Ahh, August. The very mention of the month should make local boaters crack big ol’ smiles— with warm sun-dappled days, gentle rolling swells, and pristine pliable waters, we have reached the pinnacle of Pacific Northwest summer. And what a spectacular summer, as one of the region’s most iconic traditions makes a triumphant return—Seafair is back again. And another Seattle classic, the Squire Shop Unlimited Hydroplane, is also resurrected this month. Emerging from a five-year-long restoration effort in time to be christened at this year’s Seafair, this 1979-era champion hydro holds a special place in many Seattleites’ hearts and memories. On pages 50-55, we take a behind the scenes look at her interesting history and the volunteer team at the Hydroplane & Raceboat Museum that got her rip-roarin’ ready to race again. Speaking of Seafair, our own Sea Fare columnist James Fraioli has garnered inspiration from the Argentinian asado for a feast of barbecue recipes fit for sharing around an August bonfire on pages 56-63. Head for your own favorite beach to enjoy or find a new local spot, thanks to our friend Jack Riley of Roche Harbor Resort, who shares his favorite San Juan Island haunts in this month’s Expert Take (pages 66-67). Can Mukilteo Follow in Everett’s Footsteps to Renovate its Old Industrial Waterfront? Now that the revitalization of the Everett waterfront is well underway, another area located about seven miles to the southwest in Mukilteo may get a similar treatment. The Port of Everett picked up the torch of a project that has been complicated and rocky at times, but may soon lead to a revitalization of the waterfront and Edgewater Beach, which hasn’t seen public access in decades. For many years, the Mukilteo waterfront consisted of little more than an adorable lighthouse, a Washington State Ferry (WSF) terminal, an Ivar’s seafood restaurant, and an old, 22-acre fuel tank farm operated by the U.S. Air Force to supply military jets at nearby Paine Field since the 1950s. By 1989, however, when the Air Force decommissioned the tank farm, plans were put into action to remediate the fuel tank site and commit the waterfront to a ferry terminal expansion, a Sound Transit station, and a new structure to be used by the National Oceanic and Atmospheric Administration (NOAA). In 2013, a portion of the cleaned-up tank farm site was ceded to the Port of Everett and NOAA for revitalization. The port transferred the property to a group of investors in 2016 to redevelop the site, but nothing went forward besides the demolition of the old Mukilteo ferry terminal and the building of a new terminal to the east. By 2020, management of the total 26-acre Mukilteo waterfront had become a confusing patchwork of 11 owners, including WSF, the Port of Everett, 24

the City of Mukilteo, the Tulalip Tribe, and several private real estate firms. Then, after decades of environmental reviews and conflicting development plans, the future of the site was put into question in 2021, when NOAA pulled out of the project. This left the Port of Everett as the sole owner of a strip of valuable land where the old Mukilteo ferry terminal once stood, giving it an opportunity to reconnect the coastal town to its waterfront. Over the last year, the port has been considering a number of projects for the site, including a study of what might be feasible in the area from Lighthouse Park to Edgewater Beach. The port has hired Seattle-based architecture firm NBBJ to determine some guiding principles for a revitalization plan, which will be presented to the Port Commission and the City of Mukilteo this fall and will go through a “robust public process,” the port said. From fall 2022 and into 2023, the port and the city said it will move forward on a project stakeholder outreach process while a design is drafted for a new promenade structure on the waterfront and expanded dining areas adjacent to Ivar’s restaurant. While it remains to be seen how this development might improve dock space for boats, Mukilteo has now become a city to watch for all boaters in the Puget Sound area. Reports of the latest 200-foot super yachts with their own swimming pools may set boaters’ hearts aflutter, but the price tags they also come with may be enough to cause a coronary. Taking a page from the popular lease-to-own business route, Jeff Brown Yachts has launched Mari-Time, a yacht-share program that allows members to take part in joint ownership groups and enjoy the luxury-yachts lifestyle without management hassles. Those who sign up for Mari-Time can choose from a wide variety of 38’ to 72’ premium yachts, from floating luxury options to long-range expedition vessels. Once a boat is chosen, based on the needs of the consumers, Mari-Time gathers members with similar yachting tastes (usually in groups of five) and creates an LLC for each co-ownership team. Mari-Time then takes on the tasks of qualifying each customer, handling all sales work, insurance, and berthing details, and also assigns licensed captains for each yacht and hires and manages professional crews, concierges, and maintenance staff. Yacht brands currently being offered in the Mari-Time program include models from Brabus Marine, Pardo Yachts, Pearl Yachts, and Sirena Yachts. All vessels, Mari-Time said,

are “new from the builder, expertly managed and maintained, and exited in good time to maximize a higher resale value.” Jeff Brown Yachts estimates that group ownership of these luxury yachts can reduce ownerships costs by one-fifth the typical cost of yacht management and maintenance. Once a team of group owners is formed for each yacht, usage of the vessel can be determined each year much the way a real estate time-share program operates. According to Jeff Brown Yachts, a group of five owners is guaranteed eight weeks of scheduling time and averages about 13.3 days of usage per owner, per year. At the same time the yacht-share program was rolled out in June, Jeff Brown Yachts announced that it was running Mari-Time from its brand-new harbor office in Newport Beach, CA. Earlier this year, the company also moved to an expanded Seattle location in Salmon Bay on Commodore Way. The company now operates offices in five West Coast/Hawaii locations in Seattle, San Diego, Newport Beach, Sausalito, and Kailua-Kona, plus a sixth in Wrightsville Beach, NC. Seattle Begins ‘Mind the Zone’ Seaplane Safety Campaign on Lake Union For anyone mildly—or more than mildly—unsettled by the haphazard nature of seaplane takeoffs and landings in the crowded traffic corridor of Seattle’s Lake Union, a new safety campaign is debuting this year to calm boaters’ fears of being dive-bombed from above. Launched by the Recreational Boating Association of Washington (RBAW), the #MindTheZone campaign is based on pointing out the existence of a series of five buoys that have been lined up north-to-south in the center of Lake Union each summer since 2018 to demarcate the most commonly used landing space for aircraft operated by Kenmore Air. The goal of the program is to increase awareness of seaplane traffic and also to improve boat safety during the extra busy summer months. According to the new RBAW program guidelines, when the buoys’ yellow lights begin flashing, a seaplane is about to take off or land, indicating that boaters, kayakers, and paddleboarders should move out of the seaplane zone, which is a least 200 feet east or west of the buoy line. The program is to go into effect each year in the bustling summer weeks between Memorial Day and

