The Last Bite has grown alongside our company over the past five years and we look forward to the continued growth in the future. Thank you to our readers for the continued support. Ferraro Foods recently completed an agreement in September to collaborate with Casa Imports. Casa Imports carries one of the largest varieties of imported Italian foods available. They offer a complete line of fine quality products. Casa Imports focuses on serving street end users in Upstate New York and Northern PA. The agreement will allow Ferraro Foods to better service our Upstate New York customers. Read more on page 5. CASA IMPORTS JOINS THE FERRARO FOODS FAMILY Vito D’alessandro, John Fornino and Filippo Casamento came to America from Italy in the 1960s. They began Casa Imports with the mission to provide high quality, consistent products while providing a superior level of customer service. Since then, Casa Imports has grown to service five states in the Northeast with over 3,000 customers. Little Venice Restaurant opened in August of 1946 at Meatballs or Meat Logs a house on the corner of Court & Cherry streets. What is the most popular item on the menu? The Legendary House Made Tomato Sauce Thick, smooth and sweet, Little Venice’s House Made tomato sauce is unlike any other. The sauce recipe is a guarded family secret known only to 2 people. During the 6 plus decades that Little Venice has operated only 6 cooks have ever made the sauce. Rumors persist about the sauce recipe, but the truth is the correct recipe is not on the internet and the sauce does NOT contain applesauce. Little Venice’s sauce is not only enjoyed here in the restaurant, but all over the country. Little Venice started selling sauce in the 1940’s when customers would bring their own pot to the restaurant’s back door to purchase sauce to take home. Eventually, this practice evolved into the restaurant selling quarts of sauce to go and shipping sauce as well. What do you enjoy most about operating a restaurant? My favorite part of the restaurant business is the people. I enjoy working side by side with our staff and seeing our guests every day. We have had the pleasure of seeing generations of families both work here at the restaurant or as customers. The friendships we have developed and the celebrations we have been a part of over the years is the most rewarding part of the business. Aunt Carmella, the original cook, always made her meatballs long because she insisted the long shape allowed the meat to cook more evenly. Aunt Carmella didn’t like how round meatballs would burn on the outside before the middle cooked. To this day Little Venice meatballs are still made Aunt Carmella style, in the shape of a “meat log”. Pasta When ordering pasta at Little Venice it is as fresh as if you made it at home. Little Venice’s pasta dough is made daily, however your pasta is not rolled out until you order it. Spaghetti, Macaroni and Linguine are rolled out when you order using a hand crank pasta machine designed by owner Romeo Lisio. Raviolis are made each morning with the same house made dough and then filled, with a creamy ricotta cheese filling. Little Venice’s manicotti is unique in that it is made with house made crêpes instead of dough. The crepes are filled with a creamy ricotta filling. Lasagna is made of layers of our house made dough, house made meat logs, Italian sausage, ricotta cheese and of course our tomato sauce. Any advice for other Restaurant owners? Always serve a quality product that you are proud to put your name on. When costs go up do not sacrifice quality thinking your guests won’t notice. Maintain your product and brand integrity and raise your prices. The customer will not leave you over small price increases as long as they see your product as a good value. Never stop improving your business We come to work everyday looking for ways to improve the business. Whether its new recipes or menu items or operational improvements. We are constantly looking to be better than we were yesterday. This approach keeps our guests coming back, but it also creates an environment where people want to work, and you are challenged every day.

FRENCH FRY 101
French fries can play a profitable role on menus when done right. They can be used to offset other costs in your product mix because of their high profit margin. For example, the average 8 oz. of fries at $0.50 is able to give you a potential profit of $3.49 if sold at $3.99. The purchase of premium fries does not necessarily mean lower profit margins. Premium fries are often longer in size and contain high solids-upholding its shape for a longer period of time. This results in less product needed to fill the dish or container it is put in. Shorter fries typically take more to fill a container, and can require more oil.
WHAT MAKES A GREAT FRY?
What separates an okay French fry from a great one is its texture, length and solid contents. Ideally your fries should have a crunchy exterior and a light, fluffy interior. When eating a serving of French fries, the last fry should always hold its form. Imagine eating a burger with a side of fries. Fries are either eaten first or last- so be sure to leave a lasting impression. Consistency is also key to great fries (think about McDonald’s fries). Keeping consistency in your preparation and cooking process, reduces quality errors.

