My favourite time of year, not that we have anything to complain about the rest of the year, but Summer reinvigorates us and inspires us with the drive for a fresh start, shedding layers and embracing the wonderful lifestyle we enjoy on the GC. As we head to the end of another year, our second during the pandemic, we can feel weary and worried about the future. I prefer to look ahead with optimism, enjoy the small things which we have discovered are the most important – friends, family, our health and finding happiness in helping others. Despite these uncertain times, I am proud to say I have launched a new magazine, well, actually revived an iconic Gold Coast title in Gold Coast Panache magazine, and we were thrilled with the response. Thank you to everybody who attended the launch party and our event sponsors and partners. It was one to remember! Sleep is crucial to our health and wellbeing. Along with good nutrition and exercise, sleep is now recognised as a pillar of good health. A lack of quality sleep can have a major impact on mood, concentration, memory and quality of life and relationships. In addition, medical sleep disorders such as obstructive sleep apnea have been shown to contribute to other serious health problems such as high blood pressure, diabetes and heart disease. Here are some useful tips for a good – no a GREAT night’s sleep!

Have a regular sleep pattern

Try to go to bed at around the same time every evening and get up at around the same time every morning. Improved sleep will not happen as soon as changes are made. But if good sleep habits are maintained, sleep will certainly get better. Find what time works for you and stick with it.

Spend the right amount of time in bed

Most adults need about seven to eight hours sleep every night. Some require more and some less. Many poor sleepers spend much more than eight hours in bed and this makes fragmented sleep a habit. Except if you have lengthy sleep requirements, limit your time in bed to no more than eight and a half hours. If you often take hours to fall asleep, go to bed later. Remember that children need more sleep than adults.

Bed is for sleeping, not entertainment

Hand-held electronic devices such as smartphones and other distractions can interfere with your sleep. It is better not to sleep with your TV or other devices on. Your mind needs to be in the habit of knowing that if you are in bed, you are there to sleep. Don’t stay in bed if you are wide awake.

Wind down and relax before going to bed

Have a buffer zone before bedtime. Sort out any problems well before going to bed. This may mean setting aside a ‘worry time’ during the day. Use this time to go over the day's activities and work out a plan of action for the next day. Try to avoid using your computer or other electronic screens within one hour of bedtime. Find a relaxation technique that works for you and practise it regularly, during your wind down period.

Make sure your bedroom is comfortable

You should have a quiet, dark room with comfortable bedding and good temperature control.

Alcohol, caffeine and cigarettes – to be avoided

Alcohol may help you to get off to sleep, but will disrupt your sleep during the night. Caffeine (tea, coffee, cola drinks) and the nicotine in cigarettes are stimulants that can keep you awake.

Avoid daytime naps

Sleeping during the day will make it much more difficult to sleep well at night. If a nap is absolutely necessary, for example because of a late night, then limit this to about 20 minutes. Make 20 slim magazine Summer 2021/22

sure that you are awake for at least four hours before going back to bed. Don’t allow yourself to fall asleep in front of the TV.

Avoid sleeping pills except in exceptional circumstances

Watching the time on a clock just makes you anxious about not being asleep. If possible, take the clock out of your bedroom. If you need the clock for the alarm, turn it around so that you cannot see the time. Resist the temptation to look at the time on your various electronic devices. These should ideally be charged outside of the bedroom overnight.

How many kilos did you lose? 45-ish. I try not to focus on the scales. For me it wasn’t about getting to a goal weight. It was for my health and happiness. I struggled to complete a full day of work without wanting to nap as soon as I got home. From previous experience, weighing myself constantly or being fixated on a goal weight failed only caused depression and self-hate. What was your relationship with food? Bad. I ate too much rubbish foods, and craved them. I ate when depressed or feeling down (emotional eating). What motivated you to go on your weight-loss journey? My family, my health and quality of life. I was so depressed about my weight climbing, the number on the scales and I was so over yo-yo dieting. I’d diet and exercise only for not much to happen, then get down about it and give up, then put on weight and then more every time.

How long had you battled with weight issues? I’ve always had a weight issue. Over the years, especially in my youth, I was put down because of my weight. It was mentally draining. The hurt that would stay with you over time even though you try to shrug it off. When I was younger, I was “bigger boned”. I was about size 14, but people put me down as “fat” and that stuck. What health problems did you face as a result? Asthma, sleep apnoea (borderline), depression, anxiety and the constant tiredness. What made you decide on weight-loss surgery and which procedure was the right one for you? I worked with a beautiful lady, Michelle who had the procedure done. She spoke highly of it and the Doctor. Seeing the results Michelle was having I started asking her questions and looking into it and finding a way to speak to my husband about it.


On Sunday 6 September 2020, my husband and I were watching our son play footy from the car as it was pouring rain. My hubby asked me to look at something on his phone which was the Doctor’s website. I was like WOW! I had been looking into this because of Michelle, and I explained the situation to him. We made an appointment there and then with my Doctor so I could get a referral. My Doctor was supportive and didn’t hesitate writing the referral. I put off making the appointment, but finally bit the bullet and it was the best decision. The Doctor and his team made the process so easy and they were extremely supportive. Post-surgery, what have been some of the challenges? The hardest part for me was adapting to the portion sizes and my body’s reaction to different types of food, such as fried food or fast food. I have to be careful about how much of that I eat. In February 2020 at the 54th Super Bowl Halftime show in Miami, JLo joined Shakira on stage and broke the internet with their dance moves and rendition of “Let’s Get Loud”. Declared by some in the media as “too sexy” for prime time, the energetic performances from 43-yearold Shakira and the 50-year-old JLo wowed the majority of us for their agility and professionalism. Yes, we know a lot of it is “smoke and mirrors” thanks to trainers, stylists, make-up, hair and a cast of thousands, but it was awesome to behold women of a certain age, visible, talented and rocking it. Of her performance, which includes an epic knee slide across the stage, the ever-humble JLo said “I think it’s super important for two Latina women to be headlining the Super Bowl, especially right now in Trump’s America.” Behind the dazzling 15 minutes on stage, are years of solid workouts. She told Harper’s Bazaar that she always like to “mix it up”, with yoga or a boxing class and sessions drawn from the Tracy Anderson Method, pole dancing and weight training at the gym. In New York, according to her Instagram posts, JLo seeks a sesh with celebrity trainer, David Kirsch who’s known for his 32-minute workouts that consist of short bursts of interval training. Apart from the consistent training, JLo is a fanatic for diet which she says plays a major role in how she looks and feels. The triple threat is said to avoid alcohol, caffeine, sugary drinks and processed food, which is vital to her ageless

