of the Great Depression in 1929, the death of both his mother and his brother, and the collapse of his father’s business, Dior was forced to close his art gallery. He then went to work with fashion designer Robert Piguet until he was called up for military service in 1940. He served in the south of France as an officer in the French Army.
At the end of his service in 1942, he began working for couturier Lucien Long, where he and Pierre Balmain were the primary designers. During the war, Lelong – like other French ateliers including Jean Lanvin and Nina Ricci – dressed the wives of Nazi officers and French collaborators as a way of preserving the fashion industry
throughout the conflict for both economic and artistic reasons.
At the same time, Dior’s younger sister, Catherine joined the French Resistance, resulting in her capture by the Gestapo and subsequent imprisonment at the Ravensbrück concentration camp. She survived and was liberated in 1945. In 1947, Dior named his debut fragrance Miss Dior as a tribute to her.
His perfumes were based on memories of his mother’s rose garden in Granville, a seaside town in the North of France.
Catherine Dior was involved with the Franco-Polish intelligence unit F2, she was arrested, tortured and forced to work in the Torgue military prison and then in a factory near Leipzig. After her release at the end of the war, she was awarded the Croix de Guerre, the King’s Medal for Courage in the cause for freedom and the Chevalier Legion de Honour. Catherine became a flower trader and farmer in Provence for the production of fragrance. She became the honorary president of the Christian Dior Museum from 1999 until her death in 2008 aged 90.
Dior’s designs exploded onto the fashion scene into the face of wartime restrictions. He reintroduced a femininity and focus on luxury to women’s fashion. He founded the house of Christian Dior on the 16th December 1946 at 30 Avenue Montaigne Paris, backed by Marcel Boussac, a cotton fabric magnate. In 1947 he debuted his
first collection presenting 90 different looks named ‘Corolle‘ and ‘Huit’. The opulence of his designs contrasted with the grim post war era. The ‘New Look’ had arrived. Christian Dior passed away from a fatal heart attack on the 24th October 1957 at the age of 52. His funeral was attended by 2,500 mourners including his family, friends, staff and celebrity customers such at the Duchess of Windsor.
His successor was his design assistant, Yves St Laurent at 21 years of age. Then Yves was conscripted into the Army and was replaced by Marc Bohan who proved to be a very successful replacement, defining a new era and new silhouette for Dior.
Bernard Arnault and his investment group LVMH added Dior to their impressive list including Bulgari, Fendi, Dom Perignon, Moet & Chandon, TAG Heuer, Gucci, Celine and the list goes on, creating one of the leading and most influential luxury goods conglomerates in the world.

This summer there is an unexpected trend heading our way. With more and more events taking on full capacity crowds, there is reason to start looking great again. Summer is always filled with pastel hues and cute nail art, but to take it up a level this year, nails will be dressed up with sparkly polishes and pops of shimmer. I can hear your concerns: ‘aren’t glitter nails for tweens?’ When done the right way, this nail trend is surprisingly wearable. From a minimalist hint of shimmer to full frontal sparkle, there are many ways to wear and embrace this look.
Three ways to wear this summer’s look:
1. The Minimalist
The sophisticated way to wear glitter. Lots of natural, glossy nail, trimmed with glitter to keep a fresh look and feel, so it’s perfect for summer. To keep a modern feel, place the glitter along the sides of the nail, rather than at the tip. Having the centre of the nail bare will stop the glitter from being too dominating. By having the majority of the nail in gloss, mixing and matching glitter polishes at the top and bottom of the nail will not feel like it’s too much.
2. The Full Frontal
Another reason to have glitter as a summer trend is how great and chic it looks in the summer sun. If you are going all out with full frontal then why not mix and match colours to bring out how you’re feeling or match what you are wearing. If you are still a little timid with the idea of going full frontal, why not try just one or two nails and leave the rest minimalist. If you are thinking full frontal, then go all out, the range of colours this summer should highlight any style you are going for.
3. Sparkle Art
If you’re really feeling bold and wanting to make a statement, then turning your nails into a piece of art may be just the thing needed for a night out. From sheer sparkly bases to beautiful metallic designs, this summer’s glitter look will add both colour and texture to the warm summer sun or the city’s night lights.

“People come for remodelling as they may have inherited a piece they don’t like the design of, or a broken piece that they wish to turn into something new. Or maybe they’ve simply changed the style of jewellery they like to wear. They may have once worn yellow gold but now prefer white gold, or perhaps collected a lot of fine pieces of jewellery but now prefer larger statement pieces.”

“It is best if a client has an idea of what they are looking to do and then we sit down and discuss their needs and wants with them and refine their ideas with some design options,” Nicole explains.
For example inheriting a relative’s valuable brooch, is a sentimental challenge that requires an expert touch. “While it’s true brooches are not usually a popular item on the Gold Coast as they don’t suit the fashions we wear in this climate, we understand that a piece of jewellery may hold deep emotional ties. We have worked with clients to turn a brooch into a pendant or add a feature so that they are more wearable.
“I absolutely love working with our clients on remodelling a precious piece in a way that is worthy of its uniqueness and giving it a new lease of life so it continues to bring happiness and evoke memories in its new owner.”
As for seasonal trends, Nicole says there has been a return to “big bright bold gemstones”.
“Rings and pendants featuring a singular stone or a dominant centre stone of colour are very popular. Multi-coloured jewellery will also be popular through summer, especially the beautiful colours available in Sapphires.”