The best fries for a to-go menu are thicker, cut 3/8’’ or wedges. This is because the slimmer cut fries do not maintain their heat as well. Also, be sure the fries you are packaging are a coated product to avoid sogginess and a buildup of moisture. Bottom line is that the quality of your fries matter and make a lasting impression on your customers–because they may be the last bites they eat of their meal–whether they dined in or got their meal to-go. Sales Associate: Ralph Preziosi Jr Interviewed: Joe Abate History: Joe Abate has been in the pizza business for over 35 years since his father opened doors to his pizzeria in 1982, in East Meadow, NY. It was here at a young age that Joe learned the art of pizza making and fell in love with it. Joe’s love for the pizza business eventually led him to starting his own restaurant on Long Island. In 2006, Joe made the decision to move to North Carolina because of the great opportunity and demand for high quality, New York-style pizza. In 2012, Joe opened Mia Famiglia with the help of his wife, Sandra. Joe can’t express his appreciation for her enough. “Sandra is the brains behind the operation” he says. Since its opening, Mia Famiglia has become a staple in its community. What is the most popular item on the menu? The most popular item on his menu is his cheese pizza. He attributes the popularity of his pies to his days mastering the art of the NY-style pie back in Long Island, arguably the pizza capital of the world. What sets your restaurant apart from the competition? Joe says that the quality and freshness of his food sets him apart from the others, however, his dedication to the community is what really takes it a step further to stand out among the local crowd. Joe proudly lends his support and help to the VFW, police force and the community as a whole. He has received an award from the town of Indian Trail for providing free lunches for students during COVID, as well as an award from the Union County Sheriff’s department for his dedicated support. Why work with Ferraro Foods? Joe has a long history using Ferraro Foods, as his father had used them back in Long Island with his restaurant. When he opened his pizzeria in North Carolina, he decided to use a distributor he had an existing relationship with. He says both his salesmen back in NY and his current one have been great to work with over the years. Any advice for other Restaurant owners? “If you have a passion and dedication to owning a restaurant, it is a great business to have.”

DECORATIONS OF COURSE! Brighten up your space and set a warm ambiance with some string lights and decorative signage. You may choose to use generic “Happy Holidays” decorations to be as inclusive as possible or highlight several popular holidays among your customers.
DESSERT SPECIALS People tend to indulge in sweet treats more during the season, so offer limited time desserts in addition to your usual options. Offer desserts like tiramisu, cheesecake, cannoli, cookies, and more. Don’t forget to let them know they can take it to-go! We offer to-go single serve desserts, such as cheesecakes and tiramisu.
GIVE BACK TO YOUR COMMUNITY Communicate to your customers that their extra change goes towards a particular charity in your area. Lastly, promote your certificates by giving them the offer that for every 50 dollars you spend on certificates, you’ll receive 5 dollars off. People love supporting local businesses and this is the perfect way for them to do this.
PROMOTE YOUR HOLIDAY CHEER Let your customers know what you’re up to on social media. Post a photo of your decorated dining area or raise awareness of your gift certificates. You could also post signage around your restaurant. Finally, don’t forget to send out a thoughtful happy holidays message in a post on your social media channels.

History: Genna Pizza opened its doors in 2013 offering Melbourne locals and tourists the most authentic New York dining experience. Genna Pizza started off from a small 1200 square foot location and now has expanded into a larger dining area to better serve customers. The pizza business is a tradition for Charles’ family; they have been in the business for 24 years. There are only 2 things that matter to Charlie – his family and his restaurant. This shows through Genna Pizza’s family-oriented atmosphere. His website reads “No glossy corporate backing, no fancy pants pies, no pretentious nonsense, and no gimmicky budget pizza either. We are tried and true – the real deal.” What sets Genna apart from the competition? The pizzeria makes their bread fresh by hand daily and every dish is made from scratch. Charlie says “we only buy the most premium ingredients.” Gemma Pizza offers 36 unique specialty pies. This includes a Philly Cheesesteak pie and a Mac and Cheese Pie. Their specialty “Gemma” Pie has Mozzarella, pepperoni, mushrooms, onions, green peppers, olives, ground beef, ham, and Italian sausage. The most popular item on his menu is pizza of course! Manuel says how there has been many requests for pepperoni, mushroom and sausage pizza recently. Vegetable pizza orders have been in higher demand as well, especially spinach on pizza. Besides pizza, his veal and chicken parmigiana and chicken marsala have always been a hit, especially among his most loyal and frequent patrons. What sets your restaurant apart from the competition? What sets his restaurant apart is how good the food is. Manual says Caruso’s has been recognized among Sussex County competitions as one of the top 4 places to get pizza each year. History:
Prior to opening Mondo Keith Vibert worked for a number of years at Naples Pizza in Farmington CT (which he highly recommends if you’re ever in Central CT). “The owner of Naples, Kurt Kruczek allowed me to be a minority partner in Mondo when it first opened, before later in 2013 selling and financing the sale of the business to me. I owe Kurt a lot and take great pride in creating a pizza and experience here in Middletown that is (hopefully) on par with what he offers in Farmington.” Keith opened his doors to Mondo in late September 2010. Mondo specializes in New York-Style thin crust pizza cooked in a brick oven. Mondo takes pride in preparing many other menu items, all prepared fresh in house. Besides their amazing food selection, Mondo has a great and ever changing beer and wine selection to complement their food. An amazing decision Mondo made is to feature products from other local businesses to support them, such as selling cupcakes from a local bakery.
What is the most popular item on the menu?
Keith says, “This is a very boring answer but it’s Cheese Pizza! Other menu items that get a lot of attention are our Toscano salad and the delicious polenta croutons we offer with it.” He adds that people enjoy his seasonal items when they return on his menu such as Brussel Sprout Pies containing Roasted Brussels, Sopressata, Red Onion, Garlic Cream, Asiago, as well as their Heirloom Tomato Salad containing House focaccia, Heirloom Tomatoes, Burrata and house made red wine vinaigrette.
What sets your restaurant apart from the competition?
“Hopefully it’s our customer service! The goal for me as a restaurant owner is to of course offer great food that makes people want to come back for but without great customer service it does not matter how good your food is! Like all things in life it’s the people and personal interactions that stick with you. So yes, make a great product but you have to have great people too!” Keith says.
Why work with Napoli Foods?
“We work with Napoli for the same reasons that I hope people do business with me… great ingredients and great customer service. Our original salesperson, Marco Marcelo, was always there whenever I needed anything, full stop. Marco made my life easier in a million ways and even after his promotion, which we were very happy to see him get because he deserved it. Marco is still there for us should the need arise! Our (current) salesperson, Lee Kopel has picked up where Marco left off. Having worked with Napoli for about 6 years now it’s clear to me that they understand customer service,” Keith replies.
Any advice for other restaurant owners?
“Sure, and I struggle with this a lot. When you’re not at work, don’t be at work! This is an incredibly hard business to be in and I used to leave work and go home and be looking at my cameras a few times an hour or be checking the numbers to see what type of night we were having and that was all at the expense of being present with my family.” He adds that “Obviously, to make a restaurant work you will need to work long, weird hours but when you do manage to have some free time trust your people to run it the right way.” He concludes by saying that this is all necessary for an important work/life balance.

