I’m writing this from the inspiring and thoroughly relaxing environs of Eden Health Retreat, the 5-star luxury property dedicated to health and well-being, nestled in the Currumbin Valley. “Excessive alcohol consumption also depletes our liver’s stores of glutathione, an antioxidant that helps neutralise the toxic effects of alcohol; without it, we feel hungover, and this leads many of us to make poor food choices which causes weight gain. “Alcohol also has depressant effects, which come from the neurotransmitter GABA. HOW MANY OF US HAVE SAT DOWN AND HONESTLY THOUGHT ABOUT EXACTLY HOW WE LIKE TO BE TREATED?

Conscious awareness of the nuance between what lights us up, and what merely propels us along, and why, can be the first great leap towards true fulfilment in relationships and life. Most people will say they know what they want, but when it gets down to it, they are simply going with the flow. Taking whatever comes their way and making do. Add to this the possibility that many of the behaviours we think we are “attracted to” could actually be dysfunctional patterns we learned in childhood, and we have a pretty wide scope for disappointments and misunderstandings. “The 5 love languages” by Gary Chapman breaks down our personal interaction preferences into 5 types: Words of affirmation, Quality time, Acts of service, Gifts and Touch.

A gift in one person’s eyes may feel like entrapment to another. And touch, Wowee, now that one can be a minefield. The good news is that once we choose to look deeply at ourselves, our motivations, our wants and needs, we will start to be able to communicate them to those closest to us. With personal reflection and clear communication, what once felt like confusion, and random misunderstandings, can be transformed into harmonious, happy and healthy relationships. Many people have done the quiz, and know generally which ones they identify with in a love context. But they stop there, without working out what each one actually means to them personally, both in loving and platonic relationships.

If you are crying do you want a big hug, or will that feel claustrophobic and create more stress for you? Some people see standing and fighting as an act of aggression, while others see it as “showing up” for the relationship. Do you want to vent when you’ve had an issue arise or do you want solutions? Every relationship, even the one we have with ourselves could be transformed by simply knowing, and communicating what our needs and expectations are before incidents or situations arise. In fact, from an energetic point of view, the simple act of tuning into ourselves and understanding where our boundaries, beliefs, needs, wants and limitations lie will create change in the way the surrounding world interacts with us. What motivated you to go on your weight-loss journey? The main reason for the weight-loss surgery was to help with my job and to give me a new way of life, to become more active and to get my mental health back on track. I struggled to get a job because of my weight. The requirements of the job included a weight limit of 130kg, so that was a problem. I never left the house, I didn’t want to be seen in public with so much weight on. Family and friends I hadn’t seen for a while were becoming concerned that I didn’t even want to see them. I had been training with a personal trainer, but I wasn’t dropping the weight I wanted to. A few of the guys from work had the surgery and showed me photos of how they were before compared to after surgery, and you wouldn’t recognise them! It was dramatic. They said the benefits were they were lighter, their confidence was higher, they felt better in themselves, and more inclined to get healthier. They weren’t hiding away, they were more social. People were telling me to go and have the surgery and make the change. I thought, if it worked for them, I have to give it a crack, so I went and saw a surgeon. How long had you battled with weight issues?

AFTER How many kilos did you lose? 81.7kg What was your relationship with food? Very poor. As a fly-in-fly-out worker, I was working 14 hour days, no routine. I was going to work at 4am and getting home at 8pm, exhausted, too tired to cook and just picking up fast food. I felt too tired to exercise and I had no motivation, I just gave in to fatigue. I was in a deep dark spot and I wasn’t happy with where I was going. I was comfort eating and doing nothing, just isolating myself from the world. As an “out of towner”, moving to new town, I had no friends and it was hard to make friends because I was selfconscious about my weight. 171.2kg was the heaviest I had ever been. Even though I didn’t have any health issues as yet, I knew I was a candidate for a heart attack and other diseases. 28 slim magazine winter 2021

I battled with my weight issue for four years prior to surgery. As a kid, I was very active with football, cricket, Nippers living in Newcastle and Port Macquarie. Then around my teens I put some weight on, and by 19, I was up to 120kg. I didn’t like my job or my life direction. Then I started getting fit, lost the weight again, then piled it back on. I moved to the Gold Coast, got fit again then left the GC in 2017 for country NSW for a mining job. Then I stacked it on. My mindset entering the mining industry was to keep fit and active, because it’s understood you’re sitting on your backside up to 10 hours a day. But I wasn’t training, wasn’t eating properly or looking after myself as I should have been. I went hungry for most of the day, then ate a lot when I got home and went to bed on a full stomach. What health problems did you face as a result? I was very lucky not to have any health problems with my weight, which was very surprising. I had blood tests and blood pressure tests done and they were all clear. That was one of the reasons I didn’t go to a doctor about my weight before my surgery. I was worried I would


have diabetes or something. The only thing that was impacted was my mental health due to my size. That took its toll big time. I was literally house-bound and really didn’t interact with people in my community, at work, or my friends and family at home. What made you decide on weight-loss surgery and which procedure was the right one for you? I had heard from a few people I worked with that had the gastric sleeve surgery and saw the results they had achieved. When I lived on the Gold Coast, I heard about the awesome results people were having with surgery. So I made the appointment. After talking to the surgeon and going through all my health, lifestyle and other aspects, we decided that the gastric sleeve surgery was the best option for me. Post-surgery, what have been some of the challenges? I didn’t have any challenges after surgery. There was a bit of nausea when I returned home after surgery. But four hours after surgery, I was walking around, groggy, but in no pain. People had told me that I would be in discomfort for a few days up to a week after surgery, but for me, it was literally getting up and going as normal the next day.

Any regrets? No regrets at all. It has to be the best thing I have done! I would recommend this surgery to anyone. The doctor and his team are amazing and you feel really welcome in their practice. Even when I went back to see them recently, they were shocked at how good I look! They were flabbergasted at my transformation. My lifestyle now is totally different. Life has certainly changed for me, and for the better. I can’t wait to go out and meet people. My friends and family are amazed and glad I’m back! It’s a depressing spiral, really. The more weight you put on, the less you feel like doing anything about it. That has consequences and you end up alone and with a sense of helplessness. I eat better. I enjoy my food. I take care of myself. I’m confident, I go to the gym, I’m much more comfortable in myself, I’m finding my job easier, always out, never home, lots of friends. My bosses and colleagues can’t believe how much better I look and how my confidence has risen. I wish I’d had the procedure sooner, that is my only regret. The surgery takes so much pressure off your body and frees you up to get more active and start

afresh. The cost of surgery was totally worth it. It’s amazing how much money I save now I’m not eating unhealthy food. The reason I’m sharing my story is so that people can see this article and see how the surgery changed my life, and I hope it inspires them to give it a go. I want to encourage people who may be in a dark spot to see an expert and make the decision to get healthier. I feel so much better about life! I wish I’d done it years earlier, It’s the best thing I’ve ever done!

“I had no horse training whatsoever. I didn’t know what I was doing. I was very unsure of myself, but after taking many lessons and working with the wranglers, I became obsessed with it.” Though she’s been politically active for most of her life, these days Johansson says she would prefer to keep her views and her activism out of the limelight.

