A mighty giant

A

s this latest edition of Gainford magazine was going to press, the team was busy finalising proposals for the organisation’s most ambitious and exciting project yet. Plans are well underway for a skyscraper which will form part of a new £50 million gateway into the city centre of Newcastle, at the site of the New Bridge Street hotel. The multi-use skyscraper will include a five star hotel, private residential apartments and a fitness and health club, along with a number of bars and restaurants with food from around the world. Once complete, it will be the most significant building on Newcastle’s skyline and the go-to venue for residents, shoppers, workers, diners and overnight visitors to the city. This vision from Gainford will breathe new life into the city centre of Newcastle.

THE REDWOOD SIGNATURE COCKTAIL Old Fashioned INGREDIENTS 50ml Woodford Reserve 1-2 sugar cubes 3 drops Angostura Bitters Orange peel Cubed ice

METHOD Using a spirit measure, pour all ingredients into a cocktail-shaker filled with ice cubes. Securing the lid, hold the shaker with both hands (one on each piece) and shake vigorously over your shoulder. Shake for a slow count of ten, or until the outside of the shaker frosts up, then strain the contents into a hobstar rock glass. Garnish with orange peel and enjoy.

Wonderful wedding

Christie and Craig McGarrell tied the knot at The Vermont Hotel on 10 August 2019. Here they tell us about their special day and how they intend to keep returning to the stunning venue that will always have a special place in their hearts...

Throughout the day, the food was delicious and nothing was left on the guests’ plates. Special details… The Vermont’s staff were all brilliant. Nothing was too small of a detail; everything was taken care of. Fyzal, our photographer, was incredible and captured all of the natural key moments from our day, which we constantly look back on. One special moment was taking some time, just myself and Craig, to really appreciate the day. Our guests said… ...that it was one of the best weddings they had ever been to. The day was planned so guests were constantly provided for and informed of timings. From start to finish, everyone enjoyed themselves. We first returned as a happy couple to… … enjoy our first anniversary meal which was just as delicious as the food on our big day. Since then, we have attended special events for family celebrations and always love to visit for afternoon tea. It will always hold a special place in our hearts. Whenever we go, we reminisce about our wedding and relive that unique feeling. We’ll be back for… … our next anniversary! We will always return to The Vermont Hotel for that, it will become a tradition. The couple: Christie and Craig McGarrell We decided to say ‘i do’ at this venue because… As soon as we stepped into The Vermont Hotel, we knew this was where we wanted to get married. It radiates elegance and sophistication and has a timeless feel. The atmosphere was exactly what we were looking for and we loved the art deco style. The Ballroom had everything we wanted: large beautiful windows, an adjoining room with a bar for guests to relax and the most

breathtaking chandelier. The staff were all so helpful and put us at ease straight away. When we met our wedding co-ordinator, we knew that everything would be taken care of and completed to a high standard. Our highlights from the big day… Everything about the day was amazing. Walking down the aisle surrounded by friends and family and the beautiful setting was memorable. Dancing together under the incredible chandelier was one of the highlights; it was truly magical.

He discovered new flavours, spices and techniques and returned to his hometown to share his foodie findings. The experienced chefs at The Maven aren’t afraid to experiment with flavours, so on Sundays, diners can expect exciting twists on the traditional dishes we all know and love. Alongside classic roasts, including a vegetarian option, diners can enjoy dishes such as Togarashi Spiced Salmon Fillet and Grilled Halloumi Shawarma Skewers. Noya Chicken Skewers and Tempura King Prawns are popular dishes from the starters menu and there’s a great range of sides, too, including Pigs in Blankets, Duck Fat Roasties and Braised Red Cabbage. Enjoy one course for £12.50, two for £16.95 or three for £20.95.

They say variety is the spice of life - and it’s certainly a huge part of The Maven’s ethos when it comes to food. Whether you’re stopping by for lunch or dinner, you’re a meat-eater, vegetarian or pescetarian, your tastebuds will be taken on a round-the-world tour, exploring and enjoying traditional dishes from the likes of Asia, India, America and the UK. Starters range from Sticky Pork Belly and Fresh Scottish Mussels to Goat’s Cheese Salad and spectacular Sharing Boards, while mains include Grilled Sea Bream Fillet, Morrocan Vegetable Tagine and a speciality ‘Maven Burger’ to name a few. And if dessert’s your thing, there’s plenty of sweet treats to settle on - everything from Sticky Toffee Pudding to Rhubarb & Ginger Crème Brûlée.

Morrocan vegetable tagine SERVES 4 INGREDIENTS 1 white onion, sliced 1 clove garlic 1 tsp ground cumin ½ tsp ground cinnamon 1 tsp harissa paste 2 small tins chopped tomatoes 150ml vegetable stock 100g dried fruit 100g chickpeas ½ bunch fresh coriander ½ bunch fresh parsley Olive oil

METHOD Sauté onions in oil until soft. Add garlic and cook for around four minutes. Add ground cumin, cinnamon and harissa paste and stir until fragrant. Add chopped tomatoes and vegetable stock. Simmer for 30 minutes. Add the chickpeas and the dried fruit. Simmer until the sauce is thick. TIP: you can add any vegetables to the sauce - we use sweet potato, red peppers and courgette. You can also add chicken or lamb to this dish if you prefer a meat option.