Understanding why you use an ingredient is crucial to mastering baking and building confidence. The high fat content of sour cream means it adds a lovely richness to cakes, while the acidity adds a tender texture, which is exactly what you’re looking for in a vanilla cake. And because it’s thick, it won’t thin out the batter and affect the way the cake cooks. You can substitute the sour cream with a thick, Greek-style yoghurt.
1 Preheat the oven to 160°C. Line two 18cm round cake tins with baking paper.
INGREDIENTS
• 200g caster (superfine) sugar
• 170g unsalted butter, softened
• Grated zest of 3 lemons or ½ teaspoon lemon extract
• 1 tablespoon vanilla bean paste or extract
• 1½ teaspoons baking powder
• ½ teaspoon bicarbonate of soda (baking soda)
• ½ teaspoon salt
• 3 eggs
• 120g sour cream
• 120ml full-cream milk
• 220g cake flour
• 200g fresh or frozen blueberries (not thawed)
• 125g fresh blueberries, to serve
• Grated zest of 1 lemon, to serve
VANILLA MASCARPONE ICING
• 250g chilled mascarpone cheese
• 200ml chilled thickened (whipping) cream
• 100g icing (confectioners’) sugar
• 1 tablespoon vanilla bean paste
2 Using an electric mixer fitted with the paddle attachment, mix the sugar, butter and lemon zest or lemon extract until light, creamy and fluffy. Add the vanilla, baking powder, bicarbonate of soda and salt and mix until thoroughly combined. (I like to add the raising agents at this point to ensure they are evenly dispersed throughout the cake batter, creating an even rise in the final cake.) Add the eggs, one at a time, and beat until combined.
3 Whisk the sour cream and milk in a small jug or bowl.
4 Sift the flour over the egg mixture, then gently fold together until combined. Lightly mix in the sour cream mixture until the batter just comes together.
5 To prevent all of the blueberries from sinking to the bottom of your cake, first divide a quarter of the batter between the cake tins and smooth the top. Mix the blueberries through the remaining batter and divide it between the tins.
6 Bake the cakes for 40–45 minutes or until a skewer inserted into the centre of each cake comes out clean. Allow the cakes to cool in the tins for 10 minutes before turning them out onto a wire rack to cool completely.
7 For the icing, whisk the mascarpone, cream, icing sugar and vanilla in a bowl until thickened. Be careful not to overwhisk the cream as it can easily split.

8 Use a serrated to knife to level the tops of the cakes, if needed. Put one of the cakes on a serving plate and spread it with about a third of the icing. Add the second cake and spread the remaining icing all over the top and side. Garnish the cake with the fresh blueberries and lemon zest.
DULCE DE LECHE SANDWICHES
This is my take on the alfajores cookie that we all know and love but can’t pronounce with any level of confidence. It’s essentially a sandwich cookie consisting of two vanilla shortbread cookies held together with a thick slather of dulce de leche. Dulce de leche is a milk caramel that is readily available in supermarkets. You can make it yourself at home (see below), but why not take the easy route and buy the stuff? Any leftovers can be eaten with a spoon, directly from the jar.
MAKES 22
INGREDIENTS
• 200g unsalted butter, softened
• 150g icing (confectioners’) sugar, plus extra for dusting
• 1 egg
• 2 egg yolks
• 1 teaspoon vanilla bean paste
• 1 teaspoon baking powder
• ½ teaspoon bicarbonate of soda (baking soda)
• 350g plain (all-purpose) flour, plus extra for dusting
• 150g cornflour (cornstarch)
• 200g dulce de leche (below or store bought)
1 Preheat the oven to 180°C. Line two baking trays with baking paper or silicone baking mats.
2 Using an electric mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy. Add the egg, egg yolks, vanilla, baking powder and bicarbonate of soda and mix to combine, scraping down the side of the bowl and the beater to ensure there are no large streaks of butter that will affect the finished cookies.
3 Put the plain flour and cornflour in a large bowl and give them a good whisk to combine and work out any lumps. Add the mixture to the butter mixture and stir until it comes together into a nice soft dough.
4 Tip the dough out onto your lightly floured bench and divide it in half. Roll out the dough to about 3mm thick (remembering that the cookies will rise in the oven) and cut out rounds using a 4cm cutter (a fluted cutter gives a nice effect, too). Transfer the cookies to the baking trays, leaving space for spreading.
5 Bake the cookies in batches for 15–17 minutes or until they are golden around the edges. Remove from the oven and allow the cookies to cool completely.
6 Spoon the dulce de leche into a piping bag fitted with a star nozzle and pipe it onto half of the cookies. Sandwich with the rest of the cookies and dust with icing sugar.
While you can readily buy dulce de leche at the supermarket, it’s easy to make at home. It just requires a tin of sweetened condensed milk and a few spare hours. You can cook multiple tins at a time and store them in the pantry for later use.
MAKES 400G
DULCE DE LECHE
• 400g tin sweetened condensed milk
Mix it up!
1 Place the unopened tin of condensed milk in a large saucepan and completely cover it with water. Cover the pan with a lid, bring to the boil and cook for a minimum of 4 hours for a deep caramel colour. Ensure the water stays at boiling point and top up the water if it drops below the top of the tin.
You can substitute the dulce de leche with any jam you love or a chocolate hazelnut spread (such as Nutella).
PASSIONFRUIT DELIGHTS
This cherished recipe has been passed down through generations in my partner Troy’s family (thank you Grandma Nowland!). These sweet, buttery biscuits are easy to make and even easier to eat thanks to the addition of a little rice flour, which gives a short, creamy biscuit texture. Glazed with the sweet tang of passionfruit, these cookie-jar favourites are perfect for afternoon tea.
MAKES 30
INGREDIENTS
• 2 teaspoons vanilla bean paste
• 250g unsalted butter, at room temperature
• 1/3 cup (75g) caster (superfine) sugar
• Pinch sea salt
• 2¼ cups (335g) plain (all-purpose) flour, sifted
• ¼ cup (40g) rice flour, sifted
1 Preheat the oven to 150°C fan-forced, and line two baking trays with baking paper.
2 Using a hand-held mixer or a stand mixer fitted with the paddle attachment, beat the vanilla, butter, sugar and salt on medium speed for 3 minutes, or until light and fluffy.
3 Stir in the flours and press together to form a firm dough. Knead gently on a floured surface until smooth.
4 Divide the dough in half. Roll each half into a log 5cm wide. Slice each log into pieces 1cm thick and place onto the baking trays. Bake for 35 minutes, or until the biscuits are a pale straw colour. Transfer to a baking rack to cool before icing.
PASSIONFRUIT ICING
• 50g unsalted butter, softened and cut into cubes
• 1 cup icing (confectioners’) sugar, sifted
• 1 tablespoon passionfruit pulp (with or without seeds, depending on your preference)
1 Combine the icing ingredients in a clean, dry, heatproof bowl over a saucepan of just-simmering water (the water should not touch the base of the bowl). Gently stir with a silicone spatula for 2 minutes, or until the icing is really shiny.
2 Dip each biscuit into the icing or drizzle it over the biscuits. Leave to set before serving.
Storage
These biscuits can be stored in an airtight container in a cool, dry place for up to 5 days.

