Business Traveller India speaks to Karan Nohria - Founder of Silly, Mumbai and one of the youngest restaurateurs in India.

What was the biggest challenge you faced as a young entrepreneur?

I would say my biggest challenge was my lack of experience. Since I started o at a young age, people never took me seriously because they felt I didn’t have the required experience to work and handle certain projects. However, I can see a world of a di erence in the way people perceive me now after creating a brand such as Silly as compared to how I was perceived during my initial days.

How did you begin your journey in the world of hospitality?

I started o by hosting events for other clubs along with having two of my own delivery kitchens. It just felt like the right time to expand into having my own restaurant when the space I wanted was

available (Silly’s current location).

What are a few things that we would always find in your carry-on luggage?

The things that one will always find in my luggage bag are my airpods, my phones (personal and business), the current novel that I am reading and a pair of sneakers!

What’s your favourite travel destination?

Dubai, without a doubt! I genuinely believe it is one of the most advanced countries in terms of technology, infrastructure, food, fashion and my favourite- cars!

Silly as a restaurant is a space that o ers more than F&B, what was

MUMBAI TO HOST ITS FIRST EVER INDIAN

your inspiration to create such a space?

Coming from a Punjabi family, I have grown up with food being of the utmost importance! From this grew a fascination and curiosity about the food and beverage sector as a whole. This curiosity then transpired into a desire to work in a field that motivates me every day. A resto-bar does that! After that, inspiration and ideas for opening my own restaurant began to flow. However, I wanted to start something that makes people happy. Hence, I wanted to develop a concept that no one had ever seen before. I had decided on the concept of Silly from the very beginning, even before I decided on the name. I knew the space I wanted to create. My aim was to create a mix of Goa, Morocco, and all things bohemian with a lot of greenery around!

Exploring design and décor elements of some of the most unique hotels in India

There are several challenges that the Indian hospitality industry faces such as ensuring the sta provides the utmost service to customers, that food and amenities are of the highest quality and most important of all, making sure that the design and atmosphere of every room is nothing short of perfect. One of the biggest reasons why design and décor play an integral role in the hospitality industry is that they are largely responsible for determining the experience of guests.

When the lobby, rooms, bar, or restaurants look or feel uncomfortable and unwelcoming, it further adds to the challenge of attracting the right customers. Conversely, a spectacularly designed property and its interiors will attract premium customers who will gladly pay to experience the best of luxury and comforts the hotel has to o er.

Whether it’s a lobby, room, or restaurant, décor and design hold signi cant value, because it is the entry point of the hotel experience; the very rst visual experience a hotel guest has is while entering the lobby to check-in. However, even before checking in, with so much information ready at hand, every guest rst goes to the website and browses through photos of the rooms and other spaces on the property. It is at that crucial stage when the hotel makes its rst and lasting impression on the guest. Hospitality design and décor thus help in uence the guest to have a better experience by staying in that particular property.

Business Traveller India curates some of the luxury hotels across India with a unique and sophisticated sense of design and décor.

An insight to British Airways expanding connection with India

MARCH 2023 business traveller india
AVIATION

This year marks 99 years of British Airways ying to India. Our predecessor, Imperial Airways, took its rst ight in 1924 which took 14 days to complete. is was the start of our deep and extensive relationship with this incredible country. Today, as we celebrate our rich history together, a ight to Delhi takes less than 9 hours onboard some of our most modern and technologically advanced aircra .

On a personal note, India always has been and always will be dear to my heart having spent two years living here. On a professional level, it remains one of our biggest and most important markets.

We know that India is constantly growing and there exists a strong surge in demand for international travel that is fuelled by the growth of domestic tourism. We believe more and more Indians are now travelling abroad for leisure and or business than ever before. In fact, IAG’s recent nancial results noted that leisure travel is back to 2019 levels as an airline..

ough there is no denying that the last few years have been tough for aviation,

we have grown from strength to strength and have constantly invested in the Indian market. From new products to additional ights, India has always been our focus. Our commitment now is stronger than ever with the recent launch of our third daily ight from Mumbai to London. We now operate 56 ights per week from ve cities; a double daily from Delhi, thrice a week from Mumbai, and a daily ight from Hyderabad, Chennai and Bengaluru.

