FLYING!

ver since I first started coming to the Hamptons—which was right when I was born—I always had a deep appreciation for celebrating the Fourth of July Out East. There is such a sense of tradition that adds warmth to my heart, like the Southampton parade (yep, even though I can never find parking and am far from an early-morning person, I make sure to go) and fireworks in Sag Harbor (the boats blowing their horns at the end are a little detail that I always find so fun). This year, the Fourth hits a little different. I’ve realized how lucky we are to be able to find the sparks that light our inner fire each and every day. I’m writing this on the morning after our big launch party celebrating our premier issue, and it reminded me of how important it is to find what we love—and to act on it. For me, that’s been the beauty of developing and producing Spotlight—it’s full of sparks, and with this issue, we’re about to bring it on in a big way! And don’t forget, it’s also about finding and embracing who we love. I’ve been lucky to find that this year, too! Our Fourth of July cover star is the one and only Bethenny Frankel. I remember being a little girl dining at Nello (which no longer exists) with my parents and seeing Bethenny walk in. She’d be there quite a bit, and I’d see her around at events, too, and I just always remember thinking to myself, “This is a woman who loves the Hamptons.” It’s been well over a decade since those memories, and now, Bethenny

has become one of the most impactful reality-stars-turnedentrepreneurs who demonstrates how to be strong. Read our interview for her unfiltered take on love, building your brand, and being your most authentic self. PODCAST PICKS! Whether you’re a home cook, an aspiring chef, or a dining-out foodie, this installment of Podcasts Picks is simply delicious—and these series are fun and calorie-free! We have a great group of splurgeworthy chefs, restaurateurs, and cookbook authors who will distract and relax you with their lively conversations. ALWAYS HUNGRY Bobby Flay and his daughter and co-host Sophie offer a fun melding of different generations and perspectives in this pod. Flay is the chef and restaurateur behind Mesa Grill and Bobby’s Burger Palace. He’s won four Daytime Emmys for his work on Food Network and proudly has a Hollywood Walk of Fame star. He cooks, and she asks the questions—and eats! Their conversations around food and cooking focus on Sophie being inquisitive and pushing her dad for answers. Topics like oven to table, the art of deep frying, and chocolate are entertaining and thought-provoking. When they cook together you could swear you’re in the room with them. RADIO CHERRY BOMBE Founder Kerry Diamond has achieved the status of being the No. 1 podcast in the U.S. about women and food. She records from wherever she is— Rockefeller Center, her closet in Brooklyn, or at a wedding in Hawaii. The show starts with the upbeat theme song “All Fired Up,” then Diamond switches to her soothing professional radio voice. She highlights chefs, bakers, and cookbook authors who are shaping and shaking up the food industry. Her conversations are with the coolest culinary personalities, including Christine Tobin, the food stylist behind HBO Max’s Julia; wine sommelier Victoria James; Eva Chen and husband Tom talking about their love of granola; and Take Out host Lisa Ling.

FOUR COURSES Chef Geoffrey Zakarian, who penned a cookbook with his two daughters, The Family That Cooks Together, started as an apprentice for Daniel Boulud. He’s been featured on Food Network’s Chopped and The Kitchen. His podcast is divided into four courses, like a meal. Zakarian is so great at describing food and flavors that you feel like you can taste them. Listen to some great past convos with chefs Curtis Stone and Eric Ripert, actor Matthew McConaughey, and Olympic skater Adam Rippon.

FOOD PEOPLE Bon Appétit was founded in 1956 as a giveaway magazine at liquor stores and then became a bimonthly publication based in Chicago. Its debut podcast, Food People, is hosted weekly by editorial director Amanda Shapiro. It’s a show “made by, for, and about people who love food.” Shapiro asks culinary questions to all kinds of cooking experts. Her guests include chefs, writers, or even Bon Appétit staff. You’ll come away with lots of useful info and some recipe ideas you’ll want to try!

FOOD Mark Bittman is the former columnist for The New York Times and an author of 30 books. Although famous in the food world, Spotlight became aware of him during a Zoom with Guild Hall last summer when he was promoting his book Bittman Bread. His wisdom and expertise are unparalleled. Bittman is sharp and pleasant to listen to and has a great variety of interesting foodie guests, including Al Roker, Laura Linney, and fellow chef and cookbook author Yotam Ottolenghi.

