July saw three Australian states plunged into lockdown, thanks to a pandemic that’s fast becoming a part of our every day lives. Knowing that half of the country is confined to their collective homes has a way of putting life into perspective, bringing with it a newfound appreciation for the little things. A bunch of flowers, a trip to the park, a dinner out, our parents, our friends – all things we can easily take for granted, and often do. But in the current climate, those simple pleasures can be taken away from us at any given moment. The lesson? Make the most of every moment, and make every moment a little extra special if you can.

That’s the lesson I’m running with anyway, (along with the importance of getting vaccinated!), and that’s why this month, Get it Magazine is all about indulging. Be it food, wine, fashion, or fun – go a little extra.

It’s far to easy to get caught up in busy, in day-to-day stress, in everything that’s wrong with the world (and I get it, there’s plenty). So, I’ve decided to take some time every day, to do a little something just for me. On a good day, it might be a sneaky trip to a day spa. On a busy day, it might be grabbing a coffee, taking a walk, or making time to cook myself a yummy breakfast. Over the past few weeks, I’ve made time to dance like crazy with my two youngest kids, cook with my middle son, and learn more about footy and reptiles with my eldest two. It’s in these little moments, that we realise just how amazing life is, how precious, and how fleeting. And that’s why we all deserve to indulge a little, every single day. Matchsmith director Holly Bartter talks to Get It Magazine about online dating in 2021 and how to get the most out of your profile in the search for love online. 1. Tell us about what you do, and how did you get started in this industry? I’m the founder of Matchsmith, an online dating support service - everything from helping clients perfect their dating profiles, to actually managing those for them. I’ve always worked in both the corporate and creative spaces and I knew there was a niche there to take the guesswork and legwork out of online dating, so Matchsmith was born - I don’t consider myself a dating or relationship coach, I focus on the personal branding side of online dating, and putting your best foot forward! 2. What kind of people do you work with, is there an average client type? All sorts and all ages! I have clients 60+ who are just getting into the dating scene for the first time, or younger men and women who are looking to ‘get serious’ about online dating and want some objective advice and guidance - I get to meet really fantastic individuals through this work, all united by their focus on finding someone special. 3. Has the attitude to online dating changed in recent years? Definitely - it’s become so much more

legitimised and it’s a common way to meet your partner - in years gone by, it was looked at as something awkward, but with so many more people working from home now, lockdowns and busy schedules, you can’t just rely on locking eyes with a stranger at a bar anymore! 4. Does dating on the Gold Coast have its own unique flavour? I think GC daters are relaxed and easygoing - there are so many fantastic first date locations, and you don’t have to feel the city hustle and bustle and pressure for a date night - a hike in the hinterlands or a beach picnic are all easy to coordinate. 5. What are some must-do tips for daters? A photo refresh for your online dating profile can work magic - it doesn’t need to be a professional shoot, but should showcase you feeling your best. Definitely take breaks from apps if you’re feeling ‘app fatigue’ from endless swiping - but you’ve got to be in it to win it! 6. What is your favourite part about what you do? I love seeing my clients succeed at putting 10

themselves out there, and feel confident with what’s online, and surprise themselves with the response from other matches! Of course, I also love to see them meet someone special and know that I’ve helped a little in that equation.

I

love food and cooking and indulgence in general. Mess with the quality of my coffee, my wine or my butter and there WILL be trouble.

I do feel however that ‘food wankery’ is slowly taking over food enjoyment. Since the arrival of Masterchef and its ilk we all feel intimidated by both the ingredients and the methods. You can’t whack a steak on the BBQ You have to inject it with a syringe full of organic smoked hickory, chuck it in a sous vide for 12 hours then gently char over a fire of roasted chestnuts. It exhausts me just thinking about it! Our coffee beans have to pass through the digestive system of an Indonesian civet cat before being roasted in order to pass quality control! (vomit emoji). I think that the sensual enjoyment of food is enhanced by the quality NOT the cost of the ingredients. Expertly toasted white bread slathered in salted butter with just the perfect amount of vegemite (according to personal preference) can be a perfectly indulgent feast for the senses. The perfectly boiled egg dipped lightly in salt can be heaven. My personal bit of food wankery is that I like this to be truffle salt! The company also enhances the enjoyment. Wine and cheese with friends beats solo caviar any day. You should never be afraid to ask a waiter exactly what a mysterious unknown ingredient is. Curiosity is to be rewarded not derided. In these times of change and upheaval we need indulgence and comfort food more than ever. I’m happy to be adventurous with my food choices and I love an exotic ingredient, but sometimes I just want a perfect cup of English breakfast Tea and a scotch finger biscuit.