With customer experience remaining at the forefront of our India plans, we have recently expanded our footprint and have set up a new cabin crew base in Hyderabad. is, in addition to our bases in other Indian cities; the locally inspired meals that we serve on board; as well as the Bollywood lms screened on our ights; enables us to provide our Indian customers with a more personal and reassuring service, delivered in a local language with touches that make them feel at home.

We have also recently launched an advertising campaign ‘A British Original’ in India. is is a celebration of our people, our customers and the UK, which has helped

make British Airways, a British original both in the UK and here in India. Needless to say, there is a lot more planned and we continue to invest in new aircra , enhanced catering, completing our wi rollout and installing more of our brand-new club suites on board long-haul aircra .

We have also put a huge focus on sustainability and the environment. is means improving our operational e ciency and introducing carbon o set and removal projects in the short term. In the medium to longer term, we are investing in the development of sustainable aviation fuel, zero emissions hydrogen-powered aircra and investigating carbon capture technology. Today, all British Airways ights leaving India will now y using a small proportion of Sustainable Aviation Fuel.

We are extremely proud of our past, and our heritage here.  And as we celebrate 99 years of ying to India, our goal is to take what makes us unique; our Britishness, our network, our service, our reliability, our spirit of innovation, and our commitment to the market to create a British Airways for the future here in India. APARTMENTS NEW TRENDS

Longer stays, community-focused activities and sustainability are top priorities for serviced apartment guests

Interest in serviced apartments increased during the pandemic, as travellers wanted additional space, exibility and places for remote working. While we are leaving those Covid years behind, such requirements remain signi cant to travellers. In addition, the sector is seeing the introduction of new brands and a larger focus on eco-friendly operations and multipurpose accommodation that appeals to both business and leisure travellers. Finally, operators are also gearing up for a younger cohort of travellers – Generation Z – looking for experiences that draw on local surroundings. Here we look at ve trends within the industry, and what to expect in the coming years. For further information on the sector, see our feature ‘Serviced apartments:

HOTEL CHAINS INVEST IN EXTENDED STAYS

Large hotel groups are betting on the long-term success of the serviced apartment sector, introducing new brands while also expanding the reach of existing extended stay brands. Building on the group’s 26 years of experience with Marriott Executive Apartments, Marriott International announced its Apartments by Marriott Bonvoy in November 2022. Properties will not include traditional hotel services such as dining venues and meeting spaces, but all apartments will feature a separate living room and bedroom, kitchen and in-unit washer and dryer. operators reporting an increasing average length of stay by guests.

e reasons for this are threefold. Remote working has made it easier for employees to work from abroad (provided the time di erence isn’t too disruptive), while the growth in bleisure has seen guests add on a few days to their business visit to make the most of the destination. Sustainability also has a part to play, with business travellers planning to travel less but for longer periods in order to limit their carbon footprint.

REAPING REWARDS

With longer stays comes a greater desire for rewards. ankfully there are several operators which o er loyalty and membership programmes.

e Ascott Limited allows guests to accrue points during stays at select properties as part of Ascott Star Rewards (ASR). Staycity’s loyalty programme Stay Sweet currently has over 200,000 members and has seen

SEEKING SUSTAINABILITY

Guests are increasingly interested in choosing accommodation with sustainable credentials. Operators must also provide transparency regarding their e orts to avoid accusations of greenwashing. UK-based real estate investor and developer Lamington Group is a pioneer in this eld with its ‘hometel’ brand Room 2, which has three properties in Southampton, Hammersmith and Chiswick. Room 2 Chiswick opened in December 2021 and is the world’s rst fully whole-life net zero hotel, meaning that it has o set both operational and embodied carbon (the amount emitted during the construction of a building). See our review of Room 2 Chiswick at businesstraveller. com/ tried-and-tested. Other operators are also working on their sustainability strategies to ensure a cleaner and greener future. Staycity has introduced a new set of technical speci cations for the buildings it will lease in the coming years, ensuring that these use heat pumps instead of fossil fuel heating technologies and operate with high energy e ciency standards. e new buildings will also be required to disclose their whole-life carbon assessment. Additionally, the brand ensured that all its properties in 2022 o ered on-premises waste sorting, and it is starting an inroom and back-of-house waste and recycling trial, with hopes of rolling this out across all properties in the future.

