Business Traveller India talks to Yasser Ali, CEO and Founder of Amore Gelato about his Shark Tank experience, venturing into the business of ice creams and more.

What was your experience of appearing on Shark Tank like?

It was a thrilling, surreal yet overwhelming experience. Everything you learn as an entrepreneur and a business owner is put to test in front of the Sharks. All of them have di erent personalities and business acumen but the questions they ask are some of the most challenging and detailed. To summarise the experience, it was exciting and scary all at the same time. When you are on that stage in front of the Sharks, it seems like a blur but the support and the love you get after the shark tank is incredible and overwhelming.

Could you please tell us about which interests of yours pushed you to found Amore Gelato?

I’ve always been very passionate about ice cream, growing up I would have ice cream almost every day. I wanted the customers to love and

enjoy ice creams the way I did. Realising that India needed good and authentic ice cream was my biggest motivation to found Amore.

What has the journey so far been like in introducing gourmet and vegan gelatos and sorbettos to the Indian market?

Knowledge is power, I believe. A well-informed customer makes the right choice. We began our journey by educating the masses and breaking preconceived notions. The idea that vegan or sucrose-free ice creams taste bad is not true. They taste fantastic! People also think gelato is gelatin-based or it’s not vegetarian. Being a brand, you really have to inform, educate, and enlighten your customers, creating an irreplaceable demand for your product.

Tell us a few things that we would always find in your carry-on luggage?

My profession allows me to travel a lot, so I prefer to pack light. Usually, when I travel domestically, I do not check the bags in. I pack exactly how much I need for places I'm going to visit. I have my essentials, toiletries, some clothes, my computer accessories, medicines and headphones.

How important is travel in your life and what destination is next on your bucket list?

Travelling according to me is very important as it exposes one to new cultures and experiences. I have travelled quite a bit throughout my life, both for work as well as for leisure. Having a brand that is so deeply rooted in Italian culture, Italy is almost like a second home. I also travel a lot to the United States of America. With Amore expanding in India, I travel extensively within the market. As far as what's next on my bucket list, I would like to say Zanzibar.

HELSINKI AIRPORT REMOVES 100ML LIQUIDS IN HAND LUGGAGE RULE

AIRPORT COMPANY FINAVIA is increasing the amount of liquids allowed in hand baggage at Helsinki airport. Passengers will now be able to take up to two litres of liquids through security in the departures hall at Helsinki airport. is is a result of the airport’s development project which aims for smoother and more stress-free security controls. e rst phase was completed last summer and saw the creation of a new security area with eight control lines featuring new scanners that do not require passengers to remove electronics and liquids from their hand luggage. e second phase was completed this month and included two additional security lines. Rede ning the Indian wine industry, its growth and its popularity

There are many ways to measure an industry’s maturity - from awards, volume and sales growth etc. whichever way you look at it, the Indian wine industry is growing by leaps and bounds. Sula was awarded the gold and bronze medal at IWC 2022, with the gold being awarded for its Sula Brut Tropicale, a sparkling rosé. In the past winemakers like Vallonne and Charosa have won awards at the London Wine Competition and more recently, Krsma’s Sauvignon Blanc was awarded a silver at the Sommelier’s Choice Awards 2023. In tandem, the Indian wine industry is producing more and growing in value. A Technopak report pegged the domestic market at Rs 1,250 crore. As wine-making in India evolves, wineries are experimenting while also contending with climate change. ere has recently been consolidation with Sula and York merging in 2021 and Grover Zampa buying Charosa, Four Seasons and Myra before that in 2019. rough it all, they continue to innovate and push forward; Grover Zampa’s Signet range features red wines that have been aged in everything from concrete tanks to clay amphora. It’s clear then, that as a whole, Indian wine-makers are gaining in con dence while drinkers are open to drinking more nuanced pours.

