Gammon and Summer Veg Grill Serves 4 - Free - Ready in 15 minutes
Ingredients 4 lean gammon steaks, visible fat removed 400g cherry tomatoes 3 peppers (any colours), deseeded and chopped or sliced 3 red onions, cut into wedges small bag of watercress
Place a large non-stick griddle pan or frying pan over a high heat. Spray the gammon steaks and tomatoes with low-calorie cooking spray and, when the pan is smoking hot, cook them for 3 minutes on one side. Turn the gammon steaks and tomatoes and cook for a further 2 - 3 minutes or until the gammon is cooked through and nicely charred. Meanwhile, spray another non-stick griddle pan or frying pan with low-calorie cooking spray and place over a high heat. Add the peppers and onions and cook for 4 - 5 minutes or until cooked to your liking, turning occasionally. Divide the gammon steaks and tomatoes between plates, add the peppers and onions and serve hot with the watercress.
