Letter from the Director of Operations

Palmetto Bluff Members,

I am looking forward to joining the Palmetto Bluff team in August. My first official day will be Monday, August 21. Over the last few months, I have had the opportunity to begin to familiarize myself with many of the departments and people responsible for exceeding Palmetto Bluff Member expectations. The positive culture and teamwork have been impressive to see. I have also received several welcoming notes from Members.

As you may know from a previous announcement, I have been at Brays Island Plantation in northern Beaufort County for almost fifteen years. While transitioning to Palmetto Bluff will take time, my experiences at Brays Island include many of the same amenities such as food and beverage, golf, racquet sports, shooting sports, equestrian, and fishing and boating.

Prior to Brays Island I was the General Manager/COO of Dataw Island which is also in northern Beaufort County.

One of the keys to my success has been to “manage by walking around”. I enjoy being actively engaged with my fellow employees as well as members and guests. Building relationships is critical to exceeding the expectations of both Members and staff. This is also a great way to gather feedback about what is working and where opportunities can be found.

On a personal note, my wife and I have been married for twenty-four years and we have two sons who both attend the University of South Carolina in Columbia.

I am excited to join the team at Palmetto Bluff!

n CampGo: Under the Sea

We want to make sure summer camp is complete… WITH WATER WEEK! During our Under the Sea week, we will dive into all things water! From going to Palmetto Bluff’s marina to learn some fun water-based skills, to exploring the creatures that live in the depths of the water that surrounds us. And of course, there will be water themed activities and totally tubular crafts to sail through as we wave goodbye to another amazing summer! $360 per child.

Welcome Reception

Every three months, FLOW Gallery + Workshop welcomes a new rotation of artists from The Artists of The Bluff, with this third exhibition on display and available August through October, featuring a wide selection of paintings, photography, jewelry, and pottery. Join us at the gallery for a glass of prosecco and browse new pieces of fine art created by your talented neighbors! Complimentary.

Join the Conservancy’s Archaeologists as we stroll among the cemeteries of Wilson Village and hear tales of the lives of those who lay at rest.

n Explore PBC: Creatures of the Night

Join the Conservancy as we head out into the woods to look and listen for nocturnal wildlife residing at Palmetto Bluff. We will listen for bats using ultrasonic bat detectors, check light traps for insects, and even meet with Conservancy staff conducting bat research!

n PBGO Field Trip Friday: Boating Excursion

9am-3pm | Wilson Landing

Spend the day with our Wilson Landing crew tubing on the water, embarking on a boat ride, and memorable trip to Shark Tooth Island (tide permitting). Lunch will be at a restaurant on the water. $90 per child; ages 8-14.

n Volunteer Day – Pollinator Garden

1–3pm | Conservancy Classroom

Join Aaron, Conservancy Educator, tending to the pollinator garden. Together, attendees will weed the garden beds and check if any plants need extra care.

n First Friday Lecture: Snakes of the Lowcountry

6–7pm | Conservancy Classroom

Bring the entire family to the Conservancy to hear Tony Mills, Education Director for the Lowcountry Institute, and Jay Walea, the Conservancy’s Executive Director, discuss the native snakes of Palmetto Bluff. And of course, there will be live snakes!

This painting program is designed around what is trendy, and what our younger generation wants to paint. Each month we are offering the opportunity to paint something new and exciting with an instructor that walks you through step by step how to create a piece of artwork that you will feel proud to hang on your wall. $25 per child; ages 9-12.

Embark on a poetic journey as we warmly welcome talented Charleston, SC-based painter and poet Jenan Mcclain to the Bluff. Prepare to be enchanted as Jenan unveils the depth of her artistic prowess through a mesmerizing poetry reading and writing experience.

Have you stumbled upon an animal skull in the woods and wondered what it was? Join Lydia Moore, Conservancy Research and Education Coordinator, as she shows us how to identify mammals through the unique features of their skulls.