Karan Vasani, Sula Vineyards Chief Winemaker gives an industrywide overview when he explains, “Red wine consumption is growing faster than white wine consumption. ere’s a clear shi that we see in the market. People want reds.” He points out that 10-12 years ago, Sula’s share was 60% white wines with the rest being red, but now that gure has inverted, and it’s now 60% red and 40% white. He also notes, “Rosé as a category is nally growing, and the growth has caught us all by surprise, but we believe it’s a great thing you know, because rosés are great for India.” Shailendra Pai, founder at Vallonné Vineyards said, “India’s largely warm and sunny weather makes it conducive to have a glass of chilled rosé – at any time of the day. It’s a great crisp wine to serve as an aperitif, to pair with salads, to have with lunch or as a sundowner. Rosé is also quite a preferred wine when it comes to gi ing.” Nikhil Agarwal, founder of All ings Nice, a wine education platform says, “From a climatic point of view, a glass of chilled rosé ts the bill perfectly and is also versatile enough to pair with di erent types of food.” As a result, the trend is more for a drier, more complex rosé, like Sula’s e Source.

THE PANDEMIC AND BEYOND

Like most other industries, Covid had an impact on the country’s winemakers given that ‘on-trade’ –bars, restaurants and hotels immediately ended. e pandemic rmly brought drinking into the living room. Jayanth Bharati, Deputy General Manager of Marketing at Fratelli Wines says, “We saw families starting to drink together. Many Indian families are kind of now ok with drinking, but there’s still a bit of taboo. You know you wouldn’t typically sit down with your parents and drink or with your whole family to drink, but Covid forced that and wine was the beverage which became socially acceptable.” is is a view echoed by others in the industry as well, Sula’s Vasani adds, “Certain beverages are more socially acceptable and more sophisticated than other beverages. It’s encouraging people to look at wine as a part of a table, the way Europe has looked at it for centuries and learning to drink wine to enjoy the beverage and not to drink it to get high.” is has also helped move wine to an everyday drink, whereas earlier it might have been seen as occasion based.

Drinking at home had two knock-on e ects; the rst was that drinkers started trading up. Sumit Jaiswal, VP of Marketing, Hospitality and Exim at Grover Zampa says, “I think that people upgraded and evolved their

wine-drinking experiences by trading up to better quality wines.” So those that were working and suddenly saw their expenses curtailed, were able to upgrade.” Sula’s Vasani explains, “You know once consumers’ tastes change and they start drinking better stu , nobody wants to go back down so the more expensive wines are the fastest growing.” e second is that there is a renewed interest in Tier II cities. Fratelli’s Bharati says, “A lot of people moved to their hometowns and they’ve lived in Tier I cities and have gone back to their hometowns. ey have a certain lifestyle, a certain habit. And that propelled Tier II sales in wine as well.” However, according to the India Wine Insider Report 2022, “Nearly 85% of India’s wine consumption takes place in urban centres. Most important among these are Mumbai, Pune, Delhi, Gurugram, Bengaluru, Chennai and Goa. Other cities like Hyderabad and Kolkata are also showing growth,”

ere’s a newfound pride in self-su ciency across all sectors of the economy and that extends to hospitality too. While restaurants and bars have always had Indian wines on the menu, they were very rarely highlighted. Now, Agarwal notes, “ e top Indian hotels have made it such that Indian wines have to be featured on their list.” Grover Zampa started by selling its Signet range only at its cellar door in Bengaluru and Nashik. e winery has adopted a strategy of selective distribution and now has made Signet available to be listed only in two top dining places and two retail shops in Mumbai and Bengaluru. Even as the market has expanded, familiarity with grape varieties is limited. M Deepak of Krsma wines says, “At present, Krsma o ers the market its award-winning Cabernet Sauvignon and Sauvignon Blanc. We release newer vintages every year, especially in our white wines.” While that is especially niche, the Technopak report notes that the commonly grown varieties are - Chenin Blanc, Sauvignon Blanc, Zinfandel, Cabernet Sauvignon, Shiraz, Chardonnay, Merlot, Riesling, Viognier, Tempranillo and Malbec. Over the years, vineyards have expanded, and winemakers are working with farmers on contracts to plant beyond their land parcel. At Grover Zampa, Jaiswal explains how the winemaker blends di erent grapes and has started to add new grape varieties this last

few years, which includes the Sangiovese, Chardonnay, Riesling, Muscat and Cabernet Franc.

Another factor is that wine consumption has also become popular among women, with the Technopak report noting, “women consumers have an equal say in the purchase of wines whereas participation of women in the purchase of other alco-beverages is very low.”