Labor Day. At all times, however, the program advises watercraft operators to be mindful of the floatplane zones and to never tie up to any of the warning buoys. The need for the program became more apparent to RBAW during the COVID-19 pandemic, when boat, kayak, and paddlecraft rentals on Lake Union soared as a way to remain active and socially distanced from others. According to data from the UW Washington Sea Grant program, the surge in watercraft usage in 2020 and 2021 placed a higher number of less-experienced boaters and paddlers into the crowded waterway, who may not know the various navigational features of the lake. RBAW, a volunteer-led organization focused of Northwest boating concerns, is asking all boaters to spread the word about the #MindTheZone campaign this summer, and has easy-to-share content on its website, including graphics, maps, customer newsletters, social media posts, and posters for use around the lake. Designed by Bill Dixon, this Johnson 87 is made for entertaining with its stunning skylounge and roomy exterior deck space, plus extremely comfortable accommodations for up to eight guests. These amenities, and more, make Maranatha a great vessel for either charter or private use. The skylounge features a Stidd electric captain’s chair, a wireless remote Yachtcontroller, and bow and stern thruster controls. A nearby settee and 20” Phillips TV provides seating and entertainment for guests. Also, a GE microwave/convection oven, U-line refrigerator/ice maker, and gas barbeque on the rear deck can be used to provide refreshments. The large, comfortable salon includes a 42” plasma TV with a home theater, DVD player, and wine cooler. Navigation gear includes two Furuno Nat systems and radar scanners, a Nobletec monitor, Furuno GPS, and Simrad AP 25 autopilot. The pilothouse also has a 5” Danforth compass, a FLIR infrared camera system, a CCTV monitor system, and a TV link to the bow, salon, swim platform, engine room, and aft deck.


The galley is equipped with a range of GE appliances, such as a four-burner stove with ceramic top, a microwave oven, a dishwasher, and a refrigerator/ freezer, plus a 15” TV. The décor is boosted by lacquered off-white cabinets, granite countertops, and a large portside window that allows for plenty of natural light. A separate dining space off the galley has room for eight guests. On the main deck, the owner’s stateroom features a king-sized berth with built-in nightstands and cabinets, a sofa settee, a vanity, and a 42” plasma TV. The en suite head also has a bidet and separate shower stall. The VIP stateroom includes a 31” Samsung TV, a U-line refrigerator/ice maker, an en suite head, and a separate shower stall. The two guest rooms— one with a double berth, the other with a twin berth—each have 15” Toshiba TVs and access to their own head. Further entertaining can be done on the aft deck, featuring a 20” Phillips

dropdown TV, a U-Line refrigerator, and a Subzero freezer. The aft deck also includes a space for a 14’ Novurania inflatable tender with 50hp outboard engine, along with a 1,200-pound-capacity Besenzoni davit. Twin Caterpillar C-32 V-12 diesel engines provide a cruising speed of 18 knots and a maximum of 20 knots. Built in 2007, Maranatha has been upgraded with a number of modern touches. Just this year, the entire hull was waxed and new batteries were installed through the entire boat. Other 2022 improvements include a rebuilt port generator, new electronic controls on the starboard generator, new battery chargers in the engine room and pilothouse. In the last few years, the vessel has also had a new bottom paint coat, a rebuilt Furuno brain box, and a rebuilt water chiller exchanger, among many other improvements.

With three luxury cabins for six guests, plus a crew cabin, this Ocean Alexander Pilothouse 72 is a perfect choice for those looking for spacious accommodations, plush amenities, and raw power. Named Jeanne Sea Qua, this 72’ features an Evan Marshall designed interior pilot station, abundant wood paneling and cabinetry, and several custom-designed elements throughout. The elegant salon, for instance, utilizes high-strength, marine-grade aluminum beams to allow for enlarged windows to let in more sunlight. The salon also includes a 46” LCD TV, granite countertops, wood paneling and cabinetry, and a removable ceiling panel. The custom-designed flybridge includes a raised, L-shaped dining set with room for eight, along with two custom flip-up mechanical helm seats. Aft of the seating area is room for a 14’ Novurania tender with a 60hp Yamaha outboard. The galley, which is accessible via an open staircase from the bridge, features gorgeous wood flooring, drawer-type shelving, an Elkay double sink, an overhead dish locker, and an electric oven, refrigerator, microwave oven, and dishwasher from Jenn-Air. Other appliances include a Kenyon electric cooktop, a Whirlpool garbage disposal, and a Seagull water purifier. Below decks, the owner’s stateroom features a king-size berth with a luxurious, top-quality mattress, an upholstered headboard, granite countertops, two nightstands,