RECIPE CLUB Chef David Chang and his cohost Chris Yang, as well as some rotating featured guests, delve into all things food. The famous founder of the Momofuku restaurant group has two Michelin stars and is clearly qualified. He and his team scour through thousands of recipes to find the absolute best way to prepare popular dishes, like meat loaf, spaghetti, and canned tuna. Then they all share their opinions on the best way to prepare them and debate, debate, and debate. The show is creative, quirky, and enjoyable. T

until you’ve tried my guac” or “What’s your favorite guacamole in NYC?” A few other lines that are always a hit are “What’s your favorite condiment?”, “What’s your unpopular opinion?”, “What was the last place you got takeout from?”, and “Describe yourself in three emojis.” Often, someone (especially men) will go back and forth with you on a dating app, having a conversation but never initiate a date. This can be so frustrating. If that happens to you, I’d say something like “So are you on Hinge for friends?” Or “It’s been fun being pen pals, but I’m looking to actually meet in person.” Sometimes even the

best people need a little nudge. A huge part of starting up a conversation, whether it’s in person or on a dating app, is confidence. Treat this conversation as if it’s one you’re having with a friend you’ve known forever! You can even tell them about your workday, just as you would a person you already know. This creates a sense of closeness and comfortableness in a good way! We’re in the height of summer, and with hot-girl summer in tow, there has never been a better time to strike up a great conversation! Let’s start with in person. If you’re in person with someone, let’s say at an event in the Hamptons, the best (and easiest) conversation starter is making an observation. It’s that simple. Just make an observation about something that’s going on! “I noticed you’re drinking Diet Coke. Are you one of those three-a-day Diet Coke people?” Or “You look like you know a lot of people here. Have you been before?” If you’re at an event of mutual friends, or a wedding, an easy icebreaker is “How do you know so-and-so?” And if you’re at a bar, the best way to break into a conversation can be a simple “What are you drinking tonight?” For my fellow sober ladies and gentlemen, you can say something like “What’s your favorite new restaurant Out East this summer” or “Have you heard of Spotlight magazine? I hear it’s all the rage!” Plus, it never hurts to get right to the point: “I don’t think we’ve met yet. Are you single?” We can all appreciate the directness, and sometimes it’s just refreshing to hear. If you’re talking to someone on a dating app, I always suggest that you start off by responding to something that they’ve put in their profile. If it says they’re a big fan of guacamole, I’d say something like “You haven’t lived

With so many dinners to host, Rachelle claims she rarely leaves the area. “I don’t head west of East Hampton,” she says, adding: “We do leave for Patmos, Greece, every August, though.” Edie Parker’s exclusive MTK bag Not everyone Out East is super casual. time to bring couture pieces to the Hamptons,” Manuel says. One of the coolest local designer stars is just 19 years old. Patrick Plum, who grew up in Southampton, launched his streetwear brand Blind in Emotion when he was 15. Patrick started with hats and T-shirts with bold graphics for family and friends, created an Instagram page, and before he knew it, he was making custom hoodies for Lizzo and her sister. Blind in Emotion’s latest drop is called SALT—a terry cloth shirtand-shorts set with pop-art style images of a surfboard, a starfish, and waves. Half the sales of the SALT line will benefit the Surfrider Foundation, which is dedicated to the protection of the world’s oceans and beaches. “SALT represents what is most nostalgic and memorable about the beach to me,” Patrick says. “The feeling of getting out of the ocean and lying on the beach with a head of salty hair and not a care in the world.” A fashion marketing and design student at SCAD in Savannah, Patrick is back in Southampton for the summer, where he’ll be dropping more designs via Instagram and the Blind in Emotion website. “Living here has had a monumental effect on how I design,” he adds. “I’ve always loved the pillars of Southampton beach style— frilly sundresses, swimsuits with colorful patterns—but I longed to contribute a younger, childish take to this signature style and create something more fresh for the youth to associate with their childhood in a beach town.” T

Consider your relationship with alcohol. Maybe nothing needs to change, but it’s okay (and totally normal) to check in with yourself and evaluate how it makes you feel. “Hangxiety”—aka hangover anxiety that comes after a night of drinking—is very common and something we’ve both experienced. On holidays away, like the Fourth, there can be that pressure to drink in excess. If and when you drink, remember that it’s your decision and to never let others idea of what you should be doing dictate your actions!