Sula’s Head of Marketing Gregoire Verdin says, “It has a good image because it’s socially quite accepted to have a glass of wine.” He also points out that women perceive a health bene t to drinking a glass of wine over other alcoholic drinks that are available. Ipsita Das, Managing Director of Moët Hennessy says, “We had an entire campaign on Rosé-O-Clock which really did well.”

e campaign was run last year and pushed Chandon towards becoming a round-the-clock drink. Chandon is the group’s sparkling wine that is made in India. e campaign worked to make Chandon’s two variants, Brut and Rosé, more visible to the public with changing habits, that could start drinking at brunch or dinner and everything in between. Sparkling wine’s share of the growing wine pie is also increasing, with the category expected to grow from 4% to 5% between 2020 to 2025. at’s while the overall domestic wine market is expected to grow from 2.1 million cases to 3.2 million cases in the same amount of time, as per the Technopak report.

temperature a ecting both states. Fratelli’s Bharati, which grows grapes only in Maharashtra’s Akluj region, says, “It’s not just about temperatures rising. Rainfall plays a critical role in the grape growing cycle, so when that gets delayed or there are extended periods of rainfall or the cycle gets changed it a ects how vineyards behave.” Summing up the mood in the industry, Krsma’s Deepak says, “Climate plays a signi cant role in terroir. From excess rains to drought, we have seen them all in the recent past. Progressively, we are trying to reduce our dependence on monsoons, focusing on rainwater harvesting and building reservoirs that would help cope with summer water scarcity.” Like other vineyards, they are working on going climate neutral and moving to 100 per cent renewable energy.

Another bene t of the pandemic has been the renewed interest in domestic tourism. Nashik bene ts from this given its proximity, by road and increasingly by air. Vallonné’s Pai says, “A growing interest or demand for wine is fuelled by direct access to wineries because that’s where the best experience is – when you see a winery, take a tour and do tastings with say the winemaker. Better connectivity has been bringing a lot more people to Nashik on wine trails and that, in turn, is increasing the demand for wines. With new ights from Nashik connecting the city with several tier 1 and tier 2 cities, there is a growing in ux of travellers who are interested in wine and wine tourism. Nashik is now

Given the pandemic and the focus on wellness, it’s no surprise that wine’s health bene ts are also what has drawn drinkers to it. Red wine which now outsells white, is known to have certain health bene ts like being able to lower the risk of heart disease, diabetes or strokes. It is something that Krsma’s Deepak thinks draws drinkers to reds, along with its lower acidity and higher tannin levels.

As we see the wine industry maturing, it’s clear that wine drinking is maturing for a certain section of the population and vineyards are working to tailormake their o erings towards this market. However, as Agarwal notes, “Because our country is so large, there will always be new customers who want fruit-forward styles of wine.” So, the market will always have to appeal to curious, new drinkers, while also maturing. at means that variants like Fratelli’s J’Noon and Sette, Grover Zampa’s Chene and Sula’s Rasa and e Source will continue to be what discerning drinkers reach for. It remains to be seen if new entrants decide to enter the industry, which has seen a lot of consolidation in the last couple of years. Come the revolution

Should business travellers be segregated by class depending on seniority, or will woke cabins see juniors and execs brushing shoulders?

There’s a whiff of a revolution in the air. Or so you would think if you were to listen to some of the debates going on in the wings of travel management conferences. The heresy being espoused by some mavericks is a more egalitarian approach to corporate travel policies. Some are whispering that it is no longer appropriate for senior executives to travel up front while the more lowly languish down the back.

In my earlier column about purposeful travel, published in the March 2023 issue, I wrote about the growing tendency to see business travel as a strategic investment in people, rather than an avoidable cost to a company. Proponents of a ‘one class for all’ approach argue that if travel is to be more purposeful, then it ceases to be a perk of seniority but a fully justifiable business investment with a measurable return. If this is the case, they conclude, all business travellers should enjoy the same level of comfort, whether it be on the flight, in their hotel room, in the car or on the train. Either it is no longer appropriate for senior executives to monopolise business class and the hotel club floor, or everyone should sit in economy and sleep in an entry-level room, depending on the financial resources available to the company. Some ultrarevolutionaries have argued that it is perhaps even more important that the ‘worker bees’ be better rested during a business trip than the ‘queen bees’, but that brings us into the realms of pure Marxism.