and an en suite private head with a stall shower. For entertainment, the suite also has a 46” LCD TV, a DVD/CD audio, stereo, and video system. Enlarged windows help bathe the suite in natural light. The forward VIP stateroom has a queen-size berth, an en suite head, a shower, and its own DVD/CD/ stereo system with a flat-screen TV. The two guest quarters are configured as over/under double berths or as upper/lower berths. Matching heads have china sinks, granite countertops, and exotic woods on the walls. The boat is powered by twin Caterpillar C18 1150hp diesel engines, which cruise at 18 knots and top out at 24 knots. Two engine control stations feature complete engine instrumentation with lighted, modern switches, along with bow and stern hydraulic thruster controls. The helm boasts a complete Garmin navigation package, with 8500 Series Black Box, two 19” touch screens at the upper and lower stations, a GRID remote input device, 12KW open array radar, autopilot GHC20, AIS with NMEA GPS, and a marine camera. Since its launch in 2016, the Jeanne Sea Qua has been well maintained with countless upgrades, such as new crew quarters with a separate head, shower, sink, cedar closet, and single berth. Other improvements from 2019 to 2021 include upgraded stone countertops throughout, an electric Stidd helm chair at the inside helm station, a Cruisair air purification package, and a 24” BBQ grill on the flybridge.

This Ocean Alexander Pilothouse 62, based on the traditional raised pilothouse design, includes a host of elegant features, such as granite countertops, extensive wood flooring and paneling throughout, and many hand-finished interior touches. Made in collaboration with Ocean Alexander partner Ed Monk Jr., this 62 Pilothouse coastal cruiser, named DEVOCEAN, features a sleek, aerodynamic flybridge canopy, a sporty profile, and a sharp bow with a sunpad. The spacious salon includes a Fusion 750 sound system and a flat panel LCD television with surround-sound. Guests can relax in comfort on the L-shaped settee, a dining table, or on one of the two upholstered chairs. The extended upper deck also provides full coverage of the open-air cockpit below, which is separated from the salon by a sliding glass door and includes a table with seating


for six and a mini wet bar. The galley is fully equipped with granite countertops, a new dishwasher, a microwave, a trash compactor, an oven, a garbage disposal, and a cooktop. The pilothouse with an upper helm is accessed from the salon via a floating staircase. Additional features include bench seating and built-in tables, a wet bar with a sink and mini-fridge, and an outdoor BBQ. Aft of the upper helm, the pilothouse deck also has open-air space for a Zodiac six-person life raft, a Steelhead SM1500 yacht crane, and a Zodiac 380 Yachtline RIB tender, with a Yamaha 50hp outboard. The owner’s stateroom is outfitted with a king-sized berth, a leather-upholstered headboard, and an en suite head with stall shower and dressing mirror. Additional staterooms include a queen-sized berth and a guest stateroom with two side-by-side berths. All heads feature

granite countertops and granite and marble showers. The voluminous, three stateroom layout includes separate engine room access. Built in 2012, the DEVOCEAN has undergone some significant renovation over the last two years. At the helm, for instance, the vessel was given an all-new Garmin electronics package in 2021, along with Icom VHF radios, aftercoolers, a Barrett flying bridge enclosure, Stidd helm chairs at both helms, and a chain counter. In 2020, upgrades included Keypower hydraulic stabilizers and bow and stern thrusters, a Kohler 23kW genset with sound shield, a Victron 4kW inverter, Victro battery chargers, and AGM Lifeline batteries. This year, the boat received upgrades to its power-assisted steering, a Sea Recovery AquaMatic watermaker, and an Ultra anchor. The DEVOCEAN is powered by twin Caterpillar C-12 ACERT diesel direct-drive engines, providing a combined 1,410hp and a top speed of about 21 knots.

Each and every hydroplane on display within the 12,000-square-foot space has been lovingly and painstakingly restored to run at its full, heart throbbing, adrenaline pumping potential of 150-200 miles per hour.

“Our mission is to celebrate, preserve, and honor the history of professional powerboat racing,” explains longtime executive director David Williams. “And if they just look at one, static in a museum, people don’t really get a sense of what a powerboat really is and how it works. But, to see it in action, flying across the water in motion, you’ll get goose bumps. You’ll understand the raw emotional power. That’s why we run our boats anywhere and everywhere they’ll let us.” Since its inception in 1983, the museum has restored dozens of hydroplanes in its boat shop, including seven of the most famous Gold Cup and Harmsworth winners dating back almost seven decades. They loom large in racing lore: There’s the Miss America VIII (1929 and ‘31 Harmsworth winner); Slo-mo-shun IV (1950, ‘52, and ‘53 Gold Cup winner); Slo-mo-shun V (1951 and ‘54 Gold Cup winner); a Hawaii Kai III replica (1958 Gold Cup winner); Miss Thriftway (1961 and ‘62 Gold Cup winner); the legendary Green Dragon Miss Bardahl; and the 1967 Miss Budweiser.

Now, after an extensive, five-year-long restoration effort, the museum is set to reveal and re-christen another classic: The 1979 Squire Shop Unlimited Hydroplane. Originally designed by Dave Knowlen and built by Norm Berg, this was the boat that carried renowned local driver Lee Edward “Chip” Hanauer to his very first Unlimited victory in ‘79. In a full circle moment, the 68-year-old Hanauer plans to climb back in the cockpit once again as Squire Shop runs on Lake Washington at this month’s Seafair—another Seattle institution making a triumphant return after a pandemic-induced hiatus. The Squire Shop name itself smacks of Seattle nostalgia. She’s named for a much beloved, locally established men’s clothing store, the sort of 1970s shop that shelled out Levi’s and bell-bottoms, leather jackets, and local racing paraphernalia. It also speaks to an era when hydros reigned supreme in the Emerald City. Before the Kraken, Sounders, Mariners and even the Seahawks arrived, hydro racing was the sport in town. Imagine the roar of the mammoth engines, the spray rocketing towards the blue skies as racers careened around a hairpin turn,

