THE CLOCK ON MOSTAR’S CLOCK TOWER SHOWS THE CORRECT TIME AGAIN
After two decades, the hands on the clock of Mostar’s Clock Tower show the correct time again. The recognizable clock tower was restored in 1999, but the clock had not been functioning since 2000, and fixing its mechanism was not an easy task. The clock tower was constructed over 380 years ago during the Ottoman period out of crushed stone, and it has been declared a National Monument of Bosnia and Herzegovina. The famous travel writer Evliya Celebi wrote about how you could hear the sound of its bell even a three-hour-walk away.

BOSANSKOHERCEGOVAČKOJ JAVNOSTI POZNATA JE PO SVOM BRITKOM UMU, ODVAŽNOSTI I NESALOMLJIVOM BORBENOM DUHU U SVAKOJ ŽIVOTNOJ EPIZODI. KNJIŽEVNICA I NOVINARKA POČETKOM JANUARA UPLOVILA JE U DIPLOMATIJU PREUZEVŠI DUŽNOST AMBASADORICE BIH U ČEŠKOJ REPUBLICI. IZ PRAGA GOVORI ZA FURAJ.BA MAGAZIN
Č
eška Republika slovi za is krenog i stabilnog prija telja BiH.
IZGRADNJA POZITIVNOG IMIDŽA S kakvom vizijom ste preuzeli funkciju ambasadorice? - Imidž BiH na globalnoj razini još je opterećen ratnim asocijacijama, etničkim podjelama, nestabilnošću i nefunkcionalnošću države. S jedne strane su iznimni prirodni, kulturni, historijski, ljudski i drugi potencijali, a s druge strane, zemlja zakočena brojnim predrasudama i negativnim konotacijama.
Danas to nije potrebno.
lom svijetu i to uz minimalni trošak.
No, sve je proteklo izvrsno.
I OVO JE MOJ DOM Nedostaje li Vam Bosna i Vaša Hercegovina? S druge strane, nedostaje mi moj Trebižat, sarajevski Alifakovac, gdje sam živjela prije odlaska u Prag, nedostaje mi boja Neretve.
INTERVJU / INTERVIEW
MARTINA MLINAREVIĆ, Ambassador of BiH in the Czech Republic
A New Face
of Modern Diplomacy THE BOSNIAN-HERZEGOVINIAN PUBLIC KNOWS HER FOR HER SHARP MIND, COURAGE, AND THE UNBREAKABLE FIGHTING SPIRIT IN EVERY LIFE EPISODE. A WRITER AND JOURNALIST, IN EARLY JANUARY SHE EMBARKED ON DIPLOMACY BY ASSUMING THE DUTY OF BIH’S AMBASSADOR IN THE CZECH REPUBLIC. SHE SPEAKS FOR FURAJ.BA MAGAZINE FROM PRAGUE. Interviewed by: Semra Hodžić Photographs: Aida Redžepagić
T
he Czech Republic is regarded as a true and stable friend of BiH. The connections date from the medieval times, but a special relationship was developed in early nineties, when the Czech and Slovak Federative Republic recognized BiH’s independence soon after the referendum, thanks to their president Václav Havel. The Czech Republic took many actions to help BiH’s population during the war, raising the awareness of the situation in BiH and developing solidarity, and president Havel was the first foreign president who visited BiH after the war. Today’s Czech Republic fully supports BiH’s Euro-Atlantic integration, and can be a great mentor for BiH on its path. Martina Mlinarević, the new ambassador in the Czech Republic tells us all this at the very beginning of our interview. 18
DEVELOPMENT OF A POSITIVE IMAGE What was your vision when you assumed the office as Ambassador? - The BiH’s global image is still burdened by war associations, ethnic divisions, instability and dysfunctionality of the state. On the one hand, there are extraordinary natural, cultural, historical and other potentials, and on the other, the country is blocked by numerous prejudices and negative connotations. My vision is to work on its positive image in all segments. In the past, a country had to be big in order to disseminate information and influence. Today, it is not necessary. With new technologies, even the smallest or the poorest country can be present and its voice can be heard in the world, with minimal costs. Modern diplomacy takes place on social networks,
through everyday branding of the country, a positive PR, high-quality ideas and actions. I think that primary forms of cooperation with the Czech Republic can be established through an excellent cultural, educational, tourist, and economic potentials. I have many plans that we already implement. You took the office in the Czech Republic in difficult times, actually, just before the beginning of the coronavirus pandemic. However, you have been very active all the time, especially in helping students from BiH. As you said yourself, you wanted to be there for our citizens, to be their friend. What images will you remember forever from this period? - Everything was like a movie. I have taken office in the end of January and received two high-ranking visits of our officials in the first ten
days: the first one by the Presidency member, Mr. Džaferović when he was on his way to Auschwitz, and the second visit was related to the big summit of the Visegrad group and Western Balkans countries that I attended with Minister Bisera Turković, which is a challenge even for experienced diplomats, let alone a newcomer in diplomacy like myself. But everything went very well. I must emphasize that the Embassy staff in Prague consists of excellent individuals who make an outstanding and well attuned team. It is extremely easy for me to work with people who take their jobs responsibly and professionally, in order to
achieve optimal results together. And then the pandemic came, and the world as we know it turned around overnight. Both experienced and new, old and young diplomats were in the same position at that moment, facing such a situation for the first time. We worked all day, several weekends in a row. Our telephones were available 24 hours a day, and because of my activities on social networks, our citizens from different countries got in touch with me. Although the Ministry of Foreign Affairs is sometimes criticized by the media, I think it is important to emphasize and mention the importance of all people in the Ministry’s crisis
EXCELLENT CONDITIONS FOR UNIVERSITY STUDIES “There are already more than one hundred BiH students in the Czech Republic. During university studies, our students have the same status like Czech students. They can live in the student dormitory, eat in the canteen, get a cheaper ticket for public transportation… Students with government scholarships also receive a monthly scholarship in the amount of approximately BAM 1,000. 19
INTERVJU / INTERVIEW
staff and our embassies around the world, who did impossible things to find proper solutions for our people who were stuck somewhere on the globe at the most difficult moment. We in Prague had a specific situation because I introduced myself as a friend, and not a diplomat (laughs). I say specific, because colleagues were warning me that I could not do this job with my heart. However, I think heart was the only right measure in the times behind us. Those were extremely emotional situations, and one could not leave their feelings aside. People have kept calling us in recent months to express their gratitude, but I do not think that we did anything heroic, but only a common thing - we did our job. I am particularly fond of students from BiH who were in the Czech Republic when the pandemic broke out, alone, without their parents, and tested positive for Covid-19. It is a friendship for life. You have announced that your work will be transparent, and that you will donate a portion of your salary for some BiH institutions, such as the Memorial Centre in PotoÄ?ari. What 20
other institutions you plan to support? - At the very beginning of my term in office, I said I would try to follow all the postulates of modern diplomacy, like embassies of western countries do everywhere in the world, including in Bosnia and
Patriotism is not only a flag one carries to a football match, but constant awareness of our homeland Herzegovina. Today’s diplomacy is open, transparent and intense. The geopolitical picture of the world has changed completely in recent years, international relations have not functioned in secrecy for decades, but in the spotlight, in front of the cameras. Diplomatic profession became a measurable effort, and not only a ceremonial activity. During my term in office, I will reach out to citizens of BiH, both in the country, and in the Czech Republic. This is crucial for cooperation, in order to correct
and improve what has been done and planned. In that regard, I decided to issue a permanent payment order and deduct a portion of my salary for the things I personally deem important - the Memorial Centre PotoÄ?ari, and something I know from experience - cancer. I believe that I owe this small part to the citizens of our country, because they are the ones who pay me eventually, and the only ones I should report to.
BIH - AN INVITING DESTINATION What do you think is the greatest wealth of our country? - The inexhaustible natural potentials from Sava to Neum, from Una to Drina. The unforgettable historical heritage. Our cynical and humorous spirit that survived so many troubles, and still finds the time and reason for jokes and laugh. This spirit is also our biggest enemy, completely deprived of any responsibility for the country. Patriotism is not only a flag one carries to a football match, but constant awareness of our homeland.
What three destinations would you recommend to tourists who want to visit BiH? - It is a very difficult question, but a quick answer would be: The Srebrenik Fortress, Una River and Trebinje.
on a pedestal in the Czech Republic, because all of them ride bikes, they spend so much time outside, on river docks, in the countless parks in Prague, each more beautiful than the other. Prague is a special dimension from bikers’ perspective.
Have you already started a tour around the Czech Republic, and have you tried to find a whiff of your homeland there?
THIS IS MY HOME, TOO
- The first month of my stay in the Czech Republic was extremely intense at work, and mostly focused on Prague, and Brno. And then the pandemic time came… From the moment they allowed residents to travel throughout the Czech Republic, I visited Olomouc, Kutná Hora, Karlovy Vary, the Vltava meander. Words are not enough to express my thrill. The Czech Republic is a wonderful country to live in. It was proclaimed the second-best country in the world for expats to live and work. The Czechs appreciate their culture, natural beauties, what has been given and left to them, in an incredible way. I also bought a bicycle, which has been almost put
- I experienced many difficulties in recent years, and I have found my personal peace in Prague. I am full of enthusiasm for work, surrounded by extraordinary people who initiate excellent things, and this environment suits me perfectly. On the other hand, I miss my Trebižat, Alifakovac in Sarajevo, where I had lived before I came to Prague, I miss the colour of the Neretva river. But then, you go down to Vltava, take a walk across the Charles Bridge to the Prague Castle, take a look at the golden roofs of Prague, and you realize – this is home, too. In a different way, but still a beautiful home. I am happy to be in Prague of all places. The community of people from BiH

here includes phenomenal personalities. This is our only “diaspora” – oh, I really don’t like this word – which is not divided on ethnic grounds, where there are no three different associations or more. They are all together in the “Lastavica” Association, and they have implemented excellent projects for years. This is the true BiH. Where do you like to travel? Have you already experienced your dream travel? - After I personally faced cancer, my whole life has been a great journey. I promised myself – from now on, only new landscapes, I will not think about tomorrow, and I will spend as much time as I can with people I love the most. I often say that people suffer from various addictions. I have always been addicted to kilometres and airports. I had some beautiful trips that I described in my books. No, I cannot decide if it was the morning on the Bosporus, the night in the Egyptian desert, the spring in Amsterdam, or Christmas in New York. Maybe Mississippi, after all (laughs). 21