Scarlett with husband Colin Jost She has been married three times: to Canadian actor Ryan Reynolds from 2008 to 2011; Romain Dauriac, from 2014 to 2017; and comedian Colin Jost who she married in October 2020. Her love of the full spectrum of stage and screen can be partly attributed to her mum, Melanie, who Johansson said first introduced her to the magic of cinema, in all its genres. “When I was a kid, she showed me all of the movies that she loved,” she recounted in an Interview article. “She loved musicals. She loved all those Elia Kazan movies. And then her passion really lies in those political thrillers from the ‘70s and those Cassavetes movies.” A keen singer, Johansson cultivated her voice from a very young age, as she explained. “I was a big song-and-dance type of kid,” she said. “I was a major ham, and then puberty hit and I crawled into a dark, cold shell.” While she struggled to cope with puberty, her parents’ divorce and the challenges that brought, she threw herself into the performing arts and found her way out. Johansson secured an agent and auditioned for parts in commercials. But the husky voice that now distinguishes her, was a barrier to spruiking consumer goods. “I was always terrible at commercials,” she confessed to W magazine. “At the age of 9, I sounded like a whiskey-drinking, chain-smoking fool. Wasn’t going to sell Jell-O with that voice, you know?” Lying about her abilities proved key to winning her first major role in Robert Redford’s The Horse Whisperer. The then 13-year-old told the legendary actor/ director she could ride horses.

“My job is acting, I’m not a politician,” she said, adding that her objective is to “reflect” life experiences to inspire audiences to “have an empathetic experience through art”, connecting with them to make them “feel something”. “They have an emotional reaction to it — good, bad, uncomfortable, validating, whatever. That’s my job,” she said. Her twin brother, Hunter is less reticent about being political. Hunter has had small acting roles in some of Scarlett’s films, including Manny & Lo, but politics is his passion, and he worked as a campaign adviser for Barack Obama in 2008 and is energetic in philanthropic work, hosted numerous fundraisers for natural disaster relief. The twin siblings have a close bond. “He’s the most golden-hearted person,” Johansson told Parade. “I think a lot of people spend their life looking for a partner, someone to be a mirror to reflect upon, to remind them that they’ve lived. You want someone to tell you what he witnessed in your life. My twin brother has always been that for me.” But as for the perks of fame, Hunter can take or leave them, while his twin sister says she picks and chooses. “Unless I’m all dressed up, I don’t think about how I look, and people don’t comment to me on how I look any more than the average person. I live such a low-key lifestyle that it would be bizarre to hear ‘You’re beautiful!’ constantly. I don’t want to think what that might do to a person. “The way you look in film is not always about beauty – it’s about projecting a personality. There’s not as much pressure to be beautiful as there would be if I were in the fashion world.” Living in Paris in 2019 with Dauriac her fiancé at the time, Johansson said she enjoyed the French obsession with fashion, but still yearned for the freedom of NYC. “The nice thing about being in Paris is that you know everybody’s looking 31 slim-magazine.com.au

You hobble around.” After a delay of a year due to COVID-19, Johansson is as eager as her fans to experience the world premiere of her latest Marvel film and first as its heroine, Black Widow. The much-anticipated film, directed by Cate Shortland, reprises the role of Natasha Romanoff, better known as Black Widow, and delves into her past, her history as a spy and the string of broken relationships left in her wake long before she became an Avenger. “I think this film in particular is very much reflective of what’s going on in regards to the Time’s Up movement and the #MeToo movement,” said Johansson. “It would be such a miss if we didn’t address that stuff, if this film didn’t take that head-on. I think, particularly for Cate, it was so important for her to make a movie about women who are helping other women, who lift other women up out of a very difficult situation. That position in advertising sales propelled her to The Courier Mail and Sunday Mail in Brisbane, where she headed up the sales department responsible for the TV Guide.

Over the years, her role in the business has evolved. “In the early days I was a jack of all trades from reception, to sales, to placing orders,” she recounts. “As we grew, I did major Australian sales and headed the private label side of our business. Six years ago our Export Manager moved on so I fell into it by default. “I’m always humbled to see our products on supermarkets shelves throughout the Middle East, Asia and New Zealand.” After more than two decades driving the business, Cheryl says her “absolute ‘wow’ moment” in her career was winning Gold Coast Business Woman of the Year in 2018. “Never in a million years did I feel that this was possible. I didn’t go to Uni. I never saw myself as someone supersmart, but I do know that I am driven and nothing stops me when I have a goal in mind.” Today, Morlife is a one stop shop with all the company’s talent employed at its purpose-built facility in Arundel. “In-house we have our graphics team, photographers, food stylist department, research department, laboratory testing, marketing team, social media department, production team and sales teams. “Our customers are our family. “That was when it was Queensland’s number one reference guide,” she explains. “It had a massive readership and therefore it was expensive for advertisers with one full page advertisement costing approximately $16,000. At the time, I used to joke to clients they could buy one page in the TV Guide or a Holden Barina.” But her heart led her back to the Gold Coast and Georgina was promoted to Entertainment Manager, overseeing a team that looked after all facets of newspaper advertising for the entertainment industry on the Gold Coast. Born and raised in Oxenford, when it was green pastures and considered ‘remote’ from the action along the Glitter Strip, Abbi Golightly is Partner at OMB Solicitors, heading OMB family law which is a full-service family law department within OMB Solicitors. “I studied at the Queensland University of Technology starting at just 17 as one of the youngest in my grade. I did a double degree in Justice Studies Studies and Law. I subsequently did my Masters in Applied Law through the College of Law.” Abbi undertook her Specialist accreditation in 2009 and has been a Queensland Law Society Accredited Specialist since. She’s regularly named on the prestigious Doyle’s Guide as a Recommended Family Lawyer on the Gold Coast and regional Queensland area specifically in complex parenting disputes. “I would say that my career highlight to date was my first surrogacy matter concluding in a Parentage Order hearing where the Children’s Court Judge had all parties and the baby in court and everyone was crying with joy.” “They were all close friends of mine and the fact I was able to see the personal and legal matters finished was so emotional. Abbi mentors junior lawyers through the Gold Coast District Law Association and Women Lawyers Association of Queensland. “I also support junior lawyers through the Family Law Clinic at Bond University offering placements for a semester to undertake work experience.” Outside her work as a Lawyer, she regularly volunteers at the Animal Welfare League and is a tireless volunteer at her daughter’s sports clubs, usually as the photographer capturing the action over the season. In the past 12 months we have been to Yeppoon, where we have a holiday house and family, Hervey Bay and Mooloolaba. We are going to Hamilton Island in June. I love Queensland! I'm pretty simple: I love to shop, sightsee and wine and dine. I always take the opportunity to try as many cocktails as I can when I'm on holidays while checking out new sights. Beating the Biological Clock FERTILITY PRESERVATION IS A MEANS OF EXTENDING A WOMAN’S ABILITY TO GET PREGNANT IN THE FUTURE.