the tourists and locals alike that flocked to every bit of spit of shoreline on Lake Washington to watch—it was all intrinsically tied to the Emerald City’s identity. “This boat is so emblematic of the city itself,” reflects Hanauer. “It is so much a part of the history and legacy of the city; you can’t separate out Seattle from its ties to racing and boating and maritime. It’s the very fabric of who we are.” As the moniker might suggest, the boat was originally owned by the clothing store’s popular proprietor, Bob Stiles. Stiles hired Hanauer to drive the hydro in 1978 after driver Jerry Bangs tragically died in an accident during the 1977 edition of Seafair and the boat had to be rebuilt. Hanuer stayed at the helm through the 1981 season, moving on to drive for other teams in what would be a decorated 20-year career on the water. But he still speaks highly and warmly of the man who gave him his shot. “He loved Seattle, and he loved Seafair,” Hanauer recalls. “So much so that one year [in 1978], he not only sponsored a boat, but stepped up to sponsor the entire race because it wasn’t going to happen due to lack of funds. Squire Shop didn’t make the final heat, but another driver, the renowned Bill Muncey and his team, all wore Squire Shop jackets as a tribute in that last race. I don’t think it’s an overstatement to say he saved Seafair.” Squire Shop continued to race all the way until 2002 under a variety of owners and other names. (Her aliases included Miss Kyyx, Miss CKLW, Miss Raben Tire, Rampage III, Miss BECO, and Oh Boy! Oberto.) From there, she passed hands several times and fell off the radar until a racing fan by the name of Brad Haskin stumbled on a sales listing on eBay for the Squire in 2012. He alerted a fellow fan and Seattle friend Gary Laws, who purchased her and then later donated the hull to the museum for restoration. There wasn’t much of a hull left. The wood frame was deteriorated and dilapidated, the electrical was shot, and pretty much every fitting, hose, and bracket from tip to tail needed to

be replaced. At the museum, Williams knew he needed someone with expertise to lead the herculean project. He needed John Watkins. A former hydro racer himself, Watkins had worked for Norm Berg in 1978 and ‘79 and had been one the original builders of Squire Shop. A mutual friend knew of his involvement then and recommended the museum ask him to lend his expertise as a project supervisor. Recently retired from a long career at Boeing, Watkins was intrigued by the restoration effort, and the potential for a retirement project. “I remember thinking I had this big shop at home that was just going to go to waste now that I was retired. Guess I needn’t have worried, the Squire Shop was just waiting for me,” he says, with a chuckle, reflecting on how the couple-of-days-a-week commitment became a five-year-long journey. It turned out there was little left to save outside of a few scraps and the crew began to rebuild the Squire in 2016. Delays were inevitable, with the time it took to finagle fixes, track down parts (including dredging up an original cowling from the bottom of Lake Washington), and make extensive repairs, plus there was an almost year-and-half delay when she just sat in the shuttered shop during the Covid shutdowns. They ticked off the milestones though, one by one: There was the day they slid the framing on. Then, the decks went on. Watkins likens unveiling the paint job to that of Christmas morning anticipation. “You peel off all the tape and suddenly instead of a plain white boat, there emerges that bright signature red hull. And I thought, ‘Oh, there’s the Squire Shop.’” It was the very definition of a labor of love. Outside of Williams and a few other employees who help with fundraising efforts, the museum and the boat shop are staffed entirely by volunteers. Watkins acted both as supervisor and mentor, passing along his extensive knowledge to the volunteer crew members and helping them to gain new skills as they make repairs.

“Some people are former racers or longtime fans or some are entirely new to the sport and just want to learn,” says Watkins. “But the educational piece of the restoration is really what makes it distinct.” He points to the dedication among the team in making this effort, and every other project at the museum, a success: “We literally have guys who come in twice a week to sweep and prep the shop. And they do it to be a part of the team, to get to wear a crew shirt come race day. They do it because they love it.” Hanauer agrees. When he would swing by the museum to check on the repairs, he was awed by the convivial atmosphere in the shop: “In two words, I think it is rare and it is unique. The museum is a wonderful place that is driven by passion. In a world where sometimes the sense of community seems lost, it is alive and well here. The people care about each other, they have a common bond, and they work extremely hard.” Beyond the museum, Squire Shop gained an online following after Laws, who donated the Squire Shop remains, created both a blog and a Facebook page to track the progress. Many fans logged on to share memories of her glory days, others asked questions of the experts, and still others came forward to donate their own memorabilia and even scraps from older iterations. Finally, everyone circled May 24, 2022, on their calendars as the eagerly anticipated and long awaited date that the completed Squire Shop would take to the water once again for a test run on Lake Washington. That day, they put her through her paces, made notes on some adjustments, and now—finally—she’s ready to return to racing after her Seafair christening on August 5. And while much of her fabrication is shiny and new, Watkins and the team have made sure to preserve her heart and history, too. They took every salvageable scrap of original wood they

could find and created plaques that are now screwed into the interior frame of the hull. They are stamped with the names of the principal people involved in her story: the original designer; the first build team; the drivers who drove her to fame; and John Watkins, who had a hand in building her not once, but twice. “Now it’s like everyone from Squire Shop’s backstory is out running alongside us in the future, too,” he says. The May run drew in curious onlookers as well as some new fans garnered from the online buzz who came out to see what the sport was all about. This fact encourages Hanauer, who hopes this year’s Seafair will help ignite a fire in a new generation of race fans. “My heart is warmed by the sense of camaraderie, of shared passion I’ve witnessed among this museum community. But I think we need to help newcomers understand the role that racing and Seafair play, and everything that maritime means to this city. Seafair can act as a catalyst to draw people in. Once they see it, they’ll want to experience for themselves, I think,” he muses. But, for many the project has simply fanned a flame that never died out. “It’s been a dream for a lot of us for a really long time to see this come to fruition,” concludes Williams. “I can’t say enough about the team that made it happen. Much like boating in the Northwest, cruising along the Paraná Delta—a stunning water maze containing over one thousand tiny islands located just outside of Buenos Aires, Argentina—is an experience like none other. With rivers for roads, it’s the perfect escape from the madness of the big city.