najljepših sevdalinki KRAJ TANANA ŠADRVANA
JEDAN OD NAJVEĆIH PISACA SVJETSKE I EVROPSKE KNJIŽEVNOSTI, NJEMAČKI PJESNIK HEINRICH HEINE POKLONIO JE BIH JEDNU OD NAJLJEPŠIH SEVDALINKI - “KRAJ TANANA ŠADRVANA”
P

he song was originally written under the title “Der Asra”, and it was translated to Bosnian by writer Safvet Bey Bašagić, but it has also been translated by Aleksa Šantić, Vladimir Nazor and Dobriša Cesarić. It is assumed that the song was written in 1845 or 1846 in Paris, where Heine lived from 1831. He saw the Orient as a place of happiness and sadness, simple and sensitive or refined sentiments, hence the song speaks of a tragic love.
LEGEND OF AN OLD TRIBE There is an old legend that speaks of an old tribe in Yemen which was called Azra (virgin). If the young men from that tribe were not permitted to or were unable to be with their beloved, they went into the desert or to war, so that they could die while in love, as they did not wish to live without love. This legend left quite an impression on Heinrich Heine and inspired him
to write the song titled Azra. On the Arabian Peninsula, there is a province called Asir, and on the southwest of Saudi Arabia, the name of this province means “unreachable”.
PERFORMERS OF THE SEVDALINKA Himzo Polovina and Zaim Imamović are considered to be the best performers of this famous sevdalinka, but it has also been sung by other stars and orchestras, like Hanka Paldum, Amira Medunjanin, Zvonko Bogdan, Emina Zečaj, Ibrica Jusić, Sarajevo Jazz Guerilla, Damir Imamović... Hanka Paldum is the only one that sang it in German. An interesting fact is that the song was also adapted by Branimir Štulić, who named his cult band “Azra” after this song. The lyrics of this sevdalinka can also be found in the song “Sa tvojih usana” (“From your lips”) by Crvena Jabuka.

As time went on the slave became paler and paler. One day Sultan’s daughter asked him: “Tell us, slave, where do you come from? To which tribe do you belong?” “My name is Al Muhammad and I am from Azra tribe Those who lose their heads for love and die when they fall in love.” Translated by Aleksa Šantić 23

AMELIA YANI, ambasadorica Republike Indonezije u BiH
Pola mog srca ostaje u BiH “VEOMA SAM TUŽNA. ZBLIŽILA SAM SE SA SVIMA. LJUDI U BIH SU TOLIKO TOPLI. NIJE NIMALO JEDNOSTAVNO. ALI I POVRATAK KUĆI JE NEŠTO ČEMU SE ČOVJEK RADUJE”, RIJEČI SU AMELIE YANI UOČI KRAJA AMBASADORSKOG MANDATA U BIH Razgovarala: Elma Zećo
“U svom životu prošla sam dugo i izvanredno putovanje.
I mi, Indonežani, imali smo tešku prošlost. No, doći će bolje vrijeme. Svi moji prijatelji u Indoneziji me čekaju pitajući se gdje ću otići. Kada odem u penziju, moje odredište će biti Bali. Ljudi na Baliju su drugačiji, izuzetno otvo25

SARAJEVO, POČETNA TAČKA “Sarajevo, glavni grad BiH, dalo mi je razumijevanje važnog grada, naučila sam mnogo o historiji grada tokom rata i sada u miru. Tamo imam mnogo prijatelja. Zovu me i čak mi nude zemlju na poklon. Bili ste veoma aktivni kao ambasadorica u BiH. Na što ste posebno ponosni? - Angažirala sam se, jer mi se, zaista, svidjelo ovo odredište. Njegovi ljudi.
Indoneziji.
Bosna i Hercegovina nudi čudesan osjećaj bliskosti. Postoji li nešto što ste naučili živeći u BiH? - Naravno, mnogo toga.
AMELIA YANI, Ambassador of Indonesia to BiH
Half of My Heart Stays in BiH “I AM VERY SAD. I GOT CLOSE TO EVERYONE. PEOPLE IN BIH ARE SO WARM. IT IS NOT SIMPLE AT ALL. BUT ONE LOOKS FORWARD TO GOING BACK HOME AS WELL”, AMELIA YANI SAYS, AS HER AMBASSADOR’S TERM IN BIH IS APPROACHING TO AN END Interviewed by: Elma Zećo

INTERVJU / INTERVIEW
“A long and extraordinary journey is behind me. At times, pain, sorrow and happiness were its parts, and I am so grateful because I was still able to obtain a good education during a difficult period in my country, supported by my parents”. This is the opening part of the farewell letter of Amelia Yani, Ambassador of Indonesia to BiH. Traveling around BiH, whose beauties she describes as the “heaven on Earth”, she was received warmly, as a friend of our country, so that sometimes she was unable to tell whether she was in Bosnia or Indonesia. She worked hard on business, educational, and friendly cooperation between the two countries – last year only, exports from Indonesia to BiH increased by 300%. In order to promote potentials and beauties of the largest insular country in the world, she organized visits thanks to which the Furaj.ba team visited Indonesia twice, learning about its most popular destinations – Bali, Komodo Archipelagos, Labu28
an Bajo, Jakarta, Java, Sumatra… Step by step, Indonesia became familiar to peoples of BiH, among whom Amelia found great friends. “Half of my heart will stay here, in Bosnia and Herzegovina, the most beautiful country in the world,” the ambassador stresses at the end of her four-year term, not hiding her emotions at the very beginning of the interview for Furaj.ba.
MY BOOK ABOUT BIH How sad you are to be leaving and, on the other hand, how happy you are to be going back home? - I am very sad. I got close to everyone. People in BiH are so warm. It is not simple at all. But one looks forward to going back home as well. I go back to my habitat. I plan to write a very precious book about BiH, which will describe how beautiful it is here. Before I came here, people in Indonesia had associated BiH with the war. Some even tried to talk me out of coming, believing that things are too quiet, and
that there is nothing here. However, I opened up to people in BiH. They have accepted me as one of their own. Through my experiences, I realized how similar we are. We, Indonesians also had a difficult past. We share the same feelings, but we must reconcile. This is my goal, and this is what I do with my colleagues in Indonesia, where 714 ethnic groups live. We have our problems, just like BiH. But better times will come. During Your career, you worked for the United Nations, you were a farmer, active in politics... What will you do once your term in BiH expires? - I don’t know, but privately, I will go back to my life as a farmer, and writing. I am very good at cooking, baking cakes. I have two hands; I will use them... I write every day. As soon as I get home, I will write a book about BiH and organize promotion at a nice place. You used to live in Jakarta, and then in the village of Bawuk, far away from the city noise for 21 years. Where will you live now?
SARAJEVO, THE STARTING POINT “Sarajevo, the capital of BiH gave me an insight into an important city. I learned a lot about the wartime history of the city, and about its current peacetime circumstances. The city has 12,000 bakeries that provide for its population, beautiful coffee shops, restaurants, the Baščaršija, trams, buses, kiosks, old and new buildings located next to one another, friends – from ambassadors, parliamentarians, Presidency members… My journey throughout BiH began in Sarajevo.” Bisera Turković and Amelia Yani - My father is from Central Java, and my mom from Bali. All my friends in Indonesia wait for me, wondering where I will go. When I retire, Bali will be my destination. People in Bali are different, extremely open, willing to accept everyone exactly as they are. I have many friends there. They call me, and they even offer to give me some land. You were very active as the ambassador in BiH. What are you particularly proud of? - I have been very engaged, because I really like this destination. Its people. When people accept you, everything you do seems good. Still, three places are particularly close to my heart. The first one is Srebrenica, where I went 17 times in different ways, alone, with a delegation, with my family... The second one is Mostar, we cooperated with the city a lot. There is a museum there, and I will go to say goodbye. Representatives of the museum gave me Tito’s old books. My father knew him very well. I will put everything they gave
me from Tito’s era to my father Ahmad Yani’s museum in Jakarta (author’s comment: a revolution hero in Indonesia). There is also Brčko, whose delegation I took to visit Indonesia. We were in Bali, Java and Sumatra. I will personally say goodbye to them, too.
A STRANGE SENSE OF CLOSENESS What will you tell Indonesians who want to visit BiH as tourists? - Five or six Indonesian journalists already wrote about BiH. They are stunned with what they have seen. Four students of the Faculty of Medicine of the University of Ahmad Yani who had stayed in Zenica and Tuzla for a month cried when they had to go home. They liked everything, especially the relationship between professors and fellow students. Bosnia and Herzegovina offers an amazing sense of closeness. Is there anything you learned living in BiH?
- Of course, a lot. For example, I learned how to be practical with family land in the countryside, how the entire family can have a home there, and enjoy its fruits. People build houses with several floors for family members, in order to keep more land for cultivation, food production, for life. Land in Indonesia is very fertile. Wherever you throw seeds, they will bear fruits. Here, people must work hard on their land. I think that, if you want to live a happy and prosperous life, your land is the right place for that. What is your wish for the future? - I have many wishes, but I would like the cooperation between BiH and Indonesia to flourish, and there is no doubt that my book will encourage it. The Brčko District and the City of Magaleng signed the town twinning agreement, and Zenica and Bandung will do the same. It will open the door to numerous student exchange programs. I think I have lived up to my task in BiH, which included trade, tourism and education. 29

Letjelica će ostati stabilna čak i u uslovima jakog vjetra i jakih termičkih stubova.

