Make-up artist and the master of beauty Sandeep Molugu aka (Sandy’s Artistry) recently celebrated 10 years of his work at the majestic Taj Falaknuma Palace in Hyderabad. The event was attended by the who’s who of the industry including actors and influencers Sandy has worked with. Actor, influencer, and philanthropist Lakshmi Manchu was the chief guest among other celebrities , all of whom dazzled in creations by ace designer Manish Malhotra. A tastefully made video of Sandy’s 10-yearjourney was also unveiled amidst much applause from everyone present. This was followed by a cake cuVng ceremony and guests were treated to an evening of jazz music, dinner, and drinks. Even the brides Sandy worked with and his friends were a part of this evening. GOPI BYLUPPALA An accidental engineer from Madras University, Gopi Byluppala turned into a successful food entrepreneur with the startup The Culinary Lounge and has worked with around 500 global chefs. He believes in the philosophy of #NeverEatAlone. What is a typical day like in your life? As a startup entrepreneur, I don’t have much to do beyond my work and family. My day starts early with my black coffee, meeting various teams in the first half, have lunch followed by a quick book reading, get my work done, reach home and play with my four-year-old daughter Veeksha and one-yearold son Nikshith, Dinner with mom dad & my wife Swathi, a quick check on work, wrap up the pending tasks, plan the next day and hit the bed. What do you do in your free time? I love to cook for my family and friends, read books, I am a crazy movie buff (No language barrier) and I also love to practice cricket. 10 MAY, 2021 TULIP

How do you think the food industry is evolving in these tough times of pandemic? These are the most challenging times for everyone out there. We all know 2020 was a bad hit for the hospitality industry. Again, from April 20th, the city is going to be shut during the night. The only way to survive this pandemic is with constant innovation and quick pivot as per conditions. Dark kitchens & home deliveries became the saviour for many traditional restaurant businesses. Startups like us with lean teams have certain flexibility to change the course of action. We quickly added to digital and at-home culinary sessions which helped us to great extent.

What kind of initiatives does the culinary lounge take to promote chefs and cuisines? The Culinary Lounge is a Theatre for Chefs. We work with 500+ chefs across the globe, starting from a tribal chef in rural Telangana to Michelin Star in Bangkok. We map them to various projects based upon their core strengths. We firmly believe that chefs need to have a strong brand for themselves and our Food Media Firm - HandiTalks will help them by providing support for a few who are planning to write their cook-books, generate quality content for their websites and blogs, publish their views in various forums, etc. And when it comes to cuisine, we always strive to take our Indian cuisine global. , The Culinary Lounge is currently working with the Bolivian government to promote a culinary exchange program. We are working with Chef Akbar towards building a unique recipe with quinoa using the traditional Hyderabadi biryani recipe, adapting to the Bolivians tastes and ingredients. We call it The Bolivian Biriyani. This is being launched on their independence day, August 6th 2021, as a gift from India! A few years ago we invited Mehboob Alam Khan, the legendary culinary personality from Hyderabad. This was for a group of 50 CEOs from 500 companies across the globe. They came to The Culinary Lounge for an experience, where Khan Saab introduced the 400-year-old culinary history of Hyderabad while demonstrating the entire intricacy of the process, of how an authentic Hyderabadi biryani is made. From meat selection to choosing each ingredient, to marination and even the aromas of the cooked biryani! Most of them had documented the process and published the same in their local forums. We work with international journalists and bloggers, helping them understand Indian culinary culture and its integrities. How can the regional chefs promote their respective cuisine in Hyderabad? As Prof. Vikas Sha MBE, author of Thought Economics said, “Food is not just one of the basic things needed by all living things for survival (alongside air, water, shelter and habitat); it is nutrition, nature, culture, spirituality, social-good, desideratum, an aesthetic object and art. It is simultaneously the most social and intimate of activities, engaging our senses in a manner rarely achieved by any other aspect of our lives.”Regional cuisines exploration is the future. There is a lot to be discovered and modernized yet in restaurants, the trend has just started. Any chef, who understands the culinary heritage of the particular cuisine can promote the cuisine. They need to generate interesting content in their blogs, podcasts, social media, by sharing their knowledge beyond paneer or biryani recipes.