“Countless emails, messages, DMs and comments over the years from people who have made the same lifestyle change after being inspired by our content. It’s very humbling to think that we’ve made such a difference to someone’s life.” Their travels to date include France, Spain, Portugal, and Morocco, before crossing the Atlantic in late 2015 to the Caribbean. “We loved sailing in Morocco because it was off the beaten track,” Nick says. “We also loved France, particularly the Atlantic coast which has an incredible wild beauty, and the Bahamas which has the most amazing blue waters.” At present, Nick and Terysa are enjoying sailing across the New South Wales and Queensland coasts, a trip they describe as a “very different and very beautiful experience”.

Terysa Vanderloo and Nick Fabbri didn’t do things by halves when it came to their sea change, leaving their lives in London in 2015 to set sail around the world. The couple speak with Get It Magazine’s Holly Bartter to talk about adventure, community and the freedom of #boatlife. While they both had experience out on the water, Terysa recalls when she and Nick were ‘bitten’ by the sailing bug for good. “In 2013 and 2014 we took six weeks off to do an extended sailing holiday around France - it was then that we decided we needed to make the move!”

Life on the water today revolves around recording and sharing their travels with their loyal audience. “We started the YouTube channel in 2017 after arriving in the Caribbean and realising we needed a creative outlet and a way of documenting our sailing adventures - the channel gained momentum quickly,” says Terysa. Terysa and Nick found their footing with a community of fellow sailing enthusiasts through social media. “More and more people can take inspiration from this lifestyle.

After such a dramatic change in lifestyle, the couple received a variety of reactions from friends and family.

“It’s about the freedom of living on a boat, of being able to point your bow in the direction of your choosing and cultivating a connection to the ocean and nature.”

“A lot of people didn’t believe we would go through with it - it’s safe to say our parents were a little worried. However, our families

“We have loved the Whitsundays - so many beautiful islands, and the snorkelling and beaches are beautiful, with some great hikes. The weather is generally gorgeous, and everyone in Queensland is so friendly.” With many adventures yet to come, Nick and Terysa are excited for what the future holds. “We’re currently in partnership with the Australian catamaran manufacturer Seawind Catamarans and our new boat is being built by them right now. We’ll be taking delivery early next year and continue to explore the world by boat, documenting it all.” Navigating their way to a life on the water may not have always been smooth sailing, but Terysa and Nick wouldn’t have it any other way. “There’s no point to life at all unless you’re doing something you love. Change is always hard, but now we’re living a lifestyle that’s authentic, exciting, and extremely rewarding.”

Why your

introverted

personality is a

strength Being an introvert in our society is often associated with a lack of confidence, having less fun, or being less successful. However, as a successful entrepreneur and mindset coach (and fellow introvert), I’m here to debunk these myths, and provide with my top tips on embracing your own introverted super powers.

Tip 1 - Focus on your strengths Being an introvert comes with an array of really awesome personality traits. Harnessing these traits and transforming them into strengths that can work in your favour, Start by reflecting on all your positive introvert qualities and then focus on using these to your advantage. If you are an introvert, you likely have the following key traits that are actually incredible strengths. You may be great at conversing with people one to one and building strong connections, listening deeply to those around you and bringing compassion to your relationships.