ARE YOU WORTH IT?

There is a healthy degree of logic to this argument, even if corporate ‘C suiters’ will be quaking in their Gucci loafers at the thought of it. For the most part, we no longer have executive washrooms or

directors’ dining rooms, and many companies have dispensed with private offices altogether, let alone the much sough-after ones in the corner. Seniority in a company seems now to be defined by the paycheck, bonus and accompanying package. Why is inequality still rife in the air, beyond the hotel lobby or in the train carriage?

There is of course a very plausible counterargument. The more senior you get in an organisation, the more responsibility you take on and the larger the decisions you take. The theory is that you generate a

As a salesman for an airline for more than 20 years, believe me, I am well versed in all the arguments for paying that bit extra. A less used argument, but one that is very compelling for lawyers and accountants, is the privacy requirement. One of the most effective and hard-to-dispute cases for forking out for a premium travel experience is the need for privacy. If you’re a partner in a city law firm or a venture capitalist on the brink of a canny acquisition you can hardly have general members of the public looking over your shoulder, can you? This is not a problem facing a junior programmer for an IT company – or maybe it is?

THE SWITCH TO ECONOMY

There will also be those that think all of this is just deconstructed communism or ‘wokery gone mad’. It all makes sense in theory, but in practice there will always be ‘some more equal than others’. They will say that the company just can’t afford to put all its employees in first class, that there isn’t room in the club lounge for everyone, and people should have something to which they can aspire, anyway.

WHERE IS IT: Located on the prestigious Kaiserplatz, the hotel is in close proximity to the city’s cultural o erings such as the Old Opera House, The Maintower, Römer and St. Paul’s Church. Furthermore, the Central station is only a short 13 minute walk away, making other places in the region and city easily accessible.

WHAT’S IT LIKE: As soon as I entered the property, I experienced immense joy because of how immaculately beautiful the interiors were! Decorated with iconic Beaux Arts furniture and a grand staircase surrounded by spell-binding Gobelins tapestry; the luxury property is one of the most beautiful five-star hotels that I have ever stayed at.

ROOMS: Steigenberger Icon Frankfurter Hof features 267 hotel rooms and 36 suites. I had the pleasure of staying in the Grand Deluxe Room which has a carpet

area of approximately 36-45 sqm. The luxurious bathroom, kitted out with Aqua di Parma bath and toiletries, comes with a separate rain shower and a beautiful bath tub that is perfect for unwinding in after a long day of meetings. Other amenities include a flat-screen TV, a co ee machine and a large desk that allows one to stay productive within the comfort of their room.

FOOD AND DRINK: Catering to a range of culinary preferences, the hotel is home to three incredible F&B establishments that allow you to sample French and regional cuisines. Breakfasts are incredibly important to me because it gives me a chance to prepare myself for the day ahead, so I like to indulge in a heavy breakfast. I began my day with the bu et breakfast at their breakfast restaurant Hofgarten. I opted for hard fried eggs with freshly baked sourdough bread, fresh fruits and my staple cup of cappuccino. The Autorenbar is perfect for an evening of exclusive cocktail classics with a side of delicious bar bites in a chic setting. Lastly, Oscar’s is a modern brasserie where tradition melds with modernity. The convivial art déco ambience is well complemented with creative concoctions produced by their expert kitchen team.

BUSINESS: Keeping in mind MICE requirements, the hotel features 16 newly renovated, multifunctional conference rooms which are all air-conditioned, soundproofed and include state of the art media technology. The total event space of the hotel is 1200 sqm including a large ballroom with integrated LED wall, a stage and Meyer Soundsystem. The property also o ers the option to host events on their terrace or balconies.

LEISURE: For those looking to treat themselves to some much needed pampering, The Spa at the hotel o ers traditional European spa treatments as well the quintessential Turkish bath ritual or the oriental Rhassoul treatment. Guests can also head to the Gentlemen’s Barber or the Day Spa suite to immerse themselves in a tranquil, wellness focussed environment. Guests who like to stay active even whilst travelling can head to the gym which recently underwent renovations and is open 24 hours.

VERDICT: To truly understand why this luxury hotel has stood the test of time, I would highly recommend a stay where one will get to experience the intricacies that go into the making of an iconic hotel.