The trend worldwide is that more women are choosing to put off childbearing to a later age due to career, personal circumstances or ill-health. The challenge is that this comes at a cost because at the same time, fertility is dropping and there is increased risk of chromosome abnormality, which can increase the risk of miscarriage or other complications. At birth, a female ovary contains about one million oocytes (eggs). Females are not capable of making new eggs, and in fact, there is a continuous decline in the total number of eggs each month. By the time a girl enters puberty, only about 25 percent of her lifetime total egg pool remains, around 300,000. A woman’s most fertile years are her 20s and early 30s, when the ovaries still contain a large number of healthy eggs. For the 10 to 15 years before menopause, even if you have regular monthly periods, the ovarian function and egg quality deteriorates. This is especially so for women in their 40s. Women can experience these challenges if they try to conceive in their late 30s and 40s. More and more women are seeking options to preserve their fertility for the future. Freezing eggs or embryos is helping women conceive in later life. Egg freezing allows you to store your unfertilised eggs, to preserve their quality for use in the future. Frozen eggs may be stored for many years. When you are ready to use your eggs, they are thawed, and then fertilised with sperm – either from your partner or a donor. A healthy fertilised egg can develop into an embryo, which will then be transferred back to your uterus, with a subsequent chance of pregnancy.

For example, a 40-year-old woman trying to get pregnant using eggs she froze at 30-years-old, will have approximately the same chance of pregnancy as a 30-year-old. The process to obtain eggs for freezing involves undergoing hormonal stimulation for 10 to 12 days, enabling a group of eggs (usually 10 to 15) to mature. There are a variety of stimulation techniques for this, and your Fertility Specialist will work with you to develop the best treatment for your individual circumstances. The stimulation typically involves daily injections of hormones using a tiny needle under the skin, which are very easy to administer. During this time, you will also need regular blood tests and ultrasound scans to monitor hormone levels and egg development. The eggs are removed from the ovaries using an ultrasound guided probe. Attached to the ultrasound probe is a fine needle that passes through the vaginal wall into the ovary and draws the fluid (and egg) from the ovary. You can go home about one hour after the procedure and are advised to rest quietly for the rest of the day. The eggs undergo freezing, or cryopreservation, in the IVF laboratory, using the latest scientific technology. This process known as vitrification results in ultra rapid freezing of the egg to prevent ice crystals in the cells from causing cell damage and protect its cellular structure, followed by storage in freezing tanks of liquid nitrogen. The younger the woman is when her eggs are frozen, the better the chance of the thawed eggs resulting in a pregnancy. The cost of egg freezing varies depending on your individual circumstances. Diabetes and heart disease DIABETES IS AN ONGOING HEALTH CONDITION WHERE THE BODY’S USUAL WAYS OF CONTROLLING BLOOD SUGAR, OR BLOOD GLUCOSE LEVELS, DON’T WORK PROPERLY AND BLOOD SUGAR LEVELS ARE HIGHER THAN NORMAL. When the body breaks down food, blood sugar level rises. The cells in the body absorb this sugar into the bloodstream using a hormone called insulin and then use it for energy. When the body doesn’t make enough insulin and/or doesn’t use it very well, the result will be higher than normal blood sugar levels. Having blood sugar levels that are consistently above the normal range can lead to serious complications, such as vision loss, kidney disease, foot and leg problems, and an increased risk of stroke and heart disease. Around 30 percent of people with Type2 diabetes also have Cardiovascular disease (CVD), which is the biggest cause of death among people with diabetes, usually involving heart attack or stroke. Over time, high blood sugar levels from diabetes can damage the blood vessels in the heart, making them more likely to develop fatty deposits. You’re also more likely to have other health problems that can cause heart disease, such as high blood pressure, high cholesterol or being overweight, all of which make the heart work harder.

Many people with diabetes also have high blood pressure, another key risk factor for heart disease. To manage or reduce your chances of developing heart disease if you’re living with diabetes, it’s important to maintain a healthy lifestyle and manage your diabetes effectively; that means increasing exercise, replacing processed and packaged foods with a balanced diet, losing weight, giving up smoking and taking medication to control your diabetes. A heart healthy diet should include foods low in unhealthy fats, salt and added sugar, and rich in wholegrains, fibre, vitamins, minerals and healthy fats found in seafood, nuts, seeds, avocados, olives and their oils for cooking. Unhealthy fats tend to be solid at room temperature such as saturated fat (found in butter, coconut oil, palm oil, processed foods, such as biscuits, cakes, pastries, pies, and takeaway foods, lard, ghee, fat on meat, skin on chicken and other poultry, deli-style meats, such as salami, ham, and bacon, cream and ice cream), and trans fat found in foods such as frozen foods, fried foods and fast-food. 46 slim magazine winter 2021

Help your Hormones

WHAT CAUSES HORMONE CHAOS AND CAN WE EAT OUR WAY OUT OF IT?

Simply said, there is not one simple answer, however, we can stop beating ourselves up! An imbalance of hormones which includes insulin (from the pancreas), estrogen (ovaries and in post menopause from the adrenal glands and fat tissue), cortisol (adrenal glands), thyroid hormone, serotonin (gut and brain) and leptin (satiety hormone), can cause havoc causing common symptoms such as feeling tired, mood swings and weight gain. “Endocrine disruption” is the “term” you need to look up and become educated in, as in this article it is impossible for me to cover all the topics associated with this, but you should be aware of them, and protect your hormones, diminish the “chaos” and have better health. “Endocrine disruptors” are all the food stuffs, and chemicals you MUST avoid if you want your health and weight, mood, sleep and longevity to improve. I continuously look for wellness, joy, and adaptations to changes in our lives, with gratitude for our ability to have sustainable food, delicious varieties, and plenty of choices. I shop at the fresh food markets, I have a very broad whole food based diet, and while I seek health as my number one priority, I’ve not sought to live in an ivory tower or to be perfect. Nor should you! SOME BASIC FACTS: Firstly, abdominal weight is commonly caused by high insulin levels (insulin resistance) which is the hormone that tells the cells to take glucose (sugar) out of the blood and use it to make cellular energy. Too much glucose, if it cannot be used, may be stored as fat. Insulin itself can increase the size of the fat cells. Cortisol is the other hormone which may be associated with abdominal weight, and is our “stress response” hormone, or as I like to call it “life’s hormone”! Too much cortisol or too little may be associated with “survival mode” = fat storage mode, as opposed to “thrival mode” which does not. Too much insulin can block leptin (the satiety hormone), so even if you may have eaten well and had enough, your brain will contest you to keep eating! Secondly, as we approach menopause (premenopausal) and eventually become

menopausal, the most common hormone to become depleted first is progesterone, leaving us in an “estrogen dominant state” and it is this “dominance” of estrogen which may contribute to belly, thigh and buttock area weight gain.

Thirdly, cortisol can increase hunger, decrease the effectiveness of thyroid hormone for metabolism; contribute to insulin resistance, and our bulging waist line.