Which is your favorite place in India for food and why? I don’t have any particular favorite places; I just enjoy food as it is supposed to be. Wherever I travel I prefer to eat local food. Early this year I was in Udaipur Taj Lake Palace for 4 days. My interest was only to explore and enjoy Rajasthani and Marwari cuisine; their Laal maas, Dal Bati churma, kachori are delicious.

If you are given a genie and have to make 2 wishes what will you wish? Erase this covid from our lives Should always be happy and make others happy.

What inspires and motivates you? I read a lot of books and I meet many people. These are my two sources of learnings, inspiration I take from. It’s amazing to know everyone has a unique quality that we can learn from and that motivates me. Future plans are very short this time; just survive and help others to survive.

Indian cuisine or Western Cuisine? Indian cuisine, especially Telugu cuisine.

Tell us your relationship with food? For me, food is an expression. It is a Universal Social Lubricant that bonds people. #NeverEatAlone is my philosophy and I have a habit of dining with complete strangers. Till date, I have been lucky to have had 900+ dinners and made fabulous friends over meals. The best one was with a Chinese guy at the London Airport, where he did not even know a word in English, neither did I understand Chinese but it was still the most interesting conversation I’d ever had.

Are you a coffee or a tea person? Big fan of Colombian coffee

If you are left in a supermarket and asked to pick up only 3 things what would you pick? Maggie, Eggs, Chocolates - Not for me, but for my Daughter :) Food or Gym? Both, Eat well and workout hard Your biggest regret? Absolutely no regrets in life :)

At times we do come across few gems which might not appeal at the beginning but would turn out to be a total game changer. One such hidden gem in Secudrabad is Have More Restaurant and Bakers. By the looks of it you might not find something extraordinary to step in, but once you do, you won’t regret it even once. The restaurant is well renowned for its mouth watering haleem which is slowly cooked on wood fire and loaded with ghee, cashews and other myriad flavours. The most fascinating part being, it is available all year round, which means you need not wait for the Ramadan season to enjoy this delicacy. Apart from this, their Chilly Fish, Pahadi Chicken, loose prawns, Paneer Malai Tikka are to die for! The flavors are admirable, I not too sweet, not too spicy, just the perfect creamy texture and taste. As they say, Hyderabadi’s meal is never complete without Biryani! Dolce & Gabbana’s collection which was themed “Queen of Hearts”, the spotlight was clearly a feast of food prints and accessories. The eggplants, carrots, oranges and cabbages which you find at a market inspired the oversize print that decorated fit and flare dresses and midriff baring bra tops and full skirts. Their outfits were covered with different prints of cabbages, snap peas, cookies, soup cans and cannolis, with accessories like eggplant and carrot earrings. What was the driving force behind you starting food blogging? I wanted to showcase the beauty of food and beverage industry of Hyderabad. That was my whole purpose of starting food blogging. I never had the intentions or plans of becoming an influencer. There is so much to this beautiful city than just biryani. We have world class clubs, restaurants, cafes, lounges & street food too. I wanted to show all this to the people of Hyderabad through my blog. Where do you see yourself in the next 5 years? I usually don’t keep long term goals. I believe in living one day at a time. But for the answer’s sake, I would love to see myself representing Hyderabad at an international level with regards to either food or food blogging. How do you think has the pandemic impacted the gourmet sector? Oh! It has impacted in a very disastrous way. The whole food and beverage industry is bleeding bad. We thought 2020 was the worst year of history. It took a lot of efforts and time to revive the food industry after 2020. And now after few months we are back to square. 2021 is proving to be more dangerous. I just hope and pray that things get back to normal and the gourmet sector comes back to life. Three things you love about your profession? Eating food, exploring new places and socialising with people. All these three go hand in hand. It’s a great feeling when you connect with people over food. I have met people as strangers over food sessions and now they have become more like a family. That’s the positive impact food leaves on you. Any suggestions for upcoming food bloggers? I’ll put it in simple words for everyone to understand. Food blogging is like any other profession. If you want a job in a particular field you should be a qualified candidate. Food blogging is also same. Build your profile first, upload good content, learn about food & its origins. Master the skill of writing a detailed food review. Build a follower base & Be consistent. These are some of the suggestions that upcoming bloggers should follow. If not a food blogger, what would your alternative career option be? I would have been a happy retailer or a motivational speaker. I get a lot of messages from my followers saying that I inspire and motivate them in one or the other way. I am glad that I am able to do that. What element of your work do you enjoy the most? Delicious food, grabbing knowledge about different cuisines, bonding with people who loves food, interacting with industry experts etc. But if you ask me to pick any one, it has to be eating food ! ¼ cup melted butter, 1 teaspoon salt, 4 skinless, boneless chicken breast halves.