Start your day our favorite way—with movement. We’re all about rest days and rest weekends, but sometimes sneaking in a little exercise before you begin your day of R&R does the body and mind good. It can be whatever your body is asking for; for us, this usually looks like a 20–30 minute yoga or sculpt class. We have tons of options on the ORRO app (and they’re great for travel!). Even a light walk to grab a coffee is beneficial for your mind and body.

For a small or large group, the grill is a great way to cook in July. The high heat gets food ready quickly and easily. Cooking outside keeps your home cool, and there’s something about the char that just tastes like summer. So many ingredients local to the Hamptons are perfect to pop over the fire right now. Here are some grilling ideas! This month, farmstands are brimming with ripe produce. A lovely appetizer is bruschetta, using grilled Carissa’s bread, chopped tomatoes, and fresh basil. Grilled vegetables are dairy-free, gluten-free, and delicious. Zucchini and corn are also simple to grill. Each requires a touch of olive oil (preferably Fancy Peasant, produced by Southampton local Anastasia Ganias-Gellin), a sprinkle of salt, and just a kiss of heat. You could add sliced almonds and freshly ground pepper to the zucchini. To the corn, try adding chives, harissa, or smoked paprika. From the ocean, local fish abound this time of year. Striped bass, tuna, and flounder are being caught off the shores of Montauk. All are delicious sprinkled with our Dry Rub— the actual mixture that my mom sprinkled on almost everything at home growing up. For more carnivorous palates, burgers and sausage are available for delivery by Baldor. Instead of potato buns, you can slide these meats into grilled pitas sprinkled with za’atar for a Mediterranean flair. Of course, you can’t beat a good rib-eye steak either.

Barbara, why did you want to tap into the Gen Z market? As an aesthetics doctor, I see girls as young as late teens coming in and wanting quick-fix solutions to acne scarring and even preventative Botox. This is due to not having the correct skincare when they’re young, and a big education gap when it comes to skincare. DEEP DIVE WITH CITARELLA’S JOE GURRERA The founder behind beloved seafood shop Citarella, Joe Gurrera, serves up some ways to land the best catches of summer! BY SYDNEY SADICK

Are there seasonal varieties of fish? Most associate seasonal eating with produce, but it applies to seafood as well. Because of the development of farm-raised seafood and the ability to ship from all over the world, seasonal isn’t as relevant as it used to be, but there are still some. In the summer, look for fish that grills well, like swordfish and salmon. In the winter, look for Nantucket Bay scallops; from early March through September, soft-shell crabs are in season. How do you source fish one day and deliver it to a customer the next? When seafood is ordered from our website, you’re guaranteed to receive the freshest product available. The fish is caught in Montauk or arrives at the fish market, then our fishmongers prepare it by hand that same day, wrap it in waxed paper, pack it with ice packs (never frozen!), and ship it overnight in an insulated box. Which fish would be the easiest to prepare for the millennial who doesn’t have a ton of experience? Grill salmon, swordfish, or tuna, about three minutes on each side (for a cut that’s

approximately an inch thick) and you’re done! Entertaining is especially big for the Fourth of July. How does one satisfy all their guests’ palates? Because Citarella is a full gourmet market, the options are unlimited. You can choose anything from three-inch cowboy steaks for the grill and get some of our handmade prepared foods for the sides or create your own spread by selecting artisanal cheeses,

dips, fresh seasonal fruits, and vegetables. If you’d rather spend the time with your guests and leave the work to us, then your best bet is to order from our seasonal catering menu, where you can select from a range of raw bar items, caviar, handcarved meats, imported cheese platters, and desserts. How have you seen food trends evolve over the years? There have been so many changes during my time in the food business but recently, you see less frying than you did years ago as people want healthier preparations. Organic foods are big as well. Do you go out to restaurants in the Hamptons or do you usually cook at home? I enjoy both! Sant Ambroeus, Argento, Pierre’s, Tutto il Giorno, and Le Bilboquet are a few of my favorite spots. Your July 4th menu this year? I usually cook for family and friends. We start with East Coast oysters on the half shell. Then I’ll make 10–12 whole fish on the grill or some of our fantastic Ultimate Aged Burgers. Who are your favorite chefs? I admire Jean-Georges, Éric Ripert, Daniel Boulud, Thomas Keller, Michael White—and, of course, the chefs at Citarella! T