So we can easily fall into gaining “some weight”, which may start the roller coaster of further weight gain due to insulin resistance and estrogen dominance with fat tissue producing more estrogen. All of this is clearly made worse by cortisol/stress/LIFE in the 21st century. So here’s the good news: If you gain weight, STOP it in its tracks and don’t wait for a time later on to attempt to lose it. This includes change. As your hormones are secretly changing, so must you. SOME HOT TIPS: • Do not over exercise/train (increases cortisol). An intense workout increases the release of endorphins, which feels great! But not on top of chronic unmitigated stress. • Do not stress too much over things you cannot control. • Sleep well, or if you have sleep problems, make time to REST. • Look after your liver with Phytonutrients i.e. plant based foods. Avoid excessive alcohol. Don’t have soft drinks, they are not acceptable, don’t have drinks with “added sugars”. • I choose to eat three times a day, I do not snack, and I consume approximately 1.5-2.0 litres of H2O a day! (Remember the 80:20 rule, I am not perfect!) That’s three opportunities every day that I have to look after myself, to help regulate my hormones, to be healthy, and not gain weight. 48 slim magazine winter 2021

If you are sourcing pre-prepared food from the supermarket or café, you have to accept that you will be consuming “hidden sugars”. Commonly I see people who without realising what is in “food stuffs” are consuming up to 40-50 teaspoons of sugar every day! The recommendation is for the equivalent of six teaspoons or less. AVOID HFCS=HIGH-FRUCTOSE CORN SYRUP. It may upset your liver and contribute to leptin resistance (loss of satiety). • Increase foods rich in Vitamin B12 and iron. Animal derived foods (meat, eggs, dairy) are high in both, however non animal sources of B12 include mushrooms and nutritional yeast (which is derived from yeast but does not contain any yeasts). Food sources for iron for non-meat eaters include lentils, pea, beans, nut butters, hummus, tahini and green leafy vegetables. • Increase proteins and healthy fats. Add in more fibre (vegetables, legumes, ground flaxseeds etc); eat liver cleansing foods such as the cruciferous vegetables, brightly colored vegetables and low GI fruits. Avoid preservatives, seed oils (canola/sunflower), added salts and sugars. Source “hormone free” animal products NOT “no added hormone” products, there is a BIG difference!

What could be contributing to your weight--loss success//failure? Dr Hayley O’Neill WE’RE SOLD ON THE IDEA THAT BEING THIN IS THE KEY TO HEALTH, HAPPINESS, AND SUCCESS, YET THERE IS OVERWHELMING EVIDENCE SHOWING THAT FEW PEOPLE ACHIEVE LONG-TERM PERMANENT WEIGHT-LOSS AFTER DIETING. Restricting our food intake often backfires into a constant cycle of restricting, and then potentially overdoing it (binging) because we feel restricted and then ultimately feeling guilty or that we’ve failed for not being able to restrict and stick to a diet. Why is this so? When we restrict our food intake, the body responds by turning on strong “physiological adaptive responses” also known as the famine reaction to conserve energy. Some of these responses include reductions in metabolic rate, changes in neuroendocrine status, fat tissue and skeletal muscle, and loss of lean muscle. There is also evidence they we may even move less and become more efficient at burning energy. These changes increase hunger, slow weight-loss, and encourage weight regain. Some key hormones involved regulation of appetite are ghrelin and leptin. Ghrelin and leptin work in opposite to regulate appetite and food intake. Leptin inhibits food intake whereas ghrelin promotes food intake and weight gain. During dieting an increase in ghrelin intensifies hunger making it hard to lose weight. Dr Hayley completed a 6-year Postdoctoral research fellowship last year funded by NHMRC (National Health & Medical Research Council). Her research focused at understanding why people struggle to lose weight and keep it off in both dietary and surgical weight-loss. The stress hormone cortisol is another hormone believed to play a role in diet failure. However, current scientific evidence as well as unpublished data from Dr O’Neill does not support this. So, is all lost when it comes to dieting? No. Dr Hayley's research with Professor Nuala Byrne at Bond University involved

finding new ways to minimise weight regain/obesity rebound. By studying the effectiveness of a novel dieting approach called intermittent dieting, where people cycle between two weeks of dietary (calorie restriction) and two weeks of energy maintenance (where body weight in maintained), they found men lost more weight compared to those on the traditional calorie restriction diet (restricting calories continuously week after week). As a bonus when men stopped dieting, they regained less weight. Study findings in women are yet to be finalised but may provide a promising new effective dietary weightloss strategy for the future. A hot topic is the importance of gut health. Our gut is made up of trillions of bacteria - some good and others not so good. Good bacteria are known as probiotics. Recent scientific evidence suggests that the types of bacteria as well as having an imbalance between good and bad bacteria in our gut may influence our ability to lose weight. In fact, several studies in both humans and animals have shown that when bacteria are transferred from obese to lean – this promotes weight gain. Bariatric surgery is the most effective evidence-based option that offers significant and durable weight-loss and improved health outcomes including remission of co-morbidities for those with clinically severe obesity. Dr Hayley says that whilst our physiology (especially our gut and metabolism in muscle and fat) and genetics play a role in regulating our body weight, our eating behaviour and psychology also play a role. Dr Pyne graduated from the University of Queensland with a Bachelor of Veterinary Science in 1992 and pursued opportunities in his career in Tasmania and the UK before returning to Queensland. In 2000, he started at the Currumbin Wildlife Hospital and completed his Membership of the Australian and New Zealand College of Veterinary Surgeons by examination in 2002. His main focus and guiding motivation today is protecting Australian native wildlife. Currumbin Wildlife Hospital is one of the busiest wildlife hospitals in the world. Led by Dr Pyne, his team work tirelessly to treat sick, injured and orphaned native wildlife for release back out into the wild. In 2019 he won the City of Gold Coast Australia Day Environmental Achievement Award. Bushfires, drought and human activities made 2020 the busiest year on record at the Hospital. Total admissions for the year were 13,794 compared to 12,198 the previous year. Dr Pyne plays an important role in many research projects and believes strongly that prevention is better than cure. His vision is that through community education and vital research projects, fewer animals will require hospitalisation and there will be a brighter future for our native wildlife. Sam Webb founded LIVIN in honour of his mate, Dwayne Lally, who took his own life in 2013 after suffering in silence from a mental illness. LIVIN aims to connect, support and encourage people to talk about their feelings and challenges because “It Ain’t Weak to Speak”, which is their motto and the tagline on many of the LIVIN Wear apparel used to raise funds and awareness for their initiatives.