appearance. Instead, she’s a stickler for lots of veggies, fruit, and fish and drinks plenty of water. “Drinking plenty of water, especially before a workout, can help you push harder and get more out of your exercise routine. I try to keep my body hydrated and well rested after every workout. That way, I'm ready to hit it hard again the next day.” In an interview with Hollywood Life, JLo confessed to loving nothing better than salmon and a veggie-packed salad such as broccoli, peppers and zucchini with a drizzle of vinaigrette on top. For dinner, “protein and quinoa, which feels like rice and beans, which I grew up with. Shout-out to basketball legend, Sue Bird too who’s going for a fifth women’s basketball gold medal and turned 41 this year, and the evergreen 46-year-old gymnast Oksana Chusovitina who competed in her eighth Olympic Games. Katrina Sanguigno is a dynamic communications dynamo, Director of Jumpstart PR, who’s known for her creativity and ability to connect clients with their markets. The creative powerhouse has been working in marketing for 23 years, starting at international behemoth brand, Hard Rock Café and rising through the ranks to become Domestic Marketing Manager (Australia and New Zealand) at Currumbin Wildlife Sanctuary. A familiar face in business and community philanthropy, Deb Farnworth-Wood still pinches herself when she sees a kangaroo and revels in the sunshine and opportunity of living in Australia. “We moved here from the UK in 2007 to retire, but it didn’t unfold like that,” she recounts. “My husband and I bought the original Australian Skin Clinic and within a few months I realised I wasn’t ready to retire and decided to franchise the clinic instead. “I sold the Australian Skin Clinic franchise in 2019 although I kept the original clinic (now called Ultimate Skin and Body Clinics). I also bought a men’s skincare range (Valor Organics) in 2019 and in 2020 I bought the mineral makeup company Issada Cosmetics.” Deb has always had an entrepreneurial spirit and vision that put her a step or two ahead of market trends. “Before moving to Australia I had an 18-year background in health as the managing partner of a large multi-disciplinary medical centre. I was the first non-GP to become a partner in a UK medical practice and we and effort has paid off.” With a background working across various industries, including film, tourism, hospitality, beauty and sport, Katrina currently works on PR campaigns for Bermingham Books and several published authors and titles, as well as the award-winning short film, “Seven Times - A Domestic Violence Story”. “I am passionate about what is happening in the domestic violence sector,” she explains. “I have been involved in raising much needed funds and awareness to help women escape toxic and abusive relationships. But my husband wanted the two of us to retire to Australia. So we moved here.” Close to 15 years later, and the Clinic has undergone many changes, essential to keep pace with technological advancements, treatment trends and customer demand. “We have treated over 30,000 clients and some of our clients have been coming back for over 20 years, since before I even owned the clinic. “We offer a boutique experience and because we are not in a shopping centre we have a private, discrete location which people love.” Business success has earned Deb a slew of Awards and recognition, including listing in the BRW Fast starters in 2014 and 2015 and in the BRW Fast list in 2016 “I was a finalist in the EY Entrepreneur of the Year awards in 2016 and won the Gold Coast Woman in Business Award in 2017.” All these achievements are great for the brand profile and reward for hard work, but they don’t come close to the sense of satisfaction Deb feels from the close connections with her clients and their sense of self-worth. “There is a huge link between how we look and how we feel,” she explains. “I love that my businesses are all about making people look and feel fabulous. “I constantly set myself new challenges, usually to grow each business bigger than the last. Although I’ve only owned Issada a little over a year, we have achieved more than we could have imagined. Many of my team have worked with me for years and understand my core values and what needs to be done. SOME OF THESE ISSUES ARE MILD AND MANAGEABLE, HOWEVER THE QUALITY OF LIFE OF MANY PEOPLE IS AFFECTED TO THE DEGREE WHERE THEY REQUIRE RE-OPERATIONS TO IMPROVE THEIR WELL-BEING: REVISIONAL BARIATRIC SURGERY

Gastric Bands Australia more than other parts of the world has seen gastric bands become the predominant bariatric procedure performed over the previous decade. Over 100,000 people in Australia have received a gastric band since 1994. Many people with gastric bands have either had a great deal of success followed by complicated band issues, or have never really succeeded to losing as much weight as they initially hoped for. Sometimes the distortion of the gastro-oesophageal anatomy can produce symptoms that manifest themselves many years later. The common problems seen are band slippage, pouch or oesophageal dilatation, and excessive scar formation beneath the band. These problems lead to symptoms of severe reflux and vomiting/regurgitation after meals. The options available to patients in this

setting include removal of the band, attempt at repositioning the band to a more functional position, or removing the band and converting to another weight-loss procedure. Band removal and conversion to another bariatric procedure is becoming increasingly common. The most common option is conversion to a gastric bypass. Band removal and conversion to a gastric bypass can be performed safely in the same procedure in many cases, saving the patient an additional general anaesthetic and operation. Sometimes the scarring or distorted anatomy as a result of the band necessitates removal of the band and a delay of about 3 months before a later conversion to a bypass. Conversion from a band to a sleeve gastrectomy is also possible however surgeons who do this generally delay the sleeve gastrectomy 38 slim magazine Summer 2021/22

several months due to the higher risk of a combined procedure. The risk of a sleeve gastrectomy leak of the staple line is dramatically increased in this setting, and can be an extremely difficult problem to deal with, potentially leading to a prolonged hospital stay. Gastric bypass is generally accepted to be the most effective option to induce further weight-loss after a failed gastric band. Evidence demonstrates better long term weight-loss, improved food tolerance, and a better quality of life with gastric bypass relative to sleeve gastrectomy following removal of a band. The consensus among international consensus meetings is that a conversion of a band to a bypass is the preferred operation.