While navigating one of the many coffee-colored tributaries, I discover the main waterfront of Tigre and the buzz of the small town entices me to stop. Securing the lines to a wobbly wooden dock, I set foot for the Promenade, home to historic rowing clubs started by immigrants from England, Italy, and Spain that are still unique and vast. The neighboring restaurants, which vary in vibes from classy to laid back, draws me in further. Energy pulsates through every cobble-stoned crevice and the rich, smoky aromas of succulent meats roasting on open grills seduce me. It’s here where I realize what it means to be fully satiated What memory lingers most—aside from the juicy steaks, perfectly charred vegetables, and wonderfully decanted Argentine wine—is the true indulgence of

a delicious meal. Dining with Argentinians is all about relaxation and eating family-style. The meals are loud, yet tranquil. Argentine hospitality means wherever you are, you are welcome; you are always invited to a seat at the table. Back home in the Northwest, I emulate—as best I can—the same dining experience, starting with this beach barbecue-inspired menu. With guests gathered around the smoking meats while light conversation mingles with a playlist that includes downtempo tango, I realize summer in the Northwest is the perfect backdrop for an Argentina-themed dinner with family and friends, and with the relaxed, yet refined, recipes found here, you too can enjoy whatever beach beckons you next.


Wine Spritzer with Strawberry & Citrus For your next summer gathering, serve this smooth and refreshing wine spritzer. A dry, crisp wine like a Torrontés is perfect and elegant because it’s light on the nose and contains enough tropical-fruit aromas to entice. Make sure to prepare the wine and fruit ahead of time so the wine has time to chill while absorbing the lush fruit flavors.

Serves 4 6 orange slices 4 lime slices 4 strawberries, hulled and sliced 1 bottle Torrontés (or other dry, crisp) white wine 8 ounces sparkling water Fresh basil or mint, as needed, for garnish Add the sliced orange, lime, and strawberries to a large pitcher. Pour in the entire bottle of wine and stir to combine. Place the pitcher in the refrigerator or cooler until chilled. When ready to serve, prepare wine glasses with some ice. Add the sparkling water to the pitcher at the last moment and give it a light stir. Pour in the prepared wine glasses and garnish with fresh basil or mint. 59


Serves 2-4 2 tablespoons olive oil, more for oiling the pan 1 clove garlic, peeled and minced 1 tablespoon shallot, peeled and minced ½ cup cherry tomatoes, chopped 1 teaspoon sea salt 2 tablespoons fresh oregano, chopped 4 tablespoons fresh basil, chopped, divided 1 (1/8-inch-thick) round of provolone (or provoleta) cheese 1 toasted baguette, sliced into rounds

Provoleta with Cherry Tomatoes & Fresh Herbs Here’s a showstopping appetizer to enjoy all summer long. A thick slice of provoleta (or other similar cheese like provolone) is cooked over hot coals until browned and bubbling. It’s then topped with fresh tomato and herbs and served with a toasted baguette. I like to think of it a bit like fondu or queso fundido but not as molten and melty. Use a five-inch, round cast-iron pan because most large cheese rounds fit snuggly into this size and melt perfectly. One cast-iron portion is generally enough for two to four people, depending on how much everyone likes cheese. This dish is best served hot so have everything prepped and ready to go, then cook the cheese just before sitting down to eat. 60

Prepare a five-inch, cast-iron skillet by rubbing a small amount of olive oil to season it; set aside. In a large nonstick skillet over medium heat, add the remaining olive oil and heat. When hot, add the garlic and shallots and sauté, stirring often, until translucent. Add the tomatoes and salt and let simmer. Once the tomatoes start to break down, add the oregano and half of the basil. Remove from the heat but keep warm. Next, place the cast-iron skillet over medium-high heat and add the round of cheese. Cook until the cheese begins to melt and crisp on the edges. Remove from the heat and quickly transfer beneath the flame to broil. Broil for 3 to 5 minutes, or until fully melted and golden. Remove from the heat and top with the warm tomato salsa and remaining basil. Serve immediately with a toasted baguette.


Grilled Artichokes with Lemon Tarragon Aioli Artichokes may look intimidating, but once you see how easy they are to prepare below, you’ll master how to cook this spikey vegetable. These magnificent artichokes are accompanied by a creamy aioli that gets a flavor upgrade with fresh lemon and tarragon. It’s the perfect condiment.

Serves 4 2 to 3 artichokes Lemon wedges, as needed, for rubbing 3 tablespoons olive oil 1 tablespoon sea salt Lemon Tarragon Aioli, as needed, recipe follows Place a large steamer stockpot with water over medium-high heat. While the water is heating, trim the base and top three-quarter inches of the artichokes using scissors to snip any sharp points off the leaves. Cut the artichokes in half lengthwise through the stem with a kitchen knife, leaving the choke inside for now as it is easier to remove once it is steamed. Have your lemon wedge ready to rub on the cut pieces right away to avoid any oxidation. When the water comes to a boil, place the artichoke halves in the steamer and steam for 30 to 40 minutes, or until the artichoke stem is tender. Remove the halves from the steamer and let cool slightly before removing the purple choke. Store the artichokes in the refrigerator or cooler until ready to use, or prepare your barbecue or grill to medium heat. Coat the artichokes in olive oil, season with salt, and place cut side down on the grill for 4 to 5 minutes. Turn them over and grill the backside of the chokes for an additional 4 to 5 minutes. While the backside is grilling, brush additional olive oil on the cut side and season with salt. Remove from the heat and serve immediately with Lemon Tarragon Aioli.