Sarajevo Excursions with the Wind in Your Hair
IN THE CENTURIES-OLD HISTORY OF B&H, ITS CAPITAL HAS BEEN KNOWN AS A PHENOMENON, BECAUSE OF THE UNUSUAL CULTURAL FUSION, WHICH IS WHY IT IS OFTEN REFERRED TO AS A „EUROPEAN JERUSALEM“ Sarajevo has preserved the remains of the first Illyrian settlements and traces of medieval life, the Ottoman and Austro-Hungarian buildings have made it one of the prettiest cities of the world, you cannot miss the marks of former Yugoslav architecture, and since it started rising like a phoenix from the ashes from the war – modern buildings and towers have been built. In order to experience it in its full glory and size, we recommend that you try seeing it in a completely different way – try some of the excursions that clever Sarajevans offer:
PANORAMIC SIGHTSEEING OF SARAJEVO BY AUTOGYRO Seeing Sarajevo from a height of 300 meters or 3 kilometers from an open aircraft is an experience that will remain with you forever. The expansive and fascinating landscapes in front of you and beneath 32
you, and a heart beating loudly from excitement will contribute to your enjoyment of every kilometer of the autogyro ride; the autogyro is actually an open aircraft with two seats. Forget your fear, as the autogyro is the safest aircraft in the world. What makes it so safe is that the rotor of the autogyro is always on autorotation, i.e. it is not powered by a motor, but by air flow, so the autogyro can continue to fly and land safely, even in cases when the motor stops working. Actually, each landing by autogyro is done without using the motor, i.e. with the motor in neutral, and in the event that the motor stopped working, the autogyro would land safely, with the same speed and ease as if the motor was working. The aircraft remains stable even in strong winds and thermal columns. If you decide to experience the city in a completely different way, the service of panoramic sightseeing is
offered by private airline FUNFLY. Their autogyro takes off from the Sportski Aerodrom (Sports Airport) in Visoko with a professional pilot.

HORSE-DRAWN CARRIAGE FROM VELIKA ALEJA TO VRELO BOSNE Old horse-drawn carriages have been driving from Velika Aleja (Great Lane) at Ilidža to the very spring of Vrelo Bosne for the last hundred years – the ideal place to escape the noise of the city, because of the invigorating clear air, pleasant climate and beautiful landscape, which probably makes it the prettiest place in the city. Even though you can reach Vrelo Bosne by car or on foot, you must not miss a ride in the horse-drawn

n just a half-hour drive from Sarajevo, an hour and a half walk from Pino Nature Hotel or a two-hour walk from the cable car exit station, you can reach this lodge; from the wooden terrace of the lodge, there is a surreal view of the city and fourteen surrounding mountains of Via Dinarica: Jahorina, Zelengora, Velež, Treskavica, Visočica, Bjelašnica, Igman, Prenj, Čvrsnica, Cincar, Vranica, Bitovnja, Vlašić and Ozren. The owner, Primož Juvan, selected a location that is not reachable by car, wanting his guests to have a break from noise. Park your wheels near Napretkov Dom and go for a hike, following the signs. It is an hour and a half walk to the lodge. Far enough, but worth every step. When you climb to the top of the little hill through thick pine via the marked dirt path, you will find an unforgettable view before you. There is a wooden hut there with large windowpanes on the protruding part of the mountain, and a large terrace that looks as if it is being offered to the sun, where you feel as if you are floating above the city. The lodge got its name from the legendary compatriot of the owner, Jure Franko, one of the favorite skiers who won a silver medal for the giant slalom at the Winter Olympic Games in Sarajevo in 1984. At that time, out of their love towards him, Sarajevans stuck to the slogan: “We love Jurek more than burek”. Over ten years ago, the owner Juvan replaced his Slovenian address with a Sarajevan one after marrying a Bosnian. In the village of Miljevići, at the foot of Trebević, they had a house, so they grew to love this mountain, which they often visited. However, the entire time they missed having a place where they could take a break and have some refreshments, so that is how the idea of opening this lodge came about. ALMIR PEŠTEK
BiH je zemlja neispričanih priča “POKUŠAO BIH POZICIONIRATI BIH KAO OTVORENU ZEMLJU, OBEĆAO ISKUSTVO I DOŽIVLJAJ BAZIRAN NA GOSTOLJUBIVOSTI, KULTURI, HISTORIJI I HRANI”
K
- U kulturi, historiji, prirodi i ljudima.
Napraviti i tourism enabling i business enabling okruženje. Vođenje posla mora biti i lakše i jeftinije.
BiH karakteriše i visoka koncentracija turističkih aktivnosti. U Federaciji Sarajevo, Mostar i Neum čine skoro 75% ukupnih turističkih kretanja.
BiH Is a Country of Untold Stories “I WOULD TRY TO POSITION BIH AS AN OPEN COUNTRY, AND PROMISE AN EXPERIENCE BASED ON HOSPITALITY, CULTURE, HISTORY AND FOOD” Interviewed by: Elma Zećo Photo: Irfan Redžović universities is necessary. We must innovate curricula and create new ones, create new occupations for the new age, provide high-quality practical work and equipment, show young people that occupations in tourism are attractive, and that tourism gives them the chance for development and success.
STRATEGIC TURN If you were assigned with a task of branding BiH, what direction would you follow?
A
s a grantee of the prestigious Fulbright scholar program of the US State Department, Almir Peštek, a full professor at the Faculty of Economics in Sarajevo examined the improvement of marketing activities in BiH tourism and its competitiveness within his postdoctoral studies in Chicago. His research can serve as guidance for all those involved in the tourism industry, where the rules of profession should be primarily respected in our country, and profes-
sionals should be more included in all issues related to the development of this economic branch. As the continuous education, and broadening of knowledge and views must not stop either in private or public sector, professor Peštek says: - Constant learning is a precondition for success on the hyper-competitive tourism market, where change is the only constant. In addition to life-long education, substantial investments in the formal education system - secondary schools and
- BiH is a country of untold stories. We cannot really boast of being well known to tourists, and our existing branding activities are on a fairly low level. A non-systematic promotion and non-consistent messages must be replaced with a systemic and professional approach. I would try to position BiH as an open country, and promise an experience based on hospitality, culture, history, nature, and food. I would communicate BiH as an interesting, colourful, pleasant, open, friendly, original, and foody destination. Where do you see the greatest tourist power of BiH? - In the culture, history, nature and people. We have great tourism potentials that must be turned into economically valuable resources. Efficient tourism industry requires constant planning. Do we have a proper view of the future? 43
INTERVJU / INTERVIEW
- What development direction we follow, what tourism forms should be developed, what is our vision... These are frequent questions that we cannot answer. The destination management or absence of an efficient destination management is one of the big problems we are facing. A related issue is the marketing of destinations, and especially the development and integration of offer, branding, and systemic promotion. Tourism is a system that should be managed on national, regional, and local levels. We need a strategic turn in the tourism development – from organic development to the systemic, strategic development on sustainable development principles.
requires cooperation between private, public and non-governmental sectors, and tourism development in BiH mostly results from initiatives of the private sector, which cannot develop tourism on its own. A favourable framework for the development is necessary - legislation, infrastructure, trainings, business environment, all of which is the public sector’s task. Interests of private and public sectors do not necessar-
What has the coronavirus pandemic revealed? - All imperfections and problems in tourism, and merely declarative, but not practical recognition of tourism as a development chance by the public sector. Tourism must be observed as an important export sector, as a sector with extensive direct and indirect effects on overall economic development. The Travel & Tourism index of the World Economic Forum, where BiH was positioned on number 105 of the total of 140 countries in 2019, far behind the other countries in the region, tells us to what extent things are currently observed in this way. This index descriptively shows everything that we need to change if we want to be successful in the future. The pandemic resulted in the tourism reset on the global level, and now we need to work on the rethink phase – creation of new business models for the new-normal. Now we finally have to work together, and in a lot smarter way, because the competition will be much stronger when you literally have to fight for the attention of every tourist.
SHORT-HAUL TRIPS How much do the private and public sectors cooperate in BiH tourism? - Integration is a precondition for success. The tourism development 44
“My grandparents, bakers Atif and Fata Agić from Žepče influenced me as a person the most. They taught me not to wait for others to give me anything, and that I can achieve everything with my own work” ily need to pursue the same goal. This is why cooperation and balancing of interests are necessary. There is no sufficient or proper cooperation between private and public sectors, which is a precondition for the development of destinations, and there is no sufficient level of cooperation within the private sector. Atomized approach does not benefit anyone in the long run; we need joint action and synergy.
What other changes are necessary? - The narrative should be changed. The “tourism development” is mentioned continuously, and we must replace it with “sustainable tourism development.” We are overly focused on economic effects of the tourism development, which again did not result from a planned action, and social and environmental aspects have been neglected. Regardless of all positive development influences, tourism can have negative effects on the community and the environment. Therefore, investments in tourism must consider interests of the community and preservation of the environment. If we continue working in this way, before long, we will be talking about unsustainable tourism development. Among other things, let’s look at the size of the BiH territory under the protection regime and BiH’s position on ranking lists related to the protection of cultural-historical and natural heritage. We have to invest in infrastructure more. BiH must be more accessible to tourists, which is currently not the case. Air transport, road transport and railroad transport must be developed more intensely. And finally, we have to develop overall business environment. We need to create both tourism enabling and business enabling environment. Doing business must be easier and cheaper. We must enable citizens of BiH to launch and operate businesses more easily, attract more foreign investments, and be more competitive on the global market. Also, we need to reduce the grey economy, which is particularly present in tourism, enable people to stay here and develop, be satisfied and live a good life, instead of looking for opportunities elsewhere. When can we expect to recover from the pandemic consequences? - Tourism usually reacts quickly to crisis events, and we have a global crisis in this case. The recovery will depend on finding of a cure, and until then, we can only guess
what will happen. In this case, the recovery will be slow. Many countries are trying to open their borders for tourists, but this is not enough. Many people around the globe lost their jobs, the discretionary income that they used to finance travels has been decreased, and they will certainly travel less. They will also travel less because of the travelling conditions. The recovery of tourism in BiH will depend on the economic recovery of our outbound travel markets. The 2020 season is definitely lost. I believe that the recovery effects cannot be expected before 2022. Short-haul trips will be more important in the near future. Longhaul destinations and journeys will be less attractive. Recovery of mass tourism destinations will also take longer. Fortunately, BiH is not a mass tourism destination, and we are close to the largest outbound travel market – Europe. Besides, we are well known to tourists from the region. We should also focus on the development of domestic tourism, as its potential is underutilised. BiH is also characterised by the high concentration of tourist activities. In the Federation, Sarajevo, Mostar and Neum account for almost 75% of total tourist movements. There are many destinations that can and should develop. For example, I like the idea of vouchers that was initiated by the Republika Srpska, Slovenia, Serbia, and previously the Szep card in Hungary. Generally, I see BiH’s chance in the increase of tourist consumption and extension of stays. The stays are usually short (2-3 nights), which is in line with global trends, but the consumption level is low. For example, both domestic and international tourists spend a lot less in BiH than in Slovenia.
LOVER OF RESEARCH Your life is devoted to education. What motivated you to choose the scientific path? - I have always liked to read and re-
search. I was a top student in school and at the university. I successfully applied to the vacancy announcement for an assistant at the Faculty of Economics in Sarajevo in 1999, and it resulted in my career obtaining an entirely new development dimension that I hadn’t thought about before. I am happy and proud for having been an assistant to the late professor Boris Tihi who influenced my academic career and development a lot. Work at the university suits me perfectly, it gives me freedom and opportunity to research, and to apply my knowledge in practice.
Who has always put the wind in your sails? - My wife Suada is my biggest support. My grandparents, bakers Atif and Fata Agić from Žepče influenced me as a person the most. They taught me not to wait for others to give me anything, and that I can achieve everything with my own work. What is the most beautiful thing you realized? - Honesty, hard work and investments in knowledge always pay off. 45

