Loaded Cauliflower 195
Tender mashed cauliflower is loaded up with sour cream, cream cheese, sharp cheddar, bacon bits, and ranch.

Ingredients

1 large head cauliflower, cut into florets 1 cup heavy cream 1 cup sour cream 4 oz. (110g) full-fat cream cheese ⁄2 tsp. dried parsley

Preheat the oven to 350°F (180°C).

Place cauliflower florets in a large microwave-safe bowl with 1 inch (2.5cm) water at the bottom of the bowl.

Cover with sharp cheddar cheese. Bake for 15 to 20 minutes, or until cheese is golden and bubbly.
While cauliflower cooks, heat a medium skillet over medium heat. When the skillet is hot, add bacon and cook for 4 to 5 minutes, or until crisp. Place bacon on a paper towel to drain.

Cover the bowl and microwave for 3 to 10 minutes, or until cauliflower is very tender. Drain.

Transfer cauliflower to a food processor. Add heavy cream, sour cream, cream cheese, dried parsley, granulated garlic, onion powder, dried dill, black pepper, and sea salt, and pulse until puréed.
6 oz. (170g) uncured bacon, diced ⁄4 cup fresh chives, chopped

Remove cauliflower from the oven and let rest for 5 minutes. Sprinkle with bacon and chives to serve.

Transfer mixture to a 9×13inch (23×33cm) ceramic baking dish or Dutch oven and spread evenly in the pan.