Method: Step 1: Preheat the oven to 350 degrees F (175 degrees C). Lightly butter a baking dish. Step 2: Stir 1/4 cup melted butter and salt together in a bowl. Step 3: Arrange chicken in the baking dish. Brush butter mixture onto the chicken until thoroughly coated, pouring any extra over the chicken. Step 4: Bake in the preheated oven until no longer pink in the center and the juices run clear, about 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Step 5: And you’re ready to relish!

Shrimp Scampi Pasta There are so many times we’re craving some fancy food but those savings and time say a clear “No”. But we’ve got you this delish savory that will take you to the classic Italian restaurant in no time! Ingredients: 1 (16 ounces) package linguine pasta 2 tablespoons butter 2 tablespoons extra-virgin olive oil 2 shallots, finely diced 2 cloves garlic, minced 1 pinch red pepper flakes (optional) 1 pound shrimp, peeled and deveined 1 pinch kosher salt and freshly ground pepper 1 lemon, juiced 2 tablespoons butter 2 tablespoons extra-virgin olive oil ¼ cup finely chopped fresh parsley leaves 1 teaspoon extra-virgin olive oil, or to taste. Method: Step 1: Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain. Step 2: Melt 2 tablespoons butter with 2 tablespoons olive oil in a Pan over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the pan and cook until pink, stirring occasionally for 2 to 3 minutes. Remove shrimp from the pan and keep warm. Step 3: Pour lemon juice into the pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Melt 2 tablespoons butter in the pan, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Step 4: Set it aside for 5minutes. Step 5: Heat the pan and drop little balls into the hot oil carefully. Step 6: Once they turn brownish. They’re ready to serve!