Your father was in the fish industry. Did you feel pressure to go into the same business or was it also your passion? My dad wanted me to be a lawyer, but my passion was the seafood business. It started when I was a teenager working in my family’s seafood shop in Greenwich Village, but I always wanted to do something on my own. In those days, the atmosphere at the Fulton Fish Market was very different— more like the stock market, where everyone was buying, selling, and making deals. It was exciting to be a part of it. When did you recognize the opportunity and decide to acquire Citarella? I bought Citarella on Manhattan’s Upper West Side when I was 28, in 1983. At the time, the store was small [occupying just a fraction of the space that Citarella’s flagship location does today], but I saw it as an opportunity to build my love of seafood in this local treasure. Citarella is known to source and sell the finest and most varieties of fish. How have you accomplished this? Our uncompromising standard is the result of several factors, one being my relentless approach to hand-selecting the seafood for Citarella every day. And equally important are the decades-long relationships we’ve forged with the world’s best fishermen. I’m thankful for our fishermen in Montauk, who have supplied us with fish for years and work so hard all year round.

CITY Many clients are at the point in their careers where they’re renting in the city and in the Hamptons and would like to take the plunge and buy in one market and continue renting in the other. There are clearly a myriad of factors to consider in this extremely personal decision. Buying in the Hamptons can offer a bit of flexibility, which the city does not, in that it can serve as a rental property down the line. With stringent rules on subleasing at most co-ops and even some condos in the city, this is not really an option. b KNOW THYSELF Are you a fixer upper who

relishes buying a wreck and demoing to your hearts content? Or are you someone who wants to be able move right in? You may be somewhere in between—willing to buy a somewhat older home and renovate the kitchen and bathroom. Or perhaps you’re looking for that ideal plot of land on which to build your dream home. The more you are honest with yourself about your appetite for doing work vs. paying a premium for “turnkey,” the better. bM AKE YOURSELF ATTRACTIVE AND BE PREPARED Will you be financing? How much? It’s imperative that you figure out not only your

budget, but also your financing plan. Will your purchase be contingent on financing? Being preapproved for a mortgage is a necessity. With Hamptons inventory levels at their lowest ever, sellers can be demanding. It helps to have everything lined up when presenting your offer. Have your preapproval as well as your inspector ready to go. If your offer doesn’t depend on financing, make sure you’re able to provide proof of funds and have the documentation ready. Limiting contingencies and being prepared is a way to establish yourself as stronger than another buyer. b BE OPEN-MINDED “Value” is not a word you hear

in the same sentence as the Hamptons these days. However, you may be limiting yourself based on what you have allowed yourself to experience. You may have rented in the same town for the past four summers, but you may now be priced out of Bridgehampton equestrian country. My advice: Explore. The Hamptons is so incredibly rich and diverse in architecture, style, topography, and aesthetic, just by driving a few miles! b FIND YOURSELF A LOCAL AGENT WHO “GETS IT” Ask friends and colleagues for referrals and interview a couple of them. You want to work with someone who knows the markets here, who will take the time to educate you on the process and the nuances of different towns, and who will work for and with you. You want someone who is connected to the pulse of the market and is savvy and creative about structuring and sourcing deals in this environment. T

People often say that one can’t have it all, but it seems like you’ve achieved that throughout your career. Would you agree with that? Not all at once. I think that the more that you say no to things that aren’t giving you return on an investment emotionally, spiritually, financially, or in a humanitarian sense, then you take on too much and you’re doing things where more becomes more and you can’t find a balance. The road to balance is really being strict about what you say yes and no to. And a lot of people also say that it doesn’t matter where you come from but what you do with your life. I grew up in a hustler racetrack environment, so I have definitely hustled, but I have a stable relationship with my daughter. I’m a good mother, and there’s a lot of structure and discipline. I have a wonderful, wonderful daughter. She’s an incredible person, so I’m proud of that. When you look back, was it The Apprentice or The Real Housewives of New York that gave you your big break? Martha Stewart’s The Apprentice didn’t move the needle. It was next to nothing. It wasn’t a successful show, and Housewives was. I did do some press because as a natural-foods chef, that’s all I wanted to be. But Housewives really tipped the scale. And now people get to listen to you wherever they go on your podcast, Just B with Bethenny Frankel. How has that evolved? The podcast is successful, and I had so many people who didn’t want to get into the podcast space with me, and they said, “You can’t make a lot of money doing it anyway. They don’t pay well.” I ended up creating situations by just being passionate about it and liking it. Just like Housewives, I ended up being paid literally nothing in the beginning to now having a multimillion-dollar business in the podcast space.