Sleeve Gastrectomy

Insufficient weight-loss, or late weight regain following Sleeve Gastrectomy

Sleeve gastrectomy has become the predominant bariatric procedure in Australia since 2010. Its popularity has arisen due to its fewer long term side effects relative to the gastric band, however it too does have issues which potentiate reoperations.

As longer term data becomes evident, we are now beginning to see many patients developing late weight regain following a sleeve gastrectomy. This can occur in up to 40-50 percent of patients, especially those with a BMI over 45. Often patients will not lose as much weight as they initially hoped for, or may have good weight-loss initially and then regain weight years later. Emerging evidence is revealing Sleeve Gastrectomy is not providing sustained long term weight loss in patients with a very high BMI.

Some patients can develop symptoms months or years after a sleeve gastrectomy, most commonly acid reflux at the gastro-oesophageal junction. This occurs in about 25 percent of patients after a sleeve gastrectomy, and mostly is mild and easily managed. This reflux can be incapacitating and can severely affect the quality of life of some patients. The reflux in this scenario relates to the high intraluminal pressure of the sleeve, compared to the highly compliant stomach that has been removed. This is a different mechanism to the weakened gastro-oesophageal sphincter seen in non-sleeve patients and therefore merely attempting to repair a hiatal weakness at the diaphragm is not reliably helpful.

Options in this case would be to attempt “re-sleeve” which is potentially dangerous and would lead to similar problem at a later date. More often is conversion of the Sleeve Gastrectomy to a Gastric Bypass or SADI procedure.

Some patients may develop a late stricture of the sleeve. This is usually amenable to dilatation, however sometimes patients require multiple dilatations, and often require temporary stenting. Often a sleeve can twist or become torted causing problems with eating habits. In these cases contrast swallow imaging will demonstrate the problem. Often simply forming a gastropexy to the remaining omentum to fix the sleeve in a satisfactory position will help. Occasional patients may develop “functional failure”. This term describes people experiencing dysphagia, or lack of emptying of the sleeve. Nuclear medicine studies may demonstrate extremely slow emptying, despite an anatomically normal sleeve. Even though a sleeve gastrectomy is irreversible, patients with symptoms relating to these problems still can be helped. Consensus among bariatric surgeons is that many patients with sleeve related problems do extremely well with a conversion to a Roux-en-Y gastric bypass. This involves dividing the top portion of the sleeve and attaching a small bowel limb to it, thus providing a low pressure outlet for the gastric acid. A conversion to a gastric bypass is likely to cure the reflux in the vast majority of patients.

Conversion to gastric bypass has traditionally been the accepted operation following a “failed” sleeve gastrectomy. Again recent data suggests patients undergoing conversion to gastric bypass are still not doing as well as initially hoped for in terms of weight-loss. The Single Anastomosis Duodeno-Ileostomy (SADI) procedure has emerged as a procedure providing the greatest weight-loss of all the commonly performed weight loss procedures. It has the longest lasting effects, with less late weight regain and no increase in side effects relative to the gastric bypass. It can be performed following a sleeve gastrectomy for insufficient weight-loss, or as a primary bariatric procedure for very obese patients. The SADI procedure is now being performed at many specialist weight-loss centres throughout the world and is becoming the preferred option for failed sleeve gastrectomy.

Revision of Gastric Bypass or SADI procedure Occasionally a patient who has had one of these operations my still have issues or weigh regain as described above. After a gastric bypass some patients still can have dilation of the gastric pouch -which has been created. We generally perform CT fizzogram scans which provide 3-dimensional models of the stomach and we can do volumetric analysis of the bypass or sleeve to assess for any dilation. Following a gastric bypass, it is still possible to perform revisional “pouch reduction” type surgery and restrictive procedures in many of these patients. Even following a SADI procedure if a patient has reflux or insufficient weightloss there are always options to assist in further weight-loss. Many patients may have been left feeling not fully satisfied following their primary procedure, whether due to lack of weight-loss or problematic symptoms. There are solutions to almost every problem. Patients who feel like they have to live with disturbing symptoms affecting the quality of life should be reassured that we can do things to improve their well-being.

From Contraception to Conception MANY WOMEN SPEND YEARS USING SOME FORM OF BIRTH CONTROL TRYING TO AVOID PREGNANCY, BUT WHEN THE TIME COMES AND THEY ARE READY TO FALL PREGNANT, IT DOESN’T HAPPEN AS EASILY AS EXPECTED. THERE IS NO WAY OF PREDICTING HOW LONG IT WILL TAKE, AND UNFORTUNATELY, ONE IN SIX COUPLES WILL EXPERIENCE DIFFICULTIES. A number of factors may affect your ability to conceive, so being educated about your fertility, and understanding what affects it, is the best way to plan for pregnancy. Most women will usually begin to ovulate normally and have menstrual periods a month or two after they stop using the pill or most forms of birth control, however, for others it may take longer. In most instances, this is just the normal delays in the process of conception. There is a common misconception that there are problems conceiving post contraception, or even possible negative side effects. The truth of the matter is that your body needs a bit of time to adjust and in most cases, pregnancy will happen when your body is ready to conceive. You may have heard that falling pregnant immediately after birth control could have side effects that lead to a negative impact on the health of your baby, however there is no scientific evidence to support this theory. Ceasing some forms of contraception may cause a slightly longer delay in returning to your regular ovulation pattern, while others will have little or no impact at all. Often the largest change in fertility that occurs after prolonged use of contraception is the natural change in egg quality over time due to ageing, and the time it naturally takes to conceive. It is a good idea to keep this in mind whilst trying to conceive. Here is a general guide to some of the most common contraceptive methods, and how they can affect a woman’s fertility levels once stopped:

- The Pill: In most instances, your fertility will return to your usual level within two months when your menstrual cycle resumes. - Hormone-releasing intrauterine device (IUD) eg. Mirena: After removal you should immediately return to your usual level of fertility. - Contraception Implant: When the implant is removed with most women returning to their previous menstrual cycle within a month.