LEGENDA O NASTANKU GRADA

UNA - POSLASTICA ZA LJUBITELJE ADRENALINA Pored kulturno-historijskih znamenitosti Bihać svojim posjetiocima nudi izuzetno raznolik sportsko-rekreacioni sadržaj.

the Pearl of Krajina in the Embrace of the Magical Una
ALONG THE BANKS OF ONE OF THE PRETTIEST BOSNIAN-HERZEGOVINIAN RIVERS, THE EMERALDCOLORED UNA RIVER, THE CITY OF BIHAĆ EMERGED A LONG TIME AGO, AS THE PEARL OF KRAJINA AND NORTHWESTERN BOSNIA; THE RESIDENTS OF KRAJINA, WHO ARE KNOWN FOR BEING CORDIAL AND HOSPITABLE, HAVE BEEN PROUD OF BIHAĆ FOR CENTURIES LEGEND ABOUT THE FORMATION OF THE CITY The legend about Krajina has been told for generations; namely that Bika, one of three sisters, the daughters of affluent Krajina resident Dobrica, ordered for it to be built, while her sisters had cities built in other places in the picturesque Bihać basin. The legend says that the city was named Bikće after Bika, and that it was later renamed to Bišće, and then finally it got the name that it bears to this day. The first written records abo-
ut the city were found in the charter of Austro-Croatian king Bela IV from 1260, stating that it was a „city that already existed in that place“. Because its history dates back so far into the past, many peoples left their traces in it, which can be seen through the cultural and historical monuments that this city is full of. Whether you have decided to come for a visit because of its fascinating natural beauty or to see its sights, the time you spend here will be very fulfilled.
WELCOME TO THE CITY OF BIHAĆ Bihać is a charming city surrounded by incredible nature, where during the summer season tourists from all over the world come to enjoy themselves. The Tourism Association has its role in the whole process. It is our wish that in the years to come guests recognize us as a city of friendly people where summer is – a summer of positive energy and smiling people, and the city itself during that time is one of the prettiest postcards of Bosnia and Herzegovina. Whether you enjoy the rich program of Bihaćko Ljeto (Summer in Bihać) or you just enjoy going for a stroll listening to the sounds of nature, we wish you a warm welcome and for you to take only the fondest memories from our city. BOSNA I HERCEGOVINA / BOSNIA AND HERZEGOVINA
CULTURAL AND HISTORICAL MONUMENTS Most of the cultural and historical riches of Bihać are protected as national monuments of Bosnia and Herzegovina. Among them, the most significant and best-known is the Kapetanova Kula (Captain’s Tower), which once served as a prison, and also the Fethija Mosque, the only European Islamic place of worship built in the Gothic style. Next to Kapetanova Kula, there is also the well-known Kameno Turbe (Stone Turbeh); for years, there have been numerous legends about how the Kameno Turbe came to be and who is buried there. Next to the turbeh, there is also the tower of the former Church of St. Anthony. Bihać is a city that is proud of its anti-fascist past to this day, and the memory of the fight against fascism is preserved by the Muzej Prvog Zasjedanja AVNOJ-a (Museum of the First Session 52
of the Anti-Fascist Council for the National Liberation of Yugoslavia). It should not be forgotten that this area is also known for several old towns, some of which have become tourist attractions. We would single out the medieval town of Sokolac,
with a location that brings a new view of nature and the city itself, and today, thanks to the newly-established walkway, you can reach it on foot from the center of the city in just half an hour. There is also the medieval Ostrožac, which consists of the medieval fort from the Otto-
SUMMER IN BIHAĆ Apart from the natural beauty and adrenaline-filled activities that the City of Bihać offers, which are enjoyed by tourists from all over the world during the summer tourist season, the rich cultural and entertainment program should not be missed, as it is current in this city throughout most of the year, and especially in summer. There is a great network of organizations which make Bihaćko Ljeto a real tourist product, and to set the bar higher and higher each year, the Association of Tourism, which was recently formed in this city, has been working on the organization and branding of activities for the entire summer, and also on some new things through the project „Calendar of Events of Bihaćko Ljeto“, where in May you can already see what the residents of Bihać and their guests can expect when they visit this city during the summer months. man period, the castle of Lothar von Berks and a collection of sculptures.
UNA – A TREAT FOR FANS OF ADRENALINE Apart from cultural and historical sites, Bihać can offer a great number of sporting and recreational activities. The Una National Park is quite special, as a natural reserve on the Una River; its waterfalls and rapids are a real treat for fans of adrenaline and extreme sports. Una is known for rafting, and anyone who has tried it will tell you that rafting on the Una is like nothing else,
an amazing experience. The National Park also attracts fans of fly fishing, and the surrounding nature has been attracting more and more bicycle tourists, for whom, as we have found out, there are new trails that are currently being prepared.
In order to complete your experience, we recommend that you spend several days in Bihać. One thing is for sure, when you are leaving Bihać, you will feel enriched with another wonderful experience and you will fall in love with the charm of this beautiful city on the emerald Una.
You will certainly not be indifferent to the magic of nature that you can see in this national park – like Štrbački Buk, which you will not be able to forget, and you should also not miss out on the medieval fortresses, the Martin Brod waterfalls that are exceptionally beautiful and protected by the UNESCO, Japod 53

vakog onog ko se prvi put nađe u ovom izuzetno lijepom gradu na sjeverozapadu Bosne i Hercegovine oduševit će živopisni pejzaži, ukusno uređene gradske javne površine, čistoća gradskih ulica i svakako, srdačni i gostoljubivi ljudi.
HISTORIJA GRADA O njegovom postojanju kroz historiju svjedoče ostaci prahistorijskog i srednjovjekovnog naslijeđa.

KULTURNO-HISTORIJSKI SPOMENICI
Prirodne ljepote i velika ulaganja u sportsko-rekreacijske kapacitete rezultiraju svake godine posjetom velikog broja gostiju i turista koji uživaju u bogatoj ponudi avanturističkih sportova: nezaobilaznom raftingu, paraglajdingu, biciklizmu u specifičnom prirodnom okruženju, outdoor turizmu...
U ovom gradu ćete istinski i još više zavoljeti Bosnu i Hercegovinu jer on izgleda i diše upravo onako kako bi trebala cijela naša domovina.