Of all the people you’ve interviewed, who has surprised you the most? It surprised me that Kelly Ripa was the most popular episode; I don’t want to say surprising because she’s fascinating and I love her, but I was thinking, wow! Paul, my fiancé, said it was his favorite because it was like “game copies game”—we’re the same age, we’re born close to each other, and we both have come up in our own way being scrappy and probably underestimated. I always remind Kelly that she’s the most successful guest. Speaking of Paul, you met on a dating app. How did you hit the jackpot with him? I took it seriously. It was hard for me, though, because it felt like it wasn’t fair to people who knew who I was and I didn’t know who they were, so I was embarrassed [on the apps]. I felt self-conscious and I didn’t like it, so I would go on and off them. I met him pretty early in the process. I came from a different generation, so I felt bizarre and strange. It took me a long time to do it. I just thought it was crazy. How was the first IRL meeting? I was at a women’s conference in Boston, and I figured the people on dating apps were all just playing around and meeting different people and I said to him, “A women’s conference is a great place to meet women.” He said to me, “I’m a one-woman kind of guy.” I said, “Oh.” And he said, “But when you’re in New York, I’d like to take you for a drink.” And I said, “Great.” I don’t remember what he asked for, but I told him I was free on Monday from 2 to 4 p.m., which he found to be a winning time slot. [Laughs] So he said, “I’ll take it.” And he took it, and he was just very, very handsome. He’s conservative, appropriate, and funny. But only for an audience of one. He’s not interested in everybody knowing that he can be inappropriate and

reverent. He’s great. I did hit the jackpot. Maybe it’s good karma! It’s a great story! I think most guys are good, you just have to know how to find them. It’s like fruit. You go to the store and you got to find the good pieces. What would you tell single millennials right now? I’m not going to give relationship advice, but I can give advice on meeting someone great. I know that girls say to other girls, “How does she always meet these great guys?” That I know. I know I’m good at meeting good people, attracting good people. My advice is to go for quality versus quantity. Don’t do a volume business. Otherwise, you get nauseated by all the garbage, and then you might miss something good because you’re just over it. Do a lot of research. Know where to look. You have to know how to read a dating app and look for the right things. It’s like going into business and going into a store. You need to know what you’re shopping for and be specific about that. Don’t compromise. You end up down a rabbit hole. You know how on TikTok you end up in some other world that you didn’t know you were in and you’re now looking at buttons or crafts? You need to be in the store that you’re supposed to be in. What are your top tips for launching your own business? You have to be honest with yourself about whether you’re an entrepreneur or not. Not everybody is good, and you have to be honest. Everybody thinks it looks so easy and so many people are successful, but it’s gnarly and there’s a lot to deal with. Things will go wrong. If you don’t have the right kind of financial cushion, you could drown. You have to write prenups. You have to know before you get married to somebody that if the ship goes sideways, what’s going to happen. ever imagine because most people won’t work as hard as you will. When you don’t have kids and when you don’t have all these obligations, that’s when you’ve got to put the pedal to the metal. Later, life is more complicated and it’s hard to find balance and it’s hard to do it all. The truth is, if you want to get something done, ask the busy woman to do it. What would you identify as your biggest strength?