The LIVINWell program reaches hundreds of schools nationally, along with workplaces and sporting clubs. In 2019/2020 the LIVINWell program went to over 20,000 people across Australia. As Sam explains: “Due to the pandemic we had to pivot to deliver our program online which has also been successful. Our goal is to deliver a program a day into a school somewhere in Australia. Last year, a report by Ernst &Young confirmed our theory of change with evidence that suggests that the work we do in our programs in schools is having a real impact when it comes to increased help seeking, maintaining self-care strategies and increased selfawareness and emotional competency. “We have a lot of work we want to do and areas we want to improve, but this is important to know that the work we do is actually making an impact.” The year ahead is looking promising, with the introduction of a new website which will feature an impact calculator to show donors where their dollars go, and the impact donations have in the community through LIVIN’s initiatives. “My goal is to bring as much transparency to the LIVIN brand so that our engaged LIVIN community can get a hands-on experience that is tangible and they know that when they buy a T-shirt or book a program for their school or workplace, it is making a last impact and they can see that. ANDROPAUSE IS A CONDITION ASSOCIATED WITH A DECREASE IN TESTOSTERONE LEVELS AS MEN AGE. To use the term “Male Menopause” is misleading as it suggests that symptoms are the result of a sudden drop in sex hormones (as occurs in the female menopause), which is not the case in men. Testosterone levels drop gradually as you age but this occurs at a steady rate of less than 2 percent each year from the age of 30 to 40 years. Hormones are made by your glands and carried through the bloodstream, giving signals to other organs in the body about functions like growth, metabolism and reproduction. Androgens are a group of hormones and include testosterone (the male sex hormone). At puberty, your testicles start to produce testosterone, giving signs to your body that help it become sexually mature. Low testosterone (or testosterone deficiency) is when the body isn’t able to make enough testosterone to work normally. Because testosterone is the

major androgen, it’s key not just for the physical changes that happen during puberty (like the development of the penis and testicles, and the growth of body hair), but for your bone and muscles, sex drive, and your general mood. Your testosterone levels are at their highest between the age of 20 and 30. As you age, you’ll experience a small, gradual drop in testosterone levels. You might have a greater drop in testosterone levels if you’re overweight or have other long-term medical problems.

HOW ARE TESTOSTERONE LEVELS TESTED? The only way to check for low testosterone levels is by having two blood tests. Testosterone levels vary over the day, so if you have a low level on one blood test, you should have a discussion with your doctor before deciding what next steps to take. HOW ARE LOW TESTOSTERONE LEVELS TREATED? Testosterone therapy, given by injections, gels, lotions, creams, patches or tablets, is used to treat low testosterone. It’s unclear whether testosterone therapy has any benefit for older men who are otherwise healthy, and testosterone therapy may even be harmful in some situations.

There may be a greater drop in testosterone levels in men who have long-term medical conditions or who are overweight.

The risks of testosterone therapy include: acne or other skin reactions, weight gain, non-cancerous growth of the prostate and growth of any existing prostate cancer.

While the following symptoms could well be due to other illnesses, you should contact your doctor if you experience low energy levels, mood swings, irritability, poor concentration, reduced muscle strength or a low sex drive.

Getting diabetes or other illnesses under control and losing weight can also improve testosterone levels.

‘Healthy’ habits that might not be so healthy

SOME SO-CALLED “HEALTHY” DAILY HABITS ARE NOT THAT GREAT AFTER ALL. IN FACT, THEY COULD EVEN HAVE NEGATIVE CONSEQUENCES. USING COTTONWOOL BUDS TO CLEAN YOUR EARS Ear wax is normal, harmless and it helps protects your ears from infection. Some people, however, like to stick cottonwool buds in their ears as though they’re mining for gold. You should never put cotton buds, fingers or any other objects in your ear because this can push wax in further, and you could damage your ear. If you suspect you have a large build-up of ear wax or your ear is blocked, see your GP or practice nurse, who can painlessly syringe it out using warm water. POPPING MULTIVITAMIN SUPPLEMENTS With a few exceptions, including folic acid for pregnant women, there is no evidence that vitamin supplements make any difference to the health of most

people. It’s better to get all the vitamins and minerals you need from a healthy, balanced diet. Supplements can be dangerous if you take too much of any one vitamin or mineral. High doses of Vitamin C can cause diarrhoea and kidney stones, for example, while high doses of Vitamin A can be toxic. RINSING WITH MOUTHWASH You brush your teeth with the skills of a Renaissance painter, floss religiously and swish with mouthwash. Sounds healthy, right? Your daily mouthwash habit, however, might be doing your mouth more harm than good. There are myriad types of mouthwash with many different ingredients. Some come with adverse effects while others have been shown to work no better than a placebo (they just make your mouth feel clean). There is even a link between mouthwashes that contain alcohol and oral (mouth) cancer. Of course, some types of mouthwash can help control plaque and gingivitis, 58 slim magazine winter 2021

especially in people who aren’t able to properly brush and floss. Figuring out which one, if any, is right for you is complex and best done with the help of a dentist. DRINKING KOMBUCHA This fermented drink has become a popular substitute for soft drinks and juice, but like those beverages, kombucha is acidic, meaning it can wear away the protective enamel of your teeth. According to the NSW Food Authority, many brands of kombucha and other fermented drinks such as ginger beer and Kvass contain alcohol, a by-product of the fermentation process. Some even contain enough to be considered an alcoholic drink. Children, women who are pregnant or breastfeeding, people who take certain medications and people who intend to drive should be aware that fermented drinks may increase their blood alcohol level. Using Iridology, I can often see the cause of the Candida. It may be a poorly functioning liver or bowel. There may be parasites in the bowel, or most often, it’s chronic stress. Long-term Inflammation causing irritability and mood swings can also cause weight gain as the body is out of balance and in pain, seeking relief.

The spots that occur in the iris can determine if the person has an over consumption of sugar. If the spots are yellow, then the kidneys are affected. If the colour (or pigment) of the spots are brown, then the liver is struggling. If the spots are orange, then the pancreas is indicating too much sugar in the diet which will push Candida big time, causing weight gain and possibly diabetes. When the weight starts to reduce and a healthier lifestyle is achieved, the eyes start to look brighter, and the spots start to clear in the eyes. The orange colour around the pupil is a strong indication that the pancreas is not coping. The pancreas produces five times the insulin when carbs and sugar are ingested, compared to ingesting protein. After enough sugar is converted to energy by insulin, the insulin’s next signal is to store fat.

Most often when I see Candida causing weight issues, I will go through the diet and lifestyle of the person. Usually, they are very anxious in their work, finance or family situations. Sometimes I will see stress rings in the eyes which creates a vicious circle of dieting and trying to reduce weight. Childhood trauma can be the origin of Candida and preventing people losing weight as the body is in a constant state of waiting for the “other shoe to drop”, which creates an attitude of needing relief, often sought through sweet food and alcohol. ROAST CHICKEN AND PUMPKIN COUSCOUS SALAD I NGREDIENTS SERVES 4 • 400g chicken tenderloins • 600g peeled pumpkin, cut into 1cm-thick slices • 3 tsps All-purpose spice booster • Olive oil cooking spray • 200g (1 cup) wholegrain couscous • 375ml (1 ½ cups) salt-reduced chicken stock, heated • 1 bunch small radishes, thinly sliced into rounds • 300g Brussels sprouts, trimmed and shredded • 200g baby bocconcini, torn • 2 tbsp toasted Brazil nuts, chopped • 1 x quantity Mustard and lemon 3-in-1

METHOD Preheat the oven to 210°C (190°C fan-forced). Line a large baking tray with baking paper. Toss together the chicken, pumpkin and spice booster in a bowl, then spread evenly over the prepared tray. Spray lightly with oil and roast for 20–25 minutes or until cooked and golden. Meanwhile, place the couscous in a large bowl and pour over the hot stock. Cover and stand, untouched, for 10 minutes or until the couscous has absorbed the liquid and the grains are tender. Use a fork to fluff up the grains and season with freshly ground black pepper. Add the roast chicken and pumpkin to the couscous and toss well to combine. Toss through the remaining ingredients and season with black pepper. Divide among bowls and serve.