By the time you are 41, this chance falls to just 4 percent per month. - Contraception Injection: It may take between 8 – 12 months to return to your normal cycle and fertility after your last injection, although in some individuals this may be longer. If you may want to become pregnant in the next 12 to 18 months, we advise you not to use this method of contraception. - Vaginal Ring: The vaginal ring provides a relatively low dose of hormones compared to most combined contraceptive pills. When you stop using the vaginal ring your fertility goes back to its normal level very quickly. While it is possible to become pregnant immediately after the cessation of the birth control, it is unlikely. Not because you’ve been on contraception (in most instances), but because time to conceive is usually several months and up to six to 12 months is not an unreasonable estimate. Your age has a dominant influence on your ability to conceive, and how long it will take. It is very important that you keep ‘time’ in mind. As a woman gets older, she produces fewer healthy eggs. Let’s talk about TAVI (transcatheter Aortic Valve Implantation)

WITHIN THE HEART, THE AORTIC VALVE IS AN IMPORTANT VALVE. THE LARGEST ARTERY IN THE BODY, THE AORTA IS THE MAIN ARTERY THAT CARRIES BLOOD AWAY FROM YOUR HEART TO THE REST OF YOUR BODY. THE BLOOD LEAVES THE HEART THROUGH THE AORTIC VALVE. THEN IT TRAVELS THROUGH THE AORTA, MAKING A CANE-SHAPED CURVE THAT ALLOWS OTHER MAJOR ARTERIES TO DELIVER OXYGEN-RICH BLOOD TO THE BRAIN, MUSCLES AND OTHER CELLS. Degeneration can occur with ageing, along with previous heart valve infection or rheumatic fever. These processes can lead to both restriction (aortic stenosis) and/or leakiness (aortic regurgitation) of the heart valve. When the valve is diseased, this can

cause tiredness, breathing difficulty, chest pain or stroke. The conventional method for aortic stenosis treatment is open heart surgery where the valve is usually excised and replaced with either a tissue valve or mechanical valve. This will improve forward flow from the heart and improve a patient’s symptoms as well as increasing their life span. Transcathether aortic valve implant is an alternative to open heart surgery in selected patients. A collapsed stent valve is inserted usually through the groin artery into the heart, like a conventional coronary angiogram. Once the valve is in position, it will then be opened up, securing it in the desired position. In some patients the TAVI will be done through a small incision in the chest, with a wound that is smaller than traditional open-heart surgery. Not all patients are suitable for TAVI. All patients who end up having a TAVI

need to be seen by both a cardiac surgeon as well as a cardiologist, along with a team of specialists to determine the best treatment option.

Gwyneth Paltrow, founder of lifestyle website, Goop says she wants to rebrand menopause and side-step the stigma and negative connotations. The 48-year-old star recently shared that she’s perimenopausaul, a precursor to menopause in which the ovaries gradually begin making less oestrogen. It’s a natural phase to enter in life, and often causes women to experience irregular menstrual cycles and fluctuations in hormones, along with symptoms like a drop in libido. Most women will experience it in their 40s, while some will even experience the changes as early as their mid-30s. “I think when you get into perimenopause, you notice a lot of changes. I can feel the hormonal shifts happening, the sweating, the moods— you’re all of a sudden furious for no reason,” she shared with Goop. “Menopause gets a really bad rap and needs a bit of rebranding. I remember when my mother went through

menopause and it was such a big deal, and I think there was grief around it for her and all these emotions. I don’t think we have in our society a great example of an aspirational menopausal woman.” In dealing with the new stage in her life, Gwyneth said that she’s altered her fitness regime to take this into account, incorporating weights to build bone density, while also continuing to keep her clean-eating diet which focuses on whole foods, leafy greens and lean, ethically-sourced protein. Signs of stress and how Meditation can help STRESS IS ONE OF THOSE THINGS THAT WILL AFFECT ALL OF US FROM TIME TO TIME. IN FACT, IT IS NOT ALWAYS A BAD THING.

1. Your gut starts to feel off

When we are stressed, we release the “stress” hormone Cortisol. It keeps us sharp and alert when it comes to both our performance at work and while working out which in turn helps us get results. Cortisol will also help us run super-fast if we need to get away from a threat. There are actually many benefits of a little stress, however, too much stress, and too much Cortisol for a prolonged amount of time is where things start to go wrong.

When you start to get the feeling that you are either not hungry at all or every time you eat your body reacts to the food, that may be a sign of stress. Stress can cause your body to struggle to digest food as when cortisol is high, it tends to shut off other parts of our body to send the blood to where it is needed. This means your digestion stops working as well as it should work.

When Cortisol is released into your blood stream, it triggers a flood of glucose, providing the body with instant energy which goes to your large muscles. This essentially gets our blood pumping harder and faster to confront an immediate threat ie. running from a mountain lion. Then once the threat is gone, cortisol levels go back to normal.

When we are stressed, we may find it hard to sleep. Then we will be over tired, but because you actually need some energy to fall asleep, you may find yourself in a vicious cycle of not sleeping well for days on end. Then feeling tired and stressed the next day, only to be moody and anxious and more stressed.

Another issue with being over stressed is that you may find it hard to concentrate. Pair that with a sore stomach and not enough sleep and you have a recipe for disaster.

While people hold tension in many points of their body such as their shoulders, neck etc. the jaw is a pretty common one for people who are over-stressed.


So what can we do about it? IT CAN BE EASY TO GET OVERWHELMED AND NOT KNOW WHERE TO START SO HERE ARE MY TOP POINTERS.

1. Eat well

The first tip and one of the easiest to control is what you put into your body. When you're stressed, your body becomes inflamed and eating inflammatory foods can just exacerbate that. Try to eat food in the most natural state possible, think green leafy veggies, nuts, lean proteins. I'm also a big fan of a daily Kombucha or Apple Cider Vinegar Soda as both of these drinks are great for improving gut bacteria and gut health. My go-to brand is Nexba as they have 500 million probiotics in every bottle, no artificial ingredients and zero sugar. Sugar is something you want to avoid when you are stressed and inflamed!