It is almost impossible to resist becoming enchanted with these beautiful mini love cakes. The delicate flavour of rosewater and the tanginess of the cream cheese is complemented by the satisfying crunch of crushed pistachios. Adorned with sweet, plump, gold-kissed figs and jewel-like cubes of Turkish delight, these mini cakes are sure to win hearts! The use of almond meal and dark brown sugar lends a lovely sticky, rich profile that can’t be achieved with just flour, butter and eggs alone.
SERVES 8
SPICED CARAMEL AND ALMOND MINI LOAVES
• 200g unsalted butter, chopped into chunks
• 200g good quality white chocolate, chopped
• 2/3 cup (150g) firmly packed dark brown sugar
• 1 cup (250ml) hot water
• 2 tablespoons honey or
golden syrup
• 2 teaspoons vanilla extract
• 2 large eggs, at room temperature
• 1 cup (150g) self-raising cake flour or self-raising flour
• 2 teaspoons cinnamon
• 1 teaspoon ground ginger
• 1 teaspoon ground cardamom
• 2 cups (200g) almond meal
1 Preheat the oven to 160°C fan-forced. Grease the holes of an 8-capacity (230ml) mini loaf tin and line the base and sides of each cavity with baking paper.
2 Place the butter, chocolate, sugar, water, honey or golden syrup and vanilla into a large heavy-based saucepan. Stir the ingredients over medium–low heat with a silicone spatula for 5 minutes, or until the chocolate melts completely and the mixture is smooth. Set aside for at least 20 minutes to cool, then transfer to a mixing bowl.
3 Add the eggs to the chocolate mixture one at a time, and beat in well using a hand-held mixer or whisk. Sift in the flour and spices and mix until well combined. Fold in the almond meal until well combined.
4 Fill each cavity to three-quarters full. Bake for 30 minutes, or until a wooden skewer inserted into the centre comes out clean. Leave in the tin to cool completely.
ROSE CREAM CHEESE
• 500g cream cheese, at room temperature
• 100g unsalted butter, chopped, at room temperature
• 1 cup (125g) icing (confectioners’) sugar, sifted
Tip
• ½ teaspoon rosewater
• 2 teaspoons lemon juice
• 3–4 drops pink food colouring
• 2/3 cup (170ml) thick (double) cream, whipped
If your filling appears to be too soft to pipe neatly onto your cakes, place it in the refrigerator for 20–30 minutes to firm up to a more workable consistency.
ASSEMBLY AND DECORATION
• Large piping bag lined with a star nozzle
• 1 cup (130g) crushed pistachios
• 40g Turkish delight, chopped into small cubes
• 3 fresh figs, sliced into wedges
• Edible gold leaf (available from cake decorating stores; optional)
1 Using a hand-held mixer or a stand mixer fitted with the paddle attachment, beat the cream cheese, butter, icing sugar, rosewater and lemon juice on high for 2–3 minutes, or until pale and fluffy
2 Add the food colouring until the desired colour is achieved, stirring to combine thoroughly.
3 Gently fold in the whipped cream until combined and then cover and set aside until needed.
1 Pipe the rose cream cheese in swirls onto each mini loaf. Adorn each cake with crushed pistachios, a scattering of Turkish delight cubes and segments of fresh fig.
2 If you like, add a decadent lustre to the topping by decorating with a scattering of gold leaf.
Starting out with a satisfying breakfast means I’m much more likely to make better choices for the rest of the day. Prepping overnight oats in advance is something I make a point of doing each week, as it helps to keep me on track. As well as being rich in protein and fibre, these oats are deliciously sweet and salty.
SERVES 1
INGREDIENTS
• 1 small banana, mashed
• 130g 99 percent fat-free plain yoghurt
• 20g rolled oats
• 1 teaspoon vanilla essence
• 1/3 cup (80ml) no-added-sugar salted caramel topping
• 1 Weight Watchers caramel protein bar
1 Combine banana, yoghurt, oats, vanilla and 2 tablespoons caramel topping in a small bowl.
2 Finely grate three-quarters of the protein bar and stir through oat mixture. Spoon half the mixture into a 1 cup (250ml) capacity glass jar or serving glass Drizzle over half the caramel topping, then spoon in remaining oat mixture. Drizzle over remaining caramel topping. Roughly chop remaining protein bar and scatter on top of oats. Cover and refrigerate for about 3 hours, until chilled, or overnight.
Storage
Store oats for up to 5 days. Top with chopped protein bar just before serving. The longer the oats sit in the fridge, the softer they will become.