Join us for a fantastic night enjoying Fenocchio wines paired with a dinner menu curated by Palmetto Bluff’s Executive Chef Don Yamauchi. We will be showcasing a selection of Fennochio wine from the historic Roerzo zone. $175 per person.

While most bird species begin their fall migration in September, we have a handful of early birds that begin their trek during the balmy nights of August. Join the Conservancy Educator, Aaron Palmieri, as we look for some of these early migrants in an area known as Pump Swamp.

Join us for sunset at Longfield Stables and watch as horses and riders compete over jumps to win prizes! Classes will start with ground poles and gradually increase in height to reach a maximum of 3’3”. All classes will be judged on time and faults. Complimentary.

American alligators have been a part of the Lowcountry landscape since before the first Europeans stepped foot on the continent. As the number of people moving into alligators’ habitat increases, so do the chances of encountering them. Join the Conservancy as we help build an understanding of how to coexist with alligators.

Join the Palmetto Bluff Shooting Club for a fun afternoon of friendly competition, followed by food and drinks. $25 for Shooting Club Members, $50 for non-Shooting Club members.

Join the PBGO team as we travel to our next location for our Drive-In series at the Golf Club! We will enjoy a night under the stars watching “National Treasure”. Please bring lawn chairs or blankets. The movie will begin promptly at 8:30pm. All children under 13 must have parental supervision. Complimentary.

n Watercolor Landscapes for Beginners

This beginner’s watercolor workshop with nationally-acclaimed artist Alan Shuptrine will focus on general techniques and provide attendees with a comprehensive introduction to the world of watercolor. Working on small postcard-size watercolor templates, Shuptrine will demonstrate techniques as you create your own postcard watercolor, using all types of watercolor methods, including wet-in-wet, wet-on-dry, and drybrush techniques. Basic supplies will be provided. $125 per person.

n Explore PBC: A Plant’s Guide to Surviving the Maritime Forest

To us, the maritime forest looks lush, serene, and almost tropical, but to a plant, survival in this ecosystem is difficult. Join Conservancy Biologist, Lydia Moore, as we explore what makes a maritime forest unique and the adaptations plants have to cope with harsh conditions.

n Immersive Watercolor Workshop

Participants of this immersive experience will have the chance to capture the picturesque beauty of the Lowcountry through watercolor painting with Alan Shuptrine. The journey will begin with a trip through Wilson Village to seek artistic inspiration before returning to FLOW Gallery for a day of painting. This event is tailored to intermediate and experienced painters, with a delicious lunch provided for attendees. $225 per person.

Join nationally acclaimed artist and gilder, Alan Shuptrine, for this unique workshop which will offer the opportunity to learn about the lost art of gilding. Focusing on both water and oil-size gilding, each participant will have hands-on experience with the time-honored tools and materials of a gilder. In addition, the workshop will allow each participant to experiment and create their own take-home treasure of a beautiful Lowcountry bird’s nest, featuring an exquisite trio of wooden blue heron eggs, enhanced with acrylic paints and 23 Kt. gold leaf. This workshop is designed for all skill levels. $225 per person.

Join us as we travel down Whitehouse Road, stopping at various locations to observe areas where we conduct research and land management. At the end, we will see the stunning view of the New River from what will one day be Anson Village.

Join us for a magical evening of pixie-dusted fun, where you’ll be whisked away on a journey through the kingdom of Disney knowledge. Whether you’re a Dumbo-cious Disney guru or a little Goofy when it comes to trivia, this event will have you laughing, singing, and scratching your head like Simba! One of the Conservancy’s mantras is to plant natives – and our staff members don’t just talk the talk! Join Lydia Moore, Conservancy Research and Education Coordinator, as she walks you through the process of converting her lawn into a garden filled with native plants. Native plants will be available for you to take home with you after the talk.

n Inshore Fishing Seminar

1:30–5pm | Conservancy Classroom

Join us for four hours of fishing and baiting instruction from a leading regional angling professional, Captain Tom Shanahan. This saltwater inshore fishing seminar offers classroom instruction, hands-on fishing activities, conservation, inshore/backcountry fishing, equipment usage and more, followed by a hands-on fishing skill practice for knot tying, lure usage, net casting and fish fighting techniques. Open to all Plametto Bluff members. $25 per person.