The importance of good meetings and events based facilities at hotels

The importance of in person interaction through meetings and events

If we have learnt anything from the past few years is that you cannot replace that human connection with Zoom meetings and FaceTime communication. Of course, they have their place and they allowed us to keep in touch with our family, friends and colleagues when travel was restricted. However, in the end we all longed for that face to face connection, a simple handshake, a meal together and a great conversation. So, just like with our families, it was the same for our work colleagues especially if your business is part of a global company and travel for meetings and conferences is part of your schedule.

I understand that technology plays a huge part in successful meetings and events and the wow factor is a key component of a successful event and can create excitement and long lasting visual images. There will always be a need for teleconferences and hybrid meetings but let’s never underestimate the power of face to face communication and human interaction.

Many companies and organisations have recently held their first annual conference event, in three long years, and the overwhelming comment you regularly hear is that “how good is it to meet in person once again”. Things that were once taken for granted now have a refreshed sense of urgency and importance. The hotel and travel industry is at the centre of all this activity, as we provide the backdrop for all

these reunions to take place. Apart from the business aspect, we, in the hotel industry, must see the privileged position we find ourselves in, as we provide the stage for this great reconnection to take place. Conrad Hilton’s vision, and it remains Hilton’s vision for over 100 years is that “it is our responsibility to fill the earth with the light and warmth of hospitality”. Now is the time to step up to the mark and show the power of hospitality.

Good meetings and events spark creativity, share alignment and allow a message to circulate and cascade throughout an organisation. When you combine your objectives with shared “downtime” this creates a strong common bond. So, I believe that hotels with events based facilities have

an edge if your delegates can enjoy golf, skiing, city activities etc. together. These “soft” areas of meetings and events, when performed sensitively, can set the tone for the future success, and often create the secret sauce which allows people to re-energize and thrive within their organisation. Of course, many organisations love to give back to communities and their chosen partnerships, so one day of the meeting may be an activity in the community, which creates a team with shared values, and leaves a positive impact on, not only, the receiver but also the giver. Again this demonstrates the importance of connectivity.

I believe that hotels with great meetings and events space will see a bright future, as this segment gathers pace in its recovery. We need to fire up our teams, within the hotel and travel industry, and constantly remind them of the responsibility we share to ensure it all goes according to plan. We all know the amount of planning that needs to happen, to make a successful event, and it can sometimes seem overwhelming, but I am always reminded of one of my favourite quotes from John Ruskin (Victorian Art Critic) “Quality is never an accident, It is always the result of intelligent effort”

So I am glad to put all the Zoom and doom behind me! We have had some tough years and our industry was hit hard, but now we can look forward, with optimism, and welcome back meetings and events just like we would greet a long lost friend. BTI

The Tokaido Shinkansen

BACKGROUND On October 1, 1964, the inaugural Bullet Train between Tokyo, Nagoya, and Osaka started running on the Tokaido Shinkansen. The Tokaido Sanyo Kyushu Shinkansen runs through the centre of Japan, connecting Tokyo, Shizuoka, Nagoya, Kyoto, Osaka, Hiroshima, Hakata, Kumamoto, etc. The Tokaido Shinkansen is recognised for being far more environmentally friendly than other high-volume, high-speed transit options, as environmental concerns are rapidly increasing worldwide.

CHECK-IN I travelled on the Nozomi 220, from Osaka to Tokyo. The train was expected to depart from Shin Osaka station at 1030. I noticed that reservations can be made at Tokaido Sanyo Kyushu Shinkansen Online Reservation Service, from the ease of one’s home. This is very convenient, as it enables passengers to make and alter their reservations anywhere. They can also board the Shinkansen with a QR ticket.

BOARDING The station was bustling with people when I reached it. At the scheduled time of 1030, boarding began. The Nozomi train, which I was travelling on, is said to be the fastest Shinkansen train running between Shin Osaka and Tokyo. It runs up to 300 km per hour, and its departure and

arrival times are fabled to be accurate.

THE SEAT I was seated in the executive class compartment. I ensured that I booked window seat 1 D, which framed breathtaking views of Mount Fuji on my journey. The seat was conveniently located close to a spacious baggage area and I could store my luggage without any hassle. There were power outlets located in the centre armrest and were compatible with my laptop and mobile chargers. The comfortable seat had an adjustable footrest with plenty of legroom which made the journey comfortable.