Doctor and pioneer
Dr Jason FreeDr Jason Free is a leading proponent of weight-loss surgery whose breakthrough research is advancing bariatric surgery here and around the world.
Jason Free moved to the Gold Coast from Perth when he finished High School in 1992 for university and liked it so much, he lives and works here now.
But his wasn’t a direct path to bariatric specialisation. “I went to university in Brisbane and actually became a veterinarian,” he says. “I initially worked for two years in Victoria as a vet in a little town south-east of Melbourne.
“During this time, I started wanting to do something much more challenging and specialised. So, I did some research and eventually decided to go back to university for another four years and did Medicine. In 2003, I graduated from Medicine in Brisbane and eventually finished all of my surgical training in 2010.
“I completed another three years of specialty surgical training following this to advance my skills specifically in bariatric surgery, and have since been working full time as a bariatric surgeon on the Gold Coast from 2014.”
Dr Free had several mentors in bariatric surgery, which impressed on him the value of this vital area of medicine.
“I was treating people who’d been sent into the hospital from all over Queensland and interstate that had had complications from previous bariatric surgery. I saw a lot of difficult and challenging cases, and the outcomes from these operations I was performing were very extremely dramatic with fantastic results.
“I realised at the time that bariatric surgery could dramatically and quickly change the lives of people and I became engrossed in wanting to learn as much as I could. This fascination led to a lot of further travelling around the world seeing all sorts of new techniques and better ways of doing bariatric surgery.”
One highlight of his career to date is introducing the SADI operation, which he learned during a stint in the United States. SADI is a new technique incor porating a sleeve gastrectomy with duodenal and some small bowel bypass.
“This technique was known worldwide to have occasional issues with nutritional problems. Subsequently I modified the technique and over the past two years I have been performing research studies on the newer technique, comparing to various other bariatric operations.
“The highlight of my career has subsequently been the ability to demonstrate to the worldwide bariatric surgical community that my modified version of this procedure is as effective at weight-loss however without the concerning complications of the originally described procedure. This research has recently been presented at international conferences and I’m hoping to have published relatively soon in Surgical Journals.”
Fortunately, Dr Free is able to unwind and take advantage of the marvellous Gold Coast lifestyle. The beach and Surf Life Saving are important to him and his family, and most weekends they can be found at the surf club on patrol or helping with Nippers.
“Occasionally I’ll get into training in the master’s groups and compete in Queensland and Australian surf racing titles,” he says. “I recently got into Ocean surf ski racing and in 2019 did a lot of the Australian racing circuit, qualifying for the World’s masters’ races in France for 2020 which were unfortunately cancelled because of Covid.”
Camping and hiking in the Hinterland are also tonics for body and soul. This summer, Dr Free and his family plan to travel the coast in their campervan, as well as a family cruise.
“We’ve enjoyed a lot of cruise holidays and they have been some of the greatest experiences our family has had.”
Looking ahead, 2023 has plenty in store for the good Doctor. “I will have the opportunity to present my research at the world’s two biggest international bariatric surgery conferences: Las Vegas in June, then in Naples, Italy in August.
“I have put an enormous amount of work into this research, and it has shown some fantastic results which will improve bariatric surgery. I am extremely proud of it and it will be great to have this research recognised internationally.”

I started my career as a general practitioner then expanded my profession, specialising in skincare and cosmetic care before commencing my entrepreneurial journey into revolutionising self-care with results driven skincare. In 2018, I began developing a truly unique selection of natural and cosmeceutical skin and scalp products that call on the powerful age-old benefits of Ayurvedic rituals, blended with the potency of active ingredients made possible with modern-day science. Having grown up in India I observed the considerable results Ayurvedic ingredients provide. I encourage a skincare ritual, not a routine. Does confidence really come from within?
Beauty to me has always been about expressing who you are. It’s about feeling confident and happy in oneself. The face is a mirror of our heart and mind; it is a reflection of our inner happiness.
As a doctor, mother, skincare and cosmetic care specialist, I understand the importance of self-confidence and that true beauty goes far beyond the layers of the skin. People are far more conscience now about the products they choose, and my entire range is proudly 100 percent Australian-made and manufactured locally to the highest environmental standards, using toxin-free formulations and nutrient-rich ingredients.
How did your entrepreneurial journey begin?
Most recently, I was honoured to win Gold Coast Women in Business Awards Business Achiever Award 2021 and in the same year was named “AusMumpreneur of the Year”. This has opened a myriad of opportunities for me. Being in the position to impact the lives of many budding entrepreneurs through serving as a motivational speaker at universities, public forums and various events around the world is very humbling. It is a dream come true to be able to motivate young women to challenge the status quo and pursue their dreams.
What is most important to you?
My family are my number one priority. Being able to lead by example and show my two boys that through persistence and hard work, anything is possible.

What sets you apart as a new generation leader?
I think the biggest thing I’ve noticed I do differently is just passion. I may not be the best in any particular area, but nobody loves my industry or the people who trust me to lead them more than I do. So it’s impossible for me not to have more energy or endurance in the long run, which I think is quite infectious too because the team seems to feed off of it.
I also put a lot of focus into culture. Make sure every day is different, make sure people are growing both personally and professionally, and make sure you recognise people when they deserve it.
If the job market is more competitive than ever, doesn’t it make sense that you have to make your people feel good?
What are your key passions?
The thing that gets me out of bed each morning is that every day I have the opportunity to help people get closer to becoming the person they want to be.
We did a big survey of all of the top leaders in my industry and 44/45 of them said that their biggest fear was not achieving what they are capable of. One said snakes. But being able to serve people by giving them the skills, experience and mentality they need to move toward that is my biggest passion by far.
I also love martial arts, travel, and being around anybody who loves what they do. Like when a server really loves the food at the restaurant. I just like being around passionate people.
What is the number one thing you train your team to focus on?
The biggest thing I train my team focus on is to “race their ghost”. I t’s essentially an analogy from racing video games where when you play on time trial (where you’re just trying to improve your race times rather than beat competitors). So the idea is not to compare yourself or your results to anyone else in the team, but to instead just try to be better than who you were yesterday. As they say, “comparison is the thief of joy”.
What are your non-negotiables?
I think the beauty of having put so much research and effort into building the calibre of sales and leadership training systems we have in my companies, is that there are only two things we look for in people to add to the team.
I need people to be hungry and humble. So people need to have an above average desire to be successful, and they need to have enough control over their egos to be coachable and be a good team player. We can teach everything else.
So with that in mind I’d say my non-negotiables are if people don’t have ambition and drive, or if they are selfish and can’t be told. People like that suck the energy out of any room.