Located in what is now the Barge Landing neighborhood, Walnut Grove Plantation was one of the first plantations established at Palmetto Bluff. Join the Conservancy’s Archaeologist, Dr. Mary Socci, for an overview of the history and details of what the excavations revealed.

Join The Arts Initiative in welcoming September Artist in Residence and Memphis-based ceramicist Melissa Bridgman to Palmetto Bluff. Melissa’s passion for clay is apparent in her work, which features intricate designs inspired by patterns, printmaking, fine textiles, ceramics, and the folk traditions of North Carolina. Guests will be able to meet Melissa, learn more about her creative process, and view her stunning pieces on display. $25 per person.

Join potter Melissa Bridgman for a unique workshop experience where attendees will create their own ceramic oysters. Conservancy Photo Contest

The Palmetto Bluff Conservancy hosts a monthly photo contest for residents and guests. We want to see what you’ve seen while enjoying your time at the Bluff! Each month will celebrate a different, Conservancy-related theme. All ages and skill levels are welcome! Photos must be submitted to info@pbconservancy.org to participate.

How are the photos judged?

Conservancy Educator, Aaron, will review each submission to ensure the photos meet all requirements. Approved entries will be sent to the Conservancy team to be judged in a blind judging.

Prizes

Each month, the 1st place winner will receive a prize from the Conservancy. Our top three participants will also receive raffle tickets (3 tickets for first place, 2 tickets for second place, and 1 ticket for third place) that will go into a pot for the chance to win a pair of Burn Fest tickets. The drawing will occur following the last Brown Bag Lunch of October 2023.

Rules:

1. Submitting a photo to the Palmetto Bluff Conservancy photo contest gives the Palmetto Bluff Conservancy permission to use the photo for posts, publications, products, and advertising.

2. Each participant may submit one photo per month related to that month’s theme. The photo does not need to be taken within that month.

3. All images must be taken in the South Carolina Lowcountry.

4. All photos must have complete information attached, including subjects, dates, and locations.

5. Animal and plant photographs must be wild; no captive animals or planted specimens.

What’s Growing at The Farm

Fall Crops

As the air turns crisp and cool, exciting new crop arrivals will be at The Farm. In preparation, Farmer Shane and Farmer Wyatt removed all plastic lining, plowed each row, and took soil samples. The entire month of September is planting season with seed plants going in the ground first and one and two-leaf plants going in shortly thereafter. Farmer Shane will be planting a variety of vegetables such as spinach, corn, brussel sprouts, cauliflower, carrots, and more! During this time, Members are more than welcome to stop by or volunteer.

Farmers Market

With the summer Palmetto Bluff Farmers Market coming to a close, we reminisce upon a successful first season. Every other Wednesday, Members and the community gathered to survey the variety of vendors. Offerings included fresh flowers, artisan crafted items, produce, and sweet treats. Palmetto Bluff’s, Flame, also made an appearance each week, serving delicious breakfast pizzas. Looking ahead, we are thrilled for the Farmer’s Market to start again in October and cannot wait to see Members there.

What’s Growing at The Farm

Chickens at The Farm

The chickens are adjusting well to their new home at the coop and are almost fully grown. They will lay their first eggs this Fall, a positive step towards eggs being available for restaurants and members. These first eggs are not usable but signal that the chickens are ready for artificial eggs to be placed in the coop. Artificial eggs encourage hens to produce their own eggs in the future. Farmer Shane stated that “once the chickens start laying eggs, they just never stop!”

The Farm will also have four new chicks, to be introduced to the coop later this Fall. The Farm currently has three breeds of chickens that all lay different color eggs. With four breeds of chickens in the coop, egg-laying season will bring an assortment of colors!