Include hours of operation in this section as well. It is recommended that your address and phone number are visible on every page. An extra option is to include an email to inquire about catering events or to include a link to book a reservation. Mobile responsiveness A difficult mobile site to navigate can lose you customers. Make sure your layout is not too crowded and as straight forward as possible. Features such as sticky navigation and short drop-down menus, can make it an easier mobile experience. Menu that is easy to navigate Stay away from using PDFs or a file a customer needs to click on. PDFs are difficult to update and not so mobile friendly. Giving people no other option than to download a PDF of your menu instead of listing your menu directly on the site will turn many people away out of frustration. INGREDIENTS Cook Time: 20 mins.
Pound veal cutlets to 1/8” thickness, if necessary. Sprinkle cutlets with pepper. Sprinkle sliced sage on top of cutlets; cover with prosciutto. Cover cutlets with a piece of parchment or waxed paper; with hand, gently press prosciutto into the cutlets. Heat 1/2 tablespoon butter in large nonstick skillet over medium heat until melted. Place 2 or 3 cutlets in skillet, prosciutto side down. Cook 2 to 3 minutes or until veal is cooked through, turning once so that prosciutto is on top. Remove cutlets; keep warm. Repeat twice to cook remaining cutlets. Add wine to skillet; increase heat to medium-high. Cook and stir until slightly syrupy. Stir in any juices released from cutlets; remove from heat. Stir in 1 tablespoon room temperature butter and minced sage. Spoon sauce over cutlets. Top with tomato and cheese. Serve immediately.

History: Before opening Pepperoni’s Pizza in July 2020, Ogun had worked in the pizzeria business for 5 years as well as had experience working in his family’s diner in Cinnaminson, NJ. He says despite the pandemic being very relevant in July of 2020, he saw the opportunity in the takeout space, especially among pizzerias. “Takeout was king then,” he says. Ogun makes his dough fresh daily and all ingredients used are high quality. Pepperoni’s Pizza enjoys being a positive influence within their community. Ogun says that around the time they opened they decided to raise funds to donate a canine to the local police department. INGREDIENTS 1 lb mild Italian sausage, casings removed 1/2 cup sliced pepperoni, divided 1/2 green bell pepper, diced 1/2 yellow onion, diced 4 cloves garlic, minced 24 oz marinara sauce 1/2 tsp dried oregano 1/4 tsp dried basil 3 cups water 1 lb dry, uncooked short cut pasta 2 cups mozzarella cheese, divided salt and pepper, to taste fresh minced parsley or basil, for garnish
INSTRUCTIONS 1. Cut 1/2 the pepperoni slices into 4 pieces, set aside. 2. Heat a deep pot over MED HIGH heat. Add drizzle of olive oil and brown Italian sausage, crumbling it with a wooden spoon or potato masher as it cooks, about 4-5 minutes. Drain excess grease and return to pan. 3. Add cut pepperoni pieces, diced onion, and diced green pepper, and cook until softened, about 3 minutes. Add garlic and cook another 30 seconds, or until fragrant. 4. Stir in marinara sauce, oregano and basil. Add water, stir and bring to a boil over HIGH heat. When boiling, add pasta, stir, reduce to a simmer, cover with lid and simmer about 12-15 minutes, until pasta is tender and most of the liquid is gone. 5.