BOSNA I HERCEGOVINA / BOSNIA AND HERZEGOVINA
A City with Manners of a European Gentleman and the Charm of an Authentic Bosnian
Author: Semra Hodžić
THE CITY OF CAZIN HAS BEEN SITUATED AT THE CROSSROADS THAT LEAD FROM BIHAĆ TOWARDS VELIKA KLADUŠA, IN THE HEART OF THE PROUD KRAJINA, SINCE ANCIENT TIMES
A
nyone who finds themselves in this exceptionally pretty city in northwestern Bosnia and Herzegovina for the first time will be thrilled by the picturesque landscapes, tastefully designed urban public spaces, the cleanliness of the city streets and certainly by the cordial and hospitable people.
HISTORY OF THE CITY Its existence throughout history can be seen through the remains of prehistoric and medieval heritage. The remains of the old fortress of Ostrožac, Pećigrad, Radetina Kula, Stijena and Tržac dominate the city and its surroundings, and they are part of an interesting tourist offer, but the prettiest and most impressive is the Ostrožac Castle/Fortress, built in the neo-Gothic style; it is one of the main tourist attractions of the Una-Sana Canton. 56
Its dimensions make it one of the larger fortified towns in B&H, characterized by different phases of development, starting from a medieval fortified town, to a much larger town in the Ottoman period, to a town of a purely residential character, as it was during Austro-Hungarian rule. In 2013, it was declared a National Monument of Bosnia and Herzegovina, giving it more significance in the development of tourism in this city. As the last captain, Mehmed Bey Beširević sold the city of Ostrožac to the mayor of Bihać at the time, count Lothar van Berks, who then began the restoration of the city, where during 1900 and 1902, he built a luxurious castle in the neo-Gothic style with a large number of rooms, a reception lounge and an apartment, which still gets a lot of attention today because of its beauty.
This is also the only castle in Bosnia and Herzegovina.
OSTROŽAC LIVES ON You must visit Ostrožac when you vi sit Cazin – some people even come just to see Ostrožac. In order to improve the tourist offer, the residents of Old Town Cazin have ensured that there are public toilets and water available, and they have maintained the walkways. Visitors can use the free wi-fi and treat themselves to an original gift from the souvenir shop. For those who dream of a fairy tale wedding in a medieval castle, Ostrožac hosts weddings each Sa turday, or even just a photo shoot, with a prior booking at the Cultural Center of Cazin. The castle is also a house of art in itself. In May each year, it is host to a recognizable event in the world of sculptures, which has entered its
THE KRAJINA „SNAKE“ Fans of auto racing do not miss an important date each summer – the date when the international mountain auto race Cazin Great Prix is held, a well-known sporting event in B&H and Europe. Many do not wish to miss a ride on the attractive „Krajina snake“. The race has been held traditionally since 1999, and represents a significant segment in the tourist offer of the city, and it is also important for the B&H championship.
sixth decade of existence – the Colony of Sculptors “Ostrožac“, and during the year, it is home to a valuable collection of sculptures. The Old Town area is ideal for hosting various events – such as concerts, fairs and festivals. The most popular singer in the region, Dino Merlin, has performed here several times, giving visitors a magical night at the fortress, and last year’s show of B&H fashion designer Adnan Hajrulahović Haad made the castle even more special, due to the luxurious lighting and ceremony. Each May, the Ethno Festival of Traditional Music is also held at Ostrožac, and in August, a part of the program of the Krajina Film Festival is held there.
CULTURAL AND HISTORICAL MONUMENTS In the very center of Cazin, there is the house of Nurija Pozderac, a national hero from World War II. As one of the oldest autochthonous Bosnian houses in this region, it
was declared a National Monument of Bosnia and Herzegovina. Near the Pozderac family house, there is a beautiful madrasa, which bears the name of the most well-known religious teacher in this region and the former mufti Džemaludin Čaušević. The building of the old madrasa, situated in the old čaršija, was built in 1867, initially out of wood, but several years later, it was burned down with the arrival of the Austro-Hungarians, and then restored and rebuilt out of stone in 1890. The new building of the Madrasa was constructed in the 90s, considering that sometime earlier this secondary schooling institution in Cazin resumed its work.
UNA NATIONAL PARK Each year, due to the natural beauty and great investment in sports and recreational capacities, a large number of guests and tourists visit and enjoy the rich offer of adventure sports: the unmissable rafting, paragliding, cycling in specific natural surroundings, outdoor tourism...
There are many reasons to visit Cazin. It used to be among the least developed municipalities in former Yugoslavia, and today you can see a real economic miracle, particularly in the business zone of Ratkovac. It is a project of the future, located on 50 hectares within the city, with good transport connections, and it is situated near excellent starting points for activities leading to the market of central Europe, which guarantees that Ratkovac will become the most cost-effective business zone in the region. Cazin is the greatest producer of milk and dairy products, as well as honey – made from chestnuts, which the Cazin forests are full of. Chestnut honey is the first branded product from Bosnia and Herzegovina with an international label that guarantees its authenticity, that has conquered the world. There are a lot of reasons to visit Cazin. In this city, you will truly grow to love Bosnia and Herzegovina even more, as it looks and breathes exactly like our entire homeland should. 57

BOSNA I HERCEGOVINA / BOSNIA AND HERZEGOVINA

odmara oči i dušu. Those who wish to get to know Jajce and the history of Bosnia and Herzegovina from the time when it was a kingdom will enjoy discovering its 29 national monuments
ZIPLINE ACROSS THE WATERFALLS Jajce is the only city in the world with magnificent waterfalls at the very city centre, which welcome you at the entrance and immediately take your breath away. They are located on the last tufa cascade of the Pliva river, which flows into the Vrbas river below the waterfalls. You will come here to forget about everything, shut off your brain for a short while, and clear your thoughts listening to the noise of the waterfalls. Many brave divers dare to dive in a ten-metre-deep pool underneath the waterfalls, creating an unseen spectacle for viewers every summer. This year, the bravest visitors will be able to try the popular zipline, 250 metres long, from the ridge on the plateau above the waterfalls to the viewpoint on the other side of the waterfalls.
PLIVA LAKES If you have a sports and adventurous spirit and want an active vacation, bathing spots on the Pliva Lakes, 62
the largest natural lakes in our beautiful homeland and its natural monument are the right place for you, only five kilometres away from Jajce. The Brana beach, created during the fifties, attracts swimmers in great numbers every year. You can get to the beach by car, which you can park in the forest shade. The swimming site is composed of three cascades that slow down the green river and create pools convenient for swimming, with a warm and peaceful water. Only a few people know that the first cascade is made of falls, and those who enjoyed them, swam, or massaged their back on them say that this is how they imagined the gardens of paradise. Although all cascades are very beautiful and attractive, the second one is the most attractive because it enables one to cross the Pliva river from one side to the other. Still, you should place your towels or tables and chairs on the left shore of the lake, because that is where all the fun is. The large beach offers enough space for those who want to develop the sun ten, but also for
those wishing to hide from the sun in the deep shade and have some rest. There is a volleyball field nearby, and barbecue spots, which will spice up your day here additionally. It will be particularly interesting for children, because there are many ducks and fish in the clear Pliva river, and little ones can catch them in a fishnet in the shallow water. In no other beach you could see the beautiful dragonflies in various colours like here, where they live in great numbers. Diving lovers also like the Plivsko Lake, and a diving platform has been installed for them, but don’t be surprised if you see them diving from nearby trees as well.
THE VELIKO LAKE Waters of are an ideal place for a kayak ride or canoeing. You can rent a kayak or a canoe on Friday, Saturday or Sunday from the kayak/canoe club Jajce. You can also rent pedal boats with solar, electric, or battery charge on the lake, as well as the ordinary pedal boats, and sailing vessels that also offer lunch, with prior announcement. For those who want
more fun and adrenaline, the locals also rent balls on the water, and you will particularly love the rafting safari down the Pliva river during which you will enjoy the emerald river colour and its natural surroundings that offer home to numerous birds, fish, and you may even see some wolves here. From March to October, rafting costs between 30 and 50 BAM, and for those of you seeking more adrenaline boost, we recommend rafting down the Vrbas river between May and October. During the season in Jajce, you can find accommodation in a camp, the Turist 98 Hotel or Plivsko jezero Hotel that have terraces where you can enjoy the beautiful view of these miracles of the nature, and you can also rent one of the numerous private weekend houses or apartments. There are walking trails by the lake, where you can ride Quadro bikes, children can have fun on the trampolines, and you can also enjoy the lake view during a romantic carriage ride. 63

PICNIC GROUNDS ON MLINČIĆI As early as in the medieval times, local carpenters built some twenty mills on tufa thresholds of the Plivska Lakes that people endearingly call “Mlinčići” (“the little mills”), which were often used as a motive on postcards of the Austro-Hungarian Monarchy. Apart from walking, people also like to come to Mlinčići for a barbecue, where you will enjoy listening to the river noise and rest your eyes and soul on the greenery. Barbecues have been installed on the picnic grounds, and you only need to bring food, a table and chairs. You can also rent bikes that you can ride on the four-kilometres-long rural trails, or on well-maintained trails from the very city centre to the Plivska Lakes.

NACIONALNI PARK KOZARA

Veličanstven pejzaž, borova šuma i planinski vazduh čine ovaj prostor jedinstvenim u okruženju. Nećete pogriješiti ako odaberete baš njega, jer u kompleksu izletišta možete prenoćiti u hotelu i nakon ugodnog dana u netaknutoj prirodi uživati u čarima wellness&spa centra.

The Kozara National Park
THE KOZARA NATIONAL PARK Kozara, the beauty of Krajina is an aerial spa of a kind. The abundant offer of the national park it belongs to includes a particularly novel feature now - the pedestrian trail Rajkovići Kotlovača Mountain hut - Bijeli kamen - Zečiji kamen, 4.2 km long, which extends through some of the most beautiful parts of the park with picturesque viewpoints and a nice waterfall. What makes this trail special is the 26 meters long, so-called via ferrata on Bijeli kamen cliff. It is the first trail in the region where your heart will beat fast from excitement during the adventure, with a view of the unreal beauties of the landscape. 1,500 yew trees were planted alongside the pedestrian trail - a rare and endangered species which is on the RS’s Red List of Protected Flora and Fauna.

Ethno Village - Ljubačke doline Museum
ETHNO VILLAGE – LJUBAČKE DOLINE MUSEUM The ethno village Ljubačke Doline covers the area of around 2 hectares in the village of Ljubačevo, approximately 17 km far from Banja Luka. The idea behind the ethno village grew out of love for the old lifestyle, antiques, culture and tradition. The ethno village is a kind of a museum in the open, which leads you into the past. It portrays life from the late 19th and early 20th centuries, with unique old houses which have seemingly remained intact to this day. Next to the houses, there are barns, a corn basket, a stable and shepherds’ hut, and all other things that depict life, work and construction from that period.
Trebević - Brus
PICNIC GROUNDS 'HAJDUČKE' VODE The slopes of the famous Borja Mountain, only 23 km far from Teslić and around 60 km from Banja Luka accommodate the unique picnic grounds Hajdučke vode. The magnificent landscape, pinewood, and mountain air make this place unique in the region. You will not make a mistake if you choose it, because the picnic grounds include a hotel where you can spend the night and enjoy the wellness & spa centre after a pleasant day spent in the intact nature. Sport lovers should not worry that they might get bored, because the hotel is surrounded by grounds for football, tennis, volleyball, basketball, and handball, a children’s playground, and lanes for walks, running and biking in the pinewood which is around 2,500 m long. The Liplje Monastery from the 13th century is located nearby and can be reached by walking through the village.
The Sutjeska NP drink and eat in the fresh air, and you can also spend the night in luxuriously equipped bungalows. Brus offers something for everyone – well-kept walking trails that are “transformed” into ski lanes, children’s playgrounds, a barbecue place, grounds for little and adventure sports (mountain bikes, quads, paintball…) during the snowy winter days.
THE SUTJESKA NP Stari Brod Camp

STARI BROD CAMP The Stari Brod Camp is situated seventeen kilometres away from
Višegrad, at the very entrance to the grandiose Drina river canyon, and it can only be reached by a boat or a vessel. The “Sonja” ship is in charge of providing an unforgettable pleasure of sailing down this beautiful river. It accommodates 40 passengers per ride and offers lunch on the deck. You can also have lunch when you arrive to the camp, at a restaurant with an enchanting view of the green river, which offers local specialties that will not leave you indifferent: lamb and veal roasting under the bell, and you shouldn’t miss the fish from Drina river either, and many other delicacies prepared by traditional recipes with a lot of effort and love. Adventurers and lovers of the intact nature can make themselves comfortable in Stara kuća and Nova kuća, where they can have great fun and recreate on football, basketball and volleyball grounds. If one wants to try something new, they can try kayak and pedal boats down the river, hiking, or simply enjoy an easy walk down the Health Lane around the area. Two dirt trails leading to the camp have been arranged especially for bikers. 79