THERE IS MAGIC BEHIND MUSCLE

For the longest time, cardio exercise has been king. It has been the priority type of exercise for most gym-goers, and it is what takes up the real estate of most ordinary gyms. And for good reason.

In the late 1960’s Dr. Kenneth Cooper, the “Father of Aerobics,” introduced physical exercise (cardio as we know it today) to prevent heart disease and improve cardiovascular health. Heart disease is the leading cause of death for men and women and the statistics are staggering; one person dies every 34 seconds in the United States from cardiovascular disease. About 697,000 people in the United States died from heart disease in 2020—that’s 1 in every 5 deaths.

Regular heart rate-raising activity (cardio) 3 to 5 times per week for 30 minutes or greater is critical in the prevention of heart disease, but what if I told you strength training can help just as much? A recent study published by the British Medical Journal in 2022, which tracked participants from 1997 to 2014, found that regularly doing both – one to three hours a week of aerobic exercise and one to two weekly strength training sessions was associated with a full 40 percent lower risk of mortality than those who didn’t exercise at all. This was roughly the difference between a nonsmoker and someone with a half-a-pack-a-day habit.

Muscle is quite magical when you think about it. It helps us manage our blood sugars, improves our strength so we can participate in life on our terms, supports our joints, builds bone health, and helps us to control undesired body fat. Please now officially add to this extensive list, heart health.

The problem with strength training is that it’s hard to do on your own and I think a lot of Members don’t want to get hurt; completely valid. It’s a struggle to know what to do and how to create an effective routine that’s specifically designed for your body and ailments. I can also make a strong case, that it’s not as enjoyable to participate in as cardio exercise because it’s the heart rate raising cardio activities (not resistance training) that are classically easy to do outdoors. And who wouldn’t want to walk, bike, or run at the Bluff?

Maybe you’ve noticed it’s hot outside making summer the perfect time of year to start and build a strength training routine. The call to action I have for every Member who is reading this is to participate in strength training at least one to two times per week. If you don’t know what to do or need guidance our team is here to assist you.

As our wellness program expands, we continue to add classes like beginner TRX training, strength and balance, and simple strength so that there are greater opportunities for Members who are less experienced to participate in resistance exercise. The Aqua Strong and Aqua 50/50 pool classes are excellent low-impact entry points to strengthbased exercise and make a world of difference for those with limitations or joint pain.

Come the fall, we will continue this conversation as part of our “signature wellness education” series where members will have the opportunity every week to learn more about healthy living. For now, remember that there’s a ton of magic behind muscle and all it takes is a commitment to yourself a couple of times per week.

Don Yamauchi: Palmetto Bluff Execetive Chef

We would like to announce that Don Yamaichi will be assuming the role of Executive Chef at Palmetto Bluff. A native of Chicago, Yamauchi is the product of a true melting pot. The son of a second-generation Japanese American father and Filipino mother, Yamauchi spent his childhood near the Loyola University campus on the North side. His interest in food came early, with the aromas and flavors of his mother’s cooking and the exotic flavors of Japanese cuisine from his father’s family—plus his own all-American love of fast food, a weakness for him to this day

At 11, Yamauchi moved with this family to Skokie, known for its large Jewish community. Living next door to a Rabbi and his family, young Yamauchi would often visit there to turn on the home’s stove and electrical appliances for the family on the Sabbath. Along the way, he learned the flavors of yet another cuisine. From fifth grade on, Yamauchi enrolled in all the home economics and cooking classes available to him.

After working in the fast food industry, he enrolled in Kendall Culinary College. Two years later, he got a job at the North Shore Hilton Hotel. His real training, however, started when he joined the staff at Carlos’ Restaurant, a highly successful four-star restaurant, where he worked under French Chef Roland Liccioni.