Taking care of your mental health over the summer holidays
While the summer holidays can be a happy and exciting time for many people, it can also be a time of extra stress and obligations.
It’s easy to start to feel overwhelmed at this time of year, between the expectations of having a “perfect Christmas and New Year” as well as worrying about managing the crowds at the shops, family get togethers, work functions, it can all become too much…
Margaret Campbell, Registered Psychologist at Ramsay Psychology Southport, said there are a few simple things we can do at this time of year to make it less stressful and more enjoyable.
Manage family get togethers
Many people find the expectation of having to do a family Christmas stressful and anxiety provoking. If you are seeing the family for Christmas and feel stressed about the idea, try not to worry about it too much beforehand. Overthinking it can lead to you catastrophising. Worry won’t change the situation and will only make you feel worse.
Instead, focus on what you can control, where you are going, how long you will be staying, have a back-up plan and reason to leave if the day becomes too stressful.
If you’re spending the holidays away from family, make plans with friends.
Summer body pressure
It can be difficult to enjoy yourself when you’re consumed with worry about your body. It can be hard to feel good about yourself when you watch other people that you believe to look better than you. Worrying about fitting into your swimsuit or party dress, not eating enough, and making yourself feel sick, because you’re worried you’ll put on weight. We put so much pressure on ourselves to look a certain way.
Be kind to yourself and embrace who you are at this point. Celebrate your strengths, focus on your inner beauty and wisdom and celebrate you.
Pressure to be social
Being around lots of people socialising can be stressful for someone who struggles with anxiety. The guilt of turning social invitations down can also be exhausting. Be kind to yourself and only agree to social events that you feel you can manage and will enjoy.
Shop with a plan
A lot of people experience anxiety in large crowds and managing the Christmas shopping this time of year can be a challenge, from finding a park to wrestling the crowds it is hard work.
Plan what you need, make a list of what is needed. Don’t leave things for the last minute. Avoiding the crowds and anxiety will only make it worse. Go at less-busy times. If you’re a couple, share the duties.
Where possible, buy online, in advance so you get it delivered in time. Many companies will even offer a gift-wrapping service.

Jerome was discovered while working as the doorman for a house of ill repute in gay Paris. Speaking his native tongue, French, this international virtuoso is known for his razor-sharp wit, killer style and an eye for glamour, but according to rumour, his greatest talent is knowing when to keep a secret.
Rudi Testa has enjoyed a career on the stage for 25 years. Currently wowing the audience at the Gold Coast’s Pink Flamingo, as host, comedian and singer, Rudi brings his extensive caberet experience to the show, and lends his considerable skills as a musician, singer and bass player extraordinaire. He is also currently touring venues throughout Queensland with Blues Gypsy Band, Slips and the F.W.’s.
Cutting his teeth in amateur theatre from a young age, he followed the actor’s path, using his vastly talented older brother as inspiration – from Gilbert and Sullivans musicals to accompanying music for love performances.

Mr Hollywood in Oz revisits his iconic Rossi’s Oscars!
Raised in LA in a showbiz family, Damien Anthony Avery-Rossi is undeniably the social king of Queensland. Ambassador for Hyatt Regency Brisbane, the perfect party host and sartorially splendid on every occasion, Damien was destined for a career in the spotlight.
“The biggest night of the year in our household was Academy Awards Night, so when I relocated to Australia in the early 90s to be a Casting Director here, I was truly missing the excitement of Oscars Night every year, so I decided to hold a party for Brisbane’s Film and TV industry.”
The iconic Rossi Academy Awards charity event ran from 1995 to 2014 and was known as “Rossi’s Oscars”. Over the years the party grew from 50 guests at his casting studio to 550 guests in Palazzo Versace’s Medusa Ballroom by 2004.
In 2012, the event reached new heights and was so large that host venue Treasury Brisbane had to erect a massive perspex marquee in Queens Park to accommodate the guest numbers. That year was one of Damien’s favourites with Rhonda Burchmore as his co-host, Ricki-Lee Coulter performing and fashion designer Alex Perry showcasing his 10 all-time favourite red carpet gowns in a glamorous fashion parade.
Once Rossi’s Oscars became a charity event in 2003, it would go on to raise tens of thousands of dollars for cancer research and cancer charities. The Who’s Who of celebrity and famous guests have attended the glamorous affair over its 19 years, including Rhonda Burchmore, Marcia Hines, Sophie Monk, Ricki-Lee Coulter, Alex Perry, Courtney Act, Deborra-lee Furness, Michael Caton, Sofie Formica, Sharyn Ghidella, Melissa Downes, Bonnie Lythgoe, John Orcsik, Paula Duncan, Tony Bonner and Grant Bowler.
True testament to the calibre and ethos of Rossi’s Oscars, Hugh Jackman was one of its biggest supporters, as Damien recounts.
“After having worked with and becoming friends with Hugh Jackman on his first film, Paperback Hero, Hugh would send me a personal message to read out to my Rossi’s Oscars guests each year without fail. In 2009, it was especially poignant, as that was the year Hugh had been asked to host the Academy Awards telecast, one of Hollywood’s most coveted gigs, and he still sent a message to me the night before the Oscars. That was very special!”
In response to the clamouring for the return of Rossi’s Oscars, and following the success of The GlamouRossi Fashion Long Lunch in November at Hyatt Regency Brisbane, Mr Hollywood in Oz is seriously considering resurrecting the legendary event in March 2023, when the 95th Annual Academy Awards takes place in Hollywood. Surely this will be one of the most coveted tickets in the social history of Queensland, if not Australia? “Watch this space,” is all Damien will say . . . Will we be seeing The GlamouRossi Oscars??