BOSNA I HERCEGOVINA / BOSNIA AND HERZEGOVINA
1. STEP INTO THE PAST WITH A WHIFF OF THE MEDITERRANEAN When you walk through the gate of the Old Town, it is as if you have walked through time. The core of the Old Town is untouched – here, you will be greeted by cobblestone, narrow streets and stone houses with restaurants/cafes and shops. Upon arrival to Trebinje, you can almost feel the proximity to the Adriatic Sea, the smell of lavender, figs and rosemary. This is also the only city in Bosnia and Herzegovina where, due to the proximity of Dubrovnik, you can feel the influence of the Renaissance, interwoven with Ottoman, Austro-Hungarian and socialist elements.
2. FENOMEN SUNCA
2. THE SUN PHENOMENON
Trebinje is a bit of a phenomenon with its 260 sunny days in the year, making it one of the sunniest cities in the Balkans. Due to the pleasant Mediterranean climate, it is characterized by pleasant and warm summers (the unbearable Herzegovina heat is quenched by the cold Trebišnjica River), and mild and short winters, so whichever part of the year you decide to head in this direction – you can almost always expect to find good weather and cheerful locals.
vrijeme i stanovnike vedrog duha.
3. GRAD SA NAJVIŠE ZAŠTIĆENIH SPOMENIKA Zbog svoje historije koja seže još u prahistorijsko doba Trebinje je bogato kulturno-historijskim spomenicima, tačnije grad i njegova okolina imaju najviše zaštićenih nacionalnih spomenika u cijeloj Bosni i Hercegovini. Najveći broj posjetilaca privlače Muzej Hercegovine sa velikim brojem vrijednih eksponata, Osman-pašina i Careva džamija, kameni mostovi i dolapi, te veliki broj nekropola stećaka i srednjovjekovnih manastira u okolini koji plijene pažnju svojim stilom gradnje, između kojih izdvajamo Tvrdoš, Duži, Zavala i Petropavlov manastir.
3. A CITY WITH THE GREATEST NUMBER OF PROTECTED MONUMENTS Because of its history, which dates back to prehistoric times, Trebinje is abundant with cultural and historical monuments, i.e. the city and its surroundings have the greatest number of protected national monuments in all of Bosnia and Herzegovina. The Museum of Herzegovina attracts the greatest number of visitors with a large number of valuable exhibits, as well as Osman Pasha's Mosque and the Careva (Emperor's) Mosque, the stone bridges and water wheels, and the large number of necropolises of stećci (medieval tombstones) and medieval monasteries in the surroundings, which are interesting because of the style that they were built in; we would single out Tvrdoš, Duži, Zavala and Petropavlo's Monastery. 82
4. WATER PARK „GRAD SUNCA“ („CITY OF THE SUN“) The tourist and sports and recreational complex is situated a few kilometers from the center of Trebinje, at Draženska Gora, and it consists of the greatest water park in Bosnia and Herzegovina, which stretches out over 79 000 square meters. The complex has 6 pools and 13 slides, of which two are - Splash Safari and Dino Park (life-size replicas of dinosaurs). As part of the complex, there is a wellness spa center, ethno village, artificial lake, sporting grounds, the first five-star hotel in Trebinje and much more.
5. ETHNO AND CUISINE OFFER Trebinje locals are truly thoughtful hosts, so they welcome their guests with a full dining table abundant in healthy and natural food cultivated in this fertile region. The region is also known for good wines, with records that testify of this dating back all the way to the Middle Ages. Traditionally, many families in Trebinje are winegrowers, and the fact that they have received medals from the most demanding of palates at international exhibitions in Vienna, Paris and London speaks of their quality. Fans of wine can enjoy some of the many wine tours and see the quality for themselves. 83
BOSNA I HERCEGOVINA / BOSNIA AND HERZEGOVINA
6. GRAD NA RIJECI SA VIŠE OD 20 MOSTOVA Na plahovitoj rijeci Trebišnjici koja grad dijeli na dva dijela izgrađeno je dvadeset mostova zbog čega mještani Trebinje često nazivaju i „malom Venecijom“. Najljepši među njima je Arslanagića most, elegantni predstavnik osmanske arhitekture ovog kraja.
6. A CITY ON THE RIVER WITH OVER 20 BRIDGES On the fiery Trebišnjica River, which separates the city into two parts, twenty bridges have been built, which is why the locals often call it „little Venice“. The prettiest among them is the Arslanagića Bridge, an elegant representation of the Ottoman architecture of this region. Built in 1573, the legacy of Mehmed Pasha Sokolović is 92 meters long, and represents the oldest structure in Trebinje, which stands out to this day, because of its beauty and unusual stories related to it.
8. GRAD PJESNIKA JOVANA DUČIĆA
7. MUZIČKI FESTIVAL S PRELIJEPIM POGLEDOM NA GRAD
7. MUSIC FESTIVAL WITH A BEAUTIFUL VIEW OF THE CITY
In recent years, at the beginning of August at the amphitheater located on Crkvina hill and the plateau in front of Hercegovačka Gračanica, the „Music & More SummerFest“ has taken place, an international festival of classical music, which is truly a unique experience. Concerts are held on the plateau around the Blagovještenje Church (Church of the Holy Annunciation,) from which there is the prettiest view of the panorama of the most southern B&H town at the foot of the karst giant Mount Leotar, in the tame valley of the Trebišnjica River.

8. THE CITY OF POET JOVAN DUČIĆ The writer and diplomat Jovan Dučić (1874-1943) gave the most to „His dear Trebinje“ with the written word and selfless engagement. He dreamed that his birthplace would become a cultural center, so he initiated the construction of today's Museum of Herzegovina, where you can find various exhibits that Dučić brought to this city from his diplomatic travels. He can also be credited for the large number of monuments that you can see while on a stroll through the city. In his honor, the „Dučić Poetry Nights“ are organized each year.
9. RELAXATION UNDER TREBINJE'S PLANE TREES The sixteen giant plane trees on the city square were planted during the Austro-Hungarian period; they are a symbol of Trebinje and a tourist attraction. With their century-old branches, they protect the city center, creating great shade during summer in front of „Platani“ Hotel, where you can hardly find a spot in the outdoor cafe. Trebinje locals like to say that you have not been to Trebinje if you have not had a coffee under the plane trees, and if you really want to enjoy yourself, you should always listen to the locals.

The city also has an artistic soul, so each year there are organized art colonies, exhibitions, music concerts and a film festival, and among the most popular are the Mediterranean and European Film Festival, the Trebinje Rock Gitarijada and the "Festival of Festivals". Another significant event is the christening of the city and the cathedral temple – the Holy Transfiguration of the Lord.
10. A NUMBER OF EVENTS Throughout the entire year in Trebinje, a number of events are held. Among the most interesting sporting events is “Trebinje Vertikal – Trka u Kamenu” (“Trebinje Vertical – Race in Stone”) from the banks of the Trebišnjica River to the peak of Leotar, and the bicycle race “Za Sirac Sira” (“For a Wheel of Cheese”). AMRA MAKAN, marketing i PR menadžerica kompanije
Svijet automobila mi savršeno odgovara AMRA MAKAN, MARKETING I PR MENADŽERICA KOMPANIJE HYUNDAI AUTO BIH, JOŠ KAO DJEVOJČICA SE INTERESOVALA ZA SVIJET AUTOMOBILA. PRATILA JE TRKE FORMULE 1 I DRUGE MOTOTRKE NI NE SLUTEĆI DA ĆE JEDNOG DANA RADITI U NAJBRŽEM RASTUĆEM AUTOMOBILSKOM BRENDU U SVIJETU Razgovarala: Semra Hodžić
86
S kojom vizijom si došla u to kompaniju?

Kroz neke promotivne kampanje promovirali ste ljepote BiH.
AMRA MAKAN, Marketing and PR Manager of Hyundai Auto B&H
The World of Automobiles Suits me Perfectly AMRA MAKAN, MARKETING AND PR MANAGER OF COMPANY HYUNDAI AUTO B&H, WAS INTERESTED IN THE WORLD OF AUTOMOBILES EVEN AS A LITTLE GIRL. SHE FOLLOWED FORMULA 1 RACES AND OTHER MOTOR RACES WITHOUT HAVING A CLUE THAT ONE DAY SHE WOULD BE WORKING FOR THE FASTEST-GROWING AUTOMOBILE BRAND IN THE WORLD. Interviewed by: Semra Hodžić How did you find yourself in the world of automobiles and how successful have you been in this role? As a student at the Faculty of Economics in Sarajevo with a major in marketing, I grew to love marketing and had a desire to see myself in a dynamic branch, which I found myself in thanks to my mentors. After I completed my thesis, I had the option of choosing the world of banking or the world of the automotive industry, and it is clear what I chose. I chose this world, expecting it to be dynamic, constantly changing, new and creative, because it fits in with my temperament and character. The fact that I’ve been in this world since 2007 speaks of how successful I’ve been. What was your vision when you came to this company? It’s been almost a decade since I jo-
ined the Hyundai family. For a number of years, Hyundai has been the fastest-growing brand in the world, and the mere fact that it is a brand that has such expansion, makes it possible for an individual to develop it further, and maximize its potential. Of course, what is most important is that the brand develops along with quality. My vision was to utilize all the potential of the brand and the opportunities for its further development in Bosnia and Herzegovina, but at the same time to develop myself, my knowledge, to learn and obtain new skills each day, as that is something that marketing requires. It takes a lot of hard work for any success. What do you now know a woman should have in order to be successful in the world of automobiles? In order for a woman to be successful in the world of automobiles, she needs to be diligent, hard-working,
precise, with a clear vision of the brand, product and branch, but in the end, the most important thing is that she must love what she does. What has been your greatest success in this company? The greatest success has been the continuous growth and development of the Hyundai brand in B&H over the last eight years. Considering that marketing is one of the main generators of growth in every company, that’s what I’m most proud of. DŽENAN KOVAČIĆ
A YOUNG SCIENTIST
Making a Better World DŽENAN KOVAČIĆ IS A PASSIONATE YOUNG SCIENTIST, A STUDENT OF THE FACULTY OF ENGINEERING AND NATURAL SCIENCES AT THE BURCH UNIVERSITY, A DEMONSTRATOR, AND CHAIR OF THE STUDENT PARLIAMENT OF THE INTERNATIONAL EDUCATIONAL INSTITUTION. IN HIS RESEARCH, HE FOCUSES ON SEVERE DISEASES, SUCH AS TUBERCULOSIS AND ALZHEIMER’S, AND WANTS TO BECOME A MEDICAL DOCTOR IN THE FUTURE, WHO PARTICIPATES IN THE SCIENTIFIC CONTRIBUTION THAT WILL FACILITATE LIVES OF THOSE IN NEED Written by: Elma Zećo

ženan Kovačić became publicly known in BiH while he was a student of genetics and bioengineering at the Burch University. Potential discovery of a tuberculosis medicine that he developed interest in as early as in the secondary medical school in Mostar brought him to the spotlight. The medicine is currently in the patenting procedure, and the young scientist optimistically believes that experimental results of this project will confirm the hypotheses.