“It was definitely challenging,” he says, “trying to learn all the basics of fine French cooking while awakening to the flavor combinations in the French tradition.” When Liccioni left Carlos’ to take over Le Francais, Yamauchi moved on to Le Mikado, an innovative spot where he tried his culinary wings. He later returned to Carlos’ Restaurant as sous chef under Gabriel Viti. When Viti left, Yamauchi took over as Executive Chef, and he was named in the “Top Ten New Chefs in America” by Food & Wine Magazine.

In December 2020, Don along with his wife Cleta, Jeramie, and Debra Campana opened 400 Rabbits on 975 Rabbit Road, Sanibel Florida. It was a 250-seat Mexican-inspired menu. In September 2022, Hurricane Ian not only destroyed Sanibel but the restaurant as well.

Now, the Executive Chef at Palmetto Bluff, Don enjoys being on property enhacing the menus at all the restuarants. The culinary team focuses on providing Members with local meats and seafood. He works daily with Palmetto Bluff Farmer, Shane Rahn, and focuses on farm-to-table produce. This means Members get to indulge on fresh produce grown at the Farm on the Bluff.

Don gets to work along former Executive Chef, Rhy Waddington, who has now assumed the role of Director of Culinary and Events. Together they are transforming the culinary experience here at Palmetto Bluff.

“This place is truly magical,” Yamauchi explains, “I am proud to work at such a unique property that is one of a kind.”

Last year, we started an annual initiative, our Employee Holiday Fund. Members will have the opportunity to contribute to this fund which will then be divided amongst all of the Palmetto Bluff associates and distributed before the holiday season.

Members often ask how they can help us attract and retain the best possible staff. As you know, a great team of associates is the lifeblood of any community. In addition to showing your appreciation to the staff when they provide outstanding service to you, the Holiday Fund is an additional opportunity to show your appreciation to all the ladies and gentlemen that make Palmetto Bluff such a special place.

Your contributions will be distributed to the Palmetto Bluff associates who do not participate in the annual company performance incentive bonus program. The gift amount is based on the employees’ status, full-time/part-time, and years of service.

A: Through the link below, you will be redirected to the “Make Payment” section of the website. You will see an area for the Employee Holiday Fund contribution, and you can change the amount in the open text field.

Q: How much should I contribute?

A: Should you choose to contribute, the amount is entirely up to you, and you can contribute as much as you wish.

Q: How will the Fund be distributed?

A: All Palmetto Bluff employees that do not receive a bonus will be eligible to participate. This includes the Club, Operations, POA, and the Palmetto Bluff Security team. The Culinary Corner: Buffalos

Buffalos Is Open

We are beyond excited to have Buffalos return to Palmetto Bluff. The reopening has been a success not only for the Members, but also for the staff working in the restaurant. “Returning to Buffalos has been like a homecoming,” says Cleta Yamauchi, General Manager. “We have had the privilege of having new staff members as well as our seasoned staff who have returned to their home. I love when a Member comes in and wants to sit with the server that they have known for years.”

Shedding the original Italian concept, Buffalos is now serving coastal dining cuisine. The menu offers local seafood, a new oyster bar, and entrees such as shrimp and grits and a squid ink orecchiette. The orecchiette has been a popular item ordered by Members. This entrée features homemade orecchiette that is made in-house in the Palmetto Bluff kitchen and blended with local shrimp, chorizo, lemon butter, and garden herbs. There is an array of items for all to enjoy. Chef de Cuisine, Alejandro Moran has taken the helm at the head of the kitchen bringing on a new Sous Chef, Ingrid Polcayo. Ingrid comes to Palmetto Bluff from the Insurgentes Sur, Negro Social Room, an international cuisine restaurant in Mexico City. During her time there she served as the Sous Chef.

Chef Alejandro and Chef Ingrid were both excited to be a part of the restaurant opening process as they have not had the experience of opening a restaurant with such high expectations as Buffalos. Alejandro had the opportunity to be with Buffalos every step of the way. He put his whole heart into constructing the menu and now enjoys seeing Members get to enjoy the menu as well. He is dedicated to serving the best quality food, from the ingredients that they use to the assembly of the plate. Buffalos staff are appreciative to have such a wonderful Chef in their kitchen.