Tip 2 - Invest in your personal and business development If you’re anything like me, you will have been told that as an introvert you are ‘less than’ GET IT August 2021

your extrovert friends. If you’ve been told this your entire life, it’s possible you are suffering from a lack of confidence, making it impossible to realise your dreams or reach your goals. This lack of confidence and selfdoubt is not who you truly are, it’s definitely not your true nature. The good news is that you can change these beliefs and transform your mindset. It just takes some work. The best thing you can do to aid this to invest in your personal development and growth. Take courses, invest in a business or mindset coach, and engage in practices which boost your confidence. Additionally, make sure you get out of your comfort zone. Practice the things that you feel you struggle with, and once you become comfortable with them, you’ll see an entire confidence boost. For example, I used to be quite uncomfortable in front of the camera, but through practice and taking a chance I am now super active on Instagram stories and other video content. I now feel comfortable being on camera and have discovered that I’m actually really good at it. But it does take practice, I didn’t wake up one day and become confident. Overcoming my limiting beliefs has boosted my overall

self confidence and given me the ability to trust that I am capable at learning new skills and getting out of my comfort zones.

Tip 3 - Choose where you spend your energy As introverts we recharge our energy from being alone. This means we need to be careful about where we spend our energy. Instead of attempting to be the centre of attention at parties or in large networking meetings, you may find that you are better off quietly chatting to one or two people to build deeper relationships. You might also find you enjoy sitting back and observing everyone and choosing who you might want to connect with in the future. If you have a busy week with events, meetings and group appointments make sure you schedule in time to be alone. Simply working from home for half a day, taking a walk or sitting quietly one evening can help you recharge and stay energised for your busy days ahead. So, all you introverts out there, it’s time to take advantage of your amazing introverted qualities, invest in your personal development and mindset and take the time to relax. You are equal to your extrovert friend and colleagues, and your authentic introverted nature is an asset to your personal life and to your business. Once you learn to embrace all your incredible strengths, you’ll be unstoppable.

Lock in the heat this With the cooler weather settling in, simply turning up the heater for a few months might seem like an easy fix. Giving Back Staying True Entrepreneur and soon-to-be charity founder Shannen Simmons sits down with Get It Magazine’s Holly Bartter to talk about the causes close to her heart and coming together to support those in need. A dedicated mum, university student and business owner, you wouldn’t think Shannen Simmons would have any spare hours left in the day, but you’d be surprised. Giving back has been a focal point of Shannen’s life, starting with her first interactions with The Sanctuary, a women, children & pet refuge. Shannen shares, “I decided to donate to The Sanctuary by giving the women facials with our skin clinic, Aesthetically You Rejuvenation Clinic. Many other refuges don’t allow boys over the age of 12 to come with mum, or the family pets. The Sanctuary is our local refuge on the Gold Coast, and provides a “safe haven” for those escaping domestic violence.” The experience made a lasting impression on Shannen, and her connection with this organisation runs deep, she reflects, “I’m part of the 1 in 6 women who have experienced domestic violence, and The Sanctuary was my plan B when I was leaving a DV relationship.” Without government funding, The Sanctuary relies heavily on the community to keep the doors open, and Shannen knew she needed to take action: “I spoke with Simone Patterson, the founder, and GET IT August 2021

I went home and thought, ‘I would love to help them’, but had no idea how to make a difference.” A few months later, inspiration arrived, with Shannen being introduced to the world of pageantry. “A client of mine was entering a pageant, and we presented a prize from our business and went along to her charity event. I met the directors and I knew at that moment that this could be my way to help The Sanctuary.” Shannen’s instinct was correct, and she won the event but took out a whole host of special prizes, including Miss Charity Queen. “As a part of the pageant, we raise money for a charity of our choice, and I knew I would be raising money for The Sanctuary. I joined forces with Gold Coast Future Females, and we held an event together which raised over $12,000.” Fast forward to today, and Shannen’s charity work has gone from strength to strength, and she and her husband are in the process of launching their own charity, she explains: “We are extremely proud to create this, we still have much work to complete, but it’s happening. Behind the Smile Foundation will provide awareness and education on domestic violence & provide financial assistance to other organisations such as The Sanctuary.” As a Gold Coast local, Shannen knows the importance of coming together as a community to support one another: “Tragedy makes us pull together and to 22

pick up the pieces. Through our upcoming Behind the Smile Foundation, we endeavour to educate people on those domestic violence red flags - as a community, there is always something we can do and more to be done.” With a life that won’t be slowing down any time soon, Shannen reminds herself that even in the more overwhelming moments, she’s prepared to take on every challenge. “I always say ‘life doesn’t throw anything at you that you can’t handle’” - so watch this space, as this charity leader is just getting started.