Thanks to wonderful professors at the International Burch University, many different and seemingly unrelated scientific thoughts were materialized and obtained the shape of a slowly emerging, concrete scientific work and understanding of science - This is something unknown in the scientific sense, a technology that has never been used for this purpose, and we are currently trying to find an optimal way to develop a medication for this extremely complex and infectious disease through biochemical engineering - Dženan says.
LOVE AND PASSION FOR SCIENCE He was taken by scientific fields of genetics and bioengineering due to the vast scientific opportunities they provide. They are the tools that will help him realize his ideas, and turn his fascination with the natural world around us into a part of new discoveries. His goal is to become a medical doctor with a strong emphasis on innovations in medicine, which was his commitment even before the university. - Thanks to wonderful professors at the International Burch University, many different and seemingly unrelated scientific thoughts were materialized and obtained the shape of a slowly emerging, concrete scientific work and understanding of science. Engineers solve problems, while biological engineers are at the very frontlines of global crises – from epidemics to food shortage. One’s decision to plan a future in science comes from their love and passion for it. As prestigious as science may
be, especially in the domain of dealing with big problems that make the whole world turn to scientists, it is also the source of personal satisfaction that only a few other things can offer. As a young person, I found my call which never leaves me mentally exhausted. I am grateful because I managed to keep the childish curiosity and the joy I feel whenever I learn, realize or achieve something new. In addition to tuberculosis, Dženan also studies Alzheimer’s disease. Owing to his commitment to research, he won the international competition Falling Walls Lab in Sarajevo, which enabled him to participate in the International Conference on Future Breakthroughs in Science and Society. His work so far has been the source of pride for his family that provides immense support to him, as well as for his mentors and professors who contribute to his development into a better scientist from day to day.
CREATING VALUE IS NOT AN EASY TASK Dženan was born in Jablanica. He remembers his childhood mostly for summer gatherings and swimming in the Jablaničko Lake. In addition to running which marks the beginning and the end of his day, swimming is still an important form of recreation
for him. However, he openly admits that he also likes videogames as a wonderful way to have some rest without shutting his brain off. - I try to distribute my time efficiently and spend it on important and valuable things. Recently, I have been more focused on a healthy lifestyle. I like mornings and getting up early. When I work on something important, I try to isolate myself and refrain from checking social media, because they distract me unnecessarily. Indeed, my day is incomplete without a daily walk or running, especially when I am in Jablanica where I can enjoy the beautiful nature and fresh air. Fascinated by lives of great scientists such as Marie Curie, Albert Einstein, and Richard Feynman who faced many temptations in their work, whenever something doesn’t go according to plan, he thinks of them. He also finds role models in his private life, among family members whose patience, understanding and selflessness he adopts on a daily basis. Although young, Dženan knowns it is not easy to create value. He expects from himself not to give up in the face of obstacles or difficulties, and to become an accomplished scientist and doctor with important contributions in science for the benefit of all those who may need them. 95

KALED IDRIZOVIĆ
Uzgajivač drevnih sokola JEDNO OD NAJBRŽIH ŽIVIH BIĆA NA SVIJETU – SIVI SOKO STANUJE NA BJELAŠNICI, NA BABINOM DOLU. TU IH UZGAJA KALED IDRIZOVIĆ, PREDSJEDNIK I OSNIVAČ UDRUŽENJA SOKOLARA BIH. NI SAM NE ZNA KAKO SE OBREO U SOKOLARSTVU. LJUDI KAŽU DA SE RODIŠ S TIM, PA I ON OSJEĆA DA JE TAKO ODREDILA SUDBINA. Autor: Semra Hodžić
S
On ujedno predstavlja i jedini novitet u sokolarstvu, jer sokolari strogo baštine staru tradiciju.

KALED IDRIZOVIĆ
Keeper of Ancient Species of Falcons ONE OF THE FASTEST LIVING CREATURES IN THE WORLD – THE PEREGRINE FALCON, CAN BE FOUND ON BJELAŠNICA, AT BABIN DOL. THIS IS WHERE KALED IDRIZOVIĆ, THE PRESIDENT AND FOUNDER OF THE ASSOCIATION OF B&H FALCONERS, KEEPS THEM. HE IS NOT SURE HIMSELF HOW HE CAME TO BE IN FALCONRY. PEOPLE SAY THAT YOU'RE BORN WITH IT, SO HE FEELS THAT IT WAS DETERMINED BY FATE
K
aled adapted his life to the birds – a male Central European peregrine falcon and a female saker falcon. He would not have been able to do any of that without the great support of his family. He says that you cannot just go somewhere and leave a bird with someone, so the rest of his family – from youngest to oldest must know all about the birds’ needs. 108
Author: Semra Hodžić There are specific instructions related to their feeding, and just one step on the bird stand can go wrong if you have not adjusted it well. Each and every feather must be healthy, and the claws must be sharp. Falcons molt once per year, from March to September, when they change their feathers and they must not fly until this natural process is complete.
THE FASTEST LIVING CREATURE ON THE PLANET Kaled describes the peregrine falcon as a bird that lives and nests along Central Europe, and is on the red list of endangered animal species in the world. People chase and kill them when they are hunting smaller birds – thrushes, blackbirds, pigeons...
FALCONRY: Falconry used to be an industry in B&H. There were institutions that dealt with falconry, which the Austro-Hungarians found when they arrived here. Falcons from B&H used to be taken to the Vatican, the Republic of Ragusa, as a gift to emperors etc. In the rich history of falconry, it is recorded that Drežnica near Mostar used to be a breeding pen. This ancient noble skill was declared to be protected intangible cultural world heritage by the UNESCO.
They are predators by nature, serving as “natural cleaners” and any action drains their energy, which is why we cannot often see them flying around like other birds. They are the fastest living creature on the planet, reaching a speed of 340 km/h upon descent, and they have the best eyesight, which is ten times better than the eyesight of humans. Falconers like Kaled place GPS systems on birds (weighing 7 grams), and they serve to track their flight and hunting activities. These systems represent the only novelty in the world of falconry, as falconers like to strictly preserve old tradition. The GPS is also useful for training. During training, which is most often held at one of the numerous fields of Bjelašnica, they have recorded them flying at 240 km/h at a height of 400 meters. When he releases the bird to fly, he says it is ideal for it to be circling 80 to 100 meters above his head. There is also a dog at the training, Kaled’s is called Jackie, who hunts along with the falcon in order to chase game. The falcon then follows the dog. Birds have no names, as they do not respond to them like dogs.
KEEPING FALCONS The birds that Kaled keeps are called imprints, i.e. they are hand-fed birds. Imprints are bred so that semen can be extracted from the bird and used for artificial insemination. All birds must be ringed and bred in regular conditions. If the bird is intended for hunting, falconers allow its parents raise it so that it can be as free and wild as the ones in nature. It is prohibited to take them away from nature, as you can buy a bird anywhere in the world from a breeding pen.
GOING HUNTING Falconry is a hunting discipline, which means you must have passed a falconry exam in order to be a falconer and you also have to pass a hunting exam in order to hunt. Kaled had training to become a falconer eight years ago, with one of the most well-known regional falconers, Stjepan Bašić, who was also his mentor for passing the exam in Serbia, given that it is not possible to take the exam in B&H. The codex of falconry calls for proper hunting. It states that not every bird is like a falcon, falcons are only those birds that hunt for prey that men could actually use for food.
Kaled goes hunting across B&H with the birds that he owns, but at first, he was faced with problems due to the implementation of the CITES convention. At the Association of Falconers, they have implemented it fully. He also goes to traditional hunting gatherings outside of B&H – in Karlovac, Novo Mjesto etc., which he sees as an opportunity to socialize and exchange ideas with other falconers. Falconers from the association are permitted to legally import falcons. Last year, association member Adis Ahmetspahić managed to breed a peregrine falcon under regular conditions, which makes this the first bred falcon in B&H. This year, Kaled will succeed at breeding a saker falcon, which was first imported into B&H. He says that it is a difficult process until the birds become productive.
FALCONRY CENTER In the village of Ostojići on Bjelašnica, there are plans to soon start a Falconry Center with a School of Falconry, where visitors will be able to get to know the history of falconry, and try it out for themselves. 109

