In February, we have the new-look National Fish & Chip Awards. They have now run for over 30 years with the baton passing from Seafish to the National Federation of Fish Friers (NFFF) ably supported by their Principal Sponsor, the Norwegian Seafood Council. The prestige and publicity gained by the winners in all of the categories gives a real boost to the sector.

We will feature all of the winners in the April/May issue of Fast food Professional magazine.

We then have British Pie Week following in early March and also the many Supplier and Industry Trade Events to help and encourage operators to “be the best” at what they are doing.

It is good if you can make an effort to attend these days as you will get to see all of the new developments that the sectors have available and also a great opportunity to network with other operators and share tips and secrets.

When you are in your shop or premises it is very easy to feel that you are on your own, but there are many others facing the same or similar issues and through networking and sharing thoughts on social media, you may well find an answer.

I hear from operators who are making subtle changes to the way the work to deal with many of the issues we now face. When the general public are struggling financially we need to find a way to help them and ourselves – different choices and offers on a daily basis encourages them to spend with us and allows us to protect our margins. Customers know that prices have gone up so we need to amend our offer to suit them.

I joined the foodservice industry in the late 1960’s and it always amazes me how far we have developed since then, and I look forward to the future developments. The sector is not dying, it’s just changing.

The National Fish and Chip Awards has undergone a relaunch since Seafish last ran the event in 2020. Following a break due to Covid, the awards have been taken over by The National Federation of Fish Friers (NFFF) supported by their Principal Sponsor, The Norwegian Seafood Council and other leading sponsors from our industry. The Awards Ceremony will be hosted by The National Federation of Fish Friers (NFFF), on the 28th of February 2023 at the Park Plaza, Westminster Bridge.

Round table hosted by the Norwegian Seafood Council & NFFF brings together Fish & Chip Industry

Across section of the fish and chip industry came together in November at a round table, ‘The Future of Fish & Chips’, hosted by the Norwegian Seafood Council and the National Federation of Fish Friers (NFFF).

Held at the Wetherby Whaler in Guiseley, Leeds, sessions led by the hosts along with Seafish, explored the current issues facing the industry and took a deep dive into what the future may look like for fish and chips.

Horizon scanning insights delved into the challenges and opportunities posed by changing consumer habits, generational demands and other external factors contributing to an ever-evolving market.

The round table, attended by stakeholders of varying sizes, from multiple regions of the country and from different parts of the supply chain, included a facilitated discussion looking at tangible actions required to drive the industry forwards.

HFSS - High in Fat, Salt and Sugar – legislation has recently been introduced for the retail industry, leading to new rules on the advertising and selling of certain products with high HFSS levels.

Central Foods named in top 100 Northamptonshire businesses again

Frozen food distributor Central Foods has retained its position as one of the top 100 performing businesses in Northamptonshire.

The company was first included in the list, compiled by Grant Thornton, in 2017. It has made regular appearances ever since, including in 2021.

Now Northamptonshire Limited 2022 has been unveiled and Central Foods is once again listed in the top 100 businesses.

In early 2022, East Coast supported the industry by teaming up with the National Federations of Fish Friers to launch a nationwide ‘Save Scotland’s Fish & Chip Shops’ campaign, securing a significant amount of broadcast, print and digital media coverage.

Located just two minutes’ walk from Musselburgh beach and Fisherrow Harbour, the award-winning East Coast Restaurant and Fish & Chips Takeaway is owned and operated by Carlo and Katia Crolla.

The Crolla family has been serving the local community for nearly 50 years. Styles may change, but great flavours, family heritage and warm, friendly service remain as important to Katia and Carlo today as they did 49 years ago.

East Coast was named the best in Scotland and one of the top 10 in the UK by The Sunday Times on Sunday 3rd July 2022. 1. What is your connection to fish & chips?

The Crolla family has been serving the local community from our fish and chips takeaway for nearly 50 years. Styles may change, but great flavours, family heritage and warm, friendly service remain as important to me and my wife Katia today as they did 48 years ago.

2. What do you love most about fish & chips?

I love eating freshly cooked fish and chips in the salty sea air. East Coast Fish & Chips Takeaway is located just two minutes’ walk from Musselburgh beach and Fisherrow Harbour on the outskirts of Edinburgh.

The rapidly escalating costs. In March 2022, we also supported the industry by teaming up with the National Federations of Fish Friers to launch a nationwide ‘Save Scotland’s Fish & Chip Shops’ campaign.

The price of fish has doubled, energy bills have spiralled, and cooking oil is more expensive than ever. As a result, some of the nation’s fish and chips shops are now struggling for survival.

By teaming up with the National Federation of Fish Friers, we helped to do our bit by encouraging people to support their local fish and chip shop around Scotland during these extremely challenging times.

4. How do you support the local community?

East Coast continues to sponsor and support The Fisherrow and Harbour Seafront Association and Fisherrow Harbour Festival, which was launched in 2018. The Association is

now working with East Lothian Council to improve the harbour and seafront in Musselburgh for the benefit of the community, local people and visitors through a series of ongoing fundraising events and voluntary activities just two minutes’ walk from out fish & chips takeaway.

5. What’s the best thing that happens in the fish & chips industry every year?

The best quality local seafood and lobster from around Scotland’s coastline. It can be a bit expensive these days, but worth every penny.

7 When were you most embarrassed?

Having my photo taken with a giant pantomime dame mermaid as part of a local community competition.

We recently teamed up with our local theatre in the town to launch a new festive pantomime competition for children with a nautical twist.