Behind the Bar

If you have not had the privilege to meet Shelby, the Bartender at Buffalo’s, I suggest ordering a drink at the bar. Like the rest of the staff, Shelby was excited to be back behind the bar at Buffalos where she constructed the new drink menu. When designing the menu, Shelby wanted to dive deep into different flavor profiles, ensuring there was a cocktail or mocktail for everyone to enjoy. She also wanted there to be a story behind each specially crafted cocktail.

Her favorite cocktail that Buffalos is featuring is The Dreamer

The Dreamer is one of the top-selling drinks at Buffalos. “When Buffalos come to you in a dream you think of strength and abundance.” Shelby wanted this drink to reflect that story. She combines lavender seeds and lemon juice with an indigo empress gin, giving the drink a vibrant purple color. The Dreamer is then topped off with a smoke bubble. The smoke bubble is popped when the drink arrives at the table, and the smoke is released as if entering a dream sequence.

Shelby’s favorite thing about bartending is the performance. She went to school for Performing Arts in Theatre, which carries over into her bartending. She loves being able to get to know the community and Members that stop into Buffalos. “I love knowing that I get to let people relax and enjoy themselves,” Shelby adds. “Bartending gives me a way to be creative and allow Members to have a great time making memories at our restaurant.”

The Culinary Corner: Buffalos

Wine Program

Beverage Director, Gene Castellino, shared the wine list selection process at Buffalo’s. Gene selected wines from seven different countries, with an emphasis on making sure that customers can taste the authenticity of every option. Gene shared, “The joy at Buffalos is that each wine compliments the food. There is something eclectic and diverse for each dish but also popular options that people want too.” With each type of wine comes multiple options to cater to every taste. Gene is involved in the whole process and tastes and approves every wine before adding it to the list. In addition, when a new wine joins a restaurant list, he will introduce the staff to the wine, so that each person can speak individually to the notes and flavors.

The Buffalos’ menu boasts a variety of coastal cuisine. As the menu changes, the wine list will shift to suit each dish. In the colder months, lighter menu options are replace heavier, more filling options, thus adding more red wines to the list. Buffalos’ also purchased a new wine cooler to store older and more expensive wines. Gene expressed that his favorite older wine on the list is a 2005 Bordeaux. The new wine cooler allows a more extensive wine list as there is now proper storage for each option.

“Anyone who comes to Buffalos’ and looks at the wine list would be impressed. It has everything that I would want to see when going to a restaurant,” Gene stated. Whether one is looking for an option to complement their chosen dish or would rather have the wine be the star of the show the new extensive list has it covered.

A painter known for his realistic watercolors, oils, gold leaf, and handmade framing, Alan Shuptrine’s bold yet sensitive and thought-provoking works are in the permanent collections of several American museums and hundreds of corporate and private collections nationwide. Born the son of recognized painter Hubert Shuptrine (1936-2006), Alan has continued the legacy of realism that both Andrew Wyeth and his father established. Having taught and exhibited his works in Florence Italy, Alan has now garnered international recognition. Shuptrine continues to create themed collections of his work while planning future museum exhibitions, speaking engagements, and appearances at art showcases and workshops.

SEPTEMBER ARTIST IN RESIDENCE - MELISSA BRIDGMAN | September 20 - 23

Melissa Bridgman is an alumna of Salem College in Winston Salem, NC, where she received her degree in History and American studies. During this period, she spent three semesters interning and exploring the collections of the Reynolda House Museum of Art and the Museum of Southern Decorative Arts, enriching her love of art, pattern, printmaking, fine textiles, ceramics, and the folk traditions of North Carolina. Melissa has been a teaching artist with the Memphis Brooks Museum and the Greater Memphis Arts Council. A full-time potter, she also teaches ceramics and floral workshops for adults in Memphis. She spends her time in her garden and studio with her family in her hundred year old bungalow in historic Midtown Memphis.