Tell us about your new book, Business Is Personal. The title says it all. There’s so much gray. If you’re giving up time with your family and putting your all into something that you believe in and putting your money, time, and passion into something you believe in, then it’s entirely personal. You should take it personally. It’s your business. There’s just so many stories, so many anecdotes, and actual

resources, with how lean we are, has literally never been done in philanthropy. That is pretty remarkable. And the storm is still going on. You’re always so confident posting on social media in your PJs with no makeup, which so many celebrities don’t do. What do you attribute to your confidence? It’s not that I’m confident. It’s that I’m a human being. I’m just not painfully superficial and

I get things done. Nobody can keep up with me. I’m unstoppable. And what about your weakness? It’s probably the same, actually. I’ve never said that before, but that’s probably the same weakness. You’ve been coming to the Hamptons for years. What initially drew you to the East End? Frankly, my terrible divorce and me needing a place to take my daughter. To be honest, it was just to not be living in the same

there at all. There’s something for everyone. There’s pool culture, music, and bohemian Coachella vibes in Montauk. There’s the whole Lilly Pulitzer and polo vibe in Southampton. In Bridgehampton, there’s the bridge. In Sag Harbor, there’s this cute, charming town. Dinners in Westhampton. There’s just so many places to go. I adore it. I think it’s amazing. How do you typically spend the Fourth of July? If it’s nice out, we’re always on a boat. We find a way to see fireworks in a non-stuck-intraffic sort of way. We just drive somewhere and park in a parking lot and watch the fireworks.

Someone’s gotta say, “This is what I look like.” People just believe this myth that everyone’s portraying. I don’t like the filterbased culture. But it’s okay. The duo behind the Bridgehampton fashion destination Blue One share the backstory of their loves for both dressing Hamptonites—and each other. BY SYDNEY SADICK Crystal, how did you and Jarret first meet? We met while I was attending college Upstate. I was in my third year and walked into a bar called P&G’s and spotted him immediately. He was the sexiest guy I had ever seen. I would later find out he was modeling for Ford and walking runway shows! I was 20 years old. Jarret is two years older. Why did you decide to open your own store together? I worked in retail while growing up and cultivated a following; customers would come to me for fashion inspiration on what to wear and what was in style. I worked those dreadful summer weekends for years and knew what it took to work hard, so I realized with my eye for fashion and work ethic I could do it. By that time, Jarret and I had a long-distance relationship. He was in the city, and I was in Westhampton Beach. We decided this could be a great collaboration—we could buy together and work together— and boy, did we have fun doing it! What made you go from modeling to being a real estate agent? I spent my early twenties traveling all over the world and was able to experience stunning boutique hotels in some of the most sought-after destinations. When I was ready for a career change, I wanted to do something that I had a sincere excitement for. With my background traveling, I gained a unique appreciation for real estate, and I knew it was the right fit for me. Working with clients is truly a privilege, and I feel fortunate to have both my buyers and sellers trust in me! What do you love about Summer Fridays Out East? Seeing my friends come from the city and spending time with them in a relaxed environment. We love going to Wölffer Estate Vineyard and catching up! You’re from Chicago. What were your first impressions of the Hamptons? I started coming to the Hamptons 12 years ago, and I just loved how quaint and peaceful everything was here. Your go-to lunch spot? My office is in Southampton, and I love Sant Ambroeus. If I’m on a time crunch, I’ll grab a smoothie from Juice Press! Who are you closest to from the show’s cast? I get along with everyone well! But I’m a girl’s girl, so definitely Bianca and Peggy. Describe your summer style! Rather than the more “relaxed” summer Friday look, I like to experiment with bold colors. My inspiration is a mix between Fran Fine from The Nanny and Olivia Pope from Scandal. Favorite Hamptons town? Sag Harbor! It’s quaint, my favorite restaurants are there, and I love being by the water. What have you learned about yourself through reality TV? Adjusting to seeing myself on TV has taken time to get used to. It all still feels surreal! Putting yourself out there can be scary, but I’m loving the journey. T

CATCHING UP WITH NICOLE MILLER How does it feel to be receiving the Designer of the Year Award? I’m honored because it’s our 40th anniversary this year. This show is important to us because we wanted to showcase our most iconic pieces from the decades. Some of them have inspired some of our most recent collections. Why is it important for the Hamptons to have its own Fashion Week? There are so many people in the Hamptons in the summer months. It’s a great place to get people together. There’s a great clientele and customer base as well. It’s important that the Hamptons gets to make its own fashion statement. How has your brand evolved over 40 years? We started just a dress business, eventually evolving into a lifestyle brand with everything from sportswear, home, accessories, and eveningwear. We have created a lifestyle that shapes our company into what it is today. What have been some of your proudest accomplishments? My first runway show, which featured all the top supermodels. This gave my brand a lot of recognition. We’ve also created popular prints, which gave us a lead in the men’s industry and helped us gain visibility.
