Behind the dishes you eat in Verbier’s varied collection of eateries, are their creators: this month Emiliano, head chef at W’s popular Eat-Hola Tapas Bar tells us about living in Verbier and recommends his ‘Chef’s suggestion’ from the menu.
plein air. Je cherchais une opportunité de travailler dans les montagnes, alors quand j’ai entendu parler du W Verbier qui cherchait un chef exécutif, j’ai sauté sur l’occasion. Pendant les mois d’hiver, j’aime aller en montagne et profiter du paysage depuis une terrasse ensoleillée. J’aime aussi lire, en particulier sur les techniques et innovations de la cuisine internationale. Je veux tout savoir sur nouveautés et les dernières tendances dans le domaine culinaire. Mon plat préféré sur notre menu cette année est le poulpe grillé servi avec de l’huile de trompettes de la mort, de la crème de pommes de terre rôties et des champignons croustillants. Sinon, lorsque je ne mange pas ici j’adore me régaler avec une fondue.»
• “I grew up in Los Andes in Argentina and have always loved the open air. I was looking for an opportunity in the mountains, so when I heard about the W Verbier was looking for an Executive Chef – I jumped at the chance. During the winter months I like to go on the mountain to enjoy the scenery from a sunny terrace. I also like reading, especially about international cuisine techniques and innovations. I want to know about everything that’s new and cutting edge in the culinary sphere. My favourite dish on our menu this year is the grilled octopus served with black trumpets oil, roasted potato cream and crispy mushrooms, and if I’m not eating here, I love to enjoy a fondue.”