We encouraged children from across Edinburgh and the Lothians to make a creative splash by drawing or painting a colourful picture of their favourite deep-sea creature as part of The Brunton’s new festive show for 2022, ‘Sinbad the Pantomime’. Taking inspiration from the story of Sinbad, children created eye-catching pictures of sea creatures, including whales and dolphins, lobsters, crabs, starfish, seahorses, and even a giant octopus.

To help promote the competition in the local newspapers, I reluctantly agreed to have my photograph taken with the lead pantomime dame, a giant mermaid called ‘Betty Brunton’.

Scottish skipper stars in MSC Ocean Cookbook 2023

features in the latest edition of the Marine Stewardship Council Ocean Cookbook – a collection of sustainable seafood recipes from chefs around the world, with each of their recipes shot by renowned food photographer David Loftus.

The Ocean Cookbook 2023, now in its third edition, aims to raise awareness of sustainable seafood at a time of year when many people are looking for healthy, affordable and sustainable options as part of their New Year’s resolutions.

This year’s UK recipe is made with coley, which is caught by the Scottish fishing fleet, alongside other sustainable species like haddock, hake and plaice. Coley, also known as saithe, has been certified as sustainable to the Marine Stewardship Council (MSC) standard, the gold standard of sustainability for seafood, since 2013. The blue MSC ecolabel is the world’s most recognised ecolabel for sustainable seafood.

All of the digital cookbook recipes are created using seafood from MSC certified fisheries, and feature species like hake, tuna, mussels and haddock. The fishermen and women who caught the seafood star in the cookbook alongside the chefs, showing the strong connection between catcher and creator.

The UK recipe – steamed coley with winter vegetables - was created by Cornish chef James Strawbridge, who is a fan of Scottish seafood. James visited Shetland to create a series of recipes using crab and scallops for the MSC’s Sustainable Seafood Week last year, where he also experimented with cooking coley.

Fisherman Colin, who started fishing straight from school and fishes out of Peterhead, says the first three months of the year are the best for catching coley as this is when they tend to be found in big shoals.

“Sustainable fishing is paramount,” he adds.

“Anyone with a sensible head on the shoulder has

fishing

to do what is sustainable for the stock,” he said. “It’s your future you are working with and gambling with –why jeopardise it? You have to think about the long term.”

Chef James, who is also an MSC UK ambassador and sustainability expert, said: “MSC coley, aka saithe, is a great sustainable choice for white fish. Although often overlooked, coley has a delicate, sweet flavour and light texture that pairs well with seasonal winter veg and a herby crumb. When you choose seafood with the blue MSC ecolabel, it means you’re supporting fishermen who are helping to keep the seafood you love on your plate, forever.”

MSC certified mussels also feature in the cookbook. Scottish mussels, which were the first enhanced fisheries in Scotland to be MSCcertified in 2012, were recertified to the MSC standard in December 2022.

Rope grown mussels from farms in the Shetland Islands, and those around Scotland are members of the Scottish Shellfish Marketing Group, and are responsible for around two-thirds of Scotland’s mussel production.

The Marine Stewardship Council (MSC) is an international non-profit organisation which sets globally recognised standards for sustainable fishing and the seafood supply chain. The blue MSC ecolabel and certification program recognise and reward sustainable fishing practices and is helping create a more sustainable seafood market. The blue MSC ecolabel on a seafood product means it comes from a wild-catch fishery which has been independently certified to the MSC’s science-based standard for sustainable fishing.

With the continuing rising costs of operating a business, there are options for restaurants to consider that would help to keep prices under control. Smaller portion sizes are happening across all industries, from a diet/calories point and view and also due to costs. A smaller, say 3–5-ounce piece of fish, which is a perfectly good meal size, is probably 40-50% cheaper and would bring costs right down. Fish and chip shops and restaurants, if they want to continue to serve cod and haddock, should look at being a little bit more flexible with what they’re buying. Generally, shops buy a fish size that is between 8-16 ounces and 16-32 ounces but if they were to buy smaller fillets, they’d save money and still offer a great value meal to customers.

Everything that we sell is MSC certified, it’s just so important to the frozen-at-sea cod and haddock industry to operate sustainably, and for fast food outlets to leverage this accreditation, they could utilise their suppliers. Country Range Group Smashes Fundraising Target for 30th Anniversary Celebrations

The Country Range Group has announced that throughout 2022 its member wholesalers and central office team helped raise a remarkable £186,190 for various national and local charities as part of their 30th anniversary celebrations

The foodservice buying group’s initial target was £100,000, with money raised to be split between Hospitality Action and selected charities in the local areas of the Group’s central office and each individual wholesaler around the UK and Ireland.

However, that target was well and truly exceeded through a wide array of charitable endeavours including fundraising activities at the various CRG events such as their annual ‘An Evening With’ celebration and Gala Evening.

Some of the challenges undertaken by employees of the Group and its members were pub walks, quiz nights, fancy dress days, bake-offs, golf days, parachute jumps, gin nights as well as a sponsored leg wax and tattoo auction.

Out of the total amount raised, £50,000 has been donated to Hospitality Action, which offers a range of help and support to those working in the industry. The rest of the money raised is to be split between local charities such as regional food banks, mental health charities, children’s charities, hospices and many more, which will be announced in the coming weeks and months.

Martin Ward, Country Range Group Chief Executive, said: “We’re delighted to have not only hit our £100,000 target but to have absolutely smashed it by raising a staggering £186,190 for a host of amazing charities.
