Epicure’s founder, Damir Drezga, grew up during World War II in communist Yugoslavia. After his father’s passing when he was just 9 years old, Damir had no choice than to take the role as head of household. Despite his family’s poverty and the hardships of World War II, Damir took care of his mother and younger brother.

After completing school, Damir traveled to Germany for better employment to make money for his family. He survived by selling rugs on street corners, and sent most of the money he made back home. Eventually, he was loaned money from a local convent for oneway ticket to the United States.

Upon arriving to America, he worked for a New York City food importer, where he learned the ins-andouts of the industry. A year later in 1971, he purchased his first pallet of Gouda from the Netherlands, thus marking the beginning of Epicure Foods!

50 years later, Epicure Foods has grown from importing that first pallet of Gouda cheese from the Netherlands to importing quality cheese, charcuterie, and various gourmet products from around the globe.

STRAPPED IN SPRUCE

P'tit Valley is a Vacherin inspired soft-ripened, cow’s milk cheese with a mixed ring. It is strapped with spruce and ripened for two weeks. Creamy and soft, this cheese has a nice woody taste.

The Sarda Sheep breed is indigenous to the island of Sardinia and is best known for providing milk to create Pecorino Sardo. Sarda Sheep are high-milk yielding animals and are considered to be among the best Italian breeds of sheep for production of sheep’s milk. The breed provides cheesemakers with rich, fat-laced cheese.

Traditional French methods are used to develop the natural rind of Tres Leches cheeses. Affinage molds are allowed to grow on the surface of the cheese. During the ripening process the cheese is brushed and rubbed several times with olive oil until the wheel is fully coated. The enzymes released by the mold during the affinage, coupled with the olive oil, provide the perfect bouquet.

Tres Leches has been made to the same traditional recipe for generations. Starting with locally sourced milk to expert grading, the quality is controlled throughout the production process which means perfection is reached every time.

La Gruta Del Sol Manchegos begin with local sheep’s milk. The milk is heated and begin to form curds after 30 to 60 minutes. The curds are then pressed into molds. They are unmolded and salted by immersing them in brine. They are then aged and dried under controlled conditions of temperature and humidity.

MADE WITH RAW COW'S MILK

Mahón has some characteristics specific to it, despite aging. In general the cheese is buttery sharp, slightly salty and lightly aromatic in taste. Mahón is sweet and fruity but at times slightly salty. This is due in part to the sea salt content in the grass the cows eat. The rind is generally an orange color due to being rubbed with oil and paprika. As it reaches maturity, it tends to have small misshapen holes and has some granularity. Montbrú in 1989 at their farm Mas Montbrú, located in Moià (Barcelona). At the beginning as goat farmers, they began to produce artisan Goat Mató Cheese and Fresh Goat Cheese. After a while and seeing that the demand of the cheeses increases they began to improve the installations for the creamery at the farm and increase the collection of cheeses with Semi Matured and Matured goat and sheep cheeses.

In 2010 Montbrú began to produce with Buffalo Catalan milk, we are the first national producers with that kind of milk, right now those cheeses are increasing demand very fast, not only for its organoleptic benefits, like 0% lactose, but for its pure taste.

Iberico cheese is made with an enticing blend of Cow, Sheep and Goat Milk. Iberico is made in a similar mold as Manchego, thus the shape and rind texture are quite similar.

There is an excellent harmony between its flavor and texture. The blend of three milks give this cheese a grassy and earthy aroma and a distinctive fruity to nutty taste. The paste is soft with a light buttery texture.

The richness of this cheese makes it ideal to be served as a snack cheese, grating or a grilling cheese. Enjoy with robust Spanish wines and cured Spanish meats such as Chorizo, Jamon Iberico or Jamon Serrano.

Urgèlia was one of 148 winners selected by a panel of specialty food experts from nearly 2,000 entries across 39 product categories. Urgèlia is a traditional semi-soft specialty cheese from Catalonia with PDO (Protected Designation of Origin). All milk for Urgèlia cheese comes from the Frisona breed of cattle. A washed rind cheese aged a minimum of 45 days. The interior paste is creamy white with many small holes and a light brown rind. A robust and buttery taste with a fruity and aromatic flavor, which is reminiscent of moss, fungi or almonds.

Semi-hard cheese with a distinctive aroma of fresh buffalo’s milk. Sarro is slowly matured for four months to obtain an intense but refined paste. The cheese has sweet hints with a slightly bitter taste. Contains 0% lactose.

Fresh milk is collected daily to produce Sarro. Each wheel of Sarro is hand pressed with a cloth to obtain a softer and buttery texture. Once inside the cloth, the cheese is tied resulting in its characteristic shape.

Creamy cheese with natural mold aroma; an intense matured goat milk flavor. Its smooth and creamy texture makes it perfect to be spread.

Made with 100% Murciana goat’s milk, produced in small quantities (500 liters) to guarantee hand-made production. The cheese is matured for 8 week and the rind is washed 2 times during the process. The cheese is punctured before aging to obtain good growth of mold on the inside.

The most famous of all Montbrú cheeses. A soft, buttery cheese with a citric spark that melts in the mouth. Its interior is a spotless white color. Its rind provides earthy moss notes.

TRADITIONAL CATALAN CHEESE

Garrotxa goat cheese has an intense flavor with notes of sparkling citrus. It has a buttery texture with an aftertaste that invites to taste it again. A typical Catalan cheese and one of the first cheeses to be made at Montbru.

Made with 100% Murciana goat milk. After a delicate process in the cording vat, the cheese is molded and pressed slowly in order to obtain the exact humidity. After the salting process, the cheese is matured for six weeks. During this time frame Garrotxa is turned and brushed three times a week.

Novell is smooth and mild, yet has a complex and lactic flavor profile. Semi-soft paste cheese made with Alpina and Murciana goat milk with a maturation of 21 days. The outside is covered with penicillium candidum which has an aroma of mushrooms. A semi-matured cheese with mild goat milk flavor, a buttery aroma, and natural molds. It has a very pleasant and smooth texture.

Proosdij is a semi-firm to firm style of washed-curd cheese made very similarly to Goudas using specific combinations of mixed-strain starter cultures. This also includes the satisfying crunchiness of increasing amounts of tyrosine crystals that form with age along more sweet, fruity, toasted caramel, and bouillon flavors than Gouda cheeses.

VSOC, standing for Very Superior Old Cheese, cheeses are nothing short of unique. They are made to the original Gouda recipe in Holland, using only the best Dutch milk. To make a full wheel, no less than ten liters of milk is used. After the traditional production process, the cheeses are matured on wood in a special aging room. Through this time, the cheese are regularly hand-waxed and turned until it reaches VSOC quality standard.