The cooler weather often brings with it an increased appetite for delicious, home cooked meals. Keep it healthy with these fish based recipes, developed by By Francesco Castellana, head chef at Vesper Bistro and Bar.

Crispy snapper

potato & caper puree, preserved lemon salmoriglio Serves 4 Ingredients Salmoriglio Dressing 60 ml of Extra virgin olive oil, 1 large fresh lemon, 50 g preserved lemon skin (no seed), 1 x garlic clove (peeled), 10 g Parsley leaves 10 g Basil leaves 10 g Mint leaves 2 g Dry oregano 1 small red chili (washed, cut and deseeded), Murry river salt to taste. Potato Puree 250 g of Dutch cream potatoes (washed, peeled and diced), 50 g of unsalted butter, 15 g of finely grated Grana Padano cheese, 25 g of lilliput caper in vinegar (strained and dried), 40 ml of warm full cream milk (if needed). Fish 4 x fillets of baby snapper pin boned (around 180g size), 5 g of Murray river salt, 25 ml cooking olive oil 80 ml dry white wine, freshly cracked black peppercorn to taste. Garnish Sliced shallot and mixed herb leaves. GET IT August 2021

Method To prepare the salmoriglio dressing, wash and chop the herb leaves. Finely slice the red chili. Using a micro plane grater, zest the fresh lemon skin and juice the pulp. Dice the preserved lemon skin and paste the garlic clove, then combine with the extra virgin olive oil and progressively add: dry oregano, the chopped herbs with chili, fresh lemon juice and zest. Stir well and taste to balance salt level. Transfer the dressing into a container with a lid and let it macerate in the fridge for at least 1 hour for flavor development. Remove from the fridge at least 20 minutes before serving. In a large pot boil the Dutch cream potatoes in salty water until soft and fully cooked; it should take approximately 20 minutes. Once cooked, remove the water and press the potatoes twice through a drum sieve to obtain a silky texture. While the potatoes are still warm, gently stir in the unsalted butter and gradually add the grated cheese. Fold the lilliput caper into potato puree. The consistency should be smooth and firm, however if you wish a softer version, simply add the optional warm milk. Taste the result for accurate seasoning. Keep the potato and caper puree warm until needed. To cook the baby snapper, heat a non-stick pan over a gentle flame on the stove for 5 minutes. Dry the baby snapper skin with some paper towel and season the flesh with salt and pepper. Once the pan is hot, drizzle cooking olive oil and start searing the snapper fillets from the skin side down. While cooking, keep the fillets under light pressure from a flat spatula to prevent skin cracks. After 3 minutes, check for a golden color and flip the fillets in the pan on to the flesh side; remove from the stove flame for a few seconds and deglaze gently with white wine (this will avoid a risky flambe’!). Return to heat until the fish is cooked through or, slightly under, which is my preferred way. To present the dish, over a large warm plate, place the potato & caper puree in the center and drizzle around it 2 full tablespoon of preserved lemon salmoriglio, then arrange the seared snapper fillet over the puree. Use some whole fresh assorted herb leaves and shallot slices as garnish.

BBQ Prawns

with guanciale, roasted lemon jam and rosemary Serves 4 Ingredients Roasted Lemon Jam (recommended to prepare one day in advance) 4 x large lemon (cut into quarter, juiced and deseeded), 10 ml vegetable oil, 320 gr caster sugar, 1 lt filtered water, 50 ml apple cider vinegar, 3 gr sea salt. Rosemary Infuse Oil 60 ml of Extra virgin olive oil, 10 gr rosemary (washed and picked), 2 garlic cloves (peeled from the skin and chopped), 1 pinch of dry chili flakes, Prawns 4 x large Skull Island green prawns U6 size, 12 x thin slices of guanciale (air cured Pork jaw), 10ml dry white wine,