Chakyl gifting Mario an incredible lion art piece on his birthday became a culprit and inspiration to having two lions representing their partnership.
The hunting spirit of a lion is about competitive nature to win and their presence is strong but in a humble way with a graceful attitude. The two lions are protecting each other’s backs and looking towards future horizons while always being connected by aligned vision, represented by the red circle.
Panthera represents very impressive genus of chiefly large cat family an imals, most having the ability to roar and with majestic features and strong biological characteristics. It was a fitting symbolism for our group name with key meanings being communicated such as strength, connectivity, resilience, family of many and not one, competitive in rivalry and victorious by nature.
What is the secret of successful partnership?
For us, first and foremost our friendship was base foundation for success followed by opportunity of limitless potential from complimenting skills and mutual passions. Taking time for communication is important to ensure that there is alignment in vision and strategy to provide the clear path ahead.

Who gets the ‘BIG PRESENT’ i.e., Christmas day with the children?
Parenting arrangements over the holidays & how to keep everyone happy.
It’s beginning to look a lot like Christmas but is it really the most wonderful time of the year? For many separated families, tis the season for stress, anxiety and often adjustment. While most of us are busy delegating who’s in charge of stuffing the turkey, separated families are forced to navigate the reality of separation and figuring out how the children will spend the holiday period.
So, who gets the ‘big present’ i.e., Christmas day with the children? Well, that’s a matter entirely dependent on the circumstances and can inevitably create a Christmas nightmare. Where there are parenting orders in place, the Orders will specify the arrangements for the holiday period. Typically, parenting orders are drafted to provide alternate arrangements each year so that no parent misses out. So, while Mum gets Christmas Eve and Christmas morning this year, Dad will get that time next year and so forth. Communication time is typically included in parenting orders, so while one parent may have the primary care of the children over the holiday period, the other parent will always communicate with the children via telephone, Skype, or Facetime etc.
If it is the case that there are parenting orders in place, it provides a sense of structure and stability. Regardless, the reality of separation is far from a Hallmark movie, and it can be a challenging time for the children and extended family members such as grandparents, adjusting to the change. This is especially so if it is the ‘first’ post-separation Christmas. It is important that you remain child focused and remember any tension or negativity, will only ruin the holidays for the children and as parents, you will be on the naughty list.
A Christmas nightmare will arise if one parent does not comply with the Orders and breaches the Orders (e.g., refuses to return the children to the other parent’s care). This is far more serious than the age-old debate of whether Die Hard is or is not a Christmas movie and can cause a great
deal of distress. The aggrieved parent then has the option to file a Contravention Application and can ask the Court to either; ensure the resumption of the Orders, compensate for lost contact time, vary the existing Order, or punish the parent who breached the Orders. So, the moral of the story is, follow the Order, less you risk having to explain why you have not done so.
In circumstances where there is an informal parenting arrangement in place (i.e., parenting plan or no written agreement) and where the parents are on amicable terms and can co-parent effectively, it is often the case that the parents will negotiate an arrangement between themselves. However, informal arrangements are not legally binding and can be revoked or altered at any time. If this is the case, we highly recommend planning to ensure the only issue is deciding whether to play Michael Bublé or Mariah Carey’s Christmas album. It is best practice to get any agreement in writing, and you can talk to a family lawyer about whether a formal Order (embodying arrangements for Christmas, and other parenting issues) might be a good solution for your family.
If you are currently in dispute regarding parenting arrangements or concerned with how the children will spend the holiday period, you may need the Court’s assistance to implement a parenting order (on an interim or final basis). To avoid a Christmas nightmare, you must file your parenting application a few months prior to Christmas. It is important to remember that the Court will only make orders that are in the best interests of the children, not the parents. If an application is filed beyond this time, the Court is unlikely to be able to consider the application until the New Year.

WHEN IS THE RIGHT TIME TO BUY?
With the Australian property market going through a turbulent time, during the Covid-19 pandemic and its recovery, the question of when to buy has never been more difficult to answer.
My golden rule is that generally you will never pick the top of the market and you will never pick the bottom of the market. Different considerations come into play when discussing the purchase of a “home” compared to an “investment”.
With a home, you must factor in the use and enjoyment of the property as well as the financial investment that it entails. When it comes to decisions of the heart, it can never really be all about the money. When you are purchasing a home, you want to buy somewhere you are happy to live and your family can be safe and enjoy their time. If you are moving to a new city, this might take a period of time and often a period of renting in an area to figure out where you are most comfortable and where the most appropriate suburb for you to live is. Factors including proximity to schools, shopping centres, beaches, work and other interests will also influence your decision. When buying a home my feelings are that as long as you are not overpaying for your home and if it is a medium to long term hold you are generally within the right bracket.
A common question then is how do you work out the value? My top tip here is to do your research. As difficult as it may be, you should attend as many open homes, view as many listings and research as much recent sales data as you possibly can. The term “value is in the eye of the beholder” is never more important, as the value of a certain property will differ to each party. Once you have a genuine understanding of relative prices, you will be in the best possible position to determine how much it is appropriate to pay for any property.
When buying a property as an investment, the perspective is slightly different. The emotion should come out of your purchase and it all becomes about numbers on a page. You need to determine what your needs are, what your financial capacity is, and what is the purpose and term of the investment. Are you hoping to negatively gear (make an income loss) on your property or positively gear it? Then you need to determine the best structure to own the property in. It may be individual names or it could be a trust or company or a combination, depending on your tax and legal advice. There are many factors weighted into your decision to purchase a property for investment.
As to our lead in question as to the right time to buy, well this largely depends on you. The market will go up and down with extrinsic factors like interest rates, supply and demand and economic factors beyond your control.

