Better than a V8 The idea behind V8 is good: getting a large array of vegetables in a can. But it doesn’t come close to drinking a glass of freshly pressed, living juice. This recipe shares some of the ingredients in V8, such as watercress, spinach, celery, and carrots, and has some new ones that we use to counteract the bitterness of watercress. If you run away from bitter flavors, start with just a half cup of watercress, and build up your tolerance to one cup. There’s a reason why bitters are included in detox juices: they are the most beneficial foods for the liver. If the taste is still too much for you, add another lemon to the recipe.

Makes 1 glass ½ cup watercress 1 cup spinach 2 celery ribs ½ cucumber 1 carrot 1 ripe pear ½–1 Granny Smith apple ½–1 lemon Juice all the ingredients and serve.