TO SERVE Serve with couscous, flatbread, fresh yoghurt and fresh coriander.

Chipotle spiced lamb bolognese SERVES 4

INGREDIENTS 700g lamb mince 2 cloves garlic 1 onion, diced 2 tsp chipotle paste 2 bay leaves

2 tbsp tomato purée 250g Heinz tomato ketchup 4 tbsp Worcester sauce 4 tbsp soy sauce 2 small tins chopped tomatoes

METHOD Heat oil in a large saucepan. Add the lamb mince and fry until caramelised in the pan. Add the onions and cook for another five minutes. Add the chipotle paste and cook until fragrant. Add the rest of the ingredients and simmer until the sauce is rich and thick.

TO SERVE Cook some tagliatelle pasta. Combine the lamb mix with the tagliatelle. Serve with a good sprinkle of fresh parmesan.

Pan fried confit duck legs, ramen noodles, miso vegetables and hoisin SERVES 4 INGREDIENTS 4 duck legs 1 litre vegetable oil 15g sea salt 3 sprigs thyme 3 sprigs rosemary 4 packets fresh ramen noodles 20g diced red and yellow bell peppers 10g chopped coriander 4 tbsp honey 2 tbsp lime juice 4 tbsp sweet soya 4 tbsp kimchi base Salt and pepper (to taste) 100g unsalted butter 10g miso paste 1 red chilli, chopped 1 green chilli, chopped 2 heads pak choi, cut in half 2 large courgettes, cut into 12 baton cuts 12 pcs chantenay carrots 12 stems tenderstem broccoli

PREPARATION Duck salt: Combine sea salt, thyme and rosemary into a food mixer. Confit duck: Marinade the duck legs with the duck salt and leave in the fridge for 12 hours. Rinse the duck legs then place into a stainless steel container then add vegetable oil and put the lid on. Place into the oven at 150°C and let it cook for four hours. After cooking, drain the duck legs and save the duck fat for future use. Miso butter: Soften the butter and put into a mixing bowl, then add miso paste, chopped chillies and coriander.

METHOD Duck: Heat up the pan and add a bit of oil, then place the duck legs (skin side down) to crisp up the skin. Next, place the duck into the oven (skin side up) for 10 to 15 minutes. Ramen noodles: Boil water in a pan then add fresh ramen noodles and let them cook for two to three minutes. Put the pan on a medium to high heat and add diced mixed peppers, kimchi base and sweet soya. Next, add the ramen noodles and mix well. Add salt and pepper to taste. Miso mixed vegetables: Boil water in a boiling pot and blanch the pak choi, courgettes, chantenay carrots and tenderstem broccoli. Heat up in a pan on a medium to high heat then add the miso butter mixture. Finish by adding the mixed vegetables.

Charity champions After a two-year break, Miss Newcastle is set to return for a sparkling charity celebration in September 2022. As event hosts, we’re taking this time to mark the upcoming fundraising finals, but also to look back at a sensational 2019…

E

ach year, Gainford Group joins forces with the North East’s largest model agency, Tyne Tees Models, to host Miss Newcastle. The event, which has been going strong for over a decade, has raised over £200,000 for local charities and is now considered one of the biggest, most celebrated charity events in the North East’s social calendar. Miss Newcastle is much more than a beauty pageant. It encourages young ladies from across the region to step out of their comfort zones, be selfless with their time, get creative and raise thousands of pounds for local charities close to their hearts. The event directly pumps money back into the regional organisations that need it most. The Sunshine Fund is Miss Newcastle’s chosen charity, directly benefiting people right here in the North East, providing the specialist equipment needed to help hundreds of disabled children. Everyone involved in Miss Newcastle - from its organisers and contestants, to those supporting and donating throughout the campaign - are helping each child reach their full potential and live life to the full. It’s an incredibly rewarding initiative to be involved in - and it can be a lot of fun, too! The wonderful charity work from all involved culminates with a glitzy black-tie final to celebrate achievements, raise more money and crown the winner. The 2019 event was certainly something worth celebrating - raising a record-breaking £30,087 for The Sunshine Fund, and becoming the most successful event in the history of the competition. Armed with their yellow buckets, Miss Newcastle contestants exceeded all expectations - drawing on their own individual talents, interests and networks to set up fundraising events leading up to the big charity celebration, including dog walks, pamper days, school visits and much, much more. The 2019 event had over 300 applicants with

12 finalists chosen to represent The Sunshine Fund as Miss Newcastle ambassadors. The girls represented a number of communities across the region, from Chester-le-Street and Cramlington, to Jesmond, Gosforth and Whitley Bay. Monet Grant-Chowdhury of Chester-le-Street was crowned Miss Newcastle following a night of glitz and glamour at The County Hotel on Friday 14 June 2019. She continues to work with Tyne Tees Models and has vowed to continue with her charity work in the region. METHOD Using the spirit measure, pour all ingredients into a cocktail-shaker filled with ice cubes. Securing the lid, hold the shaker with both hands (one on each piece) and shake vigorously over your shoulder. Shake for a slow count of ten, or until the outside of the shaker frosts up, then strain the contents into a sling glass. Garnish with cucumber or a hibiscus flower stick and enjoy.