Almost 15 years ago, in 2008.
WHAT ATTRACTED YOU TO FASHION?
I have always loved fashion, my mother was very well dressed and spent a lot of time in Europe. She was wearing Pucci and Gottex poolside before it was available in Australia. After travelling to Brazil and experiencing the culture and fashion, I was obsessed with designing swimwear for the Australian market. At the time, swimwear in Australia was mostly surf or sport, we really weren’t doing ‘fashion’ swim the way they were in Europe and Latin America. I knew that the tiny cuts would take off here, and they really did. I was asked to show at Australian Fashion Week, featured in Vogue and sold into David Jones in our first year.
HOW HAS YOUR BRAND EVOLVED OVER THE YEARS?
The entire industry has changed, a lot. When I started White Sands, instagram didn’t exist, now it is our main driver of sales. We were entirely wholesale based in the early years, selling to big retailers like David Jones and Anthropologie in the USA. Now we have moved to a direct to customer model and almost all of our sales are online.
WHAT INSPIRES YOU EACH SEASON AND HOW DO YOU COME UP WITH YOUR NEW DESIGNS?
Travel is my biggest inspiration. Moments in the sun, I’ll see a colour or a landscape and drift off into a world where I become immersed in colours and prints. I’ll see colours that work beautifully together, or a print and it quickly forms a moodboard in my head. From there it’s more about curating the collection down. My walls end up covered in prints and fabric swatches, and I have to slowly take pieces away until it works as a concise capsule.
AS A GOLD COASTER, HOW DOES LIVING HERE INFLUENCE YOUR AESTHETIC?
I was born and raised on the Gold Coast and I love it here, but I’ve never been about the ’surf’ culture. I love that we spend so much of the year in swimwear. It’s one of the few cities in the world where wearing swimwear up to the cafe, or just a bikini top with shorts is acceptable. Growing up here has probably given me a firm understanding of what really works on a body. Designs need to be practical as well as beautiful.
HOW DOES CUSTOMER FEEDBACK CONTRIBUTE TO YOUR DESIGNS?
Staying ahead of feedback is key! Ideally I will have a grasp of what’s coming, rather than chasing trends. I try to test my fit samples on real bodies as much as I can before ordering thousands of them, so the feedback on fit is done before it’s sold to customers. We also ask customers for feedback after they purchase, so if a cut can be improved we can make those changes next time.
WHAT ARE THE “TRENDS” FOR THIS COMING SUMMER SEASON?
The 70s, 80s and 90s are enduring trends over the last few years. The highcut leg and classic shapes in solid colours have been bestsellers each season. Sexy minimal cuts are at the forefront, underboob is a huge trend. Thong swimwear has become mainstream even for younger girls. I think this minimalist carefree vibe will stay strong for another couple of seasons, before we return to trends like more structured swimwear, intricate detail, specialised trim and underwire styles. As a designer I’m really looking forward to creating more of those innovative styles that White Sands is known for.
ARE YOU EXPERIMENTING WITH ANY NEW FABRICS OR TECHNIQUES?
Always! We recently did a velvet collection that was well received, I’m working on textures like seersucker and lace for coming collections. I’ll visit my factories in China soon, as it’s really a ‘hands on’ job working with patterns and fabrics. Covid made things difficult with factory shutdowns and shipping delays, so I’m lucky that I’ve got a great team to work with, who ensured that quality was maintained and delivery times were met even though I couldn’t be there.

NIHI – SUMBA – Indonesia
Nihi has special memories for us as we were there in 2016 and we didn’t think we would visit again. It is an amazing remote location in Indonesia that ticked the boxes for both of us. Don surfed every day, and I relaxed in one of the best resorts in the world “Just my opinion”.

Where do I start!!! Our first date to say I do was 02nd April 2020 as all the COVID-19 restrictions ramped. We had paid in full at our original venue only to end up in court fighting to get our money back for the next 18 months.

14 boats and more than 90 owners and their families and guests from all over the East Coast of Australia and New Zealand gathered together, united by genuine camaraderie and love of “Family, Friends and the Finer things”.
“We were blessed with amazing weather, glorious sunsets and exceptional hospitality at the InterContinental Hayman Island, and this year, more Princess owners than ever before,” said Greg Haines, Dealer Principal for Princess Yachts Australia, who hosted the four-day event.
Most of the Princess fleet headed north from the Gold and Sunshine Coasts and made the 600 nautical mile journey to the Whitsundays over several days, arriving at Hayman Island in time for the festivities.
Greg organised Princess Rendezvous 2022 shirts, much to the amusement of guests who embraced the theme with gusto.
The fleet of 14 Princess motor yachts berthed at Hayman Island Marina. Owners and their guests were spoilt by the lavish 5-star accommodation and amenities at the InterContinental
Hayman Island Resort as they prepared for the first night’s Welcome Cocktails followed by the Gala Dinner.
Adam Essex, General Manager Princess Asia-Pacific joined the revellers and there was a segment via Zoom with Princess management in Plymouth, UK sharing the brand’s vision and commitment to their owners all over the world.
Adam was effusive in his praise for Greg and the Princess Yachts Australia team for their organisation of this year’s event, describing it as “exceptional seamanship on display in paradise”.
Greg Haines described the mood of this year’s get-together as “unfettered family fun”.
“Boating is all about family and it’s something we really encourage,” he said. “We want owners to get the most out of their Princess motor yachts, catch up with old friends and meet new ones.”
The itinerary this year was the result of feedback from last year which suggested a lay day after the first night celebrations, for people to sleep in, enjoy the sunshine and take advantage of all the amenities the resort has to offer.
The first evening, guests were treated to a cocktail party at Bar 50, sponsored by Volvo Penta, which was followed by the Gala Dinner in the Arkhurst Ballroom which featured exceptional cuisine on grazing platters and a 6-piece live band.
Jan and Mike Becker from the Sunshine Coast, owners of the Princess 52, Delta Flyer, took part in last year’s event and were eager to attend this year.
“It’s an idyllic setting, we’re all there with the love of boating in common and share stories,” said Jan. “This year was brilliant! Even better than last year!”
The Gala Dinner was a particular highlight. “It was held in a magnificent Ballroom, so much food, a great band and people just let rip and danced the night away,” said Jan.
On day 2, optional activities were scheduled from mid-morning and included informative sessions with
the team from Volvo Penta covering topics such as maintenance and future technologies. There was a Tips & Tricks session aboard Scott Davis’ boat, Latitude, and Scott shared practical advice and his knowledge of Princess motor yachts acquired over his 15-year association with Princess.
At sunset, canapes and cocktails, sponsored by Pantaenius, were a fine way to finish the day.
Simon and Kate Jupe, with their three children, twins Paige and Ethan, aged eight, and Chelsea, 10, have been attending the Princess Rendezvous for four years.
They cruised from the Sunshine Coast aboard their Princess 52, Daydream for a three-week sojourn in the Whitsundays at the start of September and ended their trip with the four-day Princess Rendezvous, “the icing on top,” according to Simon.
“We look forward to it every year,” he said. “It’s our true, dedicated family time. It’s the highlight of the year. Our children love the boat and they’ve grown a whole lot in their self-confidence and helping on board.
“It was great with all the activities and fun for the little ones. They’re old enough to enjoy tubing and wakesurf. Our kids are close to Greg’s kids, and our friends took their boat up this year with their three kids as well.”
That boat, Why Knot, was previously Simon and Kate’s, which their friends bought when Simon and Kate moved onto their new Princess 52.
One of the highlights for Simon was the cruise information to Whitehaven Beach on day 3, which he described as “absolutely spectacular”.
A massive marquee was pitched on the pristine white sand beach and a lavish seafood spread and barbeque was provided, courtesy of Seakeeper.