2. Meditate

Start taking 10 to 20 minutes out now to work on your mind, because without reducing that inflammation it is going to be hard to get a good night’s sleep which is needed. Meditation helps the body destress, it lowers Cortisol, it can calm the mind, it is one of the oldest practices in the world and there is a reason why athletes swear by it. CHICKEN & PORK PICNIC POT PIE

METHOD 1. To make the pastry, put the flour and butter into a food processor and mix for about 30 seconds, until the mixture resembles fine breadcrumbs. Add 100ml cold water and process for 10 seconds. Transfer to a large bowl or work surface and form into a ball, adding a little more water if necessary, and knead very briefly. Divide the pastry into two portions of about 1/3 and 2/3. Press each portion into a disc and wrap in plastic wrap. Chill for 15 minutes. 2. Roll out the larger of the two pastry pieces to a circle about 33cm, or sufficient to line the base and side of a 20cm springform or loose-based pie tin about 6cm deep, allowing any excess pastry to hang over the sides. Chill until needed. 3. Slice the chicken breasts in half horizontally. Place in a saucepan and add just enough water to cover the chicken. Bring to the boil, then reduce the heat to a simmer and cook for 5 minutes. Remove from the heat and leave for 10 minutes (the chicken doesn’t have to be cooked through). Drain the water and set aside. 4. To make the stuffing, heat the oil in a frying pan and fry the bacon for 3 minutes. Add the onion and garlic and fry for about 5 minutes, until softened. Transfer to a bowl and leave in the water to cool for 5 minutes. Stir in the breadcrumbs, parsley, basil, corn

and beaten egg. Mix thoroughly, season well with sea salt and freshly ground black pepper and stir in the melted butter. 5. Preheat the oven to 180°C fan-forced. Take half the stuffing and spread it over the pastry base, pressing it down gently with the back of a spoon. Shred the chicken and layer it on top. 6. Slit the skins of the sausages and put the meat into a bowl, squashing it all together, then spread it in a layer over the chicken, pressing it out to the edges. Top with the remaining stuffing, once again gently pressing it down. 7. Roll out the remaining pastry to a circle about 22cm across, or enough to cover the dish. Brush the top edge of the overhanging pastry in the tin with the beaten egg, then lift the pastry lid onto the pie. Seal together gently, pressing down with the tines of a fork. Trim the edges, ensuring the pie is well sealed. Brush the lid with beaten egg, then cut a cross in the middle to allow steam to escape. 8. Place the pie on a baking tray and bake for 50 minutes. Brush the top with egg again, to give a glossy finish, and bake for a further 10 minutes. Leave to cool completely in the tin before slicing. If transporting the pie, leave it in the tin to keep it safe. Serve with a dressed green salad and chutney. Warm 60 slim magazine Summer 2021/22

Recipes……… SMOKED SALMON AND ROASTED RED CAPSICUM PÂTÉ ON TOAST I NGR EDIENTS SERVE 6

• 1 small red capsicum (bell pepper), halved, seeds and membrane removed (or 50g bought chargrilled capsicum, drained) • 200g smoked salmon • 200g cream cheese • 100g sour cream • 4 tablespoons finely chopped dill • 60–80ml l emon juice • 8 thin slices of wholegrain or wholemeal (whole-wheat) bread

METHOD 1. Preheat a grill (broiler) to high. Squash the capsicum halves to flatten them, then place under the hot grill, skin side up. Grill until the skin is completely blackened. Place in a plastic bag, seal the bag and leave for 15 minutes. Rub or peel off the skin (do not rinse), then finely dice the capsicum and set aside. 2. Put the smoked salmon, cream cheese, sour cream, dill and 60ml of the lemon juice into the bowl of a food processor. Blend for about 20 seconds. Season with sea salt and freshly ground black pepper to taste and add the extra tablespoon of lemon juice if needed. Now either add the diced capsicum and blend for 10 seconds, or transfer the pâté to a bowl and stir in the diced capsicum. Chill the mixture in the fridge for about 30 minutes to firm up slightly. 3. Heat the oven to 180°C fan-forced and place a baking sheet in the oven to heat up. Remove the crusts from the bread, then roll the slices out thinly using a rolling pin or bottle. Cut each piece into four triangles. Place on the baking sheet and bake for 8–10 minutes, until golden and crisp. Set aside to cool. 4. Transport the toasts in an airtight container. The pâté can be transported in the either the bowl it was chilled in or in an airtight container. Or if you have some small glass jars, divide it up into individual portions. It will last 3–4 days in the fridge.

MARINATED BUTTERFLIED LEG OF LAMB I NGRED I E N TS SERVES ABOUT 8

• 2–2.5kg (a little less without the bone) leg of lamb, boned and butterflied • 80ml olive oil • juice of 1 lemon, (plus 1-2 lemons, halved, optional) • 1 teaspoon ground coriander

• 1 teaspoon ground cumin • 2 teaspoons dried mint • 2 garlic cloves, crushed • green salad, to serve • baked potatoes or potato salad, to serve • small handful flat-leaf (Italian) parsley leaves • 1 small red chilli, thinly sliced, seeds removed if preferred

METHOD 1. Open the lamb out and use a sharp knife to make a few slashes through the thickest part of the meat – this helps the meat cook evenly. 2. In a bowl, combine the olive oil, lemon juice, coriander, cumin, mint and garlic. Rub the marinade all over the lamb. If possible, return the meat to the fridge or a cool box (place it on a tray or even in a clean plastic bag) and leave to marinate for 1–2 hours. Ideally you would prepare this in the morning and allow it to marinate all day. 3. When you’re ready to cook, ensure your barbecue or fire isn’t too hot, otherwise your meat will char on the outside and still be raw in the middle. Cook the meat for 15 minutes, then turn over and cook for a further 15 minutes. If you are cooking on a hooded barbecue put the hood down for the second 15 minutes. If not, try and cover your meat with foil. If you can’t do either, don’t worry. 4. Check to see if the meat is cooked to your liking, remembering it will cook further while it rests. If it’s ready, remove from the heat, wrap in foil and leave to rest for about 10 minutes. While the meat is resting, char the lemon halves (if using), cut side down on the barbecue for 2-3 mins. Slice the lamb, scatter over the parsley and chilli and serve with salad and baked potatoes. 61 slim-magazine.com.au

METHOD 1. Preheat oven 180°C. Place mushrooms stalk-side-up on a baking paper-lined baking tray. 2. Combine remaining ingredients in a large bowl. Season with salt and pepper and mix well. 1. Heat oil in a large non-stick frying pan over medium heat. Cook onion, stirring, for 2–3 minutes until tender. Stir in garlic and cook for 30 seconds, until fragrant.