THE JOURNEY The Nozomi 200 train went at a maximum speed of 285 km per hour. The railway carriages were well maintained, with each chair car being temperature-regulated. For the entirety of the journey, the train compartment had a quiet and peaceful atmosphere. I enjoyed the view of Mount Fuji, the natural wonder of Japan, as it passed by my train window. The train made a few stops at Kyoto, Yokohama, Nagoya, and finally, Tokyo. The timely announcements that were made before the train pulled into each station

were very helpful. Tea, co ee & sandwiches were sold on the train, for passengers to snack on.

ARRIVAL The train arrived in Tokyo on time, at 1257. This incredibly punctual train is known for having an average delay time of up to 0.5 minutes. Disembarkment was a quick process. The entire process was very prompt, with no unnecessary waiting or delays.

VERDICT The Tokaido Shinkansen is a safe and reliable train, with no accidents resulting in death or injury. It is ideal for business travellers, as it pays attention to minor details that enhance the journey such as plush seats, plenty of personal space, and excellent service.

Hokkaido

Hokkaido

Hokkaido province comprises about one-fifth of Japan’s total land area. It is the second largest and northernmost of Japan's four main islands; bordered by the Sea of Japan to the west, the Sea of Okhotsk to the north, and the Pacific Ocean to the east and south. Together with a few small adjacent islands, it constitutes a dō or province of Japan. Hokkaido was long the domain of the aboriginal Ainu peoples. Japanese settlement of the island began in 1869, when the territory, which was then called Yezo province, was renamed Hokkaido or North Sea Province. The Ainu people have a unique culture and they are working to revive traditional dances from old records and creating new Ainu music, preserving embroidery with unique patterns and crafting wooden carvings.

The climate is generally cool even during summer months but the winters can be harsh, with lots of snowfall, below-zero temperatures and frozen seas making it an ideal destination for winter activities, especially skiing. In summer it does not get as hot and humid as in the other parts of the country and the climate is perfect for various outdoor activities that Hokkaido offers visitors.

With its unspoiled nature, several national parks and rural landscapes, Hokkaido attracts many outdoor lovers; skiers and snowboarders in the colder seasons and hikers, cyclists and campers in the warmer months from around June to September. Sapporo which is the administrative headquarters is in the southwest on the Ishikari River. It is the province’s industrial, commercial, and tourist centre. Hokkaido University, founded in 1876, is located in Sapporo. Other important towns are the ports of Hakodate, Otaru, and Muroran.

The economic development of Hokkaido includes iron, steel, wood pulp, dairy, and fishing industries. Rice, soy and kidney beans, oats, barley, hay, and white potatoes are important crops. The island contains one of the largest coal deposits in Japan. Construction of the Seikan Tunnel, which was dug under the Tsugaru Strait in order to link Hokkaido with the main Japanese island of Honshu, was begun in 1964 and was completed in 1988. The tunnel carries a rail line between Hakodate on Hokkaido and Aomori  on Honshu.

With so much to offer local and foreign visitors, a visit to Hokkaido will be nothing short of memorable and unforgettable.

Where history meets modernism

WORDS Khursheed Mistry

Originally known as Yamato, Nara was Japan’s first capital and the seat of the Emperor. Rich in ideas and technology from Europe, China and Korea via the Silk Road, Nara is a living museum with 1,300 years of art and architecture to offer. Japan’s capital Heijokyo before Kyoto, with a palace and administrative buildings, was established near what is now Nara city. Based on the Chinese city of Xi’an, the city was built in a grid format with the Palace at its north end.

Emperor Shomu directed the works of  Tōdai-ji Temple and the world’s largest bronze Buddha, as a way to bring hope after wars, a smallpox outbreak and the failure of crops. After the capital was moved to Kyoto, Heijokyo was abandoned and very little remained beyond the foundations. Several buildings and the south gate have since been restored and walking around the palace grounds gives visitors an idea of the magnificent grandeur of the ancient capital.

Nara contains the lion's share of the oldest national treasures; in sculpture, 35 national treasures are from before the eighth century. In buildings, 32 of Nara's national treasures date from the 12th century.