Delicacies From Visoko 114
PREDSTAVLJAMO / INTRODUCING
Visoko deserves special mention as a place where the tradition of dry meat production had been refined for centuries, following a special recipe and, of course, the methods of drying on the beech tree. The specific taste and smell, and protection of the meat placed in the upper part of the smokehouse makes the smoke a decisive factor in the production of the irresistibly tasty Visoko dry meat specialties. It is well known that gastro delicacy lovers always stop by, or come here specifically to buy and taste the Visočka pečenica and other dry meat products of domestic taste and traditional quality.
FEEL THE TASTE AND SMELL OF DELICACIES FROM THE VISOKO AREA How does Visoko smell? What does it taste like? The smell of Zlatna džezva coffee reminds of it in the garden of Srhinje which will begin to smell of strawberries in a day or two, the sweet and juicy strawberries that were served at the royal palace in ancient history, when Visoko was the royal city. It reminds of colours and tastes of a plate served on the table for the guest to have a “quick bite”, with baked paprika from Moštre of unmatched quality, thinly sliced dry meat and sujuk (dry sausage) from Visoko, homemade cheese from the Buci-Kralupi area, and autochthonous kajmak (clotted cream) from Podvinci. This is what Visoko smells and tastes like - powerfully, lusciously, royally...
VISOČKA PEČENICA Visočka pečenica (dried beef product) was recently officially declared a national product with protected geographical indication and a special label. The branding is important because it is a stepping stone for gastrotourism, but also for the taste tradition of the Visoko area. Visoko has always been known for the quality of dry meat products with unmatched smell and taste in BiH and beyond. Arnautovići near 116
PAPRIKA FROM MOŠTRE Not far from the town centre, the widely known “paprika from Moštre” is cultivated on the fertile soil of the Moštre area, the agriculture symbol of this area and a quality trademark. Only experienced hosts who tasted it will tell you that they go to Moštre specifically to get this paprika, that it has no competition in many marketplaces, and its quality is likely unmatched.
SRHINJE STRAWBERRIES A ROYAL DELICACY Srhinje near Visoko is certainly a place with beautiful natural environment. In the middle ages, it was known for the production of the sweetest and the juiciest strawberries, and it still is. The strawberries were cultivated in royal gardens and served to the privileged royal nobility during important events. The tradition “says” that
they have been cultivated since the “Kulin Ban and the good old days”, and passed down through generations. One thing is certain: they are the sweetest delicacies, whether you make cakes, jams, sweets, or you it them fresh, the quality is excellent, and the taste is traditional.
BUCI-KRALUPI CHEESE AND KAJMAK (CLOTTED CREAM) FROM PODVINCI The wealth of natural beauty and landscapes of Buci-Kalupi and Podvinci areas is certainly completed by wide pastures, so diverse that they constitute the basis for the production of healthy food from this area. The specificity of this area lies in dairy products from these pastures, with outstanding taste and quality. The cheese produced by small traditional family households deserves special mention. They are proud of it and sell it from their homes, and in the wider area. The kajmak from the Podvinci area is indeed an inevitable dairy delicacy, with traditional recipe which surely represents a weekend specialty. Combined with the famous dough fritters from this area, their taste is unforgettable for everyone. The homemade cheese and kajmak guarantee a delicious lunch, so welcome and bon appétit.

Sam nije pio kafu.
I tu nema granica.

Coffee
THE BLACK QUEEN, AS COFFEE IS SOMETIMES REFERRED TO, HAS CONQUERED THE ENTIRE PLANET, SO THERE IS ALMOST NO COUNTRY IN THE WORLD WHERE THIS STIMULATING BEVERAGE IS NOT CONSUMED, WHICH CAN RELAX YOU, AND REFRESH YOU, DEPENDING ON YOUR COMPANY, STORIES AND ATMOSPHERE IN WHICH IT IS ENJOYED. hen the smell of fresh coffee spreads throughout the house, it is a moment that separates night from day, says Japanese writer Haruki Murakami. Across the entire planet, that enchanting smell calls for waking up, movement, action or, opposite to that, peacefulness, a moment of relaxation and mandatory conversation. 122
The coffee-drinking tradition is exceptionally long in our country. The black queen was brought to Bosnia and Herzegovina by the Ottomans upon their arrival in 1463, and the ways of enjoying it have not changed significantly since then. The fildžan (coffee cup) and Turkish coffee, which are still popular today, stem from that period. Turkish coffee was always served in a cup with a su-
gar cube, and it was later renamed to Bosnian coffee; it was also often served with a Turkish delight. Today, in our country, despite the wide availability of espresso coffee, cafes that serve their guests Bosnian coffee are very popular. In the lives of people in B&H, coffee and cafes have an irreplaceable role in everyday life and for centuries – since the time of the Ottomans – a cafe and coffee cult has
INTERESTING FACTS ABOUT COFFEE In 1657, king Charles II of England forbade all „cafes“, i.e. places where coffee was served, as he thought that people would gather there in order to conspire against him. He was not a coffee drinker. Honore de Balzac drank up to 60 cups of coffee per day. In honor of this beverage, in 1732, Bach composed a cantata titled „Coffee“. In Italy, espresso is the most popular coffee, served in a small cup and usually consumed standing up.
The French combine an equal amount of filtered coffee and milk in a large cup. In Turkey, they say that coffee must be black like hell, strong like death and sweet like love. However, the Turks drink tea a lot more often. In Saudi Arabia, coffee is often flavored. Americans drink the most coffee, i.e. espressos and cappuccinos, regardless of the time of day.
been generated. Coffee is an integral part of all customs here, and life in general, writes Raif Čehajić, the B&H author of the book „Coffee – a Magical Beverage“.
A coffee invitation in our country can mean a relaxing conversation, enjoying some socializing or a purely business-related conversation, as well as a romantic date.
In Bosnia and Herzegovina, there are specific names for coffee, based on its function in the given moment. Therefore, we have „dočekuša“, which we serve our guests to welcome them, „sikteruša“, coffee that signifies that we will not be spending much more time together, „sweet“, coffee, which people drink when there is some happy event that needs to be marked. There is also „ razgovoruša“, coffee which has the purpose of making one of the participants of the meeting feel better about some life event, or it is simply coffee during which conversation flows.
Based on one B&H survey, around 86 percent of the respondents consume traditional coffee, and they mostly drink it once or several times per day, i.e. four to six times per week. A whopping 79 percent of them starts their day with a cup of black coffee, and 74 percent of the respondents drink it several times per day. It is important to add that coffee is enjoyed equally by everyone in our country, regardless of whether they call it kafa, kava or kahva. Because drinking this magical beverage is synonymous with Bosnian-Herzegovinian ćeif (pleasure) and enjoyment that everyone wants to feel. And there are no limits there.
COFFEE INVITATION
Perhaps the most interesting of all, which proves our connection to this beverage, is that after a coffee invitation, and during the actual meeting, the participants may not even consume this beverage, i.e. they will drink something else.
would be spread out into everyone's coffee cups. There used to be a difference between „male“ and „female“ cups. The male ones were smaller as men liked their coffee strong, and the female ones were slightly larger, because women liked to add more water or milk.
FIRST CAFE IN SARAJEVO
NO LIMITS FOR ĆEIF (PLEASURE) The way of preparing our coffee has remained unchanged since the moment of its arrival to Bosnia and Herzegovina. Initially, a šerbetnjak (coffee pot) or some other dish was used for heating up water. Then, coffee that has been ground in a coffee grinder would be poured into a džezva (coffee pot) and then „poured over“ with boiling water, but not to the very rim of the coffee pot. After stirring, the coffee pot would be placed back on the heat, so that the coffee would „rise“. The thick part on the top, i.e. the „cream“ ,
The oldest known facts about cafes in Bosnia are considered to be those recorded by Turkish historian and writer, Ibrahim effendi Alajbegović, who was originally from Bosnia. Traveling around Bosnia in 1592, he claimed that there were cafes on almost every corner across Bosnian cities, and that there were the most at Baščaršija in Sarajevo, but also on the eastern gates of the city, at Vratnik Mejdan. As the Vratnik road was the main road towards the east, during the time of the Turks, those cafes ("Pod Kestenom", "Mušanova Kahva" etc.), were frequented not just by the locals, but by many travelers, writes author Čehajić.

KUHINJA / CUISINE
IMAM BAYILDI
Sastojci: • 5 patlidžana • glavica luka • čehna bijelog luka • 3 tikvice • 3 paradajza • pola kg mljevene junetine • ulje • svježi peršun • začini (so, biber) • kiselo vrhnje Priprema: Uzmite srednje velike patlidžadne, uklonite im repove i prepolovite ih, a njihovu unutrašnjost izreckajte nožem, zatim ih posolite i ostavite da stoje 10 minuta kako bi patlidžan izgubio karakteristični gorkast okus.

IMAM BAYILDI
(STUFFED EGGPLANT) Imam bayildi is one of the tastiest spring and summer dishes with vegetables from the Ottoman period, with the recipe dating back to the Byzantine Empire. This is a dish that is prepared with eggplants, which are stuffed with meat or vegetables. It is a popular recipe in Turkey, as well as Balkan kitchens, and it has been preserved to this day. There are two versions of this recipe, and we recommend that you make imam bayildi with meat. Ingredients: • 5 eggplants • 1 onion • garlic clove • 3 zucchini • 3 tomatoes • half a kg minced beef • oil • fresh parsley • spices (salt, pepper) • sour cream
Preparation: Take medium to large eggplants, remove the stem ends and halve the eggplants, and carve out the insides with a knife, then add salt and leave 10 min, in order for the eggplant to lose its characteristic bitter taste. Finely chop the onion, then fry on oil until it gets translucent, then add meat and spices. Fry the meat until it is almost done. Then wash the salt off the eggplants, dry it off and fry on hot oil for two minutes. Place them on paper towels in order to remove excess oil, then line up the halves in a round pan so that the skin is on the bottom. Gently press into the middle of the eggplant with a fork, and stuff all the halves equally with minced meat. Chop up the tomatoes, zucchini, parsley and garlic in another bowl, add salt and pepper, and then use the mixture to fill up the space between eggplants. Cover the pan with foil and bake for approximately 30 minutes, then remove foil and allow for the dish to become golden. Towards the end, pour sour cream over it, then return to the oven for another two to three minutes.
Peel the potatoes and zucchinis and chop them up into little cubes. Bring 1,5-2 l of water to boil and cook with the vegetable stock and vegetable cubes. Ten minutes later, take out some of zucchini cubes and put them aside. Squish the garlic and mix it with the soup. When the soup becomes soft, you can use a blender to mix it adding cooking cream, and then season it with salt and pepper. Cook again and add the remaining zucchini cubes. Decorate with parsley.