2. Add wine and simmer for 1 minute, then stir in tomatoes, chilli and parsley. Season with salt and pepper. Simmer for 10 minutes, stirring occasionally. Stir in seafood, simmer for a further 5 minutes, or until seafood is cooked. 3. Meanwhile, cook pasta in a large saucepan of boiling, salted water following packet instructions. Drain. GINGER MAPLE CHICKEN IN G R EDIENTS

SERVES: 4 PREP: 15 MINS | COOK: 45 MINS

1. Preheat oven to 180°C. Line a baking tray with baking paper.

• 2 tablespoons soy sauce • 1 tablespoon pure maple syrup • 2 teaspoons garlic-infused olive oil • 2 garlic cloves, finely grated • 1 tablespoon finely grated fresh ginger • 500g butternut pumpkin, peeled, cut into 2cm pieces • 300g brussels sprouts, halved • 1 red onion, cut into thin wedges • 4 x 150g skinless chicken thigh cutlets, bone in, fat trimmed • 1/3 cup (35g) pecans, coarsely chopped

2. Mix soy sauce, syrup, oil, garlic and ginger in a small bowl. Season with salt and pepper. 3. Place pumpkin, brussels sprouts and onion in a large bowl. Add half the sauce mixture and toss well. 4. Place chicken in a shallow dish. Pour over remaining sauce mixture and massage into chicken to coat well. Transfer chicken to baking tray. Add vegetables to tray and arrange around chicken. Bake for 35 minutes. Scatter with pecans and bake for a further 10 minutes or until chicken is cooked through and lightly browned.

ANNA’S TIP Chicken is cooked if the juices run clear when you pierce the thickest part with the tip of a sharp knife. If the juices are pink, return to the oven for a further 10 minutes, then retest.

METHOD 1. Heat oil in a large non-stick frying pan over medium heat. Cook onion and capsicums, stirring, for 5 minutes, or until softened. Stir in garlic, dried herbs and spices and cook for a further 1 minute, or until fragrant. Add mushrooms and cook, stirring, for 5 minutes. 2. Stir in tomatoes, rice, stock and ½ cup (125ml) water and bring to the boil. Reduce heat and simmer, partially covered, for 25–30 minutes, stirring occasionally, until rice is just tender. 3. Stir in prawns and peas and cook for a further 5 minutes, or until prawns are cooked through. Stir in parsley. Divide among 4 bowls and serve with lemon wedges.

SMOKY TEMPEH KALE CAESAR

METHOD 1. Preheat the oven to 180°C (160°C fan-forced). 2. Spread out the bread cubes on a baking tray and bake for 10 minutes until crisp. Remove and set aside. 3. To prepare the smoky tempeh, place the tempeh, paprika and a small drizzle of olive oil in a bowl and toss to coat well. Heat half the remaining olive oil in a large frying pan over medium–high heat, add half the tempeh slices and cook for 3 minutes each side until golden brown and crisp. Remove and set aside. Repeat with the remaining olive oil and tempeh. 4. To make the dressing, mix together all the ingredients in a small bowl. Add 2 tablespoons water to thin it out (this helps it spread further over the salad). 5. Place the brussels sprouts and kale in a large bowl, drizzle over the lemon juice and use your hands to massage it into the greens for about 30 seconds until they soften. Add the lettuce, cucumber, cherry tomatoes and croutons and toss to combine. Pour over the dressing and lightly toss to coat well. 6. Divide the salad among four bowls, top with the tempeh and roasted almonds and serve.

SERVES: 4 PREP: 20 MINS COOK: 30 MINS • 4 x 200g boneless salmon fillets, skin on grated lemon zest (optional) • 1 lemon, sliced into wedges RADISH AND CUCUMBER SALAD • 1 Lebanese cucumber, thinly sliced into discs • 1 bunch radishes, bulbs thinly sliced • 1½ cups (135g) sugar snap peas, trimmed and cut into small chunks • 3 tablespoons finely chopped dill • 2 tablespoons reduced-fat Greek-style yoghurt • 1 teaspoon poppy seeds PARSNIP HASH BROWNS • 400g parsnips, peeled • 150g potatoes, peeled • 1 onion • 2 free-range eggs • 40g wholemeal plain flour • 1⁄3 cup (80 ml) extra virgin olive oil

METHOD 1. To make the salad, place all the ingredients in a bowl and toss to combine. Set aside, allowing the yoghurt to soften the vegetables.

2. To make the hash browns, coarsely grate the parsnips, potato and onion (or push through the grater attachment of your food processor). Squeeze out as much moisture as possible – the more you squeeze out, the crisper your hash browns will be. Place in a large bowl with the eggs and flour and mix well to combine. 3. Heat a good drizzle of olive oil in a large non-stick frying pan over medium–high heat. Working in batches of two or three, add ½ cup of the mixture for each hash brown to the pan and flatten out to 1 cm thick fritters. Cook for 3–4 minutes each side, pushing down with a spatula to compact the mixture, until cooked through and a deep golden colour. Remove and drain on a plate lined with paper towel. Repeat with the remaining olive oil and mixture to make eight hash browns in total. 4. Return the frying pan including any remaining olive oil to medium–high heat and add the salmon fillets, skin side up. Cook for 4 minutes until golden brown, then flip and cook until the flesh feels firm to the touch and the skin is crispy, about 5 minutes. 5. Divide the salmon, hash browns and salad evenly among four plates. Finish with a generous grinding of black pepper and lemon zest, if you like, and serve with lemon wedges.

CHOCOLATE MUG CAKE IN G R EDIENTS

METHOD

• 1 small banana • 3 tablespoons quinoa flakes • 1 small free-range egg • 2 tablespoons unsweetened cocoa powder • ½ teaspoon baking powder • 2 teaspoons milk • ½ teaspoon vanilla extract • 1 tablespoon nut butter (almond, peanut or cashew) • pinch of ground cinnamon, plus extra to serve

1. In a bowl, mash the banana with the back of a fork.Add the quinoa flakes, egg, cocoa powder, baking powder, milk and vanilla and mix to form a thick batter. 2. Divide the batter between two mugs. Microwave separately for 1 minute on high. 3. Serve warm with nut butter and an extra pinch of cinnamon.