Two of the greatest masterpieces of 8th-century Japanese literature originate in Nara. The Kojiki is a collection of the legends of the Gods and how Japan was founded. It shows Nara as the scene of many important historic events and epic dramas. The Manyoshu, which is the oldest collection of Japanese poetry, is the bible of Japanese letters. Artworks inspired by the poems are displayed at the Nara Prefecture Complex of Man'yo Culture. Nara has a range of Buddhist artwork spanning centuries and the carvings and sculptures, vary significantly in style and appearance. The shrines and temples of Nara are art galleries exhibiting much of the country's finest Buddhist art.

Explore Japan’s history, arts and culture in Nara, home to three World Heritage sites; historic monuments of ancient Nara, Buddhist monuments, sacred sites and pilgrimage routes in the Kii mountain range. With a plethora of activities to keep one enthralled, natural scenic beauty, charming townscapes, national treasures, delectable culinary experiences, events and luxury hotels - the idyllic Nara city which is less than an hour by train from Kyoto and Osaka, and easily accessible from Tokyo is a must visit.

In summer, kuzukiri or kuzu mochi is relished and when the weather gets colder, kuzu powder is dissolved in warm water and used as a remedy for coughs and colds. The noodles are bland in taste, so the dessert is served with black sugar syrup, known as kuromitsu. The dish is sometimes served with other toppings, such as fruit or matcha.

The word, toka in Tokae means light flower because the shape of the hollow around the burning wick and a candle’s melted remains are said to resemble a flower. The more that the hollow and melted remains resemble a flower the luckier the lantern is and the more likely the lighter’s wish is to be granted.

✤ SHuNI-E CEREMONY (OMIZuTORI) MARCH

Omizutori is the commonly used name for the Shuni-e ceremony which is a series of events held annually from March 1 to 14 at Tōdai-ji Temple. Shuni-e is performed at Nigatsudo Hall, a sub-complex of Tōdai-ji, which is close to the temple's main hall on the slope of a hill. In the night from March 12 to March 13, between around 1:30 am and 2:30 am, priests descend repeatedly from the Nigatsudo by torchlight to draw water from a well at the base of the temple hall. The well's water is said to have restorative powers and will be dedicated to the main image of Nigatsudo, Eleven-faced Kannon Bosatsu. Following the water drawing event, the mysterious Dattan ceremony is performed in the building where conch horns are blown, bells are rung and priests swing burning torches. The event comes to an end around 3:30 am.

Known for its passion and enthusiasm for food, the city was once referred to as "tenka no daidokoro," "kitchen of the nation." The importance of the inhabitants of the city attached to the culinary world is instantly evident once you look around Shinsekai, Fukushima, and Tsuruhashi. Guests of the city are often encouraged to indulge in "Kuidaore", an expression

which means to seek out delicious food with determination, pouring money into eating until you are bankrupt. This phrase originated in Osaka and has been embedded into the identity of the city. Historically, Osaka's significance increased drastically in the 16th century when Toyotomi Hideyoshi chose Osaka as the location for his castle- Osaka Castle. Currently, Osaka is an eclectic blend of tradition and modernity as it's known for its culinary, nightlife and historic offerings. A short Shinkansen (Bullet Train) ride from Tokyo, the city has a highly unique personality and is definitely an experience that a traveller should explore!

TOKYO EVENTS

✤ Sumidagawa Firework S FeStival

Every year on the last Saturday of July, the sky over the Sumida River is illuminated as the Sumidagawa Fireworks Festival takes place. Expect a warm evening, large crowds, lots of food and drink and thousands of fireworks. Fireworks can be viewed from many locations in Asakusa. As this is an urban fireworks display, there are no bleacher seats available. The best place to see the fireworks is by the river, but it is usually quite crowded, as nearly a million people visit each year.

✤ Chiyoda Cherry BloSSom FeStival

Held in Kitanomaru Park with its fabulous cherry trees, the Chiyoda cherry blossom festival is one of the most popular in Tokyo. The trees are lit up at night and visitors can take a rowing boat out onto the moat of the ancient Edo castle. The boating hours are even extended into the evening during the festival so you can enjoy both at once. The park is surrounded by food stalls which provide plenty of opportunities to try some of the seasonal foods and traditional festival staples. The festival typically takes place between late March and early April.

There are five different sections with different colours and themes: Amusement Park, Aqua, Lovely stream, Cute, and Forest areas. There is also a dance show which is synchronised to the light and music.