Lemon Tarragon Aioli Serves 4 3 tablespoons fresh lemon juice 4 garlic cloves, peeled and minced 1½ cups mayonnaise 3 tablespoons fresh tarragon, chopped Place the lemon juice in a small bowl and add the minced garlic. Allow to soak for one hour. After soaking, press the lemon juice through a fine-mesh strainer/sieve and discard the garlic. Add the mayonnaise to a large bowl or wide-mouth jar and slowly add the lemon-garlic juice while blending with an immersion blender. Continue until fully combined. Store in the refrigerator and add the fresh tarragon just before serving.

Ribeye with Rosemary Chimichurri Nothing says summer like steaks on the barbecue. For this recipe, I prefer USDA prime beef. I also like grass-finished meats. Grass-finished means the animal ate only grass or foraged for their entire lifespan, resulting in a beefier texture and flavor. Think of it like wild game, raised on what is most natural to the animal.

Serves 4 1 (32-ounce) two--inch thick bone-in ribeye Olive oil, as needed Kosher salt, as needed Rosemary Chimichurri, divided, recipe follows Coat the ribeye with olive oil and kosher salt, rubbing the salt into the meat. Use half of the Rosemary Chimichurri and coat and rub into the meat. Transfer the meat to a container with lid and let marinate for at least 2 hours in the refrigerator or cooler. When ready to cook, remove the meat and bring to room temperature, about 1 hour. Meanwhile, prepare an outdoor barbecue or gas grill to high heat (450°F to 500°F). When hot, add the meat. Grill each side of the rib eye for 9 to 10 minutes, then allow it to reach an internal temperature of 130°F for medium rare. Remove the steak and let rest for 5 to 7 minutes so the juices can reabsorb, resulting in a juicer bite. To serve, thinly slice the meat perpendicular to the bone, arrange on a carving board, and serve with the Rosemary Chimichurri.

Rosemary Chimichurri Serves 4 1 shallot 4 garlic cloves, peeled 3 bunches fresh Italian flat-leaf parsley, stems removed ¼ cup fresh rosemary, stems removed ¼ cup fresh oregano, stems removed 2 teaspoons kosher salt 1 lemon, zested 1 cup olive oil, divided Place the shallot, garlic, parsley, rosemary, and oregano in a food processor and pulse until coarsely chopped. Remove from food processor and place in a large bowl and mix in the salt and lemon zest. Divide the herb mixture into two bowls. If you are not serving the meal right away, keep one bowl without oil and add the olive oil right before serving. For the second bowl, add the olive oil to create a paste-like texture and use this to marinate the meat. 62

Local Legends Insider intel for your island itinerary: JACK RILEY of ROCHE HARBOR RESORT shares the hometown haunts, adventurous jaunts, and can’t-miss culinary spots beloved by San Juan Island locals.

Where do you like to escape to on San Juan Island to enjoy the summer splendor? Though San Juan Island may not be more than 15 miles long, there are a ton of unique locations packed into this Pacific Northwest paradise. One of my favorite locations to explore is the Roche Harbor trail network. While the resort in and of itself is gorgeous, a stroll out of the core and into the miles and miles of designated nature trails will yield tranquil ponds, dense forests, and sprawling meadows. Many people know the San Juans for their biodiversity, whether on land or sea, and I have become quite a fan of our local wildlife since I moved here five years ago. A few of my personal favorite spots to get out and see wildlife and landscapes are False Bay at low tide, the rolling hills and steep cliffs of Cattle Point with 180-degree views of the Strait of Juan De Fuca as well as the Cascades and Olympics, and (for those looking to break a sweat) the top of Young Hill with panoramic sights stretching clear out to Canada and beyond. The island has also become world-class destinations for amazing culinary experiences. In your opinion, what are a few of the best bites around? A big part of what makes San Juan Island stand out from other destinations is the fact that all of our restaurants are one-of-a-kind, privately owned businesses, operated by passionate individuals that want to offer the best in both product and service. I may be slightly biased, but my favorite place to get a bite to eat is Chef Bill Shaw’s Lime Kiln Café here at the Resort. Serving classic, diner-style breakfast and lunch dishes, this local gem has large proportions that do not disappoint, from belt-busting breakfast burritos to mouthwatering burgers and sandwiches. Of course, would it really be a culinary hotspot if we didn’t have a brewery? We are proud of our one and only San Juan Island Brewing Co. and the award-winning beers they create and serve at their Friday Harbor location. Not only can you get one of their island-inspired brews—such as the Yachter’s Daughter Lager, Harbor Hefe, or Bull Kelp ESB (to name just a few)— but there is a full food menu as well with pizzas, burgers, and salads. 66

While restaurants do a great job of satisfying hunger, a place that takes the term “culinary experience” to the next level is Westcott Bay Shellfish Farm. This working shellfish farm located on Westcott Bay on the north end of the island is a must-see for all seafood lovers. Visitors can choose to dine at the water’s edge in the on-site restaurant, taking full advantage of the expert shelling and preparation of the products, or they can opt to purchase the shellfish and take them home to prepare on their own. Sometimes a sit-down dinner is not in the cards and it’s time for a more relaxed and simple meal. August typically provides many days of sun and with that comes some beautiful sunsets. One of my favorite summer evening traditions is to pick up a pizza (or many pizzas) from Van Go’s Pizza in Friday Harbor and head out to the Westside Preserve with friends and family for a sunset picnic. It’s a summer tradition for many NWY readers to moor at the marina for a weekend respite: Which land excursions do you recommend they take in during their stay? Roche Harbor Resort is a starting point for many boaters and as soon as you are off the dock, there are activities that await such as a stroll to the McMillin Memorial Mausoleum, a historic piece of infrastructure designed by and immortalizing the family of John S. McMillin, the founder of the Roche Harbor Lime & Cement Company (the predecessor to Roche Harbor Resort). There is a lot of symbolism in this unique stone fixture located in the middle of the forest.

