Cooking with Bee

Yes, my dear Gimmies, those are the wise words of our dear Dean Martin’s classic song, “Let It Snow!” and honestly, what is better than cuddling up on a cold winter’s evening with your loved ones, a good selection of movies and an even better selection of food!

The theme for this term’s cooking With Bee is “A Winter’s Movie Night!” (Special thanks to my cojournalist Leandrie for this great idea).
While playing around in my humble kitchen, I started throwing ingredients into a dish that looked like a pizza but kind of wasn’t? After much research, it had come to my attention that this delicious dish was actually called Quesadillas and they certainly were one for the books.
In celebration of making it through half the year, I decided to make Nutella stuffed flapjacks as well and I can honestly say that that has been the best decision that I’ve made all term.
This article would not have been complete if I didn’t give a special shout-out to my photographer for the past two years, Gaby Jacobs, for being my co-chef in the kitchen and being there with me between all the flops and disasters in the kitchen. You have truly made doing these articles worthwhile to me and I appreciate all the effort that you have put into my photos for the last two years.
But the show must go on and I’m wishing all of you guys a blessed and happy winter’s holidays.
Pizza Quesadillas
Pack of tortillas Butter for melting
Choice of protein (I used chicken)
Pizza sauce
Mozzarella cheese
Cheddar cheese
1. Heat a saucepan to medium heat temperature
2. Melt a teaspoon of butter in the microwave, coat one side of the tortilla with the butter and place in pan (buttered side faced down)
3. Add the mozzarella cheese
4. Add the cheddar cheese
5. Add your choice of protein
6. Add a second layer of mozzarella cheese
7. Add a second layer of cheddar
8. Coat one side of a tortilla with butter and place it on top of the rest of the quesadilla and flip towards the other side.
Nutella Flapjacks
1 cup of self-raising flour
2 tbsp. castor sugar
1 egg lightly beaten
1/2 cup milk
1 tsp vanilla essence
Nutella
Oil
1. Make palm wide circles of Nutella, place on cling wrap and allow to set until firm.
2. Sift flour and sugar into a mixing bowl. Add the egg, milk and vanilla essence.
3. Beat with a fork until smooth.
4. Brush a non-stick pan with oil and allow to heat until it has reached medium temperature.
5. When the pan is hot, spread thin spoonful’s of the mixture into the pan
6. Add the Nutella “circles” in the centre.
7. Add another spoonful of mixture to cover the Nutella.
8. Cook until golden brown on both sides.