WHAT’S IT LIKE: When I entered the lobby of Hilton Frankfurt City Centre, I was enveloped in the warmth of the ambience and the friendly sta who ensured that my check-in process was hassle-free and quick.

WHERE IS IT: Located in prime downtown Frankfurt, this 5-star hotel is situated just five minutes from the business and banking district. It is ideally located within walking distance of popular attractions such as the Bockenheimer Anlage Park and Alter Oper. Goethestrasse and Zeil renowned for local shopping and dining are less than a kilometre away. Städel Museum and the historic Römer are also within two kilometres from the hotel.

ROOMS: The hotel has 342 spacious guest rooms and suites which are divided

into eight categories. I stayed in an urban loft-style Junior Suite, which was 38 sqm in size, o ering spectacular city and skyline views. The modern suite had a work desk with an adjustable lamp, a luxurious bathroom featuring a separate bathtub and shower and an espresso machine.

FOOD AND DRINK: The best part of my travel has always been to enjoy a hearty breakfast. I started my day at the Park Restaurant and Terrace with a bowl of nutritious oatmeal porridge with walnuts, eggs and fresh fruit washed down with orange juice and a shot of espresso co ee In the evening I relaxed with a glass of Riesling and a cheese platter at the club lounge. Guests can also relish international and local food and beverages at the contemporary Hudson Yards Lounge and Dining venue.

FOOD AND DRINK: I began a busy day with a nourishing breakfast at K3 comprising of a large bowl of muesli, egg white omelette and sourdough toast washed down with a comforting cup of cappuccino. In the evening I relaxed with a glass of red wine and cheese at the club lounge. Guests can also relish illy’s co ee,

fresh bread, cakes and pastries at Delhi Baking Company. JW Lounge at the lobby level is the perfect place to unwind with hors d'oeuvres and cocktails. Japanese aficionados can enjoy a meal at Adrift Kaya, a modern Japanese Izakaya restaurant by Michelin star awarded Chef, David Myers.

MEETINGS: Whether hosting a MICE dinner, corporate gala, or grand wedding celebrations the hotel has plenty of venue spaces. The Grand Crystal Ballroom can seat 1400 guests and can also be broken out into smaller rooms. In-house planners and a talented culinary team take care of every small detail to make the function memorable.

WHAT’S IT LIKE: The hotel has a welcoming aura and a very cosmopolitan atmosphere which is enhanced by modern design elements and warm earthy colours. I thoroughly enjoyed the hotel’s paternoster lift, as it was a fun, quirky element that I was not expecting!

ROOMS: The property has 206 keys and has three room categories. I stayed in the

spacious Superior Plus room. The 25 sqm space creates a cocoon of comfort with an-ultra comfortable bed and other amenities such as a Nespresso co ee machine, keyless entry, digital guest service and other modern elements!

FOOD AND DRINK: Guests can sample two incredibly di erent kinds of cuisine during their stay at the chic property. On the ground floor, the Italian restaurant Cucina da Nina Restaurant is open for meals such as breakfast, a light lunch or a quick break snack. The culinary team is known for putting together authentic Italian dishes such as pinsa, pasta, caponata and salad, which one can enjoy in the laid-back urban ambience of the establishment. Before heading out for my meetings, I began my day here with a scrumptious breakfast consisting of poached eggs, a variety of breads and a joyful cup of hot chocolate. For a meal with a refreshing view of the metropolis’

skyline head up to the seventh floor in the paternoster lift for a culinary experience at Occhio D’oro!

BUSINESS: The hotel features five conference rooms which can host up to 120 people and four boardrooms for up to 16 people. The collective events space at the hotel is 430 sqm which is ideal for a wide scale of events from conferences to gala evenings. For more informal celebratory occasions, the courtyard terrace which can accommodate up to 120 people is perfect!

LEISURE: Keeping in mind how hectic business and even leisure travel can get, the hotel is home to a Finnish sauna, Aroma steam bath, relaxation area and a fitness area to ensure guests can relax and make the most of their stay in the city.

VERDICT: The hotel keeps up wonderfully with the evolving needs of the modern traveller!

BACKGROUND: A renowned name in the Germany luxury hotel segment, the Hotel Nassauer Hof in the heart of Wiesbaden has been welcoming guests since 1813. The luxury property was the first luxury hotel in Germany to be awarded a five-star rating.