There are also a number of small businesses that I would recommend visiting including the San Juan Island Distillery (also within walking distance of Roche Harbor), the San Juan Vineyard, as well as the Pelindaba Lavender Farm. The distillery makes amazing spirits and ciders and has tastings every Saturday. The vineyard grows and produces wine at an idyllic setting in the inner-island, plus they have a tasting room and sprawling grounds to enjoy the fruits of their labor in style. The lavender farm is an influencer’s dream location for a photoshoot, with boundless fields of blooming purple lavender and aromas that even the best of perfumes could only dream of matching. Of course, cruising the picturesque waters is another hallmark of summer here. What fun nearby spots can you recommend for boaters to explore? There are so many places to visit out on the water, it’s hard to know where to start. I have a 17-foot Boston Whaler and have extensively explored the waters around San Juan, more specifically the northern end so that is the area with which I can share my insights. Jones Island is a state park located between Orcas Island and San Juan Island and it is a favorite spot of mine to visit on a summer day, whether just for a daytrip or to spend the night. There are public restrooms and campsites perfect for a campfire and s’mores, as well as a public dock and mooring buoys. Another location to check out is English Camp on San Juan Island. As its name implies, this was the settlement of choice for the British during the Pig War, an international conflict that occurred on San Juan Island in the mid-19th century. A few of the historic buildings remain and the grounds of the camp, located on the picturesque and quiet Garrison Bay are worth a stroll. (Just be sure to anchor out and dinghy in, as the dock itself is not in deep water.) For those looking to entertain or be entertained while out and about on a cruise, there are a number of intriguing landscapes and potential wildlife hotspots throughout the northern San Juan Island waters. Flattop Island, a National Wildlife Refuge, sits just to the north of San Juan Island and presents some very unique geological structures on its sheer northern side.

Layers of rock undulate horizontally in a way that is rarely ever exposed. A pass by this section of earth is worthwhile and I have even seen the whale watching tours take their guests by. It’s saying something if they’d rather show them a rock than some orca whales! Another environmental phenomenon that’s worth checking out is the backside of Spieden Island, a privately owned island with quite the storied history. While the south-facing meadowed side of the island is more well-known, the forested, rocky, and dark northern side hides one of the area’s best natural features: a rock archway. Yes, that’s correct. It may not be as large as the iconic arches in Utah, but it’s still amazing! It can be hard to find but my best directions to find it would be that it’s directly perpendicular to the western side of Cactus Island to the north and there is a large tree directly atop the arch that stands alone from the rest of the forest. The arch is at the waterline and is best experienced fully exposed at low tide. About the Experts: Roche Harbor is and has been my home for almost a decade—and I plan on it being so for many more to come. I was lucky enough to be hired as a dockhand back in 2013 and spent my college summers working on the docks. After graduating college and a brief break working in a corporate setting on the mainland, I came back and worked in the administrative department of Roche Harbor Resort for five years before recently returning to work in the marina. It’s hard to put into words how special San Juan Island is, specifically Roche Harbor Resort. It’s more something that has to be experienced to be known, but if I had to describe it, I would say that the number one thing that makes this such a unique location is the community. Sure, being in a small town in a beautiful part of world helps, but it’s the people and shared appreciation of our island that seals the deal on why I choose to live here and so many people visit every year. Many boaters return to Roche in part because of the relationships they have built with the staff here. August Angling Get those rods ready. MARK YUASA previews the best late-summer salmon spots, from the ever popular Lower Columbia fishery down south to options here in the Sound. The fishing nerve center during August will be the Lower Columbia River mouth at Buoy 10, which is deemed one of the most hyped late-summer salmon locations in Washington. Southern Exposure The Washington Department of Fish and Wildlife (WDFW) indicates the Columbia River combined wild and hatchery coho forecast is 997,200 (up from 829,800 in 2021) and is more than double the 10-year average. The return of hatchery coho alone is expected to be the largest since 2014. Add to that a relatively good Columbia River fall Chinook forecast of 484,900 which is up from the actual return of 481,300 in 2021 and you’ve got a plenty of salmon migrating up the Big C! The fishing season from Buoy 10 up to West Puget Island will get underway for Chinook retention from August 1-September 7, with only hatchery Chinook allowed to be kept August 1-24. The daily adult limit is two salmon with no more than one hatchery Chinook; release wild Chinook from August 1-24, and wild coho the entire season. The red navigational Buoy 10, just south of the Port of Ilwaco, marks the western boundary of this expansive 20-mile fishing area. Here, the river’s brackish water collides with the briny ocean and heads upstream to the Tongue Point-Rocky Point boundary above the Astoria-Megler Bridge. Just like in past years, if you haven’t already booked a hotel or moorage don’t expect to find any at the surrounding marinas in Washington and Oregon. You’ll still be able to get your boat into the water at various boat ramps but be patient and expect long wait times at the ramps. While the red navigational marker is a place anglers flock to especially for coho, it typically isn’t the hotspot, and most will go to other areas along the lower river. One of those popular locations is the Desdemona Sands area located in the middle of the river above and below the Astoria-Megler Bridge. This area boasts a mid- to late-flood tide show along a series of paths flanked by shallow sand bars. During an early morning flood tide, try along the Wing Walls just outside of Ilwaco, which are rotten pilings from an old fishing cannery. (Do be aware: It is known to be a snaggy spot since you troll closely to the sunken pilings that tend to grab your fishing line.) The buoy line just outside the charming town of Astoria where huge ocean-bound freightliners anchor up is another decent location. Many will also focus their time below the bridge and just off the Port of Astoria Marina. 72