CHARRED AUBERGINE WITH SPICED LAMB METHOD If you have a gas hob, blacken the aubergines directly over the flame, moving them around with a pair of tongs until they are blackened on all sides and completely soft (this can take up to 20 minutes). Alternatively, place them under a hot grill set to its highest setting and grill for about 20 minutes until blackened on all sides (although you won’t get quite the same smoky flavour). Leave the aubergines until they are cool enough to handle, then peel away and discard the blackened skin. Roughly chop the aubergines and keep to one side for later. Heat the olive oil in a large saucepan over a medium heat, add the onions and a generous pinch of salt and fry for 5–6 minutes until soft and tinged golden. Stir in the crushed garlic and cook for a further 1 minute, then stir in the spices and chopped aubergines and cook for 3–4 minutes, stirring to coat the aubergine in the spices. Add the lamb to the saucepan and cook for 10–15 minutes until it is completely browned, breaking up the meat with a wooden spoon, then stir in the tomato purée and pomegranate molasses. Season to taste and cook for about 5 minutes. To make the salad, mix the sliced red onion in a bowl with the parsley leaves and lemon juice and season generously with salt and pepper. Warm the flatbreads and serve them with the lamb mince, onion salad, pomegranate seeds and crumbled feta.

Recipes……… SALMON + SPINACH TRIANGULAR HAND PIES IN G R EDIENTS

MAKES 4 – PREP 20MINS COOK 15-20MINS • 150g spinach, washed • plain flour, for dusting • 500g block of puff pastry, remove it from the fridge 20 minutes before needed • grated zest of 1 lemon • 150g cream cheese • 1 tbsp finely chopped chives • salt and pepper • 1 x 350g skinless salmon fillet, cut into 4cm (1½in) cubes • 1 egg, beaten • 1 tbsp white sesame seeds – optional • 1 tbsp nigella seeds – optional

METHOD Preheat the oven to 200°C (180°C fan/gas mark 6) and line a baking tray with baking parchment. Put the washed spinach in a microwaveable bowl, cover and zap on high for 2 minutes or until well wilted, or wilt it in a dry pan. Place the \ spinach in a sieve and press it with a spoon to remove as much water as possible. Roughly chop and leave to cool a little. Dust a clean work surface with a little flour and roll out the pastry into a large square about the thickness of a pound coin. Cut the square of puff pastry into quarters to form 4 smaller squares. Mix the cooled spinach in a bowl with the lemon zest, cream cheese and chives, and season with a little salt and pepper. Place the 4 squares of pastry on the lined tray and divide the cream cheese mixture and cubed salmon between the 4 squares of pastry, placing it towards the edge of one corner of each of the squares. Use a pastry brush to brush the beaten egg around the edge of the pastry and then fold the opposite corner of pastry over the filling to form a triangular shape. Press the edges together with a fork and brush the tops with more egg wash. Sprinkle the tops of the pies with the seeds (if using) then bake in the oven for 15–20 minutes until golden brown and cooked through. Remove from the oven, let them cool a little (so the pies aren’t too hot for little hands) and serve.

CHOCOLATE, PEAR + OAT BREAKFAST TRAYBAKE

I N G R E D I E N TS

SERVES 3 – PREP 5MINS – COOK 20MINS • 2 x 410g tins of pear halves (in natural juice), drained • 2 small eggs • ½ tsp ground cinnamon • 1 tbsp cocoa powder • 150g Greek or natural yoghurt, plus extra to serve • 2 tbsp maple syrup • 130g porridge oats • 4 tsp sugar-free hazelnut and chocolate spread handful of chopped, toasted hazelnuts, to serve

METHOD Preheat the oven to 220°C (200°C fan/gas mark 7). Put half the tinned pear halves in a blender along with the eggs, cinnamon, cocoa powder, yoghurt and maple syrup and blend until smooth and combined. Mix the blended pear mixture with the oats and pour into a small baking dish roughly 23 x 17cm. Arrange the remaining pear halves in the dish, pushing them down into the mixture. Dot with the chocolate and hazelnut spread and bake in the oven for 20 minutes, or until set. Remove from the oven, sprinkle with the chopped hazelnuts and serve with a dollop of extra yoghurt on the side. 67 slim-magazine.com.au

CHARRED AUBERGINE WITH SPICED LAMB METHOD 1. Preheat the oven to 180°C. 2. Place the chopped pumpkin on a baking tray and roast for 40 minutes. 3. For the crust: add flour, butter, salt and pepper into a food processor with a small amount of water. Process slowly adding more water until it forms a solid ball. Cover the ball with a food wrap and place in the fridge for 20 minutes.

4. Place all of the filling ingredients in a large mixing bowl and stir well. 5. Grease a baking tin with butter.

INGREDIENTS - FILLING • 1 cup pumpkin, chopped • 6 cherry tomatoes, chopped • 4 mushrooms, chopped • Half a Spanish onion, chopped • 2 cups spinach leaves, chopped • Seaweed Salt and Pepper, to taste • 100g goat cheese or feta, chopped • 7 organic free-range eggs

6. Remove crust mixture from the fridge and place between two pieces of baking paper. Roll into a large circle with a rolling pin. Press the crust into the baking tin. 7. Pour the filling mixture straight onto the crust and place in the oven for 50 minutes or until the middle feels firm. 8. Leave to cool in the baking tin for 45 minutes, then remove from the tin and rest for a further 15 minutes before placing in the refrigerator. Delicious served hot or cold and perfect with a side salad!

METHOD 1. If you're adding the gelatin, combine it with 3 tbsp of cold water, set it aside for 2 minutes and allow it to ‘bloom’ or thicken. 2. Put all the ingredients into a high speed blender and blend on high for 1 minute to emulsify the mixture and create a creamy, frothy coffee. 3. Pour into a mug and enjoy immediately.