Method to make the roasted lemon jam, wash and cut the lemons into quarters; squeeze the juice and keep it aside until needed, remove the seeds. In a medium pot, bring the water to a boil and blanch the lemon wedges for 3 minutes. Once complete, discard the water and repeat this process twice over. The key reason for triple blanching step is to reduce the bitterness from the lemon pith (the white part of the inner citrus). Once triple blanched, drizzle the lemon wedges with vegetable oil and roast them in the oven at 220 C˚ for at least 40 minutes or until brown and dark in color (especially on the skin side). If you prefer deeper and richer flavour, grill the lemon wedges on a BBQ instead of baking. While the lemons are roasting, prepare the syrup by combining caster sugar and filtered water in a non-stick pot; bring it to low simmer on the stove. Once the lemon wedges are fully roasted, place them in the syrup on the stove and continue to cook for at least 2.5 hours over a low flame. During this time the lemons will soften as most of the water evaporates, allowing the sugar to further penetrate in the lemon peel. To complete the jam, add the lemon juice, apple cider vinegar and salt to the syrup. Using a powerful kitchen blender, blitz everything until smooth and shiny. Pass the jam through a drum sieve while still hot. Then, let it cool and store in the refrigerator in a well-sealed jar for at least 24 hours before consumption. For the infused oil, add all the ingredients to a small pot (olive oil, rosemary, garlic and chili flakes) and place over stove at low heat. The ideal temperature for infusion is 70 C˚ for 30 minutes. Once the oil is ready set is aside until needed. Clean and devein the prawns, peeling off the shell but leaving the full head attached.

To make the prawns seasoning, using mortar and pestle to crush together black peppercorn, fennel seed and dry oregano until very fine, then stir in the white wine and with a culinary brush spread the mix well over and around the prawn flesh.

¼ tsp. Italian dry oregano.

After the seasoning wrap tightly each prawn tail with the thinly sliced guanciale.

Garnish

Turn on the BBQ till it reaches high heat and grill the prawns for 1 minute over each side. Allow the guanciale to melt nicely during the cooking.

Serve the prawn on a spoonful of roasted lemon jam and finish with a drizzle of rosemary infused oil and a fresh lemon wedge.

Low cooked octopus,

white fava beans puree, chicory and chorizo oil Serves 4 Ingredients

Method

The Octopus

to prepare the octopus, the tentacles well under cold running water for a few minutes.

4 x large tentacles of South Australian Octopus (approx. 800gr)

In a large bowl combine the octopus tentacles with the other ingredients: red onion, carrot, celery, cooking oil, garlic, aromatic herbs, peppercorn and salt. Mix everything well and let macerate in the bowl covered with cling film (or airtight container) for at least 2 hours in the refrigerator (better overnight).

50 gm red onion (peeled and sliced) 50 gm carrot (peeled and sliced) 50 gm celery (diced) 40 ml cooking olive oil

Preheat the oven to 160 C˚ with fan (or 180 C˚ static). After macerating, place the octopus mixture in a deep cooking tray and cover with aluminum foil, then cook in the oven for at least 1 and half hours or until the tentacles are soft.

200 ml red wine for cooking (pinot noir recommended) 2 x whole garlic clove 1 sprig of thyme 1 sprig of rosemary

Remove from the oven and carefully pick out the octopus tentacles from the tray, set them aside till needed (the octopus should reduce in size by 50%). Strain, cool and preserve all the residue cooking liquid.

To make the puree, in a pot blanch the split fava beans (previously soaked) in salty boiling water for 8 minutes. Then, dispose the blanching water, keep the fava beans in the pot and add the vegetable stock and the diced potato. Keep cooking over medium heat for 40 minutes, both potato and fava beans must be completely cooked through.

Using a powerful blender, blitz the potato and fava bean at medium speed until smooth, fold in extra virgin olive oil and salt to balance the flavor.

Keep the puree well covered in a warm place.

To make the chorizo oil, peel the chorizo from the skin and grate it into small grains. Inside a shallow pan, combine the grated chorizo with olive oil, paprikas and cayenne pepper. Then, let it infuse over low heat until the chorizo is crispy and fully melted (approx. 40 minutes). Keep the infused oil warm before serving.