WHERE IS IT: Situated 25 kilometres from Frankfurt airport and directly opposite the monumental Kurhaus in Wiesbaden, the Nasseur Hof is one of the top five-star hotels in the Rhine-Main region.

WHAT’S IT LIKE: The upscale hotel retains its old world charm in a simplistic manner. Erected in 1813, I couldn’t help but marvel at each nook and corner of the hotel as it showcased the level of thought and attention paid to every minute detail so beautifully.

ROOMS: The property features 135 rooms and 24 suites that are split in seven di erent room categories. My room was

the Deluxe Double room which was soothing to the eyes and soul. The elegant, minimalistic design of the room, that spans across 30 sqm, is a delight to come back to after a hectic day. The room includes a sitting area with a large desk, large bathroom, soundproof windows, a mini bar, room safe and other amenities that ensure a comfortable stay.

FOOD AND DRINK: The hotel has four incredible F&B establishments that range from Ente- the only Michelin star winning restaurant in Wiesbaden to the Hotel Nassauer Hof Bar which is the only cigar bar in the city. The breakfast bu et at Orangerie is not to be missed! The wide spread of options that include everything from à la carte to standard breakfast favourites, makes the first meal of the day a memorable one. I feasted on a plate of fried sunny side up eggs accompanied with some warm toast and a glass of fresh orange juice- a combination that never fails!

BUSINESS: Boasting nine di erent sized conference rooms that cater to a variety of events, the hotel makes sure that hosts have nothing to worry about and assists in such a way it will guarantee a successful meeting/event.

LEISURE: I would highly recommend a visit to the hotel’s Artemis Beauty Spa. Spread across an expansive 1500 sqm, the most special feature of the spa section is that the rooftop pool is the only pool and sun terrace in Germany with thermal water from the hotel’s own thermal spring. Other leisure o erings of the hotel include a fitness centre, saunas and solariums.

VERDICT: During my stay at this magnificent property it became highly evident why it was the first luxury hotel in Germany to be awarded a fivestar rating!

The Republic bar concept pays homage to an era where freedom, expression and individuality were celebrated

bruschetta and vegetable crudites salad. I finished the meal with some decadent gianduja panna cotta and that was a ceremonious end to a wonderful evening.

The Republic bar is acclaimed the world over for its extensive cocktail menu devoted to a narrative of historical anecdotes inspired by pop culture in the 1960sincluding the influence over art, cinema, fashion and music. The 60s were marked by cultural and social revolution and saw the rise of style icons and the legends of rock music, as well as the international jet set, which led to a sophisticated era for cocktailing. The Republic bar concept pays homage to this era where freedom, expression and individuality were celebrated, with a cocktail and curated menu of vintage spirits that showcase flavours, ingredients and sensations inspired by the decade of the 60s.

When my host suggested that we have drinks and dinner at this eclectic bar, I instantly confirmed and was looking forward to experiencing its vibrancy. It did not disappoint and checked o all the components on the list to create a perfect evening. The sophisticated ambience with its modern and timeless allure took me back to a time that seemed to stand still.

I ordered a classic Hendrick’s gin with

tonic & soda garnished with an orange twist. The drink was deliciously refreshing and hit all the right spots on the taste palate. While ordering this drink, it’s important to remember that like chips, you can’t have just one!

Dinner began with semolina-crusted calamari, followed by a small plate of

VERDICT Drinks and dinner at the Republic bar are the perfect way to end a long and tiring day! The ambience and vibe are excellent and uplifting as are the cocktails and food menu. I would strongly recommend a visit to this fantastic bar during a trip to Singapore.

exotic starters, I couldn’t resist the Black Cod cooked in Japanese soy marinade, ginger, honey, heirloom carrot, yuzu carrot puree and asparagus. For the pre-dessert, I was served a mouth-watering Yuzu sorbet, crispy meringue, and basil espuma, however, the Mille Feuille with Madagascar vanilla cream, mango, and ginger was the piéce de resistance! A visit to Sea Fu, a Michelin guide restaurant with a contemporary take on Asian food which is located in Four Seasons Resort Dubai at Jumeirah Beach, should be on the top of everyone’s gastronomic bucket list. Whether it is indoor or outdoor seating, the view is not only spectacular, but it is also unparalleled. I had heard so much about the seafood at this restaurant that I decided to eat there on my last visit to Dubai. The ambience was relaxing and tranquil, and the choice of seafood was exotic and extensive. I opted for the tasting menu with the wine pairing addon and I knew I had made the right choice when I saw my first course!