SERVES: 2 PREP: 10 MINS COOK TIME: 25 MINS • 1 zucchini, finely sliced • 3 bacon rashers (nitrate free) • 1 onion, diced • 1/2 chilli chopped plus extra for garnishing • 300g organic chicken livers • 2 tbsp coconut aminos or tamari • 2 garlic cloves, crushed • Seaweed Salt and Pepper, to taste • 3 cups baby spinach and rocket leaves • Coconut oil, butter or ghee for cooking

COCONUT LAMB CURRY WITH CAULIFLOWER RICE I N G R E D I E N TS

SERVES: 4 PREP: 15 MINS COOK TIME: 8 HRS • 700g lamb, diced • 3 cloves of garlic, chopped • 1 onion, diced • 3 large carrots, diced • 2 sticks of celery, chopped • 1 tsp Curry Powder • 1 tsp Turmeric Powder • 400ml coconut milk • 1 cup water • Seaweed Salt and Pepper, to taste INGREDIENTS – CAULIFLOWER RICE • 1 large cauliflower • Seaweed Salt and Pepper, to taste INGREDIENTS – GARNISH • Fresh coriander • Lime juice

METHOD

METHOD 1. Heat a large frying pan on the stove top and add some coconut oil, butter or ghee, allowing it to melt.

2. Add the zucchini slices to the pan, spreading them out evenly. Cook until golden brown on both sides. 3. Remove the zucchini using a spatula and place it into a bowl. 4. Now add the bacon to the frying pan and cook until golden and crispy.

5. Remove the bacon from the pan and add to the same bowl as the cooked zucchini. 6. Add a touch more oil, butter or ghee to the pan if needed. Add the onions, chilli and liver to the frying pan and cook for about 3-5 minutes until golden brown or until the liver is cooked to your liking. 7. Now add in the coconut aminos or tamari and garlic, stirring it all through. Allow it to cook for another minute. 8. Remove the pan from the heat and allow it to rest for a few minutes while you begin plating. 9. Place the leafy greens onto 2 plates, top with zucchini, crispy bacon, the liver mix, extra chilli (if desired) and season with salt and pepper to taste.

1. On a medium heat, lightly fry the lamb with the garlic and onion.

2. Transfer the meat into a slow cooker with all other curry ingredients and cook on high for 4 hours or low for 7-8 hours.

3. Cut the cauliflower heads and remove all stalks & process on a medium speed in a food processor until it looks like bread crumbs. 4. Heat the cauliflower, salt and pepper in a fry pan on a medium heat and cook for 15 - 20 minutes, stirring continuously until most of the moisture has evaporated. 5. Serve the curry with cauliflower rice, coriander and a squeeze of lime.

Author Kristina Ruth knows first-hand what many women face. “I know these red flags,” said Kristina. “If only we understood that they were precursors to many of the more serious toxic and abusive relationships, people would have had the chance to avoid these relationships completely. “I found there was so little information out there. If there was, a lot of victims may have been armed with the knowledge to avoid their toxic relationship. It’s incredible how few people realise these behaviours are warning bells and or are toxic behaviours and all of a sudden find themselves in a situation they don’t know how to get out of. “After speaking with many other women, I began compiling a guide-book called The Self-Preservation Guide. In it, I have not only explained the different types of abusive such as physical, emotional, and financial abuse, I’ve also listed out red flags.” Some common red flags all of us have seen such as: stalking, public shows of humiliation such as put downs, bouts of jealousy when you spend time with friends or family, and constant dominating behaviours that make you feel like you need to walk on eggshells, to the lesser known and talked about ones like; control masked to look like obsessive affection. “We as a community need to know none of these behaviours are acceptable, and all of them are classed as warning signs and the beginnings of what can very likely transform into an abusive relationship. With more education around these behaviours from the media for example, we can help our community become safer. We need to, because abusers will always be out there, we can however avoid them. “Prevention is always a better option and through education we can also help those who exhibit these behaviours to break the cycle,” said Kristina. “The Self-Preservation Guide is a practical tool and valuable resource to help people understand what a toxic relationship looks like, how to break free of that relationship and build a safe and happy life for themselves.”

Socials……… Somerset College Celebration of Mother’s Annual Event. The Somerset traditional Mother’s day event might have been delayed, but that didn’t mean it was any less elegant and impressive. 200 glamorous and sparkling Somerset Mothers packed the Great Hall to celebrate what a wonderful caring, supportive community Somerset enjoy. The day included a WildFlower Gin bar, comedian Fiona McGary and endless incredible flowers supplied by Yuen’s Markets. Guests tastebuds where delighted with sumptuous food by Jaybriell’s Lebanese Restaurant located in Mermaid, a treat for all. It’s a must go-to event on the Somerset College calendar!

Comedian, Amy Schumer has never been afraid to stand up for herself. One notable moment was her reaction when a fan altered a photo of her in a bikini to make her look thinner. The Instagrammer wrote “So I think Amy looks great already but man does she look better in my opinion in the second photo”. Schumer took to the ‘gram and commented “I disagree. I like how I really look. That’s my body. I love my body for being strong and healthy and sexy. I look like I'd give a good hug or have a drink with you. Thanks for sharing your thoughts as well. After giving birth to her second child, Miles, Chrissy Teigen posted a video to her Instagram story of her bare midriff in a bikini in Bali with the caption “mom bod alert!” then tweeted “Instagram is crazy. I think it’s awesome people have killer bodies and are proud to show them off (I really do!), but I know how hard it can be to forget what (for lack of a better word) regular ol’ bodies look like when everyone looks bonkers amazing. Also, I don’t really call this 'body confidence' because I’m not quite there yet. I’m still super insecure. I’m just happy that I can make anyone else out there feel better about themselves!”

In an appearance on “The Late Late Show With James Corden”, the star talked about being asked if she was pregnant because of her weight. She explained that when she isn't shooting, she enjoys her life and lets herself go. She said, “I heard Denzel Washington does this and I just want to believe it. He just enjoys his life and then pulls himself back together when he’s doing movies and looks amazing. In an interview, she talked about her post-baby body, saying “I was playing in Wimbledon, and I totally have a stomach. You know? It’s no secret. It is what it is. And I’m proud of my tummy. It pokes out a lot more than it used to, but I’m still coming back from having a baby. I just feel like this whole story about having a baby and then coming back two days after and looking better than before is not teaching the right way or the natural way or the believable way. Like maybe that happened to one person, but let me tell you, that didn’t happen to me.”

“There is no shame in gaining weight during pregnancy (or ever). There is no shame if it takes longer than you think it will to lose the weight (if you want to lose it at all).