To garnish, slice the chicory into 4cm leaf and stalk, then dress it nicely with white balsamic vinegar and salt. Allow the dressing to “break” the texture of the chicory for about 10 minutes.

To assemble the dish, grill the octopus over a BBQ using a kitchen brush to drizzle its own cooking liquid over the skin.

Garnish 120 gm chicory (well washed)

In a serving plate arrange the fava bean puree in the center, then top it with the grilled tentacles, place the chicory on the side and dress everything with a generous spoonful of warm chorizo oil.

Tuna ‘crudo’

with spicy citrus salad Serves 4

Ingredients

Method

Citrus salad

To prepare the salad, all the citrus well and using a peeler remove the outside skin (rind) avoiding the white part as much as possible. With a sharp chef knife, slice the rinds of the lemon, orange and limes into a thin julienne.

2 x fresh lemon (rind and segments ref. to method) 2 x fresh orange (rind and segments ref. to method)

In a medium pot combine the filtered water, caster sugar, bay leaf, fine salt, black peppercorn, apple cider vinegar and bring to a low simmer over the stove.

2 x fresh lime (rind and segments ref. to method) 250 ml filtered water 100 gm caster sugar

Once the syrup mix is ready add in the citrus julienne and cook for at least 30 minutes, always keeping at low boiling point. The rinds must be soft but still holding in shape before removing them from the heat. Once ready, let cool at room temperature keeping the liquid and citrus julienne together.

1 x bay leaf ½ tsp cracked black peppercorns 4 gm fine table salt

Next cut off the white pith from the whole citrus and with the help of a small knife gently slice the segments out of the white membrane. Store into a container until needed.

45 ml apple cider vinegar Citrus vinaigrette (citronette) Juice obtained from the trims of the citrus listed above

To make the citronette, squeeze the left-over cores of lemons, oranges and limes, to obtain as much juice as possible. Add salt and sugar then whisk in the olive oil.

3 gm sea salt 10 gm caster sugar

To prepare the ‘crudo’, carve the tuna into half centimeter thick slices and place directly on serving plate. Season with white peppercorn and drizzle with white soy sauce. Allow the condiments to macerate for at least 10min at room temp.

75 ml good quality extra virgin olive oil Tuna 350gm raw fresh sashimi grade tuna loin with no skin (you could also use kingfish if preferred)

When ready to serve assemble the dish by placing the citrus segments over the tuna, add the preserved rind julienne without the syrup, then drizzle with the citronette. Garnish with a few coriander leaves and a light sprinkle of cayenne pepper.

Community and connectivity at Saint Stephen’s College Get it recently spoke with Mrs Leith Biggs, Dean of Junior College at Saint Stephen’s College What is the best part about your job? Without a doubt it is the strong sense of connectivity between staff, students and parents. There is a genuine sense of belonging within the College community. It is an environment where both parents and their children are cared for and supported so the child can discover and build their own unique future on a modern campus which provides the perfect setting for discovery and innovation. Are there benefits in having an early learning centre as part of the broader College community? Yes definitely. Our Early Learning Centre caters for children from two and a half years of age through to school age with the single biggest benefit being that the children are able to interact with the Junior College on a regular basis making the transition to Prep easier. The connection doesn’t just stop with the Junior College either, for example, some of our senior design students put together the concept plan for our recently upgraded playground. Our senior students were absolutely delighted to see their designs come to fruition and to see the many happy faces the new playground produced. How involved are families? Families are an integral part of the Saint Stephen’s College community and, while they can’t always be on campus with us, our staff make sure the communication between the College and home is strong and constant, allowing us to celebrate their children’s achievements together. As a College we focus on the social, emotional, physical and spiritual health of each child and get to know them as individuals. Together with their parents and guardians, we ensure each student is not only respected and heard, but also develops the integrity and responsibility to serve others. They say it takes a village to raise a child and at Saint Stephen’s College, families find our College community, strengthened by its diversity, is a place where they feel they genuinely belong.