Malarouthu Geethika, Student Prep Time: 12 hours Cook Time: 1 hour 30 minutes Total Time: 13 hours 30 minutes Course: Dessert Cuisine: Andhra, South Indian. Ingredients: • 600 grams Rice • 300 grams Jaggery • 40 to 50 ml water • ½ tsp. cardamom powder • 1to 2 tbsp. sesame seeds (optional) • ¼ cup ghee • Oil for deep-frying Method: Soaking & Grinding Soak the rice overnight. Rinse for 2 to 3 times and strain out the water. Leave the rice on the strainer for around 10 to 15 minutes. Grind the rice in batches into very fine flour and keep aside. Making Jaggery Syrup Put jaggery in a deep pan and add 40 to 50 ml water so the jaggery melts very fast. Boil until the syrup starts bubbling. When the syrup starts to bubble, take a small spoonful of syrup and put it in a small cup of water. f the syrup doesn’t dissolve or if it turns into a ball when pressed with fingers then the syrup is ready. Add ghee, cardamom powder, and mix well. Turn off the flame and keep it aside. Making the Dough Add the rice flour little by little through the sieve to the jaggery Syrup. Keep stirring and keep adding the rice flour until the dough turns hard like chapatti dough. Deep-frying. Heat oil for deep-frying on medium flame. Take an Arise sized lid with a plastic sheet placed on it. Grease your fingers and the plastic sheet with ghee. Take a fistful of dough and make it into a round ball. Pat it into a round flat shape until it covers the lid size. You need to dip each dough ball in sesame seeds before patting if you want sesame seed Ariselu. Drop it into oil carefully and wait until the Arise floats to the top. Fry for a minute and flip it over to the other side. Fry until it turns to a nice golden brown color. Method: 1. Take a pan and fry cashews till golden brown and set aside. Keep a tray ready greased. Heat coconut and sugar together. Mix well. 2. Continue heating with constant stirring in medium flame. The sugar will melt and form a thick liquid. Continue this until the mixture starts leaving the pan and forms a foamy whitish bubbles while stirring. Color should not change. Add cashews, cardamom lastly. 3. Ripe mango- 1 cup pulp Full cream milk- 1 liter Ripe mango – ½ cup finely chopped Rice grains – 1 tablespoon Sugar – ½ cup Cardamom powder – ¼ tablespoon Khowa/mawa – 250 grams Chopped cashews – 7 Chopped almonds – 7 Chopped pistachios - 7

Method: 1.

Take full cream milk; let it boil on medium heat for a while. 2. Meanwhile, soak basmati rice for 30 minutes. Discard the water and blend rice to a coarse paste. 3. Add the rice paste to the milk and keep stirring to avoid formation of lumps. 4. Boil the milk till the rice gets cooked completely. 5. Add sugar. Mix well. 6. Add chopped nuts and cardamom powder. 7. When the mixture reaches the desired kheer-like consistency turn off the flame and let it cool down completely. 8. In a mixture jar, add mango pulp and khowa. Blend it. You may add a little milk to adjust the consistency. 9. Add this mixture to the kheer and mix well. 10. Add finely chopped mango pieces to the kheer. 11. Garnish with chopped nuts and some more mango pieces and serve.

Grind the onions along with green chilies, ginger & garlic to a smooth paste. In a deep pan add ghee, once it's nice & hot add the ground onion paste and fry on low heat for about 3 to 5 minutes till the time its nice pink & soft. Once the onions are soft then add the cubed chicken along with salt, garam masala, pinch of red chili powder and white pepper. Fry this for another 5 to 6 minutes till the chicken changes color and it's not raw. Later add the hung curd & Kasoori methi and let it bubble up till like 5 more minutes. Cover and cook on low flame for 10 minutes and then remove the lid and add the milk with saffron. In the end add the cream & butter and allow it to boil on low flame without the lid and the garnish with coriander leaves if you want to add fried kaju and a drizzle of cream & serve with naan or zeera rice.