I started with smoked Hamachi Carpaccio topped with tru le ponzu, yuzu, garlic chips, burnt orange, spring onion, furikake, carrots, and rice crackers. The menu also included a sushi platter, part of a curated collection prepared by the chef. I was served a spectacular Tru le Gyoza; dumplings stu ed with mushroom, ginger, cabbage, onion, black tru le, and tru le sauce leaving in its wake a

I would thoroughly recommend anyone looking for an unforgettable seafood experience to visit Sea Fu

mouthful of eclectic flavours. Following close on its heels was a smoky-flavoured grilled octopus on a bed of baby potatoes, drizzled with ssamjang romesco, bonito flakes, and bulgogi sauce. Although I was quite satisfied with the mix of eclectic and

spectacular culinary journey with a single shot of espresso.

VERDICT: Currently the restaurant is closed for a transformative renovation, but I would thoroughly recommend anyone looking to revel in the delights of an extraordinary seafood experience to visit Sea Fu once it reopens because it will only get better!

The sta at the property reminded me why India is renowned for its incredible hospitality

BACKGROUND: Nestled in the verdant, scenic hills of Mahabaleshwar this luxury property is famous for alluring dawns, beautiful sunsets and calm breezes. The hotel rooms and villas o er stunning views of the surrounding hills and valleys and scenic waterways. With many leisure activities and captivating scenery on o er, a stay at this five-star hotel is an idyllic getaway from the hustle and bustle of the city.

WHAT’S IT LIKE: I was welcomed warmly by the sta and instantly felt a feeling of calm envelop me as the property is designed in such a way that each nook and corner is filled with ample sunlight and opens out to the beauty of the surrounding greenery.

WHERE IS IT: Situated in the strawberry capital of India, 70 metres from Lingmala Falls and a short drive away from the popular attractions of Mahabaleshwar, the hotel provides easy access to all points of the city.

ROOMS: All the rooms and villas feature a private balcony or garden with splendid views in a classic style. The accommodations are elegantly designed and feature all modern amenities to ensure a comfortable stay. If one requires something additional,

the sta are extremely friendly and will go to any length to make sure your needs are met. I stayed in the 1 Bedroom Villa which is truly the epitome of luxury. The villa features panoramic views of the valley which one can enjoy whilst strolling in their private garden or swimming in the private pool. Spanning across 39 sqm, my stay at the villa was blissful as the villas are tucked away a little away from the main property which allows one to soak in the tranquility of the nearby hills. Each villa is contemporarily designed with upscale amenities such as a bathtub, minibar, smart TV with Chromecast facility and wifi providing comfort and functionality for each stay.

FOOD AND DRINK: The property is home to three F&B outlets. I began my day with a hearty breakfast bu et at the Berry Library, the all-day dining restaurant. One can feast on a variety of cuisines however, my favourite was a special Okonomiyaki, which the head chef very kindly prepared o the menu for me. Don't miss out on the regional dishes o ered during breakfast which truly creates the home away from home feeling. Another one of my favourite culinary experiences during my stay at the property was an indulgent Italian meal

served to me for lunch at the Berry Library. During my last evening at the property, the head mixologist-Akhil conducted a very fun and insightful class for me and taught me how to craft my own cocktails! I got to enjoy my handcrafted libations at Quarter Deck- Sunset Lounge whilst enjoying the enamouring views of the valley.

LEISURE: I woke up early each day to work out in the state-of-the-art fitness centre and the early mornings were enhanced as even the gym features a stunning view of the valley! During the evening, one can unwind in the beautiful swimming pool which is right next to Quarter Deck.

VERDICT: The sta at the property reminded me why India is renowned for its incredible hospitality as during my stay I experienced and witnessed so many times the members of sta at Courtyard Mahabaleshwar go above and beyond to make sure guests have a memorable stay. The luxury hotel strives to create a personalised experience catered to individual guests’ requirements and desires and succeeds exceptionally in doing so.