BANANA BLUEBERRY NICE-CREAM BITES INGREDIENTS SERVES 4 (MAKES 16) • 4 medium bananas, sliced and frozen • 800g natural Greek-style yoghurt • 2 tsps honey • 2 tsps pure vanilla extract • 600g blueberries (fresh or frozen) • 2 tbsp finely chopped roasted, unsalted mixed nuts (walnuts, almonds, Brazil nuts)

METHOD Double-line a 20cm x 18cm x 5cm deep slice tin with baking paper. Using a stick blender or upright blender, blitz the banana, yoghurt, honey and vanilla until smooth. Spoon into the prepared tin and level the surface. Top with the blueberries, pressing them halfway down into the banana mixture, then sprinkle with the mixed nuts. Cover with plastic film and freeze for 4–6 hours or until set firm. Remove the nice-cream from the freezer and leave for 5 minutes. SEAFOOD CHOWDER

METHOD Place the cauliflower, fennel, leek, potato, paprika and stock in a large saucepan over medium heat and cook, stirring, until the mixture comes to a simmer. Simmer, partially covered and stirring occasionally, for 20–25 minutes or until the vegetables are very tender. Remove the pan from the heat and stand for 10 minutes, then use a stick blender to blend the soup until completely smooth. Season with freshly ground black pepper. Cover to keep warm and set aside. Heat the oil in a large, non-stick frying pan over high heat. Working in three batches, fry the seafood for 2 minutes each or until just cooked and light golden, adding the garlic in the last batch. Transfer to a bowl. Divide the chowder among bowls and top with the seafood. Sprinkle with dill and serve.

COFFEE CREAMS WITH CHOC-DRIZZLED SPONGE FINGERS INGREDIENTS SERVES 4 • 50g reduced-fat cream cheese • 150g fresh ricotta • 2 tsps instant coffee dissolved in 3 tsps boiling water, or 1 shot of espresso • 1 tsp pure vanilla extract • 2 tsps pure maple syrup • 80g dark chocolate • 8 savoiardi (sponge finger biscuits)

METHOD Using an electric hand-held mixer, blend the cream cheese, ricotta, coffee mixture, vanilla and maple syrup until very smooth. Spoon into four small ramekins or glasses and chill for at least 30 minutes. Break the chocolate into a microwave-safe bowl and melt on medium in 30-second bursts until smooth and melted, stirring between bursts. Alternatively, melt the chocolate in a heatproof bowl set over a small saucepan of very gently simmering water, stirring constantly. Place the savoiardi on a baking tray lined with baking paper and drizzle the tops with the melted chocolate. Chill for about 20 minutes until set. • 2 tbsp olive oil • 3 beef cheeks (about 1 kg), sinew removed, halved • Salt flakes and freshly ground black pepper • 1 onion, diced • 1 red capsicum, deseeded and diced • 3 garlic cloves, chopped • 3 coriander sprigs, stalks and roots finely chopped, leaves roughly chopped • 1 tbsp ground cumin • 1 tbsp ground coriander • 1 tbsp smoked paprika

• ½ teaspoon ground cinnamon • 1 tsp dried oregano • 1 chipotle chilli in adobo sauce, finely chopped, plus 2 tablespoons sauce • 2 tomatoes, chopped • 400g can kidney beans, drained and rinsed • 1 tsp red wine vinegar plain yoghurt or sour cream, to serve • Steamed brown rice, to serve SALSA • 2 corn cobs, husks and silks removed • Zest and juice of 1 lime • 1 long red chilli, finely chopped • Pinch of salt flakes

METHOD 1. Preheat the oven to 160°C. 2. Heat half the olive oil in a flameproof casserole dish over mediumhigh heat. Season the beef cheeks with salt and pepper and sear for 1-2 minutes on each side until browned. Remove from the dish. Add another tablespoon of oil, then add the onion, capsicum, garlic, finely chopped coriander stalks and roots and season with salt. Turn the heat down to medium and cook, stirring regularly, for 8-10 minutes until the vegetables are softened and lightly caramelised. Add the spices and oregano and cook for a further 1 minute before adding the chipotle and adobo sauce. Stir in the tomato and cook for 5 minutes until it breaks down. 3. Return the beef cheeks to the pan and add the kidney beans and 500ml (2 cups) of water. Place a cartouche (a piece of baking paper cut to fit the dish) on top, then cover with the lid. Transfer to the oven and braise for 2-2 ½ hours until the beef cheeks are tender. 4. Remove the dish from the oven and shred the beef cheeks with two forks before returning them to the sauce along with a splash of vinegar. 5. To make the salsa, preheat the oven grill. Brush the remaining oil over the corn and cook, turning regularly, for 15-20 minutes until lightly charred all over. Set aside until cool enough to handle. Alternatively, if you have a gas stove, cook directly on the gas hob, turning regularly until charred all over. Cut the kernels off the cobs and place in a bowl, then mix in the remaining salsa ingredients and the roughly chopped coriander leaves. 6. Serve the beef cheek chilli with a dollop of yoghurt or sour cream and the salsa, with steamed brown rice alongside.

SLOW COOKER METHOD Follow step 2, then transfer the vegetable mixture to the slow cooker. Add the beef cheeks and kidney beans and 1 cup (250ml) of water. LEMON DELICIOUS INGREDIENTS SERVES 4-6

• 125g unsalted butter, chopped and softened, plus extra for greasing • 230g (1 cup) caster sugar • 2 tsp lemon zest, plus extra to serve • 4 eggs, separated • 75g (½cup) self-raising flour

• 375ml (1 ½ cups) milk • 80ml (¹⁄3 cup) lemon juice (from about 1 ½ lemons) • Boiling water • Icing sugar, sifted, for dusting • Crème fraîche, to serve

METHOD 1. Preheat the oven to 170°C. Lightly grease a 1 litre (4 cup) capacity baking dish with butter. 2. Place the butter, caster sugar and lemon zest in the bowl of an electric mixer and mix on medium speed using the paddle attachment until pale and creamy, about 1 minute. Add the egg yolks, one by one, beating well after each addition. Fold in the flour, milk and lemon juice to form a smooth batter.