MANGO TRIFLE PUDDING

Back with the easiest, nostalgia-filled trifle pudding! While mango season is on, do yourself a favour and make this super quick dessert at your home .This Mango Trifle recipe is just perfect for summer. It's refreshing and light, and ofc yummy. Ingredients For the custard Milk - 1 and half cup milk, Custard Powder - 2 tsp and Sugar 3-4 tsp or according to the desired sweetness. For rest of the layering Mango pulp - 2-3mangoes pulped. You may add a little cream and sugar in the mixie while making the pulp if they arent sweet enough. Vanila cake - 3-4 slices. Sweetened Whipped Cream - 1/2 cup. Mango cubes - for garnish Instructions To make the custard : Heat a saucepan and add one cup milk to it and immediately add the custard powder and the sugar. Start whisking ( stirring) immediately so that no lumps are formed. Then add the rest 1/2 cup milk and keep whisking for 4-5 mins or until the custard thickens. Take care that it isn't too thick nor too runny. Let it cool down at room temperature for 10 -15 minutes before you assemble the pudding. To assemble the pudding : Keep all the ingredients ready. In glasses/ jars add small pieces of cake. Then spread a layer of custard. Then add a layer of mangoes cut into cubes. Then add a layer of sweetened whipped cream. Then spread some Mango Pulp. “The first and most important thing I keep in my mind is the “occasion” whether the food table spread is done for a special occasion or just a casual one therefore based on it I decide how elaborate or simple I can do the food spread. For example, if it’s a group or family dinner I make sure the spread must cater to all age groups and it also must have diversity in flavors, colors; perfectly match the theme and your surrounding ambience. Twitter Bans Kangana Kangana Ranaut’s Twitter account was permanently suspended on Tuesday following her tweet, wherein she urged PM Narendra Modi to ‘tame’ Mamata Banerjee with his ‘gundai’. This is what she had tweeted which caused Twitter to suspend her account: It did not stop there. Kangana added, “Fortunately, I have many platforms I can use to raise my voice including my own art in the form of cinema but my heart goes out to the people of this nation who have been tortured, enslaved and censored for thousands of years and still there is no end to the suffering.” We would really like to know what suffering is she talking about? She tried to give her suspension a ‘national spin’, perhaps with the intention of gaining sympathy. The only thing that Kangana deserves is anger for trying to incite the PM.

Kim Kardashian Purchase in Trouble

Kim Kardashian has found herself in a spot! The reality star and beauty mogul has been asked by the US Government to return a rare piece of art that was reportedly brought in from Belgium. According to a report in Artnet, Kim Kardashian purchased a limestone statue, named “Fragment of Myron’s Samian Athena,” in 2016 from Axel Vervoordt Gallery in Belgium. As per the details, the antique piece of art was smuggled out of Italy. The piece which reportedly dates back to the 1st or 2nd century and was arrived in Los Angeles in May 2016. However, it was stopped at the airport as authorities suspected that the statue could be a “protected cultural property”. The statue arrived along with some other decorative furniture objects and 40 antique items that valued at a staggering $745,882. The shipment was not released and in 2018 Italy’s Ministry of Cultural Heritage sent an archaeologist to study the piece of art. As per the archaeologist’s report, the statue was deemed to have been “looted, smuggled, and illegally exported from Italy”. This resulted in Italy asking for it back. While it is not clear that Kim Kardashian knew about the statue’s origins, the US Feds filed a civil forfeiture complaint in California on Friday instructing the beauty mogul to give it up.

Hospital beds are not available and our country is running short of oxygen. Many of our Indian celebrities, sportsmen, businessmen have been contributing for the nation and now even Hollywood celebrities have supported our country in its war against COVID-19. Lilly Singh and many other Hollywood celeberities has been asking people to donate for India. She had shared Priyanka Chopra Jonas’ post recently on Twitter and wrote, “I posted a few ways to donate to India on IG but here’s another great one! All donations go directly to healthcare infrastructure.” She also has been supporting the ‘Donate for India’ drive.

IPL2021 Cancelled and postponed

The Indian Premier League Governing Council (IPL GC) and Board of Control for Cricket in India (BCCI) in an emergency meeting has unanimously decided to postpone IPL 2021 season, with immediate effect. In a statement issued the BCCI quoted “The BCCI does not want to compromise on the safety of the players, support staff and the other participants involved in organising the IPL. This decision was taken keeping the safety, health and wellbeing of all the stakeholders in mind.These are difficult times, especially in India and while we have tried to bring in some positivity and cheer, however, it is imperative that the tournament is now suspended and everyone goes back to their families and loved ones in these trying times.The BCCI will do everything in its powers to arrange for the secure and safe passage of all the participants in IPL 2021.The BCCI would like to thank all the healthcare workers, state associations, players, support staff, franchises, sponsors, partners and all the service providers who have tried their best to organise IPL 2021 even in these extremely difficult times.”