“We arrived to a wonderful banquet and ice-cold Veuve Clicquot Rich. The kids were looked after and played games while some of us tried Fliteboard efoiling, with varying success! We all returned to Hayman exhausted and elated!”
Simon and Kate were pleased with the format of this year’s event which included a day off to enjoy the resort while their kids took part in the InterContinental’s Planet Trekkers Kids’ Club program of fish feeding, pizza making master class and lunch in Amici Restaurant.

On the final day, the Farewell Beach Brunch was held at Bam Bam Cabanas, sponsored by Sanctuary Cove Marina. Jan and Mike Becker said they were thrilled with every aspect of Rendezvous 2022 and would sign up for next year’s without hesitation.

The highly anticipated Twilight Table event returned to Oracle Boulevard on Sunday 16 October. In its’ fourth year, the one-night only event showcased the culinary creations of eight of Broadbeach’s best restaurants including, Mamasan Kitchen & Bar, Social Eating House, Orzo Italian, The Lucky Squire, Mecca Bah, The Bavarian, The Cuban and Cowch Dessert Bar. Over 180 guests attended the ‘Twilight Table’ and were transported on a foodie adventure from Asia to Italy, the Middle East and beyond, all in the one evening. The open-air soiree features an elegantly decorated long table set on the picturesque backdrop of the twinkling Broadbeach skyline.

OLSSON’S 25TH ANNIVERSARY
Stamford Plaza Brisbane Hotel’s beautiful River Garden was a setting with a significance for the glittering 25th anniversary party of fashion and racing identity Dale Olsson and husband Jim, as it was the exact same spot where the pair were married a quarter century ago. Wearing ‘a touch of silver’ in an ode to the Gold Coast couple’s silver anniversary, the 50 guests were served champagne and canapés including Pacific oysters with caviar and prawns with avocado. As a special surprise, the lovebirds renewed their marriage vows under the same pergola where they first became husband and wife. After the ceremony, the anniversary cake was cut and guests danced the evening away to the tunes of DJ Dino Borgo.

No, I am not from the Gold Coast, I moved here in January 2019 - best decision we ever made.

How long have you been in this position and what’s the best thing you have done to promote the brand so far?
I have worked in the General Manager role for 9 months. I have been going to a lot of events during this time however there are two standouts I think being the Vinnies CEO SleepOut which was a great experience and to be a small part of a group that raised $620,000 for the homeless on the Gold Coast is a great feeling. The second is the Women of the Year Campaign which celebrated so many amazing women on the Gold Coast and was such a thrill - it was an amazing night.
Did you ever think that you would be doing what you are now? I hadn’t thought about it, however I’m lucky to have a great support base in my husband and also my parents who encourage me to do more and reach higher constantly.
The people most important to you are?
My daughter and husband are most important to me along with my parents who have always supported me wholeheartedly. I’m also lucky to have met some brilliant people on the Gold Coast that have inspired me to do more for the Gold Coast and have become a great network and support to me. Kate Bennett, Karen Phillips, Nick Scott and Angie Bell being just some of the people I admire.
The key to happiness?
Doing what you feel passionate about and having a loving, fun family environment is what keeps me happy on the daily. Singing loudly in the car or shower also makes me happy, probably not anyone else though (sorry neighbours).
People who know you, know that I love? Champagne, Reality TV and Pilates - not necessarily in that order.
The best advice you ever received? Tough times never last. Be confident in who you are and what you do and you will always end up in a better place.
Thoughts on social media? Used correctly it can be a great connection and a real source of entertainment. I think access for younger people should be restricted more closely as it really creates a level of pressure and complexity that they just aren’t equipped to handle.
The meaning of life is... Having a purpose that is meaningful to you in work and life and achieving goals that you place along the way that give you a sense of direction, fulfillment and gratitude.
What do you love about living and working on the Gold Coast?
It’s a perfect balance of working hard in a city where you can make a difference and also being able to have a lifestyle that is relaxing and carefree.