PEANUT BUTTER CHICKEN INGREDIENTS SERVES 4 • 1 tbsp peanut oil • 8 chicken thighs (about 2 kg), bone in, skin removed • 1 onion, sliced • 2 cm piece of ginger, grated • 1 garlic clove, chopped • 1 tsp ground turmeric • 210g (3⁄4 cup) chunky peanut butter • 2 tbsp honey • 2 tbsp light soy sauce • 500ml (2 cups) chicken stock • Salt flakes and freshly ground black pepper

• 250ml (1 cup) coconut milk, plus extra to serve • 1 red capsicum, deseeded and cut into 2 pieces • Zest and juice of 1 lime • 1 small handful of coriander leaves • 1 long red chilli, sliced on an angle • 50g (¹⁄3 cup) peanuts, toasted and chopped • 1 makrut lime leaf, stalk removed, leaf finely sliced (optional) • Steamed rice, to serve

METHOD 1. Heat the peanut oil in a large sauté pan over medium–high heat. Add the chicken, in batches if necessary, and cook for 2 minutes on each side until golden brown. Remove from the pan and set aside. Add the onion to the pan and fry for 4-5 minutes until softened and golden, then stir in the ginger, garlic, turmeric, peanut butter, honey, light soy sauce and 3 tbsp of stock. 2. Return the chicken to the pan and turn to coat in the onion and peanut butter mixture. Season with salt and pepper and pour in the remaining stock. Bring to the boil, then turn the heat down to low. Cover with the lid and gently simmer for 30-35 minutes until the chicken is cooked through and the sauce is thick. 3. Add the coconut milk, capsicum and lime zest and juice to the pan, stir and cook for a further 10-15 minutes. 4. Serve the peanut butter chicken with the coriander, chilli, peanuts and lime leaf (if using) scattered over the top, with steamed rice on the side.

SLOW COOKER METHOD Follow step 1, then place the onion and peanut butter mixture and chicken in the slow cooker. Stir and pour in 375 ml (1½ cups) of stock, season with salt and pepper, cover and cook on high for 2 hours or on low for 4 hours. Add the coconut milk, capsicum and lime zest and juice, cover and cook on high for a further 15-20 minutes. Follow step 4. 65 slim-magazine.com.au

3. In a separate bowl, whisk the egg whites on high speed until stiff peaks form. Then, with a large metal spoon, gently fold half the egg whites into the batter to lighten the mixture. Fold through the remaining egg whites until just combined. 4. Gently spoon the mixture into the prepared dish. Place the dish in a large roasting tin. Pour boiling water around the dish into the tin to reach halfway up the side of the dish. Bake for 35-40 minutes until the lemon delicious is golden and just set. 5. Dust the lemon delicious with the icing sugar and serve with the crème fraîche and an extra sprinkling of lemon zest.

SLOW COOKER METHOD Grease the slow cooker with butter. Follow steps 2 and 3. Add the batter to the slow cooker. Cover and cook on low for 3-3 ½ hours until the lemon delicious is golden and just set. Follow step 5.

CAROB SMOOTHIE INGREDIENTS SERVES 1, PREPARATION TIME 5 MINUTES, PRE-FREEZE FRUIT OVERNIGHT (OPTIONAL)

MAKES 10 POPSICLES, PREPARATION TIME 30 MINUTES (PLUS 30 MINUTES FREEZING TIME) • 5 large ripe bananas, peeled and cut in half • 1 batch Carob Mylk Chocolate Bar mixture (see separate recipe on page 65) • 10 popsicle sticks (from a craft/art shop or large kitchen stores)

METHOD Before you begin, place the whole, unpeeled bananas into the freezer for 30 minutes so they are cold as the mylk chocolate will only set nicely (and quickly) when the bananas are cold. ensure you don’t accidentally freeze them! Prepare a plate or tray covered with baking (parchment) paper for your bananas and set aside. Make the Carob Mylk Chocolate Bar mixture but do not put it in the refrigerator to set. Instead, place the mixture in a deep, narrow cup as this makes it easier to dip and coat the bananas in the melted chocolate. Remove the bananas from the freezer, peel only the first one, cut it in half and insert a popsicle stick into each half. Holding the stick, dip the banana into the melted chocolate, rotating around to cover most of the banana. You might need to use one of your hands to lightly hold the base of the banana so it does not slide off the popsicle stick. If you are using toppings you can add the toppings to the first banana now (on one side only, and while the chocolate is

BANANA BEET NICE CREAM INGREDIENTS SERVES 3–4 PREPARATION TIME 20 MINUTES (PLUS OVERNIGHT FREEZING TIME) • 4 medium bananas • 1 medium beetroot/beet, peeled (3 tbsp /60ml, when juiced) • 2 tbsp plant-based milk of choice (Oat, Cashew, Hemp or Rice Milk)

METHOD

Peel and chop the bananas, place them in an airtight container and freeze them overnight. The next day, juice the beetroot in a juicer and, if needed, strain the juice to remove the pulp. If you do not have a juicer, grate the beetroot and blend it with 1/4 cup of water in a high-speed blender and strain to remove the pulp. In a food processor, combine 3 tablespoons (60 ml) of the beet juice with the frozen chopped bananas. If the machine won’t blend the bananas, add a little plant-based milk 1 tablespoon at a time, and blend until smooth. Do not over-blend or add too much milk as this will make it too runny. Scrape the sides and blend again. Nice cream can be served as is as a soft serve, or for a firmer dessert place it into the freezer for 30 minutes before serving. Freeze any leftovers. To soften leftovers that have frozen overnight, allow to partially thaw for about 30 minutes before serving.

CAROB MYLK CHOCOLATE BAR

INGREDIENTS MAKES 2 BARS, PREPARATION TIME 10 MINUTES, COOKING TIME 10 MINUTES • 1 cup cacao butter buttons or shavings • 2 tbsp maple sugar • ½ cup roasted carob powder (roasted works best as it’s darker) OPTIONAL TOPPINGS: Rice bubbles/crispies (or plain puffed rice that has been toasted in a frying pan or skillet to make it crunchy), crushed raw cashews and a sprinkle of sea salt, or finely diced dried pear (preservative free only).

METHOD

Thin chocolate bars are easier to eat than one thick bar so use 2 x chocolate bar-shaped containers such as loaf tins (about 10 x 20 cm/ 4 x 8 in at the base). Line them with a large sheet of baking (parchment) paper, folded at the corners so the base and sides are covered and will cup the mixture without leaking. Alternatively, use moulds to make Easter Eggs or bite-sized chocolates. Use the double-boil method to protect the mixture from burning: fill a small saucepan with about 2 cm (1 in) of hot water and place a bowl on top, ensuring the bottom of the bowl does not touch the water. Place the cacao buttons in the bowl and gently heat on high heat until the buttons have melted. Remove the bowl from the heat and allow it to cool for about 10 minutes. Meanwhile, make your sugar into fine icing sugar by placing it into a highspeed blender, blending on and off three times or until it resembles icing sugar. Strain it to remove any lumps and blend again if needed. Then add the carob powder and melted cacao butter to the blender and blend until smooth (or use a stick blender and a high-sided/tall cup so you don’t spatter yourself). Wait 5 minutes then blend it again. Once it has begun to thicken and cool, blend it again and quickly transfer the mixture to the loaf tins (sprinkle on the optional toppings now, if desired) and place the tins into the refrigerator to set; this will take a few hours. COCONUT MACADAMIA ENERGY BALLS INGREDIENTS MAKES 12 BALLS

CHEESYCRUSTED VEGETABLE BAKE

PREP TIME: 10 MINUTES, PLUS CHILLING • 310g (2 cups) almonds, skin on • 80g (½ cup) macadamia nuts • 125g (1 cup) sultanas (golden raisins) • 185g (½ cup) goji berries • 1 tsp natural vanilla extract

• 1 tsp ground cinnamon (use a tiny amount for young babies) • 3 tbsp melted coconut oil • 45g (½ cup) desiccated coconut, for rolling

METHOD Combine the nuts, sultanas, goji berries, vanilla and cinnamon in a food processor and blitz well until smooth, adding the coconut oil to bring it all together. Transfer the mixture to a bowl and roll it into balls about 3 cm in diameter, using your hands or a melon baller.