On the Washington side just above the Astoria-Megler Bridge are three long underwater channels alongside Highway 401 where salmon stage, depending on the tide. Other spots are the Church Hole off Fort Columbia State Park, and from the Fort Stevens State Park on the Oregon side west toward Hammond. The gear in the lower river fishery usually consists of a weighted diver or drop ball sinker of 8- to 10-ounces with a KoneZone- or Fish-Flash-type flasher tied to a leader with a whole or cut-plug herring or anchovy in 30 feet of water. Anglers will need to constantly check their bait as it will get tattered while being dragged along the sandy bottom or from the extremely strong tides. Many will also put an anchovy plastic bait holder on the bait’s head to protect it from getting ruined. You can try spinners like a Toman’s Thumper Flex with a blade in red/white or chartreuse attached to a plastic squid or a Brad’s Super Bait Cut Plug lure. Staying in the Sound If you don’t feel like making the long drive to the southwestern coast, there are plenty of choices around the Puget Sound region. Those options include the Strait of Juan de Fuca off Sekiu and Port Angeles (Marine Areas 5 and 6); the eastside of Whidbey Island (Area 8-1), which opens for coho on August 1; and, the eastside of Whidbey Island in the southern portion of Area 8-2 that opens for hatchery coho on August 13. Others to note: northern and central Puget Sound (Areas 9 and 10); south-central Puget Sound (Area 11); Hood Canal south of Ayock Point (Area 12); southern Puget Sound (Area 13); Quilcene Bay opens for coho opens on August 1; and, the inner-Elliott Bay opens for Chinook August 5-8 only. Some areas may close early or revert to Chinook non-retention if the salmon guideline is achieved. A list of statewide salmon fisheries can be found on the WDFW website at: wdfw.wa.gov. Lastly, be sure to bring along your crab pots for a chance to bring home some Dungeness crab; details can also be found on the WDFW site. Weeklong Warriors DOUG HANSEN recaps the action in Anacortes over the course of Race Week in June. For five days in June, racers converged for the second annual regatta simple known as Race Week. The successor to the traditional Whidbey Island Race Week, the heart and soul of the event has stayed the same and continues to stand as a mainstay of the Pacific Northwest racing calendar, but with a new home in the waterfront town of Anacortes. The large, deepwater marina has plenty of room for racing boats and the occasional mother ship to dock alongside, plus the whole facility is adjacent to several city blocks of restaurants, bars, and hotels. It’s as good of a choice for a multi-day regatta as anywhere in the Salish Sea. The event was set for a five-day format, running from June 20-24, with a posted limit of three races per day, which gave event organizers plenty of flexibility to run good and fair racing. They were able to tweak the racecourse layout and allow for more flexibility than pre-defined courses of the previous year. A solid mix of PHRF and one design fleets put the event on their calendars and a total of eleven fleets were set to go racing all week long. The on-the-water action was on the lighter side for the first three days due to a lack of gradient breeze in the area, resulting in extremely variable and shifty conditions. Against the adverse conditions, the race committee worked their way through and eventually got off a light wind race on the first day with the breeze eventually dying later in the afternoon. Tuesday saw similar conditions in the morning, but the light breeze gave out sooner, and after a good try at waiting it out, the race committee eventually threw in the towel and sent the fleet back to the dock for the afternoon Wednesday finally had a touch of texture on the water and things got off to a smooth start, but the sailors eventually saw the wind shut down and shift to the south. However, in a dramatic turn of events, the wind filled in and built into the low teens for the second race of the day. It was a bit of a scramble for the fleet to totally reset from light air drifting to full 78

powered-up racing, and it certainly caught more than one team off guard. It was by far the best racing of the week so far and a huge relief for sailors, who had spent most of the past two and a half days sitting around waiting for wind. Unfortunately, the end of the day was near so only one race was held in the breeze before the fleet headed back to the dock for libations. Finally, after three frustrating days of trying our hardest, the forecast for Thursday and Friday had wind! A steady 10-13 knots out of the northwest were in store and it filled in like clockwork in the morning. Racing got underway, and to the surprise of many, it was not the wind but the currents that were the major factor for tacticians and strategists that day. With the racecourse located amongst eight different islands, it was the absolute definition of chaos as current lines would form and dissipate on every leg of the race with no real pattern or cycle that anyone on our boat could recognize. At the end of the week, it was a close race in every fleet, with the leading boats trading the top spot throughout. With six races in the final two days, it really began to stack up the scores and allow the consistent boats to rise to the top. Some serious standouts in their fleets were John Hoag and his team onboard the 1D35 Shrek, who took a commanding win in PHRF 1. Meanwhile in PHRF 2, Kevin Welch and his team onboard the J111 Recon maintained their lead over the 65 Red Roses by only one point for the class win. And last but not least, the phenomenal performance by the More Uffda team aboard their Moore 24 under owners Ben and Jen Braden. With almost all first place finishes except for one second place, they took the top spot with a dog and a hot BBQ onboard the entire week. They also took home the overall win for the entire regatta and as the smallest boat in the entire event, showed that they know a thing or two about how to sail that boat around the racecourse—and how to have fun while doing it.