INGREDIENTS SERVES 6 PREP TIME: 15 MINUTES. COOKING TIME: 60 MINUTES • 400g pumpkin (squash), peeled and thinly sliced • 400g potatoes, peeled and thinly sliced lengthways • 1 zucchini sliced diagonally • 2 tbsp melted butter • 1 tsp mixed dried Italian herbs • Sea salt (omit for babies) • Freshly ground black pepper (just a tiny amount for babies)

• 360g (2 cups) cherry tomatoes (or 400g tinned chopped tomatoes) • 50g (½ cup) grated parmesan (use ricotta for babies) • 60g (½ cup) grated cheddar (use a mild variety for babies) • 60g (1 cup) panko (Japanese) breadcrumbs

METHOD Preheat the oven to 180°C (350°F). Grease and line a medium baking dish with baking paper. Place the vegetables in a large mixing bowl. Combine the melted butter and herbs together in another bowl, then toss the mixture through the vegetables, and season with salt and pepper. Transfer the vegetables to the baking dish in an even layer. Spread the tomatoes over the top. Cover the dish with foil and bake for 45 minutes. Remove from the oven and take off the foil. Increase the heat of the oven to 200°C (400°F). Top the dish with the cheeses and breadcrumbs, return to the oven and bake for a further 15 minutes, or until the crust is golden and the vegetables are tender when pierced with a knife. Serve hot. Store in an airtight container in the refrigerator for up to 2 days. For younger babies thin with a little water and purée until smooth. Allow to cool before serving. Spread the desiccated coconut in a shallow bowl, then roll the balls in the coconut until evenly coated. Chill in the refrigerator for a few hours. Store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. For younger babies 7 months plus who are ready for some finger food, tear into squishy finger food—sized pieces. For older babies tear into squishy finger food— sized pieces. For toddlers serve as for adults.


Recipes……… PORK COOKED IN MILK WITH SAGE AND LEMON INGREDIENTS SERVES 8-10 PREP TIME: 10 MINUTES. COOKING TIME: 2 HOURS • Olive oil • 2kg boneless pork shoulder or neck, skin and excess fat removed, cut into pieces about 5-6 cm thick • Sea salt (omit for babies) • 10 garlic cloves, peeled

• 1 large bunch sage leaves (you’ll need approximately 1 ½-2 cups loosely packed leaves) • Zest and juice of 2 lemons • 1 litre (4 cups) full-cream milk • Freshly ground black pepper (just a tiny amount for babies)

METHOD Preheat the oven to 160°C (320°F). Place a deep, heavy-based, ovenproof frying pan or flameproof casserole dish over high heat and add a good splash of olive oil. Season the pork with salt, then add the pieces to the pan and brown it well on all sides. When nicely coloured, remove the pork from the pan and set aside. Reduce the heat slightly and add a splash more oil, followed by the garlic. Toss the garlic well to colour and soften, for about 2 minutes, then add three-quarters of the sage and all the lemon zest. Stir well. Return the pork to the pan along with the milk, half the lemon juice and a good grinding of pepper. You want your pork to be sitting snugly in the pan and the milk to come about halfway up the pork. Cover the pork with a damp piece of baking paper, then cover the pan with a lid or fitted piece of foil. Place the pork into the oven to slowly braise. Cook for about 2 hours until tender, checking and turning after 1 hour. When the pork is cooked it will be soft and falling apart and the milky sauce will be golden and deliciously curdled. Remove the pork gently from the sauce and transfer it to a board to rest for 10 minutes.

SWEET CORN AND MACADAMIA FRITTERS INGREDIENTS SERVES 4 PREP TIME: 10 MINUTES. COOKING TIME: 5 MINUTES • 160g (5½ oz/1 cup) roasted macadamia nuts kernels from 3 large corn cobs • 1 small red onion, roughly chopped • 2 eggs • ¼ bunch coriander (cilantro), leaves and stems roughly chopped • Sea salt (omit for babies)

• Freshly ground black pepper (just a tiny amount for babies) • 150g (5½ oz/1 cup) plain (all-purpose) flour (substitute gluten-free flour if family members are gluten-intolerant or coeliac) • 1 tsp baking powder • 3 tbsp macadamia oil

Meanwhile, place the cooking pan on the stovetop on low heat and very gently whisk the milk solids into the sauce. You don’t need to completely break it up, as the ricotta-like clumps are completely delicious as they are. Taste and add more lemon juice and salt and pepper as desired, then add the remaining sage leaves and stir to wilt. Place the pork on a serving platter and separate into pieces using tongs or a fork and spoon. Pour the sauce over and serve with a drizzle of olive oil. Store in an airtight container in the refrigerator for up to 2 days, or freeze for up to 3 months. For younger babies shred some of the pork and purée it with some of the juices until smooth. Serve with puréed vegies. Allow to cool before serving. For older babies shred the meat for finger food and serve with finely chopped greens. Allow to cool before serving. For toddlers serve as for adults, but allow to cool before serving.

METHOD Blitz the macadamia nuts in a food processor until finely chopped and set aside. Place half the corn kernels into the bowl of a food processor, along with the onion, eggs and coriander. Add a pinch of salt and pepper and blend until about three-quarters of the corn is puréed. Transfer the mixture to a large bowl and stir through the remaining corn, chopped macadamia nuts, flour and baking powder until just combined. Don’t overmix. Heat 1 tablespoon of the oil in a large shallow frying pan over medium high heat. When the oil is hot, add heaped tablespoons of the mixture to the pan (you should be able to cook 5 or 6 fritters at a time). Cook for 1-2 minutes each side until golden and just cooked. You can keep the first batch warm in a 100°C (210°F) oven while you cook the rest. Serve the fritters with the guacamole, if desired. Store in a sealed container in the refrigerator for up to 2 days. For younger babies purée half a cooked fritter, ½ tablespoon oil (if using) and a tablespoon or two of water until smooth. For older babies mash coarsely. Alternatively, the fritters make ideal finger food. For babies who can chew their food, but be sure the macadamia nuts are very finely chopped. Here, some of the spokespeople and activists involved share their thoughts on the importance of speaking up against violence, abuse and online harassment. “History – lived experience, the whole truth, unsanitised and unedited – is our greatest learning resource. It is what informs social and structural change.
